I

t’s just after lunch in Glen Ellyn, and Kathy Quaid is walking into the large foyer of a million-dollar home on a private, serene road. A bevy of workers –painters and carpet cleaners and floor refinishers – dart past her, readying the home for market. In a flash, Quaid is up a ladder in the kitchen, to offer a needed hand to her partner Maureen Rooney, who is hanging a new light fixture over the table.

They’ll be here a while, in heels and hose, moving furniture and hanging curtains, then head off to an appraisal or another appointment, before circling back to check on the work done, hang some art on the freshly painted walls, and stage the master bath.

It’s this hands-on approach that has solidified Quaid and Rooney as top agents in the DuPage market. Their knowledge of the clients, the home itself, and the community have made the duo a dynamo in local real estate over the last four years.

“We love real estate, but more than that, we love people’s stories,” says Quaid. “The people, not the home, that’s our main concern. We want to help them get to the next place.”

Quaid and Rooney Distinctive Real Estate is the top realty team in Glen Ellyn, with more than $54 million in sales in 2013.

says Rooney “Can you help us decorate? Should we finish the basement? What colors should we use? Do you know a good contractor?”

Quaid and Rooney are designers. They keep up on the hottest trends and stays up-to-date with what home buyers want most. “Some agents are either listing agents or buying agents,” Quaid explains, “but we consider ourselves both. We continue to work with buyers to hear first hand what they are wanting and use that information to help us prepare our clients homes on the listing side.”

And they do. In fact the staging end of real estate has become one of Quaid and Rooney’s strongest assets. Home staging is about setting a scene, creating a mood and “dressing” your home to appeal to buyers.

Their level of expertise keeps them connected to clients long after the sale of their home closes.

“We have worked hard at building a strong relationship with our industry peers to be a reliable source for them. }Kathy Quaid Kathy Quaid believes that doing what you love is the key to success, so after a 20-year career in corporate sales she decided to dedicate her professional life to real estate, and she’s never looked back. “My passion for real estate and people combined with the dynamic elements that make up a real estate transaction is what energizes me,” she says.

“I am thrilled to assist my clients as they move on to a new chapter in their lives and to make that transition stress free and fun-filled. Married and the mother of two, Quaid spends her off-work time biking and traveling, and spending time with friends. An active member of the Glen Ellyn Infant Welfare organization she also enjoys volunteering at her children’s school.

That approach is what keeps them on the move constantly. Having closed 92 home sales last year, Quaid and Rooney believe this year already is looking to be an active real estate market.

“We are always running, running, running,” says Quaid. “If you can’t multitask, you’re in trouble.”

And it’s at that very moment that something catches Quaid’s eye, and pulls her attention back to the home at hand.

Maureen Rooney’s entire real estate career has been spent in the DuPage County area so she often happens upon someone she has helped find a home. “I love hearing what they are doing with their property and that they are happy,” she says.

“That kind of ongoing relationship is what brings me the most satisfaction.” A longtime resident of the community, Rooney and her husband raise our family in Glen Ellyn and enjoyed participating in the schools, parks and programs. Her local involvement left it’s mark, and now her adult children are Glen Ellyn residents and business owners as well. “The many years of relationship building has served me well for a real estate career that continues to give,” she says. “I am thankful for it all.”

Summer may seem a distant hope amid the chilly days of late winter, but landscapers say now is the time to consider your next backyard project.

One of the most popular additions to the backyard is an outdoor landscape feature, such as a fountain, a waterfall, or a fireplace.

The first step in determining outdoor landscaping always is setting a budget, says Mark King of King Landscaping in Hinsdale.

Whether it's a fire or water installation money is key because the budget will decide the size and scope of the project.

"Once that's figured out," says King, "we can decide how to build it from there."

Would you like to spend more time in your yard? A warm fire can be just the thing to take the chill out of the evening air and keep your patio a gathering point.

The most popular options are fire pits and outdoor fireplaces. And there are a few considerations with each. Fire pits are great for groups, require a small investment of money and time to construct. Most villages, however, have ordinances against fire pits, warms King. And while you can fit quite a few people around a fire pit, the blowing smoke and ash can make it difficult to enjoy, even if your village allows them, he adds.

