ROCK FALLS – Karen Miles just has a knack for people.

She’s friendly, outgoing, fun, and in possession of a fabulously charming New Jersey accent. What’s not to like?

By day, she coaches P.E. in Prophetstown. By night, she more than 100 of her closest friends make up the rapidly growing Facebook group called the Yak Yak Sisters.

What are the Yak Yak Sisters?

So glad you asked.

Karen doesn’t actually know all of the people who are fans of the Facebook page she runs – not even half, actually – but they do all have one thing in common: a love of the outdoors, and kayaking.

Every Wednesday at 6 p.m., a group of “sisters� and a few “brothers� meet at the Hennepin Canal boat launch off state Route 40 in Rock Falls, just south of the Candlelight Inn. They drop their kayaks in the water – scum, bugs, and plants be damned – and head out together for about 2 hours of laughing, chatting, and paddling.

They’ve never actually had all 125 of their Facebook sisterhood on the water at once.

In fact, the most they’ve ever had happened this spring, when about 30 people showed up with their kayaks, including a troop of Boy Scouts with canoes, for a “blessing of the

On Wednesday, a group of sisters plus a few brothers showed up a little earlier than usual.

Brownies (and one Daisy) from Tampico Girl Scout Troop 253 needed to learn how to kayak so they could get a kayaking badge, you see.

Seven Scouts in all – six thirdgraders and one first-grader – took to ’yaking like ducks take to water, and as far as this reporter is aware, no one fell in.

After exiting, there were more than a few exclamations about wet pants bottoms, but that’s a risk serious ’yakers must take.

The idea for the group arose from a conversation that Karen, 55, had with fellow sister Carolyn Hohenboken, 52. They were in church one day with another woman in her 70s who mentioned that her sister in Minnesota was part of a kayaking club. “We said, ‘We should do that!’� Karen said. And, well, that was that.

Now, things are getting pretty serious. They have hats and shirts and everything. “In the winter, we snowshoe,�

Karen said, laughing. “We go to concerts. We have a lot of fun.� “There’s nothing like being on the water,� Carolyn said. “It’s here, and it’s just open, and we should enjoy it.�

And enjoy it they do.

AMBOY – It could be easy to feel a bit unappreciated working in the hinterlands of rural Illinois.

That’s not a feeling Dr. Kurt Crowe is burdened by, though. Quite the opposite.

The 48-year-old GP treats all members of the family, from the cradle to the grave, out of his Amboy office – babies, who need routine immunizations; children with cuts, scrapes, and broken bones; adults, who come in for annual screenings; senior citizens with diabetes, high blood pressure, or other chronic illnesses.

“The people are very down-to-earth, and they seem as though they appreciate having someone [a doctor] close by … someone who is available when they need them,” Crowe said.

“I’m taking care of families. I might be taking care of one person, but everyone in the room with them is a patient, too.”

And the locals aren’t the only one who appreciate his care: Crowe was named a 2014 Rural Physician of Excellence by the Illinois

He said at the ceremony he was “humbled and honored” to receive the award, but added that the credit should not go solely to him.

“Everyone who works for me and with me … they are just as big a part of the team as I am. They all play very important roles, and I couldn’t do what I do without them.”

Crowe, who lives in Dixon with his wife, Ruth, and their 6 children, grew up in rural northeastern Wisconsin, knew firsthand the importance of so-called country doctors, who could serve entire families, from acute illnesses to chronic diseases.

“If you can only have one doctor, then a family doctor is the jack-of-alltrades, who can handle most things,” he said. “I wanted to fill that need in small towns.”

Crowe received his undergraduate degree in biology from North-

ern Illinois University.

He then studied at the University of Illinois College of Medicine in Rockford, which houses the Rural Medical Education (RMED) program; he completed his family medicine residency there, too.

“I did all of my training in an urban area, with a lot of volume and variety. By the time I got [into regular practice], I had been able to see and do a lot of procedures.

“It trained me well for working in a small area with a wide variety but not always the volume … although rural areas are so underserved, that one doctor easily can become overwhelmed.”

Crowe practiced in Princeton for 6½ years, then joined Dixonbased KSB Medical Group in 2006; he practices primarily in Amboy, although he sees patients in Ashton, too.

“The workload [is very challenging],” he said.

“Because it’s an underserved area … you tend to get pretty busy after a while. It means a lot of time away from home, a lot of trips to the hospital.

“It’s a challenge, but I am doing what I enjoy doing.”

Crowe was among the first graduates of the RMED program in 1997.

He since has served on its Recruitment and Retention Committee for 15 years, and now is a faculty member in the Department of Family and Community Medicine.

