what’s cookin’ in kyp’s kitchen The cranberry, along with the blueberry and Concord grape, is one of North America’s three native fruits that are commercially grown. Cranberries were first used by Native Americans, who discovered the wild berry’s versatility as a food, fabric dye and healing agent. Today, cranberries are commercially grown throughout the northern part of the United States and are available in both fresh and processed forms. Enjoy these recipes that have been favorites in our family for many years. Smakelijk eten!

CRANBERRY TURKEY (Slow Cooker) 1 boneless turkey breast (3 to 4 pounds, halved) 1-16 oz. can whole-berry cranberry sauce 1/2 cup sugar 1/2 cup apple juice 1 Tbsp. cider vinegar 2 garlic cloves, minced 1 tsp. ground mustard 1/2 tsp. ground cinnamon 1/4 tsp. ground cloves 1/4 tsp. ground allspice 2 Tbsps. all-purpose flour 1/4 cup cold water 1/4 tsp. browning sauce (optional) Place the turkey skin side up in a 5-quart slow cooker. Combine the cranberry sauce, sugar, apple juice, vinegar, garlic, mustard, cinnamon, cloves and allspice; pour over turkey. cover and cook on low for 5-6 hours or until a meat thermometer reads 170°. Remove turkey to a cutting board; keep warm. Strain cooking juices. In a saucepan, combine flour and water until smooth; gradually stir in strained juices. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in browning sauce if desired. Serve with sliced turkey.

CRANBERRY CAKE with a BUTTER SAUCE 4 1/2 Tbsps. butter 1 1/2 cups sugar 3 cups flour 1 1/2 cups milk 4 1/2 tsps. baking powder 1/2 tsp. salt 2 cups raw cranberries - 1 package Combine all ingredients into a mixer bowl except for the berries. Mix well. Fold in the berries. Pour into a greased 9x13 pan. Bake for 40-45 minutes at 350°.

Sauce: 1 cup sugar, 1 Tbsp. flour, 1/2 cup butter, 1/2 cup milk or half and half, 1 Tbsp. vinegar, and 1 Tbsp. vanilla. Mix together flour and sugar in a saucepan. Add remaining ingredients except the vanilla. Bring to a boil, remove from heat, stir in vanilla and serve warm over cake.

The Diversity Garden is a place where families, clubs or businesses can produce their own food, share experiences and enthusiasm with other gardeners and beautify the community.

“There’s so many things to do than just pulling weeds,” Denney said.

If people are interested in volunteering, they can contact the extension office.

“I like the idea of teaching other people to garden,” said Marilyn Dorland, a Master Gardener. “I have just loved it my whole life. My goal is to instill the love of gardening in other people.”

There are 35, 10 feet by 20 feet plots at the Diversity Garden, which is located north of Osceola. Water and tools are also available.

How to get a plot People may sign up for a plot at Clarke County Extension office. The process and advertising begins in the early spring.

Plots may be purchased by individuals, families, businesses, 4-H club, church organization and more. It’s open to anyone.

The cost of the plot is $20. People can receive some of that funding back in late fall if they have volunteered for five hours at the Diversity Garden. Currently, all the plots have something planted in them.

The first year of growing at the garden was in 2003. There is also a board that governs the Diversity Garden.

Even though Mary Denney, a Master Gardener, doesn’t have a plot at the Diversity Garden, she does help at the garden and said there’s “endless amount of possibilities” out there for people.

Many of the Master Gardeners said it’s interesting to see different types of seeds from different countries at the Diversity Garden.

“A lot of communities don’t have the opportunity for people to be able to garden,” said Sue Wilder, a Master Gardener. “A lot of times if you’re in an apartment or renting a house, you don’t have a garden space. And, they want to grow. It’s learning how to be healthy. I mean, the things that come out of the ground are the best things for you.”

Trail system makes strides at Q Pond

All it takes is one step after another, and Johnston estimated the trail system would be finished by the end before you know it, progress is being made with the recreational trail system at Q Pond.

In February, Joe Johnston of Johnston Properties was approached

by Bill Trickey, executive director of Clarke County Development Corporation, with the goal of expanding the trail system at Q Pond.

“I went out and looked at it, and I came back and I said, ‘Bill, I think it would be better if we took a trail around the north end, across the dam, back to Clay Street. That way, you have a trail all the way around Q Pond,’” Johnston said.

At this point, may meetings were held to determine where to go from there.

“I was careful to take the dead trees, smaller trees, and left the good, mature trees there,” he said.

The complete trail system will be 1.8 miles.

Progressive Johnston made a comparison to the city of Bondurant and its trail systems. He said, last year, Bondurant increased their building permits by one-third.

“They attribute all that to the trail systems they have there,” Johnston said. “They’ve made some new trail systems hooking to Des Moines, and they’ve said that the younger homeowners, that’s appealing to them — to be able to have a trail system to exercise on and ride their bikes on.”

The next move, Johnston said, will be to have a parking lot in the area for the public to use for the trail system.

“I’m hoping that once they see, people will see the trail system next to Clay Street, then I think the community will get more involved in it,” Johnston said. “Hopefully, we can go other places and build more trails.” OL

Johnston anticipated the project would take him two to three weeks, but it ended up being almost six total with his bulldozer.

Bill Black of Osceola also volunteered a lot of his help for the trail system.

Clarke County Secondary Roads Department helped to set three culverts for the drainage areas at Q Pond. There are four culverts total.

“They were really instrumental in the helping of the trail system,” Johnston said.

At the time of the interview in August, the project was to the point where it needed rock put on it.

Revitalization Downtown Osceola to be revamped by CDBG project By the end of this year, downtown Osceola is going to have a fresh, new look.