An outdoor fireplace, while serving a smaller group, will give you the most heat and the chimney will funnel the smoke away from those around it.

"I prefer the outdoor fireplace," says King. "I have both (in my yard) and I prefer to sit by the fireplace; it’s so much more peaceful. My wife and I will sit out there and sometimes the kids join us. "

Water features, beautiful and soothing, are as varied in size and scope as the homeowner desires.

Beyond budget, considerations can include maintenance and safety. For water features such as ponds and waterfalls, homeowners need to consider safety and liability issues. Koi ponds, a still popular feature, are open bodies of water. Though they are shallow, they still pose a hazard for small children.

If homeowners are considering a koi pond, they also need to be aware of the upkeep required, said King. In the spring, the required cleaning includes taking the fish out and draining the pond.

While the fish are in residence, chemicals are not allowed, so there must be enough enzymes and plant material–such as water lilies–to combat algae, King says.

If koi are staying in the pond year-round, King says the pond needs to have the water needs to be pumping, moving constantly in order to prevent it from freezing.

Another water feature to consider the pondless waterfall; still a picturesque, with the soothing sounds and attractive finishes, this option empties in to a drain instead of into a pond. The drain itself is hidden, obscured by rocks and other decorative effects.

"They still give the sound but with no maintenance and safety factors," King says.

A common problem for do-ityourselfers who undertake water installations is that the pond does not end up looking natural. King says that when they are called in to fix these projects, they have to take them apart completely.

The best water installations look like they belong there, that they always were there, says King.

"That's one of my favorite things to build. I like it natural-looking. To hear the water falling reminds me of being near the ocean,” he adds.

“It's so peaceful."

Get cooking on your kitchen revamp!

he kitchen is at the heart of the home, the center of all the action. So a kitchen remodel can be a great idea or the worst renovation you may ever experience.

Key to happiness, says Lana Galloway, is preparation. The showroom manager of LaMantia Design and Construction Inc., reminds homeowners to be realistic with both their budgets and their expectations.

“Homeowners can expect to spend $50,000 to $75,000 on a redesign and it can take six to eight weeks,” she says. “Somewhere in there, you will not have a working kitchen.”

There is so much to consider when taking on a kitchen renovation – appliances, counters,

tile paint and furniture –but there are certain elements that homeowners should incorporate to get the most “bang” for their buck, Galloway says.

“Granite or stone countertops look fantastic and they will last,” Galloway says. “And don’t skimp on the lighting, there should be at least three levels of lighting. The kitchen is still, after all, a work space.”

However, she adds, you can forget the second oven.

“You can easily purchase a micro/convection to cover the need for the few times a year the second oven is necessary.”

Tradition holds that for many buyers, house-hunting season kicked off the weekend following the Super Bowl. This year, still-low interest rates mean good deals for buyers, while tighter inventory is favorable to sellers, says Karen Cookingham, Managing Broker with LW Reedy, Elmhurst.

If your home needs updating, a good place to start is with your real estate agent, who can direct

you where to invest your home improvement dollars.

“A lot depends on your home’s list price and the condition of comparable homes,” Cookingham says, adding that she provides sellers with a listing price range.

“If you want top dollar and other homes at the top of the range have updated kitchens, it might make sense.”

But beware of over-improving, which is spending more than you’ll get back. A $100,000 kitchen in a $200,000 home probably won’t be recouped, but a less-expensive facelift to a dated kitchen might.

“You want a good rate of return, and many times all that’s needed is new carpet and paint,” Cookingham says.

living space. De-clutter, and store items where they belong. “Toys kept in the living room can make a house seem cramped,” she says.

“If they’re going to put money into improvements, they’d rather it be for a new kitchen than a new roof,” Cookingham says.

Beauty is in the eye of the beholder, but first impressions can be the difference between an offer and a "no thank you." To maximize your home’s appeal, consider using a home stager, who will ready your home for sale by reducing clutter, moving furniture to make the rooms appear larger, and even making small repairs and color changes that allow potential buyers to “see themselves” in the space.

