Dancing through life Ann Garvey builds family business with grace and good spirits

pen the glass doors to Downers Grove-based Celebrity Dance Studio and one is greeted with a profusion of sights and sounds. Leathersoled shoes slide across the wooden dance floor as a couple keep in step to the beat of a waltz.

Soon, the music changes as another lesson commences.

This rhythm is upbeat and modern, the sound of bass thumping against the walls.

“We worked really hard, but we loved it,” Garvey says.

“Dancing proved to be a field where I could excel, and I wanted to share it with others.”

She has been instructing ever since and has helped guide all types of people, skilled and unskilled, across the dance floor. The hardest part for many people interested in dance is simply walking through the door, she says.

“It’s a big family here and I like their concern for everyone,” Mejta says. “I have problems with my knees and if I don’t show up for class they call to check on me.”

Her knees don’t slow her down too much, however, since she comes to the studio twice a week for her lessons.

“I love dancing,” she says. “I hope I do it until I drop.”

Mejta’s reaction to dance is music to Garvey’s ears. She has seen many a shy and hesitant student find their inner dancer.

“Dance changes people,” Garvey says. “When I first started teaching, I saw a man who looked down when he spoke to people. He was very introverted. In six months, he would look up when he spoke and in two years he was talking to everyone in the room! When you learn and attain success, you become confident.”

Garvey says the confidence comes from learning balance and control in your body.

People do not need to have any athletic ability to learn to dance. There also is an etiquette skill set, taught right along with knowing how to hold your partner, and finding the rhythm of the music.

Garvey teaches a three to four-week dance class during physical education at local middle schools, she says. One of the dances students learn is the Argentine tango, which, like most dances, requires a certain amount of handholding between partners, she says.

“About half way through the program the cologne level increases in the boys,” she says.

“The men, they love the tango.”

Garvey’s enthusiasm of dance is contagious.

It has been such a positive influence in her life that many of the instructors and employees of the studio are family members. Sign up for a lesson and you may find yourself in the capable hands of daughter Kimberly Blanc, manager and dance instructor; son Brian Garvey, assistant manager and instructor; son-in-law Michael Blanc, dance director; or son Nick Garvey, dance instructor. Taylor Lovstad, Sarah Vargas and Bojan Bozic round out the instructors, while daughter in law Cara Garvey welcomes students as the receptionist.

“I taught out of my home for 10 years and my kids were surrounded by it,” she says. “It’s not always easy but I’m really happy that I get excited about it every day. It’s pretty awesome to do something you love that is so great for people in so many ways.”

While the choice can be challenging, options abound

It’s a dilemma most parents face, whether or not they work outside the home. Who cares for their children when they can’t, and what’s the best fit for their family?

Suburban families have a wealth of options available.

To help parents navigate the sometimes over-whelming array of choices, we’ll highlight a few local programs and businesses, committed to the care and development of your child.

For families in need of all-day care, DuPage County has centers that open early and stay open to 6 p.m., or later. “It’s about meeting a family’s need for care during the day while the parents are working,” says Erin Cetera, manager of the Louise M. Beem Early Childhood Education and Care Demonstration Center at College of DuPage.

Centers offer meals and snacks, may provide infant and after-school care, and educational components are integrated into the day.

“Education and care can’t really be separated for young children, but typically a child care center will accept children younger than the traditional preschool age,” Cetera says.

Apart from basic issues of hours and location, Cetera says it is important to make sure the center is licensed and in compliance with child to caregiver ratios. For infants, that’s one caregiver for every four, for toddlers, age 15 to 24 months, it’s one to five, 2 year olds, the ratio is one to eight, and it’s one to ten for three to five year olds.

The credentials of teachers and administrators are an indicator of quality, Cetera said, as is a child-focused curriculum. She urges parents to visit prospective centers and observe what goes on in the setting. “How do the adults respond to the children? Are they happy to be there? Are the children engaged and supported when they face challenges in the classroom?”

The Louise M. Beem Early Childhood Education and Care Demonstration Center is open to the public, though COD students, faculty and staff are given enrollment priority. PRESCHOOL Preschools differ from day care, in that they’re of limited length, usually 90 minutes to a couple of hours, depending upon the age of the child, and may only meet 2 or 3 days a week.

“We’re focused on early childhood education, with two teachers in each classroom and we follow the Illinois State Learning Standards for early childhood education,” says Michelle Pusateri, manager of the Lincoln Learning Center Preschool, which is affiliated with the Downers Grove Park District.

Pusateri said the goal of preschool instruction is to introduce children to academics and to teach independence, and socialization. “It’s to help them transition into a full day school program,” she says.

