At Autre Monde Café in Berwyn, a rainbow of beets make up a vibrant salad. ost of our articles are inspired by the guests that come into our shop. One of the most frequently asked questions we hear is “Can you help me pair a wine with what I am cooking for dinner?”
Pairing wine can seem one of the most daunting tasks for people, but it doesn’t have to be. You just need to follow some simple tried and true rules to give you the best chance at a winning combination. Pairing food with wine is not an exact science, but when you get it right, both the food and wine will taste better than on their own, as the meal transcends into an experience you may never forget. I like to pair wines that either complement the main ingredient in a dish or completely contrast its flavor profile. If you are serving a lighter dish with lighter seasoning, stick to a lighter-styled wine. If are serving a full-flavored dish, choose a bigger, bolder wine. Below are some pairings that follow this example: u Sauvignon Blanc, Sancerre, Pinot Grigio: pair with soft cheeses, flaky fish, light sauces and roasted vegetables. u Chardonnay, Viognier: pair with salmon, halibut, heavy cream or butter sauces, roasted chicken or pork.

u Pinot Noir, Grenache, Gamay: pair with any rich fish like a salmon, roasted turkey or pork. u Merlot, Cab Franc, Tempranillo: pair these with hard cheeses, grilled pork, and leaner cuts of red meat u Cabernet, Zinfandel, Syrah: pair with hard cheeses, NY strip steak, ribeye, and Filet Mignon. u Riesling, Port, Late Harvest Wines: these pair best with soft cheeses and desserts Sometimes pairing wine that is the complete opposite of what you are eating is the way to go. An off-dry Riesling is a great choice to pair with any spicy food, while a dry Riesling will pair well with a saltier dish. It may be hard to believe, but Rieslings are widely considered one of the most versatile wines to serve with food. Another contrast I find works well with spicy dishes is any fruit-forward wine. Much like how the residual sugar in an off-dry Riesling balances the heat of a dish, an abundance of dark fruit on the palate seems to blend well with most spicy red sauces. Sparkling wine is another versatile food wine that goes with almost anything, but truly shines when paired with anything salty or fried. The acidity of sparkling wine balances out the salt, while the carbonation helps to cleanse the palate in between bites. One of my favorite sparkling pairings is sushi! There is something about super fresh fish and the bubbles of a sparkling wine that create a taste sensation. If you ever are uncertain on what to pair, go with what you like. Just be careful not to make the same mistake I once made, an expensive bottle of California Chardonnay does not pair well with barbecued ribs! We all learn by our mistakes. W
hen Elizabeth Mager left her corporate career in 2012, she didn’t imagined her new life would involve luxury chocolate. “I never thought I would do this,” says Mager, owner of Chocolaterie Stam, located at 530 Pennsylvania Avenue, Glen Ellyn, which opened earlier this year. The shop specializes in European chocolate, featuring a tempting array of bon-bons, chocolate bars and candies, holiday-themed confections, gelato, freshly brewed coffee and specialty coffee drinks. “When people walk in and see 25 feet of chocolate, they’re overwhelmed,” says Mager. She loves encouraging customers to try something new. “If people think they don’t like dark chocolate, I usually have them start there. I also recommend the bon-bons. They’re a treat and our specialty. Some of the fillings aren’t things people are used to but the flavors are very well balanced.” “You don’t need to eat a lot. Just one or two pieces of fine chocolate are very satisfying,” she adds. “It’s adult chocolate, but we have something for everybody.” Each season brings new products. “Right now, we’re getting in our fall items which includes pumpkin flavors, walnuts, and acorn shapes.” The shop is the first Illinois location for Chocolaterie Stam, a Dutch family business that has been making chocolate for five generations. In 1913, Jacobus Stam opened a chocolaterie near Amsterdam. By the 1930s, several of Stam’s children had opened their own stores. Expansion continued through subsequent generations, and in 2006, the first U.S. location opened in Ames, Iowa. It was a visit to that shop that changed Mager’s life. The North Aurora resident, a widowed mother of three, had left her position as an Information DINING & ENTERTAINING
Technology professional with McDonald’s Corporation to reevaluate her life and career. “I had a very challenging job with a lot of responsibilities, plus responsibilities to my kids. Losing their father changed their lives and it changed my perspective too,” she says. Mager wanted the intellectual stimulation of a career, but also wanted a better work/ life balance. She was especially intrigued by doing something different than returning to the corporate world. Brainstorming with a friend offered her first clue as to what that might be. “She tossed out the idea of opening a chocolate boutique,” says Mager. The boutique concept resonated with Mager. “It suggests finery, luxury, something special and unique.” She put her business skills to work to determine if there was sufficient market to make a chocolate boutique profitable. “My background in business and real estate gave me valuable insights. So I started researching and looking at areas,” she says. During a trip to Ames to visit her daughter, who was a student at Iowa State University, she visited the Stam shop. “It was cute, charming and at the time, I was considering Lake Geneva and thought it would fit right in,” she says. When the needs of her family made a move to Lake Geneva impractical, she looked for a location closer to home, and eventually settled on downtown Glen Ellyn. Her family has helped get the shop up and running. “My youngest is 19 and helps make the gelato. My daughter-in-law has helped with hiring and marketing, my daughter has done coffee drink training,” says Mager. Though the hours are long and running a business presents challenges of its own, Mager says she can’t imagine doing anything else. mysuburbanlife.com/magazine

