Dr. Stephen Rivard, medical director of IVS, recalls: “Craig’s vein disease, like that of many others in our practice, started in his late teens and, by the time I saw him, the disease was quite advanced.”

Myth 3: The treatment of varicose veins is just a cosmetic fix and unless the leg hurts, there really is no reason other than vanity to seek repair.

The myth that varicose veins don’t need to be treated unless they are painful is not only incorrect it is often dangerous to the patient’s health.

Varicose veins are a sign of an important vascular insufficiency and compromise. Like arterial hypertension and dental cavities, the insidious nature of chronic venous hypertension is progressively destructive and should be treated before pain and other symptoms occur.

Myth 6: Vein disease is a sign of aging and only occurs in older adults.

Increasing age is a slight risk factor for varicose veins because of wear and tear on the vein valves that regulate blood flow. Patients certainly perceive it as more common as they age because the disease has had longer to make its symptoms known and is more advanced and has done more damage.

Dr. Rivard adds: “Craig is a good example of one of the widely-held myths about vein disease— that it primarily is a concern of older adults.

This is just not the case. Take a look below at six common myths about vein disease.”

SIX MYTHS ABOUT VEIN DISEASE Myth 1: Once varicose or spider veins have been repaired, they will always re-occur.

The recurrence of varicose veins after treatment is a myth born from the prior inadequate care.

Treatment methods in the past, while done with best intentions, actually caused recurrence of varicose veins. With the onset of Board Certification, methods of treatment have become more organized, safer and more efficient. Now recurrence rates should be below 5%.

Myth 2: It is best to wait until a woman has had all her pregnancies to deal with varicose and spider veins.

While there is some historical experience underlying this myth, it was also born out of the fact that prior treatments for varicose veins were often inadequate and frequently led to recurrence. New treatments, however, are safe, virtually painless and, more than 98% of the time, lead to permanent resolution of varicose veins at their source.

The new paradigm ought to be that obstetric physicians send their patients for venous insufficiency evaluation prior to their getting pregnant.

Myth 5: So-called “vein stripping” is the best way to treat varicose veins.

Outdated techniques such as vein stripping to treat varicose veins are sadly still being used by some even today. This is a two-hour inpatient surgical procedure requiring anesthesia. Even more troubling, vein stripping works less than half the time, is painful, fraught with complications and often makes matters worse. Ultrasound guided laser therapy by a Board Certified Phlebologist is over 98% effective for virtually painlessly and permanently treating varicose veins with little if any side effects in an outpatient setting.

However, the primary cause of vein disease, accounting for about 80% of cases, is hereditary.

It is not at all unusual to find varicose veins in young adults and even teenagers.

Myth 4: Because the treatment of varicose veins is cosmetic, insurance does not cover the expense.

While the treatment of spider veins is often considered a vanity or cosmetic issue and is not covered by insurance, the treatment of varicose veins is not a cosmetic issue and is almost always covered by insurance. In our experience, the initial diagnostic evaluation for venous disease is covered by insurance more than 90% of the time as well. The insurance coverage is determined by a qualified phlebologist using ultrasonography testing the size and function/dysfunction of the veins in the legs.

Finding Balance Entrepreneur learned to embrace, enjoy her success | By ELIZABETH HARMON As a young woman in a male-dominated field, Kathleen Caldwell’s drive to succeed brought an exciting career, financial reward … and a cardiacrelated wake-up call, at the age of 40.

In 2000, Caldwell, now a Woodstock resident and entrepreneur, was a technology sales executive working brutal hours and traveling constantly. “I was away from family, lacked a strong support network and wasn’t taking good care of myself. My job had become my life,” Caldwell said That changed on a Sunday morning, when Caldwell experienced what she thought was a heart attack.

In the cardiac intensive care unit at a downtown Chicago hospital, she was diagnosed with Atrial Fibrillation, a fast and irregular heartbeat triggered by stress and other factors, and advised by doctors to slow down.

Caldwell took the advice, and in the process, discovered a more meaningful approach to business and personal success.

Today, she is the president and chief business strategist of Caldwell Consulting Group, an author, speaker and certified coach.

Her book, “Blueprint for Success,” includes business lessons from Caldwell, Dr. Stephen R. Covey, Ken Blanchard and 13 other authors. Her articles have appeared in publications that include the McHenry County Business Journal, and the Northwest Herald.