When evaluating programs, Pusateri says to look for a place that is safe and comfortable and offers a balance of structure and academics, with play. “That’s how children at this age learn is through play,” says Pusateri.

She encourages parents to visit the preschool while class is in session and bring your child.

Ask about daily routines, discipline policies, security, and cleanliness. Requesting a parent handbook from each program you visit is a good way to make side-by-side comparisions.

“Visit different programs to find the one you’re most happy with,” she says.

The Lincoln Learning Center Preschool has a capacity of 205 in it’s preschool program for ages 3 to 5, and 45 in it’s Tot Program, for children who are two and a half. Morning and afternoon sessions are available, but there is no full day care.

IN-HOME CARE Parents that travel frequently, work long hours, or families with children ranging from infants to school age, may want to consider hiring a come-and-go or live-in nanny.

With a come-and-go arrangement, a nanny works pre-determined hours and is paid an hourly wage. When additional hours are needed, the family pays her for the extra time.

“Most of our placements are for come and go arrangements,” says Monika Januskyte owner and founder of Monicare Nannies, a suburban placement agency with clients throughout the Chicago area, including DuPage County.

“Come and go nannies have a lot of longevity and might remain with a family for a number of years,” she says.

Her compensation is a weekly salary and she is also provided with room and board.

“A family that might benefit from a live in nanny is one where both parents are doctors, and they don’t have a set schedule, or they are business owners and have to travel frequently,” says Januskyte.

Screening and hiring a nanny can be a daunting process, which is where agencies like Monicare come in.

Families will pay a placement fee to an agency and works with them through the hiring process, which typically takes about a month, Januskyte says.

Monicare works with a pool of pre-screened candidates who meet a set of 24 minimum requirements, including having at least two years of experience, a clean driving record, CPR certification, and passing a variety of background checks that cover national and county criminal records, national sex offender and terrorist registries.

The agency also looks at the needs and location of the family, and tries to pair them with nannies that live no more than thirty minutes away.

The agency also considers the nanny’s strengths and the family’s needs. “If a family has toddlers and school age children, they’re going to want someone who is good at managing a lot of tasks and schedules,” Januskyte says.

UNPLUGGED AND ACTIVE Summer day camps offer options for that ‘in-between’ age group

chool’s out for summer in just a few weeks, but what does a working parent do with 11 weeks and a child who’s too old for the sitter and too young to be home all day alone?

Local summer camps are a viable option for working parents this summer. With no video games, lazy days or down time during the day, parents can rest assured their children are getting valued supervision partnered with the most fun-filled summer they can possibly enjoy.

The YMCA also offers several other all-day summer camps in lieu of the traditional camp. For kids that like action, the Adventures Travel Camp will be taking kids to laser tag, boating at Camp Duncan and other fun trips.

SUMMER DAY CAMPS Forget spending the summer on the couch-kids will be begging to get outdoors and participate in all of the summer camps offered by the Indian Boundary YMCA. “We try to offer as many options for the kids as possible,” Indian Boundary YMCA athletic director Aaron Towler says. “The more options, the more fun kids are going to have.”

The YMCA offers an all-day traditional day camp for kids from 9 a.m. to 4 p.m. onsite, which will host all ages from kindergarten through sixth grade. The camp will feature daily activities that will include fitness adventures, games, camp songs, arts and crafts and much more.

In addition to regular day camp, the YMCA is offering youth specialty camps throughout the day as an option for children to partake in their passions for an hour or two a day. From fishing to spy kids and app camp, there is literally something for everyone in every age range.

“The Y is a unique organization in a sense that it’s

The Y is even offering a Ferris Bueller’s Day Off Camp for the third-consecutive year, which will transport kids ages 9-12 to various landmarks throughout the city daily. Trips include the Willis Tower, Soldier Field, Millennium Park and the Federal Reserve Bank.

Although there are partial-day specialty sports camps, one of the great options that the Indian Boundary YMCA has is the All-Day Sports Camp.

Rather than focusing on one particular sport, campers will partake in a variety of sports from 9 a.m. to 4:30 p.m. daily. Floor hockey, dodgeball, basketball, rock climbing and soccer are all a part of the offerings.

“While the traditional camp is well-rounded, the full-day sports camp is all sports, all the time,” Towler says. “It’s definitely for active participants.”

The All-Day Sports Camp also features special sportsrelated field trips, like hiking at Starved Rock and going to a White Sox game.

The before and after care at the YMCA allows parents to drop off children enrolled in fullday camps as early as 6:30 a.m. and pick them up as late as 6 p.m. for no additional fees. Parents also have the option of enrolling their children in a full week of camp or just particular days.