“Buyers have high expectations so a professional who understands that can be your biggest asset,” says Lisa Vaisvila, owner of Home Staging by Lisa, in Lombard.

Just as builders create model homes, home stagers create a comfortable, uncluttered and depersonalized space. ”It’s important for the home’s assets to stand out. You might have beautiful hardwood floors, builtins or a fireplace but with clutter they don’t stand out,” she says.

DESIGN REIGNS.

Stagers also can make a home appear larger. “There are techniques for furniture placement, and accessorizing, that create more open space,” she says.

Stagers work with both the inside and outside. “Curb appeal so important, and if the outside is not maintained, people will believe the inside isn’t either,” she says.

Additionally, most home searches begin online, so staging your home to look like something from a magazine, then having it professionally photographed, can help attract buyers.

But living in a model home isn’t always easy. Cookingham still remembers packing her small children and their toys into the car for a quick escape when her broker scheduled a showing.

“I always tell my sellers that the more effort they put in at the beginning, the less time their home will be on the market,” she says.

Suburban Life Magazine’s Elizabeth Harmon took some time to chat with Kristin Petro, owner of Kristin Petro Interiors Inc. in Elmhurst, about spring’s hottest design trends. u ELIZABETH HARMON: What will be the most popular colors for 2014?

KRISTIN PETRO: Moving into spring, the trends are for more corals and turquoise, but not the bright shades we’ve been seeing. These are deeper, more intense colors. u HARMON: What hard materials promise to be popular for furniture and surfaces?

PETRO: Limestone, both natural and manmade, that has a soft milky look. We’re also seeing a trend toward wood countertops, especially walnut. It’s very durable, even around sinks and cooktops. Granite can be cold, but wood warms things up, and looks especially nice with white cabinets.

u HARMON: What are the trends for fabrics?

PETRO: Ikat patterns, which are globalinspired looks that have almost an African motif are popular for rugs and upholstery. It’s been around for a while, but still very much a go-to pattern. Geometrics, such as stripes and diamonds, are all nice accents that work well with softer solids. What’s also in style is mixed patterns and textures, such as dull or nubby fabrics with something with a high sheen. It gives a pretty, layered look with lots of interest.

u HARMON: What looks and colors have run their course?

PETRO: We’re seeing less of the chocolate brown and turquoise combination that used to be everywhere. Now, it’s more blues are now combined with taupe or gold. When dark brown is used it’s paired with neutrals for less of a contrast. What’s also less in style is mixed patterns, like geometrics with florals. In fact, don’t do much with florals at all.

PETRO: The very clean lines of the 1960s mid-century modern look is still driving a lot of design. You look at pictures of rooms from the 1960s and the mid-century modern look is still current. There’s also interest in Art Deco and 1940s-inspired styles. u HARMON: When considering new design, what are two of the most important considerations?

PETRO: It can be overwhelming to think of redoing an entire house, so try doing something bold in one area, such as the entryway, or a blank wall that’s not being used. It’s a way to have a lot of impact without spending a lot of money. u HARMON: If a client could make one big change to their home, what should it be?

PETRO: Change up the arrangement of furniture or even the function of a room. Focus on space planning, appropriate scale, efficient layout, and creating nice spaces. A pretty new coat of paint won’t do anything in a poorlyplanned space. Some customers start by saying they want all new furniture, but just changing things around might be all that’s needed for them to be happy with what they have. u HARMON: How do you achieve continuity between newly decorated rooms and the rest of your home?

PETRO: Colors or finishes are easy to transfer from room to room without spending a fortune.

Take a swatch of fabric from the upholstery in your new room and use it when you shop for accessories for the old room.

Losing

CONTROL Hello, my name is Michelle and I am a control freak.

It goes without saying I am a “Type A” kind of gal.

I make to-do lists and fervently cross things off of them as I get them done. Then, I make another to do list because, as much satisfaction as I get out of crossing those things off, I hate the mess it creates on my beloved list. Not to mention the fact that I am constantly adding on to my list of things to do.

