hile we attempt to offer Illinois Valley Living readers a variety of stories for everyone and anyone — men, women, old, young, city folks and country folks too, I’m especially tickled with this edition, since we are honoring a variety of women who call the Illinois Valley their home.

That’s right. Included in this edition of your Illinois Valley Living magazine, you’ll find the 10 winners named in our inaugural Women of Distinction event. We had a ton of nominations, and quite frankly, I’m glad we sent all the nominations out of the area to be judged, since every one of the women nominated has made a difference in the Illinois Valley and beyond. I was humbled by the truly deserving women you nominated.

Our Women of Distinction luncheon is set for 11:30 a.m. on Oct. 17 at Deer Park Country Club in Oglesby. I hope you will be able to make it. All 10 of our Women of Distinction will be there, but quite honestly, it will be a great time to honor all the women and the wonderful and benevolent qualities they bring to the Illinois Valley. Besides that, it will be a ton of fun. Well-known, columnist, radio personality, friend and Illinois Valley resident Kathy O’Malley is the keynote speaker, and if you know Kathy, you know there’s never a shortage of good times when she’s around.

O’Malley: Our biggest obstacle in business is also our biggest strength, and that is our sensitivity. To be successful, we often need to rein in our impulse to have emotional responses in professional situations. Like Tom Hanks said in “A League of our Own,” “There’s no crying in baseball!” Well, there’s also no crying (or whining, or passive-aggressiveness, or manipulating) in business.

On the other hand, I think it makes us much more sensitive to subtleties in conversations, in responses of others, etc.

IVL: What do you see as the biggest opportunities for women today?

O’Malley: No different than the biggest opportunities for men, which is a great thing to be able to say because it’s only in the last 20 years or so that it has been the case.

IVL: What is the message that you want to give to women today as they attempt to influence their world?

O’Malley: Don’t attempt to influence your world through your job, unless you work for a non-profit, and that’s probably why you chose it. Too many people, and probably women more than men, think that their job is going to provide them “fulfillment” and a chance to change the world. The likelihood is that it’s probably not. Your job gets you a paycheck, so you can do the fulfilling stuff outside your job.

And “think globally, act locally” is a great guideline. You can’t save every starving child in Third World countries, but there are plenty of hungry children right here in Bureau County. Them, you can help.

IVL: Should women even attempt to influence their world, or should they just live their lives the best they can and try to stay out of trouble?

O’Malley: I think that most women who have influenced their world did not set out to do that. They set out to fix a wrong, to make something better, to do something that somebody else didn’t want to do — and in doing so, they did change their world.

Sometimes they didn’t always stay out of trouble either because causing trouble also can change things, but always be sure to take a cute mug shot.

IVL: Looking back on your own life, Kathy, how have your goals and focus changed during the years?

O’Malley: I have never in my life had a professional goal or a career plan. I just plugged away at jobs and wound up being very lucky, being in the right place at the right time on more occasions than anyone deserves. In my early working years, I just wanted to pay the bills. Later, when I was paying the bills with some to spare, I just wanted to keep doing those fun jobs well. And I did, for a long time.

Now, I appreciate not having to show up for work five days a week and having time to do pretty much whatever the heck I want.

And napping.

IVL: What have been the biggest surprises along the way?

O’Malley: That I would be so much happier divorced than I was married; that I had two remarkable jobs (newspaper columnist and radio host) that thousands of more qualified people would have killed for; that despite the fact that I wasn’t a model mother, my children turned out to be lovely and competent adults; and that Natalie Portman beat out Annette Bening for Best Actress Oscar in 2011.

IVL: Does a person ever become too old for surprises?

O’Malley: Probably not, but with really big surprises there’s always the risk of a heart attack.

IVL: In recent weeks, the IVL has learned O’Malley will go back to doing the Kathy and Judy radio show through WGN in Chicago: O’Malley: It wasn’t something Judy and I sought out. The new management came to us and asked if we’d be interested in coming back for a weekend show, which was something we really hadn’t thought about. It reminded us how much fun we used to have, and then they made a really pleasant offer, so what the heck? Two hours on a Saturday morning? Same format? Back to talking with our girlfriends? Doesn’t even feel like work.

IV LIVING MAGAZINE HONORS THE WOMEN OF THE ILLINOIS VALLEY

I

t’s no secret the women of the Illinois Valley are an amazing group of ladies.

Just ask anyone to name a woman who has made a difference in the Illinois Valley, and there’s no shortage of answers.

Whether they are an entrepreneur, a mother, a soldier, a visionary, an idealist, a grandmother ... they all have a story, and we are always honored to be able to recognize these women and share their often amazing stories with you, our readers.

Likewise, many of the stories in this edition of our magazine focus on women.

But Illinois Valley Living Magazine has decided to take that recognition on step further.

To honor those who have made it their passion to better the Illinois Valley, Illinois Valley Living Magazine has chosen 10 women to receive the first Women of Distinction Awards.

These awards will be given to women who have made a difference in the Illinois Valley and who are representative role models as leaders in their fields and communities. The featured women were nominated by a member of the community and selected by a special committee from outside the Illinois Valley in McHenry County. The selection committee was comprised of past Women of Distinction winners in that part of Illinois.

In the following pages, you will meet each of our winners. It is our hope you become inspired by these women and find your own way to make the Illinois Valley a better place to live, work and play.

To further honor these exceptional women, Illinois Valley Living Magazine will an awards luncheon from 11:30 a.m.

to 1:30 p.m. Thursday, Oct. 17, at Deer Park Country Club in Oglesby.

Keynote speaker at the event is Kathy O’Malley, former Chicago Tribune columnist, and co-host of WGN’s Kathy and Judy Show, which was recently brought back to life by the Chicago radio station. O’Malley has made her home in rural Princeton and commutes to the city for the two-hour radio show every Saturday.

Kim Abel City of residence: Mendota.

Organization/company: Trinity Health Care, sponsored by Nightengales Thrift Shop/parttime nursing instructor at Illinois Valley Community college.

Kim Abel is the managing director of Nightengales Thrift Shop and medical clinic in Mendota, but Abel doesn’t like the title. Though she admits she oversees the day-to-day operation, she emphatically said she’s no more important than anyone else who works or volunteers at this community project.

Abel was integral in creating the Nightengales Thrift Shop, which houses a free medical clinic inside its doors. The self-sufficient clinic, which operates on the money earned at the thrift store, offers medical help to those with no insurance; the underinsured; those with unmet needs on Medicare and Medicaid; those who need medical attention and have nothing to fall back on; and more. The thrift shop is run entirely by volunteers and clients, and doctors and nurse practitioners volunteer at the free clinic. “This is the way medicine should be practiced,” Abel said, adding the clinic helps hundreds of people annually.

Abel, who holds a master’s degree in nursing, works part time at Illinois Valley Community College in the nursing program, and IVCC nursing students also go to the Nightengales clinic to work on their nursing skills and gain valuable experience.

Abel is also a board member of the Graves-Hume Public Library and involved in the Friends of the Library.

Abel’s nominator said, “Kim Abel is the inspirational lynchpin of Trinity Health Care of Mendota and Nightengales Thrift Store ... If she sounds amazing, you understand how she is seen by the many she interacts with daily ... She is truly beloved by all.”

Kathy Casstevens City of residence: Utica.

Organization/company: Starved Rock Lodge.

When it comes to promoting not just Starved Rock but LaSalle County and the state of Illinois, Kathy Casstevens is a woman who takes that task to heart. As marketing director for Starved Rock Lodge, she has helped to create a buzz — not just for the well-known tourist attraction in Utica, but also the entire county with her marketing efforts on three websites, Facebook, You Tube and more. She was recently given the Illinois Office of Tourism’s Land of Lincoln Award, where recipients are honored for welcoming visitors with open arms and making their trip to Illinois an unforgettable experience.

Casstevens’ role on the LaSalle County Tourism Coalition helps to benefit the entire county, enabling local tourism industries to thrive. She was recognized for her hospitality and efforts to make Illinois a world-class destination for travelers to enjoy.

With a degree in public relations and a second major in photography, Casstevens has put her photographic skills to work by developing a 50,000 image digital photo library, which enables her to help promote Starved Rock and the surrounding area.

