There are few things I like to write about as much as food.

Dining, wine and beer pairings, international cuisine, cooking – you name it, I’ve penned a story or two about it. I even recall a feature on the perfect Thanksgiving turkey and why you shouldn’t graze over the leftovers throughout the day.

But seriously, the topic for fine food and wine seems to make everyone happy, and we have the best in the ‘burbs right here for you. From fine artisan dining, where the food looks pretty enough to frame, (but trust me, just eat) to lush, fragrant wines made right here in our communities, you’ll work up an appetite as you read through the pages of the July edition.

We found light and airy breakfasts at Le Petit Creperie and hearty artisan burgers at Duke’s Alehouse. I traversed a host of suburban stops on the Northern Illinois Wine trail, talked to the winemakers and even the growers in some cases, and discovered just how wonderful local wine can be.

His demanding job as Number 2 at a top-rated restaurant requires hours on his feet—every day. Even though Craig is a young man, his achy legs during a busy shift made a tough job nearly impossible.

He needed relief and became a patient of Illinois Vein Specialists in 2010.

Dr. Stephen Rivard, medical director of IVS, recalls: “Craig’s vein disease, like that of many others in our practice, started in his late teens and, by the time I saw him, the disease was quite advanced.”

Myth 3: The treatment of varicose veins is just a cosmetic fix and unless the leg hurts, there really is no reason other than vanity to seek repair.

The myth that varicose veins don’t need to be treated unless they are painful is not only incorrect it is often dangerous to the patient’s health.

Varicose veins are a sign of an important vascular insufficiency and compromise. Like arterial hypertension and dental cavities, the insidious nature of chronic venous hypertension is progressively destructive and should be treated before pain and other symptoms occur.

Myth 6: Vein disease is a sign of aging and only occurs in older adults.

Increasing age is a slight risk factor for varicose veins because of wear and tear on the vein valves that regulate blood flow. Patients certainly perceive it as more common as they age because the disease has had longer to make its symptoms known and is more advanced and has done more damage.

Dr. Rivard adds: “Craig is a good example of one of the widely-held myths about vein disease— that it primarily is a concern of older adults.

This is just not the case. Take a look below at six common myths about vein disease.”

SIX MYTHS ABOUT VEIN DISEASE Myth 1: Once varicose or spider veins have been repaired, they will always re-occur.

The recurrence of varicose veins after treatment is a myth born from the prior inadequate care.

Treatment methods in the past, while done with best intentions, actually caused recurrence of varicose veins. With the onset of Board Certification, methods of treatment have become more organized, safer and more efficient. Now recurrence rates should be below 5%.

Myth 2: It is best to wait until a woman has had all her pregnancies to deal with varicose and spider veins.

While there is some historical experience underlying this myth, it was also born out of the fact that prior treatments for varicose veins were often inadequate and frequently led to recurrence. New treatments, however, are safe, virtually painless and, more than 98% of the time, lead to permanent resolution of varicose veins at their source.

The new paradigm ought to be that obstetric physicians send their patients for venous insufficiency evaluation prior to their getting pregnant.

Myth 5: So-called “vein stripping” is the best way to treat varicose veins.

Outdated techniques such as vein stripping to treat varicose veins are sadly still being used by some even today. This is a two-hour inpatient surgical procedure requiring anesthesia. Even more troubling, vein stripping works less than half the time, is painful, fraught with complications and often makes matters worse. Ultrasound guided laser therapy by a Board Certified Phlebologist is over 98% effective for virtually painlessly and permanently treating varicose veins with little if any side effects in an outpatient setting.

However, the primary cause of vein disease, accounting for about 80% of cases, is hereditary.

It is not at all unusual to find varicose veins in young adults and even teenagers.

Myth 4: Because the treatment of varicose veins is cosmetic, insurance does not cover the expense.

