A

t least once a week, I am reminded of the fantastic opportunities available to Shelby County students.

That is a great thing since Shelby County is home to tens of thousands of students of all ages and backgrounds.

In this month’s issue of the magazine, we highlight some of the great programs going on at local schools.

In its first year of operation, Helena High School has partnered with Lemak Sports Medicine to launch an exciting new sports medicine program. Students learn basic injury prevention, CPR, emergency care techniques and more.

The program is intended to prepare students for college-level work, but these are also great skills to know for day-to-day life.

Is there any event in Montevallo more exciting than College Night? Based on the passion and dedication I’ve seen from Gold and Purple Side members – both past and present – I’m going to say no.

College Night was started almost 100

years ago to celebrate the university adding the “college” distinction to its title. It has spawned a Jeopardy question, a television actress, an exhibit at the Library of Congress and nine decades worth of cherished memories for UM alumni.

Jefferson State Community College offers a lot of classes you might expect – Nursing, business, criminal justice. It also offers a topnotch culinary arts and management program. Students can take delicioussounding classes like “Chocolate and Truffles” and “Cake Decorating/Design.”

They also get real-world experience by interning at local restaurants or bistro ProVare, the college’s on-site café.

I hope the stories in the issue get you excited about education in our county.

With such fantastic programs at our local schools, I think our future is in good hands.

It’s project time

P

rojects, projects and more projects! Most disorganization and clutter in our homes and offices come from things left abandoned versus completed.

Think about that and then look around your own home and desk.

Whatever your impulse, when it comes to pushing up your sleeves and getting started, knowing how to keep track of the details is what will help make any project go smoothly. Spring landscaping is right in front of us, so let’s start there. However, you can adapt these same basic principles for any project. uKeep everything together: Simple pocket folders (or the large plastic envelopes that zip or Velcro shut) are great for keeping receipts, care tags from plants, sketches of the flowerbeds, price comparisons, etc. Put brochures, pictures, and business cards that you have picked up in the folder. This is your “go-to” folder for anything that is current for the project. u Keep everything separate: Make sure you keep the green landscaping folder only for the yard improvements. Updating the bathroom gets another colored folder.

As soon as you begin to think of a project, create a folder for your ideas.

Your enthusiasm is at its highest at the beginning of a project—the minute you come up with the idea! Even if you don’t plan to start immediately, you will want to remember the creative ideas and strategy you have now.

This is also helpful in case the project gets delayed for a few days or weeks due to lack of money, energy, weather or time. With the folder system, you are just picking up from where you left off.

Think about it—if you have to start over—that takes energy! But if you think you are almost finished, you can see the end. And once the end is in sight, we have a tendency to run harder to cross the finish line. This is a “simple” thought process between finishing and ending. There is a difference.

A folder system for projects is very simple. Once the job is completed, file away the entire folder with other reference files. When you have finished projects, you have less clutter and disorganization around you. It’s that simple. l

Knowing how to keep track of the details is what will help make any project go smoothly.

Hendrick wins DealerRater award

CPES students rewarded for donating books Students at Chelsea Park Elementary enjoyed having their faces painted with a Valentine heart or a mustache for bringing in gently used books that will be used for a summer reading program.

The response was so positive the school plans to do another day for students in March.

The school thanked all of the parents who responded by cleaning out their gently used books for a worthy cause.

Chelsea Troop 85 celebrates first Eagle Scout The first Eagle Scout rank in the history of Boy Scout Troop 85, sponsored by St. Catherine’s Episcopal Church in Chelsea, was presented recently to Wade Thomas Moore, center, son of Preston and Pam Moore of Chelsea.

He is pictured with Life Scout Levi Hardegree, First Class Jacob Berg, Life Scout Jordan Reynolds and First Class Seger Bayer. Preston Moore is also Scoutmaster of the troop.

Moore, a 14-year-old freshman at Chelsea High School, has been in Boy Scouts for four years, following three years as a Cub Scout.

Part of the Troop Court of Honor included an Eagle Scout Charge/Challenge, which was delivered by Moore’s grandfather, Tom Moore of Columbiana, who is a retired Professional Scouter with 38 years tenure.

Wade’s Eagle Scout project was the construction of an outdoor program class area for Chelsea Park Elementary School, where his mother is a teacher’s aide for special needs students.