Now, every year, Crowe takes a student from the program into his practice for a 16-week apprenticeship.

“I feel like [the program] provided me with lots of opportunities and excellent training to do what I do … and I feel that it is important to continue that tradition for future generations of rural doctors.”

ROCK ISLAND (AP) – The NAACP is calling for a federal investigation after the Rock Island County prosecutors ruled that a Rock Island police officer was justified in the fatal shooting of an armed African-American man.

On Wednesday, Rock Island County State’s Attorney John McGehee issued a written report, clearing Officer Ryan DeRudder of criminal charges in the death of 32-year-old Darrin Langford on April 2.

Before the confrontation with police, Langford was seen firing his weapon into the air, according to witnesses.

A foot chase began when Langford saw police had arrived on the scene. Langford was ordered to drop his gun but refused to do so.

DeRudder shot at Langford when he started to pivot during the chase, because DeRudder feared for his safety, the report determined.

“With shots being fired, Darrin Langford endangered human life,” McGehee said. “ ... Ryan DeRudder ... acted justifiably in discharging his weapon to protect himself and others.”

Langford was shot three times. He was hit in the right side of the back, the right hip and left buttock.

NAACP of Rock Island County expressed “grave concern” about McGehee’s ruling and announced plans to ask the U.S. Department of Justice to launch an investigation.

“We’re not saying that somebody intentionally distorted the report or the outcome,” said Berlinda Tyler-Jamison, president of the local NAACP chapter. “We’re saying there needs to be a body that’s further removed from this investigation.”

The shooting highlights the need for police to wear body cameras, and that many questions would have been answered if the officer was wearing one, TylerJamison said.

The Langford family has filed a wrongful death lawsuit against the city of Rock Island, DeRudder and an unidentified officer. On Tuesday, DeRudder and the city filed motions to dismiss the lawsuit.

DeRudder was placed on restrictive duty status pending the investigation, and he will soon return to active duty status.

ROCHELLE – New York-based BrightFarms Inc. broke ground Thursday on a $10 million, 160,000-square-foot hydroponic greenhouse that officials say should be up and running by early next year.

Chicagoland Greenhouse, near Bay Valley Foods, just off Interstate 88, will grow more than 1 million pounds of salad greens a year – kale, arugula, baby spinach, and lettuce – as well as tomatoes and basil a year for suburban grocer Mari-

Lightfoot said. “We are looking for a shorter supply chain that will create healthy food that is better for the environment.”

The company “wanted to come to the Chicagoland area because we wanted to partner with Mariano’s,” Lightfoot said. “Rochelle made it easy for us to decide to come here, because this site was ready to go.

Roads, sewer and power all run to this site, and it’s build-ready, which isn’t often the case.”

Lightfoot, 45, said he would like to keep some of the produce in the

Rochelle area as well.

“We would love to partner with someone local,” he added. “Whether it’s a nonprofit or with schools, we love to get some of this produce in the local community.”

“We’re honored BrightFarms chose to put down roots in Rochelle, and we are excited for the completion of the greenhouse,” Rochelle Mayor Chet Olson said.

The company also has greenhouses in Bucks County, Pennsylvania; Kansas City, Missouri; and Elkwood, Virginia.

She retains her role with Main Street, and her services are contracted on a part-time basis with the nonprofit development group. A part-time assistant has been added at the Main Street office to help with the extra work.

Groharing said the county had extended its option for another year with Sterling Today for the upper floor of the Lawrence building. The agreement runs from Jan. 15, 2016, to Jan. 31, 2017.

The organization believes it would be costefficient if both projects were on a similar timeline.

“The same players are involved in both projects,” Groharing said, “so ideally, we’d like to do them at the same time, and with the same contractor.”

STERLING – After missing approval on last year’s financing application by the slimmest of margins, Sterling Today has reapplied for funding of its planned redevelopment project at the Lawrence Building.

The county owns the entire building at 101 E. Third St., but the courthouse is the only occupant.

The plan would keep the courthouse on the main floor, while the four floors in the tower, which have been vacant for many years, would become a 20-unit lowincome apartment complex.

Sterling Today expects to receive word on the Lawrence Building financing in late October or early November.

The low-income element opens the door to

“We’re optimistic because some elements have been added to bring more points,” Shumard said. “We’re much more confident about our chances this year.”

One of the new elements is a plan to use a few of the apartments for veterans. The units will be fully equipped to accommodate vets with disabilities. More letters of support from the community have also been included with the application.

Sterling Today said progress is being made on the property it owns at 117 W. Third St., the former site of Knie Appliance & TV. “The architects just did detailed measurements, and we’re crunching numbers for subdividing the space for development,” said Janna Groharing, director of Sterling Main Street..