While the treatment of spider veins is often considered a vanity or cosmetic issue and is not covered by insurance, the treatment of varicose veins is not a cosmetic issue and is almost always covered by insurance. In our experience, the initial diagnostic evaluation for venous disease is covered by insurance more than 90% of the time as well. The insurance coverage is determined by a qualified phlebologist using ultrasonography testing the size and function/dysfunction of the veins in the legs.

School Food Tasteful education offered at local college

K

ayla Plasky, of Wonder Lake always has loved food and cooking, so it made perfect sense to pursue a career in the culinary industry.

“Food is a happy thing for me. I always enjoyed the food and cooking classes in school, so I decided to go for it,” she says.

Currently a student in the Culinary Management program at McHenry County College, she is focused on baking and pastry.

Her goal is to someday own a bakery.

“I love cake because you can do so much with it. I love decorating them, doing the piping and borders and all of the special detail,” she says.

Her favorite project so far has been a Batman and Robin-themed cake with an outline of the Gotham City skyline, which she created for one of her MCC classes. The best part? She got to eat her assignment. “It was a vanilla cake with raspberry filling and Italian buttercream frosting,” she says. “It was fabulous.”

The goal of the MCC program is to help students like Kayla gain the tools they need to launch their culinary careers or prepare for the next step in their education.

“Our philosophy is to make the students feel comfortable in the kitchen and capable of doing the basic work of a chef. They learn to identify and use the equipment, and the methods and techniques of cooking,” says Paul Tinaglia, Department Chair of Culinary Management.

Both the certifications and associates degrees focus on sustainable food preparation, handling, sanitization, food and equipment safety as well as business principles. In addition to culinary skills classes, students working toward their associates degree in culinary management also take courses in Restaurant Operations, International Cuisine, Menu Planning, Purchasing and more.

with eight workstations. “It’s state-of-theart, with very nice equipment comparable to what they’ll find in restaurant kitchens so it’s very applicable. The students get hands-on experience in how to use the equipment and keep it clean, so when they get out in the real world, they’ll know what to do,” he says.

Plasky hopes to complete her Culinary Management Associates degree in 12-18 months. “The instructors are great and have taught me so much. You get to learn all the skills and make awesome food,” she says.

Students also have the opportunity to put their skills to work at Slainte, an on-campus fine dining restaurant. Pronounced “Slawn-cha,” the word means “to good health.”

“It’s a Scottish word — because we’re the McHenry County College Scots — and it’s a toast that refers to living well and enjoying life, all positive things,” Tinaglia DINING & ENTERTAINING

Where is the best good old American burger?

The best place to eat at the bar? The best nightlife? There are a million ways to use this guide. Don’t worry if you didn’t save it. You can go online and get it whenever you need.

For me, you can bet I will be visiting all of the new places that won awards. I can’t wait to go to the Rusty Nail in Ringwood. I’ve driven past that place so many times and never stopped in, thought about it but never stopped. I have to visit the Chain O Lakes Brewing Company and Happy Jacks Sandwich Shop. There are plenty of new places to try and plenty of previous winners to revisit.

DaBaffone Italian Restaurant, as you know, is one of my favorite places, and definitely the break out winner this year, taking honors in eight or nine categories. It doesn’t surprise me as the Giangrande family (Camille and Dominick) are two great restauranteurs, always innovating and improving their operation. I think they may have tied legendary winner John Pilafas this year from Benedict’s La Strata, which is the winningest restaurant in the history of Best of the Fox. Again this year, he pulled down eight or nine awards. He sat at my bar the other night telling me of new improvements he was making in his kitchen and operation. These are two restaurants constantly working to improve and innovate, and you can bet I will keep frequenting them.

My personal thanks for voting the new Crystal Lake Rib House as the Best BBQ and the Best Ribs in the county. It motivates us to keep subscribing to the never ending always improving work ethic.

Restaurant Updates: Speaking of legendary operators, the fabulous Perry Moy of Plum Garden — a winner every year — has completed his recent expansion and doubled the size of his restaurant.

