Kickstart Your Christmas Shopping

I

t’s November, and just in case there are some readers in the bittersweet spot of ready to shop but overwhelmed at getting started, here are some tips to get your gifts and keep your sanity: • Make a list. Just like Santa, write down a list of all your recipients and an estimated budget for each. This would also be a great place to brainstorm some gift ideas, so you know where to focus your attention when good deals come your way. Update your list as you purchase, so you know who’s taken care of and who is still lacking. And when you have someone checked off and/or your budget is maxed for that person – stop shopping for them. Some people are really easy to buy for, but remember your budget has value. The worth of your gifts isn’t found in the money spent.

• Know where your sales are. Black Friday is an easy day to look for good deals – and many can be found online without going out into chaos. And don’t forget about the rest of the weekend. Small Business Saturday and Cyber Monday are also great opportunities to find a bargain.

Honestly, there are amazing deals throughout the whole holiday season. If you miss a deal, keep checking – it may go back to that price soon.

• Again, DON’T over-shop. This season is about so much more than gifts – find value in time spent with family and memories made. The number of packages under the tree is less important than your financial well-being going into the New Year. Don’t go into debt over gifts that will most likely be forgotten or lost in a drawer within a month or two. Show your love by putting down your phone and having a real conversation or baking cookies together.

The History of Vegetarian Diets I wanted to explore the progression of plant-based eating from the beginning.

Vegetarian diets are not just a trend; they have long been a staple of human dietary patterns.

There are five different varieties of vegetarian diets ranging from lacto-ovo-vegetarian to raw vegan. The one a person chooses could be because of a personal or religious choice.

The term “plant-based” has become a popular term recently as health professionals are simply trying to encourage more plant-based eating without taking out meat completely from the diet. The most known plant-based diet would be the Mediterranean Diet that has helped many people add more real food to their diet.

The first known group to abstain from eating meat for the purpose of achieving longevity were Pythagoreans – followers of the Greek philosopher Pythagoras in the 6th century B.C. In the 1400s, Leonardo da Vinci famously became a vegetarian followed by Benjamin Franklin in the 1700s.

Meat has always been part of the ancient human diet, though at much lower levels than today. In ancient Greece, eating meat was mostly celebratory. Fast forward to today, and the 2015-2020 Dietary Guidelines for Americans include information to create a balanced vegetarian eating pattern to meet nutritional needs. Examples of non-meat protein foods are eggs, milk (for some), beans, peas, nuts, nut butters and soy products. Vegan meat replacements that mimic meat’s texture and flavor also are forthcoming, with several products already on the market.

A vegetarian diet is not something I personally push on my patients, but it is something I will support and help show the evidence for improved outcomes in many chronic diseases. Blue Zones Project of Pottawatomie County is currently trying to help many just have more plant-based foods in their diet.

Below is a recipe to add some pumpkin to you day.

Pumpkin Muffins Fall is officially here, and it is time for pumpkin everything. Breakfast can be rushed on most mornings. I have found it helpful to bake something on the weekends so we can grab one on our way out the door. I have also enjoyed these as a snack with a warm cup of green tea. I think I would like to try this recipe again but with nuts.

Ingredients: 4 eggs 1 tsp cinnamon 1 cup pumpkin puree ½ tsp salt 1 cup unsweetened almond milk 2 cup old fashion oats ¼ cup pure maple syrup ½ cup dark chocolate chips 1 tsp vanilla extract 2 tsp baking powder Directions: Preheat oven to 375°F. Whisk together the eggs, pumpkin, milk, maple syrup, vanilla extract, cinnamon and salt. Once combined, add the oats, chocolate chips and baking powder. Stir until combined. Pour into greased muffin tin. Bake for 20-25 minutes until cooked through.