She is in the process of launching a nationally syndicated column entitled, “Success: Love Your Business, Love Your Body, Love Your Life.”

She’s also working to become a certified health coach, personal trainer, heart-centered hypnotherapist, and she’s run two marathons.

On June 25, Caldwell will be the keynote speaker at the Suburban Life — Lake County Women’s Power Lunch in Barrington. Her presentation, “The Art of Balance — Real World Strategies to Live the life YOU Love!” will offer insights and ideas to help women find their personal definition of success.

sales. “The computer culture in the early ’80s was male dominated and I was the only woman out of hundreds of sales reps,” she said.

A native of the Chicago’s South Side and Aurora, Caldwell was the oldest of four, and as a young girl discovered a knack for sales and business. “I had lemonade stands, I was always the top seller for Girl Scout cookies. There was a lot of construction in our neighborhood, and my brother and I had a business selling soft drinks to the construction workers. It was fun and we actually made money,” she said.

The experience was challenging, and pushed her to excel. “In one sales contest, out of the top reps in the state of Florida, I was number one. They were so sure a man was going to win, that the prize was this big, brown, clunky briefcase.”

Her father was an entrepreneur and worked in sales, but it was his interest in becoming a lawyer that influenced Kathleen’s early career choice.

She graduated early from high school and attended Mundelein College, now Loyola. When her family relocated to Florida, she followed a year later and enrolled at Florida State University, where she studied history, international affairs and business.

But as she prepared for law school entrance exams, she began to question her direction. “In the end, I led myself astray, trying to fulfill a dream that was my father’s, but not aligned with my gifts and talents,” she said It was a confusing, difficult time, she recalls. “I didn’t want to disappoint my parents but I didn’t know what I wanted to do.”

A sales career was a logic choice. “I loved connecting with people. It was fun for me,” she said.

Through the 1990s, Caldwell continued her rise in technology until her hospitalization in 2000. “I realized that all I was doing was working, and I didn’t have a lot of love in my life, so I made a decision to change.”

Six months of soul-searching led her in the direction of coaching. She enrolled in a certification program through Coach University and slowly worked her plan to transition into a full time coaching business.

In 2005, she founded Caldwell Consulting Group, and has worked with a diverse roster of companies, from Kraft Foods to Bag Makers in Union.

One of Caldwell’s newest passions is expanding her WHEE Institute, which stands for Wealthy, Healthy, Energetic, Edge, and is aimed at helping business people rediscover the excitement and joy that can get lost amid too much busyness.

W r o e rld t a W As summer arrives, the waterways beckon Photos by H. Rick Bamman | By STEPHANIE KOHL Boating is more than an activity, it’s a lifestyle — and a popular lifestyle at that.

The Fox Waterway Agency, which includes 15 lakes, three miles of the Fox River, as well as various tributaries and channels, is the busiest recreational waterway in the United States in the number of boats per acre.

According to Ron Barker, executive director of the Fox Waterway Agency, 23,000 annual permits and 3,500 day passes are sold on average each boating season, from early May through the end of October, with the busiest part of the season in the summer months of June, July and August.

“Our lakes and rivers are multi-use,” Barker said. “People use them for pleasure boating,

swimming, skiing, wakeboarding, tubing, fishing, canoeing and kayaking.”

Barker said it is a relaxing lifestyle to be out on the water and be within nature.

“The waterway community is a very close-knit, friendly community, [people] will go out of their way to help each other along the water,” Barker said.

He also cites the number of amenities along the waterway as a huge draw. There are a number of restaurants, parks, marinas and other places to dock along the waterway.

Among the waterway community is Miller’s Dream Marine, 1208 N. Riverside Drive, McHenry. Owned by Dave Miller, his focus is on boat service and he does pretty much everything but sell boats and other watercraft.

“One of the things about boating is it’s a family sport,” Miller said. “We have families that go out there and their infants are out there boating with them.”

Miller said while the waterways are busy on the weekend with people using their watercraft, his weekdays are just as busy, repairing watercraft to get it back on the water.

When it comes to problems with your watercraft, Miller said there are no stupid questions.

“If there’s a little something out of the ordinary, ask someone,” he said. “Take it in to get looked at.”

The waters are policed by the conservation police officers of the Illinois Department of Natural Resources, the Lake County Marine Unit, the McHenry County Marine Unit and the Coast Guard.