Throughout her career, she has also been involved in the Heritage Corridor Convention and Visitors Bureau, Girl Scouts, Boy Scouts, the PTA, children’s theater and more.

One of Casstevens’ nominators said, “Kathy represents the Illinois Valley each and every day. She is determined to make people aware of all there is to do in this community, which benefits each and every one of us. She is strong and has an optimistic outlook on life that shines through every day.”

Mary Ann Cernovich City of residence: Sheffield.

Organization/company: Mary Ann-tiques/Landmark Realty.

Born and raised in Sheffield, Mary Ann Cernovich loves her hometown and the people who live there. While Sheffield is no different than most small towns across the country which has seen better and more prosperous days, Cernovich has made it her mission and has worked tirelessly to help restore the vibrancy to this small town of less than 1,000 people.

Cernovich can be found in the midst of nearly every village function, participating in any way she can. She is the founder of Sheffield Pride, an organization dedicated to improving the village. Through that organization, she donated a Main Street storefront and developed a second-hand store called Too Good To Be Threw, where all the proceeds go back to Sheffield Pride. She is also the founder/organizer of Sheffield’s Music on Main event— an evening festival that brings live music, food, children’s events and predominantly people from all over the county and beyond to experience Sheffield and all it has to offer. She is also the founder/ organizer of Sheffield’s holiday celebration, Celebrate Sheffield.

Cernovich and her husband also opened the Sheffield Pride Arts Center — a 42-seat movie theater which is open every Saturday. There is no admission fee and even the popcorn is free to anyone who wants to enjoy a movie.

A registered nurse, Cernovich is also a realtor with Landmark Realty and owns an antique shop in Sheffield, Mary Ann-tiques.

Her nominator said, “I’ve never seen her idle. She is always busy and involved in activities to benefit the town. I can’t imagine the amount of time, energy and money she has donated to Sheffield — never asking for anything in return.”

Lisa Clinton City of residence: Cherry.

Organization/company: St. Margaret’s Health.

As the director of occupational health and safety at St. Margaret’s Health in Spring Valley, Lisa Clinton is seldom idle. She is also the director of support groups and health promotions, director of transportation and volunteer services, the safety director and the EMS coordinator.

While many of Clinton’s responsibilities are inter-related, she is well-known in the community and surrounding area, since she is responsible for the management of the Occupational Health Program which services more than 250 companies through St. Margaret’s Health. She is also responsible for scheduling, staff training and performance evaluations, policy development, programming and acts as a liaison between businesses and hospital administration.

Among a plethora of other duties, she plans public screenings, community health education programs, school physicals, public CPR/First Aid programs and support group meetings, while managing infection control, employee health, Convenient Care Clinic, transportation services, valet parkers, volunteers services and couriers.

Clinton, who holds a nursing degree, is also active in her community and a mountain of other organizations including the Cherry Fire Department, 10-33 Ambulance Service, CPASA, American Heart Association and more. She was a former Cherry Village Board member, YMCA Board member, Cherry Library Board member, Girl Scout leader and more.

Her nominator said, “I can think of no one more worthy of this honor than Lisa. She truly has the best interest of our community at heart, and that’s what motivates her to excel in all of her professional and volunteer efforts.”

Dawn Conerton City of residence: Magnolia.

Organization/company: Community Partners Against Substance Abuse (CPASA).

As program coordinator for Community Partners Against Substance Abuse, her co-workers say “Dawn is a trailblazer in the field of substance abuse and ... eats, sleeps and breathes drug prevention.” For the six years of CPASA’s existence, Dawn Conerton has led the battle against substance abuse in Bureau and Putnam counties. Statistics now show CPASA’s efforts are making a difference with declining alcohol and substance abuse rates among youth in the area.

CPASA started with only seven people sitting around a table and talking about substance abuse. Six years later, Conerton has grown CPASA to an effective and thriving substance abuse coalition, which is now 82 members strong from all sectors of the community and walks of life.

Under Conerton’s leadership, CPASA has held a community forum on the dangers of the potentially deadly bath salts, which resulted in new ordinances banning the sale of synthetic drugs; started a P2D2 Prescription Pill Disposal Program, which has taken 4,343 pounds of unused and expired medication off the streets; created a “Guide for Safer Fairs and Festivals,” to help keep people safe who attend and organize area festivals where alcohol is served; developed a substance abuse prevention networking guide; and much more. Conerton is also spearheading efforts to start a statewide Substance Abuse Coalition.

Her nominators said, “It is with great enthusiasm we would like to nominate our fearless leader ... We can not imagine anyone more deserving. Dawn is a gem, a jewel — rare and precious — in this sometimes cold and impersonal world.”

Pat Schou City of residence: Princeton.

Organization/company: Illinois Critical Access Hospital Network (ICAHN).

As executive director of the not-for-profit Illinois Critical Access Hospital Network (ICAHN), Pat Schou is the leader of this first state-wide critical access hospital network, which is comprised of 52 critical access hospitals providing several hospital support services and educational programs. ICAHN also manages the Medicare Rural Hospital Flexibility Grant, Small Hospital Improvement Grant and several other grant programs on behalf of the Illinois Department of Public Health.

Prior to ICAHN, Schou was the state critical access hospital coordinator and was instrumental in Illinois being recognized as one of the most successful state critical access hospital programs.

Through her work, Schou has demonstrated leadership in many ways, not just in the Princeton area, but also in Bureau County and across the state of Illinois. Enthusiastic and energetic, she has been a tireless leader who leads a team of people focused on assisting and guiding 52 small rural hospitals in Illinois.

Schou holds a bachelor’s degree in nursing, as well as a Master’s of Science degree. Some of her other past and current positions include president of the Illinois Rural Health Association, the National Rural Health Association, Rural Congress, Rural Health Quality Workgroup, Board of the Accreditation Association for Hospital/Healthy Systems and more. She is a member of the American College of Healthcare Executives.

One of her nominators said, “Pat Schou is a health care professional who with impressive feminine grace, advocates for rural health care and service provision throughout the state of Illinois.”

Nedda Simon City of residence: Princeton.

Organization/company: Freedom House.

It all began in May 1983, when Nedda Simon decided there was a need — a big need for women to feel safe and find shelter away from abusive situations. Thus, Simon founded Freedom House — a domestic violence shelter — and she never looked back.

Freedom House came from “quiet whispers between friends and neighbors, since at the time of its inception, communities believed domestic violence should remain a ‘family matter,’ or it was simply the woman’s fault, and she should just leave,” Simon said.

Simon’s first shelter opened in Wyanet. Two years later, a Henry County outreach office opened in Kewanee. In December of 1988, Freedom House moved to Princeton and added a sexual assault program. In 2003, Freedom House moved again to its current home, where a plethora of programs and services are offered for victims of domestic violence and sexual abuse.

The facility includes 16 crisis shelter beds and three apartments with an additional 12 beds.

Upscale Resale, a resale shop that supports the work of Freedom House, opened in 2006 in Spring Valley.

Simon, who holds a bachelor’s degree with past studies in mental health, addiction and specializes in women’s counseling, said “Freedom House is my fulfilled dream to offer safe haven to all women and their dependents.

Quiet comfort from chaos, violence, fear and threats is now a reality for anyone who seeks it.”

Simon’s nominator said, “When I first heard about the Women of Distinction, I thought of Nedda immediately. She is an incredible woman with a compelling story about how Freedom House began. Many women are grateful today that Nedda had the foresight and courage to begin this incredible safe haven.”

Loretta Volker City of residence: Princeton.

Organization/company: Nurse/counselor.

As an active, professional registered nurse for 50 years, Volker has had the opportunity to share her expertise through several venues. Beside active duty as a nurse, she has volunteered her professional services as a social worker and a behavioral therapist; initiated a parish nurse program in her church to include a newsletter, blood pressure clinics and parochial school health physicals; offered a month-long information and discussion group on suicide prevention; regularly offers free, confidential counseling to hear problems, rendering an assessment of how and who can help resolve personal, career and family issues; established three free clinic sites for premature infants; serves on the Bureau County Board; and more.

Volker has designed and taught many courses associated with health care; one particular course was in Disaster Nursing, which she designed during the Cold War in the 1960s. Years later, the state of Illinois used that Disaster Plan and the nursing elements as requirements for professional nurses seeking certification in a new specialty — Disaster Nursing. Elements of Volker’s plan are still used today in the Local Emergency Planning Committee’s Police, Fire, EPA and OSHA plans.

