Bison ‘experiment’ blossoming Ecologist: Grazing patterns helping restore Nachusa Grasslands BY EARLEEN HINTON

FRANKLIN GROVE – Yes, yes, all the buzz might be about the baby bison boom at Nachusa Grasslands. But the real excitement is what the grown-ups are already doing to help restore the prairie. “It’s been super-exciting ever since the bison arrived, and we are already starting to see success from bison grazing,” restoration ecologist Cody Considine said. “It looks like the bison are eating the grasses around the spring flowers, and that’s pretty cool.”

The recent inclusion of the big prairie mammals might be what’s driving new people to the Nature Conservancy’s 3,500-acre grasslands, east of Dixon and south of Oregon. But it is the delight in the details that inspires Considine and other volunteers who spent years pulling invasive plants, collecting prairie plants seeds, burning, and replanting. “Already we can see where the prairie plants are doing better, based on where and what the bison are eating, but from a science research

point of view, this study will take several years,” Considine said. “Right now, it is very evident they are avoiding the forbs [flowers] and eating the grass.” Bison were reintroduced to the grasslands in October 2014, when Considine, project director Bill Kleiman, and volunteers made three trips totaling nearly 3,500 miles to transport cows and bulls from established herds in Iowa and South Dakota to the grasslands.

The grasslands’ herd is the first to live at a TNC preserve east of the Mississippi, and also the first conservation herd in Illinois – with a primary purpose of helping the prairie thrive. So far, the bison seem be fitting well into their new home. The first calf was born in early April, followed by 10 soon after. “As of last Saturday, we now have 11 new calves,” Considine said. “We now have 41 in the herd.” The grasslands kiosk, on Lowden Road, offers maps of the grasslands, including where the bison are located. “People are excited about the bison,” Considine said. “Now people can come here and learn more about what we do and how they can contribute. They may or may not be able to see the herd, depending on where they are at. This isn’t a zoo. These are wild animals.” Sometimes, the herd can be seen grazing on the west side of Lowden Road, from the north side of Stone Barn Road, or south from Flagg Road. “Sometimes, the herd is where we have planned to sweep weeds with our stewardship groups,” Considine said. “When that happens, we just go somewhere else. We’re trying not to influence their behavior.” Plans are underway to build a self-guided interpretive center along Lowden Road, south of the grasslands’ headquarters barn, where visitors can learn about the prairie and, of course, the bison. Those additions could be added in 2016. “We hope to have a design for school groups. We really want it to be super-informa-

tive,” Considine said. “And we are trying to figure out how to have several pull-offs along the roads where people can safely pull over to see the animals.” He’s noticed that the bison tend to be grazing on the portion of the prairie that was burned, where the new fresh grasses and flowers are growing. He’s also noticed at least one large wallow pit, created by the 1,700-plus pound bison rolling on the prairie. “Wallowing can also create a micro-habitat for amphibians,” he said. Just a few yards down from the wallow pit is a smaller fenced exclosure designed to keep the bison out. Inside it, a single birdsfoot violet stood surrounded by grass. Outside the exclosure, the violets flooded the hillside. “That’s exciting to see – all the blooming is outside the exclosure,” said Considine, crediting the violets’ growth to the bison grazing. “We collected data inside the exclosure before the bison arrived. About the bison For several months leading up to the bison’s arrival, volunteers, staff, and contractors worked side-by-side putting up a 6-foot fence made with high tensile woven wire and reinforced with cast iron pipes and constructing a state-of-the-art bison corral. But the real foundation for getting a conservation herd of bison at the Grasslands started years ago and was accomplished through hundreds of thousands of volunteer hours that helped reshape the farmland back into a habitat that could again support bison. The bison at the Grasslands came from TNC preserves like Wind Cave National Park in South Dakota. The Nature Conservancy has 13 preserves with approximate 5,500 bison. Wind Cave bison are unique, because they have not been bred with cattle. The bison were released into smaller pastures until they gradually acclimated to their new 500-acre home in the north bison unit. Eventually, there will be about 1,500 acres of land available to the herd. Some are fitted with a GPS chips that allow scientists to easily track them and study their habits. Microchips will also contain data about each animal including, age, weight, vacation history, and its DNA profile. How they graze and what they eat is also being studied. Their diet is almost 99.9 percent grass, which helps native forbs (flowers) thrive. For example, bison dung could help the Grasslands’ ornate box turtle population increase and become healthier. The dung attracts beetles and turtles eat beetles. Bison’s grazing habits might give the turtles more lanes to walk, restoration ecologist Cody Considine. Visitor areas, yet to be built, will eventually provide areas where the general public may be able to see the conservation herd. Programming will be added to help teach visitors about the bison and how they’ll help benefit the preserve.