There is plenty of fun to be had on the waterways, like at Broken Oar, 614 Rawson Bridge Road, Port Barrington.

“We’re on the lower river and there’s 17 miles from lock to river,” said Bonnie Miske. “We are probably the largest (dining destination) on the lower river.”

Between the months of May and September, Broken Oar has 80 bands booked and boasts events every day of the week. Barker said the Fox Waterway draws from the Chicago area, Milwaukee and Rockford areas.

They cover the Fox River from the Wisconsin state line to the Algonquin dam.

With so many people sharing the waterways, Barker said it is important to be aware of your surroundings.

“The number one rule is everyone has to remember the captain is responsible for his boat and his passengers and a little courtesy goes a long way,” Barker said.

The Fox Waterway Agency is a regional body of government created by Illinois to manage the waterways of the Chain O’ Lakes and the Illinois Fox River. It was created to improve and maintain the Fox River and Chain O’ Lakes public waterway for recreational uses, to restore environmental quality, manage flooding, promote tourism and enhance the quality of life along the waterway for residents and users alike.

Nostalgia Awaits Local antique shops are havens for vintage and retro items

Debbie McArdle, who owns Iron Horse Antiques with her husband, Jim, has made a living dealing antiques since they started doing their own picking in 1978.

S

ome say that time travel is not real, but one step into any of the antique shops in the McHenry area will change that idea immediately. From vintage furniture to pre-Civil War items, many antique shops are bringing back the past in tangible form.

Although technically, the word “antique” refers only to items that are 100 years old or older, most antique stores include and feature items that are vintage, classic, or simply hard to find.

No matter the definition, there is history waiting at antique stores and vendors throughout McHenry County, as they make it easier to find valuable old items without traveling the back roads on your own.

There are many different antique dealers and shops in the area, and each vendor has its own personality and tastes that translates across the items they sell and showcase.

“I started buying antiques for myself because I couldn’t afford to buy new,” Debbie says. “I could buy antiques for less.”

When she began re-selling her items and getting new ones, her garage sales became famous and a business was born. Debbie doesn’t have her own shop, but rather, she sells and showcases items out of the Colonial Antique Mall in Woodstock, as well as at various shows, like the Fox Valley Antique Show. She also specializes in estate sales and appraisals.

Another haven for antiques as well as vintage and retro items in the area is the Volo Antique Malls, which first opened in 1992. The 30-acre

property features three antique malls with more than 300 dealers, as well as a Mercantile Mart, which boasts gifts, collectables, home furnishings and more. There also is an Auto Museum onsite to add to the nostalgia.

“When we first started, my dad sold some furniture, and one antique mall was pretty successful,” says Lisa Santiago, manager and daughter of owner Bill Grams. “We said, ‘we’ve got more buildings. Let’s just keep doing it.’”

Santiago’s mall rents spaces to dealers like the McArdles to sell their items, and the museum just adds to the old school environment.

TREASURES GALORE With so many different options from so many different vendors, there’s an infinite amount of treasures to be uncovered at antique shops and fairs. Whether you are in the market for a bigticket item, or simply want to browse what’s available, antique stores are the perfect place to find trinkets and treasures.

Each vendor usually has a specialty, which can range from jewelry and furniture to kitchen items from the ’60s. If buyers aren’t sure what direction to head, large malls like the Volo Antique Malls provide a wide array of options.

“The thing is if people are a fan of an era, they can be trapped in time here,” Santiago says.

“There are cool ornate carved pieces, strange taxidermy, autographs, a vinyl store, and of course, the auto museum. We have so many things for a variety of people.”

Santiago says she’s often amazed at what walks through the door at the antique mall, and often finds herself buying items.

“I bought a David Bowie picture from the mall that still had the tags on it,” she adds. “It’s just an ‘80s gem.”

Unlike Santiago, McArdle and her company focus on older items that have historical value to them, and her shows feature pre-1920s gems, while her store features pre-1950s items.

“I’m interested in why the item was made, where it was used, why it was necessary,” she says.

“When we sell something we always like to be able to tell the story and history behind the piece for our buyers.”

Currently, McArdle has a double disk music box of which she’s very proud, and she and husband Jim are heading out on the road soon to stock up on more merchandise.

“A lot of our really great items have just moved,” she says. “We’re in ‘restocking mode’ and are going to hit the road in a few weeks and head east.”