“Our main goal is to get kids back into nature with today’s technology-driven age,” Bob McNeel, assistant manager of operations at West Division, says. “We want to get the kids outside and away from computers and phones and video games.”

Each session’s activities will vary slightly, but the camp will be centered around activities like hiking, archery, fishing, boating and learning how to survive in the outdoors.

“We’ve been doing all of these as individual programs for years but we thought it might be nice to give this opportunity to kids this summer,” McNeel adds.

OPTIONS FOR TEENS For teenagers that aren’t quite ready to give up summer camp, there are plenty of options to keep them entertained.

The DuPage County Forest Preserve will also be offering a teen Adventure Camp for ages 13-17 that will be a little more rigorous than the basic camp. The week-long camp will have teens canoeing down the river, going on the Lincoln Marsh Ropes Course and much more.

The Indian Boundary YMCA Teen Camp will have teenagers traveling to various field trips four times a week, ranging from Whirlyball and Six Flags to Camp Duncan and Starved Rock with additional opportunities for overnights and extended field trips.

Long days, short years Enjoy them while you can With MICHAEL PETRUCELLI “Long days, short years.” How true these words are for parents. Several years ago, a mom with college age children said those words to me, and they resonate with me every day as a father, and as the owner of a preschool.

Being a parent is one of the most challenging and most rewarding things we can experience in life. We are so busy trying to be the best parent we can be (while fulfilling our other obligations to work, family, and the community) that we may lose sight of how precious every moment with our children can be. It isn’t always easy to muster the energy to read a book with your child as part of a goodnight ritual after a long day. It isn’t always easy to take it a step slower at the store so that your children can look around and explore. It isn’t always easy to go outside after dinner to practice baseball or soccer with your children.

It isn’t always easy, but it is always important.

the day with my children, like we usually do. I was informed that everyone had a play date. I didn’t know what to do! This meant that the two-hour project I had to do, would only take two hours, and not three because my children wanted to “help.” It meant that I could sit down and read the newspapers without interruption.

It didn’t feel good at first because it seemed like a very long day without them, but then I remembered that it is all a part of our journey through life together.

Keep all of this in mind as summer approaches. The “long” days of summer present extra opportunities to spend quality time with your children. Take a walk to a park or playground. Run around in the yard and play hide and seek or tag.

Plant a vegetable garden, and check on the progress all summer. Visit the zoo, walk around a local town to explore, or find a nature preserve to visit. If the kids wake up early on Saturday or Sunday, rather than setting them in front of the TV, go for a walk or a run with them, or My son is nearly twelve, my oldest make a special breakfast together. usan Rogan wants the world to hear what it has been missing. A self-described “Midwest girl,” Rogan has made a career helping others hear their worlds more effectively.

For more than 20 years, she has owned and operated Susan Rogan Hearing with locations in La Grange Park and Westmont. The centers offer state-of-the-art solutions to hearing impairment, allowing patients the ability to resume living with a high quality of life, Rogan says.

With a long history of helping others in the area Rogan looks to continue providing modern hearing solutions for the residents of the area.

“It’s quite rewarding for me,” Rogan says. “It’s great to help people improve their communication because auditory deprivation results in isolation, deprivation and anxiety.”

As a Doctor of Audiology, Rogan has seen the technology associated with her field progress. In addition to hearing devices decreasing in size, many now have the ability to pair with phones and televisions via Bluetooth technology.

“Many people fear the stigma of having hearing issues, but our solutions are very discrete,” Rogan says. It is recommended that anyone with a family history of hearing issues schedule a check-up.

Rogan says that a common indication of hearing issues is when members of the family begin complaining.

“I really like it here,” Rogan says. “I get a lot of enjoyment out of helping others improve their lives through our services.”

When the going gets tough,

KEEP TALKING with Theresa Beran Kulat

I

n families, there always is something going on – might be something big like a wedding, might be something small like a head cold, might be something bad like cancer, or something good like a high school graduation.

Personally, I observe that people easily talk about the good stuff, the small stuff and the big stuff. But how do we talk about the bad stuff?

Often we just avoid it. In the book, Difficult Conversations by Stone, Patton and Heen, the authors describe the discomfort that people feel when needing to address a difficult topic and lay out a methodology for having those difficult conversations.

The first step is to recognize that three different conversations occur at the same time – The “What Happened?” Conversation, The Feelings Conversation and The Identity Conversation.

Let’s apply this to an example … You observe a friend’s spouse having a romantic encounter with a person who is not your friend (think Vince Vaughn’s character in The Dilemma). You then speak directly to the spouse who admits the affair, describes all the ways that your friend has failed in the marriage and threatens to implicate you if you share this with your friend. Talk about a difficult situation!

