Plenty of fun things going on in the next month or so...

The Fourth of July is right around the corner.

Osceola will have a wonderful four days of celebrating the event July 1-4 with everything from a fun run to fireworks and a carnival for the kids. There is plenty to do and see for everyone.

Next up on the fun side of summer is the Clarke County Fair July 19-25 out at the fairgrounds– good food and lots of livestock to take in. The fair also includes everything from face painting to a tractor pull, a good prelude to the Iowa State Fair.

July 28 is also the 10th anniversary of Meet the Merchants on the court house lawn. Free food and entertainment along with lots of giveaways at the many merchant booths will be available.

The pulled pork dinner is always a crowd pleaser.

Then August 20 is the 2nd-annual car show in downtown Osceola. The show this year will be bigger and better than last year with more cars, food and fun for everyone.

These are just a few of the fun things going on around Osceola. You don’t have to make a long trip; you can have a lot of fun right here in your own backyard.

The main purpose of Osceola’s Latino Festival is to celebrate what makes us different and what makes us the same.

“I think it’s great for the community,” said Jorge Avalos with Osceola’s Latino Festival committee. “I like to see people joining together as one. I don’t like to see two different communities … I just like to see everybody blend together.”

independence day. There are nine Central American countries that celebrate independence day in September.

However, Osceola’s Latino Festival committee wanted to avoid scheduling their festival during the same days as bigger cities, such as Des Moines.

What to expect For Osceola’s festival, there will be the Mexican dancers Jovenes Embajadores, and DJ Samuel will also be returning. He will emcee the event in both Spanish and English languages.

“We used to just do it in Spanish, so we’re just kind of doing a little bit of both so everybody can feel connected,” Avalos said. “We try really hard to get everybody included so everybody feels welcome. It’s for everybody.”

Attendees can also expect to see a mariachi band and different children’s games, such as musical chairs incorporating sombreros. The watermelon eating contest will return this year, too.

A new act the festival committee added is an Oklahoma lasso-er with rope tricks and entertainment.

It may go without saying, but there will be plenty of food at Osceola’s Latino Festival – tacos, pupusas, burritos, tortas and more.

For other types of refreshment, the committee hopes to include a beer tent at this year’s festival. At the time of the interview, it was still a work in progress.

For the community A lot of work goes into creating all the fun and entertainment the festival has to offer.

Osceola’s Latino Festival committee starts meeting once a month beginning in February, but once the festival gets closer, they meet every two weeks to make sure plans are ready to go.

Avalos said all members of the committee play an important role in getting the festival together. They want to do things right, especially with Osceola having a significant Latino population.

When it comes to bringing the community together, Avalos said if the festival educates people about a culture they didn’t know a lot about, then it would be considered a success.

“The goal was met,” he said. AH

Beef is what’s for dinner tonight and here are three different recipes using beef - one for the grill, one for the oven and the last for the slow cooker. Each is easy to prepare and makes a great tasting main course. Serve with your favorite side dish - grilled potato wedges, chips and salsa, or mashed potatoes and fresh green beans. Smakelijk eten!

BEER-MARINATED PEPPERED STEAK (THE GRILL)

1 cup chopped onion 3/4 cup beer 3/4 cup chili sauce 1/4 cup fresh parsley, chopped 3 Tbsp. Dijon-style mustard 1 Tbsp. Worcestershire sauce 2 tsp. brown sugar 1/2 tsp. paprika 1/2 tsp. ground black pepper 3 beef T-bone or 6 top loin steaks, cut 1 inch thick 1 to 1 1/2 tsp. cracked black pepper For marinade, combine onion, beer, chili sauce, parsley, mustard, Worcestershire sauce, brown sugar, paprika, and the ground black pepper. Trim fat from steaks. Place steaks in a plastic bag set in a shallow dish. Pour marinade over steaks; seal bag. Marinate in the refrigerator for at least 4 to 24 hours turning bag occasionally. Drain steaks, discarding marinade.

Sprinkle both sides of steaks with the cracked black pepper.

Grill steaks for 8-12 for rare and 12-15 for medium turning steaks halfway through grilling.

QUICK & EASY BEEF ENCHILADAS (THE OVEN)

1 lb. ground beef 1 can refried beans 1 pkg. taco seasoning 3/4 cup water 10 8 inch torillas 1 cup taco sauce 1 8 oz. pkg. shredded cheddar cheese Brown ground beef and drain. Add: refried beans, taco seasoning and water. Let simmer for 8-10 minutes. Lay out tortillas and fill evenly with meat mixture. Roll tightly (don’t roll ends) and place in 9x13 pan. Pour taco sauce over filled tortillas (mild or hot sauce). Sprinkle with shredded cheddar cheese. Bake at 350° for 10 minutes or until cheese is melted.