I am a glutton for stability. I don’t like change, or the unknown. I like to plan out how things are going to go for the next week, month and three to five years. I’m not adventurous or spontaneous in any way, because that would mean I don’t have control over the situation and that makes me break out in hives.

I like things done “my way” and would rather take on a task myself to make sure it is done to my liking than ask for help. For example, my husband has offered numerous times to help with laundry, but I know full well if he does it, I’ll end up re-doing it because it isn’t how I do it.

Then, I get stressed out that I have too much to do and it is all self-imposed.

Despite my constant efforts at organization, my house is usually in the constant state of chaos. I feel like a hamster on a wheel with the constant dishes, laundry, dusting and general cleaning up after two kids, a husband, a dog and a cat. I never feel like the house is clean all at once and when it is, it only lasts for a few moments before all hell breaks loose. I obsess over the fact that no one in my family can put a pair of shoes on the conveniently located shoe rack right inside our door. I lose my mind over the pajamas that are left wherever my daughter decides to disrobe in the house. And don’t get me started about finding Legos in a bin that is not designated specifically for Legos.

It really is rather sad when I stop to think about it, but let’s face it; there are a lot of us out there.

I’m not the only one beating myself up for not having things just right. Here’s the worst part; 26 | MARCH 2014 | SUBURBAN LIFE MAGAZINE

for those of us doing this that have children, you know full well that few things ever go as planned or are within our complete control. No wonder we’re all nuts.

My friend recently shared a blog with me about how we clean our houses like crazy ladies before we have our friends over, even for a simple cup of coffee. The blog “Dugans Incahoots” writes, “If I have to clean for three hours before you come over…we can’t be friends. We just can’t.”

Oddly, my friend shared this with me the day after I had her and some other girlfriends over for a casual gathering. As much as I told myself that these women know me inside and out, know that my life is chaotic and have seen my house in the middle of the day in the midst of life when toys are strewn about, macaroni and cheese is stuck to the wall, dishes are in the sink and my kids are still in their jammies, I still felt the need to scrub, straighten and remove all evidence that anyone actually lives here.

In the end, as long as I provided snacks, booze and good company, there was not need to make my house look like a page out of Better Homes and Gardens. Like our bodies, women compare our homes to what we see in magazines, forgetting that those homes were staged for a photo shoot and likely took two solid weeks to clean in preparation.

I could, likely, uphold such standards if my children had no toys and I locked them in a closet during their waking hours. But that’s just no way to live. If my kitchen isn’t messy, it means I’m not cooking meals for my family. If my daughter’s backpack isn’t emptied on the kitchen table, she’s not doing homework. If there aren’t toys lying around, they aren’t playing and having fun. That’s life.

My friends and I have made a vow to simply knock off the need to impress each other. While we are more than willing to stage an intervention should a hoarding situation occur, there is no FAMILY IN FOCUS

need to fret about mail on the countertops, dishes in the sink or crumbs on the floor. It really is the least we could do for our nearest and dearest friends.

Now, preparing for when our mothers come over…. that’s a whole different story.

The “doctor knows best” mentality has been a cornerstone of medicine and dentistry. But over the last decade, with the advent of the Internet, families are becoming more informed about their healthcare. Although I do, occasionally, get patients coming in and presenting me with some crazy ideas found on some less than reputable websites, people are, for the most part, benefiting from the resources out there, and I welcome more involvement of patients in the decision making process. After all, I only see a patient twice a year for checkups and a lot can happen in the six months in between.

So how can you take an active role, and make your home a positive place for your family’s dental health?

CONTROL WHAT GOES IN THE GROCERY CART By far, the best thing you can do for your family’s dental health is to bring home wholesome foods.

Avoid processed foods and carbohydrates.

Thankfully, over the past decade our entire culture has gotten more “carb conscious.”

There are so many alternatives out there now, compared to when I was growing up. Fresh fruits and vegetables are a great substitute for a snack that, in the past, may have been made up of cookies and potato chips.

Beyond the typical high carb snacks, there are the problems of pop and juice. As I’ve mentioned in my previous columns, juice may have natural sugar, as opposed to artificial sugar, but that doesn’t mean it’s not doing damage to your teeth. When kids admit to me that they drink pop, I always delve deeper and ask them, “What kind of pop do you drink?” Any guess as to the most common response?

