Judge to rule on defense’s request for Geneva murder case details

CHARLES TOWNSHIP – Kane County Circuit Judge James Hallock said he plans to rule today on a motion seeking more details about the state’s charges in a 2014 Geneva murder case. Shadwick King Hallock on Wednesday heard arguments for and against the motion for a bill of particulars, filed Jan. 8 by Kane County Public Defender Kelli Childress. Childress is rep-

resenting Shadwick King of Geneva, who was indicted in September on two counts of first-degree murder in the July 6 death of his wife, Kathleen.

The indictment states that King “by means of asphyxia” caused the death of his wife.

Childress repeated some of the arguments she made in her previously denied motion to dismiss the case – that asphyxia is not an act but a medical condition, and could have several causes. Childress said she has received no forensic or physical evidence supporting that King caused his wife to asphyxiate.

By ASHLEY SLOBODA asloboda@shawmedia.com GENEVA – Brett Youngsteadt, the county’s Animal Control administrator, said it wasn’t until he and his wife bought a house that he thought about radon.

With a young child – their daughter is now 3 – they were concerned about her safety and had the Elmhurst home tested, he said, sharing his story at the Public Health Committee on Wednesday for National Radon Action Month.

Radon gas is invisible, odorless, tasteless and the leading cause of lung cancer among nonsmokers, according to the Kane County Health Department. It is naturally occurring because of the geology in northern Illinois.

The readings in Youngsteadt’s 1960s home came back high – 6 picocuries per liter of air on the first floor and 7 picocuries per liter in

the basement, he said.

The U.S. Environmental Protection Agency recommends taking action when a home tests at 4 picocuries per liter.

Youngsteadt said a mitigation system was installed before his family moved in last year, and a test 30 days later showed a reading of 0.4 picocuries per liter.

He noted the system is unobtrusive.

“We’ve been very happy with it,” he said.

St. Charles Park District to put $28M referendum on April ballot

By CHARLES MENCHACA cmenchaca@shawmedia.com ST. CHARLES – Voters in the St. Charles Park District this spring will decide whether the district can borrow $28 million in bonds for a new recreation center, one or more turf fields and other developments.

The St. Charles Park Board on Jan. 13 voted unanimously to put a referendum on the ballot for the April 7 consolidated election.

A few advisory committees have spent the past year refining the project components that became part of the referendum question, said Holly

Cabel, the park district’s director of parks and recreation, on Wednesday.

The committees all are scheduled to meet to review the proposed project and discuss the referendum at 6 p.m. today at the Pottawatomie Community Center, 8 North Ave., St. Charles.

The proposed recreation center would include a fitness center, multi-court gymnasium, indoor track, preschool and multipurpose space, according to the written proposition that will appear on the April ballot.

Cabel said the park district’s sole gym space is housed at the Pottawatomie center.

“We have multiple programs that all feed out of one gym, and then you have community groups that want to use the space as rentals on top of that, too,” Cabel said.

The proposed center would be built on open space used as practice fields in James O. Breen Community Park, located at Campton Hills and Peck roads on the west side of St. Charles.

The turf portion of the district’s proposition involves converting two already-lighted fields at the district’s East Side Sports Complex, at 3565 Legacy Blvd., St. Charles, to synthetic turf and also adding spectator seating, Cabel said.

Building the recreation center would cost the district about $23 million, and the land acquisition and development portion of the project, which includes the turf fields, would cost $4.9 million in all, Cabel said.

The park district’s previous referendum was approved in February 2008 and involved a $25 million tax increase for land and funds to build the facility that became Otter Cove Aquatic Park, 3615 Campton Hills Road, St. Charles.

The district has taken the

economic downtown that has occurred since into consideration when looking at the timing of the April referendum, Cabel said.

“The 2008 referendum was an indicator of the public’s trust in the park district, along with the knowledge and belief of the benefits of the projects involved,” she said.

The park district likely will hold two public informational meetings on the referendum – one in February and one in March – but those are not yet confirmed, Cabel said.

By AL LAGATTOLLA alagattolla@shawmedia.com ELBURN – Village officials unanimously approved a new approach to filling the position of records specialist in the police department, voting Tuesday night to have three part-time employees perform the duties, rather than one full-time employee.

Officials were presented with two options at the meeting – to hire two part-timers, one who would work 25 hours a week and one who would work 16 hours; or three part-timers, one who would work 25 hours and two who would work 16 hours each.

Previously, Police Chief Steve Smith had wanted to keep one full-timer and eventually add a part-timer, but both scenarios presented Tuesday indicated eliminating the full-time position.

Going with three part-timers would allow the village to have much more coverage from the part-timers at an increase of $4,000 a year, the scenarios indicated. That is because the village would save more than $21,000 a year in benefits.

The approved scenario showed that the village, for $44,460, will receive 2,964 hours of coverage in a year.

In the scenario with a fulltime employee, the village, for $40,123, was receiving 2,080 hours of coverage in a year. The scenario, in which there would have been two part-timers would have cost $34,320 and would have provided 2,288 hours of coverage in a year, but officials said the additional coverage provided by three part-timers would be valuable.

“The versatility with that is amazing,” Village Presi-

dent Dave Anderson said, adding it would allow the department to have Saturday hours.

Trustee Bill Grabarek said he liked the added flexibility.

Smith said “everybody in the community would be better served that way,” but he said he hoped officials would consider a full-time employee if the village experiences significant growth in the next few years.

Also, Smith got the goahead to hire new part-time police officers. Starting this year, Smith said a revised work schedule went into effect, requiring each part-time officer to work at least four shifts a month, as well as performing weekend duty. He said most part-time officers were able to do that, but he said two submitted their resignations. He said another was considering resigning.

Board members voted unanimously to allow Smith to replace the two officers who were resigning.

If the third resigns, the board OK’d Smith to replace that officer, as well.

Will become Global Center of Excellence

By ERIC SCHELKOPF eschelkopf@shawmedia.com BATAVIA – PartyLite’s facility at 601 Kingsland Drive in Batavia soon will be the home for all of the company’s candle manufacturing and development worldwide.

The decision was made after Blythe, PartyLite’s parent company, evaluated the company’s two manufacturing facilities in Batavia and in the United Kingdom. Blythe will shut down its manufacturing plant in the United Kingdom.

“We just wanted to combine the two facilities,” said Susan Flinn, who is in charge of investor relations at Blythe. “We have more than enough capacity now.”

According to a news release from Blythe, the project is set to save the company $40 million during the next five years.

