Make dinner memorable with manicotti

Few cuisine styles are as diverse and beloved as those that have been exported from the Mediterranean nation of Italy. From pasta to pizza and everything in between, the rich and savory flavors of Italian cuisine are enjoyed across the globe. Italian restaurants can be found in many cities and towns throughout the world. However, it’s just as easy to create traditional, mouthwatering dishes at home with simple ingredients. Manicotti is a popular pasta dish that can be filled with cheese or other ingredients, and topped with a traditional tomato sauce or other saucy creations. The word “manicotti” is the plural form of “manicotto,” which translates to “little sleeves” in Italian. They’re meant to be stuffed and baked.

While manicotti may seem complex, they’re rather easy to prepare. Enjoy this recipe for “Mom’s Homemade Manicotti with Crepes (Crespelle)” courtesy of the blog 3 Italian Sis-

Mom’s Homemade Manicotti with Crepes (Crespelle)

Yields approximately 20 crepes

Serving size: 2 to 3 crepes per person

Crepes

4 extra large eggs

1 cup flour

11⁄4 cup whole milk

2 tablespoons vegetable or olive oil

1 teaspoon salt

Butter for pan

Ricotta filling

3 pounds part skim or whole milk ricotta cheese

1⁄2 cup fresh parsley, minced

1⁄2 cup grated pecorino romano cheese

2 extra large eggs, scrambled

1 pound mozzarella cheese

cubed

Salt and pepper to taste

Premade tomato or meat sauce

Put all the crepe ingredients into a blender. Blend till smooth; scrape sides if necessary and blend again till all ingredients are blended well.

Melt a little butter in a 9” nonstick frying pan over medium heat.

Pour in small amount of batter and swirl to cover bottom of it with a thin film. Cook for approximately 20 seconds and turn to the other side and cook for another 20 seconds. Transfer crepe to plate. Continue until all batter is finished. Crepes can be stacked on top of each other. If you aren’t using them right away, wrap them tightly in plastic wrap and refrigerate them for 3 days or freeze for up to one month.

Ricotta filling: Mix all ingredients together in a large bowl and set aside to fill crepes. Take 1 tablespoon of ricotta filling onto each crepe and roll gently and place on a cookie sheet, seam side down. Preheat oven to 350 F. Layer large casserole pan with your favorite tomato or meat sauce. Place single layer of rolled manicotti in the casserole pan on top of sauce. Ladle thin layer of sauce on top of manicotti and sprinkle with additional mozzarella cheese. Bake in the oven for 25 minutes, or until sauce is bubbling and cheese is melted.

Pecans give these cookies extra appeal

Pecans are tasty offerings that are ideal in both savory dishes and desserts. Like fruits of other members of the hickory genus of trees, pecans are not truly nuts, but drupes. A drupe is a fruit with a single stone or pit surrounded by a husk. With pecans, the outer husk dries out and splits open, exposing the “nuts” inside.

1. In a large mixing bowl, whisk together the flour, baking soda, ground cinnamon, and salt until well combined. Stir in the old-fashioned rolled oats and set aside.

Stir up dinner quickly

The lazy days of summer have started to fade away, and individuals and families will once again be beholden to more rigid schedules packed with activities. When time is of the essence, finding opportunity to cook delicious meals at home can seem challenging. But there are plenty of recipes that whip up in no time and won’t disappoint hungry families.

This recipe for “Speedy Beef Stir-Fry with Chunky Vegetables” from “300 Stir-Fry Recipes” (Robert Rose) by Nancie McDermott is one such meal. It evokes the tastes of a favorite Asian restaurant without the need to order takeout.

Speedy Beef Stir-Fry with Chunky Vegetables

Serves 4

1 tablespoon dry sherry or Shaoxing rice wine

1 tablespoon water

1⁄2 teaspoon soy sauce, optional

2 teaspoons cornstarch

8 ounces lean boneless beef, thinly sliced

3 tablespoons chicken stock

2 teaspoons soy sauce

1⁄2 teaspoon granulated sugar

1⁄2 teaspoon salt or to taste

2 tablespoons vegetable oil

2 teaspoons chopped garlic

2 teaspoons finely chopped fresh gingerroot

1-1⁄2 cups baby corn

1⁄2 cup sliced water chestnuts

1⁄2 cup frozen tiny peas

1. In a bowl, combine sherry, water, dark soy sauce, if using, and cornstarch and stir well into a smooth paste. Add beef and stir to coat well. Set aside for 10 minutes.

2. In a small bowl, combine chicken stock, soy sauce, sugar and salt and stir well.

3. Heat a wok or a large deep skillet over high heat. Add oil and swirl to coat pan. Add garlic and ginger and toss well until fragrant, about 15 seconds. Add beef mixture and spread into a single layer. Cook, undisturbed, until edges change color, about 1 minute. Toss well.

4. Add chicken stock mixture, baby corn and water chestnuts. Cook, tossing occasionally, until beef is cooked through., about 2 minutes more. Add peas and cook, tossing once for 1 minute more. Transfer to a serving plate. Serve hot or warm.

Serves 15

1-1⁄2 cups self-rising flour

1 stick butter

1⁄2 cup water

2 cups sugar, divided

4 cups peaches, peeled and sliced

1 cup milk

Ground cinnamon (optional)

Preheat oven to 350 F.

Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.

