The

degrees awarded by colleges and universities has increased considerably in the twenty-first century. According to the National Center for Education Statistics, roughly 1.238 million bachelor’s degrees were awarded by colleges and universities in 2000. By 2021, that figure had nearly doubled, reaching 2.066 million.

The number of students

who earned associate’s and master’s degrees also grew by considerable margins between 2000 and 2021, with each nearly doubling. Doctorate and professional degrees remained a little more steady, though the number of students who earned each increased from just under 119 million in 2000 to 194.1 million in 2021.

Explore Moroccan flavors at your next cookout

Ingredients are shared by many different cultures, and similar dishes may be found on tables across the globe. For example, the hamburger, which is wildly popular in North America and across Europe. In areas of the Middle East as well as Morocco and other parts of North Africa, people enjoy a similar dish of kefta. Kefta is a kind of ground meat made into small loaves or patties, which are then chargrilled.

Kefta is considered a national dish in Morocco, and beloved by children and adults alike.

Those who want to try this tasty meal can look to “Kefta & Olive Toast” from “Casablanca My Moroccan Food” (Firefly Books) by Nargisse Benkabbou for inspiration.

Kefta & Olive Toast

Makes 4

1⁄2 pound ground beef, 10 to 20 percent fat

1⁄2 pound ground lamb, 10 to 20

percent fat

1 large onion, grated

1⁄3 cup flat-leaf parsley, finely chopped

1⁄3 cup cilantro, finely chopped

4 mint sprigs, leaves picked and chopped

2 tablespoons paprika

1 teaspoon ground cumin

1 teaspoon salt

1⁄2 teaspoon ground black pepper Pinch cayenne pepper

To serve:

2 tablespoons olive oil

1 quantity of kefta

4 slices of bread, chargrilled or toasted

1 cup drained pitted green olives, chopped Chopped parsley, to garnish

To make the Kefta:

Place all the ingredients in a large bowl, then use your hands or a large spoon to mix them together. Cover the bowl with plastic wrap and keep in the fridge until ready to use. Shape

and cook as desired, or follow the next step.

To serve:

Heat the olive oil in a large skillet over medium-high heat. Add the kefta and cook, breaking up the meat with a wooden spoon, for about 5 minutes until it is no longer pink.

Spoon the cooked kefta over each slice of warm chargrilled or toasted bread and top with chopped olives and chopped parsley to garnish. Serve immediately.

Consider these community college benefits

College is the next natural step f or many students after they finish high school. The process of finding a school begins in junior year of high school, and students and their parents may visit many different colleges and universities throughout the next year. Even though the bulk of the focus might be on four-year schools, students who may not yet have everything all figured out should not overlook the many benefits of community colleges.

The United States Department of State’s Education USA says community colleges offer twoyear programs that lead to the Associate of Arts (AA) or

Associate of Science (AS) degree. Some community colleges also have vocational programs. Community colleges are a viable option for students interested in continuing their education. Undergraduate students studying at community colleges can earn academic credit that will eventually go toward a bachelor’s degree should they choose to continue schooling. The following are some of the benefits of community college.

• Flexible admissions process: Community colleges do not have the same time restrictions and other requirements as schools offering four-year degrees. Interested parties may be able to register for classes at any time and not have to worry about being accepted or not.

• Part-time scheduling: Community colleges often offer part-time academic coursework, which means students do not have to take a set number of credits each semester to remain enrolled. This allows students to attend college classes according to their own schedules and work at their own pace.

• More affordable tuition: Lower tuition is one of the major draws to community colleges. The career planning resource Indeed says that many community

colleges further discount their offerings to in-state students. This helps make post-secondary education much more affordable, particularly for those who are not sure about what they want to study.

• Relationships with four-year schools: A number of community colleges have partnerships with sister schools to facilitate the transfer of associate degree credits for a student working toward a four-year degree. Education USA says in this

“2+2” process,” a student can earn a bachelor’s degree with two years of community college, followed by two years of university study. Some community colleges also serve as satellite locations for other schools, meaning one can take classes for a four-year school right on the community college campus if the location is more convenient.

• Smaller class sizes: Many community colleges have smaller class sizes that make it easier for students to adjust to the pace

of college life.

