Sweeten the day with peaches

Although many desserts make for a sweet ending to delicious meals, there’s something so inviting about a moist and tender cobbler to add that yum factor.

Cobbler consists of a fruit filling covered in a biscuit batter of sorts. When baked, the ingredients blend together to form a spoonable treat that is tender but with the right amount of bite.

HAND MADE CUSTOM BUILT & WARRANTEED GRILL FUNDRAISER

Peach Cobbler

Servings: 9

5 peaches, peeled, cored and sliced (about 4 cups)

3⁄4 cup granulated sugar

1⁄4 teaspoon salt

For the batter:

6 tablespoons butter

1 cup all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1⁄4 teaspoon salt

3⁄4 cup milk

Ground cinnamon

1. Add the sliced peaches, sugar and salt to a saucepan and stir to combine. If using canned peaches, skip steps 1 and 2 and follow the directions starting at step 3.

2. Cook on medium heat for just a few minutes, until the sugar is dissolved and helps to bring out juices from the peaches. Remove from heat and set aside.

3. Preheat oven to 350 F. Slice butter into pieces and add to

a 9-by-13-inch baking dish. Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.

4. In a large bowl, mix together the flour, sugar, baking powder, and salt. Stir in the milk, just until combined. Pour the mixture into the pan, over the melted butter and smooth it into an even layer.

5. Spoon the peaches and juice (or canned peaches, if using) over the batter. Sprinkle cinnamon generously over the top.

6. Bake at 350 F for about 38 to 40 minutes. Serve warm, with a scoop of ice cream, if desired.

Move over crab; shrimp cakes are crisp and tasty

Seafood is a healthy addition to any diet. “Shrimp Cakes with Honey Lemon Aioli” from “30-Minute Meal Prep” (Sourcebooks) by Robin Miller.

Shrimp Cakes with Honey Lemon Aioli, Serves 4

1 pound cooked shrimp, tails removed

1⁄4 cup panko breadcrumbs

1⁄4 cup diced red bell pepper

1 tablespoon chopped fresh chives, plus more for serving

1 large egg

Salt and freshly ground black pepper

4 tablespoons olive oil

For the Honey Lemon Aioli: 1⁄2 cup mayonnaise

1 tablespoon fresh lemon juice

1 teaspoon honey

1 teaspoon grated fresh lemon zest

1. Place the shrimp in a food processor, and pulse on and off

until coarsely chopped. Add the breadcrumbs, bell pepper, chives, egg, 1⁄2 teaspoon salt, and 1⁄4 teaspoon black pepper, and pulse on and off until blended; you should be able to squeeze a small amount of the mixture and it will hold its shape.

2. Form the mixture into four patties, each about 1-inch thick.

3. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp patties, and cook for 4 to 5 minutes per side, until golden brown and cooked through.

4. To make the aioli, whisk together all the ingredients until blended. Season to taste with salt and black pepper.

5. Spoon the lemon aioli over the shrimp cakes, and top with fresh chives.

Note: The shrimp cakes can be assembled and refrigerated for up to 24 hours before cooking. The aioli can be prepared up to 24 hours in advance. Refrigerate until ready to serve.

Tips to avoid the buildup of clutter

Clutter has a way of taking over a home. As time goes by, items that are not stored or discarded when they’ve lost their utility can gradually take over a space, creating a claustrophobic, cluttered feeling that can affect how people feel in their homes.

Clutter is not something to be taken lightly. A 2010 study published in the journal Personality and Social Psychology Bulletin found that women who characterized their living spaces as cluttered or marked by unfinished projects were more likely to experience fatigue and depression than women who described their homes as restful and restorative. Though clutter is often discussed in terms of removing it, there’s also many ways to prevent it in the first place.

• Schedule weekly cleaning sessions. Cleaning is a chore few look forward to, and that reluctance may be a byproduct of infrequent cleanings. The less a home is cleaned, the longer cleaning sessions take when individuals get around to it. Weekly cleaning sessions can help prevent items from stockpiling and creating a cluttered look.

