The couple’s grown accustomed to breezing past celebrities on the city’s sidewalks, at the subway and the like. “I never get star-struck, but this was different,�

Carroll said. “I’d like to say I wasn’t star-struck, but I couldn’t get off that stage fast enough.�

But first, a selfie. A testament to Carroll’s state of mind, he couldn’t manage to unlock his iPhone, so they used Huston’s.

Carroll did have the presence of mind to tell Huston to send him the picture immediately. He posted it on Facebook, but wasn’t going to put it on Twitter – “I figured, ‘I never use Twitter,� – until he turned on the app and saw messages, and lots of them, including an interview request with a top40 radio station the following morning.

New York has a way of making the extraordinary feel more ordinary, so Carroll was overwhelmed by the outpouring of love to his (@grover5678) and Huston’s (@Jon_Huston) Twitter accounts.

He expected to hear from folks back home, like his dad, Norm Carroll, and sister, Shelli Wolf. But for a Huffington Post Canada video posted yesterday to get a half-million views in less than 24 hours was a little shocking.

NYACK, N.Y. – You might say little Jackson Huston-Carroll had Adele at “Hi.�

His dads, Jon Huston and Steve Carroll, made an impulse-driven decision to fly to Toronto to celebrate their 5-year anniversary by seeing the world-renowned singer in concert for the first time Tuesday at Aire Canada Center. Carroll bought fifth-row tickets on StubHub, and they turned out to be third-row seats.

Lo and behold, after her second song, she said there was one person she absolutely had to bring up on stage. “She was talking about our son, and I had no idea,� said Carroll, 38, who lived with Huston, 35, in Polo until moving to New York in 2002. “She said, ‘Bring me that baby.’ That’s what she said.�

After hugs and kisses were exchanged – “I forgot she was European, and I only gave her the one kiss. I should have kissed her on both sides,�

When Jackson gets fussy in the car, they put on “Hello.� Her albums, actual albums – “We’re a vinyl family,� Carroll said – are part of his bedtime routine.

Still basking in the afterglow, Huston has returned to the daily grind of running their doggy day care in the city, Paws and Relax, and tonight, Carroll will be back on second shift as a critical

care nurse. He’s originally from Polo and worked as a paramedic at CGH Medical Center while Huston taught seventhgrade math at Challand Middle School in Sterling.

While everyday life has resumed, Tuesday night is “still very surreal,� Carroll said. So surreal he said he remembers little of the show after get-

ting off the stage. Similarly, Jackson fought to stay awake for the whole show, but zonked out a couple of tunes before its close.

So, soon enough, it’ll be back to shopping for tickets, so the whole family can see Adele again. “I need to go back and see the concert again when my blood pressure

and pulse are normal,�

Carroll said. “We’ve been scouring the Internet for different pictures from different angles. There’s one from a distance away, and that picture is going to be our Christmas card, and I’m sending her one.

I feel like I could invite her to Christmas, she was that nice, that down-toearth and lovely.�

Firefighters contain yet another Cimco fire This one started at storage facility on West Fourth

STERLING – A fire broke out around 8 p.m. Tuesday at 3101 W. Fourth St. in Sterling, a building owned or being used

by Cimco Recycling. The building, across the street from Willy’s Restaurant, once was home to Gate City Steel, and more recently, Gerdau Ameristeel.

As of 10 p.m., firefighters still were on scene.

There was no word yet on what caused the fire, or on what was being stored in the building, but the smell that permeated the

neighborhood was rank, witnesses said.

According to SVM archives, this is at least the sixth fire to hit the scrap recycler since Sept. 30, 2010, when a large pile of tires and plastic – called a fluff pile – caught fire and burned for 3 days at its scrap yard at 13509 Galt Road, which is where all of the other fires – except Tuesday night’s – have occurred.

Firefighters last responded to a fluff pile fire that was sparked by a welder on April 27.

Before that, a fire started a little less than a year ago, on Oct. 19, also in

a bearing on a conveyor belt that overheated; it caused $250,000 in dam-

ages, fire officials said.

metal, and one also broke out on June 5, 2011, at the Galt Road site.

Victim says statute protected Hastert Former speaker not properly punished for abusing students CHICAGO (AP) – A man who said Dennis Hastert sexually abused him decades ago told Illinois lawmakers Tuesday the former U.S. House speaker was “a monster” who was protected by the statute of limitations and wasn’t appropriately punished.