The Batavia facility soon will be updated with new

technology as it transitions into a Global Center of Excellence, Flinn said. The project should be done by the end of the year, she said.

The 400,000-square-foot Batavia plant currently has 150 employees in charge of manufacturing and distribution. The plant is set to hire 30 more employees within the next year as a result of the project, Flinn said.

The Batavia plant has been open since the late 1990s, she said.

During Tuesday’s Batavia City Council meeting, City Administrator Bill McGrath applauded the news, noting that PartyLite is Batavia’s second-largest electric user.

PartyLite sells candles, candle holders, flameless fragrance and wax warmers, as well as holiday and home decor.

“Having one facility worldwide will allow for a concentration of the company’s candle-making expertise and the establishment of a single center for global innovation, research and development,” stated Robert Goergen Jr., chief executive officer of Blyth and president of PartyLite Worldwide, in a news release.

BATAVIA – The city is accepting applications to fill a vacancy on the Batavia City Council after the recent resignation of 5th Ward Alderman Steve Vasilion.

“We would encourage folks to step forward,” Batavia Mayor Jeff Schielke said at Tuesday’s City Council meeting.

The deadline for applications is 5 p.m. Feb. 10. Aldermen plan to interview the applicants during a committee of the whole meeting on Feb. 17, and then make the appointment. The successful candidate will be sworn in at the March 2 council meeting, Schielke said.

To apply, one must have lived in the city for at least a year and reside in the 5th Ward, Schielke said. The council is comprised of 14 aldermen, with two representing each of the seven wards in the city. A map of the city’s

wards is available online at www.cityofbatavia.net.

Vasilion was elected to the City Council in 2013 after defeating Eldon Frydendall for the 5th Ward seat. Frydendall had been on the Batavia City Council for 32 years.

Vasilion’s term expires in May 2017.

Schielke and the council will appoint someone to fill the seat until that time. The person who is elected in the April 2017 election will serve a full four-year term.

Earlier this month, Vasilion announced he was resigning because of conflicts with his architectural firm, which he recently reopened.

Because he has reopened his practice, Vasilion said he cannot legally represent his clients before the city, such as in negotiating zoning issues or obtaining building permits, while also serving as an alderman.

Aldermen at Tuesday’s meeting formally accepted his resignation.

OBITUARIES EMMA J. CHENEY Born: Jan. 13, 1929; in Marion, IL Died: Jan. 20, 2015; in St. Charles, IL Emma Josephine Cheney, age 86, of St. Charles, formerly of Richwood, Ohio, died Tuesday, January 20, 2015, at Pine View Care Center in St. Charles.

She was born January 13, 1929, in Marion to the late Charles McKay and Celia Eva (Knapp) Shields.

She grew up one of seven siblings on a farm in rural Ohio, and life was not easy. She chose the life of a traditional housewife and raised three boys while their dad spent many of his working years on the road in sales with Richwood Insurance & Realty and then Batesville Casket Company in 1968.

She supported the boys through sports, scouts and studies, ensuring each earned a college degree.

Travel was a passion, with annual two-week trips in a small travel trailer to 45 States. She enjoyed seeing her seven grandsons mature into their 20s and more recently, the thrill of 5 great-grandchildren.

She was a tireless partner of her husband, John who dealt with a long battle with lymphoma in his retirement years, before passing away 18 years ago. They enjoyed countless trips back to Ohio over the years to stay close to sisters, brothers, friends, nieces, nephews and all extended family. She faithfully attended the First Baptist Church of Geneva, for over 30 years, and was a long-time supporter of the Richwood First United Methodist Church. She is survived by her three sons, Cort (Susan) Cheney of West Lafayette, IN; Clark (Cathy) Cheney of St Charles, IL; Calvin (Joyce) Cheney of Broomfield, CO; grandchildren, Grant, Garrett (Jennifer), John (Maggie), Scott (Anna), Brian (Chrissie), and We offer hand sewing and embroidering of all letters and names for awards jackets.

Harrison Horton, age 88, died peacefully in his sleep at The Holmstad Assisted Living Community in Batavia, Illinois where he had spent the last two and a half years of his life with his beloved wife, Ann. Prior to their move to The Holmstad, Harry and Ann had lived in St. Charles, Illinois where they had raised their children for almost fifty years.

Harry, or “Bud”, as he was affectionately called by many, was born in Batavia, Illinois to Irene (Fox) and Eugene Mack Horton on November26, 1926.

After a brief tour of duty with the Army Air Corp, he worked as an electrical engineer with Commonwealth Edison for 43 years.

He was preceded in death by his mother and father; as well as his sisters, Violet, Hazel, Rosetta, Margaret, Helen, Alice; and his brother, Bill.

Harry is survived by his loving wife, Ann. At the time of his death, they were just a few weeks short of celebrating their 64th wedding anniversary. He is also survived by his five children, Sue (John) Morden, Cyndie (John) Cavanaugh, Jim (Anne) Horton, David (Gail) Horton and Juli (Jim) Meier. He experienced his greatest joy through the lives of his sixteen grandchildren and thirteen great grandchildren. He is also survived by his sister, Ruth Morge of Aurora, Illinois; and his brother, Robert Horton of Mesa, Arizona.

A memorial service celebrating his life will be announced and held at a later date.

WELDON C. JOHNSON Weldon C. Johnson, age 75, passed away peacefully at home on January 20, 2015, surrounded by his family.

Owner of the former Viking Office Supply, Weldon was a life-long resident of Geneva, and said many times he could not think of a better community to live, have a business and raise a family.

Edgar G. Grebe, age 103, of Kaukauna, Wisconsin, died on Monday, January 19, 2015, at the American Grand in Kaukauna. He was born February 21, 1911, in Kaukauna, to the late Edward and Lydia (Brenner) Grebe.

He graduated from Kaukauna High School with the class of 1928. On June 23, 1956, Ed was united in marriage to Ruth J. Trettin at Trinity Lutheran Church in Kaukauna.

After attending a radio telegraphy school in Milwaukee, Ed was examined by the Federal Radio Commission and granted a license as a Radio Operator.

Electronics with influence in growth of communication and transportation paralleled Ed’s experience step by step.

He was a wireless operator on Great Lakes steamboats, an engineer and announcer on early broadcast stations, and a mobile radio operator in the U.S. Army where he also was a wartime radar technician with the Pacific Fleet of the U.S. Navy. Ed was a 10 year aircraft communication and navigation operator with the EAA/FAA in Alaska.