Besides her work with health care, Volker has been extremely active in her church, her family and her community.

Her nominator said, “This lady is an enthusiastic, tireless leader in her community, taking her primary career in nursing education into new venues ... Loretta is totally an Illinois woman!”

Judith Wilkins Wright City of residence: Rural Tiskilwa.

Organization/company: Volunteer.

Just because Judith Wilkins Wright retired from her registered nurse position at Princeton Family Physicians, it didn’t mean she was really retired. Wright is far from lounging around the house and eating bon bons in front of the TV. Instead, Wright could be classified as a volunteer extraordinaire.

Along with her personal commitments to her family, Wright can be found volunteering her time and talents in a variety of venues. She has long played a key role in several local groups, all organized for the purpose of changing lives in a positive manner. Some of the organizations that benefit from Wright’s volunteer efforts include the Bureau County Youth Development Coalition, the Tiskilwa Historical Society, Boyd’s Grove United Methodist Church, the Tiskilwa Scholarship Association, Festival 56 fundraising for youth acting school, Tiskilwa Fire Protection District and the University of Illinois Extension Regional Advisory Council.

Wright is considered the “founding mother” of the 7-year-old Tiskilwa Historical Society and the long-time treasurer of the Tiskilwa Scholarship Association — which has awarded more than $30,000 in scholarships in the past 15 years. Recently, she helped establish the Weekend Snack Pack in connection with her church, which delivers snacks to qualified children in the school district.

Wright’s nominator said, “Since Illinois Valley Living is looking for someone with a big heart, an amazing work ethic and a generous nature, I think I’ve struck upon a most worthy candidate.”

Teresa C. Zearing City of residence: Princeton.

Organization/company: Princeton Theatre Group.

Sometimes a vision ... a dream ... can turn into reality. Just ask Terri Zearing.

Ten years ago, Zearing had a vision of bringing theatre, education-related business to Princeton as a way to encourage not only the arts, but also tourism and economic development — primarily to encourage the town’s economy. After several meetings with key people in the area, Zearing led the charge in creating a theatre festival as the essential foundation for a theatre school in Princeton.

Thanks to Zearing’s passion, imagination and determination, the Princeton Theatre Group, of which Zearing is the past president, has been successful in supporting two projects: Festival 56, Illinois’ only summer theater program which brings New York actors/actresses into Princeton to perform Broadway-quality shows, and an educational component, dedicated to expanding theatre education in connection with Festival 56. Also, Camp 56, a summer program to train young people behind the scenes in all aspects of theatre — giving them an opportunity to perform on stage in a professional production — has been highly successful.

She has also been instrumental in developing and supporting a number of theatre-related courses for adults including Meet the Plays — a series of panel discussions held in cooperation with the local library each June to educate the public about the upcoming festival season.

Her nominator said, “I highly support Terri for this honor. It is more than just her initial vision and identification of the need — she acted on her vision and then carried it out, and that makes her such a talented and special person.”

T

here are two leading reasons why people flock to the Cajun Connection restaurant in Utica – 1.

To the taste the alligator and the other delicious concoctions whipped up in the tiny kitchen; and 2. To hear what the outspoken Cajun Chef Ron McFarlain is going to say next.

As the area’s vibrant Cajun, country personality, he is known to step outside the kitchen and entertain visitors with his often sarcastic Southern charm.

A native of Lake Charles, La., McFarlain grew up in the swamps, where catching squirrels, deer, bullfrogs, catfish and alligator all in one day for the neighborhood cookout was a weekend routine.

“Nothin’ like catching 200 bullfrogs in one night,” he said. “Alive. Catch ‘em by hand.”

In the late ‘80s, McFarlain signed on with a construction company, where he shared his food heritage by cooking gumbo, jambalaya, crawfish and alligator for his fellow co-workers.

When he fell into the heart of the Illinois Valley, a co-worker invited him to bring his recipes onto his festival concession stand.

“You can’t do that without heating up the steel on my forge,” she said, adding she then uses a hammer and an anvil to mold the steel into the desired shape.

Schertz takes custom orders for the items she creates but does not have an inventory of items to sell at her Tiskilwa shop, since her pieces are original and one of a kind.

“I am making a brass gravesite marker for a family in California,” she said. “I use medium steel for gates, trellises and fences.”

“Every piece is different even though the process to make it is the same,” she said. “There are different ways to shape and form designs. (I am) always learning and expanding my knowledge.”

The property where DOC’s is located used to be a blacksmithing shop many years ago run by Bill Slygh. The building burned down in 1940 or 1941. Another building was built by Schertz’s husband, which now houses DOC’s blacksmith studio.

“We had this shop that was empty,” she said. “I started learning to weld and work with steel. I enjoyed it and kept going. Tom (her husband) had run a small motor repair shop out of this building. After we got married, he started working for the state of Illinois, and I then decided to transform this place into a blacksmith shop.”

Schertz mainly relies on word of mouth to bring in customers. “I have enough work coming in. I don’t sell products on the Internet because I custom make everything I do.”

What is your favorite wine: When I first started at August Hill Winery, I liked the Sweet Catawba. I now like our Stereo, which is a dry sparkling wine made by our sister company, Illinois Sparkling Co. What are the biggest challenges in your job: The biggest challenge is accommodating all the private parties that are scheduled on our patio during business hours (but I always make it work, and the more, the merrier).

If someone asked you to name a memorable moment, what first comes to mind: When my cousins — Kelli, Koralee and Larry — took me ziplining in Las Vegas last year. Woo-hoo!

What do you do in your free time: I enjoying spending as much time as possible with my family. I also enjoy faux painting.

The American Pocket Watch Renamed Boyproof sometime between 1912 and 1914. of clocks and watches each year. Westclox was known for its humane working conditions and contributing millions of dollars to the area.

But times changed, and fueled by the production of cheap watches from overseas, a corporate takeover and labor trouble, Westclox closed its production doors in 1980.

For the next 31 years, the Westclox complex, which covered several city blocks and included 44 structures, remained primarily vacant, though there

Westclox came back into the news on New Year’s Eve 2011, when two teens broke into the complex and started a fire that burned for five days. An estimated 40 fire departments, 200 firefighters and three million gallons of water were used to get the fire under control and contained to only the middle section of the complex.

The LaSalle Public Library has an extensive collection of clocks made at Westclox, donated by Jim and Catherine Whitaker of Mark. Another major collection is held at the LaSalle County Historical Society in Utica. The photos included here are just a smattering of the number of clocks produced at the worldfamous establishment.

HEARTLAND MEATS SELLS A LEAN AND TASTY PRODUCT

I

n 2000, Pat and John Sondgeroth decided to diversify their century-old grain and livestock farm through raising Piedmontese, a specialty beef cattle.

“We directly market our beef raised on the farm to our customers,” said Pat (Joerger) Sondgeroth, one of the owners of Heartland Meats Inc. in rural Mendota. “Piedmontese have attributes of being leaner and more tender.”

“Half of our sales are in Chicago through farmers’ markets. We also sell to restaurants in the Chicago area,” she added. “A small percentage of our sales are retail sales locally.”

Heartland Meats raises about 300 head a year on a farm just north of its retail operation that includes a U.S. Department of Agriculture inspection processing facility where all of the processing is done. The harvesting of the cattle is done at a facility in Aurora, who boxes the beef and transports it to Mendota where it is fresh frozen.

Heartland Meats is American Humane Society certified, the only beef processing facility in the country with this certification because they don’t use growth hormones or antibiotics in raising their cattle.

“We raise our cattle humanely, according to their standards,” said Pat Sondgeroth.

The Piedmontese cattle breed emerged from Piedmont, Italy, the alpine region which is a secluded pocket, naturally protected by the Alps Mountains.

Two breeds of cattle, Aurochs and Zebu, have evolved throughout the centuries through natural selection to become the Piedmontese breed.

In the early 1980s, the Piedmontese were introduced to North America.

Because of America’s desire to lower its total fat control in their diets, the Piedmontese beef has been an increasingly popular option for many due to its leanness, tender-

Ten years prior to opening their operation, the Sondgeroths saw an ad in a farm magazine for Piedmontese beef.