Knowing Perry you can bet he will keep the place packed. His homemade egg rolls are to die for.

Pizza. The new location on Main Street in Crystal Lake has increased capacity and a dining room and the Best New York Style Pizza there is. They too were awarded for their Pizza in the Best of the Fox Awards. They have plenty of parking behind the new location so no worries about finding a spot. The original location is still open on weekends. The best part of the new spot is they have slices all day now so I can pop in anytime grab a slice and go.

New Resource: In the specialty food category my friend Lori Sherry was honored for her Olive Tap store on Williams street in downtown Crystal Lake.

If you are a “foodie” you likely already have been there. If you haven’t, you need to go. She is the absolute best source for imported and domestic olive oils, ranging from traditional extra virgin to extreme heat jalapeno. She also stocks imported traditional style balsamic vinegars (you have to try the Chocolate). The best part of her store is you can taste every single variety she stocks. Get your friends together or spend time alone there sampling … but get there. Your guests and family will be glad you did.

Sipping up A trip through suburban wine country

I love wine.

I got hooked nearly 20 years ago, when a very good friend had her wedding in California's Mendocino wine region. I fell for the entire experience ... the little shops and tasting rooms, the small, family run vineyards, the stories told by owners and winemakers as they poured you a glass. And of course the wine itself, each with its own distinct personality, some sweet and some sharp — like meeting a new friend with every tasting.

But California is a haul, and I decided to find out more about all the wine that was being made right here, in our own region. The Northern Illinois Wine Trail is quite a bit larger than you may imagine encompassing more than 30 wineries and vineyards across three loops, from Galena to Lake Michigan. But my journey would hit some suburban locales, all a decent afternoon trip from anywhere in the Chicago area.

tFIrst Stop: Prairie State Winery 217 W Main Street, Genoa Located in the rural western town of Genoa, Prairie State Winery is the oldest winery in DeKalb County, and the 16th in Illinois, started in 1998 by a pair of former teachers from Lake Park High School in Addison. This quaint spot, like its sister location in Sycamore, offers a variety of red, white and fruit wines in its tasting room, all made in Genoa. A sweet favorite, the Prairie Dog Red, is a lush treat, like a bowl of fresh picked berries in the summer sun. If you find yourself near DeKalb in the evening, check out the Friday night Wine Downs, featuring live music, local food, trivia and more.

Sundays offer creative wine cocktails, including Bloody Mary’s made with vino, and wine-based mimosas in a new outdoor wine garden.

tStop two: Acquaviva in Maple Park 47W614 Route 38, Maple Park An Italian winemaker landed in this western Kane village and proceeded to capture the hearts of local wine enthusiasts when he planted a 40-acre vineyard right on Rt. 38. Today, Acquaviva is a destination — a combination of restaurant, vineyard, winery, and future bed and breakfast. The gorgeous grounds make you forget you are just minutes from the suburban highways. Known for rich and complex wines, Acquaviva's deep reds were my favorite, boasting notes of chocolate, spice, pepper and plum for a lush combination. A popular treat, the Christmas Wine in sold year round. It's a smooth red with spices added, served warm. I can hardly wait for early fall, as it will be a great addition to an evening around the fire pit with friends. In the tasting room, you can enjoy six tastings for six dollars, or even sign up for a winery tour, called “wine 101” by appointment. Delicious cold plates are available to complement your wine selections.

uStop three: Fox Valley Winery in Oswego 5600 Route 34, Oswego Fifteen different varieties are produced at this family-run winery, much of it from grapes grown at the vineyard in Sheridan, Illinois. Owner and winemaker Mike Faltz started the winery with his father, when their homespun hobby outgrew the kitchen, the basement and the garage. The signature wines at Fox Valley are the Red, White and Blue. Red is a concord — light and grapey.

