Maple-Mustard Vinaigrette Turns This Healthful Side Dish Into a Real Show-Stopper
Roasting vegetables deepens their flavor and draws out their natural sweetness, while the maple-mustard vinaigrette lifts the flavors to a whole new level of deliciousness.

And if you’d like leftovers, you can always double or triple this recipe for extra vegetables to incorporate into your meals throughout the week.
Yield: 4 to 6 servings Prep Time: 45 minutes
Cook’s Notes: With the exception of beets, leave the peel on your vegetables to retain some additional fiber, B vitamins and minerals.
Roasted Vegetable Medley with Maple-Mustard Sauce
Ingredients: Roasted vegetables—
3 tablespoons extra virgin olive oil 2 pounds of any root vegetables (sweet potatoes, carrots, parsnips, turnips, rutabagas, peeled beets) 2 cups cauliflower or broccoli florets, or to taste (optional) 1 medium onion, peeled and cut into thin wedges 1 head garlic, separated into cloves and peeled Sea salt and black pepper to taste
Sauce—
¹⁄₃ cup maple syrup ¼ cup Dijon mustard 1 tablespoon apple cider vinegar
Directions:
1 Heat oven to 400°F. Line a sheet pan with parchment paper. 2 Toss the root vegetables, onion and garlic with oil, salt and pepper and spread evenly on the sheet pan. Avoid crowding the vegetables to allow for even cooking. Roast for 40 minutes, stirring about halfway through.
Add the broccoli or cauliflower after the root vegetables have cooked for 20 minutes and continue to roast all vegetables for another 20 minutes or so.
3 While the veggies are roasting, whisk together the maple syrup,
Dijon mustard and apple cider vinegar in a small bowl or shake in a glass mason jar with a lid. 4 Remove vegetables from oven and serve with a drizzle of the maple mustard sauce.
5 Leftover vegetables can be stored for 4 to 5 days in the refrigerator.
Leftover sauce can be stored in the refrigerator in an airtight container for up to two weeks.

Longtime Primary Care Office in Lawrence Joins AdventHealth Medical Group
Family Medicine Associates, P.A., which has served the healthcare needs of Lawrence-area residents since 2001, joined the AdventHealth Medical Group network of primary care practices in August. The provider team includes four family physicians—Nathan Bloom, MD; Loree Cordova, MD; Jean Schrader, MD; and Dan Severa, MD—and six physician assistants—Becky Anderson,
PA-C; Stacey Anderson, PA-C; Brianne Cook, PA-C;
Sam Holmes, PA-C; Michelle Lackamp, PA-C; and Anna Ruelberg, PA-C. The practice, now called AdventHealth Medical Group Primary Care at Lawrence, is the network’s first practice in Douglas County and 12th primary care practice across northeast Kansas.
Elaine Demetroulis, MD, a Board-certified interventional cardiologist, joined AdventHealth Medical Group Cardiology & Cardiovascular Surgery at Shawnee Mission in May. She welcomes new patients, ages 18 and older.

New Chief Medical Officer
We are proud to announce AdventHealth Shawnee Mission’s new Chief Medical Officer, Lisa Hays, MD, FACE. She was most recently the lead physician at AdventHealth Medical Group Endocrinology at Shawnee Mission and co-medical director at AdventHealth Medical Group. Dr. Hays has helped lead AdventHealth’s COVID-19 response and vaccination strategy in addition to the accreditation as a first hospital designated as a Diabetes Center of Excellence. In her new role, Dr. Hays oversees clinical operations and leads the medical staff of more than 750 providers.

Experienced primary care physicians Susan Lee, MD, and Bradley Palmer, DO, have joined AdventHealth Medical Group to establish a new primary care office at AdventHealth South Overland Park. Certified physician assistant Kirsten Lampe, PA-C, will also join the practice. Lee, a Boardcertified family medicine physician, and Palmer, a Boardcertified internist, come to AdventHealth from a primary care practice in Mission Farms. Lampe most recently worked at an urgent care clinic in Olathe.
On Aug. 4, Lee and Palmer and will begin seeing patients at their new office; Lampe will join the practice mid-August.