“We laid it aside and revisited this idea five years later,” said Pat. “We ordered some Piedmontese beef over the Internet from someone in Oklahoma, who now have become our good friends.”

The Sondgeroths bought the building on Route 251 south of Mendota that formerly houses the Massey-Ferguson dealership and converted the building into the processing facility.

It is open from 8 a.m. to 4 p.m. Monday through Friday and from 8 a.m. to noon on Saturday. They serve burgers from 11 a.m. to 2 p.m. Monday through Friday. They are closed on federal holidays due to being a USDA plant.

What is the last TV show you watched: Very few shows on TV I really like now, but I prefer well written comedies, like “Seinfeld” and “30 Rock.”

What is your favorite movie of all time: I loved the book “The Godfather,” and thought it was a great movie.

What are your most treasured items on your bookshelf: Family photos.

If you were stranded on a desert island and could have just one meal for the rest of your life, what would it be: Something Italian, like deep dish pizza (I make my own), although I like almost everything.

If you were stranded on a desert island and could only take one thing with you, what would it be: Sunscreen. I wouldn’t last an hour without it.

What is your favorite local restaurant: There are so many good restaurants in the area. My mom loves to go

to Delaney’s on Sunday, after church, and of course Garzanelli’s and MJ’s.

People would be surprised to know that you: I like island music, and I bought a steel drum (pan) hoping to learn to play it. Friends with some music background told me I wouldn’t be able to play it. So far, they’re right.

When you were 5 years old, what did you want to be when you grew up: I was 5 in 1958; like most boys at that time, I wanted to be a cowboy or a fireman.

What do you like most about your job: I have a chance to help people at a most difficult time in their lives.

I can help make things a little easier and lessen their burden. We can help people find a way to honor their loved ones in a meaningful way.

What are the biggest challenges in your job: We deal with real tragedies – loss of children, loss of young parents and other tragedies. Even though we’re helping, it’s very emotional for us too.

What is your favorite thing about the city you live in: Oglesby is a very welcoming town. We were asked to help at Prey Funeral Home following the death of William Prey. Bill

Prey and my father respected each other, and always did their best to help families dealing with loss. I grew up minutes away from Oglesby, and the people of Oglesby were happy, I think, that a local funeral service family would still be here to help when called upon. I’m also excited there are current plans for a new hardware store and grocery store. Those will be great additions to town, and will create needed new jobs.

If someone asked you to name a memorable moment, what first comes to mind: The birth of our two children and now our first grandchild ... what miracles!

What do you do in your free time: We enjoy having friends over for dinner, and Ellen and I like to entertain friends. When we can get away we try to get to New Orleans to visit our daughter and son-in-law. They just bought and remodeled an old home in New Orleans.

What do you consider your greatest achievement so far: My wife and I have been married 35 years and have two children, both married and happy.

In today’s world, it would be great if we can all follow the example of my parents and Ellen’s parents.

What inspired you to go into firefighting and how long have you been part of the Peru Fire Department: I have been in the fire service for 27 years, 13 in Peru. My family inspired me. My grandfather was a firefighter, and my father was also. I grew up in the firehouse.

What is the most enjoyable aspect of your job as Peru Fire Chief: The satisfaction you get from helping

someone out of an intolerable or bad situation. I enjoy working with a great group of firefighters and city officials.

What is the biggest challenge of your job as fire chief: Managing both full-time and part-time firefighters.

The training requirements are becoming so much it is hard to keep parttime firemen as they are balancing family, work and the firehouse.

About how many fires do you respond to each month: 15-20 calls per month.

What fires stand out in your mind as among the most memorable in your career: House of Hunan, Crafter’s Village, Westclox.

What is your favorite thing about the city you live in: A big town atmosphere with small town friendliness.

Traverse City also boasts a host of small eateries whose chefs are as well-known for their imagination and attention to detail as they are for their reasonable prices. There’s plenty of tasty, well-prepared artisan food to be had. The city’s reputation as a “foodie town” has spread far and wide in recent years, thanks to enthusiastic praise from fans like chef Mario Batali.

From Princeton to Traverse City, Mich., plan on a 400-mile trip, or about six and one-half hours. From Peru, one can expect a 385-mile trip, or about six hours. The ride is a scenic one, and you’ll want to remember your camera. While one can easily make it to Traverse City in one day, there is plenty to do along the way, so you may want to allow some extra drive time.

Part of a bigger picture KEVIN KRAMER BRINGS LIFE TO MUSIC FOR HIMSELF AND OTHERS Story and photo by Goldie Currie

T

ucked into a cozy hallway at Music Suite 408 in Peru is the small studio office of local musician Kevin Kramer.

It is here where he teaches people of all ages to play the instrument of their choice and helps them connect with and understand the importance of music.

The talented singer-songwriter is known for his own inventive, ever-changing music style and his proficiency in a variety of instruments including, the sitar, Native American flute, guitar, drums, bass, xylophone, baritone ukulele, trumpet and more.

Kramer is a familiar face in the local music community and has played a variety of local venues in and around the Illinois Valley. He has taken his music to the streets of Chicago and has hit the road a few times in his life to share his talent with various cities in the Midwest.

Possibly what makes Kramer’s style of music so unique is his desire to learn and

incorporate a variety of genres.

“I don’t ever want to limit myself in terms of what I could possibly learn. I always want to be open to learning more,” he said.

Kramer’s appreciation of music came when he was just another fourth-grader learning to play the recorder with his fellow classmates. Playing music then wasn’t like any of the other activities the students were forced to participate in.

“In P.E., you were out competing or you were on a team, but in music it’s everyone playing together, and I liked that,” he said.

As a high-schooler, Kramer knew music was what he wanted to pursue in life. He was playing trumpet in the school’s marching band and was a member of the local bands he had helped start up with friends.

“I really haven’t stopped playing with other people since then,” he admits.

When he was studying music at Columbia College in Chicago, he got serious with writing his own lyrics.

“I’ve always kind of played with the English language in the sense of switching let-

ters and words around, and noticing words that are similar and words that rhyme,” he said. “That’s a lot about what makes writing lyrics fun.”

Today, Kramer looks for inspiration through everyday occurrences and in nature.

“Listening to how birds can communicate with each other and insects, I love going to Starved Rock,” he said, adding that nature was what brought him back to the area after spending three years in Chicago.

To Kramer, music is important to incorporate in everyday life as it opens people up to new worlds, helps convey stories of culture and traditions and brings rhythm to life.

“You have to have it together to be able to do it. You have to find that center of calmness and move from there,” he said.

“Music helps people to get it together and keep it together.”

For Kramer, music is a glimpse into the harmony of a bigger picture that everyone of which everyone is a part.

idney Sheldon once wrote, “Libraries store the energy that fuels the imagination. They open up windows to the world and inspire us to explore and achieve, and contribute to improving our quality of life. Libraries change lives for the better.”

For the past 100 years, Sheffield’s Carnegie Library has accomplished just what Sheldon believed, and on Aug. 17, the Sheffield Public Library acknowledged those 100 years with a celebration for the entire community and anyone who understands a library can clearly change a mind, a life, a community, a world.

Sheffield Library Board President Karl Rahr said a host of activities were planned around the 100-year anniversary of the Andrew Carnegie library, which was built for $3,715 and was officially dedicated on Aug. 9, 1913.

Sheffield’s Carnegie Library turned 100 years old in August, and the library board held a celebration in its honor.

105 Illinois communities that is home to a Carnegie structure — all funded by Andrew Carnegie and primarily built in small towns across the state between 1889 and 1923.

Like the structure in Sheffield, a remarkable 83 of those original Illinois libraries are still being maintained and used as a library

today. Illinois ranks third in its number of Carnegie libraries behind Indiana (164) and California (142). Other Carnegie library structures in the area include those in LaSalle, Spring Valley, Marseilles, Streator, Kewanee and Peru, although all may not be currently used as a library.

Carnegie, a renowned industrialist, provided funds to build 1,679 public libraries in 1,412 U.S. communities. His only two stipulations for donating funds for the libraries were the community provide a suitable site, and the village/town formally agreed to continuously support the library through local taxes.

The board and librarians used the year before the celebration to make improvements to the library and the property on which it was built.