The comments from 54-year-old Scott Cross came as lawmakers are considering joining 37 other states that don’t have a statute of limitations for child sexual

abuse cases.

Hastert was sentenced in April to 15 months in prison for violating banking laws while trying to silence one of four victims identified by prosecutors, but Illinois’ statute of limitations meant he couldn’t be charged with sexual abuse, which could have sent Hastert to prison for decades.

“This topic, while difficult for me to discuss, is one that cannot be swept under the rug,” said Cross, his voice at

times shaking as he urged a panel of lawmakers to change the limits of current law.

Lawmakers have four similar proposals pending that would eliminate Illinois’ statute of limitations for sexually abusing children.

No votes were taken Tuesday, and the soonest the bills can be considered is next month when lawmakers return to Springfield for a brief session.

As it stands, victims of sex abuse have 20 years from their 18th birthday to report the crime so it can be prosecuted.

But Cross, who has said

Hastert abused him when Cross was a high school wrestler and Hastert was a coach, told lawmakers it’s difficult for victims to come to terms with their abuse and overcome feelings of guilt and shame before they tell anyone – a process that can take many years.

“It is unbelievably hard to step forward and confront a person of power and trust and somebody that you idolize and respect,” Cross said.

Cross still refers to Hastert as “coach” sometimes, and when he testified at his sentencing in April he recalled looking up to him.

Reagan’s friend and biographer Norm Wymbs dies Key involvement in boyhood home, school museum

DIXON – Norman Wymbs, biographer and close friend of Ronald Reagan and Dixon’s biggest benefactor never to have lived here, died Monday in Delray Beach, Florida. He was 93.

He and his wife, Harriet, created the Ronald Reagan Boyhood Home and Visitors Center at the behest of the president, who phoned them shortly after taking office in 1981 to say his childhood residence might be bulldozed.

The Wymbses flew to Dixon, bought the house – plus three surrounding houses – then started the Boyhood Home Foundation.

As part of their connection to the home, the Wymbses became involved in renovating Reagan’s former sixth-grade classroom in the old South Central School building, which they bought for $500 and proceeded to restore as a museum.

That project became his passion – a tribute to Reagan, to Harriet, a Moline native whose family was among the first settlers in northwest Illinois, and to the area’s rich Indian and pioneer history. As the boyhood home became more established and

created its own revenue stream, the Wymbses eventually withdrew their financial support and threw all their effort into the new museum.

The building, built Norman in 1908, Wymbs opened as the Dixon Historical Center, and in January 2013, after $3 million in renovations and technology upgrades, became the Northwest Territory Historic Center, now affiliated with the Smithsonian Institution.

The two sites top the list of the city’s tourist attractions.

In fact, the Norm E. and

Harriet S. Wymbs Foundation is the center’s sole source of funding. Over the past 3 decades, it has poured about $25 million into the facility, manager Dave Latta said Monday.

“They have done wonderful things for this town ... and there are a lot of people who don’t realize that,” Latta said. “I never thought he got the recognition he should.”

Admission is free because of their largesse.

What will happen to the center’s funding isn’t yet known, Latta said, adding, “We’ll be fine for a while.”

Wymbs’ interest in the center and its operations never faded: He last visited the center in June, when he spent about 3 weeks in town.

Wymbs made his fortune in grocery distribution in the Chicago area, where he was born, and through investments and insurance in Florida, while Harriet inherited her family fortune.

Before he was an investor and philanthropist, though, Wymbs was a political columnist in Boca Raton, Florida. He and Harriet met Reagan almost by accident in early 1975, when the former actor and governor of California was traveling the country as a spokesman for General Electric Co. He needed a ride to the plane he was flying on to get to his next destination, which the Wymbses provided in exchange for an interview with Norm.

They were so impressed that they became financially and personally involved in Reagan’s political career, which led to Norm’s appointment to the federal Council on the Aging, for which he served from 1989 to 1992.

Their friendship with the Reagans deepened over the years, and in March 1996, Wymbs wrote “Ronald Reagan’s Crusade: From Boyhood to the Presidency,” an authorized biography of Dutch’s childhood in Dixon.