As a rock star friend, you take this on.

After confronting all of your own doubts, concerns and fears, you choose to tell your friend in a helpful, compassionate way. Using the Difficult Conversations methodology, you first ask your friend if she is willing to participate in a conversation that may upset the status quo.

You begin by telling your friend what happened – from your perspective. You saw Spouse with Hottie. You confronted Spouse who felt justified because Friend had an affair last year. (That is a new fact. Friend thought Spouse didn’t know about the affair.) You admit that you introduced Spouse to Hottie. Naturally, you start with what happened – trying to avoid judgement and moral assessment. Now you need to listen.

Friend may bounce between various aspects of The “What Happened?” Conversation – Where did you see this romantic encounter? How steamy was it? The friend may share reason she had an affair last year. Eventually, maybe with your guidance, Friend may see that under the nitty-gritty details, she has feelings. Does she feel angry? Guilty? Ashamed? The Feelings Conversation is just as valid, and even more important, than the factual conversation. You can share your feelings, too.

Most importantly, woven into both of these, you will catch glimpses of The Identity Conversation.

Remind your friend that even though each person made mistakes, deep down, they are good people. Difficult conversations threaten our identity—the story we tell ourselves about ourselves. Support your friend in honest reflection on everyone involved. Objective, compassionate listening is very important during The Identity Conversation. The deepest identity issues reduce to three common identity concerns: Am I competent? Am I a good person?

Am I lovable?

Don’t we all struggle with these questions at one time or another? Accept it, and know that the other person has these same questions. Stay open to authentic communication and watch as solutions arise and unfold.

In this month of May, we traditionally celebrate motherhood, so we asked some area residents to share with our readers some advice and anecdotes from their own mothers.

Celebrity Dance Studio My mother was a single parent of nine children, of which I am the youngest of seven girls and two boys. She didn’t have to teach or advise us of strength, courage, persistence, and continuous effort because she was all of those!

She was a tough, high-spirited beautiful red-head. She wore high heels, dresses, perfectly “styled” hair and red lipstick everyday to work while taking several buses to get there, all in order to provide for us. She taught us through example; a hard one to follow! So with this I would like to share a rather funny bit of advice she gave to me (which we all laugh about to this day) She would say, “Now Ann, where is your lipstick? You must put it on or you will lose your lip line.None of my sisters and I know exactly what that means but we sure have a great laugh and memory of her.She was a beautiful lady and mother. She passed away June, 2012. She will always be missed.

Susan Rogan Hearing My mother, Bernice Rogan, was orphaned at the age of 10. She grew up with five siblings in an orphanage in Joliet.

She accepted a job at a local bakery which paid 50 cents per week. By the time she was 18, she was able to move out of the orphanage and had saved enough money to have her younger siblings come to live with her. She taught me to always take pride in whatever you do and to do the ‘job’ to the best of your ability. She later meet and married my father and had eight children. Additionally, she become the president of her own corporation. She taught herself how to sew as both a hobby and out of necessity. She passed that skill on to me. She insisted that each stitch whether by machine or hand be made with love and care. She also believed that one should be able to wear the garment inside out. I sure that I never attained that level of skill, but she certainly did! Lastly, as a young woman, when she was afraid, she would say, “I just held my head high, smiled and walked in like I just bought the place!”

Cabernet and Company My mom - she’s super smart and accomplished. I grew up pretty non-plussed by the whole Women’s Rights Movement because my mom was already the pinnacle of girl power. When I was a toddler, she saw a need and founded the Wheeling Public Library and worked everyday. And we kids didn’t even realize how revolutionary that was. She first retired from the library when she was 65. Went back to work and retired again at the age of 80. We got our work ethic from her, and our healthy self-esteem. Oh, and she’s the best cook on Earth.

More than just a place to stay, Family Shelter Service offers families a second chance

By KELSEY O’CONNOR After almost a decade in an emotionally abusive marriage, Judie Caribeaux knew she had to get out when she saw her thenhusband beginning to manipulate their young daughter.

Most women at Family Shelter Service vividly recall the moment when they decided to leave their abusive relationship. But Caribeaux isn’t a client—she’s the executive director.

“I’ve heard from clients time and time again how Family Shelter Service is their lifeline,” says Caribeaux.

The non-profit also offers counseling to children from abusive homes. Latino services include educational series, legal clinics, and counseling designed for Spanish-speaking clients. The Court Advocates program assists victims with navigating the legal system, and helped obtain over 1,000 orders of protection last year. And a confidential hotline delivers 24-hour support for women in an emergency or just seeking information.

