Haunting for Huntington’s 7th Avenue Shocker’s creator overcomes obstacles

ROCK FALLS – It wasn’t easy this year, but the 7th Avenue Shocker, a free haunted maze, will be open.

Terry Warren had a maze in his front yard at 201 Seventh Ave. last year, and hit some roadblocks when he tried to supersize it this year. Warren received a citation from the city for a violation of building, zoning and fire codes.

Warren pleaded his case before the city on Aug. 19, with supporters waving banners in council chambers.

This year’s event has special meaning for Warren. The maze is a fundraiser for Huntington’s disease awareness and research. Warren’s wife, Jennifer, has battled the disease for 10 years, and is now at a local nursing center.

Huntington’s is a degenerative neu-

romuscular disease that has no cure. It is genetically contracted, and children of those with the disease have a 50 percent chance of inheriting the gene.

“My wife is the definition of strength, and I wanted to pay tribute to her and increase awareness of a horrible disease that many people know nothing about,” Warren said.

While the city offered support for Warren’s cause, they told him the maze would have to be scaled back to code.

Warren told the city he would do whatever it took to comply, and went back to work the day after the council meeting. He is still wrapping up a few details, but is happy with the finished product.

“It all had to be torn down, but this one is still much bigger than it was last year,” Warren said. “The city didn’t like the way it was all

enclosed, but now there are three or four exits in every room.”

City Building Inspector Mark Searing said Warren’s structure is no longer in violation of city code.

“The first one had four walls, a roof, and not enough exits,” he said. “It’s not a building anymore under my criteria, and there are plenty of places for people to get in and out.”

Warren said about 15 family members and friends will be on hand the stage the event. The maze will be open from 7 to 9:30 p.m. Saturdays in October and on Oct. 31.

Arellano to oppose Burke Local businessman has considered campaign for nearly a year

DIXON – After more than a year of consideration, local businessman Liandro Arellano Jr. is making his campaign for Dixon mayor official.

“I wanted to make sure people had some good options,” he said. “The biggest thing for me is that I wanted to know that I could give myself to the community, and [my] businesses could be managed.”

Even though the job is considered part-time, Arellano said he knows with all the changes that could be coming, and in his first term, that it would be more like a full-time job.

Arellano, 33, is the owner of the Jimmy John’s Gourmet Sand-

wiches in Dixon and Rock Falls. In March 2012, he lost a Republican Party primary to Tom Demmer, R-Dixon, who went on to win the 90th District state representative race.

Mayor Jim Burke was elected in 1999, and his four terms are the most served in consecutive for a Dixon mayor since the commission form of government was established in 1911. If re-elected, Burke’s fifth term would tie him with William Slothower (1935-46 and 1954-58) for the most for a Dixon mayor.

Burke couldn’t be reached for comment.

While Arellano supports the change to the managerial form, it isn’t the form of government discussed during the governmental task force review last year that he preferred. He said he liked the council and city administrator form better.

His main concern with the managerial form is that it gives a lot of power to one person – the city manager – who isn’t directly elected by the voters.

This will be Arellano’s second political campaign, after he lost to Demmer in 2012. Like doing anything the first time – political campaign or starting a new business – Arellano said he learned a lot from the experience.

“My favorite part of

that experience was that I did door-to-door [campaigning] and talked oneon-one,” he said. “And people let you know what they think and what’s on their mind.”

That’s something he said he’ll continue during his mayoral campaign.

With the Rita Crundwell scandal behind the city, Arellano said there’s an opportunity for the city to achieve a lot, now that more attention is being paid to it. He said he wants to protect what’s great about Dixon – the small-town atmosphere – but also focus on the future.

“The biggest thing that got me into [the campaign] is that in the right hands, Dixon is on the verge of greatness,” he said.

Because Sterling doesn’t have a traditional tourism department, the gallery will help Groharing and Ewoldsen centralize some of the tourism duties they handle.

“This is a good catalyst for sending people to other cool things off the beaten path when they are visiting,” Ewoldsen said. “We can also provide items made in Sterling for visitors wanting to take something back with them.”