White is a Moscato-style made with Niagra grapes. Blue is a fruit wine, rich with blackberry and blueberry, like liquid jam in a glass. You can enjoy three complimentary tastings in their Oswego location and a tour of the winery.

I also received a lesson about boxed wine, something Mike stands by 100 percent, citing advantages over the bottle which include: no oxygen (they pour from the bottom) no sunlight, no cork (a chemical in cork can alter the taste of the wine) and a more renewable form of packaging. The result is a wine that tastes the same from the first glass to the last, open up to six weeks in the fridge (not that it would ever last that long.)

tStop four: Lynfred Winery in Roselle 15 South Roselle Road The granddaddy of suburban wine making, Lynfred Winery is a standout, the first of its kind in the area, and still one of the best wine experiences around, 35 years after opening. While original owners Lyn and Fred Koehler have since passed, their tradition of wine and hospitality continues to this day, thanks to the perseverance of award-winning Chilean winemakers and a constant following of local clientele. The tasting room, located in an old-World styled vine covered estate home, is impressive, as is the entire hardwood-laden facility.

Not a detail was missed, from ornate oak carvings above the wine bar, to the patron-friendly wine cellar, and the intricately decorated staterooms of its bed and breakfast. Christina Anderson took me on a tour of the whole estate, and impressed doesn’t cover it. But even more impressive is the wine. More than 100 varieties are made here, with grapes that arrive from vineyards across the nation. Tastings are $7, and they offer 8-10 wines on the tasting menu each month. Popular choices are the Vin de City Red and Vin de City White, but Christina described the winery’s fruit wines as having a “cult-like following,” available in 15 varieties, from apple to rhubarb. (The mango wine was exactly as it was described — Hawaii in a glass.) Enjoy your tasting with fruit, meats, or a delicious flatbread pizza on the wraparound porch.

pStop five: Coopers Hawk Winery and Restaurant, Naperville 1740 Freedom Drive When talking about Illinois winemaking, Cooper’s Hawk is most certainly the youngster on the trail. But don’t discount youth, or you’ll be missing out on a great wine experience. When wine lovers Tim and Dana McEnery opened the first Cooper’s Hawk Winery & Restaurant in 2005 in Orland Park, they introduced Illinois to its first and only winery and restaurant under one roof. Now the company has six Illinois locations, each a satisfying combination of Napa-style tasting room and casual contemporary restaurant. All the wine at Cooper’s Hawk is made in west suburban Countryside. A tasting includes seven to eight different wines for about $7, and offered varieties vary monthly. Three menus are offered — a standard, a sweet and a lux. Event coordinator Maddi Dill walked me through the menu, which included a velvety port called NightJar, a club-exclusive Tempranillo which was surprisingly light on the palate, and a truly delectable ice wine, a dessert all on its own. More than 50 varieties are availble for sale at any given time. Stay for lunch or dinner, or just a bite in the bar, and you can enjoy the Winemaker’s Blend, a Bordeauxstyle wine available only by the glass inside the restaurant. Speaking of food, Winemaker Rob Warren works in constant harmony with the executive chefs, to create wine that complements the food, and vice-versa. Each menu item comes with the perfect wine suggestion.

to have such a wide array of wineries and winemakers right here in our communities, atthe-ready for a great afternoon away. But if you find you have a little more time, I encourage you to venture to the Northwest Loop of the Wine Trail, and experience wine tasting against the landscape of rolling hills and lush green valleys that stretch along the Mississippi. One of my personal favorites is Galena Cellars Vineyard and Winery. I never had a more hospitable visit.

Powers opened Taste This Sandwich and Coffee Bar in June, after spending the last three months transforming the former Café Firefly restaurant into an outdoor and indoor lunch stop.

She spent most of her professional career in restaurants, working at both corporate and small, family-owned places throughout the Chicago area. Although never an owner, Powers said she has food management experience that customers will admire.