The library has developed a great children’s department and just finished with an interesting summer program that brought members of the community into the library to speak with area youth about their careers and hobbies. The exterior of the library has been revamped with a new landscape, filled with perennials, shrubbery and more. A new flag pole, donated by the Sheffield American Legion, and flag, donated by Mayor Bill Rosenow, was dedicated and installed.

Head Librarian Sue Lanxon said she feels very proud to be associated with the Sheffield Public Library.

“This was a lifelong dream of mine and has been a great fit for me since my retirement from teaching,” Lanxon said. “In the past year, many changes have been made to the interior and exterior of the building, along with improvements in the quality of the collection and also in the area of technology. My goal as Sheffield’s librarian is to be able to provide a comfortable, clean and pleasant retreat where our patrons can find the reading materials they need, provide assistance to our users in the areas of technology, and promote reading for all ages.

“There is nothing more gratifying than getting the right book into the hands of a reader or watching a child’s eyes focus on a book while I’m reading aloud to them during story hour. It is very exciting to be a part of our Carnegie 100-year building celebration.

I have learned so much about the history of the building, and my appreciation of it and the people who have contributed to its success continues to grow,” Lanxon said.

Sheffield Public Library time line The Sheffield Library was first established in 1892 as an outreach of a reading room for the local boys’ club, founded by G.P. Head. It was initially located in the basement of the Sheffield House Hotel.

The Sheffield Village Board eventually assumed responsibility for the book collection, which started the public library that was then housed in a private residence on Main Street in Sheffield in 1896.

The book collection kept growing, and the local women’s club formed a reading club. Sisters of the boys in the boys’ club pitched in to help.

The library moved several times and was housed in a variety of locations in the village.

On Feb. 18, 1911, the village’s postmaster, C.A. Simington, wrote to Andrew Carnegie. His letter said: “Our library has been in existence about 15 years and during that period, we have rented such rooms or buildings as have been available from time to time ... The village owns a desirably located corner lot, directly across the street from our public school, which is available for building purposes, and a library building there would be greatly appreciated by our citizens.”

Simington described Sheffield as “a live, healthy town, and somewhat more than a thousand inhabitants, situated in a prosperous farming community, with an intelligent class of citizens, who cheerfully pay a two mill tax for the support of the public library ...” Simington went on to tell Carnegie a “permanent building is sorely needed.”

After additional correspondence and a photo of Sheffield’s current library was sent, the village received on May 2, 1911, the promise of $4,000 for the new library. A Galesburg company was hired to design the building in a chalet style.

The Carnegie library in Sheffield was constructed of bricks from the village’s Clay Products plant by P.M. Ford.

In 1935, the library received a framed portrait of its donor, Andrew Carnegie, which came as a gift from the Carnegie Foundation of New York in honor of Carnegie’s 100th birthday. That portrait still hangs in the library today.

ocated in southeastern Lee County — just a short distance south of Amboy off U.S. Highway 52 and Mormon Road, the Amboy Marsh was recently bought by the Illinois Audubon Society. The 2012 acquisition was an important one, since the land provides for the permanent protection of rare and fragile Northern Illinois ecosystem.

From 1 to 4 p.m. Oct. 13, a grand welcome celebration is set for the Amboy Marsh Wildlife Sanctuary, which will include presentations, a ribbon cutting and guided trail hikes.

Parking is right off Mormon Road with opportunities to see some of the special features of the site. The Birdsong Chapter will focus on the stewardship of the marsh.

passion for good coffee and good food has led to the opening of JAVA & Co. in Henry.

Opening in 2008, JAVA & Co. is owned and operated by Brian and Jamie Knoll, a husband and wife team with more than 25 years experience in the food, beverage, restaurant and hospitality industry. After years of culinary work in New York City and most recently Las Vegas, Nev., the Knolls decided to balance out their life a bit, with more time for each other, bringing their talents, experience, passion and love of food to Henry and their company.

JAVA & Co.’s “Boutique Bottled” coffee-infused syrups are sure to entice most everyone.

JAVA & Co. doesn’t have a bricks and mortar store in Henry but sells retail through the company’s online website and wholesale direct from the couple’s commercial kitchen to specialty retail stores.

Starting the company with the couple’s coffee-infused syrups, the Knolls developed what they refer to as “Boutique Bottled” coffee-infused syrups made for the breakfast lover, coffee lover, dessert lover and food lover in all of us, Brian said. The syrups are made from fresh roasted coffee beans without corn syrups, fillers or added preservatives.

Not just for coffee, the signature syrups are also used as toppings, sauces, ingredients, dressings, glazes, tonics and elixirs.

The syrups are natural, versatile and, most importantly, they make ordinary food taste incredible, Jamie said, adding JAVA & Co. is all about helping people to relax and enjoy each other.

“There is something special that happens when people share food. We watched this magic happen over and over again,” Jamie said. “Strangers seated next to each other — then add plates of delicious food, a vodka martini or two and conversation explodes.

Strangers become fast friends, and they leave laughing and hugging. Food brings people together. We just had to launch JAVA & Co. and share what we have with everyone else.”

“All of our recipes are one-of-a-kind and continue to be made in small batches, by

hand — as if we are making them for special guests in our home,” Jamie said.

All products are made in a FDA-registered, state health department-approved kitchen, Brian said. The couple tries to source their ingredients from the area whenever possible.

They bring in locally-farmed Habanero peppers, which are chemical and pesticide free for their specialty caramels. They use Illinois, small batch roasted coffee beans for the

products containing coffee, including their syrups.

Looking at the journey for JAVA & Co., Jamie said meeting customers is hands-down one of the best parts of the week. The biggest reward for her and her husband has simply been having the opportunity to share their passion for food with customers, she said.

“When they try a sample of our syrup and their eyes roll back in their head and they make the most delicious sounds — we know everything is going to be OK,” she said.

ohn Mayfield of Dalzell makes beautiful carvings out of antlers ... all kinds of antlers.

Mayfield, a half-blood Blackfoot Indian, started carving in 1995 after he retired.

Since then, he has done thousands of carvings from deer, moose, caribou and reindeer antlers.

“I had a friend who owned a business, and he bought some carvings from a guy who supposedly carved,” Mayfield said. “He showed them to me, and I said I thought I could do better.”

Mayfield said since he was a child, he has always had an artistic eye.

“I can visualize something in my mind and do it. I never went to any commercial art school,” he added. “It is a God-given gift of being able to picture something in my mind and do it. I have been blessed.

He once carved a snake head out of an antler with its mouth open and fangs hanging down. “Many people carve eagles,” he said.”Not many carve hawks like I can do.”

“I always have 6-10 racks of antlers laying around the shop, plus two, 55-gallon drums of whitetail deer, caribou, fallow deer, moose and reindeer antlers,” he added.

Mayfield said at times, he doesn’t carve many antlers because he doesn’t want to get burned out on his hobby.

“When I am working, I can spend four

hours a day making key chains or knife handles. I always sign my middle name (Grayhorse) and date them,” he said.

He wants to insure his hobby of carving doesn’t become a job where he feels he must carve every day.

“I could make lots of knives and 10-20 key chains a week if I wanted to, but that would make it feel like a job,” he said.

“I can carve 20-30 key chains in a twoweek period,” Mayfield said. “I can build a knife in two days, but depending on the intricacy of the carvings, I could spend one week.”

He uses a dremel, a rotary tool with all kinds of bits to do the carving on about anything. He goes through about two dremels a year and gets bits from a dentist friend.

He moved to Dalzell in 1981 after a divorce. He then married his current wife, Sharon, 25 years ago, after meeting her at Mid American Growers where she worked and he worked in maintenance.

He retired in 1994 and started carving antlers one year later. He sells by word of mouth or by leaving his business cards.

Illinois Valley Living/Bureau County Republican Sports Editor Kevin Hieronymus interviewed the former Chicago Bear about his playing days in the NFL and Northwestern as well as his job at L-P.

llinois Valley Living (IVL): What led you to the LaSalle-Peru and the Illinois Valley?

Bates: While working as an associate athletic director under my great mentor with Chris Livatino (Evanston Township High School, athletic director), I felt my life experience at this point prepared me to take on an educational leadership role. As I searched throughout the Chicagoland and central Illinois, I interviewed at the following schools: Highland Park High School, Grayslake Central, Rantoul High School, Bremen High School and LaSalle-Peru Township High School. All are unique schools and offered an unique opportunity in the athletic directorship. Needless to say, LaSalle-Peru and the Illinois Valley was the perfect fit for me.

