Scallops are a species of marine bivalve mollusk that come in “bay” and “sea” varieties. The large muscle inside of the scallop, which can sometimes be 2 inches in sea scallops, is cooked and eaten. Bay scallops, which are harvested from the shallow waters of East Coast estuaries and bays, are roughly one-third the size of sea scallops. Bay scallops tend to be more tender than sea scallops, but both can be delicious when prepared correctly. In certain instances, manufacturers will produce “faux” scallops, which actually are chunks cut from certain sharks and stingrays.
This recipe for “Seared Scallops with Snow Peas and Orange” from “Real Simple Dinner Tonight: Done!” (Time Home Entertainment) from the Real Simple Kitchen can be a tasty, unique meal when other fish dinners have already been tried.
Seared Scallops with Snow Peas and Orange Serves 4
1 cup couscous
1 tablespoon plus 2 teaspoons olive oil
16 sea scallops (about 11⁄2 pounds)
Kosher salt and black pepper
4 strips orange zest (removed with a vegetable peeler), thinly sliced 1⁄4 pound snow peas, trimmed and halved lengthwise Cook the couscous according to the package directions.
Meanwhile, heat 2 teaspoons of the oil in a large nonstick skillet over medium-high heat. Pat the scallops dry, season with 1⁄4 teaspoon each salt and pepper, and cook until opaque throughout, 2 to 3 minutes per side. Transfer to a plate and cover to keep warm. Wipe out the skillet.
Heat the remaining tablespoon of oil in the skillet over medium-high heat. Add the orange zest, snow peas, and 1⁄4 teaspoon each salt and pepper and cook, tossing frequently, until the snow peas are just tender, about 2 minutes. Serve with the scallops and couscous.

These facts about sunlight and UV rays, courtesy of the U.S. Environmental Protection Agency, the FactFile and NASA, can help people make more informed choices about spending time in the sun.
• There are three types of UV rays. UVA reaches Earth’s surface because the atmosphere does little to shield these rays. UVA rays contribute to ailments like wrinkling and can penetrate through windows and clouds. UVB rays largely are thwarted by the atmosphere. However, latitude, altitude and time of year may increase the likelihood of UVB ray exposure, which is often the culprit behind skin cancer. UVC rays are completely absorbed by the Earth’s atmosphere and don’t pose a significant threat, even though they have the highest energy levels of all three types of UV rays.
• The sun’s UV rays are strongest between 10 a.m. and 4 p.m., when the sun is at its highest in the sky. The ultraviolet radiation will be less severe early in the morning and later in the day.
• Snow, water and sand reflect the damaging rays from the sun and can increase a per-
son’s risk for sunburn.
• The higher up in altitude a person goes, the stronger the sun’s rays become. Therefore, sun exposure in the mountains can be more dangerous than exposure at sea level.
• Areas closest to the equator will get the longest hours of sunlight. The sun’s rays are much stronger near the equator.
• Australia ranks near the top of the skin cancer risk list along with New Zealand. These countries are located close to the ozone layer hole over the Antarctic. In addition, during summer, the Earth’s orbit places Australia closer to the sun compared to other countries. That results in an additional solar UV intensity, according to Specialist Clinics of Australia.
• UVA rays penetrate more deeply into the skin and can cause it to prematurely age.
• UVB rays damage the outermost layers of the skin and contribute to the most skin cancers. Overexposure to UVB rays causes delayed sunburns.
• While the sun is more intense during spring and summer, sun glare may be a bigger problem in the fall and winter. The sun during the colder months takes a lower angled route when rising, rather than seemingly going straight up, which it does in the summer. That keeps the sun in a blinding position for a longer period of time in the fall and winter.
• The sun’s energy is produced by the fusion of hydrogen into helium. Nuclear reactions occur in the core of the sun due to temperature and pressure. The sun also emits infrared radiation, visible light and ultraviolet light.

July is synonymous with fun in the sun. In the northern hemisphere, July is typically characterized by sunny days, warm weather and long hours of daylight, making it an ideal month to enjoy a little rest and relaxation. Though it might be a great time for some R&R, July also boasts an interesting history. As revelers soak up some sun this summer, they can ponder these fun facts about the month of July.
1. July is named after a person whose been famous for thousands of years. According to the Farmer’s Almanac, Roman dictator Julis Caesar developed the precursor to the Gregorian calendar used today. Though that made him worthy of a month named in his honor, it didn’t do much to protect him during his life, as Caesar was famously assassinated in 44 B.C.
2. July is a celebratory month for fans of revolution. American Independence Day (July 4) and Bastille Day (July 14), which commemorates the storming of the Bastille and the dawn of the French Revolution in 1789, are among the notable revolutionary moments celebrated in July.
3. Baseball historians know that many significant events in the game have taken place in July, and some records set in the month have withstood longer than others. On July 12, 1931, Mel Ott of the New York Giants hit his 100th career homerun, becoming the youngest player to reach that milestone. Ott was 22 years and 132 days old when he set the mark, which still stands today.
4. One of the more famous statements in United States history was uttered in July, though it wasn’t within American borders or even on the planet Earth. On July 20, 1969, American astronaut Neil Armstrong, after stepping onto the surface of the moon, declared, “That’s one small step for man, one giant leap for mankind.”
5. Two men who played integral roles in the American colonies gaining their independence from Great Britain both passed away on July 4th, the day that celebrates that very independence. On July 4th, 1826, former presidents John Adams and Thomas Jefferson, who were once friends, then political rivals and, finally, friends again, passed away within hours of each other.

The month of July has been home to many historical events over the years. Here’s a look at some that helped to shape the world in July 1923.
• A law banning Chinese immigrants from coming to the Dominion of Canada goes into effect on July 1. The Chinese Immigration Act remained in effect until May 14, 1947.
• Roughly 20,000 people attend a July 4 boxing match between champion Jack Dempsey and challenger Tommy Gibbons in the small Montana oil town of Shelby. Estimates indicated only around 35 percent of those in attendance paid to see the bout, which proved to be a financial punch to the gut for the promoters.
• The Cleveland Indians set an American League record on July 7 by scoring in every inning of a game they eventually win 27-3. The offensive on-
slaught includes a 13-run inning in which all 13 runs are charged to Boston Red Sox pitcher Francis “Lefty” O’Doul.
• On July 9, U.S. Army Lieutenant Russell Maughan lands his plane in a cow pasture in St. Joseph, Missouri, marking an end to his first attempt to make a dawn-to-dusk transcontinental flight across the United States. Maughan made a second unsuccessful attempt 10 days later.
• The Paraguayan Civil War ends on July 10, with former President Manuel Gondra and his supporters declaring victory.
• Harry Frazee, perhaps best known as the owner of the Boston Red Sox who traded Babe Ruth to the New York Yankees, thus beginning the alleged Curse of the Bambino, sells the team for $1.25 million on July 11.
• The Hollywood Sign is officially dedicated on
July 13.
• Retired Mexican guerilla leader Pancho Villa is shot dead alongside many members of his entourage on July 20. Reports at the time suggest the assassination is retaliation for executions Villa had ordered during the Mexican Revolution.
