DEER VALLEY – The Sauk Valley Area Chamber of Commerce showed off one of the community’s business gems Thursday – the Creating Entrepreneurial Opportunities class. The innovative CEO class from the Whiteside Area Career Center took its hands-on experience in a new direction, planning and providing entertainment for the chamber’s annual dinner and meeting at Deer Valley Country Club.
The class, taught by Le Hartman, has 21 students this year, and serves as a model for others looking to start the program. The students came up with the “Country Hoedown” theme and partnered with the chamber to plan just about every aspect of the event. They even performed, starting with country line dancing to “Boot Scootin’ Boogie”, and a comical hillbilly version of the entrepreneurial TV show, “Shark Tank.”

Attendees, dressed in flannel shirts and jeans, were served dessert to the tables in a satchel. “One of the biggest lessons we learn in CEO class is to take risks, and everything about this event is unusual,” said Michael Willard, the student project manager. Maura Harrison, a Newman High School junior, said this is one of three major events the class will host. A dodgeball tournament and masquerade ball are also slated. She said the events planning has been a great networking exercise. “We started planning right after Christmas, and we’ve done everything from put up the decorations to centerpieces, fliers, entertainment, and food planning,” Harrison said. ILLINOIS U.S. agents seize bogus boards CHICAGO (AP) – U.S. customs agents in Chicago have seized 43,000 hoverboards they have deemed counterfeit. The hoverboards, discovered during an inspection at a warehouse, had been shipped from China. Agents say the items’ components, including the chargers, carried the Samsung brand name but were counterfeit. Customs and Border Protection Chicago field operations director William Ferrara said Wednesday the hoverboards also had fake UL markings, which would give buyers a false sense of safety. He said some hoverboards arrived in the country by ship, while others were flown in. Major airlines, rail agencies and college campuses around the country have since announced bans, mainly over the potential fire danger from the lithium-ion batteries that power the devices.
The U.S. Consumer Product Safety Commission announced last week it is investigating reports of fires related to hoverboards in 19 states.
Nuke station gets license renewal CHICAGO (AP) – Exelon officials say the U.S. Nuclear Regulatory Commission has approved licenses for the Braidwood Generating Station southwest of Chicago for another 20 years. The plants, Unit 1 and Unit 2, have been operating since the late 1980s. The new licenses are valid through 2046 and 2047 respectively. The (Kankakee) Daily Journal reported Thursday that they were originally issued through 2026 and 2027. Nearly 900 employees with a nearly $90 million payroll work at the site.

Two awards were presented to chamber members Thursday. John Gvozdjak, president and chief operating officer of Frantz Manufacturing, received the Chamber Champion Award. Gvozdjak was honored for his work with the career center, and the key role he played in establishing and nurturing the CEO program. He is also active in Rotary, United Way, and teaching youth about manufacturing. Gvozdjak lauded the resilience of the business community after taking
some serious economic hits. “This community went through a lot in the last decade, and a lesser community wouldn’t have bounced back this fast,” Gvozdjak said. Gvozdjak said the smaller platforms stepped up and filled the gaps created by the loss of large ones. “No matter what size you are, you can do something good with your platform and advance the Sauk Valley region,” he said. Gvozdjak cited one of his favorite quotes – “The best way to predict the future is to create it” by Peter Drucker. “I think we’re creating it with things like the CEO class,” Gvozdjak said. “We’re getting young people engaged, and hopefully they’ll go to college and come back to contribute here.” Nicole Bollman intro-
duced Sherry DeWalt of CGH, the winner of the Lavonne Colloton Ambassador of the Year award. Bollman said DeWalt was always present at meetings and events, stepped in whenever she was needed, and displayed a high degree of professionalism in her advocacy of the chamber.

Hearing continued for man charged in wife’s death Hake was expected to make his case for a lower bail amount BY ANGEL SIERRA
MOUNT CARROLL – The man accused of fatally shooting his wife in Lanark on Dec. 5 was expected to make his case for a lower bail amount in Carroll County Court on Wednesday, but the reduction hearing did not go as planned. “We’re not going to proceed on the motion. Something came up,” said Public Defender Jerry Kane, who did not elaborate on the case involving his client, 49-yearold Morgan D. Hake of Free-
port. The case was continued to 9 a.m. Feb. 25. Hake is facing 20 to 60 years in prison, up to life, on six counts of first-degree murder, and felony possession of a weapon, punishable by 2 to 5 years in prison. He is in Carroll County Jail on $5 million bond. Prosecutors say in court records he intended to kill Suzanne M. Hake, 46, while Suzanne armed with a M. Hake firearm when he shot her in the head and chest in Lanark. Hake called police and turned himself in, and was arrested without incident in Freeport less than an hour
after the shooting. He has pleaded not guilty. This is the village’s first homicide since the late 1800s, Lanark Mayor John Huggins has said. He also has confirmed that the two were still married, but separated when the shooting occurred. Suzanne Hake was working for Gaffey Home Nursing and Hospice in Sterling as a hospice social worker before she was shot. In December 2003, Morgan Hake was charged in Stephenson County Court with being a felon in possession of a weapon, but pleaded guilty to an amended charge of obstructing justice by destroying evidence. He was sentenced to 30 months probation.

