A fighter by his trade has found a way to stay in the ring as he exits boxing, and in the process, help others channel their emotions

“The job I have is very emotionally demanding, so it helps to get a lot of the feelings out when I’m here,� Klement said.

For Bergstrom, whose bad grades relegated him to Nachusa Campus School, an alternative institution, he’s breaking down the stress that used to be a roadblock. “I’ve always had a hard time focusing,� Bergstrom admits. “I don’t know what it was from. Ever since I started boxing and working out again, I don’t have as much stress. I’m concentrated more and getting more work done.�

Boxing: ‘Once you’re in it, you’re in it’ BOXER

when the window opens wide.

When it comes to toeing that line, Rumbolz has experience in spades.

He won his state title in 1996 and in 1997, got a shot at an International Boxing Federation regional belt in a nationally televised bout that featured then-little-known “Sugar” Shane Mosley on the undercard.

He lost to Anwar Oshana in 12 rounds – “It was a war,” he said – and found out afterward that he was ahead on the scorecard midway through the bout. He thought he was behind, and thus focused on just getting through 12 rounds.

“If I’d only had more confidence at that point,” Rumbolz lamented, adding, “but it got me a lot of big offers.”

The bout took place shortly after Bruce met Sara. And, while she said watching bouts on TV is less intense than in person, “when somebody you love is out there, it’s kind of like your heart is taking the punches, too,” she said.

The next year, at the Tropicana Las Vegas, Rumbolz was a landed blow away from a International Boxing Association world title. He’d put down his opponent, Reginaldo Andrade, an enormously strong Brazilian, twice in the first round.

Bruce Rumbolz, 42, of Sterling, a former supermiddleweight state champion, bought the club from Steve Mazzarisi a few months ago.

Mazzarisi, whose family owns the Mama Cimino’s across the street, moved to Colona to open a new restaurant.

Rumbolz, an MRI tech at KSB Hospital by day, at first balked, because of the early evening hours Mazzarisi kept. But it dawned on Rumbolz that he could establish his own hours and do things his way. Even the club’s name is derived from his nickname, “The Rage.”

Besides, boxers have a hard time getting out of the game. So Rumbolz has found a way to stay in it, while preserving his health. After all, he’s got two little ones at home, 12-year-old Sofia and 4-year-old Bryson.

And there in the gym is his best friend.

“It’s a great opportunity for Bruce, and it’s something organic for us as he’s exiting the ring, so to speak,” his wife, Sara, said. “This is a neat thing to witness, and to be a part of.”

Don’t look back in anger There’s a delicate balance in boxing: harnessing one’s energy, while being ready to uncoil

second time. That is until between rounds, when the adrenaline slowed.

His middle knuckle is still pushed way back.

The big man wobbled and looked so fazed that referee Kenny Bayless nearly stopped the fight.

“He was this close to stopping it, but he let it go,” Rumbolz said, his index finger and thumb about a centimeter apart.

“I was hoping he’d walk into something, but he didn’t. World champ.

Right there. Never got that world title. State title will have to be enough.”

Bayless stopped the fight, all right, in the fourth round. Rumbolz couldn’t throw so much as a jab.

“I should’ve jumped on him right away,” he said.

“There are so many times where everything is in hindsight: if I would’ve done this, or done that, of if I didn’t do that …”

Job one: Don’t lose your head Over the past few years, Rumbolz has learned a lot. From trainers. And from triathletes who decide to try boxing.

But even Ironmen get burned out by trying to force themselves through the fear factor.

“You’ve got to harness your energy, remain calm, and don’t get over-excited,” he said.

Similarly, he urges anyone interested in boxing not to rush into it. To make sure they know

what they’re getting into.

“There is an element of danger in boxing, a risk,” he said. “And that’s exciting for some. And learning to avoid that and defend yourself against that risk is what attracts certain people.”

He got hooked when his dad took him to a bout when he was 7.

Soon, he was training with renowned local coach Al Silva of Sterling. He won the Silver Gloves Tournament at age 9, but soon got out of boxing, only to return to the ring at age 19.

“Once you’re in it, you’re in it. It’s kind of funny how that works,” Rumbolz said. “If I have any questions, I’ll give [Silva] a call. I thought he was old when I started, and I was 8. He’s been around for so long.”

He said he’s got a firm stance on how to train youngsters: defensive skills first.

“Make sure you learn your defensive skills and how to see a punch coming and to avoid a shot,” Rumbolz said. “The main thing to start off is not to rush it. Keep improving.

I won’t rush anyone to even spar.”

Heck, they don’t even have to box. The “Fitness” part of the club’s name is new, and Rumbolz offers intense half-hour personal training session.

some workout – major cardio and strength-training,” he said.

Just keeping your gloves up is work, and Sara can be seen reminding youngsters to guard their chin throughout open gyms. She also reminds them to shift their weight.