IVL: Is working in high school athletics something you always wanted to do after your playing career?

Bates: When I was 12 years old, or somewhere in that range, I organized a daily neighborhood sports day during the summer of kids my age and younger, so I have always had the vision of

IVL: Construction of the new $4.8 million L-P athletic complex is underway. That’s got to be a real boost for Cavalier sports.

Bates: When I got here one year ago and conducted my own facility audit, in addition to an audit already performed at L-P, it was clear that L-P needed a facility upgrade, specifically track and field, soccer and tennis courts. The cities of LaSalle and Peru have been gracious in allowing the Cavaliers to use facilities for practice and games, and we are very, very thankful. The blue print and works of the new Sports Complex (which includes track and field, soccer and tennis courts) was way before my time, so the credit goes to those who diligently made this happen — District 120 Board of Education, superintendent, coaches, and more importantly, our local community. In my experience, championship programs have championship caliber facilities, and our new sports complex will afford L-P that opportunity.

IVL: Is there any coaching in your future?

Bates: I have coached at all-levels, football, basketball, baseball, track and field, and a stint of youth soccer, and am truly passionate for coaching. However, with the duties/responsibilities of being an educational leader, I have a bigger role to steward our athletic department philosophy, and mentor the coaches into becoming great coaches – I encourage/ challenge coaches to always think next level.

IVL: You got to play Big Ten football for Northwestern. What was that experience like playing in front of 100,000 Michigan fans in the Big House and Ohio State and other venues around the Big Ten?

Bates: In one-word, AMAZING! No doubt Michigan and Ohio State are great venues to compete in, but the loudest college venue I’ve played in was at Penn State – couldn’t hear my teammate standing next to me. When we talk next level, I challenge coaches, especially at the varsity level to prepare our students for the next level because there are a few in our program that will get to compete athletically in college, at any level (Division I, II or III), and we want to do our best to assure they are well prepared, especially if they compete in the Big Ten. IVL: How big of an adjustment did you have making the move from quarterback in high school to wide receiver at Northwestern?

Bates: Actually in high school, my main position was quarterback, but I also played running back, wide receiver, cornerback and safety. I was a multiposition football player and played whichever position that afforded my high school (Silver Bluff High School) the best opportunity to win. That is a main reason Northwestern University offered me a scholarship was my ability to play multiple positions, and of course my diligence in the classroom. I originally entered NU as a quarterback but saw an opportunity after my redshirt year to better contribute to our team as a wide receiver – the rest is good history.

IVL: You became a two-time All-Big Ten First Team selection, played for two Big Ten championship teams and still hold school records for receiving. You must be proud of your days in Evanston?

Bates: Great memories indeed! I was fortunate enough to have a great head coach, Gary Barnett who implemented a vision and blue-printed the path it would take in order for NU football to compete and win in the Big Ten. We (our whole team) bought-in and challenged one another to do our best at all times no matter what – that is the reason we won the Big Ten and continue to win today. Current NU head football coach Pat Fitzgerald (a teammate of mine) is doing a great job and continues to take NU football to the next level. I am very proud of my personal achievements, but football is the ultimate team sport.

IVL: You played six years in the NFL. What are some of your best memories playing for the Chicago Bears and Minnesota Vikings?

Bates: First memory, being drafted while sitting at home (Jackson, S.C.) with my family. Everyone always said, “You have a 1 percent chance of being drafted profession; 99 percent chance of getting a real job.” I was blessed to defy the odds on that day. Second memory, being able to retire and walk away healthy with absolutely no regrets; more

importantly, transition into my dream career, education.

IVL: You’ve become rather famous here in the Illinois Valley as a former Chicago Bear. What’s that been like when people come up to you at ballgames to talk to you about the Bears or ask for an autographed a picture?

Bates: When I first got here last year, I did feel like a celebrity again. While it is a joyful and humbling experience, I think the community now knows that D’Wayne is a normal person, that is passionate about education and leading the athletic department. With that said, I still do sign autographs from time to time and participate in celebrity charity events.

IVL: Have you adapted to Midwest living after growing up in South Carolina?

Bates: I was raised in small-town, Jackson, S.C., about 1,600 people and 100 percent farmers. I grew up chasing pigs and chickens (where I got my quickness), cutting-wood (increased my arm strength) and planting/harvesting our vegetable farm (probably where I learned hope and patience). Besides the extreme cold weather, the Midwest really isn’t that different, except for grits with breakfast is more common in the South. The Illinois Valley so much reminds me of my hometown, the farming and blue-collar work ethic, that LaSalle-Peru Township High School was meant to be.

FALL-ING INTO SOME HOMEMADE CASSEROLES Recipes by Illinois Valley Living Recipe Columnist Judy Dyke

F

all means more activities than time to do them. With back-to-school events, school sporting games, leaves to rake, upcoming holidays to plan for ... well, there just aren’t always enough hours in the day.

So rather than cook an evening meal that is time consuming and tedious, I always like to find some good casserole recipes to use in the fall. Not only do they help chase away Judy Dyke Mother Nature’s chill in the air, they are filling and easy to put together.

Following are a few casserole ideas I hope you enjoy and will ultimately add them to your recipe box.

Mom’s Scalloped Potatoes and Ham 10 medium potatoes, peeled and thinly sliced 3 cups cubed fully cooked ham 2 large onions, thinly sliced 2 cups (8 ounces) shredded cheddar cheese 1 can (10 3/4 ounces) condensed cream of mushroom soup, undiluted 1/2 teaspoon paprika 1/4 teaspoon pepper Layer half of the potatoes, ham, onions and cheese in a greased 6-quart slow cooker. Repeat layers. Pour soup over top. Sprinkle with the paprika and pepper. Cover and cook on low for 8 to 10 hours or until potatoes are tender.

Pork Chops with Balsamic Braised Cabbage 3 tablespoons olive oil 4 bone-in pork chops (about 1 inch thick) Kosher salt and pepper 1 onion, sliced 1/2 head red cabbage, small 1/4 cup balsamic vinegar 1/2 cup fresh flat leaf parsley, chopped Mashed potatoes for serving Heat oven to 400°. Heat 1 tablespoon oil in a large skillet over medium high heat. Season the pork with 1/2 teaspoon salt and 1/4 teaspoon pepper and cook until browned, 2 to 3 minutes per side. Transfer to a rimmed baking sheet and roast until just cooked through, 5 to 6 minutes. Meanwhile wipe out the

skillet and heat the remaining 2 tablespoons oil over medium heat. Add the onion and cook, covered, stirring occasionally for 5 minutes. Add the cabbage, vinegar, 2 tablespoons water, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, covered, stirring occasionally, until the cabbage is just tender, 5 to 6 minutes. Fold in the parsley and serve with the pork chops and potatoes. Easy Side Mashed Potatoes: Place 1 pound white potatoes, peeled and cut into pieces, in a saucepan. Cover with cold water and simmer until just tender, about 18 minutes. Drain and return the potatoes to the pot. Mash with 1/2 cup low-fat sour cream, 1/4 cup milk and 1/4 teaspoon salt, pepper and nutmeg.

Creamy Ham and Cheese Casserole 8 ounces uncooked wide egg noodles 3 cups cubed fully cooked ham 1 can (10 3/4 ounces) cream of chicken soup 1 carton (10 ounces) Philadelphia original cooking crème 1 cup 2% milk 1/2 teaspoon garlic herb seasoning blend 1/4 teaspoon pepper 2 cups (8 ounces) shredded Monterey Jack cheese Cook noodles according to package directions. Meanwhile combine the ham, soup, cooking crème, milk and seasonings in a large bowl. Drain noodles and add to ham mixture, mix well.

Transfer to a 13-by-9-inch baking dish coated with cooking spray, sprinkle with the cheese. Bake, uncovered, at 350° for 20 to 25 minutes or until well heated through.