He spent 20 years with FAA as an engineer and supervisor in the Continental U.S., ending up in the Chicago Air Route Communication Center, the world’s busiest. He then took a journey from the crude crystal receivers and spark transmitters through the radio vacuum tribe era to radar, complex communication and navigation systems, and ending up in the early computer.

Ed is survived by his wife of over 58 years, Ruth J. Grebe, Kaukauna; daughter, Debbe (Joe) Reckinger; son, Michael Grebe; 5 grandchildren, Daniel Reckinger, Steven (Amanda) Reckinger, Christy (Jeff) Laczynski, Jason (Lisa) Grebe, Emily (Chad) Mykel; and 8 great grandchildren, Haley, Madisyn, Ty, Dylan, Ezra, Owen, Kc, and Myles.

He is further survived by many nieces and nephews.

He was preceded in death by his parents, 5 sisters, 3 brothers, and a grandson, Tony.

A funeral service will take place at 2:00 p.m., on Friday, January 23, 2015, at the Star of Hope Chapel at Highland Memorial Park, 3131 N. Richmond St., Appleton, Wisconsin, with the Rev. Aaron Rosenau officiating. Friends may visit at Highland Memorial Park on Friday from 1:00 p.m. until the time of service. Entombment will follow.

In lieu of flowers, a memorial fund has been established.

After high school, Weldon attended Eastern Illinois University for several years, before returning home to help care for his mother, and subsequently joined the Illinois National Guard.

Weldon worked as Deputy Clerk for Kane County, the Illinois Highway Division and as a pharmaceutical sales rep.

While working as a sales rep, he began to consider opening his own business.

As he traveled from one Midwest small town to the next, he started to develop his plan for his dream. In 1977, Viking Office Supply was born. Viking Office Supply nourished the already deep love of his community, and he worked tirelessly in his business, his town and his church.

In 1991, Weldon received the prestigious Wood Award, which recognizes the significant contributions by an individual giving back to the community. He was involved in many civic groups including past President of the Geneva Jaycees, member of the Lions Club, TriCity Family Services, Delnor - Community Men’s Foundation and the American Cancer Society. He also served as a city alderman for 12 years, 1977 through 1989, was a former President of the Coultrap Middle School PTO, a member of the All Sports Boosters Club, and a force behind the creation of the Geneva River Rats Swim Team. Weldon helped coordinate the St. Peter’s Barn Sale for the last half of the 1980s and participated in raising funds for St. Peter’s Building Funds. In recent years, Weldon was on the Board of the Geneva History Museum as well as the Paul Ruby Foundation for Parkinson’s Research.

Weldon was very proud of his Swedish heritage and his family that immigrated in the late 1890s. Weldon was known and loved by all, as the famous “Swede”, dressing in full Viking attire and marching in the annual Swedish Day’s Parade. As his family grew, his children and then his grandchildren joined him in the parade, marching in full Viking array beside him. He was famous for his Glogg, which he served during the annual Geneva Christmas Walk at Viking Office Supply. To the delight of many, he would recount many stories, including endless Sven and Olga jokes. We will miss all of his lively tales but remember him when we retell those stories.

Despite his many accomplishments, Weldon remained a generous, kind and humble man, who never hesitated to lend a hand, give a pat on the back or

The city once again has contracted with At Your Door Special Collection, a division of Waste Management, to provide free home pickup of unwanted hazardous household materials.

Each household may schedule one free collection a year, and the program will continue to operate until reaching the city’s budgeted allotment.

Mexin said he encouraged her to call, even if she thinks it’s the same coyote.

Geneva police Cmdr. Julie Nash said if a coyote is by a school and children are coming out, “That needs to be a 911 call. This is part of the education process.”

David Munch, a coyote trapper with Scientific Wildlife Management, said hazing – making loud noises to frighten coyotes tends to work – for a while.

“A predator learns from the first time that [hazing] has no negative consequences,” Munch said. “The third or fourth time, they won’t leave. There are certain animals you will have to deal with.”

The coyote report will be available on the city’s website, officials said.

GENEVA – Geneva Mayor Kevin Burns said he has left his job as vice president of marketing and development for Naper Settlement Museum, which is part of the city of Naperville.

Burns said he was hired in October 2013 and left in October 2014.

According to Naperville records posted online, Burns was earning $81,268.

He was paid $18,665.26 compensation in a separation agreement, according to city records.

GENEVA – Six months after Geneva residents asked for help in dealing with aggressive coyotes in their neighborhoods, police Chief Steve Mexin presented a report detailing coyote sightings.

The report also included information from a survey of Chicago area communities and what they do about coyotes.

Speaking on Tuesday at the Geneva City Council meeting, Mexin said the vast majority of the 131 coyote sightings reported from May 1 to Dec. 31 involved nonthreatening behavior.

Coyote sightings can be reported through the city’s website, www.geneva.il.us.

“This is not to discount threatening behavior,” Mexin said. “We confirmed some coyotes are not as afraid of human behavior as you think they might be or should be. Those reports are accurate.”

Mexin said he sympathizes with people who are fearful and who have lost pets.

“It’s a traumatic experience … and they look to the police department to do something about it,” Mexin said. “There is a limited amount of what we can do to address this.”

Mexin said police also confirmed one resident actively was feeding coyotes, and the animals would come up on the driveway and eat off a dinner plate.

He said officers talked to the resident, and the feeding stopped.

In June, city residents reported their pets were being stalked by coyotes and the coyotes behaved aggressively toward them, as well.

“The sightings [reported] coyotes walking or running down the street, down the sidewalk – nonthreatening,” Mexin said. “What the data told us is where coyotes are being seen, for the most part,

is in the Fisher Farms area.”

Mexin said the data shows the most significant amount of coyote activity is from Randall Road to Willow Lane and Williamsburg Avenue to Bricher Road. The second-highest area of coyote sightings was the Pepper Valley area.

Coyotes were reported at Good Templar Park on the east side and further south, Mexin said.

The data also included information about two small dogs and a cat that were killed and another dog that was injured by coyotes, he said.

Regarding a nine-question survey sent to 56 communities, Mexin said 24 responded, and 23 of those reported coyote activity.

The survey indicated most communities do what Geneva does – educate the public about not feeding coyotes and not leaving pets unattended.

Two communities hired trappers to get rid of troublesome coyotes, he said.

“In the vast majority [of cases], an officer responds to where the coyote is last seen and takes no action unless they see a coyote attacking,” Mexin said.

