Farm Products | 2026–27

Creating products and experiences from our land makes Shelburne Farms a unique and powerful place for learning. Our working farm is a classroom for curiosity— to explore a more sustainable future together.

Our handcrafted cheddar and pure maple syrup are touchstones of this landscape for learning. They reflect the pastures, Brown Swiss cows, and sugarbush of our Vermont farm.

Farmstead cheddar handmade from the raw milk of our Brown Swiss cows. SIX-MONTH Our youngest, most versatile cheddar has a supple texture and delicate flavor — like fresh cream and buttered toast. Perfect for breakfast with jam, or melted in your favorite dish.

ONE-YEAR | ACS Winner 2025 After aging a year, our cheddar develops a subtle sharpness. Tastes of lush pasture and freshly cut hay give way to a delightful finish. Pair with apples and honey or cured meats.

Waxed block ½ lb, 30812..............................$16 1 lb, 31612............................... $27 2 lbs, 33212........................... $46

TWO-YEAR | ACS Winner 2026 This extra sharp cheddar will melt in your mouth. Its flavor is classically Vermont — savory with a rich, creamy texture. Great with cider, beer, or with chocolate for dessert.

Waxed block ½ lb, 30824.............................$18 1 lb, 31624...............................$31 2 lbs, 33224............................$51

THREE-YEAR RESERVE Only a small percentage of our cheddar can meet the taste and texture criteria demanded for three-year. The result is a crumbly, savory cheddar with herbaceous, slightly fruity flavors. Enjoy with roasted nuts or full-bodied red wine. SMOKED Our award-winning young cheddar is hickory wood-smoked for six hours to give it a subtly sweet, bacon-like flavor. Delicious with cured meats and dried fruit. CLOTHBOUND Cheddar wheels bound in cheesecloth, sealed with lard, and cave-aged at the Cellars at Jasper Hill to yield a flaky texture and earthy flavor. Pair with ales, pickles, and mustard. TRACTOR A strong-flavored cheddar, never the same twice. Enjoy it any way you like for any occasion. BEER Our cheddar curds are marinated in the flagship IPA of local brewery, Fiddlehead, to produce a cheese with flavors akin to sourdough bread topped with cheddar. Pair with IPAs, dry cured salami, and whole grain mustards. MARSHALL’S RESERVE A cave-aged block cheddar aged for a year at the Farm, then 4–5 months at the Cellars at Jasper Hill, for a pliant texture and both savory and citrus flavors. Pair with red Zinfandels, salami, and sourdough.

Yield: 12 triangle-shaped scones 12 Tbsp cold unsalted butter (1 ½ sticks), plus 1 ½ Tbsp for topping 4 cups flour 4 tsp baking powder 2 tsp salt 5 cracks fresh pepper or ¼ tsp ground 1 Tbsp chopped herbs (any mix of dill, parsley, chive, rosemary, sage, or thyme)

½ cup grated cheddar (¼ cup in batter, ¼ cup for topping the scones halfway through baking)

2 cups heavy cream

¼ cup maple syrup, plus 1 Tbsp for topping 1/3 cup cubed cheddar ¼ cup milk

Chef Jackie’s Maple Cheddar Scones 1 Pulse the butter and dry ingredients (including ¼ cup grated cheddar) in a food processor until texture is like sand. Remove the mix into a bowl.

2 Gently fold in the cream and syrup. Form the dough into a loose square about 2 inches thick. Let rest for 10 minutes.

3 On a lightly floured surface, roll the dough into a loose 1-inch thick rectangle. Cut dough into quarters, stack, and roll out again. This incorporates the shaggy bits of dough. (Do this again if needed.)

4 With the rectangle’s short edge facing you, place half of the cubed cheddar

in its center. Fold up the bottom third to cover the cheese. Place the remaining cubed cheddar on top of what you just folded up. Then take the upper portion of the dough and fold it over that cheddar. Give it a gentle roll to flatten a bit and let it rest for 10 minutes.

5 Roll out the dough again into a 1 ½–2 inch thick rectangle. Cut into desired shapes. Bake for 11 minutes at 400°F (375°F convection) on a greased parchment-lined sheet tray. Brush with ¼ cup milk.

6 Remove the scones from the oven and sprinkle the remaining ¼ cup of

grated cheddar over their tops. Rotate the tray and bake for another 6–10 minutes or until desired cheese crispiness.

7 While the scones are baking, melt the remaining butter and the maple syrup. Brush mixture on the scones immediately after removing from oven. Enjoy!

Our 1-Year and 2-Year cheddars earned ribbons from the American Cheese Society in 2025 and 2026 respectively, honoring our cheese and dairy teams’ commitment to excellence.

We farm to nurture the health of soils, plants, animals, and people. We are all connected.

In our education sugarhouse, students can watch and learn how maple syrup is made. And every year we join sugarmakers around the state for Vermont’s Maple Open House Weekend, welcoming visitors to explore the sugarbush, learn about the sugarmaker’s craft, and enjoy a taste of delicious maple syrup, often served up in Maple Popcorn!