• Discard items when they’re no longer used. Holding on to items you no longer use will eventually contribute to the buildup of clutter. That’s a lesson parents know well, as kids outgrow toys, which can then pile up and contribute to overcrowded toy chests and play rooms. Adults also have a hard time discarding their own toys, including old devices. As kids outgrow toys, let them choose which ones to discard before they’re replaced with new items. The same goes for adults, who can wipe old devices like tablets, smartphones and laptops clean and discard them once they’ve purchased replacements.

• Make it easy to find stored items. Even the most well-organized person can fall victim to clutter if

stored items prove difficult to find. When revamping storage systems, choose clear, stackable drawers so you won’t make a mess as you look for stored items you can’t find. Clear, stackable plastic bins and drawers make it easier to find what you’re looking for, reducing the likelihood that items will end up on the floor or strewn about. If you don’t want to replace existing

storage bins, label them if they’re not clear to make it easier to identify what’s inside.

• Donate clothing. Much like kids’ toys and adults devices should be discarded when they’re no longer used, old clothes can be donated to create more storage space and prevent the buildup of clutter.

Clutter is often described as something visible to the naked eye, but

clutter can also build up in dresser drawers and behind closet doors.

Periodically go through closets and dressers and remove items you no longer wear, donating them if they’re still in good shape and discarding them if they’re not.

Clutter can quickly take over a home. A proactive approach that emphasizes clutter prevention can make for a more relaxing and restful home.

Tips and tricks for traveling with dogs

After years living under the cloud of a pandemic that limited where they could travel, many people have a strong desire to head off for parts unknown. As individuals and families ponder business trips or vacations, they may think about bringing a beloved pet along.

According to a AAA/Best Western survey, 85 percent of dog owners travel with their dogs. The most popular vacations to let pooches tag along include going to the beach, camping and hiking. As a greater number of people are en-

gaging in more activities with their pets, businesses in the travel and hospitality sector are taking notice and have become more accommodating to four-legged guests. However, there’s still plenty to learn when taking a dog along as a travel companion. Explore these dog travel tips.

• Invest in a crate. Even if the dog does not need a crate at home, it’s best to have one for travel. Crates often are required for airline travel and can keep dogs safer in cars. Many hotels also require that dogs be crated in the rooms to keep them out of trouble and prevent damage. A crate should be large

enough that the dog can stand, turn and lie down, according to the American Kennel Club.

• Carry copies of pet-related documents. It’s important to prove that the dog is healthy and current on vaccinations. Officials may ask to see documentation when traveling abroad. Some travelers also may want to investigate pet passports. The USA does not require a pet passport, but the European Union pioneered pet passports to enable animals to move more freely throughout its member nations.

• Plan a short excursion first. If you have never traveled with a dog before, make the first trip a short

one, such as an overnight or twoday stay. This way, if the trip turns into a fiasco, checkout isn’t a week away. Shorter trips also help people figure out what works and what will need to change the next time.

• Expect some fees. Most hotels charge a fee for doggy clients. A fee of $25 to $50 is pretty standard. There also may be a designated pet floor to minimize the chances that guests without pets will be forced to interact with animals.

• Normal behavior may go out the window. A dog who is calm at home may be out of sorts while traveling. It’s not uncommon for a

dog unphased by people at home to suddenly be anxious and bark at sounds in a hotel hallway.

• Look into pet-friendly restaurants. Smarter Travel says that some hotels won’t allow a guest to keep the dog alone in the room. That means meal time can be tricky. Find restaurants nearby that allow pets. Many that have outdoor seating may enable a leashed pet to stay near the seating perimeter.

• Bring water from home. When packing food, pack a few gallons of water as well, even though it can be cumbersome. Some dogs with delicate digestive systems

may be upset by drinking the local water. A case of diarrhea is compounded further by having to make it into an elevator and outside the hotel in time.

• Tire the dog out. Exercised dogs tend to be well-behaved dogs. Make time to go on long walks, visit a dog park or engage in other activities that will make the pup tired so it’s less likely to cause problems at the hotel.