Bayer also received his First Class Badge during the Court of Honor.

MLES students compete in first Geography Bee On Feb. 3, Mt Laurel Elementary School held its first annual Geography Bee. Under the guidance of Sam Scott, 15 student competitors worked diligently for months to prepare for the Geography Bee. Kapil Nathan won the MLES bee, while Kimberly Brown was the runner-up.

Local elected chairman of farming committee Legislators address issues at GSCC preview luncheon Members of the local Shelby County state legislative delegation participated in the Greater Shelby County Chamber of Commerce’s Legislative Preview Luncheon on Feb. 17 at Jefferson State Community College. Spoken stories Dolores Hydock brings the Wild West to life in new performance

S

toryteller Dolores Hydock’s love for words and stories go back to when she was a very young girl. Since her first storytelling competition in her hometown of Reading, Penn., when she was 5 years old, Hydock has dedicated her life to sharing her passion for storytelling.

“I love words,” Hydock said, “and the power of words to entertain, inspire and help people connect with one another.

The stories we tell each other from our everyday lives help us feel like we’re really all in this together.”

Hydock’s mother taught her to read from a very young age and helped cultivate a love of stories in her daughter’s life.

Hydock loved the worlds and places they transported her and that she could experience other people’s thoughts and feelings too. As soon as she could she obtained a library card and soaked up all the stories she could get her hands on.

She looked to stories to help inspire and encourage her and to help her deal with life’s dilemmas.

“I hope the stories I tell help people connect to their own memories, their own experiences and the experiences of others,” Hydock said.

Hydock returns to the Shelby County Arts Council on April 11 to once again share her great love of storytelling. “Starch in their Petticoats: True Stories of Strong Women Who Settled the West” details true stories of real women of the American West. Using newspaper clippings, letters, diary entries, pictures and music from the time period performed by music historian Bobby Horton, Hydock brings the wild West to life in Columbiana.

“None of the people I tell about are famous. I like to find historical people most people don’t know about, and allow their story to shine,” Hydock said.

Horton’s music adds the perfect compliment to the show. He performs everything from trail songs, cowboy tunes and many other songs of the late 1800s.

They set the stage perfectly for life the pioneers would have experienced. Horton has accompanied Hydock’s shows in the past and she emphasized what a treat it is to work with such an amazing and talented artist.

“All stories, whether they’re funny or touching, silly or serious, have the power to remind us that we’re all human and we all go through a lot of the same things,” Hydock said.

“Starch in their Petticoats: True Stories of Strong Women Who Settled the West” will be performed at the Shelby County Arts Council on Saturday, April 11 at 8 p.m. Doors open at 7 p.m. Tickets for the event are $25.

A

rtist Phyllis Thomas Gibson’s reputation as an expressive painter with a recognizable style of her own is well known. She works in acrylic, mixed medium and encaustic.

Considered to be this area’s original portrayer of ethereal beings (which led to many imitators and the popularity of the angel motif in recent decades), Gibson’s exuberant work may be found on canvases from 6 x 6 inches to 48 x 60 inches.

“I’ve been working on birds now for maybe two years,” Gibson said, noting, “We are in a wildlife refuge and I love watching birds. I feed them. I see their interaction and emotion.

And, yes, they do have emotions.”

“Lately I have been painting the river and the bird life around me,” she added.

The accompanying photo shows a baby hummer (30 x 30 inch canvas) entitled, “Fly With Me.” “I never paint two identical canvases,” she adds, noting that “Birds On A Wire” with its quirky personalities sold quickly and she is planning a 24x48 canvas of another group of birds.

Gibson, a Helena resident, always welcomes the presence of her grandson, Ian, whom she first introduced to painting at a very young age. When Ian was a mere 15 months, the two had a collaborative show at Four Season’s Gallery in Homewood.

The exhibit, entitled “Moon and Stars,” featured 5x5-inch canvases, many of which featured the metallic gold paint of which Ian was especially fond at that time. His signature at that time was a painterly dot on the front and “Ian and Nana” was signed on the back.

Now 7 years old, Ian still paints alongside Gibson in her studio overlooking the Cahaba River.

“He will paint but now he doesn’t want me to tell him how because he has developed a mind of his own,” Gibson says.