On Jan. 15, the Illinois Liquor Control Commission, in conjunction with the Illinois Secretary of State Police, conducted 15 underage compliance checks in Geneva and Batavia.

Hammar’s East Side Liquors,1449 E. State St., Geneva, and Pride of Geneva, 1166 E. State St., Geneva, failed the compliance checks, according to a news release from the Illinois Liquor Control Commission.

By ASHLEY SLOBODA asloboda@shawmedia.com ST. CHARLES – A Kane County judge has dismissed a lawsuit concerning an alleged injury at the 2009 St. Charles RiverFest, as the matter is being settled out of court, according to court documents filed last week.

In the lawsuit, James and Colleen MacRunnels sought more than $50,000 in damages from the Downtown St. Charles Partnership, Frontier Management, the St. Charles Festival Committee and Harris Bank.

The lawsuit alleged that Colleen MacRunnels slipped and fell and suffered injuries while working as a volunteer at the festival, which was held

near Harris Bank.

According to the complaint, the MacRunnelses were to begin working their volunteer shift in the VIP tent at the festival. The suit alleges that mats were placed over uneven ground, and that Colleen MacRunnels “fell and sustained a serious and traumatic injury.” James MacRunnels sued on grounds that he “suffered a loss of services, society, companionship and consortium of his wife.”

James MacRunnels said Wednesday that the matter is being settled out of court.

In an order dated Jan. 13, Judge James R. Murphy dismissed the complaint with prejudice, which means the couple cannot file another case on the same claim.

“[The court] finds that this cause of action has been fully compromised and settled, and the parties have stipulated and agreed to dismissal of the

complaint with prejudice, and that the court further finds that all costs have been paid,” the order states.

Court documents indicate

the court will retain jurisdiction of the matter until the settlement draft is exchanged and any release or releases are executed.

RiverFest lawsuit dismissed, being settled out of court

One Book, One Batavia KANE COUNTY CHRONICLE editorial@kcchronicle.com BATAVIA – “Manhunt: The 12-Day Chase for Lincoln’s Killer,” an account of the days that followed President Abraham Lincoln’s assassination in 1865, is the One Book, One Batavia 2015 selection.

During February and March, the Batavia Public Library, 10 S. Batavia Ave., will offer a book discussion and three programs related to the book, including a presentation by the book’s author, James Swanson. Batavia students are invited to read “Chasing Lincoln’s Killer,” the young adult version of Manhunt, also written by Swanson.

Swanson will speak about “Manhunt,” his Edgar Award-winning book, at 7 p.m.

Wonderful reads for winter During the recent extreme cold snap, school was canceled for two days, and – as a result – I was trapped inside for 48 long hours.

When I wasn’t studying for finals, I was looking for an activity to occupy myself.

And what better activity to do on a cold winter day than snuggle up with a good book?

I’ve always loved to read, and finding a new novel to immerse myself in is a delight. Yet sometimes going to the library can be an overwhelming experience. With so many books out there, how on earth do you find the good ones? In hopes of making that task a bit easier and spreading the joy that reading can bring, today, I’ll share a few of my favorite book recommendations. Believe me, I could give many, many more, but you have to start somewhere!

There’s no better place to start than with my favorite book series of all time: the Harry Potter series.

And, no, seeing the movies is not the same as reading the books. The novels are completely enthralling; they tell the story in a way the movies just can’t accomplish. The magical adventures of Harry, Ron and Hermione are timeless and appealing to all ages.

If you’ve never read them, I encourage you to join the millions of “Potterheads” and fall in love with these bestsellers. Even if you’re already a dedicated fan, why not reread them this winter? This is a series that truly never gets old.

If realistic fiction is more up your alley, I have the perfect recommendation for that teenage girl craving a relatable, fun story. I’d hazard a guess that the Christy Miller series by Robin Jones Gunn probably isn’t on your

For anyone seeking a fun escape from the freezing Midwest, I’d definitely recommend Christy Miller.

For the inner lit major within everyone, I have a true classic in mind: William Golding’s “Lord of the Flies.” Before you groan, remembering this highly symbolic novel from high school English class, I’d like to explain myself here. I first read it this fall in my English I Honors class and instantly fell in love with it. Not only is the story itself captivating, but it also makes a powerful statement about human nature. Maybe you hated it the first time. Try exploring this novel outside of the confines of the English classroom; it just might open your eyes to how wonderful “Lord of the Flies” is.

Don’t let the “beast” inside you keep you from realizing that (wink, wink).

Is the idea of an armchair, blanket and book calling your name by this point? It certainly is for me.

An overblown travel risk THE WASHINGTON POST Even before the murderous rampage by Islamist extremists in Paris this month, some members of Congress were sounding alarm bells about Islamic State militants using Western passports to enter the United States. Now they may be even more tempted to undermine, suspend or end the visa waiver program that allows nationals of 38 countries to travel to the United States without a temporary visitor’s visa.

“The visa waiver program is the Achilles’ heel of America,” Sen. Dianne Feinstein, D-California, said last week.

Terrorists can “come back from training, they go through a visa waiver country, and they come into this country.”

Congress shouldn’t act based on this sort of overstatement.

The visa waiver program

allows people from countries including the United Kingdom, Japan, the Czech Republic, Singapore and, yes, France to skip otherwise required pre-visit interviews at U.S. embassies and consulates.

It takes a lot less time and money for foreigners in visa waiver countries to visit the United States.

Against those benefits lies the fear that visa waivers might allow the wrong one or two people into the country.

No system can eliminate all risks. But the program isn’t about letting America’s guard down. It demands that visa waiver nations take several security-enhancing steps. Using secure electronic passports, for example, scales back the risk of fraud, as does promptly reporting lost or stolen travel documents. Sharing intelligence with the United States improves the database of people who shouldn’t be

allowed to fly. Passengers also have to submit biographical information in advance, which is quickly checked against electronic records. The visa waiver program, in other words, has compelled other countries to improve their security game.

The program isn’t perfect.

A few old passports out there lack electronic identification features yet have been grandfathered into the system; the United States could stop accepting those. The Department of Homeland Security just made a small change of its own, increasing the amount of information it requires passengers to submit before traveling.

But the nation’s no-fly list system is a much more important line of defense. U.S. leaders should worry more about keeping it up to date and refrain from scaling back the visa waiver program.

Congress shall make no law respecting an establishment of religion, or prohibiting the free exercise thereof; or abridging the freedom of speech, or of the press; or the right of the people peaceably to assemble, and to petition the Government for a redress of grievances.