Fire out at local recycler; no injuries Official cause has not been determined STAFF REPORT

STERLING – A fire in a large scrap metal heap at Cimco Recycling, 13509 Galt Road, west of town, was put out by about 11 p.m. Tuesday, the Sterling Fire Department said in a news release Wednesday morning. The fire, which started around 5 p.m., was in a pile about 100 feet square and 35 feet tall. The scrap had to be moved with heavy machinery before firefighters could get to the source, the release said. The fire was confined to the pile, and Cimco employees stayed on scene throughout the night to keep an eye on things. No one was injured. Wednesday afternoon, Richard Ashford, a trucker who hauls scrap to Cimco, but does not work for the company, said workers heard an explosion in the heap after the plant shut down at 4 p.m. He speculated

that friction caused by the scrap compressors may have sparked the blaze. An official cause has not been determined, and the state will not be investigating, a fire department spokeswoman said. The last big fire at Cimco occurred on Oct. 1, 2010, when strong winds carried sparks generated by steel shearing and processing to a huge pile of shredded tires and car interiors, sparking a blaze that took a couple of days to extinguish. A few months later, on June 5, 2011, a fire that occurred in a pile connected to the recycling process quickly was put out. It may have started the day before, fire officials said at the time. At the time, the nearest fire hydrant was about a half-mile away, at Galt Road and state Route 2. Cimco now has a hydrant on site. Flu does a flyby – for now

So far, 4 out of 5 of nearby states have bird flu outbreak

Virus hasn’t touched down in Illinois; farmers wary, watchful BY BRENDEN WEST

STERLING – With the highly pathogenic avian influenza (HPAI) confirmed in several surrounding states, Andrew Larson says Illinois is on an “island surrounded by bird flu.” Whether bird flu washes up on this “island” remains to be seen, but the prospect of it happening has put poultry producers near the border on alert. And while farmers wait to see if they’ll get any bad news, the good news is that the general public is not at risk. “The key point that everyone wants to emphasize right away is that HPAI is not a human health threat,” said Larson, a University of Illinois Extension educator who specializes in local foods. Based at Sauk Valley Community College, Larson also runs his own poultry operation and has blogged about preventative bird flu measures. The latest outbreak, H5N2, was first confirmed in the Pacific Northwest in December and has since migrated to the Midwest. Larson said it’s a new strain of the flu, which is one of the reasons why immunizations haven’t effectively addressed the virus. With confirmation of the flu in Iowa last month, four out of five of Illinois’ neighboring states have had outbreaks. Indiana, Wisconsin and Missouri are the other three. While humans aren’t at risk, the virus’s impact on flocks is devastating. The incurable virus kills off infected birds within 3 days. By the time birds begin to show symp-

toms – low energy, low appetite, misshapen eggs, swelling, discoloration – Larson said it is already too late to save them. So the most practical ways to limit bird flu’s impact are to heavily monitor a flock’s exposure to outsiders and by depopulating infected poultry. “If it lands in your pasture, transmission can become pretty likely,” Larson said. “When they get it it’s almost a death sentence for the birds.” Limiting exposure can prove challenging. Larson said the most common transporter of the virus has been wild migratory water fowl such as ducks and geese. Such birds are not only susceptible to the virus, they show no signs they carry it. The migration factor also means the birds could visit multiple flocks before succumbing to the flu. Migratory water fowl also spread bird flu through “flyover manure,” which is believed to be one of the reasons closed roof poultry houses in Minnesota weren’t affected as much by the outbreak. Yet at this point, the flu has seemingly skipped the Prairie State, with no sightings reported by the Illinois Department of Natural Resources to date. Larson theorizes that’s because Illinois doesn’t have a high domestic poultry population. Conversely, Iowa is the second largest state producer of eggs and Minnesota leads the country in turkey production. He added it should also relieve consumers to know the Midwest outbreak won’t have a grave impact

on the general poultry market. “Although we have talked about millions of birds being sickened and depopulated, that’s still only a relatively small percentage of the billions of birds that are producing in the United States every year,” Larson said, adding an outbreak in the East Coast or Southeast would take a greater toll on the market. Larson doesn’t expect prices to rise with dwindling supply. Infected poultry products haven’t contaminated food markets, making them safe to purchase. However, the outbreak should concern local residents who maintain “backyard flocks” – otherwise known as pet poultry. Larson said it’s important to isolate flocks away from others and to have a more extensive disinfecting procedure should there be outside visitors to farms and flocks. Agricultural experts aren’t certain how long the outbreak will last. Larson said this strain has shown signs that it can’t tolerate dry, summer weather conditions, which the Midwest hasn’t had much of yet. But if it does warm up, the virus’s impact could be diminished. If poultry owners suspect an infection, it’s important to contact state agencies. “Don’t be the person that hides the bird flu,” Larson said. “You don’t want to be a vector for a large commercial production to be depopulated as well.” Anyone who suspects an infected flock should contact the Illinois Department of Agriculture’s bureau of animal health and welfare at 217-782-4944.