The latest restaurant in downtown Algonquin offers deli-style sandwiches that feature Boar’s Head meat, scones, freshly brewed coffee and a host of other beverages.

The shop is located just south of Routes 31 and 62 at 301 S. Main St.

“I put my heart into [Taste This Sandwich], and I’ve got great people working for me,” Powers said. “This is my passion.”

“The menu is quite eclectic,” Powers said.

“Fresh-quality ingredients is what we are shooting for.”

Going forward, Powers said she hopes her food and service will make Taste This Sandwich a fixture in downtown Algonquin.

here is a lot that goes on from the moment grapes are picked from the vine to the instant the cork is popped in a wine bottle, and whether it is a 10-year-old Cabernet or a one-year-old bottle of Moscato, storage is a key factor in keeping that bottle of wine fresh.

Pam Kopp from Lakeshore Wine Cellars is sharing her wine storage tips to help keep your collection tasting great until the very last drop is finished.

Basic Storage Wine is a very finicky beverage, and there are many tricks and tips to keep it fresh 22 | JULY 2014 | MCHENRY COUNTY MAGAZINE

while storing it for extensive periods of time.

Climate-controlled wine cellars are the most ideal way to store wine, but if that’s not an option, there are some basic helpful tips to maintain its freshness.

For starters, light and wine do not mix. The sunlight can spoil the wine and cause it to become undrinkable.

Most people opt to store wines in basements and cool, dark places because throughout history, wines have been preserved in caves and cellars. One other positive to basement storage is that there are generally limited windows, which also helps preserve the wine.

“Light is not good for the wine, so when we build a cellar, we try to enclose the room so it’s like the inside of a refrigerator,” Kopp says.

“When there’s a window it’s like the seal is broken.”

Storing wine on its side or upside down is also ideal, because the wine is touching the cork, which keeps the cork moist and prevents it from dying out. If the cork dries out, air can enter the bottle and spoil the wine. Therefore, after opening a bottle of wine, it is best to HOME & LIFESTYLE

finish it within the week for the best taste.

Climate Control One of the main reasons most people opt to install wine cellars or utilize special wine refrigerators are because it’s easier to regulate climate and temperature controls.

“Insulation, vapor barriers and humidity all play an important roles in building a wine cellar,” Kopp says.

Regular air conditioning units won’t cut it for wine cellars, as they tend to dry out the corks and damage the wine. Wine fridge units built specifically for storing vino keep the humidity inside the cellar and ensure the corks stay moist for proper storage.

“You really want to choose a unit specific for wine cellar because humidity is very important,” she adds. “The most important thing is that it will maintain wine at a steady temp.”

Kopp sets most of her wine cellars in the range of 55-58 degrees for both reds and whites.

and if desired, white wines can be chilled even further prior to serving.

Kopp has been designing personalized wine cellars for 13 years for venues as large as Binny’s to pantries-turned-wine cellars in homes.

“The average residential wine cellar with a chiller holds right around 1,000 bottles of wine, but we can do as little as a hundred,” she says. “We can turn closets into cellars or make a beautiful cellar in a large, dedicated space.”

Depending on the amount of space available, Kopp can design pretty much anything that a homeowner wants. Each wine cellar is catered to individual needs, and after taking

care of the necessities like the vapor barrier and insulation; homeowners can help pick out the decorative ends of things like racking, flooring and the door.

“The cost really depends on so many things, including how many bottles, what structure

is already built and whether the cellar is there to entertain or simply to store wine,” she adds.

“We can design a wine cellar to fit any budget.”

The Bicker Battle

I

keep reminding myself that I am going to make the most of this summer. (I am going to make the most of this summer. I am going to make the most of this summer.)

I promised I would soak up every moment with my kids because, come fall, they will both be in school all day. I have been documenting each day on Facebook with #100HappyDaysofSummer. I have worked tirelessly to plan fun activities to keep them occupied, entertained and living life. I’m trying to stop and notice them, enjoy them and live in “the now.” Despite my best efforts, there are days I want to ditch my minivan on the side of the road.

