NOTE Summer lovin’ It’s finally arrived (officially anyhow) and we couldn’t be more pleased! Just the thought of summertime – its warm breezes and long evenings – allow many of us to move at an easier pace, as the sights and sounds of the season seep into our pores like the steamy summer sun.

In this edition of Suburban Life Magazine, we stop in at Main Street Downers Grove, for some good old-fashioned festival fun. Rotary GroveFest is celebrating its tenth year kicking off summer for local residents, and the lineup this month is filled with music, food and fun – back and bigger than ever.

Follow up that long summer weekend with Independence Day festivities – like the tri-city fireworks, or a local food fest, or the famed Eyes to the Skies Balloon Launch – and your summer will be off to a fantastic start.

Day to day, get out and enjoy the summer weather at great local activities: Stretch out on Saturdays with outdoor Zumba at Fishel Park.

Be inspired with the beauty of neighborhood gardens during the Downers Grove Garden Walk on July 13, or reconnect with nature on a mindful stroll with a certified forest therapy guide at nearby Morton Arboretum June 17 and 22. All are great ways to slow down, and embrace the season, and all our communities have to offer.

Hungry? We stopped in at Ike and Oak in nearby Woodridge for a bite to eat and to find out more about its twist on a classic pairing – pizza and beer – good anytime of year.

Speaking of slowing down, travel enthusiast Pete Stadalsky has some insight into how time is treated differently in other countries, and their ideas may just have an effect on how you spend your days this season! Also, Suburban Superdad Jon Bilyk talks of trading in the theme park for a classic family campout, and enjoying all the wonders from the backwoods to the beach.

It's not surprising that so many of us love summertime, with all the longer hours and warmer days afford us. So take the season as an opportunity to get outside and pedal, parade, play, or simply participate in your hometown.

ith just days remaining before the June 20 kickoff of Downers Grove’s signature summer festival, things are in full gear.

A lineup of more than a dozen bands are scheduled for Rotary GroveFest’s newly expanded entertainment stage. More than 10 different beers to choose from are headed to the beverage tent, and over two dozen craft brews are ready to be poured at the no-cover craft beer tasting event. A wide array of thrilling rides and kiddie options as well will be pleasing festival-goers all weekend long. And volunteers – droves of them – are slotted into some 400 four-hour shifts to support what has become a true, local community event.

For Kent Ebersold of the hosting organization, The Rotary Club of Downers Grove, none of it comes as a surprise.

“Our tagline says it all. It really is all about community,” he explains. “Kids come out and see their friends from school. We see neighborhoods coming downtown together, six or eight couples, neighbors, walking in together to hear the music.”

Ebersold says one of the reasons for the tight-knit community attendance is that 90 percent of the marketing dollars for the event stay in Downers Grove.

“We love when folks come in to the fest from outside of town, of course,” he says.

“But this is primarily a Downers Grove event, and all the people of our town know that and they come out and support it.”

In this, its tenth official year, GroveFest boasts some big things to help celebrate.

Samaritan Hospital, a larger stage with professional lighting will complement the music offerings. Fan favorite headliners like 7th heaven, 16 Candles and Semple will be joined by newcomers including BlackBolts, winners of the Tivoli Theater’s recent Battle of the Bands. who will perform as the opening Saturday show. An evening cover charge of $5 covers entry to the stage Entertainment and Beer Garden areas.

If carnival rides are what you’re after, Grove Fest promises plenty of fun for any age. Big kids can spin on the Tilt-A-Whirl, blow back their hair on the Tornado and take off to new heights on the Orbiter, just three of seven thrill rides at the ready for the weekend. Little ones will be able to burn some energy in the kiddie area sponsored Downers Grove Christian School, as they hop on the Jumping Jack, ride the waves with Bulgy the Whale,

and soar to new heights on the mini jets, as well as four other rides made especially for them. And never forget the carousel, a fan favorite for years. Unlimited ride wristbands are $27. (Check online for exact lineups before you head out to the fest, as some can change.)