Among his other accomplishments, Wymbs was a fighter pilot in WWII, flying 83 combat missions in Europe, and was mayor of Boca Raton for 7 months in 1971.

DIXON – Walking through doors that have been threatened with closure more than once, dozens of people flooded the halls of the Jack Mabley Developmental Center on Thursday to commemorate its impact as a home to those who don’t have many places to turn.

“It’s not just a state facility, it’s a home,” said Regina Heise, daughter of Nicholas De Leonardis, one of the center’s founders.

The Mabley center, which celebrated its 30th anniversary with a ceremony and open house Thursday, provides a community for 105 residents with developmental and sensory disabilities, and often a mix of the two.

About 95 percent of the Mabley staff know sign language, more than at any other of the state’s seven developmental centers, he said.

De Leonardis, who died in

March, worked with former Gov. James R. Thompson to build the center after the Dixon Developmental Center was converted into Dixon Correctional Center.

The Chicago economist fought several attempts to close the facility, including 5 years ago when Mabley was on the state’s chopping block.

De Leonardis left a legacy of perseverance, compassion and humanity, Fenton said.

“He significantly raised the bar for the rest of us,” he said.

Heise said her father’s devotion to the facility was rooted in his love for her sister, Debbie, who lived at Mabley until her death in 2002.

Barbara Achino, president of the Mabley parents association, said she plans to continue De Leonardis’ work to keep the center’s doors open.

Residents displaced from closed developmental facilities often are placed in community homes, an option that’s not necessarily an effective solution, she said.

Her sons, Michael and Bob Metallo, have lived at Mabley for 18 and 13 years, respectively, and Achino said they are provided with everything they need.

“It’s a great place, and I thank God every day my boys are safe and happy,” she said.

The open house featured residents’ artwork on display and also a taped talent show from 2 weeks ago, when Bob Metallo sang “Hungry Eyes.”

Jack Mabley, a veteran Chicago journalist and founder of the Forgotten Children’s Fund, died in 2006 at age 90.

Accidental exposure to tear gas sickens kids on field trip

MOUNT CARROLL – A group of junior high school students on a field trip Thursday were accidentally exposed to tear gas from a training exercise at the Thomson prison.

Emergency personnel were called about 2:41 p.m. to West Carroll Middle School at 633 S. East St. in Mount Carroll, after the students complained of eye, nose, and throat irritation.

Mount Carroll Police and Emergency Medical

Services were told the students had been on a field trip north of the prison.

School officials determined the students were affected by the gas when shifting winds sent it in their direction.

Two students were taken to CGH Medical

Center in Sterling, and 11 were taken to FHN Memorial Hospital in Freeport. An additional 13 students and staff, accompanied by emergency workers, were bused to FHN with minor symptoms.

Fifteen parents signed

releases for their children who required no medical attention, Mount Carroll Police said.

The prison had been using the CS gas for a staff training session, and before the winds changed course, officials had determined the students

More than meats the eye Meatballs can speak different accents fluently

M

eatballs are the little black dresses of the culinary

world.

You can dress them up for dinner with a velvet robe of sour cream and wild mushroom gravy.

They can be daytime simple with a jacket of roasted tomato marinara, trimmed with fresh Asiago cheese, and tucked into a crusty roll.

Or they can be cocktail party sweet-and-spicy, glistening with a glaze of pineapple juice, sriracha sauce and sugar.

They also are comparatively inexpensive; can be made ahead then sauced later; require little attention once prepared; often can be retrofitted on Day 2 for a second go-round; and perform as well at a family dinner, a Sunday tailgate with friends, or a flavors-of-the-world themed get-together.

For all this and perhaps more, the ubiquitous meatball is, well, ubiquitous.

And they’re trendy, too.

One of the nation’s leading food research and consulting firms, Chicago-based Technomic, describes meatballs as a 2016 food trend that’s part of a national movement involving the “elevation of peasant fare” to new heights.

“Meatballs ... are proliferating – traditional, ethnic or nouveau.” Technomic opines.

That’s no surprise to Brian Borres, general manager of Emporio: A Meatball Joint. Emporio is part of the Sienna Restaurant Group and it has two locations (although that’s about to change).

One anchors a three-level enterprise in a first-floor location in Pittsburgh’s Cultural District. It opened in 2014. The second location is at the Village at Pine in the North Hills. It will mark its 1-year anniversary in November.