“He paints just to give as gifts and he offers his critiques of my paintings. Most often he is correct.”

“We walk the trails together and talk about the trees and love of the river,” she added. “I not only am trying to teach him love of art but love of nature … and the gentleness of the breeze on his face.”

t Helena High School, amidst the typical hustle and bustle of the science labs, the English classrooms and the gym, you’ll find some students getting a not-so-typical education — such as how to care for injured athletes, the symptoms of concussion and proper stretches for different muscles.

These students are part of the school’s sports medicine program, for which the school partners with the widely known Lemak Sports Medicine and Orthopedics, a sports medicine center with locations throughout the Birmingham area,

including one in Alabaster.

Dr. Larry Lemak said the idea for the program came from Shelby County Schools Superintendent Randy Fuller and Rene Day, former coordinator of career/technical education for the school system. Three years ago, Day and Fuller came to Lemak for help developing a sports medicine program. Lemak had no hesitation in saying yes.

“Our goal is to inspire and enlighten students about the field of sports medicine. It is a subject that we have dedicated our lives to and that we are deeply passionate about,” Lemak said.

He said it is essential for high school students to learn about different medical fields before attending college so they can make better

decisions about what to study.

Lemak said they chose to start the program at the brand-new Helena High School because school designers were able to include specific classroom space for the sports medicine program into the school’s construction. However, students are also able to visit Lemak Sports Medicine facilities to see sports medicine in action.

“This is perhaps the greatest benefit that we anticipate for our students,” Lemak said. “While classroom learning is important, it does not provide students with real work experience to prepare them for a career path after graduation.

Exposure to workplace environments is needed to bridge the gap between learning in the classroom and application in the work environment.”

Corey Lock, a health sciences teacher at Helena High, said he was thrilled to learn about the sports medicine program.

“When I interviewed for this job and found out what the Shelby County Career Tech department and Lemak Sports Medicine were trying to create, I knew that it would be an incredible opportunity to show students what the professions in sports medicine are all about,” he said.

The beginning sports medicine courses are geared toward ninth- and 10th-graders, and students have the opportunity to further their educations with intermediate and advanced courses. In courses, students learn everything from basic injury prevention and CPR to emergency care techniques, basic pharmacology

and injury rehabilitation. Advanced students will be able to observe and work at internship sites in the Shelby County area, Lock said.

Lock, who has a sports medicine degree, said he believes the program prepares students for a collegiate program.

“We cover the same material as I covered in college for this program,” Lock said. “We don’t expect them to know it at the same level while in high school, but they will be light years ahead of students who do not go through a similar program.”

This is the program’s first year, and it already has 100 students enrolled.

Lock said he expects the number to grow.

“We hope to add another instructor in our third year as a program,” he said.

— Dr. Larry Lemak Macie Frederick, a senior at Helena, said she chose to participate in the sports medicine program because she hopes to pursue a career as a physical therapist.

“This program has made me decide what I want to do career-wise,” she said. “I hope to have a future working closely with athletes and sports.”

Frederick said she believes the program is a fantastic stepping stone.

“This program is important to me because it is a great environment to get experience in, and I have learned so much,” she said. l

central Alabama and is the main source of water for the city of Birmingham, its surrounding communities and many other communities downriver, according to a CRk brochure.

As the state’s longest free-flowing river, the Cahaba has a watershed covering more than 1,800 square miles and flows through the following eight Alabama counties: Shelby, St. Clair, Jefferson, Tuscaloosa, Chilton, Bibb, Perry and Dallas.

The Cahaba has a fish population greater than any other temperate river of its size, with many fish and mussel species classified as rare and endangered, the brochure said.

“The primary change (in the river) is the increase in the sedimentation that is accumulating in the riverbed,” Crawford said. “If we’re not careful, it’s going to turn into a barren channel.”

CRk is composed of volunteers, including a seven-member board of directors and nearly 200 active members. CRk interfaces with the community through social media sites. The group currently has about 4,500 followers on Facebook and more than 600 followers on Twitter.

“Every dime we get goes into our study and goes into our work,” Crawford said. “We plan on examining the science of the Cahaba.”

Last summer, CRk volunteers monitored eight sites on the river they considered high-use locations.