“Whatever my mom (or dad) brings home.”

FOCUS ON FLOURIDE

Like it or not, parents are the gatekeepers for most of the junk that comes into the house.

This may mean sacrificing our own indulgent habits for the sake of our family. You can’t always control what your kids eat and drink outside your home, but you can definitely keep a handle on what they’re consuming under your roof.

It goes without saying that the healthiest thing you can drink is water. The question is where are you getting your water from? Is it fluoridated?

Most bottled water is not fluoridated, which can be a real problem. Communities in the United States without water fluoridation systems have been shown to have a higher risk of cavities.

If you get your water from a municipal water source, then the chances are the water has fluoride in it and you should be just fine. If you have well water, then you should have your water tested to find out the mineral content. Even if your water is fluoridated, there are some home water filtration systems that will actually remove the fluoride along with other minerals from your drinking water. Bottom line, supplementing with a once daily fluoride mouthwash is a great adjunct to the minimal amounts of fluoride you may be getting in your daily water supply.

This added boost can go a long way toward strengthening your enamel and fighting off tooth decay.

BE PREPARED AND STOCK UP Our patients love to get that goodie bag at the end of their cleaning appointment. They get a new toothbrush, toothpaste, floss, and anything else we can throw in there to get them excited about their oral hygiene (no easy task). Sadly, when the floss runs out, many of them will not go out and buy more, they just wait until their next cleaning. Sometimes, the same can be said about their toothbrush.

Please, please, buy extra toothpaste, toothbrushes and floss and have them stocked in your home. The reason you stop flossing should not be, “I ran out of floss.” Change your toothbrush regularly. Everyone brushes with a different level of intensity, but you should be changing your toothbrush at the first sign of bent bristles, which, on average, is about every 3-4 months. If you have had a history of gum disease, or space between your teeth, an interdental brush or proxy brush is an essential tool. Think of it as a toothpick with bristles.

If someone in the family has braces or fixed bridges, make sure you have plenty of floss holders or superfloss, so you can thread the floss under and clean out any trapped food.

Following an injury, it is important to seek care as soon as possible. DeCubellis said the earlier he can begin treating a patient, the better the results. Patients generally come into Main Street Chiropractic with neck or back pain, but DeCubellis said he also sees patients with chronic pain that nothing has alleviated. He does his best to take a detailed history, perform an evaluation and pinpoint and target pain for relief.

“The goal of everything is we want to work with the patient to get them feeling their best,” said DeCubellis.

Harvin said she also gives her students “homework,” by offering them movements they can use at home to address their problem spots.

At Focus Yoga in Brookfield, students from beginners to advanced can benefit from targeted muscular stretched, many of which alleviate pain, owner Judi Harvin said.

In addition to movement, yoga also focuses on breathing techniques, which can also be used for pain.

“A good yoga class is going to address all the different muscle groups,” Harvin said. “A lot of other forms of fitness, the movements are very repetitive. Yoga addresses full range of motion, strengthening and loosening tension.”

At the beginning of every yoga class, instructors at Focus Yoga ask the students what is going on with their bodies, which areas are tight, which areas are sore, and then focus on those areas during the class. That is especially helped for people with chronic issues.

“The number one thing we do in yoga is we offer breathing techniques,” Harvin said. “Breath is the fastest link to the nervous system and how we feel. Most of the time, we’re soothing the nervous systems.”

Q: Since we have had such a cold winter, it has left a lot of us restricted to the indoors. What advice would you give someone who is ready to gradually start getting active again?

A: Take the time to warm up and stretch well before attempting any new exercise or even resuming an exercise not performed in the winter. Even though you may feel ready to tackle a long run give yourself time to acclimate and gradually resume your normal level of activity.

Q: Can you suggest any workout activities that can be done indoors without having the equipment to do so?