Makes: 12 servings, 1 muffin each Nutritional Information per Serving: Calories: 119 Total Fat: 4g Saturated Fat: 1.5g Cholesterol: 62mg Sodium: 219mg Carbohydrates: 18g Fiber: 2.5g Protein: 4g Nutrition 101: Pumpkin is a type of winter squash and has a lot of nutritional similarities to a vegetable. Pumpkin is very high in beta-carotene, a carotenoid that your body turns into vitamin A. Additional antioxidants found in pumpkin may protect your cells against damage by free radicals, lowering your risk for cancer. Besides being packed with vitamins and minerals, pumpkin is also relatively low in calories as it is 94 percent water. The seeds of a pumpkin are edible and also very nutritious. Added benefits of pumpkin are strengthening your immune system, heart health benefits and healthy-looking skin. Although pumpkin is healthy, many pumpkin-based junk foods such as lattes, candies and pies are loaded with sugar and don’t offer the same health benefits.

Holiday Glee Coming Downtown

ith the holidays fast approaching, locals are often on the lookout for fun, familyfriendly things to do, and cost can be a factor for many.

That makes some of the upcoming free events in downtown Shawnee even more appealing. It’s almost time to bundle up and head toward Main Street for a couple of local Christmas traditions.

The annual tree lighting ceremony in Celebration of Life Park is slated for 6-9 p.m. on Friday, Nov. 15th. The mammoth tree at the corner of Main and Philadelphia is now about 35 feet tall, according to Ed Bolt, city commissioner and a member of the Safe Events for Families organization.

It will be adorned with thousands of lights, which will be officially illuminated for the first time that evening and remain lit until late January.

“We’ll have performances by elementary school choirs, and a local band will play Christmas tunes,” Bolt said. “There may also be performances by local high school groups that night.”

About 1,500 people attended last year’s tree lighting, and SEFF members would love to see an even bigger turnout this year.

Another Shawnee institution not to be missed is “Oklahoma’s largest nighttime Christmas parade,” according to organizers. This year’s trek down Main Street from Beard to Minnesota will start rolling at 7 p.m. on Thursday, Dec. 5.

“The Christmas parade can always use volunteers,” Bolt said. “People can message SEFF anytime through the SEFF Shawnee Facebook page.”

Entries are also being accepted now, via https://www.jotform.com/SEFFShawnee/shawnee-christmas-parade-2019 and will continue to be taken up until a week before the event.

“We normally get about 100 entries,” Bolt said.

When asked what parade judges like to see, Bolt gave some suggestions.

“The floats have been getting bigger and better each year,” he said. “Lots of lighting is important,

since it’s a nighttime parade. Holding to the theme is good for scoring points too, and this year’s theme will be ‘Winter Wonderland’.”

If the weather is decent, parade organizers expect a crowd of about 20,000 people, making this perhaps Shawnee’s most well-attended annual event.

“We’ve made some changes through the years,” Bolt said. “We’ve eliminated the reviewing stand and allowing entries to stop there and perform.

Instead, we have a band in each block that plays music until the parade reaches them, and then they become the announcers. We want entries to keep moving so that gaps don’t develop. This year, we’re also adding fireworks that will begin as soon as Santa – the last float – clears Minnesota Street.

Everyone will be invited out onto Main to watch them. It’ll be an amazing show.”

When asked about citywide Christmas décor, Bolt offered additional information.

“Last year, the city put up snowflakes on Main Street where they could,” Bolt said. “The new light poles don’t have electricity hookups for lights, and OG&E won’t provide them on the poles.”

It’s unclear at this point if the large white lightup snowflakes – used for many years throughout Shawnee – will be used this year at all.

How has the church and all which should help bring the gospel to every creature been deluded and blinded to the work and plans of the one wanting to destroy God’s people and His Messiah/ Christ? Revelation 12 shows us that dragon, the serpent, that deceiver called Satan trying always to destroy the woman (Israel) and her child (the Give thanks and celebrate the gift of God, but only begotten of God). Artist, Writer, Mother Finds 'Blessing in a Dynamic Disguise'

W

hat is your why? As human beings, we face adversity, challenges and – for some – tragedy that is sure to shift our why throughout a lifetime. We rely on aspects of life to push us through our discoveries, some with intention while others we are unaware of until we find ourselves faced with our biggest fears.

This is what molds our strength and our faith, and it is where we find grace when we think we cannot go on. It is when we are face-to-face with our fears that we discover parts of ourselves that we must shake the hand of that new being and say, “I will go on.”

We must leave our old beliefs, pain and possibly our old why behind. This is where a new chapter begins.