“These are swimming holes, canoe launches and fishing sites where a large number of people come in contact with the water,” Crawford said. “We tested the water for bacteria, E. coli and other coliforms. clean and some that were constantly so polluted that I would not advise anyone to go into the water.”

Crawford and other CRk volunteers monitor sites along the river to learn more about the river and make information they gather available to the public in a timely manner.

Much of the river’s pollution stems from storm water running off impervious surfaces such as roads and parking lots and carrying chemicals and litter into the river.

“Storm water runoff is killing the river,” Crawford said. “It runs off fast and hot and puts more water faster in the river, scouring the banks, bringing in toxins, whatever is on the road. That’s a real concern.”

Construction sites and six waste treatment plants in the upper Cahaba also pose threats to the river because of their potential to overflow at any given time, Crawford said.

“I think we’ve developed so rapidly we haven’t been attentive to the greatest treasure we have,” Crawford said. “We’re the problem, and we can also be the solution. Be grateful for our drinking water that’s clean.”

CRk welcomes volunteers for cleanups it holds on the Cahaba each year.

CRk partnered with Canoe the Cahaba, Friends of the Cahaba River National Wildlife Refuge and Alabama Power for a river cleanup on March 14.

“In Shelby County, a number of creeks flow into the Cahaba, and we have to be concerned about all of them,” Crawford said.

“Everything from here goes to the Gulf (of Mexico).”

CRk is a licensed — Dr. Myra Crawford member of the global Waterkeeper Alliance and is a member of River Network.

According to the Riverkeeper’s website, CRk monitors the Cahaba watershed to identify violations of clean water legislation, namely the Clean Water Act that Congress enacted in 1972 to protect U.S. rivers, lakes, streams and vital wetland habitats.

Examples of CWA violators are contractors, builders and businesses that fail to meet the requirements of their National Pollutant Discharge Elimination System (NPDES) permits.

ollege Night at the University of Montevallo has occasioned many things in its history: A jeopardy question, a television actress (‘59 graduate Polly Holliday went on the play “Flo” on the 70s sitcom Alice), and an exhibit at the Library of Congress that gave ode to the tradition’s status as a “Local Legacy.”

The competition is the highlight of the University’s week of homecoming celebration.

Continuous since its commencement in 1919, College Night has redefined homecoming for the small, liberal arts college. And—unlike many homecoming celebrations at universities across the nation—this competition is entirely intramural.

“The in-school rivalry is unique,” said Diane Kennedy-Jackson, media relations and communications manager for the university.

The student body divides into two sides, purple and gold. Each side competes in various activities to win points, but the biggest competition is the musical productions that each side must put on complete with original scripts, music, lyrics, costumes, choreography, sets and directions.

“College Night is done from the ground up by students. The scripts, costumes…they do every bit of the work. It’s one of the most incredibly team building experiences they could have,” KennedyJackson said.

The tradition began in 1919 as a way to celebrate the school adding the “college” distinction to its title. Three years later, the event had become the fierce competition between purple and gold teams that it remains is today.

The competition has evolved in its nearly 100 year history: Performances were first staged in the dining hall until 1927, when they moved to Reynolds Hall. In 1930, College Night moved to the newlybuilt Palmer Auditorium. Originally, College Night performances included a toast, “pep song,” slow song, stunt and impersonation, but in 1950 students and faculty decided each side should stage a single production incorporating drama, comedy, music

and dance. “(College Night) always evolved and it is still evolving, but that’s okay too,” said Libby Queen, who graduated from the university—then known as Alabama College—in the class of 1959. Since graduating, Queen has served on the University of Montevallo board of visitors, the alumni board, and was appointed by Governor Riley to the board of trustees.

Queen, who pulls for the purple side, still remembers who won each year she attended the school and what an incredible experience each win was for her team.

Once, when a boy she was seeing came from Auburn to witness the shows, he was confused by the emotional response of all of the students.

“When the SGA president announced the winner, all of the golds and purples cried,” Queen — Libby Queen said. “He said, “Who won?

Everyone was crying.’”

“You cry if you win, you cry if you lose,” Queen explained.