Serve with chopped lettuce, diced tomatoes, sour cream and sliced black olives.

ITALIAN MEATLOAF

(THE SLOW COOKER) 2 lbs. ground beef 2 cups soft bread crumbs 1/2 cup spaghetti sauce 1 large egg 2 Tbsp. dried onion 1/4 tsp. pepper 1 1/4 tsp. salt 1 tsp. garlic salt 1/2 tsp. dried Italian herbs 1/4 tsp. garlic powder 2 Tbsp. spaghetti sauce Fold a 30 inch long piece of foil in half lengthwise. Place in bottom of slow cooker with both ends hanging over the sides of cooker. Spray with vegetable oil. Combine beef, bread crumbs, 1/2 cup spaghetti sauce, egg, onion, and seasonings.

Shape into loaf. Place on top of foil in slow cooker. Spread 2 Tbsp. spaghetti sauce over top or more if you like. Cover and cook on High for 2 1/2-3 hours or on Low for 5-6 hours. Lift cooked loaf out by foil and serve!

Game, Set, Match Tennis brings together young, old

Tennis runs through Osceola’s veins.

Ever since the Osceola Lions Club built the first single tennis court in town in 1963, it’s been a popular sport.

That’s in large part thanks to Mickey Thomas, who right away began organizing tennis gatherings.

Fifty-three years later, those tennis gatherings, and Thomas, now 87 years old, are still bringing people together in Osceola to enjoy the sport.

Every Monday and Tuesday evening at 5:30 during the summer, people gather at the Clarke Community High School tennis courts to play.

Last year, players ranged in age from 16 all the way up to Thomas at 86.

“The program has been growing every year. The quality of tennis has improved,” Thomas said. “I just never dreamt we would have that quality of tennis here in Osceola. I used to be the best, but not anymore.”Bruce Harris, another avid tennis player in Osceola, said the group used to be four to eight players, but in recent years has grown to groups of 12 or more on a given night.

Not only is the group popular among Osceola residents, but it draws from surrounding communities, with people traveling from Leon, Indianola and Des Moines for a night of tennis.

“We have a wide (age) range and ability-wise, too,” Harris, 64, said.

“But it’s very much social tennis, which means you take all that into account. We’ve taught a lot of people to enjoy tennis.”

Players are typically split up into doubles teams, allowing for players to maximize use of the four tennis courts at the high school.

“It’s a great sport. You only need two,” Harris said. “We like to have four. Doubles takes less running. So when you get old, you can play doubles.”

Being 87 years old hasn’t slowed down Thomas, who recently returned from a hiking trip in Scotland and Iceland, from playing on the tennis courts. In fact, it’s helped his health, as he continues to play tennis two or three times per week in Des Moines, in addition to playing with the group in Osceola.

“I attribute that to my health and my work at Robinson’s (True Value) store,” Thomas said. “I’m climbing stairs all day long, plus hiking has been one of my most pleasurable forms of recreation.”

Clarke Head Tennis Coach Jeff Ehrhardt said Thomas serves as an inspiration to others.

“It’s unbelievable. First of all, I just hope I’m still alive (at 87 years old), but let alone, he’s out hiking in another country,” Ehrhardt said. “Just as an inspiration to be out here and still to play at the level he plays at, it’s just phenomenal. We all look up and go, ‘Wow!’”

The social aspect of tennis has been one of the biggest draws for players.

“That’s what we try to promote,” Ehrhardt said. “With the social part of it, we laugh and have fun out here. It’s not blood and guts, things like that. Sure, we get after each other once in awhile. But we know who we’re playing with. We want to make it fun for everybody.”

New players are welcome to join the group for a night of tennis.

“Yeah, we’ll play them for money!” Harris joked. “We’re always asking people to come out.”

And, Thomas is living proof tennis can be a lifelong game.

“There’s a camaraderie. It’s good exercise,” Thomas said. “It’s a sport you can play nearly all your life. I’m 87 and still playing. A big satisfaction for me is to think back when we started with the one court at the street department, and now we have 30 people playing on excellent courts.” SV

Clarke County Farmers Market vendors talk about their processes of growing produce, baking and creating crafts to sell.

Eight-year-old Addison stands behind a booth run by her mother, Nicole Wilson, on a warm and sunny Saturday in June – the first day of the Clarke County Farmers Market this year.

Grinning, Addison greets each person who walks up to their booth, explaining how she and her sister, 10-year-old Lily, made the handdecorated cupcakes in front of them. Addison baked the batch of s’mores cupcakes, and Lily made the mint-chocolate-chip ones.

“I’m trying to earn money to go to Tennessee,” Addison says to a passerby, who promptly buys a cupcake for herself and her husband.

It’s the sense of community and getting to know people that brings the Wilson family from New Virginia to Osceola to sell products at the farmers market, Nicole said.