Each trip is a new adventure — much like going to an antique sale — they never know what they’re going to find.

Sky High Elite volleyball program celebrates 25 years in Crystal Lake

T

he passion for the game had always been there. The journey of Scott and Sherry Harris, owners of Sky High Volleyball headquartered in Crystal Lake, has always been about commitment to the integrity of volleyball.

Their journey started out in 1989 as a simple task — to establish a new tradition of volleyball excellence at McHenry County College. But like any other pursuit where a person’s career choice is far more a lifestyle than a job, vast improvements with McHenry County College’s program proved to be the Harris’ first steppingstone to a lifetime of outstanding volleyball achievement.

Sherry, a competitive-level player and the head coach at MCC, with Scott, became Sky High’s initial coaches. Scott was at the time still working full-time in downtown Chicago. The two took to helping with the multi-faceted aspects of 18 | JUNE 2014 | MCHENRY COUNTY MAGAZINE

running Sky High. Rapidly escalating to 16 teams, they were outgrowing the college when one of their volleyball parents and some investors created “Spikes,” a sports bar and grill with courts. Spikes was a fantastic venue, but Sky High quickly outgrew the space, reaching 25 teams and moving on to a retrofitted Crystal Lake warehouse. They put in six courts, had their own pro shop and caught their breath — for a second.

In 2005, Sky High won its first national championship. This first of many titles created more demand, and made it necessary to use other locations. Sky High now uses Prairie Stone in Hoffman Estates, Lake Barrington Field House and Adversity Volleyball Center in Vernon Hills. Now, the program commands the attention of local girls and high schools from Northern Illinois and Southern Wisconsin, as well as attracting major collegiate programs from the Pac Ten, Big Ten, Big East and more. In these first 25 years, approximately 97 percent of Sky High Junior Olympic

program girls desiring to continue volleyball in college have been able to get a scholarship — nearly 1,000 awarded thus far.

Winning more national championships created a burning desire for Sky High to host national tournaments. Despite the size of their facility, they did not have the ability to garnish any official endorsements as their courts were too close together, forcing coaches to coach from end lines rather than sidelines.

So in its anniversary year, Sky High has bumped up its square footage from 34,000 to 51,000 square feet at its newest facility, 215 Exchange Drive. Boasting eight fullsize courts, room for sideline coaching, a much larger pro shop and a large dining area for between-game snacks, the program already hosted its first tournament in May, the very week the teams moved in.

By the time June comes around, it’s hard to remember the dismal winter, when we all but forgot that trees had leaves and that grass required mowing. “June is a great time to plant everything, from peppers to cucumbers to perennials to impatiens, says Lori Harms, “especially this year when the weather has been so cold. Sunny, hot days and warmer nights are needed to warm up the soil temperature and we have not had that this season.

Speaking of children, Harms thinks that gardening is especially important exposure for little ones. “There is nothing more rewarding than to see the excitement in a child’s eyes when they see a tiny little plant emerge from the seed they have planted,� Hamms says. “It is also important that our children understand where food actually comes from, not just off the shelf at the store.�

And now that the warm weather is arriving, watering will become a concern again, but maybe not as much as folks believe. “If watered thoroughly and deeply enough, most plants grown in the ground need to be watered once a week, not daily or every other day as many people feel they need to do,� says Harms, “Water plants in the morning and not in the late afternoon or evening when you get home from work. Wet foliage and wet soil combined with lower night time temperatures create the perfect environment for diseases to run rampant, especially blight on tomatoes and mildew on impatiens and roses. Use a proper watering device that will soak down to the root system of the plant rather than the spray that would be used to wash the car; these simply wet the soil surface and give the gardener a false sense of watering. �

Get Happy!

I’m not gonna lie. Despite the fact the song, “Happy” by Pharrell has been played ad nauseam for the last six months, I still get a little giddy when it comes on the radio.

I recently celebrated my 37th birthday, and in the days leading up to it, decided to do a little countdown campaign on Facebook. I started 20 days out and posted “Top 20 Things I Love About Life” each day.

It started very simply, when I could hear my son laughing his trademark belly laugh from the other room. He was probably watching one of those stupid cartoons he loves so much.

I’m pretty sure they were discussing farts or poop, as those usually elicit the best guttural guffaws.