The Bend General Store strives to tempt taste buds St. Charles store features a deli; sells imported meats and cheeses

By ERIC SCHELKOPF eschelkopf@shawmedia.com ST. CHARLES – The smell of fresh pastrami and cheeses hits one’s nostrils upon entering The Bend General Store.

The Bend General Store, located at 320 W. Main St. in downtown St. Charles, opened its doors Nov. 1. The store is two businesses in one – a deli featuring imported meats and cheeses and an import grocery store featuring primarily Italian products.

“We’ve got such a unique product compared to what is out there,” said St. Charles resident Tony Scheufler, who owns the store with fellow St. Charles resident Adam Bosch.

“What we have is all imported – it’s all artisan, all natural, really, really good stuff. People notice the difference. We really felt comfortable that St. Charles would embrace what we are doing, that they were looking for something a little different.”

Scheufler and Bosch have deep roots in St. Charles. As high school students, they worked for the city of St. Charles.

And the store’s name is a nod to the history of St. Charles.

From the 1880s through prohibition, Main Street ended in the area of 2nd Street, and at the end of the row there were a few saloons and general stores, Scheufler said.

Factory workers would board a trolley at the end of the Fox River, which would continue west and make the turn where The Bend building is today, he said.

“All the workers would hop off and just go in the saloons right here and do a couple of

shots of whiskey while it made the turn; so this was called ‘Whiskey Bend,’” Scheufler said. “It was a bit of a gamble to name it something so specific, but we also wanted that strong tie to St. Charles history. That’s who we are. We are all from here. We have all raised our children here. We didn’t want to shy away from that. We wanted to make it very St. Charles.”

The Bend General Store is modeled after a shop one might find in Europe.

“You can come in and get your lunch; then you can shop and buy what you need for dinner,” Scheufler said. “You can get your wine, sit and have a glass of wine, and then go home.

That was kind of the feel that we wanted.”

Along with selling wine, the store also sells hand-crafted, small-batch whiskey and spirits, as opposed to name-brand liquor.

The Bend’s sandwiches are stuffed with five ounces of meat and cheese.

“Nobody leaves here hungry,” manager Jennifer Cook said.

The store sells a variety of sandwiches. The Bend’s most popular sandwich is the Parma sandwich, which contains prosciutto, rosemary ham and Taleggio cheese. The Parma sandwich also features The Bend’s own dressing.

The store makes its own dressing and mustard.

“It’s a great combination of flavors,” Scheufler said. “We

The meats and cheeses are so good, you don’t want to ruin them with a bunch of [other stuff] on top. That’s a trick that you do with cheap meat, put a ton of [other stuff] on top of your sandwich.”

Since Scheufler comes from an Italian family, figuring out what to stock in The Bend has been easy.

“This is what I grew up on, and what I raised my kids on,” he said. “The easiest part was what we were going to supply as far as meats and cheeses. It was just finding the right quality.”

The Bend has already seen a good share of repeat customers.

“We really ended up with a good group of regulars right out of the gate,” Scheufler said. “We had people that ate here five or six days out of the first nine days we were open.”

Along with being open for lunch, The Bend is open late nights from 1 to 3 a.m. Fridays and Saturdays to feed the bar

crowd and people who are working late shifts.

“People love hanging out for an extra hour before they have to go home and have something to eat,” Scheufler said.

The Bend also delivers lunches and will deliver to any office in the St. Charles area.

“It’s something different,”

Cook said. “They get so tired of the same stuff coming to their office. A lot of the doctors’ and lawyers’ offices get it catered once a week. They’re looking for something of better substance.”

The Corner Grind a wonderful addition to downtown Elburn ELBURN – The coffee shop is a vital component to Main Street America.

During our often busy, fast-paced lives, it serves as a place for neighbors and friends to come together and take a moment to smell the roast.

With the inception of The Corner Grind, downtown Elburn has fulfilled that need.

The coffee shop, which opened in October, serves coffee, espresso, teas, smoothies, cocoas, baked goods, soup, sandwiches and salads to the caffeine-deprived and lunching crowd.

Owned by married couple – Tony and Ann Cobb of Elburn – The Corner Grind is a cozy enclave with simple decor and clean lines.

When my dining companion and I arrived on a Monday for lunch, the place was packed – not an open seat in sight.

But, by the time we placed our orders and picked up my coffee, a table opened up.

With New Year’s resolutions in mind, I opted for the coffee shop’s January special, the Resolution Latte, made with skim milk, sugar-free vanilla and caramel. I automatically assumed that my figure-conscious concoction would be bland and tasteless, but quite the contrary.

“Mmm, this is good,” I muttered to myself in-between sips.

The latte tasted as if I was drinking the full-caloric version, which is always a compliment when dealing with anything “diet.”

The soup of the day was Vegetable Beef Barley and could be combined with a half-sandwich for $7.25.

A detailed menu written with colorful chalk on a blackboard hanging behind the front counter showcased the coffee shop’s unique array of sandwiches and salads.

Sandwiches are made with fresh ingredients and premium Boar’s Head meat and cheeses on 10-inch french bread, while the paninis are made using sourdough bread. Both options come with a bag of kettle chips.

I opted for the Black Bird ($7.50) – blackened turkey breast, three-pepper colby Jack cheese, mayonnaise, lettuce, tomato and red onion – while my dining companion ordered the Italian ($7.75) – Genoa salami, capocolla, pepperoni grande, ham, provolone, lettuce, tomato, red onion, pepperoncinis and deli dressing.

With kids in mind, Corner Grind also serves a Grilled Cheese panini and Peanut Butter and Jelly.

Owner Ann Cobb, who was running food and wiping down tables, served us our sandwiches and – throughout our visit – lit the place up with her friendly smile and genuinely kind demeanor.

The Black Bird was the table favorite.

A delicate layer of spiciness from the three-pepper colby Jack cheese combined nicely with the juicy, tender turkey and crunch from the lettuce and bread. The Italian had entirely different flavor components, offering hints of tang and sweetness that melded nicely with the smorgasbord of salty deli meats.

Before leaving, my dining companion ordered a cool and deliciously fresh Mango Berry smoothie, which – thank-

fully – he was happy to share with me.

The Corner Grind provides a sense of community – locals and visitors sharing time, conversation and good food, with the fresh scent of coffee wafting in the background. It’s a beautiful thing.