An already expansive array of beer and wine in the Platinum Partners Beer Garden will be complemented by a NO Cover Craft Beer Afternoon on Saturday sponsored by Alter Brewing Company. With no cover charge, participants will receive a commemorative glass, and be able to try more than two dozen different local craft beers at just two bucks per tasting (5 oz.) and Skuttlebutts is offering some of the best in barbecue to keep festival-goers well fed all weekend long.

Sundays are special for everyone. Community Christian Church starts the day with an outdoor worship service at 10 a.m. followed by live performances by local dancers, singers and musicians, as well as the famed Festival of Cars, an impressive display of souped-up sedans and tricked

out roadsters for the whole family to enjoy. Maggie Speaks will take the stage to get the crowd pumped for the final hours of the fest.

“We just couldn’t do it without our volunteers,” says Ebersold, adding that GroveFest, unlike many others is a 100 percent volunteer staffed event. “The success of this depends on them.”

Ebersold says its really about the right people getting involved, and having the freedom, and the knowledge, to get the job done.

“We know peoples strengths, we have learned that over the years,” he says of the many returning volunteers over the life of the event. “People are empowered. They know what to do, and we know they can do it.”

Another feature of the festival which keeps sponsors, volunteers and attendees returning is the money that goes back into Downers Grove itself. More than $50,000– through high school service and music scholarships and local not-for-profits – was distributed last year from fest proceeds. A special

feature, volunteers get to pick a local cause or charity when they sign up, and dollars are donated to it for their individual volunteer time served, further personalizing the time commitment people make to GroveFest.

“We want to be that community resource,” he says.

“We want people to come back to the fest day after day, or twice in the same day, to enjoy it, enjoy their village and their neighbors. To that end, GroveFest has been successful.

“People know when the fest is, we don’t even put dates on the signs anymore,” he says. “It’s no surprise how successful this festival is.

“Of course,” Ebersold adds, “we always pray for good weather.”

Independence Day weekend boasts music, parades, food and fireworks

From fireworks to light up the summer sky to a hometown parade with floats and marching bands there are so many ways to celebrate Independence Day. Discover top of the line barbeque at Naperville’s Ribfest, watch hot air balloons float above the crowds at Lisle’s Eyes to the Skies or pack a blanket and enjoy the local celebrations complete with family fun and delicious foods.

 JULY 4TH FIREWORKS 9:30 p.m.

Celebrate the holiday with this annual fireworks display hosted by the villages of Darien, Downers Grove and Woodridge.

There’s great viewing in several locations in each of these communities but for those who love the loud boom of fireworks grab a blanket or chair and head to a park or parking lot near 75th Street and Lemont Road where the fireworks are staged. The fireworks show starts at about 9:30 p.m.  DOWNERS GROVE JULY 4TH PARADE 12:45 p.m. start Main and Grant Streets, heads south to Warren Avenue Line up to watch this favorite hometown parade featuring emergency vehicles, floats and local organizations too. The marching bands will bring the crowds to their feet.

Bring a blanket or chairs to line up along the parade route and a bag to collect candy tossed out along the route.

As the parade finishes up make your way to The Museums at Lisle Station Park where the Lisle

Heritage Society hosts a free ice cream social on the museum grounds. FINE ARTS FESTIVAL BRINGS BEVY OF TALENT TO THE STREETS OF DOWNERS GROVE

T

his year, Josh Merrill will showcase his array of ever-deepening nature photography at two dozen public art festivals through Illinois, the Midwest and Texas.

But come the beginning of September, Merrill says he will be certain to set aside time to add his work to the ever-growing collection that has come to characterize the Downtown Downers Grove Fine Arts Festival.

“The fact that the festival is just down the road certainly makes it convenient,” said Merrill, who lives in Downers Grove and whose business, Josh Merrill Photography is based in the village.

“Beyond that though, I’ve found the Downers Grove Fine Arts Festival to be a venue that brings in patrons that really connect with my work.”