It was a sound that stopped me in my tracks and brought a grin to my face. It occurred to me that many sounds that stop me dead involve broken glass, vomiting or trips to the 30 | JUNE 2014 | MCHENRY COUNTY MAGAZINE

emergency room. For once, it was something downright pleasurable.

It got me to thinking — these are the things I need to cherish. Amidst all the chaos and catastrophe that involves raising two young children, there’s always something to make me happy.

I’ve tried over the last several years to embrace my role as a stay-at-home mom and not become the harried housewife. Shortly after

FAMILY IN FOCUS

I quit my job and decided to stay home, my husband I started doing “positives” before we went to bed at night. It was a way to overcome the stress of the kids, work, money, the house and life in general and find at least one positive thing that happened that day.

For a while happiness simply meant taking a shower. But it really helped put things in perspective for us.

We parlayed that same idea once the kids got older and had them tell us their favorite part of the day. Eventually, my husband and I gave up our “positives” and combined the two nightly routines so we could share our positives as a family.

My countdown fell along these same lines, or that of a gratitude journal, and gave me a great amount of joy. It forced me to really focus on the things I love about life, and I was sharing that joy with others. For a while, I thought maybe I was bragging or being annoying. mchenrycountymagazine.com

My “Top 20” were simple, and included spending time with my kids, my family, and my friends; celebrating my 10-year wedding anniversary; my job teaching group fitness classes; and running with my dog. I tried to include a picture and a short description of the significance of each one. I actually got positive feedback, not only through “likes” and comments, but also from people I would see at the store or the school who were following the countdown.

A few days before my birthday, I had read a book to the kids about the solar system and I never realized how drastically different the other planets are from Earth. Their temperature alone is so far above or below even our most severe conditions, making it nowhere near possible to sustain life. Yet here we are, on this perfect planet, with (generally speaking) perfect conditions for life to exist. And not just exist, but thrive. I think we too often lose sight of that.

In the end, stopping and enjoying the “now” helps significantly with my state of mind especially on days like the one recently when I thought my son had chocolate on his face, until (through a comedy of errors) I realized it wasn’t chocolate. It helps get through each tempter tantrum, each load of laundry, each spill in the minivan.

In 2004, the practice moved to 284 Memorial Court, Suite C. where it has stayed. Then, in late 2012, Dr. Kyle W. Heaton purchased the practice — and its good name — with the intention of continuing to provide quality dental services in a friendly and comfortable atmosphere.

And they think the “new” doctor is tops.

“Immediately after Dr. Heaton showed up everyone could tell things were going great,” says Vivian Prokos, a dental hygienist who has worked at Brink Street Dental for more than 10 years. “Dr. Heaton is direct and to-the-point in a nice way. He’s very considerate of patients’ feelings. He’s prompt; he’s on time; he’s on schedule. The improvements he implemented in the office helped our patients and us work as a great team. I like working with him.”

Born into dentistry While Heaton didn’t always know he would become a doctor of dental medicine, it probably came as no small surprise to his parents.

His father, Dr. Wilson Heaton, is an oral surgeon who will retire this year after 35 years in practice, and his mother, Marjorie, was a hygienist for many years.

So far, the mixture of old and new has worked wonderfully.

Kelly Hassing, who became Brink Street Dental’s receptionist when Heaton arrived, says those qualities not only ring true with other patients, but with her as well.

So, after earning his Bachelor of Science degree in biology from Marquette University, Heaton went to Nova Southern University in Florida to earn his doctor of medical dentistry degree.

“My old dentist I’d go to, I’d get up and walk away without understanding what was going on with my mouth; that was the extent of it,” she says. “Dr. Heaton is more thorough than that.”

It was there he was trained with the latest advancements in dentistry, including digital X-ray — and he learned to appreciate not just the science of the practice, but also the art.

Heaton takes the time to explain issues, procedures and possible treatments to each patient, Hassing says. In fact, she jokes, his favorite saying is, “Does that make sense?”

Still, even with all of the careful explanations and care given to each patient, don’t expect to linger at Brink Street Dental for long.

“I fell in love with all of it, the aesthetics and beautifying of people’s mouths,” he says.

“You can have a patient that has many dental issues, and I can completely change it with my own hands and make it something they are proud to smile with.”

Heaton, who originally is from Burr Ridge, could have started his practice anywhere, but he chose Crystal Lake for a few specific reasons.