“People feel really good supporting somebody local and knowing their products are fresh.”

“Being there in person, you really get to talk to people and let them know what types of products you’re bringing, how they’re made and how you grow them,” said Nicole, Clarke County Farmers Market president. “People feel really good supporting somebody local and knowing their products are fresh.”

The Wilson family, made up of Nicole and Nicholas and children Lily, Addison, Sean and Tucker, moved to Iowa from California. This is the family’s third year participating in the Clarke County Farmers Market.

“We grow vegetables throughout the summer like tomatoes, peppers, cucumbers, onions – just a large variety,” Nicole said. “In the fall, we have apples and pears. In addition to the produce we grow, we also sell baked goods, homemade bath products, like bath salts and sugar scrubs, and crafts.”

It is mostly Nicole and their daughters who work at the farmers market on Tuesdays and Saturdays, but Nicholas helps in making the products.

“He helps around the farm doing stuff with our produce, and he also occasionally does baking with me and other projects,” Nicole said.

There are a few items Nicole tries to bring consistently to each farmers market day: brookies, which are brownies and chocolate chip cookies baked together, fruit pies and bath products.

Depending on what fruits are in season, Nicole might bake cherry, mixed berry, peach, black raspberry or strawberry rhubarb pies.

“Then, for the bath salts, you add a tablespoon to your bath, and it has epsom salts, baking soda and essential oils, and it helps your muscles relax and helps you absorb magnesium from the epsom salts,” Nicole said. “The sugar scrub you use to exfoliate in the shower, and those are made with sugar and oil. Generally, I use coconut oil, but for some of the mixtures, I might use almond or olive oil and then add essential oils for the scent.”

This year and possibly for a few more years, Nicole’s daughters will sell homemade cupcakes at the farmers market for $2.50 for one cupcake or $2 for two or more cupcakes.

“This time in particular, they’re helping sell because my 8-year-old daughter is going next week to her tumbling and trampoline national championship, so she’s trying to earn money to go to Tennessee,” Nicole said. “Each of them chose one flavor to do and baked them themselves.

They decorated them, too. I have all types of cake decorating stuff like piping bags and tips, so I helped them fill up the piping bag and showed them how to use it.”

For the Wilsons, preparing for the farmers market is a year-round task.

“Generally, for a Saturday market, I will spend the majority of my Friday baking,” Nicole said. “Some of the other items, like the wooden blocks I make, I try to do those in our off season, so in the winter or spring, before the market has started. In the summer, I spend a lot of time out in my garden. Once my produce is ripe, I usually go early in the morning and pick tomatoes and peppers.”

Aside from building relationships with people in the community, Nicole said the most important part of the whole process is ensuring as little goes to waste as possible. She often uses recycled materials to create dishes, purses or other products, and she and her family try to use everything they grow.

“My family eats a lot of produce ourselves. We also raise chickens, so a lot of our scraps go to the chickens,” she said. “Anything we or the chickens don’t eat, we compost, and we use the compost in our garden.

We also do a little bit of canning.”

Veteran vendor Another vendor, Leola Boyce of Osceola, began selling products at the Clarke County Farmers Market when it first opened more than 20 years ago. She has been a vendor off and on since the farmers market’s inception.

Right now, Boyce is a vendor on Saturdays only, as she works at Clarke County Farm Bureau during the week.

She sells a variety of fresh produce, including lettuce, onions, radishes, kale, green beans, tomatoes, cucumbers, squash and herbs.

For Boyce, the farmers market is the main place she sells products. She does occasionally do personal orders, though, especially for pies and cinnamon rolls.

“I get a lot of other benefits from the farmers market, too,” Boyce said. “I make friends, and I’m able to give advice to those interested in growing their own produce. I hope, and I think I have been able, to teach people things they didn’t know before about certain vegetables and herbs. So, it’s fulfilling and rewarding.” KH

“I have experimented with things in the garden every year I plant because I never get the quality and the quantity Leola Boyce that I think I should, so there’s a lot of work and it’s different every year,” Boyce said. “It depends on the moisture, the sun and how much time I have to put into it. There’s always weeding, planting and cultivating, and I don’t do any spraying or any chemical control unless absolutely necessary, but no more than once a season and sometimes never.”

Boyce also makes fresh pies, cinnamon rolls and caramel corn.

“As far as baking, I take Friday morning and into the afternoon to do all the baking, and then I have to cool them, package and label them and get them ready to carry into the market,” she said.

Clarke County Farmers Market The Clarke County Farmers Market, located on the southeast side of the Osceola courthouse square, began June 4 and will run through Oct. 15. It is open Tuesdays from 3 to 6 p.m. and Saturdays from 8 a.m. to noon. Beginning Sept. 3, the hours on Saturdays change to 9 a.m. to noon. It will not be open July 2 or July 5.