Many things about the performance have changed since her time in school, Queen said. Since students did not have microphones, actors and singers had to project to fill the auditorium and chants and cheers were kept to a minimum during the show so attendees could hear the dialogue. All of the students wore the same outfit—white duck pants with a gold or white shirt with purple lettering—that indicated whether they were involved with sound, lighting, or the play. In addition, Queen said professors were very lenient during January, when

practices were in full swing.

“We had no exams during that time because everyone was involved in one way or another,” Queen said.

Despite the changes, some things will always stay the same about the event.

“I still go to all of the performances. I still pull for the purples,” Queen said.

For Melanie Poole, a graduate from the the class of ‘86, College Night was a very memorable

experience.

“College Night was probably the most fun I ever had,” Poole said. “It brought me closer to people.

Those friends I still have today.”

Poole, who pulls for the gold side, said the competition allowed her to interact with students in all different fields of study and provided valuable experience for the future.

“I got to know people I wouldn’t have run around with if not for College Night,” Poole said. “It gave

me a lot of leadership skills that have been good for my career.”

The purple side won three of the four years Poole was at the university, with gold claiming victory Poole junior year, when she served as student leader for the gold side.

The moment the group found out they won was “hard to describe,” said Poole, who still has the slip of paper the SGA president handed her with the winning side printed on it.

“It was a whirlwind,” she said.

Poole continues attending College Night—she hasn’t missed a performance since she was a freshman in 1982—and her class ran through the script during their 30th anniversary celebration this year.

“People are very loyal to College Night,” Poole said. “So many people can participate. It crosses the barrier of so many skill sets and personality types.”

Alumni flood the campus for homecoming week, and tickets to College Night often sell out within days. “(College Night) is one of two events that bring alumni back to the place we call the University of Montevallo, and what they think of as home,” Kennedy-Jackson said. l

o say that my mom was a wanderer would be an understatement. She was certainly a free spirit, but that often came with a price.

It was not uncommon for mom to stay in daily rate motels. I’m not speaking of the Marriot or the Sheraton, but what are more appropriately termed “roach motels”. My mom was dating a guy and they were staying at a motel in north Birmingham when I was there to visit one weekend. Even though it was a dump, Nanny, my grandmother who I lived with, felt it was important for me to be with my mom.

As I look back, I often wonder if it was less about growing closer to my mom or Nanny showing me how life can be if I choose.

On this particular weekend, as with most, there was lots of drinking, cursing, and yelling. There wasn’t anywhere to go in the one room motel, so

I was right there when her boyfriend decided to back hand my mom for whatever reason. As Mom recovered with blood coming out of her nose, she went outside. I thought she had left, and there I was with this monster. I recall sitting on the bed while he paced the floor mumbling and I prepared myself for what was to come of me.

But Mom was a fighter and she didn’t stay gone long. She returned with a metal fence post, still dripping wet from the rain outside, and told me to get out of the way. My momma clubbed that man in the head knocking him to the ground. He fell like a tree and made no effort to catch himself. I thought she had killed him, but was somewhat relieved when he awoke the next morning. He had no recollection of how he got the knot on his head and I wasn’t about to tell.

Stories like mine are not unusual. They happen often and we investigate them daily. I share my personal stories for the purpose of showing others they’re not alone, different, or forgotten. There are

many people within our area that pay by the day just to get by.

It’s not just in the trailer parks or the Section 8 housing, but it’s behind the castle doors in our million dollar homes. It’s not just the women and children that live in our shelters, but it’s the families that live next door to you or even sit on the pew next to you in church.

Unfortunately in domestic struggles, children are often used as a tool to get what one may want in a disagreement. We may not think our children know what’s going on, but those little ears hear everything.

Abuse comes in many forms, from physical to mental, and as the daily rates are being paid, they take a toll on not just the victims, but everyone around. Abuse leads to mothers worrying about their daughters, fathers spending money to treat their children, and employers losing productivity due to sick time taken because the employee has a black eye or is not allowed to leave the house until her chores are done.

Very young children often don’t even realize they’ve been abused until the marks become noticeable and somebody steps in and says enough is enough.

What we must do as a society is have compassion and understanding for those in these relationships.

Telling a victim that they just need to leave is not a coping strategy or an out; it’s usually not even an option. Abusers have an uncanny ability of trapping their victims and their children. They can use the child as further grounds to manipulate them and make them submit. Subtle reminders that there are places within our area that are there to help can be a start.