Shepherd’s Pies 5 pounds potatoes (about 10 medium) peeled and cubed 2 pounds ground beef 2 large onions, chopped 2 garlic cloves, minced 2 cans (15 1/2 ounces each) whole kernel corn, drained 1 1/2 cups barbecue sauce 2 packages (8 ounces each) cream cheese, softened 1/4 cup butter cubed 1 teaspoon salt 1/4 teaspoon pepper 2 cups (8 ounces) shredded cheddar cheese Place potatoes in a stock pot and cover with water. Bring to a boil. Reduce heat, cover and cook

for 10 to 15 minutes or until tender. Meanwhile, cook beef, onions and garlic in a Dutch oven until meat is no longer pink; drain. Stir in corn and barbecue sauce. Drain potatoes, mash with cream cheese, butter, salt and pepper. Spoon meat mixture into two greased 13-by-9-inch baking dishes. Spread mashed potatoes over tops. Sprinkle with cheese.

Cool slightly. Cover and freeze one casserole for up to 3 months. Bake the remaining casserole, uncovered, at 350° for 25 to 30 minutes or until golden brown and bubbly. To use frozen casserole: Thaw in the refrigerator overnight. Remove from the refrigerator 30 minutes before baking. Bake, covered, at 350° for 1 1/2 hours or until bubbly.

Uncover and bake 5 to 10 minutes longer or until heated through.

2 cups thinly sliced celery 2 tablespoons butter or margarine 1 1/2 cups sliced green onions 1 1/2 pounds hot dogs 2 eggs 1 1/2 cups milk 2 teaspoons rubbed sage 1/4 teaspoon pepper 2 packages (8 1/2 ounces each) corn bread/muffin mix 2 cups (8 ounces) shredded sharp cheddar cheese, divided In a skillet, sauté celery in butter for 5 minutes. Add onions, sauté for 5 minutes. Place in a large bowl. Set aside. Cut hot dogs lengthwise into quarters then cut into thirds. In the same skillet, sauté the hot dogs for 5 minutes or until lightly browned.

Add to vegetables. Set aside 1 cup. In a large bowl, combine eggs, milk, sage and pepper. Add the remaining hot dog mixture.

Stir in corn bread mixes. Add 1 1/2 cups of cheese. Spread into a shallow 3-quart baking dish. Top with reserved hot dog mixture and remaining cheese. Bake, uncovered, at 400° for 30 minutes or until golden brown. Serves 12.

1 package (7 1/4 ounces) macaroni and cheese dinner mix 1 1/2 pounds lean ground beef (90% lean) 1 medium onion, finely chopped 2 garlic cloves, minced 1 can (14 1/2 ounces) diced tomatoes with mild green chilies 1 can (4 ounces) chopped green chilies 1 envelope reduced sodium taco seasoning 2 1/2 cups (10 ounces) shredded Mexican cheese blend, divided 1 can (16 ounces) kidney beans, rinsed and drained 1 can (7 3/4 ounces) Mexican style hot tomato sauce 1/2 cup crushed tortilla chips Prepare macaroni and cheese mix according to package directions. Meanwhile, cook the beef, onion and garlic in a Dutch oven over medium heat until meat is no longer pink; drain. Add the diced tomatoes, green chilies, taco seasoning, tomato sauce and prepared macaroni and cheese dinner. Transfer to a greased 13-by-9-inch baking dish, sprinkle with chips and remaining cheese. Bake, uncovered, at 350° for 30 to 35 minutes or until bubbly.

Chicken Casserole 1/2 large package frozen broccoli, cooked 3 cups cubed cooked chicken 1 can cream of chicken or mushroom soup 1 can evaporated milk 3 cups stuffing mix prepared according to package directions 2 cups shredded cheddar cheese

Open for the Season!

Line a greased casserole dish with cooked broccoli. Top with cooked chicken. Mix soup with milk and pour over chicken. Spread stuffing over all this and top with cheese. Bake at 350° for 1 hour.

This makes a large casserole.

1 egg 3 tablespoons cold water 2 tablespoons peanut oil 1/2 teaspoon kosher salt 1 cup all-purpose flour 1 4- to 4 1/2-pound broiler fryer chicken, quartered 1 teaspoon kosher salt 5 cups chicken stock or broth 2 cups water 2 stalks celery halved crosswise 1 medium onion, peeled and sliced in half 3 hard cooked eggs, sliced 2 tablespoons cold butter, cut in 1/4-inch cubes 1/4 cup whipping cream Ground black pepper For dumplings: In medium bowl, whisk together egg, cold water, oil and the 1/2 teaspoon salt. Stir in flour. Mix until well blended and elastic. Cover, refrigerate 2 hours. Season chicken, including back and neck, with the 1 teaspoon salt. In 6-quart Dutch oven, combine chicken stock, water, celery, onion and pinch of kosher salt. Bring to boil. Add chicken pieces, placing leg quarters and the back bones first. Place breast, skin side down, on top. Reduce heat to just below simmer. Cover, leaving half inch opening. Cook 30 to 45 minutes or until breasts are just done; remove. Continue cooking leg quarters 30 to 40 minutes until tender, remove chicken and vegetables. Set broth in pot aside. Discard vegetables. Set chicken aside. Cool. Remove skin. Pull meat from bones, tearing into large pieces. Set aside. Discard bones. For dumplings: Turn dough onto well floured surface. Roll very thin, about 1/16 inch, cut in 1 1/2- to 2 1/2-inch pieces. Return broth to boiling. Season well with additional kosher salt. Add dumplings to broth, shaking pot occasionally.

Do not stir. Cook 5 minutes. Add reserved chicken and egg. Reduce to simmer. Add butter, cream and few grindings of black pepper. Cook 2 minutes. Remove from heat. Cover. Let stand 10 minutes. Serves 8.

ooking for a getaway for you and your spouse, your family or even a family reunion? The Illinois Valley is home to a gem right in your own backyard — Kishauwau Country Cabins, just outside of Tonica, has 17 cabins of various sizes on 70-plus acres that is just waiting for you and your family to visit.

The resort is open year round and offers access to the Vermilion River.

The former Camp Ki-Shau-Wau began as a Boy Scout camp and was purchased in 1986 by Ben and Ellen King of Oglesby. Starting with just four cabins and a simple philosophy of coming back to nature, the Kings and then their children (who now run the resort) turn off the electronics and encourage visitors to get to know one another once again.

“We remodeled the first four cabins,” said Jamie King one of the six current owners. “We then started work on build-

There is a living room area with at least a couch and chair, and each bedroom has a queen-sized bed. The results of the Kings’ hard work is shown by the reservations they have, especially with repeat customers.

One of those repeat customers is from Lockport. Haley, Nolan and Diann Price just found out about Kishauwau this year.

The cabins at Kishauwau are spaced out to give privacy to guests. Several of the original cabins were given names from the Boy Scout days of the camp: Comanche, Winnebago and Apache. Grandma’s Cabin sleeps up to 14 guests, while many other cabins sleep up to two, four or six people.

Every cabin has a story, and the people staying also can add to that story. Each of the cabins has a guidebook/journal that guests are encouraged to sign or write a story of their stay. These books even brought two families together.

“All because of Kishauwau, they found out they were neighbors back home,” said Deanna King, another of the six owners. “They have formed a friendship now because of us.”

Deanna King, Jamie and Terisa King, Jeff King, and Kathy Jo and Don Zurinski, who are the current owners, work hard to maintain a standard of excellence at the resort.

“We love it. If it wasn’t for the feedback from our guests and the loyalty of our guests, it would be too much work,” said Deanna King.

N

ow that summer is officially finished, it’s time to do one of the most important tasks of the fall — start planning the getaway for next summer. While you might think you need to drive hours to get away from it all, the answer is actually just under your nose.

Just two miles north of Putnam on Illinois 29 is Condit’s Ranch, a nice quiet getaway that’s been a hidden gem for more than 50 years. Started in 1961 by Ken and Julann Condit and Don and Amanda Condit, Condit’s Ranch offered camping and horseback riding. While the camp started out as a hobby for the two brothers and their wives, throughout the years it became a full-time career.

It’s a home away from home for many of the folks who call Condit’s Ranch their “other home,” as this abode announces to visitors.

“We worked out of a little red shed, which was the office,” said Sue Berberich, the youngest of Ken’s four daughters and current caretaker of the Condit legacy.

Each of the camping areas – a total of 18 sections – has a different name, with more than 300 campsites for mobile homes and trailers. Tent camping is also available.

The resort started out small but has grown throughout the years.