• Proximity to home: As the name implies, community college is a school that serves a particular community. That means it is likely close to home for the majority of students. Students who may not be willing or able to go away to school may appreciate the convenience and proximity of a community college. Community college is an option that students may want to explore as they pursue post-secondary education.

Through a cooperative use trade agreement between the owner and the State grazing lessee, the fence line has been situated to avoid multiple crossings of the creek and the hilly terrain on the eastern side of the property. Hearty soup makes the meal

Every home chef should have a rich and filling soup recipe in his or her repertoire. These hearty meals are perfect for cold days spent shoveling snow or after coasting downhill on a sled.

Baked potato soup is a creamy soup that is reminiscent of a loaded baked potato. For those who are avoiding inflammatory foods, such as those in the nightshade variety, of which white potatoes are included, a potato soup may be harder to come by. This version of “Loaded Baked Potato Soup” from “Eat What You Love” (Ten Speed Press) by Danielle Walker is a delicious alternative that can satisfy potato soup cravings.

Loaded Baked Potato Soup Serves 6

6 slices thick bacon, coarsely chopped

Line a plate with paper towels. In a stockpot, cook the bacon over medium heat until the fat is rendered and the bacon is crisp, about 8 minutes. Using a slotted spoon, remove the bacon from the pot and set it on the prepared plate to drain. Pour off most of the grease, reserving about 2 tablespoons in the pot.

Return the pot to mediumhigh heat, add the onion and garlic, and sauté for 2 minutes, until fragrant. Add half of the sweet potatoes and all of the cauliflower and cook for 5 minutes, stirring frequently. Add the bone broth, bring it to a gentle boil, and cook for 10 minutes, until the potatoes and cauliflower are tender.

Using an immersion blender, or working in batches in a blender, blend the soup until smooth. (If using a blender, remove the cap in the blender top and place a kitchen towel over the top to allow steam from the hot liquid to release while you blend.)

Return the purée to the stockpot. Add the remaining sweet potatoes, the cashew milk, salt, paprika, vinegar, and lemon juice. Bring to a boil over medium-high heat, then turn the heat to low and simmer for 12 to 15 minutes, stirring frequently, until the sweet potatoes are tender and the cashew milk has thickened the soup.

Ladle the soup into bowls and top with the reserved bacon, chives, and dollop of sour cream. Serve immediately.

Store leftover soup in an airtight container in the refrigerator for 5 days, or in the freezer for 6 months. Defrost overnight in the refrigerator. Reheat in a saucepan over medium heat, stirring frequently, for 10 minutes.

Few people can resist the appeal of waffles. They’re tasty in the morning for breakfast, and equally at home in the afternoons or evening with chicken or ice cream accompanying them. Indeed, few foods can be enjoyed any time of day as easily as waffles.

Waffles can be made from gluten-free and alternative ingredients, making them available to people

who have different types of food limitations. Such is the case with this recipe for “Belgian Waffles” courtesy of “Plant-Based Gourmet” (Apollo Publishers) by Chef Suzi Gerber. This recipe features ingredients that fit into a plant-based lifestyle.

Belgian Waffles

Makes 3 or 4 waffles

21⁄4 cups gluten-free flour (conventional allpurpose flour may be substituted; reduced by 2 tablespoons)

1 teaspoon sugar

11⁄2 teaspoons baking powder

1⁄4 tablespoon salt

1 cup room temperature oat milk or flax milk

11⁄2 tablespoons melted butter or non-dairy butter

1 teaspoon vanilla extract

1⁄2 teaspoon apple cider vinegar

1. Mix the flour, sugar,

baking powder, and salt in a bowl. In a separate bowl, combine the oat milk, butter, vanilla, and apple cider vinegar, then slowly add the dry ingredients to the wet, whisking to combine.

2. Grease a waffle iron and preheat. Pour about 1⁄2 cup of the batter into the waffle iron and let stand for 30 to 45 seconds, then close and cook approximately 3 to 5 minutes. Gently open to check, adding an additional 1 to 2 minutes if needed. Repeat with the remaining batter.

Tip: Add freeze-dried berries, whole or powdered, or even blue spirulina or pitaya powder to get colorful waffles with fruity flavors and even a bit of crunch. Alternating colors of waffles is fun, nutritious, and festive.