Here’s the thing: They. Will. Not. Stop.

Arguing. They honestly sound like an old married couple most of the time.

Not too long after my daughter got out of school, somewhere around day 15 of 100, I remembered why I was slightly anxious for her to go back last fall. Even though my son still hadn’t started, at least I got a break from the constant bickering between the 42 | JULY 2014 | MCHENRY COUNTY MAGAZINE

two of them. It starts the minute they wake up in the morning and goes on until the last second of each day as they are falling asleep.

I finally have gotten to the point where I told them that if they don’t stop the bickering, I am going to be forced to go and get a full-time job and put them in summer camp all day.

My resident debaters can find just about anything argument-worthy, starting with television rights. Madelyn wants Disney Channel and Colin want Nickelodeon.

Colin is sitting too close to her at the breakfast bar and when he moves over he’s blocking the TV. Madelyn wants to sit in the seat behind me in the van, but Colin decides he needs to sit there to be closer to me. We are going to lunch and Colin wants McDonald’s and Madelyn wants Wendy’s. We are listening to the radio and one wants Kidz Bop and the other wants to watch a DVD. They are playing with some random Legos sitting on the kitchen table and argue over who made something out of them first. We have roughly four bazillion Legos and they choose these five random Legos to argue over.

We are going to the park and one wants to go to the park in our neighborhood and the other one wants to go to the one by our old house. We finally come to an agreement on the locale, only to discover one wants me mchenrycountymagazine.com

Madelyn is the “little mommy,� correcting everything Colin does and says and tries to keep him in line. Colin just likes to get a rise out of his sister (like all brothers do.)

McHenry County Fair offers local homegrown entertainment

By Elizabeth Harmon hough McHenry County is one of Illinois’ fastest growing suburban areas, agriculture remains an important part of its local identity.

The 65th annual McHenry County Fair, which runs July 30 through August 3 at the McHenry County Fair Grounds in Woodstock, will showcase the area’s agriculture with this year’s theme, “Local Famers, Local Foods.”

“We try to have a theme each year to base our programs and events around,” said Tom Linneman, McHenry County Fair Board treasurer. “With all the farmers markets in the area and the interest people have in local food, we want to help them know more about where their food comes from and support the local farmers.”

An exhibit in the fairground’s Building E will

educate fairgoers about the area’s agricultural heritage and current industry. “We’ve been producing food locally for 178 years and still do today,” said Rich Tobiasz, a Fair Board member representing Burton Township.

McHenry County farms produce milk, beef, pork, goat’s milk, chickens, and many vegetables and fruits. “We have orchards and even a few vineyards so there’s a lot of different stuff produced here,” Tobiasz said.

Behind the building is a vegetable garden featuring corn, squash, melons, carrots and tomatoes. “People can see what’s grown here or what you could grow yourself,” said Tobiasz, who also is a Master Gardener.

Participating exhibit partners include the Fair Board, the University of Illinois Extension, the McHenry County Farm Bureau, Historical Society, Conservation District, and Health Department and the Environmental Defenders of McHenry County.

In addition, this year’s fair will introduce a recycling program, thanks to a $5,000 McHenry County Community Foundation grant. Local 4H clubs have designed recycling containers to collect glass, plastic, cardboard, aluminum and Styrofoam.

Volunteers on bicyclecarts will transport trash to a tent, where volunteers from local Scout troops, school service groups and church groups will sort it.

McHenry County has close to 1,000 4H members and the clubs play an integral part in the fair. “The kids will exhibit projects they’ve worked on all year, and the clubs make improvements to the fairgrounds

technology, woodworking, cooking, fabrics, art and photography projects, as well as livestock. “We have sheep, swine, goats, cattle, horses, rabbits, and poultry,” said Heidtke.