Now in its 42nd year, the Fine Arts Festival has become a staple end-ofsummer civic event, both for visitors to Downers Grove and the artists themselves. While many are local to Downers Grove and DuPage County, others travel from throughout the Prairie State, the Midwest and from as far as Florida for the chance to be among those displaying their work at the festival.

“The festival brings in artists from all over the country to display their art,” says Erin Venezia, interim Executive Director of the Downtown Downers Grove Management Corporation, which runs the festival.

“This draws thousands of people from all over Illinois to downtown Downers Grove over the weekend.”

This year, Downers Grove will host its Fine Arts Festival on Sept. 8-9.

Venezia says more than 50 juried artists will display their work in the heart of downtown Downers Grove, offering up an array of media, including jewelry, watercolor paintings, wood, glass, ceramics, photography and fiber, among others.

“There is something for everyone at all price points,” says Venezia.

Initially organized by the Downers Grove Junior Women’s Club, the already successful event was handed off to the Downers Grove Downtown Management Corp.

From 2009-2015, Downtown Management hired an event company to run the show. But since 2015, the local downtown organization has hosted the event independently, enlisting the aid of two staff members and 25-30 volunteers to bring the festival to life each September.

“The Fine Arts Festival is continually evolving,” Venezia says, noting the event will draw “a handful” of new artists, amid the dozens of returning regulars, like Merrill, who began displaying his work at the Downers Grove event nine years ago, and has returned every year since.

Merrill said he specializes in nature photography. Since “cutting his teeth” and building his portfolio at Chicago area sites, like Waterfall Glen Forest Preserve and the Morton Arboretum, Merrill says he has “been blessed to travel

to some of the most incredible places in the world in search of compelling landscapes, dark skies and natural phenomena that pique my curiosity.”

Most recently, he says that has led him into astrophotography, “capturing the beauty of the night sky, juxtaposed with compelling landscapes from around the United States and around the world.”

“Being a photographer has taught me to look for beauty everywhere,” he says. “From the grand scale of the galaxy to the most miniscule detail, there is beauty to be seen around every corner.”

As his skill has developed through the years, Merrill says he has

always looked forward to showing his work to friends, neighbors and other regular visitors at the Downers Grove festival.

“It has been very gratifying to meet with and get to know many incredible fairgoers over the years, many of whom have become collectors of my work and have witnessed my growth as an artist over the years,” Merrill said. “It’s pretty special to think many residents of my own community and communities far and wide have my work on their walls.

“I hope that, in some small way, my work is brightening their day and brining them a sense of joy and curiosity.”

t is no surprise that there is a large opioid epidemic out there.

People are in pain and they donâ&#x20AC;&#x2122; t know what to do. Opioids are pain-relieving drugs that have addictive properties and psychological effects... and they are getting abused.

The increase in opioid overdose deaths has been on an alarming rise over the past year, being responsible for 68 percent of drug overdose deaths in the United States in 2017.

Physical therapy can offer a variety of pain-relieving avenues.  HOT AND COLD: Heat treatments, such as moist hot packs work best for soothing stiff joints and tired muscles. Think knee arthritis and low back stiffness. Heat enhances circulation, delivering nutrients to joints and muscles. Cold is best for acute, new pain such as an ankle sprain or tennis elbow symptoms.

It helps to restrict blood vessels, slowing down circulation and reducing swelling. Cold treatment can also help decrease nerve pain.

 MASSAGE THERAPY: This form of therapy involves hands-on techniques to improve circulation, decrease tension, reduce stress, and promote relaxation throughout the entire body. The purpose of massage therapy is to target the source of the body’s pain by eliminating tense muscles, increasing flexibility, and providing relaxation to the affected muscles as well as the body as a whole.

Massage also promotes circulation to the injured muscles, which increases nutrients and oxygen to the damaged tissues. This increased activity reduces stiffness and swelling in the muscles and joints to help reduce pain. Massage therapy also releases endorphins (pain-killing hormones), which boost the dopamine and serotonin levels in the body. These hormones promote healing, pain management, and improve feelings of euphoria. Who can say no to that?!  PHYSICAL THERAPY: In pain? Seek out physical therapy!