Rhubarb Cocktail Serves: 4 This sweet-tart, pretty-inpink drink just tastes like spring. The syrup also can be used to flavor granita, to sweeten tea or lemonade or even as a glaze for chicken. For the syrup â „4 cup sugar 2 pounds rhubarb, trimmed and chopped For the cocktails Ice cubes 8 ounces vodka (Â˝ cup) 32 ounces seltzer (2 cups) Lemon peel, pith removed, cut into strips Make rhubarb syrup. Combine sugar and 2 cups water in large pot and bring to a boil over high heat. Add rhubarb and stir to make sure sugar dissolves. Cover pot, lower heat just a little and boil until rhubarb softens, about 5 minutes. Pull pan off heat and allow rhubarb to cool in covered pot. Mash rhubarb, then strain juice through a double layer of cheesecloth into a small saucepan. Bring juice to boil over medium-high heat, then reduce until juice is concentrated and syrupy and you are left with about 2 cups. Taste syrup and adjust sugar if necessary. Cool syrup in pan. Transfer to a container and refrigerate until well chilled. Make cocktails. Pour a generous tablespoon chilled rhubarb syrup into each of 4 chilled glasses. Add ice, vodka 3

Pineapple Rhubarb Strawberry Conserve Makes about 7 8-ounce jars This easy rhubarb jam is delicious on biscuits or toast, and can also be served with grilled chicken or pork. I left out the raisins because my dad doesnâ€™t like â€™em. 20-ounce can juice-packed crushed pineapple, drained 1Â˝ cups chopped rhubarb (1/4-inch pieces, about 3 stalks) 1Â˝ cups crushed strawberries (about 2 pints whole) 2 tablespoons freshly squeezed lemon juice 1 tablespoon finely grated lemon zest 2-ounce box fruit pectin Â˝ teaspoon unsalted butter 6Â˝ cups granulated sugar Â˝ cups chopped pecans or walnuts 1/ cup golden raisins 3 In 8-quart stainless steel stockpot, combine pineapple juice, rhubarb, strawberries, lemon juice and lemon zest. Stir in pectin and add butter. Bring mixture to full rolling boil over medium-high heat, stirring occasionally. Add sugar and stir until completely dissolved, then stir in pecans and raisins. Return mixture to a full rolling boil, stirring constantly. Boil for 1 minute, stirring constantly. Remove pot from heat and skim any foam.

Ladle conserve into hot jars, leaving Âź-inch headspace. Remove any air bubbles. Wipe jar rims and threads with a clean, damp paper towel. Apply hot lids and screw bands. Process 4-ounce, 8-ounce and pint jars in a water bath canner for 10 minutes. Remove from water bath canner and let cool for 12 to 24 hours. Check seals and remove screw bands. Skillet Chicken with Rhubarb Serves: 4 Donâ€™t let the greenish tint of this savory chicken dish dissuade you from trying it â€“ it is so, so good. Good enough, in fact, to serve to company. 5Â˝-pound whole chicken, cut into 8 pieces 1 tablespoon plus Â˝ teaspoon kosher salt, more as needed 1 teaspoon black pepper, more as needed 5 sprigs thyme, preferably lemon thyme 2 tablespoons extra-virgin olive oil 1 bunch spring onions or scallions, white and lightgreen stalks thinly sliced (slice and reserve greens for garnish) 2 stalks green garlic, thinly

Rhubarb-Glazed Shrimp

Place in a bowl with the thyme sprigs and cover with plastic wrap; refrigerate at least 1 hour or overnight. Heat oil in a large skillet over medium-high heat. Remove thyme from bowl with chicken, reserving thyme. Add chicken pieces to skillet and sear, turning occasionally, until golden brown all over, about 10 minutes. Transfer pieces to a platter. Reduce heat to medium. Stir in onion (white and light-green parts) and cook until softened, about 5 minutes. Add garlic and reserved thyme; cook 1 minute more. Stir in wine and bring to a simmer, scraping up any browned bits in the bottom of pan. Add rhubarb, honey, Â˝ teaspoon salt and a few grinds of pepper. Return chicken pieces to pot in a single layer. Cover and reduce heat to medium-low. Simmer until chicken is cooked through, 15 to 20 minutes for breasts and 20 to 25 minutes for legs and thighs, transferring chicken pieces to a platter as they finish cooking. Whisk butter into rhubarb sauce. Taste and adjust seasoning if necessary. Spoon sauce over chicken and garnish with sliced onion greens.

Â˝ cup chopped rhubarb (preferably red rather than green) 1 tablespoon chopped fresh ginger 1 tablespoon chopped garlic 1 tablespoon hoisin sauce Âź cup sugar 1 teaspoon reduced-sodium soy sauce 1 pound peeled and deveined medium shrimp (36 to 42 per pound) 1 green onion, thinly sliced diagonally Heat a grill to high (450 to 550 degrees). In a medium saucepan over medium heat, cook rhubarb, ginger, garlic, hoisin, sugar, and Âź cup water. When rhubarb starts to break apart, about 3 minutes, whisk in soy sauce and transfer half the glaze to a small bowl. Thread shrimp onto 4 metal skewers. Brush both sides of shrimp with glaze from pan. Grill shrimp, turning and basting generously as you go, until theyâ€™re opaque and grill marks appear, about 8 minutes total. Transfer to a serving plate and brush with glaze from bowl. Sprinkle with onion. Serve with remaining glaze from bowl on the side.