A: Of course, during winters such as this one, it is still important to stay active. Maintaining activity and conditioning can prevent injuries from clearing snow and slips on the ice. Depending on one’s activity level, exercise can be accomplished through walking and other indoor activities. Many malls allow space for mall walkers and some even open early to allow those seeking warm indoor spaces in which to exercise. At home, one can work on maintaining strength through traditional exercises such as push ups (to your ability), squats, lunges, jumping rope, and core strengthening routine.

Q: How do you avoid injury during activities when you have been inactive for a long period of time?

A: Again, gradual but persistent return to activity, starting with non-impact exercises such as walking, cycling, and swimming. If you enjoy group exercises like Zumba or aerobics do not be afraid to slow down when you need to or even step away and take a quick breather. Don’t forget to get plenty of water and to stretch when you’re done. Expect to be a bit sore from utilizing muscles you have not used in some time and ice down any areas if they are particularly painful, sore, or swollen.

Q: How important is it to stretch after each workout?

A: Stretching allows the muscles and their attachments to bone to become more flexible in a controlled fashion while the muscles, tendons, and ligaments are still warm from exercise. It can help increase flexibility as well as prevent injury.

Irish pubs boast blend of tradition, camaraderie

he Feast Day of Saint Patrick is a festival of the introduction of Christianity to Ireland. It is celebrated with a boisterous joviality that almost seems counterintuitive to the pious origins of the holiday.

History has been redefined and the floodgates shatter for local Irish pubs and restaurants in March to allow for celebratory observances of Saint Patrick’s Day.

Irish Times in Brookfield is one of the local Irish pubs that invite you to observe your celebratory rites within its welcoming walls. Owner Martin Lynch described his pub: “It’s a very cozy, homey atmosphere. It’s often been described as walking into a pub in Ireland rather than an Irish pub in America. It’s a very authentic – a very warm feeling. A lot of people say it’s like coming home.”

In Downers Grove, Ballydoyle Irish Pub has a similar vibe.

“It has a well-worn feeling, like a nice comfortable shirt,” owner Phil Cullen said. “None of the tables match, the chairs wobble a little, and the pub looks like it has been there for years. Ballydoyle is not what we think an Irish pub should be, it is just like a pub in Ireland.”

The proof is in the pudding, or in this case, it’s in the pour.

“Guinness and Jameson are our two most popular Irish beverages,” Cullen explains. At the pub, we pour the ‘perfect pint’ of Guinness.

That means that we pour the beer at the proper temperature, in the proper glass, and a two-part pour. It takes a little more time, but the smooth, creamy goodness makes it worth the wait. Of course, our most popular whiskey, Jameson, is on tap at the pub.”

customers to an owner who immigrated from Dublin. Styled as close as possible to the pubs you’ll find in the Old Country, the owners and manager Jessica Colangelo fill the walls with trinkets and memorabilia straight from Ireland. The building itself is more than 100 years old, and has a colorful history.

“There are underground tunnels,” which Colangelo says harken back to Prohibition.

Although Irish Times has a lively vibe every day, Lynch explained that they have special plans in March. “We have a huge big beer garden patio. We’ll be putting a big tent up for Saint Patrick’s Day and having a live band.” To aid in the festivities Lynch said, “We have more than 25 different beers on draft. We have over 80 different beers and a massive selection of Irish and Scotch whiskey.”

Once you whet your appetite with a traditional refreshment, it’s time to indulge in Irish fare. The Irish Times has you covered, with fish and chips and shepherd’s pie to fill you stomach. Corned beef and cabbage, an Irish-American favorite, is homemade at The Irish Times.

Ballydoyle offers a traditional Irish Boxty, a potato pancake filled with chicken, vegetables, pot roast, steak, or corned beef. “It was an Irish family’s staple in the home,” Cullen explains, and now it’s a customer favorite. “They are made fresh to order and will bring you back to Ireland.”

It’s that combination of comfort food and camaraderie that keeps people returning to Irish Pubs and restaurants across the suburbs.

Cullen relays a clever Irish toast… “There are good ships, there are wood ships, there are ships that sail the sea, but the best ships are friendships, may they always be!”