Despite the extensive range of services, Caribeaux says there remains more to be done.

“That then frees up resources to do what we do best.”

One of these things that Family Shelter Service does best is raising awareness about domestic violence throughout DuPage County. A vital part of this is the Community Education & Prevention Program. It involves hosting seminars in local WOMEN & CAREERS

schools and colleges on topics such as dating violence, bullying, consent and more.

“I really think domestic violence is a learned behavior,” says Caribeaux. “And if it’s something that is learned, then we are able to do something about that and change it and prevent it.”

These programs and services are made possible through funding from a variety of sources. A majority of these funds comes from an annual fundraising campaign, along with different government grants. Caribeaux says that the organization is also finding new, alternative revenue streams. They currently operate two resale shops in Naperville and Westmont that provide additional income. “We need to continue to find theses kinds of alternative revenues to be able to diversify our funding and be able to help us grow to meet that need of that 200,000,” she says.

Family Shelter Service also relies on members of the community to support their mission.

Volunteer opportunities include working directly with clients or in office support roles. Caribeaux also encourages people to donate items to the resale shops and supplies to the shelter. She says these small gestures can make a big impact on the clients served by Family Shelter Service.

“A comment that I hear most often is ‘I can’t understand why someone would care so much.’

But people do. And that’s what DuPage County is about, there are so many people in DuPage County that care an awful lot.”

Women Who Care

Family Shelter Services receives support from a variety of local groups, organizations, and individuals. One such group was 100 Women Who Care.

This organization meets four times each year, and through networking and conversation, support a different local charity each quarter.

HERE’S HOW IT WORKS: Four times a year, the group gets together and members submit causes for consideration. Three will be chosen at random. For each of those three charities, the group member who made the suggestion is invited to make a five-minute presentation to the rest of the members.

Then, membership will vote and majority rules. Even if a member’s first choice isn’t selected, each member is committed to donating at each meeting. It is suggested women donate $100 at each meeting, but any amount is accepted.

“At $100, that’s barely more than a dollar a day, says Downers Grove chapter founder Sharon Sartori. And that’s all there is.

Sartori bundles up the checks and delivers them to the charity chosen, along with the promise that no one will have their name put on a call list.

“It works because it’s easy,” Sartori says.

“It works because the women of Downers Grove are very generous. It just works.”

And it is working at Women Who Care chapters all across the United States since the group’s founding in 2006, collectively donating more than a million dollars to locally based organizations.

The Downers Grove group celebrates its third anniversary in May, and to date, the group has donated $33,000 to 11 different charities, including: Almost Home Kids, Naperville, Bridge Communities, PADS, J. Kyle Braid Foundation, Positive Parenting DuPage, Ride, Janie Ride, SEASPAR, and HGNA. “I hear it all the time,” Sartori says, “that people never realized there was so much need in the community.” mysuburbanlife.com/magazine

The ABCs

of autoimmune disease

We’ve all heard of autoimmune diseases but many of us have little idea what they really are. Yet they are one of the top five medical conditions of great concern women, along with heart disease, breast cancer, osteoporosis, and depression. Understanding these diseases is crucial to knowing how to protect against them. Here are the basics.

A. Autoimmune diseases occur when your immune system falters. Autoimmune disease is an umbrella for more than 90 diseases, including type 1 diabetes, inflammatory bowel disease, celiac disease and asthma, according to The National Institutes of Health (NIH). In all the diseases, the underlying problem is ‘autoimmunity’ – the body’s immune system becomes misdirected and attacks the very organs it was designed to protect.

diseases,” she said. Investigators have also discovered that our environment can trigger the diseases in individuals who are genetically susceptible to them. For example, genetically modified organisms (GMOs) are thought to be a trigger. GMOs refer to organisms whose authenticity has been altered by the techniques of genetic engineering so that its DNA contains one or more genes not normally found there.

B. Autoimmune diseases are common.

According to Stacey Carpenter, D.O, family medicine physician on staff at Edward Hospital, “There are around 25 million Americans that have some form of an autoimmune disease.” That makes it the third most common category of illness in the United States after cancer and heart disease.

E. Every autoimmune disease has three basic ingredients, according to top expert in the field Alessio Fasano, M.D., the director of the Center for Celiac Research & Treatment at Massachusetts General Hospital for Children in Boston.

C. Women are far more likely to get them.

In fact, 80 percent of people affected by autoimmune diseases are women, according to Mayo Clinic’s Women’s Health Research Center in Minnesota. Those that affect women almost exclusively are Hashimoto’s disease, lupus, multiple sclerosis and rheumatoid arthritis. Often, the autoimmune disease will begin during the childbearing years, according to the United States Office of Women’s Health (USOWH).