Donations would tip the balance in youths’ favor Project needs money to get off the ground BY JERMAINE PIGEE
DIXON – Project GenNex members have a dream. Now all they need is money to make it come true. The group wants to create a community youth center in Dixon. But in order to do that, members need to raise between $100,000 and $200,000. There’s just one problem: people aren’t donating money to the project. Steve Wilson, co-founder of Project GenNex, said he’s been getting material and labor donations, but what the group could
really use is money. “Right now, we don’t have any money to spend,” he said. Project GenNex is a group of teenagers and adults who want to bring a youth center to Dixon. The community center would include turning Veterans Memorial Pool into a skate park. Right now, there’s no safe, dedicated place for skaters. “We are envisioning a skate park inside the pool,” Wilson said in December. “We also want this to be a place for kids to gather and a place to hang out. We want to offer peer tutoring, meet-
ing rooms, counseling, arts and crafts, everything.” Wilson hopes the money can be raised by the summer. If enough money is raised, construction could begin in the summer and take place in phases. In phase one, the bathrooms and the common area will be updated. The pool would be turned into a skate park in the next phase. The Dixon Park Board oversees Veterans Memorial Pool, a facility that was closed 15 years ago. It’s decaying, attracts trespassers, and is becoming difficult for
the cash-strapped Dixon Park District to maintain. Deb Carey, the district’s executive director, said there is no money in the current budget for the project. But Wilson’s hoping there’s room in the public’s budget to help the group. Big or small, any donation would be appreciated. As a matter of fact, Wilson said one of Illinois’ most celebrated sons could help them reach their goal: Abraham Lincoln. “If everyone in Dixon sent us $5 we would be good,” Wilson said.

Sweet potato hits the spot Lunch a fulfilling alternative to nachos BY LUCAS PAULEY

achos. Yes. Right now, they’re really not mine. You see, I’m trying very hard to keep myself to only two “cheat meals� a week, ideally on Friday and Saturday. That way, I can get back into the swing of things Sunday, which is the beginning of my work week. Also, my fiancee, Michelle, and I like to food prep for the week ahead on Sundays, so we usually end up eating some of the healthy things we’re making for the rest of the week. And this past Sunday, after an indulgent dinner at The Cheesecake Factory with the soon-to-be brother- and sister-inlaw and some healthierthan-the-real-thing-butstill-not-that-healthy turkey tacos, coupled with tortilla chips and salsa, on Saturday night, I knew it was time to get back in the zone. But, NACHOS. We had some leftover chips in the pantry. We had some leftover turkey from Saturday’s tacos. Let’s get these old friends together, my brain told me. (I’m fairly certain I was singing “reunited in my belly and it feels so good.�) My brain can be a jerk on the

It was Sunday, and I needed to get back into the swing of things. Because, as many others know who have been on a weight-loss journey or are just trying to eat better, 1 bad day becomes 2 bad days and so on. Before you know it, you’ve fallen off the wagon. And it might just be a wagon, but that thing can still fly. Catching back up to it isn’t always a piece of cake. Well, catching back up to it definitely isn’t a piece
of cake, but I digress. So, what’s something that I can have that is similar but not as unhealthy? Oh man, how about a sweet potato. Boom. Load it up. I got out the leftover turkey from the tacos, a jalapeno, a dash of shredded cheese, some red beans, some salsa and a little avocado that Michelle didn’t use in her salad, and there we go. I’ve only recently started to enjoy sweet potatoes. I used to think they weren’t my thing. That’s because almost my entire experience with them revolved around the brown sugar-glazed canned variety you see during the holidays, which just aren’t good. Sorry. But a real, actual sweet potato is glorious. They’re versatile and extremely nutritious. And Sunday, they were the star of the show. It was a filling lunch; it was a fulfilling lunch. Who needs nachos? OK, we all need nachos every once in a while, but here’s a recipe that you might enjoy during the majority of time that we don’t. Let me know what you think, and feel free to add different (healthy) toppings. I just kind of whipped this up real quick. LOADED SWEET POTATO Prep and cook: 10-15 minutes

I wanted nachos, with a whole bunch of tortilla chips, but I ended up making this loaded sweet potato. You know what? It was just as good. Give it a try. Makes: 1 loaded sweet potato Note: This recipe calls for leftover ground turkey cooked with chopped onions, minced garlic and taco seasoning. If you don’t have that, you’ll have to cook these right before you make your sweet potato. 1 sweet potato 6 oz. ground turkey (cooked with onions, garlic and taco seasoning) 1/4 cup of red beans
1/8 cup of cheese 1/2 of a jalapeno, diced 2 tablespoons of salsa 1/4 of an avocado Seasoning: Chipotle sea salt, pepper and garlic powder 1. Scrub sweet potato under cold water and poke some holes into it with a fork. Cover the sweet potato and throw it in the microwave for about 3.5 minutes. 2. While the potato cooks on one side, dice up your jalapeno and get
your other ingredients ready. 3. After the potato has cooked for 3.5 minutes, flip it onto other side and cook for 3.5 more minutes. 4. While the potato cools off a bit, re-heat turkey and beans in microwave. I also cooked the cheese in the microwave with the turkey. 5. Cut open your sweet potato, layer on the toppings and enjoy!