Groharing said a development buzzword she likes is “placemaking”. It is a holistic approach to

planning public spaces, built around the desire to take full advantage of local assets.

“This is a project that can take advantage of so many local nuggets, and the more we think about it, the more ideas we get for the space,” she said.

Ewoldsen believes the arts should play a key role in downtown revitalization.

Warden will ‘be hard to replace’ Investigation of Chandler continues after her retirement

DIXON – Although Nedra Chandler has retired as warden of Dixon Correctional Center, the Illinois Department of Corrections continues to investigate the cause of her being placed on administrative leave last month.

Meanwhile, a state official who asked not to be named called Chandler a good worker. “She did a good job there,� said the official, who is not in a position authorized to speak on the Chandler matter.

“She’s going to be hard to replace.�

For now, Chandler is being replaced by two assistant wardens, Leonta Jackson and LaShona Cameron, said Tom Shaer, IDOC spokesman. He said David Gomez, deputy director of the northern district, is working closely with them. “We have over 50 assistant wardens in the system right now, and have an excellent track record for promoting from within,�

Shaer said. “We develop wardens among assistant warden ranks, and most

wardens are appointed from within the assistant warden ranks – not all, but most.�

Shaer said it won’t take very long, likely a few weeks, before an acting warden is named. But then, because of procedural processes, there would be a bit of a delay before a new warden is officially appointed at Dixon.

Shaer still won’t say what the investigation of Chandler is about. When asked, he did say there are protocols for any time an IDOC employee comes into contact with a person of interest to the department.

“Any contact with a known felon or anything that might be of interest to this department is to be reported and detailed in writing,� Shaer said.

Chandler had been housing a registered sex offender, Robert L. Swon, at her Sterling home since shortly after he was released from prison. Swon had served 1 year of a 2-year sentence stemming from his failure to register as a sex offender.

He was arrested on child pornography charges at Chandler’s home on Sept.

19, the same day she was escorted off of prison grounds and was placed on

administrative leave.

Attempts to contact Chandler have been unsuccessful.

Swon faces four charges of possession of child pornography in which the children depicted were under the age of 13, and one charge for failing to comply with part of the rules sex offenders must follow. One of those rules forbids sex offenders from operating a Facebook page, something Swon had been doing since April, authorities say.

Sterling Police Detective Mike Henry, who handled Swon’s case, said he had been told during the inves-

tigation that Swon was one of Chandler’s forNedra mer foster Chandler children, although he could not confirm that.

When asked by Sauk Valley Media, the Department of Children and Family Services also would not confirm that.

Chandler, 53, began her career at the Dixon prison 29 years ago. She had been warden since 2005.

Swon is in Whiteside County Jail on a $100,0000 bond.

STERLING – Manufacturing is making a comeback, and the Sauk Valley needs to make sure it’s ready to take advantage.

That was one of the messages conveyed to the group gathered for Parents Night on Wednesday at Sterling High School’s Centennial Auditorium.

The event was part of the area’s participa-

tion in Manufacturing Day activities planned nationwide.

Cary Robbins, human resources manager at Sterling Steel, and a chairman of the region’s Workforce Investment Board, grew up in Dixon and has always worked in the area. “Passion is alive for our workforces, our communities, and area,� Robbins said. “There is a desire to invest in training and endless opportunities exist for your kids. We need to give kids all the information, so they can make choices.�

The objective of Manufacturing Day is to change perceptions about the sector, so the skills gap can be addressed, and parents and children are

better educated about the value of high-tech trades in the new economy. “By 2015, the shortage of manufacturing workers will hit 3 million,� Robbins said. “There are many paths to employment, but the ‘college for all’ mentality isn’t the best thing for our labor force.�

The average manufacturing worker makes $77,000 a year in pay and benefits.

Time to get pumped up Pumpkin pie spice not just for fall lattes

t’s officially fall. And for many, the seasonal change has nothing to do with the weather or a date on the calendar. Fall is here because Starbucks is once again offering its signature pumpkin spice latte.

Never mind that the iconic latte doesn’t actually contain any pumpkin.

The signature flavoring is all in the spice blend. And it works. Starbucks has sold more than 200 million of the popular drinks since its introduction in 2003.