One such place nestled in Columbiana is the Shelby County Child Advocacy Center, commonly known as Owens House. I proudly serve on this board and my profession has allowed me to see hundreds of families escorted through some very difficult times. Owens House is incredibly unique in that it allows a child and his family to heal from previous encounters. That child will one day grow up and either contribute to society or become a burden. Statistics tell us that the abused often become the abuser.

We must intervene.

April is Child Abuse Prevention month. For Owens House, it is a month to recognize those that can help the abuse victims, but for those victims, it is a price they pay daily. l

We may not think our children know what’s going on, but those little ears hear everything.

hrough the columned entrance of the Jefferson State Community College Shelby-Hoover campus, students clad in white chef’s attire are hard at work, prepping prepping meat, creating edible flowers and learning the secret to a perfect hollandaise sauce.

In other words, just another Monday for the 225 students enrolled in Jeff State’s Culinary and Hospitality Institute. Designated “Exemplary Accreditation Status” by the American Culinary Federation, the two-year program provides students with intensive instruction and hands-on experience, giving them the tools to walk right into a job.

Experience is a key feature of the Jeff State Culinary and Hospitality Institute, and something that sets Jeff State’s program apart, Director Joseph Mitchell explained.

Each member of the faculty brings real-word experience into the classroom.

“For an instructor to teach, they have to have industry experience,” Mitchell said. “Yes, they’re following the curriculum; yes, they’re teaching established standards, but they’re also teaching from experience.”

Mitchell brings years of industry experience and educational training to the program and knows what skills his students need to be successful in the field.

He began his long career in Nashville in an apprenticeship program. He landed a position at the Opryland Hotel for 10 years, followed by a stint as a pastry chef at the Belle Mead Country Club. He also worked at numerous restaurants in the Nashville-metro area, including the Wild Boar and Mario’s. He holds a master’s degree from Auburn University and is currently working toward a doctorate degree.

Jeff State’s program offers four courses of study, three specific to the culinary industry: Foodservice and Culinary Management, Culinary Apprentice and Baking and Pastry.

“When students come into the program, they’ll take our entry level courses (which are) essential to all the degree options,” Mitchell explained.

Students learn from professors in a lecture-style classroom, fitted with a demonstration kitchen, they then apply what they learned in the lab.

The Hoover-Shelby campus of Jeff State is fitted with state-of-the-art facilities for the culinary program, including a large, industrial-style kitchen, specialized cleaning and dish room and a pastry lab.

“Everything is exactly what they’ll find in the industry,” Mitchell said.

After completing the basic “core” classes and labs, students specialize their training, choosing to take a “savory” or “pastry” path, Mitchell explained.

preparing, processing and cooking meals to managing a restaurant.

The pastry and baking education covers the sweeter side of the industry. Students learn to bake pastries and cakes, create truffles and candies, craft wedding cakes and craft chocolate showpieces.

“It allows for creativity, it allows for artistic work,” Mitchell said of the baking and pastry line of study, noting the attention to intricate

detail required in the field. “It takes more patience, a higher degree of practice and a higher degree of commitment. It’s very labor intensive.”

During their time at Jeff State, students in the Culinary and Hospitality Institute gain experience through internships at local restaurants on through the school’s on-site bistro, Bistro proVare.

instructor-led courses and labs along with an internship, or they may follow an internship-heavy course of study, also known as an apprenticeship program. Apprenticeship students are required to hold a 40-hour a week internship.

Throughout the semester, they work on the job, keep a log of their tasks and duties and report back to an advisor at Jeff State.

“It’s not just a full time job, it’s a full time job that’s organized through an apprenticeship program,” Mitchell said.

Whether an apprenticeship program student or not, internships play an integral role in Jeff State’s Culinary and Hospitality Institute education.

Students serve their internships at a number of restaurants in the community, such as the Renaissance Ross Bridge, the Westin Hotel and Mountain Brook, Vestaiva and Greystone country clubs.

Many students also continue as fulltime employees at their respective property upon completing their degree, Mitchell added.

Demand for Jeff State culinary students is high, in part because of the degree, but also because of their tested and proved on-the-job skills and training.