These are the lessons learned by Rrose Tiffany Gere. Born in Madrid, this three-year resident of Shawnee has been an artist, writer and speaker.

She has a story to tell she hopes sheds light to what it means to face loss, to lose faith and to gain strength in the unexpected. Her story has an end, a beginning and a why. She decided after 19 years of darkness to live in the light.

Gere said with a belly full of laughter, “I want to come out with a bang.”

Gere pointed to a picture that hangs on her wall, surrounded by hand made angel wings and art that boldly cries this is surely an important photograph and said, “This is my story." There, hung a picture of a young beautiful woman – her daughter Felicity with her two young children.

“I was so active and full of life,” she said. “I guess that's where she got it.

She was so full of life, so beautiful.”

It was the year 2000 when “she went to heaven.”

“She crashed her car right there at the corner where I lived on her way to come see me,” Gere said. “Right there, right there at the corner of all places.

“We were the caretakers of the school near where we lived. I took care of anything they needed. When the cook was sick, I cooked. We received free rent, free food ... I used to call that place a blessing, and now I call it a

blessing in disguise.”

When asked what she meant by that, she said, “If that incident had not happened, I would not be the kind of person I am now. I am very strong, like a lion. I can now comfort those that are struggling, those that are hurting.

“There is nothing more hurtful in life than burying your own child … there was nothing more in this life that I feared than losing my child. So, I fear no more. My worst fear had come.

What's left to fear?”

Gere reflected on some of the significant details of the year of 2000, describing the path she was on and how it might have taken different turns had it not been for the loss of her young and vibrant daughter. She was working as an assistant for two psychologists at the time when opportunity landed at her feet. She was given the favorable circumstances of a free ride to a higher education. This was an event that some would say was a once-in-a-lifetime opportunity and quite the blessing. Gere was in awe of this gift she had been given and was on her way to great wonders that had once only been a dream.

Some might say, in this moment, Gere had discovered her why and was fully embracing it.

Gere said we are a recipe made from all the things that happen to us – the people we meet and the decisions we make. These elements comprise our story, and when we are forced to face our fears, everything we thought we knew about ourselves is gone in an instant. This is where Gere found herself when that car crashed and killed her daughter. Her life grew dark and silent, not speaking and shutting out the world around her. She was no longer on a journey of joy and accomplishments.

She was lost, angry and distraught.

Losing all faith in God, resenting him for taking her child, questioning “Why, God? Why?” She sought answers and begged for resolution. It didn't fall at her feet the way opportunity did. It didn't sneak up on her like a flower blooming in spring. It wore her out. It broke her.

Rrose decided after 19 years of living that way, she would go on. She would come out of that place and use the strength that God has given her through this “blessing in dynamic disguise,” which is also the title of a book she is writing due to release in early 2020 and offers compassion that so many struggle to find. She has named a not-for-profit organization in her

daughter’s honor – the Felicity Foundation – that aims to bring together those who suffer from a loss of any sort. Gere said it is in community, unity and God’s will that strength is discovered. We were not put on earth to face challenges alone, and Gere said she wants to be a fine example of how we can come through the blessings in disguise and rediscover our why. www.shawneeoutlook.com

Convenience Cannot Replace Relationships

W

hat makes a great neighborhood? Tidy homes and manicured lawns?

Sure, we all like that I suppose.

What about neighbors? Do neighbors affect the way we view a neighborhood?

I suspect the overwhelming answer to that question is yes. About 30 years ago, a neighbor was described as someone who would “look out for your place.” Someone who might gather your mail when you were out of town or watch your kiddos while you ran to the store. They shared common goods with each other like yard tools, flour and sugar.

Just a generation or so later, a neighbor is seen as something different. Today a neighbor is someone who “doesn’t bother anyone.” Never causes any problems. Keeps to herself. Stays off your lawn.

These perspectives on what it means to be a neighbor stand in direct opposition to each other.

How did this happen so quickly?

I believe the answer to that question can inform the answer to the crisis of polarization we see in our society. The crisis of polarization today isn’t so much about the differing ideologies receiving the headlines. Those ideologies are important and worthy of robust conversation. The problem is, the robust conversation is not happening – not at adequate levels. The crisis we face today is a crisis of trust.