She’s learned a lot through Bruce.

The plan In the same vein as his advice to young boxers, Rumbolz isn’t rushing into anything. He’d like to add a juice bar, and wants to figure out how to maximize the space’s potential. Right now, about 15 can work out comfortably on the treadmills, weights, heavy and speed bags, and in the ring.

But no matter what tangible resources Rumbolz has, perhaps the best thing he can offer students is having been there

“It’s reassuring that he knows what he’s talking about,” Bergstrom said.

“He’s done the real thing, been in the real fights. He knows what he’s doing.”

He wears his passion on his sleeve, too.

“He’s amazing,” Klement said. “You can tell he truly loves what he’s doing.”

“I’m just really excited to pass along what I’ve learned,” Rumbolz said.

Klement has never been a fitness fanatic, so this is pretty new. But her decision wasn’t impulsive.

She’d thought it through for some time, and now she’s all in.

“I love the fitness aspect of it, but the boxing is enticing. I’d like to know if I could actually do it – do the rounds and actually win.

“I feel better today … braver, maybe.”

S

weet potato pie stole the show before Thanksgiving – all thanks to a viral video review of Patti LaBellebrand sweet potato pie sold at Wal-Mart.

James Wright Chanel’s glorious review, which is interspersed with him singing snippets of LaBelle’s songs and a few this-is-thebest-thing-I’ve-tasted curse words, was viewed more than 4.1 million times on YouTube. After that video went viral, a spokesperson said the country’s largest retailer sold one pie a second for 72 hours.

Even if you didn’t see the video or run to Wal-Mart to buy a pie, you likely got sucked into debates about which is better: sweet potato pie or pumpkin pie. Or you participated in the larger perennial holiday debate: which is the best pie – pumpkin, sweet potato, pecan or apple.

I definitely fall into the pumpkin/sweet potato camp, but I don’t have a strong view on one versus the other. I love them both. (I know that is sacrilege to some.) Those conversations led me to whip up a family favorite this Thanksgiving that I had almost forgotten: pumpkin chiffon pie.

My grandmother and mom used to make this pie, and my sister, Kathryn, made one last year for our Thanksgiving feast.

I love this pie’s lighter texture. The recipe calls for folding meringue into the custard to create a fluffy, better version of the classic. After serving it this year, it was so popular between dinner

and take-home leftovers that we only had one slice left.

So I made another one, improving on the graham cracker crust with gingersnap cookies and pecans.

Then I made a sweet potato version. It was even better.

Chanel’s viral video earned him a phone call from LaBelle and later an invitation to her house for Thanksgiving dinner. If you did not get enough of Chanel’s viral video, you can see him and LaBelle make her famous pie at 7:30 p.m. today on the Cooking Channel.

If you missed the chance to buy a Patti LaBelle pie at Wal-Mart, a company spokesperson said they will be back in stores later this month for the end-ofthe-year holidays. Or you could try making this version.

Pumpkin Chiffon Pie with Gingersnap Pecan Crust Yield: 8-10 slices To convert this recipe for sweet potato pie, substitute mashed sweet potatoes for the pumpkin and omit the ginger. Puree the custard ingredients in a food processor before placing in a saucepan and bringing to a boil.

Stir often while coming to a boil, then proceed as directed. Be sure to use pasteurized egg whites or whites from pasteurized eggs since the meringue is not cooked. Adapted from Goldie Weigl and Epicurious.com.

For crust: 14 (2-inch) gingersnaps (about 4 ounces) 1 cup pecans ¼ cup granulated sugar ½ stick (¼ cup) unsalt-

ed butter, melted and cooled For pie: 1 envelope unflavored gelatin 2/ cup brown sugar 3 ½ teaspoon salt ½ teaspoon cinnamon ½ teaspoon nutmeg ½ teaspoon ginger 1¼ cups mashed, cooked pumpkin 3 egg yolks ½ cup milk 3 egg whites, at room temperature ½ cup powdered sugar Whipped cream, optional Make crust: In a food processor, grind gingersnaps, pecans and sugar fine and add butter, blending until combined well.

Press mixture onto bottom and side of a 9-inch (1-quart) glass pie plate.

Bake crust in middle of oven 15 minutes, or until crisp and golden around edge, and cool on rack.

Combine gelatin, brown sugar, salt, cinnamon, nutmeg, ginger, cooked pumpkin, yolks and milk in a medium saucepan. Bring to a boil over medium heat. Once boiling, remove from heat and place saucepan in a sink or roasting pan filled with ice water to cool down. The filling is cool enough when it mounds on a spoon.

Make the meringue: place egg whites in a mixing bowl. Beat on medium speed for about a minute or until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating on high for 5 minutes or until stiff peaks form.

Fold into pumpkin filling and fill cooled pie crust.

Refrigerate for 2 hours before serving. Serve with whipped cream, if desired.