“We’re the kind of place families can drop in for lunch or dinner, or a couple can come for a nightcap after a movie. We have NFL and MLB TV packages, so if you’re a fan of an out-of-town team, we can put the game on for you,” says Tim Walsh, who owns the bar with his wife, Julianne.

The couple is celebrating two decades in business. “It’s hard to believe we’ve been here twenty years. We bought the place when our daughter was four and our son wasn’t even born yet. She’s now a teacher and he’s starting college,” says Tim. In addition to being a welcoming spot for everyone from families to softball teams, Walsh’s Bar and Grill is equally well-known for its pocket sandwiches. The pocket sandwich begins with a 15-inch tortilla that is stuffed with a choice of filling (chicken, roast beef, corned beef, ham, veggies and more), cheeses, enhanced with up to two of Walsh’s homemade seasoning mixes or sauces, then folded like an envelope and grilled. “It’s crunchy on the outside, like a flattened crunchy burrito,” he says. Walsh’s menu also includes burgers, all-beef hot dogs, made to order grilled sandwiches, deli sandwiches, seasonal white chicken chili and soup, and pizza. “My philosophy on the restaurant side of the business is to keep it simple. My wife and I want everything to be fresh. Our burgers and chicken come from the butcher every day and if there’s demand we might go to the butcher multiple times a day,” he says. “We don’t keep stuff around in the freezer.” The lone exception to Walsh’s no-freezer rule is the pizza, made fresh by

Doreen’s, a popular pizzeria on Chicago’s south side and delivered weekly. “We often get softball teams coming in late after their games. Our kitchen closes at 10 p.m., and they’re hungry and want a snack, so this is a way we can serve them,” he says. The Walsh’s commitment to as-fresh-as possible influenced their decision to offer a BYO wine option, with a $15 corkage fee. “This allows customers to bring in their favorite wine, give it to the server, she opens it and brings it back with glasses,” he says. A Chicago native, Walsh started his restaurant career in the seventh grade, working as a dishwasher at a neighborhood diner. He later became a short-order

cook, then tended bar during college at Eastern Illinois University. He worked in Los Angeles for a large soft drink company, handling bar and restaurant accounts. His mother’s death brought him back to the south side, where he managed a popular Irish bar, before opening Walsh’s in Westmont. He loves being part of the community. “This building is over 100 years old. We think this is the second oldest building in Westmont. It was a speakeasy back during Prohibition. It was a tavern in the 60s and 70s, then it was George’s and then we took it over. From what we can piece together, it’s always been a bar.”