Trust is a little like a savings account. It can take a long time to build it, and it can be dissolved instantly through an unfortunate event. Sometimes, those events are our own doing and sometimes not. Even still, trust can be rebuilt over time.

This macro drama is played out on the smaller stages of our neighborhood interactions. The two greatest predictors of neighborhood safety and cohesion are how visible are you to your neighbors and how many neighbors do you know by name, according to information released through

the Project on Human Development in Chicago Neighborhoods.

All the research indicates that neighborhood trust has been diminishing for decades. We are more isolated and lonelier than we have ever been.

Face-to-face interactions are avoided in favor of convenience, which is why at Community Renewal we speak about “intentional relationships.” There was a time when relationships were unavoidable – even relationships of simple acquaintance. They were built into the daily rhythm of our lives in community.

We are afforded so many conveniences now, which do make our lives a bit easier. However, there are also unintended consequences associated with these conveniences that aren’t always easy to see, and the research is clear. The more face-to-face interactions we have – the more neighbors we see and know by name – the safer we will feel. We will develop less subconscious fear of the people we live around. Rather than a crisis of trust, these simple neighborhood interactions

produce a synergistic atmosphere where the budding blossoms of trust are born. This, friends, is what we need right now.

A few weeks ago, some neighbors in town decided to throw a block party. They had not gathered in years – decades maybe. Plus, many of the neighbors were new. As they gathered and acquainted themselves with each other, a few neighborhood concerns came up. There had been some general riff raff and some burglaries that had occurred in the past year. They discussed the option of starting a neighborhood watch. However, no one was all that excited about coming off like a hall monitor. Then one neighbor cleared his throat and said, “This right here. I think we just need more of this.”

More gathering. More interacting among neighbors. More visibility.

Maybe the answer is innate to us all but somehow has become counter cultural. Maybe taking the time to be visible, to interact with and to gather our neighbors builds community. Indeed, it’s the only thing that ever has.

That was the final tally of Community Renewal of Pottawatomie County’s coordinated effort to participate in the National Night Out event that takes place across the country every year.

Starting in 1984, National Night Out is an annual community-building campaign that promotes police-community partnerships and neighborhood camaraderie to enhance the relationship between neighbors and law enforcement while bringing back a true sense of community, leading to safer, more caring places to live.

This mission fits perfectly with that of Community Renewal’s emphasis in bringing neighbors together to counteract isolation prevalent in modern society. The organization worked with its block leaders – neighbors who have volunteered to restore community in their neighborhoods through intentional relationships – across the community to plan parties in their area to encourage their neighbors to get out and spend the evening together on Oct. 1.

“My favorite part was driving through town and seeing all of the different parties happening,” said Zoe Loeser, Community Renewal’s block leader coordinator. “I took a route I knew would have a lot of parties on it, but then I'd see another block party and another block party. It felt like there were parties everywhere.”

Sheila Hisham hosted one of those parties for her neighbors at the Linden Apartments on Kennedy Avenue. She became a block leader not long after moving to Shawnee to be closer to family because she liked the idea of making pointed efforts to learn about the people in her new community.

“I’d see my neighbors, but I didn't know their names,” Hisham said.

She jumped at the chance to host a block party as part of the larger National Night Out effort.

“It was the best night ever,” said Hisham, who particularly liked seeing some of her neighbors dancing and having a good time. “I wanted a community where we could all be one.”

The parties might have all had the same mission of bringing neighbors together, but they all had their own unique flair. According to information provided by Community Renewal, one neighbor gave a Zumba lesson while another party featured someone breaking out a ukulele.

Community Renewal coordinated 30 volunteers to host 20 block parties that had 407 participants as part of its first participation in National Night Out, an annual, nationwide event that brings together neighbors emphasize safer, more caring places to live.

one neighbor from showing up while some who had lived next door to each other for 16 years officially met for the first time. When a birthday party came to the attention of some partygoers, one girl ended up with a sash, tiara and special cupcake with the right number of candles.

Community Renewal cites research showing how relationships impact people’s lives as compared to other common factors that often make headlines. For instance, living with obesity can lower a person's life expectancy by 20 percent while excessive drinking can impact that be 30 percent. A study analyzing the effects of loneliness showed living in isolation lowers a person's life expectancy by 45 percent – the equivalent of smoking 15 cigarettes a day.