D. Autoimmune diseases are on the rise, according to Dr. Carpenter. Over the last few decades, lupus rates have tripled and celiac disease cases have quadrupled. In just the last 10 years, type 1 diabetes has increased 23 percent. Dr. Carpenter attributes the rise to the fact that there has been tremendous research on the topic recently. “As awareness continues to grow, medical providers are more likely to recognize, diagnose and treat these 24 | MAY 2015 | SUBURBAN LIFE MAGAZINE

• A genetic predisposition. “Genetics do play a role,” said Dr. Carpenter. It could be passed down from an aunt to a niece or from cousin to cousin. Relatives usually do not share the same autoimmune disease so the aunt could have lupus and the niece could have juvenile diabetes.

• An environmental trigger. Dr. Carpenter said, “Environmental and chemical factors also play a role.” Such triggers include an infection, vaccination, food product like gluten or exposure to chemicals or consumer products made from plastics, artificial fibers and synthetic dyes.

• A leaky gut. A gut that is in bad shape due to stress and junk food can create Zonulin.

This opens up the spaces between the cells of the intestinal lining. That normally occurs, in order for nutrient and other molecules to get in and out of the intestine. However, when leaky gut is present, the spaces between the cells open up too much allowing larger protein molecules to get into the bloodstream where WOMEN & CAREERS

an immunologic reaction can take place. Once that happens, the body is primed to react to those proteins each and every time they appear.

F. Autoimmune disorders share common symptoms. According to Dr. Carpenter, the classic sign of an autoimmune disease is inflammation which can cause redness, heat, pain and swelling. Fatigue is another common symptom. “A person with rheumatoid arthritis will experience pain and swelling in their joints,” said Dr. Carpenter. “Someone with a bowel disease may experience abdominal pain, bloating and possibly see blood in their stool.”

G. Preventing autoimmune diseases is not possible, according to Dr. Carpenter.

“Unfortunately there is no way to prevent these diseases as genetics do play a role,” she said. But she stressed that maintaining a healthy lifestyle is beneficial.

• Eat healthy, well-balanced meals.

Make a habit of eating vegetables, dark fruit, fish twice a week and limiting animal fat.

• Get regular physical activity but don’t overdo it. A gentle exercise program, such as yoga or tai chi, is a wise choice.

• Get enough rest. Rest allows your body tissues and joints the time they need to repair.

• Reduce stress. Try meditation and guided imagery to lower your stress levels. mysuburbanlife.com/magazine

Luz Canino-Baker builds esteem in young Latinas

Having re-married her new husband, Don, encouraged her to pursue her passion and business. Along with her new business in 2012 she developed a conference aimed at helping Latina women find their own career success.

As a single mother she raised three children, pursued an undergraduate and graduate degree and maintained a successful career in banking for 28 years.

But it was around her 20th anniversary in the banking industry that she realized something was missing.

“I loved it at one time, but I realized I had never really chosen to have a career in banking,” Canino-Baker says. “I thought I needed to make a change.”

She continued to work and support her family but decided to seek changes. She started through volunteer work, and found her way to the Hispanic Alliance for Career Enhancement in Chicago. In 2007 she joined was hired as the managing director of programs and marketing for HACE. She was part of a team planning career conferences and recruiting events and she developed the Mujeres de HACE program, a leadership program for Latinas, which has graduated more than 400 Latina leaders.

“I always wanted to have my own business,” Canino-Baker says. “I think I was an entrepreneur since I was a little girl.”

“I would go to a lot of conferences and see very few Latinas in the room,” she says.

Canino-Baker created Latinas On the Plaza, aimed at providing professional development for women. At the first conference she had 70 attendees and attendance for this year’s event in April was projected at 200.

Acevedo has attended and for the third year served as a co-chairwoman of the Latinas On the Plaza conference. She says Canino-Baker does an amazing job of producing the single-day conference.

Canino-Baker says she wanted to build a conference for woman. She says so often women believe if they work hard they will succeed, but it’s not enough to work hard.

“You have to know how to navigate the waters in corporate America,” she says.

Oak Park resident Ellen Acevedo was a student in a leadership development course CaninoBaker taught while at HACE.

Canino-Baker says the conferences and her work are just the tools she wishes she had available to her many years ago.

“I really liked her style,” Acevedo says. “She was very genuine, very focused. She was patient and kind.”

“My goal is to really help women to find their passion so they can be strong at work and at home and in the community,” Canino-Baker says.