By DEREK WOLFF editorial@kcchronicle.com GENEVA – Senior night inside Geneva’s Mack Olson Gym during Wednesday’s girls gymnastics meet turned into a high-scoring affair as the host Vikings topped the St. Charles co-op squad, 148.4 to 145.95.

The score was a season high for Geneva, led on by a career-best all-around score of 38.5 from sophomore Claire Ginsberg.

“I think everything came together,” Ginsberg said. “I hit all of my routines pretty well and got rewarded with high scores.”

Ginsberg, the all-around Illinois state champion last season, finished first in the all-around, garnering the top score in each event with a 9.6 in the vault, 9.5 on the bars, 9.65 on the balance beam and a 9.75 for her floor exercise.

“That’s really exciting,” Ginsberg said about reaching a new personal best. “Really you just try to think about the team score while you’re doing it and usually it comes together for yourself.”

“I think everyone came in tonight kind of hyped up because St. Charles is our rival and we came together.”

St. Charles entered competition on the back end of a back-to-back after competing Tuesday night against Neuqua Valley.

With the UEC Conference meet right around the corner, St. Charles coach Amy Lill said the team is hitting its stride at the right time.

“I just think they’re at the point where they’re starting to jive together which is what we’ve been trying to kind of achieve and we had a rough start down at 133 and we’re up to 145,” Lill said. “I’m just excited for what’s going to come up in the next couple of weeks since I think they’re putting it together at the right time when they need to. I think we just have to keep staying consistent; that’s the name of the game, it’s to be consistent.”

around, finishing the competition with a combined score of 36.85.

Redmond-Mattucci was third overall on both the bars and floor exercise with scores of 9.15 and 9.45, respectively.

Shaking off early hiccups and staying positive were key to her approach on the evening, she said.

“Even though I messed up on beam, I tried to make sure the rest was solid,” Redmond-Mattucci said. “And on every event I just pushed out my hardest. I also messed up on bars, but that didn’t shake me at all and I picked it up on vault and floor.”

St. Charles won the vault with a total score of 37.55, led

by Devon Ross’ second-place finish in the event with a 9.55.

Geneva senior Grace Ginsberg finished third overall in the all-around with a total score of 35.6, taking third place as well on the vault with a 9.45.

Vikings freshman Holly Friedel scored a second-best 9.3 on the bars, while sophomore Julia Grottens added a second in the floor exercise with a 9.6 and a third on the balance beam with a 9.1.

Those scores helped result in the new season high, a mark that impressed Geneva coach Kim Hostman.

“I’m very pleased,” Hostman said. “We’ve worked really hard to add some new skills in for today, and they really proved it on floor and on bars we hit as well. [We made] a couple of mistakes on beam that we’ll regroup on. If we fix that we’ll be well up in the high 149s, maybe hit 150 at some point. I’m really pleased with the outcome today, and our goal was to hit 148 today, and we hit that.”

Geneva narrowly won each of the three remaining events after the vault. The Vikings took the bars at 36.6 to St. Charles’ 35.4, the beam at 36.6 to 35.85 and the floor exercise at 37.75 to 37.15.

The Vikings will host the UEC Conference meet next Thursday and Hostman said she plans on finalizing the lineup following this weekend’s meet.

“Next week, we’re excited to have the whole group together and to be hosting conference,” she said. “It’s been many years, probably five or six years since we’ve hosted so we’re happy to be in our gym. Obviously, having our own gym and apparatus will help and [having] the fans and that type of thing.”

Either way, Ralston and the Vikings figured their Feb. 5 home game against East will be a blockbuster affair.

“Whether East lost or not, it really didn’t matter – we’ve just got to target that date and be sure we’re ready to play that day,” Ralston said. “We’re two very different type of teams, two very different styles of basketball. Our strengths are their deficiencies and our deficiencies are their strengths, so it’s just one of those games where we just have to make sure we play to our strengths and not to our weaknesses.”

East (7-1 UEC River) beat Geneva when the teams met in St. Charles. While the Saints and Vikings each have one conference loss, North (6-2 UEC River) could sneak into a three-way tie for the conference championship if the North Stars can win out – which would include a home win over Geneva on Feb. 17 – and the Vikings take the Feb. 5 showdown against the Saints.

While Nate Navigato’s offensive prowess is nothing new for Geneva, the development of junior post player Loudon Vollbrecht has given the Vikings another force in the paint.

Minimizing point-blank shots for the burly Vollbrecht and other members of Geneva’s towering frontcourt will be key to Batavia’s hopes of upsetting its archrival tonight in Geneva.

“You’ve got to keep him away from twofoot shots,” Batavia coach Jim Nazos said of Vollbrecht. “If you can just push him off and make him shoot from six or seven feet, that’s a big thing with their posts, where it’s not a drop step at the rim but more turnaround jumpers they have to take. That’s a big thing, and then obviously keeping them off the glass.”

Of course, doing better defensive work on Navigato – a 6-foot-7 wing – also will be a priority. Navigato scored 30 points when the teams met Dec. 6 in a 58-40 Geneva win in Batavia.

Both Geneva (16-2, 5-1 Upstate Eight Conference River) and Batavia (13-9, 3-5 UEC River) come into tonight’s matchup hot after playing well in separate Martin Luther King events – Geneva went 4-0 in Moline while Batavia went 3-1 at Rockford Jefferson.

Both shootouts included two games apiece Saturday and Monday, and the Bulldogs and Vikings also were in action Friday night. Given that busy stretch – and final exams early this week at Geneva – Vikings coach Phil Ralston said gearing up for Batavia was challenging.

“The unfortunate part is we still have our finals and only have two days [to prepare] and those two days we have to try to rest our guys because there was a lot of basketball played, but at the same time we have to kind of focus in on what Batavia is doing now,” Ralston said. “They are playing a lot better [than early in the season].

“We’ve seen a couple looks at them. A team that beat them, West Chicago, they beat pretty soundly last Friday. We saw them take (St. Charles) North to overtime. … We know they’re playing a lot better and I think the addition of (Tyler) Lovestrand makes them a better team, so we’re not naive. We know that’s going to be a tough, tough game.”

Johansmeier out to turn weaknesses into strengths Jake Johansmeier wasn’t sure you could classify last season as a wake-up call.

But after a successful freshman year, last year’s rough campaign as a sophomore pitching at Eastern Illinois certainly led him to an important realization: He had work to do.

“It’s a realization that you need to get better. It’s just focus, pretty much, just knowing that you have to continue to get better,” he said. “I think the year I had last year – if I had a wake-up call, I think last year was my wake-up call.”