Block leader Debbie Bosch had hosted her own block party a month before National Night Out, but that didn’t stop her from putting another one together on Oct. 1 despite being in the middle of a remodel at home. While the neighborhood kids enjoyed the bounce house, some of the adults set up a pickleball area to take part in some friendly competition in the driveway.

“It’s a unifying event,” Bosch said. “Everybody around town knows there are other block parties going on. If someone on another block couldn’t have a party that night, they could come over to ours or another one near them.”

In addition to the block leaders’ efforts, Com-

munity Renewal got a lot of participation from some local businesses and agencies in launching what organizers hope will become an annual tradition the first Tuesday of October. Extreme Inflatables partnered with Community Renewal on bounce houses at some parties, Shawnee police officers stopped by the parties to say hi, Berkshire Hathaway HomeServices Benchmark Realty provided 60 cases of water to keep the partygoers hydrated, the City of Shawnee coordinated the street closures and Jesse Monday Media produced a National Night Out video.

Though events like the National Night Out parties help in building a sense of community in neighborhoods, one annual event isn’t enough to bring about the kind of intentional relationships emphasized by Community Renewal, organizers wrote in releases following the event. Just like running one marathon won’t make someone healthy indefinitely, an evening of fun can’t substitute for the consistent, purposeful effort required to maintain healthy relationships. So Loeser and her colleagues will continue working with block leaders like Hisham and Bosch to plan things throughout the year to bring neighbors together.

“I’m all in,” Hisham said.

City, Private Groups Work Together to Bring Back Lions Club Park

rior to the ribbon cutting, gathering all the representatives from the City of Shawnee, YMCA, Lions Club, Blue Zones and more present at the grand reopening celebration of Lions Club Park on Oct. 19 took a little time.

Those few minutes were nothing compared to how long some involved in the project waited to see the enclosed playground and pavilion get the renovations and repairs it needed to serve the neighborhood near the corner of Airport and Federal as well as the city as a whole. “The cooperation between the city, civic clubs and the neighborhood has been tremendous in getting the park back up and running,� said Butch Lutomski, second vice president of the local chapter of the Lions Club.

Lutomski estimated that the park had been closed for nearly four years after the need for renovation and repair became clear.

The city's public works director Brad Schmidt said workers from three different departments worked quickly to address issues with the sidewalks, parking lot, benches, grills, drainage, water lines and more. After meeting with the Lions Club and YMCA in August, Schmidt's crews worked quickly to get the park reopened within a couple months.

"The teamwork and work that our guys put in in such a short amount of time impressed me," Schmidt said.

Though the reopening of the park was not part of the parks master plan the city is looking at implementing in the future, the 2015 park inventory and assessment offer-

ing recommendations for that plan identified Lions Club Park as one of eight major parks to prioritize in order to maximize the experience of visitors using the cityMs available resources. As the city begins to implement that master plan, Schmidt said there likely will be more improvements made to Lions Club Park and others.

“Eventually, we will need to take a look at the number of volunteer hours,” Lutomski said at the Oct. 19 reopening ceremony. “Even this week, I drove by and counted 22 city workers here getting it ready for today.”

The ceremony featured the ribbon cutting by Mayor Richard Finley followed by a stampede of kids through the crepe paper strung across the gate of the playground as they raced to the slides, swings and sand of the newly renovated, fencedin park. Clowns joined the party of face painters, bounce houses and healthy snack distributors on the sunny Saturday morning.

A major contribution to the park project came from the YMCA, which secured a grant worth more than $12,000 from Safe Routes to Parks to help get the park on the road to its former glory.

“It just needed some TLC,” said Amanda Biffel, who was one of the YMCA representatives at the reopening ceremony. “It was a labor of love.

“It’s a great family-friendly spot. It’s in a perfect location.”

The reopening is fortunate timing for the park’s namesake as the local Lions Club gets ready to celebrate its 100th anniversary next month, Lutomski said. The playground and pavilion pair with the baseball Lions Club Park baseball fields just east of the playground on Federal.