Canino-Baker decided to build on her professional experience and with support from her family, in 2009 she decided to venture out and create her own professional development

“It makes you a really strong woman,” CaninoBaker says. “You have to get up each morning and say ‘I’ve got to find a way.’ It was hard. It was one of the hardest things I’ve done.”

For more than 30 years she has served as the staff clinician for the Naperville-based Showchoir Camps of America summer workshop as well as the Wheaton-based Rising Stars summer showchoir camp, both of which are considered premier programs.

As her nominator notes, she is teaching the students steps and she is providing life lessons as well. “Not only are the students made aware of stylistically appropriate movement as viewed through historical social and musical contests, they are also encouraged to develop skills which will serve them well throughout the rest of their lives.”

And while the Villa Park resident is a dedicated choreographer, her teaching is in addition to her full-time work as an administrative associate at Mesirow Financial in Chicago and her role as a wife and mother of three.

housands of children and their families are able to receive the healthcare they need thanks to the dedication of Mabel Chirolla. While her title is office manager of Pediatric Health Associates in West Chicago her work encompasses far more, as she builds life bridges between patients and health professionals.

The former liaison for the Colombian Consulate of Chicago, Chirolla continues to use her skills, her passion for helping others and her persistence to improve lives in the West Chicago area.

Among her top accomplishments is creating PANNA, a Spanish-speaking support group for families of affected by autism. She dedicates many hours to helping families navigate the Affordable Health Act in English and Spanish. She is the director of the Infant Car Seat Program for the state, providing low-income families with safety seats for their infants and young children and taking the steps to educate them on the proper use and installation.

She is a founding board member for Carelink Foundation, a nonprofit that assists homeless and low income minority populations with healthcare needs. She recruits and directs a group of bilingual Spanish-speaking volunteers to interpret and accompany families to doctor and hospital appointments as needed.

“There is no one that cares more for the families we serve than Mabel,” wrote her nominator. “Mabel is an angel sent to help all who are in need.”

LISA GERHOLDDIRKS Elmhurst Cool Cities Coalition/ Chairwoman of the City of Elmhurst Sustainability Task Force

T

oday Lisa Gerhold-Dirks is considered an advocate for the environment, but much of her interest started as a concerned parent wondering why school buses were idling in a parking lot, wasting fuel and emitting gas.

From her questions she began a path of bringing important environmental concerns to the forefront in her community.

In 2011 she took the position of chairwoman of the Elmhurst Cool Cities Coalition. Furthermore she has documented the work in her community to provide as an educational tool for others to learn from. She volunteers her time to educate the community on topics such as home energy efficiency—reducing a homeowner’s carbon footprint and saving money as well.

In 2014 she was named to Elmhurst Sustainability Task Force, leading efforts to help her town to increase sustainability, conserve energy and reduce waste.

She joined other parents who saw an empty lot as an opportunity to create an outdoor classroom at Hawthorne Elementary School. They worked to secure grants, plan and seek donations. Today, students can dig right into studying earth sciences with a garden grow fresh vegetables to compositing and reducing waste. The outdoor classroom has earned awards including the prestigious Chicago Wilderness Conservation and Native Landscaping Award.

s the director of the Robert R. McCormick Museum at Cantigny for the last eight years, Diane Gutenkauf takes pride in maintaining the museum’s mission and increasing its presence in the community. During her tenure the museum has seen an increase in visitors, expanded programs and received awards from the Illinois Association of Museums and the Illinois State Historical Society.

Last year she oversaw the development and installation of a new exhibit on McCormick’s accomplishments, with an aim to inspire innovation and philanthropy among museum visitors. She has built partnerships with local non-profit groups to further help promote their work and raise awareness and donations.

Inspired by McCormick’s life and passions, Gutenkauf made a leap into her own civil service in 2007 and was elected to the Elmhurst City Council. In April, she completed her second term as alderman.

As a licensed clinical psychologist, La Hoz is committed to her work. She continues to perform research and is working on a project to understand the process of change in educational marriage and relationship education programs as they relate to the Hispanic community. She also makes time to care for patients through Meier Clinics where she treats patients with mental health issues.

nnovative and persistent are words that easily describe Kay McKeen, founder and executive director of SCARCE, and she and her staff are constantly finding new uses and for items that would otherwise be discarded and taking up space in a landfill.

From SCARCE’s Glen Ellyn location she has found ways to re-use, recycle and repurpose a number of items, from recycling crayons to make special coloring tools for students with special needs to collecting old buttons from a shirt and sending them to Africa where young women can utilize them to create clothing and sell their goods to support themselves.

She is an advocate for education and in 1991 she started the Book Rescue, taking old, unused text books and getting them into the hands of those who needed them.