Physical therapists are movement experts. They should be using manual therapy techniques, stretching, and correcting movement faults to get the appropriate muscles working to decrease stress along the joints. Our goal as a PT is to correct movement impairments and teach the patient how to move well throughout the day. Physical therapy treatment is often coupled by the modalities that we have discussed earlier, and the treatment plan is designed with the patient to make sure all therapy and pain related goals are achieved.

Most importantly, you need to get moving! Pain leads to a decrease in movement. The less you move, the more stiff you feel. The more stiff you are, the more pain you feel. More pain leads to less movement and leads to chronic pain. Chronic pain can lead to using prescription drugs. You can break this cycle. Take control of your pain, don’t depend on a drug to mask it! Before you agree to an opioid prescription, consult with a physical therapist to learn about other treatment options.

 ELECTRIC STIMULATION: Interferential Current (IFC) and Transcutaneous Electrical Nerve Stimulation (TENS) are two forms of electrical stimulation that can be used for pain relief. This involves the physical therapist placing pads around the painful area. Depending upon the parameters that are selected, there can be stimulation of local nerve cells that can have a pain reducing effect. This happens in two different ways: 1) potentially blocking the transmission of the pain signals or 2) by stimulating the release of pain reducing endorphins. Another benefit of electric stim is an increase in localized blood flow. This helps rid the body of inflammation by bringing nutrients and oxygen to injured tissues.

Yoga, Zumba in the park bring fitness to the great outdoors

ooking for a fun way to work up a sweat this summer beyond the four walls of the gym?

The Downers Grove Park District has the solution with its upcoming Zumba and Yoga in the Park classes. Both offerings give participants the chance to amp up their fitness levels and reconnect with nature.

“The programs are offered free to the community and encourage residents to enjoy outdoor fitness opportunities,” says Dawn Hartman, director of marketing and community engagement for the park district.

What makes doing yoga and Zumba in the great outdoors so fun? “(Participants can) take in fresh air, take in the smell of the outdoors, see the beauty of the flowers and trees,” says Linda Ruff, group fitness coordinator for the Downers Grove Park District.

As an active professional, it is important to stay healthy and be physically fit. Through Pilates and exercise, I have been able to maintain an active lifestyle.

WHAT IS ZUMBA? “An aerobic/fitness interval training with combinations of fast and slow rhythms that tone and sculpt the body,” Ruff says. “Zumba challenges the brain and body to move with the instructor and music.”

Zumba in the Park classes will be held at 8:25 a.m.

Saturdays, June 15, July 13, and Aug. 10, at Fishel Park, 1050 Grove St., Downers Grove.

The dance-based workouts are also ideal for maximizing caloric output while having a great time.

“Everyone around will take notice of how fun Zumba is and how great the zesty Latin and international music is,” Ruff says.

Yoga is also a great way to burn calories and tone muscles. Another perk? Those Downward-Facing Dog and Mountain poses can help cultivate a mind-body connection.

“Yoga can calm the mind and with regular practice, it can make significant improvements in balance, flexibility, strength, and circulation,” Ruff says.

And there’s no need to feel self-conscious about taking your practice outside.

“Those watching yoga will see how beautiful it is with amazing balance and rotation poses all the while it is very calming to do and to watch,” Ruff says.

Registration is required. Participants should bring a yoga mat, water, and towel.

In case of inclement weather, both Zumba and Yoga in the Park classes will be held at the Recreation Center, 4500 Belmont Road.

Park District officials are excited to give residents these opportunities to boost their Vitamin D and fitness levels this summer.

“We continue to serve as the community’s connection to healthy, outdoor recreational activities and are excited to see the program grow in 2019,” Hartman says.

Have two left feet when it comes to dancing? No worries. Zumba is for all levels of experience.

Are you a yoga newbie? No worries there, either. Poses can be modified to accommodate those who are new to the activity.

Don’t wait to register and miss out on these free opportunities.

The Downers Grove Park District first began offering the outdoor Zumba classes in 2013.