Next stop...JAVA! Recently, my husband made the switch from diet soda to coffee as his morning pick me up after reading articles about the health benefits of java. Me, I’m more of a hot chocolate drinker. But when the weather outside is frightful, there’s something comforting about settling in, warm beverage in hand, and losing yourself in a good book or, if you’re like my husband, writing your own. Fortunately, there are plenty of local places to get your caffeine fix while waiting for the train. Or, in the midst of the morning rush, to hop off and grab a cup to get your day started. uFirst stop – Loca Mocha Cafe in Brookfield (north of tracks, 8836 Brookfield Ave., www. locamochacoffee.com). A quaint place just across the street from the Brookfield Metra station, Loca Mocha Cafe serves up an array of gourmet and flavored coffees, and traditional espresso drinks.

The house specialties are sure to satisfy the sweet tooth with options ranging from the turtle latte (espresso, praline, caramel, chocolate and steamed milk) to the chocolate monkey (espresso, chocolate, banana and steamed milk).

There are plenty of other beverage options – from hot chocolate and chai tea to chocolate milk and smoothies – and if you’re hungry, the café offers bagels, muffins, biscotti and other treats. Whole bean coffee is available by the pound and half pound if you’re looking to brew a pot at home. uSecond stop – Quinn’s Coffee House in Clarendon Hills (south of tracks, 2 S. The store’s homemade Irish soda bread is only second to the popular homemade chocolate donuts for which Quinn’s is known. A popular community hangout, Quinn’s honors its commuters with a handmade train schedule, created by a customer, showing departure and arrival times from Clarendon Hills to Chicago. Quinn’s also strives to be a good neighbor by donating funds from its charity bucket (customers’ spare change) to local schools, churches, the Lions Club and Salvation Army.

MUSTARD SAUCE: Simple but Elegant I like to keep things simple but very elegant and flavorful. I’ve found that often, too many ingredients cover the flavor and spoil the broth. At Waterleaf, we use only the freshest, seasonal and locally-grown ingredients and by keeping things simple, we are able focus on the flavor of the dish. A perfect example is the use of our unique sauces. Dining is a sensuous event and an alluring dish should engage your sense of sight as well as your senses of smell and taste. A sensational sauce not only adds flavor, it adds color and visual texture, and the resulting entrée looks as enticing and artful as it tastes.

Although it may feel intimidating at first, anyone can create a delicious and memorable sauce simply by using fresh, well-chosen ingredients, attention to detail and a little bit of patience. The key is to go “slow and low.” Take your time, be sure to stir often and don’t overcook the ingredients or burn the mixture.

This richly layered mustard sauce is a perfect example of the power of simplicity.

Relatively quick and easy to prepare, it’s well-suited for the cold days of winter and will add incredible flavor and flair to your dish. Pair it with chicken, pork or fish for a tantalizing and unforgettable meal.

• 2 tbsp corn oil • 3 minced shallots • 1 cup white wine • 1 cup chicken stock • 2 cups heavy cream

• ½ cup Dijon mustard • 1 tbsp champagne vinegar • salt • white pepper • 2 tbsp cold butter

o begin, heat a pan over medium heat. Once the pan is hot, add corn oil and swirl until the bottom of the pan is coated. Next, sweat the minced shallots in the pan, stirring often. Sweating aromatic vegetables helps draw out moisture and soften the cell walls. It is important not to brown the shallots, cooking them only until they are soft and translucent.

Next, add the white wine and cook uncovered until the amount is reduced by half.

Though it takes a little extra time, reduction will intensify the flavor of a liquid as well as cut down on the acidity of wine. Continue to stir frequently to prevent the sauce from burning. Once the wine is reduced by half, add the chicken stock, and reduce it by half as well. Next, add the cream, stirring and heating the sauce until it is reduced by half, once again. Finish your sauce by adding Dijon mustard, salt and pepper (to taste), vinegar and butter.

When finishing and plating your entrée keep in mind, a little sauce goes a long way. The sauce should add flavor and color to the main dish, not mask it.

2011 Gschweicher Klassik Grüner Veltliner There’s a reason that Grüner Veltliner, Austria’s signature white wine, became one of the hottest pours in trendy American restaurants in the 2000s.