Having spaces like this is important not only

for families to have somewhere to gather and build a sense of community, Lutomski said, but they also help provide activity options for kids who have more stagnant ways to spend their time than the generations before them.

“You’ve got to have the community be able to get out and do things,” Lutomski said. “Parks like this provide that.”

Healthy Habits for Happy Holidays

he holiday buzz is starting.

It’s that time of year when families gather and enjoy each other’s company and the holiday season. It is also a time when those extra pounds can sneak up. During the holiday season, we are surrounded by family and lots of food.

Carrye Wells “During this time of year, when we get together with our family, food is usually the centerpiece of the event,” said Carrye Wells, lead dietician at SSM Health St. Anthony Hospital – Shawnee.

We’ve all heard the statistic that the average person gains 7 to 10 pounds between Thanksgiving and New Year’s. With all the delicious food that we are surrounded by, it’s hard not to eat more during this time of year. But

the reality is, we can consume between 3,500 and 4,000 calories during our Thanksgiving meal.

“It’s about mindfully eating,” Wells said. “Holidays are about celebration, so don’t deny yourself your favorite food, but don’t fall into a food coma. It is about eating in moderation and whittling down the calories to a reasonable amount.”

Wells said that you can still enjoy your favorite holiday indulgence, but you need some balance to your plate.

“Start by filling half your plate with fruits and vegetables,” Wells said. “Then add your meat option and one starchy side. Then for dessert, maybe take a smaller portion.”

Wells also recommended drinking water throughout the day to help control your cravings and the amount of food you eat.

“The hunger and thirst signals in our body are similar and can sometimes be confused,” Wells said.

She recommends drinking water throughout the day will help to alleviate this potential signal cross.

“Also having a glass or two of water before you hit the sweets table will be a nice little way to avoid overindulging on sweet treats,” Wells said.

Another way to help with the potential holiday weight gain is to get active after dinner. Instead of taking a nap after the holiday meal, create a new tradition that will burn off those extra calories and promote more family fun and interaction.

“Take a walk after dinner; it’s a great family activity,” Wells said. “A nice stroll for 15-20 minutes will be very beneficial.”

Other activities Wells suggested include riding bikes and playing a family game of football or soccer.

Wells’ final advice for holiday eaters: “Plan ahead and consider what you really want to eat and save your calories for the foods that you really love.”

ool, brisk mornings, shorter days and golden hues abound. These are all clear signs that autumn has arrived. With the changing season comes fall holidays and celebrations. Pumpkins have been picked, hayrides are all the rage and winter is just around the corner.

Blue Zones Project – a community-wide wellbeing initiative brought to Pottawatomie County

by Avedis Foundation – wants to help you have a happy and healthy holiday season.

Check out these top 10 tips to help you focus on well-being this fall.

Capitalize on the bounty of healthy options.

Fall brings the opportunity to seek out a bounty of seasonal produce. In Oklahoma this time of year, we can expect broccoli, brussels sprouts, cabbage, carrots, celery, collards, garlic, head lettuce, onions, persimmons, potatoes, pumpkins, snap peas, snow peas, spinach, sweet potatoes, turnips and winter squash.

Find festive ways to meet neighbors and move naturally. Walk from house to house as a family or with friends and go caroling. It’s an age-old tradition that brings neighborhoods together and burns a few calories.

Have a strategy to limit the amount of sweets consumed. Discuss the expectations with your family or friends before you go to events. Make a healthy and satisfying meal that includes many of their favorite fruits, vegetables and protein options before you head out.

Consider donating candy and sweets. Whether it’s candy from trick-or-treating or candy canes and seasonal sweets, consider paying it forward.

Several Shawnee dentist offices collect holiday candy and send it to troops serving in the military overseas. If you don’t know of a dentist participating, there are several nonprofits online that will provide a free shipping label to send your candy to the troops.

Roast pumpkin seeds. Once those jack-o-lanterns are ready to be retired, it’s time to repurpose them for healthy holiday treats. Pumpkin seeds are rich in nutrients like magnesium, zinc, protein and Omega-3 fats. Roasted seeds also contain fiber, which keeps you feeling satisfied and aids in digestion. Clean and rinse the seeds, pat dry, drizzle with olive oil and lightly salt or add your own favorite seasonings. Roast in the oven at 400 ̊F for 5-20 minutes until the seeds are lightly brown.