This is the park district’s first year to offer the free outdoor yoga classes.

“And the turnout has always been wonderful,” Ruff says.

“It’s a great opportunity for instructors to recruit people to come to their weekly classes,” Ruff says.

Attendees should wear comfortable clothes and bring water and a towel. Registration is required.

Yoga in the Park sessions will be held at 9:30 a.m.

ife insurance is a basic building block of financial planning despite it often being misunderstood. It is not uncommon to hear people refer to life insurance options as either “term” or “whole life” after which they may look at you wisely before assuring you that term, of course, is the best choice because it is “cheaper”. If you need permanent life insurance, which of the following types should you consider?

• WHOLE LIFE (WL): A WL policy’s death benefit (face amount) pays out at the death of the insured as long as the policy is active (in force). Premiums are the same (level) for the length of the contract and are inflexible. Initial premiums cover both the cost of insurance plus establish a cash reserve within the policy. This cash value forms a reserve which grows on a tax-advantaged basis. Some WL policies are “Participating” which means that they are eligible to participate in a dividend if the insurance company declares one.

The interest credited each year to the cash value is set by the insurance company. These contracts are not very transparent regarding the underlying fees and expenses.

• UNIVERSAL LIFE (UL): UL policies offer more flexibility and transparency than whole life policies. The policyowner has the ability to modify the amount and duration of premium payments, within certain limits, and still maintain coverage for life as long as the cash value reserve is positive. UL policies were developed in response to consumer demand for more transparency of the underlying mechanics of the policy than WL policies provide. The UL premiums, which are often made annually, are reduced by the current policy expenses, and the remainder is deposited into the cash value account of the policy. Each month, the cash value is credited with interest and the policy is debited by a cost of insurance (COI) charge and any other policy charges and fees drawn from the cash value. Interest credited to the account is determined by the insurer (in the form of a crediting rate) and may have a contractually guaranteed minimum rate.

• INDEXED UNIVERSAL LIFE (IUL): IUL is a UL variation with the same operational characteristics and platform but with an interest crediting rate determined by reference to an equity index such as the S&P 500 without dividends. The index return is typically adjusted by a participation percentage rate, then subject to a maximum interest rate cap and minimum interest rate floor. IUL offers the potential for a higher yield than UL, with indirect participation in the equity market, as well as a guaranteed minimum crediting rate (i.e., floor) that provides downside protection for the policyowner.

• VARIABLE UNIVERSAL LIFE (VUL): VUL insurance policies are also based on the UL platform but have greater investment flexibility and risk/return opportunity. VUL products permit the policyowner to allocate a portion of each premium payment into one or more “separate account” funds. Separate accounts, which are similar to mutual funds, are not subject to the restrictions of the insurance company’s general account portfolio, reducing the policyowner’s exposure in the event of insolvency. VUL is most appropriate for individuals willing to accept greater risk for greater reward as the policy’s cash value is dependent on non-guaranteed market value changes.

• NO-LAPSE GUARANTEE UNIVERSAL LIFE (NLG): NLG life insurance policies are UL policies with a guarantee that if a specified minimum premium is paid regularly the policy will not lapse for a specified period, or for life, even if the cash value decreases to zero. NLG is best suited for individuals focused on ensuring the death benefit will be available at a guaranteed cost and where cash value accumulation may be less important.

Don’t be concerned if your head is spinning as you are trying to absorb all of this. Choices in permanent insurance can be confusing. It is important, however, to work with someone who can help tailor the right solution for you!

• Variable life insurance products are long-term investments and may not be suitable for all investors. An investment in variable life insurance is subject to fluctuating values of the underlying investment options and entails risk, including the possible loss of principal.

• Variable universal life insurance combines the protection and tax advantages of life insurance with the investment potential of a comprehensive selection of variable investment options. The insurance component provides death benefit coverage, and the variable component gives you the flexibility to potentially increase the policy’s cash value.