He said the restaurant’s recipe for success features heavy portions of creativity, comfort and cost-consciousness.

“Meatballs are a comfort food. They make you think of Grandma’s house,” he said. At the same time, Borres postulated that executive chef and managing partner Matt Porco adds his “distinct and different” brand of creativity to produce meatball bowls such as a “tater tot” poutine topped with mushroom gravy, a fried egg, bacon and pork meatball.

It’s Borres’ favorite dish, he confessed, referring to it as “the breakfast bowl.”

And it costs about $11.

“Over a pound of food that is absolutely to die for. That’s a great value,” he said.

The affordability of meatballs makes them the perfect vehicle to introduce family and friends to a new ethnic flavor profile.

Whether fashioned of pork, beef, chicken or no meat at all (as in mushrooms/lentils/ cheese), the essential meatball ingredients are comparatively inexpensive. That allows for the spending of a little more dough on some of the spices needed to round out a recipe for the likes of Albondigas En Salsa De Limon. Translated, it’s meatballs in lemon sauce. The sauce requires a pinch of pricey saffron threads.

Lemon, both in the meatballs and the sauce, makes a nice taste counterpoint to the delicious velvet of fat in the meat and egg yolk.

Rice also would do well, especially if the sauce ingredients were doubled and the meatballs were situated atop of the rice.

Smacking of pan-Asian is an exceptionally simple and yummy recipe for cocktail meatballs in the recently published “Ultimate Appetizer Ideabook, 225 Simple, All-Occasion Recipes” by Kiera and Cole Stipovich from Chronicle Books.

The recipe pairs a delicate ground lamb ball with a spicy-sweet glaze of chili-pepper jelly that can be made for pennies in about 10 minutes. They are like potato chips: You can’t eat just one.

It’s hard to think of meatballs without thinking of tomato sauce.

A 2015 publication by the editors of Saveur, “Saveur Italian Comfort Food,” offers a spin on the pairing that calls for a very spicy meatball cooked in an unusually simple and spice-free red sauce.

Called “Classic Meatballs,” they feature ricotta, pork fat and prosciutto with a half-dozen spices, all adding up to a dish that need not sit atop pasta to stand as an entree.

These meatballs are more involved than the meatballs I make to serve with my spaghetti. And a couple of ingredients required special effort (my butcher had to trim a slab of pork fat for me), but they are worth the extra effort if you want to dial up Italian Night a notch.

Classic meatballs I used veal in this recipe with ground pork and pork fat instead of unsmoked bacon. I also bumped up the heat with a few extra chili flakes. I like my tomato sauce a bit more flavored: I added a teaspoon of sugar and a teaspoon of salt.

10 ounces ground veal 10 ounces ground pork shoulder 2 ounces finely chopped pork fat or unsmoked bacon 2 ounces prosciutto, finely chopped 1¼ cups loosely packed fresh flat-leaf parsley leaves, finely chopped, plus more to garnish 2 teaspoons dried oregano 1½ teaspoons fennel seeds 1 teaspoon chili flakes ½ teaspoon ground cumin ¼ teaspoon ground

allspice 7 slices white bread, finely ground in a food processor Kosher salt (divided) and freshly ground black pepper, to taste 2 ⁄3 cup ricotta, drained in a sieve for 2 hours 2 tablespoons milk 3 eggs, lightly beaten 6 tablespoons extravirgin olive oil, plus more for greasing ¼ cup red wine 4 cups canned tomato puree 1 cup beef or veal stock 1 teaspoon sugar 1 teaspoon salt Grated ParmigianoReggiano to garnish Combine all meats, herbs, spices, breadcrumbs, salt and pepper in a large bowl and set aside. In another bowl, whisk together ricotta, milk and eggs then add to meat mixture, gently.

Chill for an hour.

Heat oven to 300 degrees.

Grease two rimmed baking sheets with oil and set aside. Using a 2-ounce ice cream scoop (I just used my hands), portion out the mixture and roll into balls.

Transfer to baking sheets.

Heat 3 tablespoons oil in high-sided, 3-quart (ovenproof) skillet over mediumhigh heat. Add half the meatballs; cook, turning occasionally, until browned, about 10 minutes.