“Ninety-five percent of the time, we’re on time,” Hassing says. “You won’t sit in our waiting room for half an hour.”

If the kids’ corner — complete with toys, books and a flat-screen TV — located right inside the front entrance isn’t enough to give it away, the treasure chests located in each operatory should make it fairly obvious: Heaton and his staff are very child friendly.

It isn’t just that Heaton has two small children of his own; he and Kristina are the proud parents of 4-year-old Grant and 22-monthold Jack. No, Heaton was comfortable with little ones in his office long before he had little ones at home.

So, at Brink Street Dental, those treasure chests are filled with prizes to be given away after a cleaning or when a cavity has been filled.

Even the “big” kids get prizes … sort of. Each operatory has a flat screen TV that all patients — including adults — can watch during a procedure. Or, if TV is too distracting, music playing overhead can help calm nerves.

Large windows throughout the renovated office space create a friendly environment as well, Prokos says.

And if the toys, prizes and TVs aren’t enough, the personalities of the Brink Street Dental team seem to have won over the rest of their clientele, says Emmy Polito, a dental assistant who has been with the practice since the 1990s.

Polito, notes “Heaton treats every patient the same, no matter their age or if they have insurance or not.”

Perhaps it’s that reason that Brink Street Dental still has most of its original patients.

“A lot of them come up to me and say, ‘We’re so glad you’re still here,’” Polito says.

Top of the line While establishing a welcoming environment has been a main goal of Heaton’s since he bought the practice, the renovated facility and smiling staff wouldn’t mean much if patients felt the dental practices were lacking.

Fortunately, Heaton also has made it a priority to stay on the cutting edge of dental technology.

For example, to improve impressions for crowns, Brink Street Dental is the first practice in the area to utilize the most advanced impression modeling system. The Aquasil Ultra Cordless Tissue Managing Impression System measures and fits patients for crowns in a more comfortable and precise manner that ensures the crown to have the best fit and long life, Heaton says.

— Peter Coveney, professor Today, nearly 700,000 Americans are living with a primary brain tumor, one that begins in the brain. Some 69,000 more will be diagnosed this year, according to research from the National Brain Tumor Society. Even benign tumors can destroy brain cells, produce inflammation and increase pressure in the skull. With no available cure and limited treatment options, brain tumors dramatically impact the quality of life for all those affected. But all of us have reason to hope for a better prognosis, as collaborative research, clinical trials and advanced innovations are driving the search for both treatments and cures.

There are more than 120 types of brain and central nervous system tumors. Brain and spinal cord tumors are different for everyone. They form in different areas, develop from different cell types, and may have different treatment options. Here is a brief guide to better understanding the different types of brain tumors, and their individual intricacies.

WHAT IS A BRAIN TUMOR? A brain tumor is an abnormal growth of tissue in the brain or central spine that can disrupt proper brain function. Doctors refer to a tumor based on where the tumor cells originated, and whether they are cancerous (malignant) or not (benign).

• Benign: The least aggressive type of brain tumor is often called a benign brain tumor. They originate from cells within or surrounding the brain, do not contain cancer cells, grow slowly, and typically have clear borders that do not spread into other tissue.

• Malignant: Malignant brain tumors contain cancer cells and often do not have clear borders.

They are considered to be life threatening because they

grow rapidly and invade surrounding brain tissue • Primary: Tumors that start in cells of the brain are called primary brain tumors. Primary brain tumors may spread to other parts of the brain or to the spine, but rarely to other organs.

• Metastatic: Metastatic or secondary brain tumors begin in another part of the body and then spread to the brain. These tumors are more common than primary brain tumors and are named by the location in which they begin.

SYMPTOMS AND DIAGNOSIS Brain tumor symptoms can vary according to tumor type and location.

There are times a person may have no symptoms when their brain tumor is discovered.

• Recurrent headaches • Issues with vision • Seizures • Changes in personality • Short-term memory loss • Poor coordination • Difficulty speaking or comprehending Diagnosing a brain tumor can be a complicated process and involve a number of specialists, depending on where you live or where you seek medical attention. A brain scan, most often an MRI, is the first step. A biopsy may be necessary, so a pathologist can be brought in to help identify the brain tumor type.

Staying SUNsational Protect your skin from harmful summer sun

Summer is upon us, and with the change of the season comes more time outdoors, under the warm, and often harmful, rays of the summer sun.