The Glass-Half-Full Guy:

COULD YOU SPARE ME THE TIME? WITH PETER STADALSKY

T

he funny thing about time is that not everyone treats it the same way. In many parts of the United States, we keep our time running close to a Swiss watch; if you’re not five minutes early, you’re late. If you travel out into the more “country” areas of the United States, you’ll notice things slow down a bit. People may even suggest you try taking it easy. Travelers like to throw around the term “culture shock” to newbies heading into uncharted waters. Time is

one of those variables that can mean dramatically different things based on culture. Let me give you a few examples: My friend and I had befriended a taxi driver in Peru who would escort us around the city Cusco.

We would send a text message out and Anselmo would magically appear within minutes at the street corner we stood at. A time came when we needed to arrange a ride very early in the morning.

I texted Anselmo and told him to be at the bed and breakfast the next morning by 4:30 a.m. because we needed to catch a scheduled bus. That next morning we stood outside the house, stars still sprinkled in the sky, checking our phones. It read: 4:35 a.m. but no word from Anselmo. Another five minutes passed, nothing. Our bus was set to leave Cusco at 5 a.m. So at 4:45 a.m. with no sight of our cabbie, we sprinted down the allies on the cobblestone streets with our 30-pound backpacks.

We stumbled into our bus stop at 5:01 a.m.

Needless to say the scheduled bus didn’t show up until 5:17 a.m.

While we were snaking up the switchback mountain roads, I got a text from Anselmo around 6 a.m. telling me he just woke up and would be by to pick us up very soon. At the time I thought this guy totally blew us off, but later learned that I just didn’t understand their relationship to time. Spending more time in Latin America, I learned that in many areas, being up to an hour and a half late is not “late.” And you can be up to two hours late if you simply make a call! It also was explained to me that the scheduled bus would have waited a while for us, knowing everyone is always late.

Eventually I learned that if I really needed someone to be on time, say to get a ride to the airport, then I needed to ask them to be there on “English time.” Otherwise it’s assumed to the cultural norm. I heard that it’s not uncommon for a movie theater to start the show up to an hour late if the owners don’t feel there are enough customers - they know more people will stumble in later.

I remember hearing a story in Ireland about a woman who had a train connection, but her first train left late, causing her to miss the connection. When she told the train station authorities what happened and demanded they fix the problem, they nodded their heads and came up with a solution. The train staff called the train that had already left and told them to wait at the next stop because they had to deliver a person. That train actually waited and one of the station employees drove the lady to her connecting train.

Granted everyone on that train was now late, and I suppose the cycle continues as the story goes on.

The interesting thing about time is that we use it in such an indoctrinated way based on our culture that we don’t think much of it until there’s a tremor in the status quo. Our relationship with time tells a lot about our society’s values - good and bad. We certainly place importance on efficiency and also have a high degree of respect for others time. To our detriment, we can get so regimented with schedules that we forget to enjoy the little things in life. It’s silly to say one culture has the right relationship to time. Every year about this time, a familiar ritual renews.

As evenings suddenly turn warm and the sounds of crickets begin to fill the night air, winter-wearied eyes turn toward the shelf in the garage holding the tent and the camping supplies.

Soon after, the conversation begins: Where would you like to go camping this year?

Through the years, this conversation has produced a surprising variety of destinations: On the beach, lulled to sleep each night by crashing ocean waves on North Carolina’s Outer Banks; In the verdant green mountains of Tennessee and Virginia; Amid the snow-capped splendor of Montana; In the windwhipped heat, but stunning vistas of the deserts of Arizona and Utah; and the chilly waters, but stunning solitude and serenity of the Upper Peninsula of Michigan.

The list of far-flung destinations I’d like to pitch a tent remains long.

But while my little ones remain that way, tremendous scenery often needs to take a back seat.

Mountains, oceans, beaches and forests will still be there in a few years.

For now, the point of the exercise is something much

more intrinsic, much closer to home.

options for camping and other outdoor recreation.

That’s why more often than not, as lifelong denizens of Illinois, the conversation returns to two realistic choices for our bunch: Lake Michigan’s eastern shores in Michigan’s Lower Peninsula or the lake’s western shores in northeastern Wisconsin – which for us is a fancy way of saying “Door County.”