The exact blend varies.

Cinnamon. Nutmeg. Ginger. Allspice. Perhaps a little clove. Maybe a touch of mace. But while pumpkin spice might be most closely associated with pie, it’s far from a one-trick pony.

Spiced Candied Pecans 1 hour, 15 minutes. Makes about 1½ quarts candied nuts 4 cups sugar, divided 3 cups water 1 pound raw pecan halves 1 tablespoon ground cinnamon 1½ teaspoons ground ginger 1½ teaspoons ground nutmeg 3 ⁄4 teaspoon ground allspice 1. Heat the oven to 275 degrees.

2. In a large saucepan, combine 3 cups sugar, water and pecans. Bring to a simmer over high heat, then reduce the heat to maintain a gentle simmer, and cook the pecans until softened, about 10 minutes. While the pecans are simmering, combine the cinnamon, ginger, nutmeg

and allspice in a small bowl, along with the remaining 1 cup sugar.

3. Drain the pecans (discard the pecan simple syrup or save for another use), and place in a large bowl. Sprinkle over the spiced sugar and toss to coat the pecans completely.

4. Spread the pecans on a parchment-lined rimmed baking sheet. Toast the pecans until the sugar is hardened and the pecans are dried through, 40 to 60 minutes, tossing every 10 minutes or so.

5. Cool the pecans on the baking sheet. The pecans will keep up to 2 weeks stored in an airtight container in a cool place.

Pumpkin-Spiced French Toast 25 minutes. Serves 4 3 eggs 3 ⁄4 cup heavy cream ½ cup pumpkin puree ½ teaspoon vanilla extract 3 tablespoons sugar 1 teaspoon cinnamon ½ teaspoon nutmeg ½ teaspoon ground ginger ¼ teaspoon ground allspice 8 (1-inch thick) slices bread, such as challah or brioche, somewhat stale ¼ cup butter or bacon fat, more as needed Powdered sugar, as desired Maple syrup, preferably grade B, as desired 1. In a medium bowl, beat the eggs. Whisk in the cream and pumpkin puree, then the vanilla, sugar, cinnamon, nutmeg, ginger and allspice. Pour the batter into a wide, shallow baking dish.

2. Soak the bread slices in the egg mixture on both sides, 1 to 2 minutes per side.

3. Heat a large, heavybottomed skillet over medium heat until hot. Melt butter or bacon fat in the hot pan, then add 2 slices of the bread.

Reduce the heat and fry the slices gently on each side until

the bread is crisp and golden brown, and the inside of the bread is cooked through, 3 to 4 minutes per side. Cover the pan while cooking so the bread toasts evenly and thoroughly.

4. Remove the toast and hold on a baking sheet in a warm oven until all of the slices are toasted. Repeat with the remaining slices.

5. Slice the toast and divide it among four plates. Dust each serving with powdered sugar, if desired, and serve with warm maple syrup.

Pumpkin-Spiced Egg Nog 20 minutes. Serves 12 3/4 cup heavy cream 6 eggs, separated 1/2 cup plus 2 teaspoons sugar, divided 1 cup dark rum 1 teaspoon ground cinnamon 1/4 teaspoon ground allspice 1/2 teaspoon ground nutmeg 1/2 teaspoon finely ground ginger 3/4 cup milk 1/2 cup pumpkin puree Cinnamon sticks or ground nutmeg, garnish 1. In the bowl of a stand mixer, or in a large chilled bowl using a hand mixer, beat the cream to stiff peaks, about 3 minutes.

Cover and refrigerate until needed.

2. In a large bowl, whisk together the egg yolks and one-half cup of sugar until combined and frothy.

Whisk in the rum.

3. Set the bowl over a large pot of simmering water, making sure the bottom of the bowl does not touch the water. Continue to whisk until the mixture increases in volume and thickens, 3 to 5 minutes.

Remove the bowl from heat and place it over a large bowl of ice water, whisking to cool the mixture. Refrigerate until needed.

