Welcome to Shelburne Farms. We are a unique nonprofit organization educating for a sustainable future. When you purchase our cheddar or other offerings, you become a part of this work. It’s not only because our products are sustainably produced, whether here or on partner farms. And it’s not just because your purchase makes possible our education programs and outreach. It’s that the success of our mission rests on the backbone of this and other working farms. Farms and forests can teach, guide, and inspire. They ground and connect us to living with what ecologist Aldo Leopold called a land ethic. We are deeply grateful for your support and for being part of the Shelburne Farms community.

Our grass-based dairy Caring for our land and animals At Shelburne Farms, healthy soil and plants make for healthy cows — and healthy food. These are the basic principles of agriculture that we follow. Our cows are out on pasture throughout the growing season and fed our hay and silage through the winter. We also feed them some grain to balance their diet. The attention we give our land and our Brown Swiss cows shows up in the milk. Fresh and untreated, it’s one of just four ingredients in our cheese: raw milk, culture, calf rennet, and salt. Together, they produce all the textures, flavors, and aromas you find in our cheddar. I’m proud of the way all of us at the dairy care for our land and animals, while supporting the Farm’s education programs and producing wholesome milk and meat.

Learn about dairy farming and cheesemaking Sun to Cheese Tours, May–October Our farmers and cheesemakers explain the process of turning fresh milk into farmstead cheddar as you tour the dairy and taste cheese. Pasture to Palate Program, May 24–26, 2016 At this annual program, let our inn and working farm be your classroom for exploring the story of our farmstead cheddar. Enjoy farm-to-table meals, Vermont artisanal cheese tastings, and guided wine, hard cider, and craft beer pairings. Our award-winning farmstead cheddar Cheddar is our favorite verb It describes the amazing alchemy we engage in every day at Shelburne Farms, transforming the raw milk of our beautiful Brown Swiss cows into our delicious farmstead cheddar. We cheddar much like they did in 16th century Cheddar, England, adapting a centuries old process to our farm. We build up slabs of fresh, warm curds, let them press under their own weight, then flip, rotate, and re-stack them. We do this entirely by hand, blending both chemistry and craft to give our cheese the terroir (taste of place) unique to Shelburne Farms. We love crafting such a great product. We hope you enjoy it!

Forest stewardship and maple syrup

Working and learning in the woods From the air, our 1,400-acre Shelburne Farms landscape is a mosaic of cropland, pasture, forest, buildings, lawns and roads. On the ground, our forest management is every bit as interwoven and complex. We produce lumber, firewood, maple syrup, and a host of invisible “ecosystem services” like clean air and water. We also manage our woodlands’ history and health for the community that enjoys our trails, for the students who learn here, and for the wildlife that lives here. And we do all this in the face of invasive plant and animal species, deer browsing, and climate change. But it’s gratifying work to maintain a living system with “forever” in mind.

Stay and learn

Experience the Farm Shelburne Farms’ campus is open to you for so many farm-based learning opportunities! Staying overnight at the Farm is a special way for educators, adults, and families to participate in our programs and to enjoy our miles of walking trails and beautiful working landscape. Carefully restored in 1987 to retain its historic character, the Inn at Shelburne Farms, with its beautiful flower gardens overlooking Lake Champlain, is open mid-May to mid-October. For rooms, meals, and gatherings, we offer: • 24 guest rooms in the main house, individually decorated with many original furnishings; • a farm-to-table restaurant serving breakfast, dinner, and Sunday brunch; • four guest cottages; and • the Coach Barn for workshops, meetings, and special events.
