How to avoid dry turkey this Thanksgiving

Turkey is the center piece of Thanksgiving dinners. The National Turkey Federation esti mates approximately 46 million turkeys are con sumed on Thanksgiving each year, followed by 22 million turkeys at Christ mastime.

Turkey makes a pleasing picture on the dinner table. However, some people insist that turkey is their least fa vorite component of the Thanksgiving meal. One of the biggest complaints is turkey tends to be dry.

There are many rea sons why turkey can come out dry. Turkey is a lean meat, and Health line reports that turkey has slightly less fat in its dark meat than chick en. Another reason why turkey may be dry is due to its poor breastto-leg ratio. By the time

one gets the leg meat to cook to temperature so it’s safe for consumption, the breast meat often has dried out. Seeing how many people dive for the breast meat initially, they could dish up some dry bird.

There are many ways home cooks can prevent dry turkey this Thanks giving. Consider these turkey-tending tips.

• Brine your bird. Ac cording to ScienceBlogs, what causes a human to perceive a food as juicy may actually be his or her own saliva at work. Salty foods may stim ulate the production of saliva in the mouth, help ing the food to feel much more moist while on the palate. To adequately in ject enough salt into the turkey meat, submerge it in a salt brine for a few days before cooking.

• Watch your cook time. It’s important to avoid overcooking the turkey, which will turn it as dry as the Saha ra. Some turkeys come equipped with pop-up timers to help cooks gauge when to take them out of the oven. However, a more accurate tool is a digital food thermometer that can be set to go off when the turkey reaches the correct internal tem perature.

• Cook the turkey parts separately. As previously noted, the breast meat will likely reach the de sired temperature before the leg meat. To fix this, take the turkey out of the oven when it reach es five to 10 degrees be fore safe temperature for the breast meat, around 165 F. (Remember, the meat will continue to cook while “resting.”)

Let guests “ooh and aah” over the picture-perfect turkey. Then cut off the legs and return them to the oven until they are done. Arrange the prop erly cooked breast and leg meat together on a serving platter.

• Offer condiments. A moist dollop of stuffing, a drizzle of gravy or a scoop of cranberry sauce can add moisture to tur key. This approach does not prevent drying out, but it can make a turkey that has dried out a bit

more satisfying. Dry turkey can put off diners. However, some strategies can harness as much moisture as possi ble to enhance Thanks giving dinners.

• Flours: All-purpose

flour is versatile and useful in many recipes. In addition, bread flour, cake flour and pastry flour have attributes that make them better suited for their respective jobs than all-purpose flour. Individuals who follow certain diets, including gluten-free diets, can find alternative flours that can be substituted in many different recipes.

• Baking soda: This leavening agent is ac tivated when it is com bined with acid and heat. That is why it is often paired with citrus juice, buttermilk and sour cream.

• Baking powder: This leavening agent is bak ing soda mixed with a powdered acid and corn starch. If baking soda is

the only leavening agent, it will not require the ad dition of another acidic ingredient. “Double-act ing” means carbon di oxide bubbles will form during mixing and again during heating.

• Yeast: Yeast takes more time to metabo lize and cause doughs to rise than other leavening agents.

• Sugar: Granulated sugar is the most com mon sugar found in reci pes. Confectioner’s sugar (powdered sugar) is used in frosting and icings. Brown sugar is refined sugar with molasses add ed, and is used in certain recipes, like gingerbread.

• Salt: Granulated ta ble salt is used in every day baking.

• Unsalted butter: Un

salted butter will be the default for baked goods unless the recipe specif ically mentions salted butter.

• Eggs: Eggs help to bind ingredients togeth er. Large eggs are most often cited in many bak ing recipes.

• Milk: Dairy adds moisture and texture to batters. Alternative milks, such as soy or almond milk, can some times be substituted, but the resulting texture may change.

• Vegetable oil: Many recipes call for vegetable oil, which has a neutral flavor.

• Shortening: Short ening is a solid vegetable fat used to make tender baked goods. Shortening also has a higher melt

ing point, which helps cookies and other items retain their shape while cooking.

• Flavorings: It is helpful to have various spices and extracts on hand. Cinnamon, ginger, nutmeg, cloves, and all spice are some common baking spices. Almond and vanilla extracts are quite versatile and add extra punch to recipes.

• Additions: Mix-ins, such as chocolate chips, cocoa powder, oats, nuts, and dried fruits, often turn up in holiday reci pes.