T
he food at J. Flemings Absolutely Delicious in downtown Westmont certainly lives up to its name. The casual American dining establishment, owned by Lisle resident John Fleming, is best known for its award-winning Cuban Pork sandwich, live music and beautiful patio. The restaurant, which offers an eclectic menu, has been a staple of Westmont since 2002 and has been in its current location, 18 N. Cass Ave., since 2008. J. Fleming’s Absolutely Delicious serves lunch Tuesday through Sunday, dinner Tuesday through Saturday, and brunch on Saturday and Sunday. The menu features only Fleming’s original recipes, and everything is made fresh from scratch.

The aforementioned Cuban pork sandwich combines roast pork, Capicola ham, Swiss cheese, grilled onions, tomatoes and pickles on garlic bread. Some of the other menu standouts include cedar plank salmon, pork chops, pot roast and shrimp and lobster mac and cheese for dinner. Lunchtime boasts Fleming’s original Kaanapali salad and chicken salad, as well as Chesapeake Bay Crab Strata and Huevos Chilliqueles for brunch. The restaurant has a full bar and seats 50 inside and 110 on the patio. Diners can also enjoy live music on Friday and Saturday nights. “We’ve got great dishes on the menu, something for every taste and very unique recipes,” Fleming explains. “We have Italian, Greek, American, some Pacific Rim dishes but we’re also known for our seafood. I put my personal stamp on everything, and all the food comes from my heart. We’re not a cookie-cutter chain restaurant.” And the public agrees that J. Fleming’s is “absolutely delicious,” as the restaurant has recently won Suburban Life Reader’s Choice Awards for best sandwich, best patio, best full-service restaurant and best entertainment.

“A lot of people say the restaurant is refreshing because it has a personal feel,” Fleming said. Fleming got his start in the restaurant business at age 12 when he began working for a Hinsdale catering company. He’s worked at several area restaurants as a chef, including at The American Club in Kohler, Wisc., and at the Oak Brook Hills Resort. Fleming said that after opening several restaurants for other people, he felt it was time to open his own. “I decided that if I was going to go through that grueling work again, I would do it for myself. It’s a lot of work, but I like the chaos of the business,” he said. “I try to make it to every table to make sure everyone is satisfied and enjoying their meal. People should expect excellent food, great service and just a relaxing evening.” J. PASSION WITH A PURPOSE Gina Sharp commits to improving the lives of those with mental illness.

bout one in four people will be affected by mental illness or addiction issues at some point in their lives. And many will eventually need support or treatment, whether that’s counseling, medication management or an inpatient stay. For more than a decade, Gina Sharp has been working to ensure individuals in our community have access to the care they need.
Today, Linden Oaks comprises an inpatient facility in Naperville and five outpatient centers throughout the area that provide a wide range of services. Under Sharp’s leadership, it has become one of the largest behavioral health groups in Chicagoland with more than 600 employees, including physicians, physiatrists and therapists.
Sharp has served as president since 2013, but she’s been working in healthcare for the past 18 years. She began on the numbers side; she has an MBA in business and finance and was a financial analyst at Edward Hospital. She then transitioned to Linden Oaks to guide financial operations and build business plans that develop and grow health systems.
health first aid. The eight-hour training program teaches community members to identify the signs and symptoms of mental illness. So far, the program has trained more than 7,000 people. “We know what type of issues our community is facing, so we have the resources to be able to help,” says Sharp.

Outside of work, Sharp volunteers with KidsMatter, a local non-profit that works to help children build resiliency and make good choices. She also is involved with the National Charity League, an organization of mother/ daughter members that teaches the value of volunteering, leadership and cultural diversity. For Sharp, the best part of her day is hearing from the individuals who have benefited from services at Linden Oaks. “There are so many touching stories we hear,” she says. “When they’re on the road to recovery and you hear from them about the success that they’re having in their life, it’s a very rewarding feeling.”

