EAT HEALTHY EVEN WHEN

With restaurants closed for coronavirus, how do you enjoy something out? Fortunately, we have delivery options or curbside options that still exist. Just think, ifwe can stamp this virus out within a month or so, we can get back to eating out more normally. Let’s support our local restaurants. Join me and do a take-out order at least two times a week.

In the spirit of the time frame of upcoming summer, there are a number of places around town that are serving Mediterranean in a healthy way, but none more tastier and authentic than Chef Abdul Mediterranean. When you first search for this place, you just might drive by it even with the help of google maps. Then when you get their food, it just goes over the top, almost as if you were in the Mediterranean Sea oceanside. I decided to try their baba ghanoush as a shared appetizer. The delectable infusion of spices and aromas mix with the eggplant and create this dip that you can eat with some fresh pita or should I say bring me a gigantic serving spoon! For the main course, I chose the beef kabob plate, which put two skewers of tasty beef kabobs like I remember from my trip many years back to Egypt. There was a family-owned restaurant in the village near the pyramids that

served kabobs exactly like this one. Couple that with some falafel, which are chickpea fritters, and you are over the top again. In fact I put a little of the baba ghanoush on top of the falafel to add a second layer of flavor. And, I did ask them to hold the rice. That kept my balance of protein and carbs in a favorable manner. Give this one a try and you will come back to take out again as its big flavor!