How to get hash browns perfectly crispy BY JAMES P. DEWAN Tribune News Service
One thing I’ve said exactly 6 gajillion and 11 times is, there are more bad examples of food out there than there are good examples. Today’s topic, hash browns, is no exception. Too often, what should be a crispy, creamy, perfectly seasoned, standalone dish is reduced to little more than a bland and mushy ketchup delivery system. Let’s see what we can do to fix that.
Why you need to learn this Do you eat breakfast? Well, then, say no more.
The steps you take Now, before we start, let’s get our terms straight so we know exactly what we’re talking about. When I think of hash browns, I think of golden brown cakes of pan-fried shredded potatoes. Some people also include preparations where the potatoes are cut into small or medium dice, or even thin slices, but now you’re straying into home fries territory. For today, then, we’ll grab our graters and go with shredded. Also, remember that hash browns are pretty much just potatoes. If
you start adding binders, like egg or flour, well, now we’re talking potato pancakes or latkes. Those are terrific, too, mind you, but they’re not hash browns. Let’s take a quick look at the ingredients: Of course, there’s the potatoes. What kind of potatoes depends on whom you ask. Personally, I prefer Russets, the best-known variety of which are called Idaho potatoes. James Beard, the legendary food writer, preferred waxy or new potatoes which have less starch. Clearly, they’ll both work with slightly different results. You can decide for yourself. Regardless of the type of potato, there seem to be two general schools of thought on Planet Hash Brown. One is to start with raw potatoes, the other is to start with previously cooked potatoes, typically boiled or baked. I’m in the raw camp, though I’ve had some great examples from the cooked camp. If you start with cooked potatoes, you can pretty much cut the cooking time in half. For my money, though, I think you get a somewhat more crispy product by starting with raw. Next, there’s the fat. Remember that fat serves a number of functions,
including heat transference, non-stickitude and, perhaps most important, flavor. For the first two functions, any fat or oil will work. For the last function, though, I would recommend lard, bacon fat or clarified butter. (You can use whole butter, but, because it has milk solids, you run a great risk of it burning.) The last necessary ingredient is salt. Potatoes without salt are like chimps without bananas – just a little bit sad. Now, you add other stuff as well, like a little minced onion, as long as you take care not to let it burn. For garlic, my inclination would be to crush a couple cloves and saute them slightly in the hot fat BEFORE you add the potatoes. Then, remove the garlic and add the potatoes. That way you get the flavor without the risk of burning. You can also add herbs or spices. A little rosemary is nice, as is a bit of paprika. But, with all this stuff, I prefer it simple: potatoes, fat and salt – yum. One last thing: the pan. Diners mostly make their hash browns on a flat top griddle. For the home cook, I think a good, nonstick pan works best. Some people love cast iron, too, but those things are so heavy, it

If you’re going to flip it with a spatula anyway, go ahead with the cast iron. That’s probably what Abe Lincoln would have used. OK, now let’s get to the actual making. I figure one big potato makes enough for two servings of hash browns. If you’re making a lot, keep potatoes in acidulated water until it’s time to cook. That will keep them from discoloring. 1. Peel your potatoes and shred them with the largest hole of your grater. If you’re going to cook them right away, put them in a paper towel or
clean dish towel and ring out as much water as you can. This will help them crisp up more quickly. 2. Heat your nonstick skillet over a medium to medium-low flame. While it’s heating, season your potatoes with salt and anything else you might be adding (pepper, for example). 3. Now, for most sauteed items, I add just enough fat to coat the bottom of the pan. For hash browns, I add a little more to make sure they really don’t stick and to add a little more flavor. 4. Add enough grated potatoes that you can press them into a circle covering the whole pan.
How thick a layer? Excellent question. The thinner the layer, the more crispy the whole thing will be. If you mound your potatoes more thickly, the interior will be soft and white while the exterior is all nice and crispy. I’m not about to tell you which way is better. That’s your choice. Aren’t you glad we’re not living in the Stalin-era Soviet Union? Cook them over medium low heat until the bottom is golden brown and crispy, 5 to 10 minutes. Flip the hash browns and do the same on the other side. Serve immediately, because they’ll lose their crisp if you try to hold them.