Get creative with your treats. Display and serve fruits and vegetables in a creative way with design.

Easy Slow Cooker Apple Butter This easy slow cooker recipe will make the perfect apple butter. Bring a jar to your next party to top goat cheese with whole grain crackers and save another jar for your morning sourdough toast. Depending on the sweetness of the apples, you can adjust the amount of sugar you add to this recipe.

INGREDIENTS 5 pounds of apples (Macintosh or golden delicious work well), peeled, cored, and sliced ½ cup apple cider 1 cup brown sugar ½ cup honey 2 teaspoons ground cinnamon 1 teaspoon ground allspice 1 teaspoon nutmeg (optional) DIRECTIONS Put all ingredients into a slow cooker. Cook on high for 2 hours. Reduce heat to low and continue cooking for 6-8 hours, or until apples mash

easily with a potato masher or spoon.

Let cool and then store in an airtight container(s) in the refrigerator.

Quinoa Salad with Sweet Potatoes and Pears If you think salads are boring or just for the summer months, think again. This quinoa salad is a full meal in one bowl that is sure to impress at your next holiday party.

INGREDIENTS ¼ cup extra-virgin olive oil ¾ cup uncooked white or red quinoa 1 large sweet potato (about 12 ounces), peeled and cut into 1⁄2-inch cubes 2 tablespoons balsamic vinegar ½ teaspoon salt ¼ teaspoon freshly ground black pepper 6 cups arugula, preferably baby arugula 2 medium red-skinned pears, cored and thinly sliced ½ medium red onion, sliced into thin half-moons ½ cup packed fresh Italian flat-leaf parsley leaves, roughly chopped

¼ cup packed fresh mint leaves, roughly chopped DIRECTIONS 1. Position the rack in the center of the oven and heat the oven to 400°F. 2. Warm 1 tablespoon of the oil in a medium saucepan set over medium heat. Add the quinoa and cook, stirring often until lightly toasted, about 2 minutes. Pour in 11⁄2 cups water, raise the heat to high and bring to a boil. Cover, reduce the heat to low and simmer slowly until the water has been absorbed, about 15 minutes. Remove from the heat and set aside, covered, for 10 minutes. Fluff with a fork, spread on a large plate and refrigerate for at least 30 minutes or up to 4 hours.

3. Toss the sweet potato cubes with 1 tablespoon of the olive oil on a large rimmed baking sheet. Bake until golden brown, stirring once, about 30 minutes. Cool on the baking sheet for 20 to 30 minutes.

4. Whisk the remaining 2 tablespoons of oil with the vinegar, salt and pepper in a large salad bowl. Add the arugula, pears, onion, parsley and mint as well as the chilled quinoa and sweet potatoes. Toss gently but well to serve.

Shawnee Prominent Community as Oklahoma Entered Statehood in 1907

A

t 9:15 a.m. on Nov. 16, 1907, President Theodore Roosevelt scrawled his signature across a proclamation that banished the word “territory” and substituted the word “state.”

Oklahoma was officially the 46th addition to the United State of America.

Here in Shawnee, the news began at city hall and spread across the town. The nearby firemen – historically conscious – began ringing their bells. At first, citizens were puzzled by the noise, but upon learning the statehood announcement was imminent, they began to celebrate.

Officials were not at city hall that morning, but the janitor, Tex Holland, was. He wrote out a proclamation and posted it in the hallway – likely the only janitor known to make such an important declaration.

No local celebrations were planned in Shawnee nor most other communities. Officials in the towns of the new state were content to let the spotlight fall on ceremonies in Guthrie. Anticipating the event, a parade was planned for that afternoon featuring mounted police, the state university band, Union, Confederate and Spanish war veterans and 15 carriages of “very important people.” Shawnee was represented by Mayor Frank Stearns, Dr. and Mrs. J. C. Mahr, Mrs. and Mrs. James M. Aydelotte, Judge William N. Maben and State Senator M.F. Eggerman.

Now that Oklahoma was a state and no longer two separate territories, all the county officials rushed to take their oaths at the courthouse in Tecumseh, which was the county seat at the time.