There also are competitions for dogs and cats. “With dogs, they’re exhibiting obedience and showmanship and with cats, it’s animal care,” she said.

The Miss McHenry County pageant, July 30 at the Grandstand, will feature young women representing each community in McHenry County. Open to contestants 1621, the competition features pubic speaking, a four-minute interview with judges, swimsuit and evening gown competition. Top prize is a $2,000 scholarship. The first runnerup receives a $750 scholarship, and a $250 scholarship is awarded to the second runnerup.

Co-chairman Linda Zielinski of Huntley says her favorite part of being involved with the pageant is watching the young contestants flourish. “Some are so shy when they come in, but after weeks of work, they’re so much more confident. We’ve had girls come back and say that being in the pageant has helped them in college and their careers,” she said.

Other Grandstand shows include Thursday night’s Antique Tractor Pull, which starts with a “Salute to Veterans.”

“The tractors parade around as veteran’s names are read, and then they all line up and rev their engines in a 21-tractor salute. It’s a neat way to honor those who’ve given their lives in service over the years,” said Linneman.

Friday evening’s Motocross event features riders from the area and the region. More tractor pulls are scheduled for Saturday morning and evening. Sunday night the fair closes with the Demolition Derby. “It’s always a fan favorite,” said Linneman.

Admission to the Miss McHenry County Pageant, and the Thursday night Salute to Veterans/Antique Tractor Pull is free with fair admission, but there are separate charges for other Grandstand shows.

This year’s fair also will feature a great selection of rides.

“We’ll have the traditional rides and in

kiddie-land we have a few new rides that are so flashy and pretty. Mom and dad can also ride most of them,” said Pat Skinner, owner of Skinner Amusements, Inc. of Marengo, which has been the Fair’s ride and concession provider since 1978.

The midway also will feature favorite thrill rides and fair foods. Unlimited ride wristbands will be available Wednesday through Friday, from 1 to 5 p.m., for $17 each.

An over-21 entertainment pavilion and beer garden will feature live music by favorite local bands, such as Hans and the Homes and Infinity on Friday night, Western Sky and Suburban Cowboys on Saturday. Admission is free with fair admission.

McHenry County Fair tickets are sold at the fairground gate and are $7 for adults, $3 for kids, ages 8-12 and seniors 65 and over.

Gourmet With high-quality nutrient-rich foods, there’s no shortage of delicious options

Among those good-for-you foods that people are turning to are things like extra virgin olive oil, red wine (in moderation), wild salmon and other wild-caught fish, Greek yogurt, organic and/or all natural meats and poultry, dark chocolate and quinoa.

Elaine Whalen, department chair and instructor in the health and fitness education department at McHenry County College, says everyone should have some olive oil every day. She deems it an excellent source of fighting oxidation, inflammation, free radicals and more.

When it comes to eating healthier, oftentimes people think you have to sacrifice taste and give up all treats.

However, with the ready availability of high quality “foodie” foods, and a recent trend of eating more natural, organic and locally sourced foods, options for healthier eating are seemingly endless.

In fact, Whalen says the majority of what we eat should be plant-based, which could help slow down the development of chronic diseases and even help people age well.

Whalen adds that while fish is a good thing to incorporate into a diet, it is important to avoid farm-raised fish, as wild-caught fish is more natural.

“Basically all fish is really good for you because it has high levels of the good fats in it,” Whalen says.

She also advises red meat is not needed daily. In fact, she says, incorporating things like beans, legumes and grains, like quinoa, into your diet can be just as satisfying and better for your overall health.

In order to avoid feeling like you are “suffering” to eat healthy, Whalen advises getting into the kitchen to experiment with your cooking. She says to use things like olive oils, garlic, herbs and spices to make for more flavorful dishes.

Whalen noted that with 70 percent of Americans categorized as overweight or obese and chronic diseases becoming more and more prevalent, it is a great move that people seem to be paying more attention to their food and nutrition.