Sterling Today is partnering with the Rock Island Economic Growth Corp., a nonprofit agency that excels in bringing investment dollars for downtown revitalization projects. The estimated cost of the apartment complex is $5 million.

Six layers of financing were put together in last year’s submission. The applications are judged on a point system, and it missed approval by a single point. The new application was recently submitted.

“The deadline was pushed back a bit from March, so our application was just turned in a couple of weeks ago,” City Manager Scott Shumard said.

Cilantro sets dishes apart I

n the Bible, the manna that fell from heaven to feed the Israelites on their journey out of Egypt was described as being like coriander seeds.

Or to put it another way, the seeds of the cilantro plant.

One plant. Two names.

What is commonly known as cilantro are the leaves and stems of the plant; the seeds, which have a completely different taste, are called coriander.

But that’s just in America. Throughout Europe, the whole plant is generally referred to by some variation on coriander (koriandr in Czech, coriandolo in Italian). But it’s cilantro in Mexico and Spain.

In Mandarin Chinese, it’s yuen sui and in Vietnamese it’s ngo. Which proves the worldwide popularity of this plant.

And yet, it was little known in America just 40 years ago.

Cilantro closely resembles Italian flat-leaf parsley in appearance but has a much brighter, fresher taste and an intoxicating aroma (though some people, for genetic reasons, can’t stand it).

It can be used in any kind of savory dish, from soups to salads to entrees – while the seed, coriander, is even good in baked goods and desserts.

There is really only one rule to remember when cooking with cilantro: It loses its potent flavor quickly when exposed to heat, so it is always best to add it in the last few minutes of cooking.

I made three different dishes featuring cilantro, and not one of them involved adding cilantro in the last few minutes of cooking. Call me a rebel.

One of the dishes uses cilantro only as part of an uncooked sauce, adding its vibrant green color as well as its clean taste.

The cilantro is the primary ingredient in a chimichurri, a South American sauce usually made instead with parsley.

Try it with the cilantro. When blended with garlic, peppers, lime juice, vinegar and olive oil, it becomes a multipurpose, one-size-fitsall sauce that goes with many other dishes (rice, pasta, potatoes) beyond

the traditional grilled meat.

I used it with grilled meat. It was delicious.

The simple marinade brought out the natural flavor of the lamb, which was then accented by the heady spice mix. The full-flavored sauce exponentially increased the pleasure, kicking the dish into the stratosphere.

I thought cilantro couldn’t get any better than that, but I was wrong.

I made a cilantro and ginger hummus that was so addictive that one coworker accused me of making crack. Another co-worker, who fancies herself the definitive expert on hummus, explained in no uncertain terms that what she was eating was not, in fact, hummus, because it tasted of cilantro and ginger.

Mind you, she couldn’t get enough of it.

And this hummus (or cilantro-flavored chickpea spread, as the expert insisted it be called) is deceptively easy to make.

You just throw a handful of ingredients into a food processor and whip it together until done.

I added one preparation that made it as smooth as silk, and it probably took less than 15 extra minutes – though that is more time than it took to make the rest of it: I peeled the chickpeas.

They were canned, so it was easy (I’ve also peeled them when I cooked them myself, but that is much more work). The beans pop right out of their clear skins, and it makes a world of difference in the final product.

On the other hand, the best hummus I’ve ever had is made at a Lebanese restaurant in Toledo, Ohio, and I asked the owner if he peels the chickpea skins.

He said no.

Finally, I made a chicken dish that may actually be my favorite of the three, though that is stiff competition. It takes more time and effort than the other two, but I’m sure you will agree that the results are well worth it.

A mole is a thick sauce popular in Mexico.

This version, however, is from the state of Zacatecas, which is farther north. It’s a green mole, made with fresh tomatillos along with the cilantro, and it is lighter in concept than the others,

though just as flavorful.

This sauce is made partly from a cilantro broth that is used to simmer the chicken. One especially enticing byproduct of the dish is that you end up with about 2 quarts of this incredible chickencilantro broth.

The mole is superb; it is mind-blowingly superb, it is unlike anything you have ever tasted.

But now I can’t wait to use that broth.