In Shawnee saloons were doing a brisk business. They were only hours away from being banished. State laws would now go into effect, banning

open bars. Saloon keepers reported their customers weren’t just asking for a glass but cleaning them out of quart and gallon jugs. The following Monday morning, statewide prohibition would be a reality years before the national ban. Some suggested that for entertainment the populace might now have to switch to a vaudeville act at the Becker theater at a cost of 10 cents.

In the local newspaper, a red star, which was to become part of the first official Oklahoma flag a couple of years later, was displayed with a banner stating, “Uncle Sam: Hats off to

your little daughter, Miss Oklahoma.

She’s the brightest and youngest of her 45 sisters in these U.S.” The statement accompanied a cartoon which depicted two solemn women – Miss Oklahoma Territory and Miss Indian Territory – holding hands beneath the caption, “We Come as One.” Some of Shawnee’s achievements in the city’s short 16 years were listed as being the third largest town in the new state with a population of 11,962. It was known as the largest mule market south of Kansas City.

There were 27 factories in Shawnee, including the railroad shops – the

Rock Island that employed 900 citizens and the Santa Fe with 200 on its payroll.

Farmers were also prominent in the area with the declaration that “more hogs were shipped out of Shawnee than any other spot in the state.” A high grade of cotton was also raised, sending 70,000 bales in 1906 worth more than $4 million.

Local officials pointed out that the new state of Oklahoma was “already a great state, building up under territorial form of government so under statehood … we ought to grow immensely greater.” www.shawneeoutlook.com

Domestic Violence Can Be More Than Physical

W

hen faced with the thought of domestic violence, many of us automatically have visions of physical abuse – cuts, bruises, broken bones and physical scarring.

Domestic violence can be so much more and leave far more scars than just the ones seen on the surface. When domestic violence is coupled with substance abuse, the risk of death skyrockets. Additionally, research has shown that women who have been abused are 15 times more likely to abuse alcohol and nine times more likely to abuse drugs.

According to the Oklahoma Department of Human Services, domestic violence is defined as “a pattern of behavior used to establish power and control over another person through fear and intimidation. Domestic violence does not necessarily have to include physical violence; it often includes the threat or use of violence.”

What should not be ignored is that it also includes: • Emotional abuse • Psychological abuse • Sexual abuse • Financial abuse • Spiritual abuse • Verbal abuse • Social abuse • Elderly abuse • Image-based abuse Examples of abuse can be threatening, intimidating, forcing someone to do things against their will, keeping someone from friends and family, embarrassing or shaming them and not allowing them access to finances that would provide them with some measure of freedom.

Many people who have never been in an abusive relationship wonder why someone stays in that relationship. In fact, there are quite a few reasons, such as fear of what will happen if they do leave. They may have no idea what a healthy relationship looks like and believe that their experience is normal. Embarrassment or shame, religious reasons, lack of resources, disability, even love and hope that their abuser will return to

the person they once were can all be reasons to stay. Last but certainly not least, leaving an abusive relationship can be very difficult and dangerous. According to Psychology Today, more than 70 percent of all injuries and deaths occur after the abused have left.

A common misconception is that someone who is abused is fragile or powerless.

This way of thinking could not be further from the truth. They come from all walks of life – male, female, rich, poor, all ethnicities and all religions. It can even be more difficult for those who everyone views as strong and independent. Family and friends may even blame the abused for staying, believing that they choose to stay and not understanding the powerlessness that comes with abuse.

In preparing to leave an abusive relationship, there are numerous things that can be done to ensure victims’ safety, such as finding safe friends and places to go. It’s helpful to prepare a “go bag” that they can keep hidden containing an extra prepaid cell phone with emergency numbers and contacts already programmed into it. They can also memorize phone numbers in case they are unable to get to that phone in the bag, which can also contain a spare set of car keys, clothes for themselves and children if there are any, medicine they regularly take, some spare cash if it can be accessed and important papers. If possible, they should try to backup any documents or data they might need onto a small, portable USB drive, and they can try to take with them any evidence of the abuse that may be helpful later.

Above all, if your safety and well-being depend on leaving your violent partner, help is available.

Faith Taking Hold of the Word