Protection is essential, and a new study has revealed an alarming rise in melanoma among people aged 18 to 39: over the past 40 years, rates of this potentially deadly skin cancer grew by 800 percent among young women and 400 percent among young men.

Two types of ultraviolet radiation, UVA and UVB, damage the skin, age it prematurely, and increase your risk of skin cancer. According to the Skin Cancer Foundation, UVB is the chief culprit behind sunburn, while UVA rays, which penetrate the skin more deeply, are associated with wrinkling, leathering, sagging, and other light-induced effects of aging. They also exacerbate the carcinogenic effects of UVB rays, and increasingly are being seen as a cause of skin cancer on their own.

Your best bet to avoid the harm while still enjoying the weather is sunscreen, experts say.

Sunscreens are products combining several ingredients that help prevent the sun’s ultraviolet (UV) radiation from reaching the skin. But they vary in their ability to protect against UVA and UVB. Sun Protection Factor — or SPF — is a measure of a sunscreen’s ability to prevent UVB from damaging the skin. Here’s how it works: If it takes 20 minutes for your unprotected skin to start turning red, using an SPF 15 sunscreen theoretically prevents reddening 15 times longer — about five hours. Most sunscreens with an SPF of 15 or higher do an excellent job of protecting against UVB, according to the Skin Cancer Foundation.

Another way to look at it is in terms of percentages: SPF 15 filters out approximately 93 percent of all incoming UVB rays. SPF 30 keeps out 97 percent and SPF 50 keeps out 98 percent. They may seem like negligible differences, but if you are light-sensitive, or have a history of skin cancer, those extra percentages will make a difference. And no sunscreen can block all UV rays.

So which sunscreen do you choose?

The answer depends on how much sun exposure you’re anticipating. In all cases the Skin Cancer Foundation recommends a broad-spectrum sunscreen offering protection against both UVA and UVB rays.

• Buy a high-quality product with an SPF of 15 or higher; check its ingredients to make sure it offers broad-spectrum protection; and decide whether it works better for everyday incidental use or extended outdoor use.

• Look for The Skin Cancer Foundation’s Seal of Recommendation, which guarantees that a sunscreen product meets the highest standards for safety and effectiveness.

• Apply one ounce of sunscreen — about a shot glass full.

Studies show that most people apply only half to a quarter of that amount, which means the actual SPF they have on their body is lower than advertised, experts say.

• During a long day at the beach, one person should use around one half to one quarter of an 8 oz. bottle. Sunscreens should be applied 30 minutes before sun exposure to allow the ingredients to fully bind to the skin. Sun protection is essential to skin cancer prevention — about 90 percent of non-melanoma skin cancers and 65 percent of melanomas are associated with exposure to UV radiation from the sun, according the www.skincancer. org. Most recently, in a rigorous study of more than 1,600 adults over the course of a decade, researchers determined that subjects applying sunscreen with an SPF of 16 daily reduced their risk of melanoma by 50 percent.

But remember, you should not rely on sunscreen alone to protect your skin against UV rays; it is just one vital part of a complete sun protection program. Robert Dempsey of Fay’s Pork Chop Bar-B-Que offers his tips for summer tastes | By YVONNE BENSON

Surrounded by the laughter of little ones running through a sprinkler, and the drops of sunlight making rainbows in the mist, is the aroma of barbecue.

Glowing charcoal embers under a metal rack can form the apex to a perfect summer day. Burgers, hotdogs, corn, and kabobs can tie together a gathering and sear the juicy happiness into the day. Whether in the backyard or at a summer festival, the grill has become the hallmark of the season.

Barbecue aficionado Robert Dempsey, president of Fay’s Pork Chop Bar-B-Que, knows a thing or two about grilling. Fay’s has been a family business for 53 years and takes it pretty seriously, producing 50, 100, 500 or 1,000 meals at a given event. Catering to charity fundraisers and the regulars at suburban festivals and fairs for decades, Fay’s is a committed charcoal enthusiast, the choice for the company’s famous pork chops since the business began.

“We have been grilling over charcoal for 53 years. I would not consider gas — except for hamburgers or hot dogs. The flavor is just not the same.”

