After a year of aging, our cheddar develops a subtle sharpness. Tastes of lush pasture and freshly cut hay give way to a delightful finish. Pair with apples and honey or cured meats.

This extra sharp cheddar will melt in your mouth.

Its flavor is classically Vermont — savory with a rich, creamy texture. Great with cider, beer, or with chocolate for dessert.

THREE-YEAR RESERVE

Only a small percentage of our cheddar can meet the taste and texture criteria demanded for three-year.

The result is a crumbly cheddar bursting with bright and fruity flavors. Enjoy with roasted nuts or a fullbodied red wine.

SMOKED

Our award-winning young cheddar is hickory wood-smoked for six hours to give it a subtly sweet, bacon-like flavor. Delicious with cured meats and dried fruit.

CLOTHBOUND

This time-honored process of binding curds in cheesecloth, sealing the wheel with lard, and cave-aging gives you a cheese with a flaky texture and an earthy flavor. Pairs perfectly with English ale, pickles, and strong mustard.

TRACTOR

A strong-flavored cheddar that is never the same twice — previously available only at our Welcome Center and at farmer’s markets. Enjoy it any way you like for any occasion.

BEER

Our new beer cheddar is infused with Shelburne’s own Fiddlehead Brewing Company IPA to produce a cheese that is supple in texture, with a hoppy aroma and flavor akin to a sourdough bread. Try it with pretzels, your favorite IPA, and honey mustard.

Renee cares for our 110 Brown Swiss cows and moves them to fresh pasture each day. Andi crafts their raw milk into our farmstead cheddar in the historic Farm Barn.

Stay, learn, and experience the Farm We invite you to visit, participate in farm-based education programs, enjoy our beautiful campus, and stay with us for a night or longer. The historic Inn at Shelburne Farms welcomes you from mid-May to mid-October for rooms and delicious farm-to-table meals. We also have guest houses available year-round.