As a freshman, the St. Charles North product was 3-4 in 20 appearances, more than half of those as a reliever, with a 3.70 ERA in 482⁄3 innings of work. Last year, however, despite getting off to a good start, Johansmeier went 3-3 in

14 starts (18 total appearances) and posted a 5.94 ERA in 722⁄3 innings.

“I started off hot, pitched some good games, got some big wins,” he explained. “But when we got to conference, it’s almost like I took my foot off the gas pedal and kind of just coasted instead of actually pitching, almost like I was going through the motions without even realizing it.”

That rough season, though, Jake certainly has Johansmeier a silver lining in motivation.

Entering his junior season, Johansmeier said that he’s put in more work this offseason than the previous two combined. He’s been working harder and taking things

“It’s kind of just maturity sets in,” Johansmeier said.

“You start to realize you need to put in more work, so you take things more serious, go harder to lift, take your throwing program serious, long toss more. And you really focus on a weakness. Pick one weakness, work on it over the summer, bring it in and find a new weakness when you get back to school. And you work on that until all of your weaknesses are strengths and you just progress from there.”

And his on-field development is reaping rewards from what Johansmeier’s doing off

the field, too.

A public relations major, Johansmeier said his classes have helped him become a better communicator on the field.

He sees a big difference in the way he talks to his teammates between when he first arrived as a freshman and now. Call it more maturation.

“You almost apply what you’re doing in school to baseball,” he said. “Baseball is not just a game. It’s life, but there’s more to it than that.

You’ve got to lead people and be smart to play baseball, too.

“I think the biggest thing is communicating effectively with a person. There’s a right way and a wrong way to do that. When I came in, I would get my point across, but it wouldn’t always come off the right way. After taking some classes, you realize that people were responding differ-

ently. One of the things was learning how to communicate better and be more simple when you say something.”

Year 3 for Johansmeier is right around the corner, with the Panthers opening their season Feb. 13 at Georgia. His goals are big: He wants to lead the Ohio Valley Conference in wins and have the lowest ERA. They’re a reflection of the work he’s put in this offseason and the realizations he’s made as a baseball player and a communicator.

He knew he had to get better. Starting next month, it’s time to be better.

In addition, Phillips said the team will introduce new enhancements to Soldier Field and continued improvements to the year-round experience for our loyal and dedicated fans.

“Our goal is simple,” Phillips wrote in the letter. “Play tough and smart and bring the Super Bowl trophy back to Chicago for the greatest fans in the world.”

Nonclub season ticket packages range from $81 to $175 a game and account for about 85 percent of the seating at Soldier Field. United Club seating season tickets range in price from $275-$500 a game, according to the team. Season-ticket holders will continue, the team announced, to see a $25 a game savings for each regular season ticket as competed to the individual game price.

The Bears have home dates with Arizona, Denver, Oakland, San Francisco, Washington and against NFC North rivals Detroit, Green Bay and

Minnesota.

The Bears finished last season 5-11, which brought an end to the Marc Trestman and Phil Emery era. By the end of the season, the team was announcing no-shows at home game that grew as the year lingered on, reaching more than 10,000 by the home finale.

Bears hire Ed Donatell to coach defensive backs: The Bears hired Ed Donatell as their defensive backs coach on Wednesday. Donatell spent the past four seasons with new Bears defensive coordinator Vic Fangio coaching the 49ers’ defensive backs.

Jon Hoke, who spent six seasons with the Bears and was the only holdover from Lovie Smith’s staff to stick through the 2014 season, will not return.

Donatell has 24 years of coaching experience in the NFL and 36 overall. Before his time in San Francisco, Donatell coached the Broncos’ secondary from 2009-10. He was the University of Washington’s defensive coordinator in ’08 and a special assistant for the Jets in ’07.

From 2004-06, Donatell was the Falcons’ defensive coordinator and he ran the Packers’ defense from 2000-03. Donatell coached the Broncos’ defensive backs from 1995-99 and the Jets’ DBs from 1990-94.

As a player, Donatell was an all-conference defensive back at Glenville State University.

The Bears have been on a bit of a roll ever since Black Monday, the day after the 2014 season ended. Now the hits just keep on coming with the news they have hired Adam Gase to be their offensive coordinator.

How often does a team get to hire two of its top candidates for its head-coaching job?

Gase interviewed with the Bears for the top job and was reported to be a strong contender until John Fox became available and eventually accepted the job.

Gase was also a serious contender for the 49ers’ head job and to be able to add him now as Fox’s chief lieutenant on offense continues to add to the all-star-type feeling the Bears’ coaching staff is cultivating.

Gase should come with a bit of a feel for the Bears after spending his first five seasons in the NFL in Detroit as a Lions scouting assistant (2003-04), offensive assistant (2005-06) and quarterbacks coach (2007).

Gase then spent a year in San Francisco as an offensive assistant (2008) before moving to Denver as the wide receivers coach for two seasons (2009-10) before Fox arrived.

In 2011 and ’12, Gase was the quarterbacks coach to both Tim Tebow and Peyton Manning and he took over as the offensive coordinator in 2013 and 2014 after Mike McCoy moved on to be the head coach of the Chargers.

By JOE COWLEY jcowley@suntimes.com CHICAGO – Tom Thibodeau either doesn’t burn easily or actually doesn’t put much stock into several reports that had the Bulls coach on the “hot seat” in the midst of a 2-6 losing streak.

It could be both.

Thibodeau wasted very little time – or words – dwelling on the “hot seat” topic after the Wednesday practice, saying “Could care less, I could,” when asked for a reaction of the rumors.

His front office was equally dismissive.

“No,” general manager Gar Forman said in a text, when asked if there had been discussions about Thibodeau’s job security. “It’s not a story.”

It actually was, but one that might not have a lot of legs as far as the regular season is concerned. After the season?

That’s a different chapter, but the idea that the Bulls would

make a coaching change if the spiral downward continued?

Highly unlikely.

“I think it’s important that we all are in this together, that we share that,” veteran big man Pau Gasol said, when asked about his coach feeling the heat. “I think it’s a bad sign when there’s cracks, when people start pointing fingers, start talking negatively about any individual that is part of the group, whether it’s a coach or a player. I think that shows, again, weakness and shows disruption. So right now, what we’re showing is togetherness and that’s what we want to continue to show as a team.”

What they were able to show on Wednesday was an ability to practice. All of them.