The difference is in the smoke produced by the charcoal and the length of time foods spend on the grill. Foods like hamburgers, hot dogs and chicken don’t spend as much time as steaks, pork chops and potatoes. As a result, people are hard pressed to decipher a flavor difference in hot dogs (for example) cooked on either a charcoal or gas grill. Foods that cook longer are granted the opportunity to absorb the smoke and really deliver a distinct flavor punch.

It’s possible to get some smoke with a gas grill by utilizing soaked woodchips, but some people argue that the smoke production is negligible. Regardless of 44 | JUNE 2014 | MCHENRY COUNTY MAGAZINE

the actual flavor difference between cooking on certain grills, many people simply prefer charcoal because its rustic roots help it feel more authentic.

Another common dilemma at the grill — to sauce, or not to sauce? Dempsey says he prefers a spice rub, and indeed the Fay’s flavor has become almost legendary across Illinois.

“We grill primarily pork chops and quarters of chicken — using only a powdered spice rub which we apply in batches of 35 in a tumbling drum to ‘massage’ it in. It then sits until we need it.”

If you, like most folks, don’t have the tumbling drum out on the patio, don’t despair. The average griller can get similar results by placing the meat on a cookie sheet, sprinkling on the spice, and then rubbing it in gently on both sides.

“Let it sit while you build the fire and get the grill hot — 15 to 20 minutes,” he says. “The salt in the spice will pull some moisture from the meat and now appear as a juicy paste on the surface. Place the meat on the grill at medium heat.

Warm each side twice for 30 seconds to move the flavor into the meat. Now you are ready to grill.

Dempsey recommends turning the meat every 3 to 5 minutes so keep the whole piece moist and delicious.

ext month the Best of the Fox Awards will be announced letting us know about all the fabulous restaurants we are lucky enough to have and enjoy here in McHenry County.

That got me to thinking about what an important role waiters and waitresses play in this culinary dynamic, and more importantly what little credit they get for the effort. Just like any seasoned flight attendant, all servers have their favorite stories to tell as well as some industry stereotypes to joke about.

I thought I would use some of your e-mails and some stories collected over the years (and over a few cold beers after work) to illustrate what a great job these unsung heroes of our industry do and the situations they overcome to bring us great service in a humorous format called: “How would you like to be the server who gets…”

How would you like to be the server who gets … the arguing couple that comes in already angry and is now going to make their server pay for it?

This is definitely a tough one but happens all too often. Just when you thought you were getting a quick deuce in a comfy booth you are quickly transformed from server to half psychologist and half peace keeper as you try to

How would you like to be the server who gets … the table right next to theirs that turns into the screaming baby express?

We’ve all seen this happen. The server again is thrust into a situation they have no control over and has to scramble to resolve. I once had a child throwing Cheerios over their head backwards into the next booth and showering the couple next door. To make it worse the baby’s parents thought it was the cutest thing little junior had ever done. I think I drank straight vodka that night after work. Good luck with this one.

How would you like to be the server who gets … the unannounced table of 13 that had to wait for 40 minutes for half the restaurant to empty out so enough tables could be put together to accommodate them and now want everything in a nano second.

Don’t worry if you didn’t work out today your workout is about to start.

How would you like to be the server who gets … Chris and Connie Complainer who just gripe about everything?

The restaurant is too hot or too cold, too busy or too loud, too fast or too slow, too dark or too bright. Man, you name it they complain about it. This couple can wear you out and drain your energy. This is a server’s Kryptonite.

I’m not talking about salad dressing on the side or an extra soufflé cup of sauce. I’m talking about the customer that demands to rewrite the menu and its ingredients like a mad scientist so that when you turn their ticket into the kitchen it has a three-page instruction manual with it. Pray the chef is not holding a knife when you turn that one in.

How would you like to be the server who gets … Mr. And Mrs. “I need to tell you my life story” on a busy Saturday night when you are in the weeds and just got triple seated!

Here’s my point: A good server, when confronted with any of these situations will grin and treat that customer like the King and Queen of England. It’s what they do and they are good at it. No biggie, just another day at work. They love what they do and are in an elite club of hospitality professionals and I salute them for it. As a restaurateur, I thank my lucky stars for the great servers I have and who have been with me for years, as well as all those of many other great restaurants I am lucky enough to meet. So as we get ready to celebrate the best restaurants in the county next month, let’s all join together and remember to reward (verbally and financially) these all-star servers who make our dining experiences so great.