Put the butter in a 3-quart baking dish and place in

There are many different ways to serve fish and an equally diverse array of fish to choose as the centerpiece of such meals. In the United States, catfish is a largely southern delicacy, and it is served predominately across Texas, Louisiana, Tennessee, and Georgia. However, anyone with access to fresh catfish can whip up a tasty serving. Catfish has a mild, slightly sweet flavor with a dense, moist texture. Since it is less flaky than other white fish when cooked, it holds up better when cooked in certain ways, such as frying. BEER-BATTERED CATFISH WITH

HOMEMADE TARTAR SAUCE Serves 6

6 U.S. Farm-Raised Catfish fillets, cut into large strips

Oil for frying

11⁄2 cups all-purpose flour, divided

1⁄2 cup cornstarch

1 tablespoon Cajun seasoning

1 teaspoon baking powder

2 teaspoons salt

1 cup beef

Salt and pepper to taste

Fresh lemon wedges

Malt vinegar

TARTAR SAUCE

1 cup mayonnaise

1 tablespoon dill pickle, minced

2 ounces fresh parsley, finely chopped

1 tablespoon dried dill

1 tablespoon sweet relish

1 tablespoon fresh lemon juice

1 teaspoon drained capers

Dash hot sauce

In a deep fryer, heat oil to 375 F. Combine 1⁄2 cup flour, cornstarch, Cajun seasoning, baking powder, and salt. Whisk in beer until smooth. Place remaining flour in a shallow bowl. Season fillets with salt and pepper; then lightly dust with flour. Dip the fillets in beer batter, allowing excess to drip off. Place catfish in oil a few pieces at a time. Fry until well browned on all sides, about 3 minutes.

Remove, and drain on paper towels. To make tartar sauce, combine all ingredients in a small bowl; stir to combine. Refrigerate any excess.

Craving a slice of pizza? You are likely not alone. According to a recent online survey by Caulipower, a maker of healthier pizza using cauliflower crusts, 98 percent of Americans eat pizza, and 33 million Americans have said they’d make it their last meal if they had a choice. Technomic’s 2020 Canadian Pizza Consumer Trend Report offered that 81 percent of consumers eat pizza at least once a month. Pizza certainly tops the lists of comfort foods people turn to when they want tasty meals or snacks. Let’s slice into a few more facts about pizza.

• Pizza commands plenty of dates on holiday events calendars. October is National Pizza Month, September 5 marks National Cheese Pizza Day, February 9 is National Pizza Day, April 5 is National Deep Dish Pizza Day, September 10 is National Pepperoni Pizza Day, and the third Friday in May is National Pizza Party Day. There are others as well, helping people to enjoy pizza many days during the year.

• Pizza hails from Italy. Antica Pizzeria is the very first known pizzeria in Italy. It opened in 1738.

• The pizza industry brings in roughly $30 billion a year.

Now that we’ve consumed some pizza facts, it’s time to consume the pizza itself. Enjoy this recipe for “Classic Cheese Pizza” courtesy of The Pioneer Woman and Leah Perez.

Classic Cheese Pizza

Yields 6 to 8 servings

1-1⁄4 ounce packet active dry yeast

2 teaspoons granulated sugar

11⁄2 cup warm water (90 to 100 F)

4 cups all-purpose flour

2 teaspoons olive oil, divided, plus more for brushing

2-1⁄4 teaspoons kosher salt

1⁄4 cup grated parmesan cheese, divided

1 cup pizza sauce, divided

3 cups shredded low-moisture mozzarella cheese, divided

1 cup cubed fresh mozzarella cheese, divided

Fresh basil to serve

1. Sprinkle the yeast and sugar over the warm water in the bowl of a stand mixer. Whisk to combine and then let sit until bubbles have formed on the top, about 5 minutes. Add the flour, 1 tablespoon of olive oil, and salt, and mix with the dough hook on low speed until the dough comes together, about 2 minutes. Scrape the bottoms and sides of the bowl. Increase the speed to medium-low until everything is well incorporated and the dough is sticky, 2 to 3 minutes more.

2. Drizzle the top of the dough and down the sides of the bowl with the remaining 1 tablespoon of olive oil. Use a rubber spatula to flip the dough to coat in the oil. Cover the bowl with plastic wrap and let it rise until doubled, about 1 hour and 30 minutes.

3. About 1 hour before you’re ready to make the pizza, place a pizza stone, steel, or an upside-down baking sheet on the upper third rack of the oven. Preheat the oven to 500 F.

4. On a lightly floured work surface, cut the dough in half and form into tight rounds. To form a nice round, flatten the dough onto the circle. Flip it over and gently pull the round against the counter to form a taut ball. Place the rounds on a lightly floured baking sheet with enough space for them to rise and expand, about an hour

5. Place a 14-inch piece of heavy-duty foil on top of an upside-down half-sheet pan. Lightly brush the foil with oil and dust with flour. While working with one round of dough, cover the other with plastic wrap.

6. On a well-floured surface, press one piece of dough into an 8-inch round with 1-inch outer lip. Carefully lift the dough with your hands, cupping the lip to keep from flattening it. Working quickly, rotate the edge of the dough through your hands in a clockwise motion, allowing gravity to stretch the dough into a round shape. Place the dough back on the flour and stretch it into a 12-inch circle. Transfer to the prepared foil.

7. Sprinkle the surface of the pizza with 2 tablespoons of grated parmesan. Spread 1⁄2 cup pizza sauce over the parmesan, leaving a 1-inch border. Sprinkle the pizza with 11⁄2 cups of low-moisture mozzarella and 1⁄2-cup cubed fresh mozzarella.

8. Using the upside down baking sheet as a pizza peel, transfer the pizza with the foil to the preheated baking stone. Bake until the crust is browned and the cheese is bubbling, 12 to 14 minutes. Transfer pizza from the foil to a cooling rack. Brush the crust with olive oil, sprinkle the surface with basil leaves, and serve hot. Repeat the process for the other dough round.