Zacatecas-Style Green Mole with Chicken Yield: 4 servings For the chicken 1 (3 to 4-pound) whole chicken, cut into 8 pieces ½ cup cilantro stems 2 tablespoons kosher salt 1 teaspoon whole black peppercorns 2 cloves garlic 1 large yellow onion, chopped 1 bay leaf For the green mole 8 ounces tomatillos, preferably fresh, peeled and chopped 2 jalapeños, stemmed and chopped ½ cup cilantro leaves 2 teaspoons kosher salt, plus more to taste 2 cloves garlic, chopped 2 (8-inch) flour tortillas, toasted, plus more for serving 2 tablespoons canola or corn oil 1. To cook the chicken: Place chicken, cilantro stems, 2 tablespoons kosher salt, peppercorns, whole (or crushed) garlic, bay leaf and 12 cups water in a 6-quart saucepan and bring to a boil; reduce to medium low and simmer, covered and stirring occasionally, until chicken is tender, about 30 minutes.

2. Remove chicken from saucepan and strain liquid through a fine strainer; reserve 4 cups and save remaining liquid for another use (it makes a delicious broth). Set chicken and liquid aside.

3. To make the sauce: Heat tomatillos and jalapeños in a saucepan over medium heat and cook, stirring occasionally, until

darkened and thick, about 10 minutes. Transfer to a blender with cilantro leaves, 2 teaspoons kosher salt, chopped garlic, tortillas and 1 cup of the reserved cooking liquid. Puree.

4. Heat oil in a 6-quart saucepan over mediumhigh heat; add tomatillo sauce and fry, stirring constantly, until it thickens into a paste, about 5 minutes.

Whisk in remaining 3 cups cooking liquid and bring to a boil; reduce heat to medium and cook, stirring, until reduced and thickened, about 30 minutes.

5. Add chicken pieces and cook until heated through, about 10 minutes. Serve with Mexican rice and tortillas.

Per serving: 527 calories; 30 g fat; 7 g saturated fat; 131 mg cholesterol; 44 g protein; 17 g carbohydrate; 4 g sugar; 2 g fiber; 1,725 mg sodium; 64 mg calcium.

Sichuan Lamb Chops with Cilantro Chimichurri Yield: 4 servings 1/4 cup soy sauce 1/4 cup oil 3 tablespoons sherry 5 garlic cloves, divided, minced 8 lamb chops or 1 rack, frenched 4 tablespoons cumin seeds 1 tablespoon coriander seeds 2 tablespoons Sichuan peppercorns 2 tablespoons salt 1 pinch crushed red pepper flakes plus optional ¼ teaspoon 1 cup cilantro 1/2 lime, juiced 2 tablespoons jalapeño, chopped 2 tablespoons rice vinegar 1/3 cup olive oil 1. Mix soy sauce, oil, sherry and 4 of the minced garlic cloves. Add lamb chops (cut into 4 pieces if using a rack of lamb) and marinate in

the refrigerator for 6 to 8 hours.

2. Toast cumin and coriander seeds by placing them in a hot skillet over medium-high heat; shake the pan frequently until the seeds are aromatic, about 1 minute.

Pour out the seeds and add peppercorns to the pan; toast in the same manner until fragrant, about 2 minutes. Grind all the seeds in a spice grinder or with a mortar and pestle. Add salt and optional crushed red pepper flakes and sprinkle liberally over lamb.

3. Heat grill or a large skillet over medium-high heat. Cook lamb until done, an internal temperature of 140 degrees for medium rare. Allow to rest 5 minutes before serving with the cilantro chimichurri sauce.

4. To make the chimichurri sauce, place in a blender the cilantro, lime juice, jalapeño, rice vinegar, remaining 1 minced clove garlic and remaining pinch of crushed red pepper flakes, and blend.

With the motor running, drizzle in the oil. Season to taste with salt.

Per serving: 654 calories; 54 g fat; 13 g saturated fat; 108 mg cholesterol; 31 g protein; 8 g carbohydrate; 2 g sugar; 1 g fiber; 4,833 mg sodium; 107 mg calcium.

Cilantro and Ginger Hummus Yield: About 12 servings 1 (15-ounce) can chickpeas, drained and rinsed 1/2 cup tahini 1 tablespoon minced garlic 1 tablespoon minced fresh ginger 1/4 cup cilantro 1/2 lemon, juiced 1 teaspoon salt 1/4 cup olive oil 1/4 cup water 1. If desired, peel the chickpeas (if the beans have been canned, the peels will pop right off).

This step is not necessary, but it makes a much smoother hummus.

2. Blend chickpeas in a food processor until coarse. Add tahini, garlic, ginger, cilantro, lemon juice and salt. Process for a full 1 to 2 minutes.

With the processor running, drizzle in the oil and then the water. For a smoother, thinner consistency, add more water.

Per 2-tablespoon serving: 152 calories; 11 g fat; 2 g saturated fat; no cholesterol; 4 g protein; 11 g carbohydrate; no sugar; 1 g fiber; 273 mg sodium; 31 mg calcium.