“I think in some ways it’s a good thing because people are getting more educated about where their food comes from,” she says.

Making healthier choices doesn’t have to be hard, either. There are plenty of sources out there to help people make better decisions.

For example, according to the Mayo Clinic, red wine, in moderation, has long been thought of as heart healthy. The alcohol and certain substances in red wine may help prevent heart disease by increasing levels of high-density lipoprotein (HDL) cholesterol (the “good” cholesterol) and protecting against artery damage.

A couple good ways to work red wine into your diet include the use of red wine vinegar salad dressings and reducing red wine into sauces.

The Mayo Clinic also advises that chocolate and its main ingredient, cocoa, appear to reduce risk factors for heart disease.

Flavanols in cocoa beans have antioxidant effects that reduce cell damage implicated in heart disease. Flavanols, which are more prevalent in dark chocolate than in milk or white chocolate, also help lower blood pressure and improve vascular function.

brand of Greek yogurt, the popularity of which has been on the rise as of late.

According to WebMD, while all yogurts are excellent sources of calcium, potassium, protein, zinc and vitamins B6 and B12, what distinguishes Greek yogurt is its thicker, creamier texture because the liquid whey is strained out. It also contains probiotic cultures and is lower in lactose and has twice the protein content of regular yogurts.

While eating yogurt as a snack or side is appealing to some, Greek yogurt also can be used as a substitute for sour cream. adno=0285115

The Whole Grains Council touts quinoa’s nutritional qualities, including its high protein content, amino acid balance and vitamin E content. WebMD called the Peruvian seed both trendy and tasty, noting it as a great alternative for rice and salads among its uses.

Paul Tinaglia, program chair for the culinary department at McHenry County College, says eating healthier doesn’t have to mean giving up everything that isn’t the best for you, simply eat less of those things.

He added there are also lots of ways to go aside from relying on meat, like turning to a nice portabella mushroom, a substantial vegetable, as a main course. Tinaglia also advocates for replacing French fries and loaded baked potatoes with sides like quinoa instead.

Tinaglia also believes healthy eating habits are built at home. He advises families to make a meal together and learn about what is really in the foods they are eating.

ack pain affects eight out of 10 people at some point during their lives. Back pain ranges from a constant ache to sharp shooting pain, and often includes a myriad of symptoms. Acute back pain comes on suddenly and usually lasts from a few days to a few weeks. Back pain is referred to as chronic if it lasts for more than three months.

Because chronic back pain can limit everyday activities, it also can affect relationships with friends, family and co-workers. Pain itself, and the fear of pain, can causes the avoidance of everyday tasks, occupational demands and recreation. Margo Laeym at Studio 2015 in Woodstock and Carol Chrisman at the Black Orchid Boutique in McHenry both have keen insight into this necessity and have the shops to back it up.

When comparing eras Laeym commented, “In today’s fashion there really isn’t a difference between day and night looks. Today’s modern woman tends to change accessories such as shoes, hands bags, jewelry to enhance her style.”

Laeym recalled her grandmother, who would change her entire dress and not simply the accessories: “In the ’60s there was a much more distinct difference between kinds of jewelry and women would have a daytime watch and a cocktail watch (with diamonds). Furthermore, they would have sets of jewelry where their earrings, necklace, and bracelet would all match and be made by the same manufacturer. July 11 Project Two- Shifted to 2nd Friday due to the Independence Day holiday Project Two is a local music group that specializes in the performance of Broadway musical songs with choreography and a live band. The group consists of more than fifteen McHenry County residents, and is directed by Dylan Ladd. Dylan went to see his very first musical while in seventh grade and fell in love with musical theater.

By high school he had established the Jersey Kids, an entirely student run music group dedicated to the sound of the Jersey Boys. Project Two is his second endeavor and is sure to please music lovers of all kinds.