A jaunt through the woods or along a riverbank with my little one would be therapeutic. A day on a local river in a kayak or canoe with my older one sounds magical. And some day soon, we may just find ourselves parked around that small, but bright campfire, in a new-to-us forest preserve or Illinois state park, for a couple of nights within easy driving distance of home.

Backwoods campers we usually are not. Given sufficiently amazing natural scenery, dad can do with a pit toilet (the other members of our bunch, much less so.) So, flush toilets and warm showers in a campground bathhouse are more our speed.

But even with a few minimal modern conveniences at hand, we’ve found our purposes can still be realized, seated around a crackling fire, under a starry night sky, sharing laughter and stories, as our bodies find the beat of nature’s circadian rhythms, our minds slow to nature’s pace and our hearts reconnect with each other in a way offered by few media other than a bit of time in nature.

In recent days, my eyes have also turned more local, as my mind warms to the possibility we may have for years overlooked some other destinations and choices for family time in nature, even closer to home.

While not as long as my unexplored distant camping bucket list, the list of unexplored local northern Illinois gems is impressive, and I’m not entirely sure where to start.

But we are always open to suggestions.  Jonathan Bilyk writes about the triumphs and travails of being a modernday dad who legitimately enjoys time with his family, while tolerating a dog that seems to adore him. He also doesn’t really like the moniker “Superdad” because it makes it sound like he wants to wear his undergarments on the outside of his pants. (Also, the cape remains on back order.)

‘Martha Stewart’s Grilling’ longtime favorites

M

artha Stewart’s Grilling,” newly published by Clarkson Potter, captures more than 125 old and new recipes from the Kitchens of Martha Stewart Living and ushers in the 2019 outdoor cooking season.

The handy guide has plenty to offer aficionados as well as those more conversant with grilling. Mouthwatering photos are a bonus.

Readers will find basic instructions on techniques for cooking with both charcoal and gas, how to prepare ingredients to simplify entertaining and suggestions for signature cocktails and compatible desserts.

Recipes include such standbys as burgers plus slabs alongside Korean short ribs and porterhouse steak with paprika potatoes and lemony romaine wedges.

GRILLED PORK TACOS AL PASTOR (MAKES 24 TACOS) • 1 package (3 ½ ounces) achiote paste • 3 chipotle chiles in adobo sauce (from a can), plus 1/4 cup sauce • 1/4 cup vegetable oil, plus more for grill and brushing • 1 ½ pounds boneless pork shoulder, about 1 1/4 inch thick

• 1 medium red onion, sliced into ½-inch rounds • Coarse salt • ½ pineapple (about 12 ounces), peeled and sliced into 1/4-inch rounds • Corn tortillas, warmed, for serving • Smoky Chipotle Salsa • Lime wedges, fresh cilantro leaves and plantain chips, for serving

In a blender, combine achiote paste, chiles plus sauce, oil and 3/4 cup water; blend until smooth, about 5 seconds. Place pork in a shallow baking dish or resealable plastic bag. Put onethird marinade over pork; turn to coat. (Refrigerate remaining marinade up to one month, to use on other meat or fish.) Cover pork and let marinate in refrigerator at least one hour or up to two days. Remove pork from marinade, letting excess drip off (discard marinade).

Heat grill to medium-high, with an indirect-heat zone. Lightly oil grates. Grill pork over direct heat until browned and sizzling, about 15 minutes per side. Wrap in parchment-lined aluminum foil and transfer to indirect heat; cook until tender when pressed, about 30 minutes.

Meanwhile, brush onion slices with oil, and season with salt.

Arrange in a single layer over direct heat. Cook until grill marks are dark, about two minutes per side. Move to indirect hear and cook until soft, 5 to 8 minutes. Repeat with pineapple.

Transfer pork to a cutting board and thinly slice. Add to a skillet set on grill to keep warm. Chop onion and pineapple into small pieces, add to skillet and toss to combine. Season with salt.