Transfer meatballs to a plate and wipe out skillet.

Repeat with remaining oil and meatballs.

Return reserved meatballs to the skillet along with any juices from the plate. Add wine, increase heat to high, and cook for 2 minutes.

Stir in tomato puree, stock, sugar and salt, bring to a boil and tightly cover skillet.

Transfer to oven and bake until meatballs are tender and have absorbed some sauce, about 1 and a half hours.

To serve, transfer meatballs to a platter and spoon sauce over. Sprinkle with Parmigiano and parsley.

Chili-pepper jelly-glazed lamb meatballs are like potato chips: You can’t eat just one. leaves or ¾ teaspoon dried thyme 2 cloves garlic, minced 1½ teaspoons kosher or sea salt ½ teaspoon freshly ground pepper All-purpose flour for dusting For sauce: 2 tablespoons extravirgin olive oil ¼ cup finely chopped Mayan onion 3 ⁄4 cup chicken broth 3 tablespoons dry white wine 3 tablespoons minced parsley 1 clove garlic, minced Pinch of crumbled saffron threads Kosher or sea salt 4 ounces mushrooms, brushed clean, stems trimmed, and caps halved or quartered 3 tablespoons freshly squeezed lemon juice 2 egg yolks Chicken broth or water, as needed To prepare meatballs, combine breadcrumbs with milk in a large bowl. Gently mix in ground veal and pork, eggs, lemon juice, parsley, prosciutto, thyme, garlic, salt and pepper.

Shape into ½-inch meatballs and dust with flour.

To prepare sauce, heat oil in a shallow flameproof casserole over mediumhigh heat, and saute meatballs until brown on all sides. Add onion and saute until softened. Stir in broth and wine. Bring to a boil over high heat. Cover and simmer for 40 minutes.

Mash 2 tablespoons parsley, garlic, saffron and a pinch of salt to a paste in a mortar, or process in

a mini food processor until finely minced.

Transfer meatballs to a warm plate and keep warm. Strain sauce through a fine sieve, pressing on the solids with the back of a metal soup ladle to extract as much liquid as possible. Return sauce to the casserole and add mushrooms, mortar mixture and lemon juice.

Whisk egg yolks with a little hot sauce from the casserole in a small bowl, then add back to the casserole. Cook over low heat, stirring constantly until thickened (do not boil). If the sauce seems too thick, add a little broth or water.

(Mine needed no additional liquid.) Return meatballs to the sauce and simmer for 1 minute. Serve straight from the casserole, sprinkled with remaining parsley.

Chili-Pepper Jelly-Glazed Lamb Meatballs These little gems are like potato chips; you can’t stop with one. I doubled the sauce recipe because I found it to be so deliciously spicy yet sweet.

1 pound ground lamb 2 tablespoons minced onion 1 tablespoon chopped fresh flat-leaf parsley 1½ teaspoons finely chopped fresh mint leaves 3 ⁄4 cup fresh breadcrumbs 1 clove garlic, minced 1 tablespoon Worcestershire sauce 1 tablespoon ketchup

1 teaspoon smoked paprika ½ teaspoon kosher salt ¼ teaspoon freshly ground black pepper 1 lightly beaten egg Mix all ingredients lightly, except egg. When combined, add egg and mix again. Shape into 1-inch balls. Place on baking sheet, lined with parchment paper or foil. Cover with plastic wrap and chill for about 30 minutes.

Preheat oven to 350 degrees. Bake meatballs for 20 to 25 minutes or until internal temperature is 165 degrees. Immediately add cooked meatballs to ½ recipe chili-pepper jelly glaze in a saucepan (I made a full recipe and used it all) and simmer uncovered over low heat for 2 to 3 minutes, stirring gently as needed until the meatballs are nicely glazed.

For chili-pepper jelly glaze 1 ⁄3 cup ketchup ¼ cup water 3 tablespoons pepper jelly 2 teaspoons olive oil 2 teaspoons Worcestershire sauce 1 teaspoon chili powder 1 teaspoon freshly squeezed lemon juice In a medium saucepan over low heat, combine all the ingredients. Bring to a simmer and cook uncovered, stirring occasionally, for 10 minutes or until the flavors have blended. Use right away or refrigerate in an airtight container for up to 5 days.
