The Jasper County Veterans Memorial Commission will be constructing two new veterans’ memorials which will be placed on the courthouse lawn. The first will serve as a memorial to all Jasper County vets and will be placed on the east side of the courthouse. It will be a ten ton stone on a 15x15 pedestal and will be painted with military themed murals. The second memorial will be located on the south side of the courthouse next to the current veteran’s memorial. It will hold over 350 bricks engraved with names in honor or memory of local veterans. Any Jasper County veteran who lived in the county when they joined, lives in the county currently, or is now serving active duty is eligible to have their name placed on a brick. A copy of your DD214 or honorable discharge papers will be required along with your application. The bricks will cost $100.00 each. The bricks will hold three lines with 15 letters/spaces on each line. (Inclusion in this project does not automatically qualify participants as veterans as defined under Iowa Code chapter 35)
Applications will be accepted until 4pm on November 8th, 2013. Due to the logistics of the process, no applications will be accepted after that. We plan to unveil the new monuments on July 4th, 2014. Simple Thanksgiving Dinner Tips Courtesy Of The Founding Fathers (NAPSA)—Many Americans want to treat family and friends to a holiday meal with a bit of tradition to it. Making that easier is a delicious recipe for roast turkey that harks back to Colonial times. “Thanksgiving is about re-creating family traditions, about taking time to be with loved ones and honoring generations-old values,” explains Emmy Award–winning TV host, cookbook author and culinary historian Chef Walter Staib, City Tavern of Philadelphia proprietor. “It’s the only truly American holiday centered around savoring our nation’s
culinary heritage.” This simple turkey recipe is based on what our forefathers ate at their celebrations. “It will taste just as delicious now as it did to our Founding Fathers.” Early American Roasted Turkey recipe by Chef Staib Serves 8 to 10 1 (18- to 20-pound) turkey, with giblets Salt and freshly ground black pepper 1 medium yellow onion, quartered 1⁄4 cup chopped fresh parsley 2 Tbsp. chopped fresh thyme 2 medium shallots, finely chopped
1 bunch fresh sage, on stem 1 bunch fresh tarragon, on stem 1 Tbsp. olive oil Preheat oven to 325° F. Place oven rack on bottom level. Place wire roasting rack in large roasting pan and spray with vegetable cooking spray. Remove giblets, neck and any visible fat from cavity. Discard liver and fat. Rinse turkey inside and out with cold water; pat dry. Sprinkle turkey cavity with salt and pepper. Place quartered onion inside. In small bowl, combine parsley, thyme, shallots and 1 tablespoon of the oil. Sprinkle with salt and a generous grinding of
pepper. Rub herb mixture on meat under the skin on each side of the breastbone. Place fresh sage and tarragon under skin, leaving whole. Tie drumsticks together with kitchen string and twist the wing tips behind the back. Place turkey, breast side up, in prepared roasting pan. Roast for about 2 hours, until breast is browned. Cover with foil and roast for 3 to 4 hours, basting the turkey every 15 minutes with its own juices. Roast until a meat thermometer inserted in a thigh muscle registers 180–185° F. “Turkey is delicate by nature—the sharper the knife, the cleaner the cut and the nicer the presentation,” says Staib. Make a long, deep (to the bone) horizontal “base cut” into the breast just above the wing. • Step 3 Slice down vertically through the breast until you meet the original base cut. A Few Simple Steps For A Safer Fall Kitchen (NAPSA)—Don’t let foodborne illness become the secret ingredient in your favorite fall recipes. Still an uninvited guest at many events, food poisoning sends more than 100,000 Americans to the hospital each year—and it can also have long-term health consequences. Fortunately, by following a few simple steps, you can avoid most problems. Here are some tips from the Food Safety and Inspection Service (FSIS) of the U.S. Department of Agriculture. • Washing your hands is still a simple but effective way to stop the spread of many illnesscausing bacteria anytime of year. And don’t forget to rinse your hands well under running water and dry them using a clean towel or air-dry. • An estimated onefifth of U.S. households can their own food. However, many home canners are not aware of the risk for botulism, a rare but potentially fatal form of food poisoning that has been linked to improperly canned food. The bacteria that cause botulism, Clostridium botulinum, are found in soil and can survive, grow, and produce a toxin in sealed jars of food. The only protection against botulism food poisoning in low-acid
home canned foods is the heat applied during canning. Using traditional methods that were handed down over generations or using boiling water instead of a pressure cooker can be deadly. Consult the USDA’s “Complete Guide to Home Canning” to ensure you are canning safely. • If you are serving food at a fall party, remember to keep hot foods hot and cold foods cold. Hot foods should be held at 140° F or warmer. On the buffet table, you can keep hot foods hot with chafing dishes, slow cookers and warming trays. Cold foods should be held at 40° F or colder. You can keep foods cold by nesting dishes in bowls of ice. Otherwise, use small serving trays and replace them as needed. • If you are cooking foods ahead of time for your party, be sure to cook them thoroughly to safe minimum internal temperatures—145° F for steaks, roasts and chops with a threeminute rest time, 160° F for ground meat and 165° F for poultry and ground poultry, as measured with a food thermometer. • If you’re making seasonal cookies, never eat raw cookie dough. The uncooked eggs in the dough may contain salmonella or other harmful bacteria.