Serve pork mixture with tortillas, Smoky Chipotle Salsa, lime wedges and cilantro.

WOODRIDGE BREWPUB OFFERS TASTY TAKE ON A CLASSIC COMBO

Pizza and beer form an iconic culinary combination.

The brain trust at Ike & Oak, a burgeoning brewpub at 6315 Main St. in Woodridge, bows to this connection and seeks to perfect it. Executive chef Michael Reid closely monitors the concoctions of head brewer Nathan Tertell and acts accordingly.

“As far as the flavor profiles for the pizza go, I like to make sure that they complement the flavors for the current brews that are on tap as much as possible,” Reid says. “It helps a lot of times that we’re using a lot of the same seasonal ingredients.

“We just came into spring season, so of course I have menu items that are using strawberry, rhubarb, et cetera, et cetera. Of course, it’s using the same items in the brewing process, so it helps us order and utilize a lot of the same product, help us coordinate with

each other just by what’s in season.”

Named either for an initial restaurant location desired by owner Ed Ranquist or a beer guzzling bear Ranquist and his family may once have encountered on a campout – choose your own creation narrative – Ike & Oak opened in March.

Ike & Oak’s Neapolitan style pizzas are made with the brewpub’s ale yeast, while its Roman style pizzas are made using the house focaccia that’s baked daily.

Additionally, various brewing ingredients – or even finished beers brewed on site – can be found in Ike & Oak’s array of salads, bar snacks, appetizers and desserts. Lumpy’s Lager, a Vienna lager, may be used in the beer batter for some items, Reid says. When Tertell offered an Irish stout nitro around St. Patrick’s Day, Reid felt it only natural to put an Irish stout cookie on the menu.

To be sure, beer helps establish the tone for the dining experience. Tertell says he has released 26 different varieties of beer in the past few months, regularly keeping 12 to 16 available on tap and never being stagnant.

inventiveness, the season and guests’ palates. Four different IPAs were on tap as of May 15. Other offerings included a hefeweizen; peanut butter dunkel; farmhouse ale; sour; stout; and cream ale.

“I’ve got so much flexibility to be creative here, and I’m able to brew much smaller batch sizes than at my previous places,” Tertell says.

“But that’s what excites me about Ike & Oak, is that I can brew a lot of creative stuff and turn over the lineup so frequently to give customers something new when they come in.”

Give Tertell’s wife, Bridgette, an assist for that ingenuity. In 2010, she gave her husband a home brewing kit for Christmas, and Tertell soon “liked home brewing beer a lot better than I liked my job in an office cubicle at the time,” he says.

Earlier stops included Two Brothers Brewing Company in Warrenville, Lagunitas Brewing Company in Chicago and Baderbrau Brewing in Chicago.

Reid also boasts his share of seasoning, and not just in the pantry.

He has worked in the kitchens of such well-renowned chefs as Giuseppe Tentori and Grant Achatz and prides himself on creating varied kinds of cuisine.

Calling his sous-chef, MJ Senska, and the rest of the staff “incredible,” Reid

subscribes to the notion that the best restaurants make employees and patrons alike feel like family.

“I’m just very delighted to be able to work with so many high-quality professionals, both in the kitchen and in the rest of the operation, as well,” he says.

Compassionate care, enhanced communication and meaningful relationships...

Tertell and Reid also laud the leadership of Ranquist, who once fancied a location near the Eisenhower (“Ike”) Expressway in Oak Park.

Make no mistake, however; the new venture is elated about what’s afoot in Woodridge, especially as summer looms. An outdoor beer garden called “The Game Reserve” is planned to accommodate more than 90 customers to enjoy a craft beer or cocktail.

“I think our clientele are really excited, really happy about what we’ve created here,” Reid says.

“When coming up with the product for the kitchen, just being able to incorporate (Tertell’s) processes as much as possible into mine so we can have a menu that complements what the brewing department is doing.

“I think the guests see that. They see the collaboration, the teamwork, and it all just seems to go handin-hand with each other, and I think that comes through in their experience.”