Even with Joakim Noah (right ankle/left knee) unable to do all the work, it was enough for Thibodeau to walk away feeling like there was hope that Noah and Mike Dunleavy (right ankle) would be making quick returns.

Undescended testicle a risk factor for testicular cancer Dear Doctor K: I’m in my 30s.

A friend of mine was recently diagnosed with testicular cancer.

What should I know about this cancer? Should I be screened for it?

Dear Reader: Testicular cancer is the uncontrolled growth of abnormal cells in one or both testicles (testes). Nearly all testicular cancers start in germ cells. These are the cells that make sperm.

The testicles are located in the scrotum, behind the penis. In addition to sperm, they produce testosterone and other male hormones. (I’ve put an illustration of the male reproductive system on my website, AskDoctorK.com.)

Most types of cancer affect older folks. But testicular cancer strikes young men, usually between the ages of 20 and 35 years.

The biggest risk factor for the disease is an undescended testicle. Before birth, a boy’s testicles develop in the lower abdomen.

They travel down into the scrotum during the seventh month of fetal development. A small percentage of boys are born with one testicle that failed to descend into the scrotum. Many descend on their own during infancy. If not, doctors can perform surgery to fix this problem. This surgery is usually done before age 2.

The brothers or sons of men

ASK DOCTOR K Anthony L. Komaroff with testicular cancer are at much higher risk for developing it themselves. I strongly advise any first-degree male relative of a patient with testicular cancer to: 1. examine themselves every several months; 2. have their doctor examine them at least every year.

The main symptom of testicular cancer is a gradual enlargement of the testicle. It loses its spongy texture and becomes abnormally firm. Some men notice a lump or mass in the testicle, which is usually painless. Some men experience a dull ache in the groin or lower abdomen.

Most of the time, men detect the mass or enlargement on their own. Or their sexual partner notices it. Unless you have a first-degree relative with testicular cancer, regular self-examination is not recommended.

Neither is screening by doctors.

Nevertheless, I and many doctors regard examination of the testicles to be an appropriate part of a complete physical examination. At the same time, I have never discovered testicular

cancer during a routine examination. The cases I’ve seen have been noticed first by the patients.

Once testicular cancer develops, it is likely to spread within or beyond the testicles if it is not treated.

Treatment depends on a person’s overall health, the type of testicular cancer and its stage.

(The stage is a measure of how far the cancer has spread.) If the cancer is caught early, surgery to remove the testicle may be enough. In other cases, additional treatment with radiation therapy or chemotherapy may be needed.

Today, testicular cancer is one of the most curable cancers.

But treatment can cause side effects. Fertility is a common concern, because radiation therapy and chemotherapy can damage sperm. For this reason, men who undergo intensive therapy can store their sperm in a sperm bank before the treatment begins. In this way, they can father children in the future.

Fortunately, nearly all survivors keep normal sexual function.

Dr. Wallace: I was appalled when I read your reply to a teenage girl who asked you to judge the “better” report card: one with As in English, geometry and Spanish, or one with As in P.E. auto shop and art.

Although the girl may be superior in verbal skills and formulaic problem solving, her brother is superior in creative problem solving as well as physical/ visual skills. We do agree that both students should be proud of their grades; however, I do not agree that one report card was better than the other.

Each student shows exceptional talents at different tasks, each valuable in its own right and necessary for the sake of humanity.

Our society is in dire need of both of these students, and we should be eager for the girl to become a verbal communicator with logical thought, and look to her brother for future technological advances and expressive communication.

There were two ways to eliminate a loser and gain a winner: either diamonds would split 3-3 or South could ruff a diamond in the dummy.

Declarer’s drawing one round of trumps was fine. If everyone had followed suit, he would have played three rounds of diamonds.

Now, though, he had to worry about getting that fifth trump trick.

He needed a heart ruff in his hand.

Just in case West had doubletons in each red suit, South carefully played a diamond to dummy’s king and ruffed a heart with his spade seven before continuing with the ace and another diamond. Now the contract was safe.

The Issuer is a political subdivision, a body politic and a municipal corporation duly organized and validly existing under the laws of the State of Illinois (the "State"). The Bonds will be issued by the Issuer pursuant to the Upper Illinois River Valley Development Authority Act, 70 Illinois Compiled Statutes, 530/1 et seq., as supplemented and amended (the "Act"). Cheers to compost “It’s your turn to take out the compost.” Whether said peevishly or as a gentle reminder, it’s a remark heard even in households that are joyful about their compost bucket. Returning the remains of their meals to the soil in which they were grown, thereby adding to it fertility and good tilth, is a blessed circle.

The compost pile is almost like a family member that deserves to be fed.

If the pile is well managed, feeding it is a painless ritual. This means taking out the bucket of kitchen scraps every day or two, before they begin to call attention to themselves. But if a stalemate has gone on for a week and no one has budged, it’s tempting to hand the bucket to a guest who’s reaching helpfully for a towel to dry the dishes.

“Here, take this putrid thing outside and scrape it, instead.”

It’s best to choose a receptacle that simplifies the job. I favor a well-made stainless-steel pail you

onto the pile.

I asked Will Brinton, who heads Woods End, why they were no longer offered. “They’re no longer made,” he said. “Most paper containers for food are lined with plastics now.”

Milk and juice containers once were coated with wax and made great disposal units for kitchen scraps, but now they are lined with polyethylene, he explained.

According to a study done by Woods End and EcoCycle in Boulder, Colorado, “microplastics are shed from all plastic-coated paper products during compost” and may pose a significant risk to sea and land creatures, including us. The Federal Trade Commission forbids these from being labeled “biodegradable” or “Earth-friendly,” but this info has made me cautious about composting any paper food containers at all.

So, here I am with my little pail, as are most of my neighbors. We still laugh about a winter potluck we had some years back, lit by flickering candles and rollicking good cheer, with a bounty of

Trimming vegetables outdoors, near the pile, can cut down on overflow; you can also have a second pail in reserve.

Starting with dry ingredients – like old bread – that absorb moist ones can keep the bottom layer less gummy and horrible. I also found a way to keep the pail handy and invisible at the same time, by having a hole cut in the countertop, next to the sink. In a drawer underneath sits the pail, for easy removal.

Using a lid might seem tidier, but cutting off air promotes anaerobic decomposition, which is smellier than the aerobic kind.

For a time I used some handy brown-paper pail liners, coated with a water-resistant biodegradable film. Sold by Woods End Laboratories in Mount Vernon, Maine, they could be lifted out of the pail and placed directly