tatistics show that about one in four North American adults are considered obese. But, this epidemic is not limited to our continent, nor is it confined to our species. More than half of our dogs and cats are overweight or obese. So, should your pet start an Atkins Diet?
Consider Ramsey: Ramsey is a “cheese-aholic.”. At six years old and 156 lbs, this Bull Mastiff listens for his owner to unwrap the cellophane from a cheese slice and then makes a beeline for the refrigerator. Joyce Sternberg, Ramsey’s owner, says the cheese was initially used as an incentive to teach Ramsey to shut the back door. But those cheesy rewards had a darker side. Ramsey had become so heavy he actually tried to avoid walks. “Ramsey would just grab the leash and head for home,” Sternberg says. His dislike for exercise is a common theme for many pudgy pets. According to the Association for Pet Obesity Prevention (APOP, petobesityprevention.org), 54 percent of all dogs and 59 percent of all cats are classified as overweight or obese. These expanding numbers are a warning sign of our pets’ expanding waistlines! Joyce Sternberg was lucky: both her son and her veterinarian warned her about Ramsey’s rotund physique. Similarly, Irene Snow was chided by her veterinarian for allowing her Malamute mix, Yogi Bear, to balloon up to 127 pounds. “My veterinarian said he could tell how much I loved my pet by how fat he was,” says Snow, “but Yogi has always stolen food…that’s how he got his name!” Veterinarians and pet owners are showing concern over the increase in numbers of portly pets. An overweight pet is more prone to heart problems, poor skin condition, lameness, and more serious illnesses, like diabetes. A ground-breaking study actually details how pets who free feed live an average of two years less than pets with limited calories. Both Sternberg and Snow realized that their dogs were overweight due to excess treats, like Yogi’s ice cream sundaes or Ramsey’s cheeseburgers. Other factors can add to your pet’s propensity for weight gain too. Specific breeds, such as Labradors and Cockers, are at higher risk for becoming chubby, as are most non-purebred cats. And, although spaying and neutering your pet won’t make them fat, their metabolism and energy needs actually do decrease. This means that neutered pets are at a higher risk for gaining weight if we don’t pay attention to their diet and exercise. notes some pets get twice as many meals each day because no one is in charge of feeding. Ramsey and Yogi entered a “Biggest Pet Loser” contest. Over the course of eight weeks, a newspaper article tracked the pounds that they shed and the trials they endured. Ramsey’s beloved cheese was the first thing to go and Yogi’s new treats consisted of green beans instead of ice cream. Both pets were also encouraged to increase their activity levels. Changes were apparent within just a few weeks and when the results were announced, both dogs showed significant weight loss. Yogi Bear had lost more than 14 lbs., making him the “Biggest Pet Loser” for the contest. Keeping it off has been more of a challenge though. Ramsey, on the other hand, continued his progress and eventually lost a total of 32 lbs.! He is now at a trim 124 and Sternberg says he has the energy of a puppy. “He’s excited about walks and now he even romps across the yard with our other dog”. Pet owners should open a dialogue with their veterinarian about their pet’s weight. Most pet owners know their pet is overweight but many are unsure of how to proceed. The very first step should be a good thorough physical examination and associated blood work. This will help rule out diseases that cause weight gain, like hypothyroidism in dogs. Next, devise a diet plan with your veterinarian for safely reducing the number of calories being fed while also increasing the calories being burned through activity. Avoid a self feeder and don’t leave food out for pets all day long. Like us, our pets will do better if they eat small meals more frequently, rather than one large meal in the evening. Finally, make exercise a priority. Two or more brisk walks each day for our pudgy pooches and thirty minutes of playtime with your flabby tabby can help them lose that excess weight.

I was born and raised in the city of Chicago and now reside in the lovely suburb of Downers Grove. Art always has been part of my life. Although there were a few detours along the way, I never strayed far from the path. Now I have the pleasure of returning. It feels like coming home. With a bachelor degree in Art Education, I tried to combine a financially stable career with the work I loved. However, timing did not favor my choice. Nursing proved a more practical decision, requiring additional education and training, but providing 35 years of full time work. I fell in love with the rich color and pure pigment of pastel. As a member of several local area art leagues, I’ve had the opportunity to enhance my skills and exhibit my work. One of my paintings was selected for Yosemite Renaissance 32 (www.yosemiterenaissance.org). One is part of the Permanent Collection of the St. George Art Museum.

s much as we get excited about pulling out our fall fashion wardrobe and adding new pieces to our collections, there is something sad about summer coming to an end.