This year, there are special events planned for the farmers market. Once a month, there is a customer appreciation Saturday, with music played by a DJ. Also, farmers market staff are working to solicit donations for a children’s program, “Power of Produce,” which would allow each child who attends the farmers market to receive a $1 token to purchase fruits or vegetables as a way of encouraging them to try new, healthy foods. Days ahead to be and

Hot summer days are ahead and the smells of dried dirt and livestock are in the backs of the minds of many 4-H exhibitors. This year, however, those exhibitors will be privy to a new animal barn.

“We’ve received a development corporation grant to cost share to put up a new small animal building, which will house poultry and rabbits,” said Clarke County Fair Board President Scott May. During the 2015 Clarke County Fair, the small livestock were housed underneath a tent because of a storm that handicapped use of shelters. Despite the temporary setback, 4-H exhibitors have come back to show off their furry and feathered features, which are more accessible to raise than ever.

“I would say that we’re making these project areas more attractive.

Especially with poultry and rabbits, we have more and more families who are living in town instead of on a farm, and especially with these smaller animals, families can still have them while living in town,” said Jennifer Miler, Clarke County youth and outreach coordinator.

Clarke County Fairgrounds are expanding to accommodate the growing number of 4-H members.

In connection with the ease of access for small livestock, larger animals are more expensive to feed and maintain. It’s easier for 4-H participants to raise smaller animals that aren’t as expensive and require less maintenance.

“Also, keep in mind that our families and our youth are so busy these days, some of those smaller animals take a little less time,” Miler said.

The Clarke County Fairgrounds, which was formerly located at the current city pool before 2004, are made up of a main event center, 60spot campground, playground and barns for sheep, hogs, cattle, horses and show.

In 2015, there were 136 4-H livestock exhibitors, an increase from 124 in 2011, but a dip from 142 in 2014. However, Miler predicts an increase for this summer’s fair in small livestock exhibitors.

“We have outgrown our fairgrounds, which is a great situation. I don’t even want to call it a problem,” Miler said. “The fair board is in the process of building the new poultry and rabbit fair barn.”

In the past, the sheep, goats, rabbits and poultry all shared the same animal barn, but since then each animal is housed in its own building.

Fair board members also purchased new pens for sheep and goats in 2015, one of many small improvements the members have made to bring fresh life to the communal site.

The new building, which is being paid for by a $50,000 grant, will be located east of the hog barn, where there is a concrete pad currently located. The actual building will be ordered soon and May expects it to be completed by the time the fair kicks off July 19.

“I would look at this as the kids spend a lot of time on their projects, and they try to be very prideful of their projects, so it would be nice to have the facility that we have to have a nice place for them to exhibit,” May said. “Also, we’re looking at the fairgrounds as year-round usefulness for the county. We rent the exhibit building for weddings and corporate meetings and everything else. So, we like to keep everything up and keep things going on out there.” BP

Fourth of July looks to be

Osceola’s Fourth of July is the city’s biggest event of the entire year.

One reason the festivities are so popular is people view it as a homecoming. There are many class reunions scheduled around the holiday.

This year, the Fourth of July committee is making a goal to provide large amounts of family-friendly entertainment.

Out of this World Events are planned from July 1-4 with the theme for the holiday being “Out of this World.”

The theme can range from aliens to Star Wars, and anything in between.

The committee was inspired by all the ideas people could take from the outer space theme, plus there’s the huge success of the new Star Wars movie “The Force Awakens.”

Sunday has been designated as a family-fun day with more activities directed toward children. The children’s tractor pulls will be returning.

Obstacle course A new addition this year is the children’s obstacle course.

“I thought that there needed to be more activities for kids to get involved in,” said Nicole Jimmerson, committee member. “So, I just kind of came up with it and thought it would be a good one for the kids to get them active and keep them up on the square. You know, sometimes kids don’t want to come up and sit and listen to bands all day.”

Mechanical bull Another new item the Fourth of July committee thought up is the mechanical bull that will debut the night of Saturday, July 2.

On Sunday, July 3, the mechanical bull will be available for free for people to ride. This is in conjunction with the family-fun theme for that day.

Returning favorites As for the other activities planned for the holiday, the Little Miss and Mr. Osceola contest will be during opening ceremonies, which is Friday, July 1.

The Firecracker 5K Fun Run is planned at 7 a.m. Monday, July 4. The big parade that goes throughout downtown Osceola will be at 11 a.m.

July 4.

To cap off a weekend of fun, the fireworks will go off at dusk the evening of July 4.

Summertime In Osceola Each season offers so many fun things and activities to do in Osceola and this spring/summer issue of Osceola Living hightlights many of them. The Farmers Market, Fourth Of July Events, Clarke County Fair and the Latino Festival are only a few of the activities that Osceola has to offer.