She has navigated politics to persist in the creation of laws, seeking change and not backing down from critics or challenges.

A strong supporter of caring for the environment, she enjoys teaching and loves to share her knowledge and experience with audiences of all ages. She has taught composting basics to school and adult groups to advocating for medicine collection bins to keep the waste from contaminating our drinking water.

or Mary Ellen Penicook, home is more than just a place to hang a coat and hat. She is committed to helping her community be the best place to live, work and play.

Organic Wines WHAT YOU NEED TO KNOW With VISAL KHEAM

Y

ou may have noticed some Organic vs. conventional wine buzz regarding the organic The “organic” designation is different for every winemaking country, and we’ll discuss the wine movement in the past six definitions in the United States only. It is very important to note that organic wine is made years or so. Although it only from grapes that are grown in accordance with the principles of organic farming. So, what is organic wine? To repeat, as it stands currently, organic wine only refers to how the grapes were grown. Organic wine is wine made from grapes grown without use of artificial chemical fertilizers, fungicides, pesticide or herbicides. In conventional modern agriculture, these chemicals are used in order to prevent disease, curtail pests and induce greater yields. Chemicals get into the soil, inside roots,

up the stalks, into leaves and finally into fruits and grapes. The travesty, for organic winemakers, is the loss of terroir (terroir being defined as the unique environmental character of a region, chateau, estate or vineyard) because chemical may destroy the uniqueness of a terroir.

It is worth noting that many vineyards eliminate the use of chemicals but are not interested in obtaining the organic certification. These vineyards are labeled as “sustainable farming” and the wine coming from these farms are labeled “sustainable wine.” Some of the other practices of sustainable farming include: • recycling crop/livestock waste using as compost or fertilizers • growing legume crops and forages such as peanuts or alfalfa to attract beneficial bacteria to help with plant growth • developing a wildlife areas so that ‘feral’ animals have a place to ‘eat’ rather than in the vineyard • using bio-diesel tractors or horses to plough the field

Organic Certification

In the United States, the National Organic Program (NOP) sets the standards for all organic foods, including wines. Underneath NOP are 56 accredited organizations that are recognized and authorized by NOP for certification. A USDA Organic seal identifies products with at least 95 percent organic ingredients. Any U. S. wine labeled “organic” must NOT have sulfites added.

LEMONGRASS CRÉME BRULÉE: This month, we are going to welcome in the warm weather with this delicious and distinctive alternative to the traditional French Crème Brulèe. Easy to make and comprised of very simple ingredients, this delightful dessert combines creamy custard with the crunch of caramelized sugar for a tasty and elegant treat. Traditionally used as an herb in its native Southeast Asian cuisine, the lemongrass will add a unique, lemony yet sweet flavor and distinct aroma to this rich and flavorful indulgence. This recipe will yield approximately eight 6-ounce servings.While some Rouille recipes call for breadcrumbs, I prefer the smoother consistency and gluten-free alternative provided by using a boiled potato.

INGREDIENTS: • 1 quart cream • 4 stalks of lemongrass, chopped • 12 egg yolks • 1 cup sugar To begin, simmer the cream, lemongrass and a handful of sugar in a medium saucepan over low heat for 20 minutes (adding the sugar keeps the cream from scorching). Meanwhile, whisk together the egg yolks and the remaining sugar in a medium mixing bowl. Bring the cream up to a boil and remove from the heat.

Next, slowly add the cream mixture DINING & ENTERTAINING

to the sugar and egg yolks while constantly whisking. Strain the mixture through a fine sieve and skim any bubbles off the top. Ladle the mixture into 6-ounce ovenproof ramekins or gratins and place the dishes on a deep roasting pan or cake pan. Fill the baking dish with hot water until it reaches ½ to ¾ of the height of the ramekins.

degrees for 30 to 40 minutes until they are just beginning to set – they should have the look of Jell-O when shaken but will set further as they cool. Using a dishtowel, carefully remove the ramekins from the water, let cool and refrigerate for a few hours. The brulèes will keep in the refrigerator for three to four days covered with plastic wrap.

When you are ready to serve, remove from the refrigerator and with a paper towel, gently blot the surface of the custard to remove any condensation. Sprinkle with an even layer of sugar and apply a blowtorch until the sugar is evenly caramelized to a medium brown color. Keeping the flame moving and positioned at two to three inches above the surface of the brulèe will help ensure even caramelization. If you don’t have a blowtorch handy, you can also heat a large cooking spoon over an open stove flame and place the heated spoon over the sugared top of the custard.

Repeat until done. Please note: this may permanently discolor the bottom of your spoon, so you may want to designate a spoon specifically for this purpose.