“There’s high demand, it’s a degree that’s really based on what they can do,” Mitchell said. “(Jeff State) really gives them real-life, hands-on experience that prepares them to walk into the workforce.” l

EGGS BAKED OVER SAUTﾃ右D MUSHROOMS AND SPINACH 1 Tbsp. olive oil 1 large leek, white and light green parts only, cut into 1/2-inch pieces 1 Tbsp. unsalted butter 1 lb. white or cremini mushrooms, thinly sliced (about 6 cups) 1 Tbsp. soy sauce 1/4 cup dry red wine 5 oz. baby spinach Salt and pepper Fresh eggs

1. Preheat the oven to 350 degrees.

2. In a deep skillet, heat the olive oil. Add the leek and

cook over moderate heat, stirring, until softened, about three minutes. Stir in the butter and mushrooms.

3. Cover and cook, stirring occasionally, until the mushrooms are softened and a lot of liquid is released, about seven minutes.

4. Uncover and add the soy sauce and red wine and cook over moderately high heat, stirring, until the liquid is reduced to 2 tablespoons, about 5 minutes.

5. Add the spinach and stir until wilted, 2 minutes.

Season with salt and pepper.

6. Crack eggs on top of spinach and mushrooms. Bake for 10 to 12 minutes, until the white is barely set and the yolks are runny. Let stand for 2 minutes.

QUICK RADISH PICKLES 6 oz. radishes, quartered 3 Tbsp. rice vinegar 2 Tbsp. sugar 1 piece peeled ginger, cut into this matchsticks (About 1 Tbsp.)

1 tsp. salt

1. Toss radishes with 1 teaspoon salt in a bowl and let stand 30 minutes. Drain in a sieve.

2. Heat vinegar with sugar in a small saucepan over medium-low heat, stirring, until sugar has dissolved. Remove from heat and add radishes, then stir in ginger.

3. Transfer to a small bowl and marinate, chilled, at least 2 hours.

HONEY GLAZED CARROTS 1 lb. baby carrots 1 Tbsp. butter 2 Tbsp. honey Fresh pepper

1. In a medium saucepan, bring water to a boil.

2. Add a pinch of salt and then carrots and cook

until tender, about 5-6 minutes.

3. Drain the carrots and add back to pan with butter and honey.

4. Cook until a glaze coats the carrots, about five minutes. Season with salt and pepper.

Seasonal allergies affect over 35 million people in the US, and Alabama allergy sufferers know that springtime can be the worst. In 2014, Birmingham moved from #14 to #9 in the ranking for spring allergy capitals.

Allergies can have a significant effect on daily living. Symptoms such as sneezing, itching, runny and stuffy nose, and watery eyes are all too common. So what can you do about it?

Follow these simple steps to limit pollen exposure and consider seeing an allergist/ immunologist to come up with the best treatment plan.

• Keep windows closed and use air conditioning to filter the air.

• Postpone outdoor activities until later. Pollen is emitted between 5-10 AM. • Stay indoors when the pollen levels are high.

• Stay indoors on hot, dry, and windy days.

• Don’t hang your laundry out to dry.

• Shower and wash your hair every night before going to bed.

• Wash pets and vacuum often.

• Monitor pollen levels from the National Allergy Bureau at www.alabamaallergy.com.

• Most importantly, be sure to take any medications prescribed by your allergist.

Educators play a vital role in the lives of Shelby County children, impact our communities every day and help develop the workforce which our Shelby County businesses and organizations will need in the years ahead.

Also, the Chamber is pleased to announce its 2nd annual Student of the Year recognition program.

Shelby County students are our potential business and community leaders and will comprise a significant portion of our workforce in the future.

As such, the Chamber launched this recognition program to celebrate student excellence in the classroom throughout Shelby County. All nominees will be recognized and two recipients (college track and career track student) will receive a one-time financial investment to assist their continuing

development.

Ambassador of the Month Congratulations to Kimberly Kielbasa for earning Ambassador of the Month. Kim is the Marketing/ Catering Coordinator for Chubb’s Grub Station. When given the opportunity to be a part of the Chubb’s Grubb Station family she was thrilled. The skills and talents that owners Will and Stephanie Cholewinski share with their team and patrons of the restaurant is above and beyond measure.

Chubb’s Grubb Station supports their staff with the warmth and sense of family.