“There’s about a hundred acres of campground now,” said Berberich. “We started small. It wasn’t nearly what is now, but it grew. All four of us girls went to college, and the camp paid for that.”

While many of the campers are from out of state, more than a few people who have homes there actually live in Putnam County.

“We’ve got electricity and water; it’s nice and peaceful. It’s just a nice place to fall off the Earth for awhile.”

F

lipping through the history books of Kasbeer Community Church, one can capture a sense of pride, trust and devotion.

For 175 years, the church has united its community and provided a stable place for worship. Of course, throughout the years, changes have brought along sacrifice, trial and some hardship, but through it all, the members’ faith and dedication are what continue to provide services each Sunday.

Today, the church is led by the Rev. Eric J. Seibert.

To him, the members are what make the church a great place to be.

“We have a lot of people who have been coming throughout the years who have been very, very faithful to the church and to one another,” he said. “I can’t imagine really being anywhere else right now.”

Looking back on all its history, Seibert believes it’s not what the church has done, it’s about what the Lord has done throughout the years.

“It’s about staying true to the holy Lord,” he said.

As a lifelong member of the church, Doris Bohm, 88, can remember many fond memories at the Kasbeer Community Church. She can still recall attending services around 1928, when she was around 3 years old.

It was around the time when the prominent Rev. H.E. Garner traveled to town. He came at a much needed time – the depression era was taking off, the church had been without a pastor for nearly a year and membership was dwindling.

“I really think he saved the day because he was very charismatic, and his personality was very young, and he brought that church to life,” Bohm said.

With his zeal and untiring efforts, Garner attracted a large attendance and

Ruth Sabin, a longtime member of the church, remembers Garner knocking on doors in the community and personally inviting people to his services.

“You didn’t want to miss church on Sunday, or he’d be knocking on your door on Monday,” she said.

During his time in Kasbeer, Garner organized a boys’ club, a teachers’ training class and a week-day church school. He also reorganized the Ladies’ Aid Society, which consisted of 90 members at one time, They, along with the Missionary Society, were able to raise more than $1,000 in seven months.

In 1934, Garner accepted a call to an Oglesby church, and later he became a professor at Moody Bible Institute. He is buried

in the Limerick Cemetery, south of Kasbeer.

Looking back at the church, Bohm and Sabin both agree he was one of the most influential reverends in the history of the Kasbeer Community Church. • In 1838, the Rev. P.J. Strong traveled from Ohio to Princeton to establish a Methodist Protestant Church. Once there, he organized the Bureau Circuit, which consisted of a meeting house in Limerick.

• In 1850, the work of the Bureau Circuit grew so large it was divided, and the Limerick charge fell under the East Bureau Circuit.

People of Limerick gathered in their homes and at a school house for services until the first church building was built sometime during this year.

• In 1859, a second church building was erected, and the Limerick charge left the East Bureau Circuit to be established as an independent station in the Methodist Protestant denomination.

• In 1869, a movement got underway to remodel the church building. A pipe organ was also installed, however, many members believed it to be an instrument of the devil and requested it not be used.

• In 1885, railroad was surveyed from Zearing to Walnut and missed the village of Limerick. It was laid three-fourths of a mile north through the town of Kasbeer. It came as a great disappointment to the Limerick residents. As time passed, pastors who came to serve the Limerick Church were disappointed to find no accommodations in the little village. They were forced to drive to Kasbeer for their mail and all other necessities. Not only did the pastors press the removal of the church to Kasbeer, but the possibility of another denomination coming to Kasbeer brought potential of endangering the work of the Limerick Church.

The Babcocks do all of the leash work and teach the dog to stand on the table for judges to assess the animal’s conformation. Jean said the mother/daughter duo work on all the basic training at home, and then Puig puts the finishing touches on the dog.

“Each dog must respond to Carlos before he takes them to a show, and that is no problem. We have seen Carlos show many different breeds of dogs, and each dog responds to him like they were in love with him. Carlos just has a knack for working with dogs and bringing out the best in each one,” Jean said.

Basically, judges are looking for ideal breed standards when they assess a dog.

The judges must know the standards for each breed they judge, and the concept of the contest is for the judge to select the one dog that meets the conformation breed standards — in other words, choose the dog they feel is the perfect example of the breed. In essence, their choice also determines the future breeding stock of the breed of dog.

Because of the breed, the Babcocks don’t have to spend countless hours a week grooming their animals. Each dog gets a monthly bath, and they are brushed a couple of times a week.

Beyond that, they live as companion dogs and members of the family.

Amy and Jean share the responsibilities of the arrival of new puppies. Jean is in charge of getting the dogs bred, while Amy helps with the birthing process and training the new puppies.

While the two admit showing dogs is a lot of work, they also acknowledge how working together has created memories that will ultimately last a lifetime.

“It’s been rewarding,” Amy said. “We are pretty much together every weekend. It says a lot — to be together so much as a family and still get along as

“Amy and I work well together with some differing opinions on which dog may be super successful in the showing,” Jean said. “But basically we appreciate the same type of cavalier.

The way a dog moves is important to both Amy and I. If a dog does not move well with drive off the rear and reach up front, they are not made as well as they should be for showing, but they make wonderful companion dogs for

families. Those are the ones we place in pet homes on spay/neuter agreements.

My daughter, Dawn, has been very busy with her work ... But, she is nearing the end of her schooling and will join Amy and I in showing future generations of show dogs by 2014.”

Jean said it takes much time, energy and money to breed, raise and show dogs. As she begins to scale back her

“At some point in the not so distant future, I will happily watch the girls take over the dogs,” Jean said.

But first things first ...

The Babcocks’ Andy has qualified for the Eukanuba National Dog Show In December, and he will get his invitation to compete at Westminster in February 2014, based on his show career. Because of the expense involved in those national shows, Jean isn’t sure Andy will make the trip, however, she said their dream is to get one of their dogs to those national competitions with his handler, Puig. Jean said that dream is realistic, if they want to invest the money the national competition would cost.

But regardless of whether the national competitions happen or not, Northview Cavaliers is becoming quite well known among those who know and appreciate the breed. Amy said Northview has sold dogs to people from New York, Florida, Colorado and more.

Perry Memorial Hospital’s House Supervisors

A Nurse is a common image that comes to mind when people think of hospitals and healthcare.

This image is often associated with the nurse at the bedside of a patient providing care and comfort. While this responsibility of a nurse plays a vital role in healthcare, nursing knowledge and expertise is a valuable resource in other components of healthcare. The position of House Supervisor is just one of these jobs.

Perry Memorial Hospital has seven women who perform in the role of House Supervisor.

Bethany Erickson, Nina Irizarry, Amy Sorenson, Amy King and Nancy Sanden fill the role of House Supervisor on a regular basis. These ladies are joined by Leanne Dean, Acute Care Coordinator, who in addition to her Coordinator position performs House Supervisor duties.

Jan Pistole, Cardiac Rehab Coordinator, completes the team of House Supervisors. She provides House Supervision on an as needed basis often covering for vacations.

The House Supervisor position is responsible for Administrative Functions of the hospital in the absence of the VP Clinical Services/CNE, Chief Executive Officer (CEO), or Administrator on call. This position is in charge of supervision of Nursing Services during the evening, weekend and holiday shifts, interacting with other departments of the hospital to ensure quality of care and efficient flow of patient care is provided. Other responsibilities include staff assignments, inter and intra department problem solving, and organizing, implementing and supervising (evaluating) patient care activities.

Educational requirements for this position include a Bachelor of Science Degree in Nursing, Associates Degree in Nursing or a Diploma in Nursing. They all hold a license as a Registered Nurse. Additional education required includes CPR and they must maintain specialized certifications in Advanced Cardiac Life Support, Pediatric Advanced Life Support, National Incident Management System and Incident Command.

As we age, autumn arrives in all its glory. With the leaves gently falling, we act much like the squirrels amidst those colorful leaves — we begin to store and set aside and plan for our winter. Nagging at us like a slap in the face from the bitter north wind, we come to the understanding that nothing or no one lives forever.

And then when we least expect it ... winter sets in. With our loved ones close to us, we look back frequently on the different seasons of our lives. We tell stories and share the memories and experiences of our spring, our summer and our fall ...

In our hearts, we know the seasons of life are nearing an end, and like the leaves falling from those proverbial trees of life, we will not live forever.