4. In the bowl of a stand mixer, or in a large bowl using a hand mixer, beat the egg whites until frothy.

Gradually sprinkle over the cinnamon, allspice, nutmeg, ginger and the remaining 2 teaspoons sugar, a little at a time, and continue to beat until stiff peaks form. In a separate bowl, whisk together the milk and pumpkin puree until smooth. Set aside.

5. Fold the whipped cream gently into the chilled egg yolks, then, again very gently, fold in the beaten egg whites and milk mixture, each a little at a time, until incorporated. Refrigerate until ready to serve. To serve, pour into chilled glasses or eggnog cups (or demitasse cups), with a stick of cinnamon or pinch of nutmeg.

The cocktail will keep for 1 day, covered and refrigerated.

Spiced-Pork Tenderloin with Roasted Apples and Pumpkin Risotto 1 hour, 10 minutes.

Serves 4 to 8 3 tablespoons olive oil, plus more as needed 3 cloves garlic, mashed or finely minced 3/4 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 teaspoon ground ginger 1/4 teaspoon ground allspice 1 1/4 teaspoon salt 1 tablespoon maple syrup 2 (1-pound) pork tenderloins 4 tart apples, such as Braeburn, McIntosh or Granny Smith, peeled, cored and quartered 1/4 cup dry white wine 1 cup chicken broth 2 tablespoons cold butter, cut into small pieces 1. Heat the oven to 425 degrees. In a large bowl, combine the 3 tablespoons olive oil, garlic, cinnamon,

nutmeg, ginger, allspice, salt and maple syrup. Add the tenderloins to the bowl and toss them with the spice mix to coat.

2. Heat a large oven-proof saute pan (large enough to hold the tenderloins and apples) over medium-high heat until hot. Add enough oil to just coat the surface, then add the tenderloins and sear on all sides.

3. While the pork is searing, toss the apples in the large bowl with any remaining spice mix to coat. When the tenderloins are seared, remove the pan from heat and scatter the apples around the tenderloins in the pan.

4. Place the pan in the oven and roast until a thermometer inserted in the center of the tenderloins reaches 140 degrees, 20 to 25 minutes, or to desired doneness.

5. Remove the pan from the oven and remove the tenderloins and apples from the pan to a platter or cutting board to rest.

Place the pan on the stove over medium-high heat.

Deglaze the pan with the white wine, scraping the bottom of the pan to dislodge any browned bits.

Stir in the chicken broth and simmer until the sauce is reduced by about twothirds and slightly thickened, about 3 minutes.

Remove the pan from heat and stir in the butter bits to further thicken the sauce and add a nice sheen.

6. Gently toss the apples with the sauce to coat, and place the apples on a platter. Slice the tenderloins and arrange with the apples on the platter.

1 large clove garlic, minced 1½ cups vialone nano or arborio rice ¼ teaspoon freshly grated nutmeg 1/ cup dry white wine 3 1½ cups pumpkin puree, divided Salt and pepper 1/ cup chopped toasted wal3 nuts Walnut oil Grated Parmigiano-Reggiano, to taste 1. In a medium saucepan, bring the vegetable broth to a simmer over medium heat.

2. Meanwhile, in a large heavy-bottomed pot or Dutch oven, melt the butter and olive oil over medium heat. Stir in the onion and garlic, and cook, stirring frequently, until the onion is translucent and just begins to color, 8 to 10 minutes.

3. Stir in the rice and nutmeg and cook, stirring frequently and coating the rice with the fat, until the rice just begins to toast, about 3 minutes.

4. Add the wine and continue to stir, cooking until the wine is mostly absorbed.

5. Add a ladleful of broth and cook, stirring constantly, until the broth is almost completely absorbed. Continue adding an additional ladle of broth as each is absorbed by the rice.

6. After 10 minutes of cooking the rice, stir in 1 cup of the pumpkin puree with another ladle of broth. Season with one-half teaspoon salt and a pinch of pepper.

7. Continue cooking the rice, stirring in additional broth as needed, until the rice is slightly al dente, about another 10 minutes.

8. Stir in the remaining puree, the chopped walnuts and 2 tablespoons walnut oil. Season as desired, and stir in additional broth as desired for a creamy consistency. Serve each portion with a light drizzle of walnut oil and a sprinkling of freshly grated cheese.
