Avoid sensitive areas such as meadows, wetlands and streams, unless on designated routes. This protects wildlife habitat and sensitive soils from damage. Be respectful of wildlife’s wintering habitats.

Do your part by leaving the area better than you found it. Dispose of waste properly — pack out what you pack in. Stay off soft, wet trails that are easily damaged by vehicles. Minimize harmful emissions by keeping your engine tuned up. Don’t mix riding with alcohol and drugs.

bakes sweet treats made with love

You could say Joan Hartsook has made a pretty sweet living with a skill she honed raising seven children.

“I never came away from a wedding where I didn’t have another cake to make,” Hartsook said.

Hartsook, 82, of Creston, and her husband Wayne raised their children on a family farm on High and Dry Road.

There, they raised dairy cattle, hogs, had a small cow-calf operation and grew corn and soybeans. Between running her children to and from school, 4-H and FFA events, Joan was driving a tractor, milking cows and baking fresh bread, sweet treats and cooking comfort food for her family.

And, Wedding Caked by Joan was born.

“I never thought I would be doing it for hire, but, it just evolved into that,” Hartsook said.

Today, she continues to make the wedding cakes for her grand children, transporting one as far as Colorado.

Hartsook is known for her sweets — cakes, pies, cinnamon rolls and tea-rings.

“What I pride myself on is a really moist tasting cake” Hartsook said. “That has always been my goal.”

To achieve a perfectly moist cake, Hartsook suggest lowering the oven temperature.

“I don’t like a crust around the edge,” Joan said.

Forty years ago, Polly Hartsook, Joan’s daughter-in-law, asked if Joan would make a wedding cake for her and Joan’s son Gary Hartsook.

To stay organized in the kitchen, whether it’s baking a wedding cake for 400 people or a family dinner, Hartsook prefers to clean as she goes and work ahead.

Hartsook recalls laughing.

“She said, ‘your pies, your cakes and your rolls are really, really great and I’m not that picky,’” Hartsook said.

Hartsook, who did not feel her baking was to wedding standards, decided to give it a go.

Hartsook said she had some practice, helping frost and decorate wedding cakes for a friend with a bakery business in Afton.

Joan Hartsook of Creston made this multi-tiered cake, which served 400 people, for her daughter Carol Hartsook’s wedding in 1980.

However, it didn’t take long before Joan made a name for herself. As she perfected the art of making butter cream frosting, hand-crafted

“It’s quite the experience and their trees are so fresh, much better than the ones you’ll get at a grocery store,” Angie said.

Fred said cutting and loading of the Christmas tree is free of charge. He said most buyers come from Adams, Union, Ringgold, Montgomery, Cass and Taylor counties. But, some buyers come from as far away as Omaha or Kansas City.

“People will drive 30 to 50 miles and not even bat an eye,” Fred said.

Costs for trees range from $25 to $135 based on size and variety. Trees range from 4 to 13 feet. Fred said buyers can come reserve a tree “anytime now.”

Opening weekend at Shearer Tree Farm is slated Nov. 1.

Directions to Shearer Tree Farm > From Hwy. 34, enter Corning on Hwy. 148 > Turn west on 6th Street. > Continue west through Corning around a curve, before turning west on 8th Street > Continue west past Mercy Health hospital > Continue west until you are on gravel. > Shearer Tree Farm–1870 220th Street–is first place on the gravel on the south side of the road. > If you pass the “hidden driveway” sign, you’ve driven past the Shearer’s driveway.

The farm will then stay open daily — with the exception of Thanksgiving Day — from 9 a.m. to 5 p.m. through Christmas.

There’s nothing more comforting in the cold of the winter than a nice, pipinghot bowl of soup. Homemade’s the best. If it’s chilly outside and the ground has a winter carpet of white, it’s soup on the menu tonight. Smakelijk eten!

CHEESEBURGER SOUP

1 lb. ground sirloin 1 cup onion, diced 3/4 cup celery, diced 1/2 cup carrot, diced 1 tsp. garlic, minced 3 cups chicken broth 2 cups russet potatoes, peeled, diced 1 tsp. dried basil 3 Tbsp. unsalted butter 1/4 cup all-purpose flour 1 1/2 cups whole milk 2 cups cheddar cheese, grated 1/4 cup ketchup 2 Tbsp. prepared yellow mustard salt and pepper to taste shoestring potatoes and chopped dill pickles

LASAGNA SOUP medium heat. Cook until the meat begins to brown, then add the onion, celery, carrot, and garlic.

Saute about 10 minutes. Stir in the broth, potatoes, and basil; bring to a boil, reduce heat, and simmer 10-12 minutes, or until potatoes are cooked through. Melt 3 Tbsp. butter in a saucepan over medium heat. Whisk in flour and cook 1-2 minutes, then add the milk, whisking until smooth, scraping the bottom of the pan. APPLE CHEDDAR SOUP

1/2 cup finely chopped onion 1 Tbsp. butter 2 medium baking potatoes, peeled and diced 2 cups apple cider 1 tsp. snipped fresh thyme or 1/2 tsp. dried thyme, crushed 1/2 tsp. salt dash cayenne pepper 1 medium cooking apple, peeled, coarsely chopped 1/2 cup milk 2 Tbsp. all-purpose flour 4 oz. sharp Cheddar cheese, shredded, about 1 cup fresh apple slices green peppercorns (optional) In large saucepan cook onion in hot butter over medium heat until tender. Stir in potatoes, cider, thyme, salt, and cayenne pepper. Bring to boiling; reduce heat.

Simmer, covered, 15 minutes. Add chopped apple; simmer, covered, 5 minutes or until potatoes are tender. In small bowl combine milk and flour; stir into soup.

Cook and stir until bubbly. Slowly add cheese, whisking until cheese is melted.

Divide soup among serving dishes; top with apple slices and peppercorns. Makes 4 to 6 side-dish servings

Winter CrossFit Creston woman finds ways to stay fit during winter months

However, according to Dudenhoeffer, food is more of a challenge.

“When I was in high school, my coaches got me into lifting weights, probably when I was 14,” Dudenhoeffer said. “I guess it was like love at first sight.”

Fast-forward 18 years, and Dudenhoeffer is just as active in the strengthtraining scene.

“When I got pregnant, I stopped (weight-lifting). Ethan is two and a-half now, so I just picked it up again a year ago,” Dudenhoeffer said.

Throughout the week, Dudenhoeffer, who works at Country Haven in Corning, attends CrossFit TYL classes. Outside of CrossFit, she works out on her own or with her husband, Nathan. Now that the temperatures have dropped, Dudenhoeffer will go from backyard to garage gym.

GRMC Offers More to Southwest Iowa Pastor Doug Brunell knew he had a risk of diabetes from a young age because his family medical history included several members diagnosed with diabetes.

He was initially diagnosed at age 18 when undergoing a physical to join the military service. For nearly 40 years, he didn’t experience any known issues until presenting for an annual physical during the spring of 2014 when his blood sugar results were very high. “I was referred to the Diabetic Education program at Greater Regional Medical Center,” stated Brunell.

The Greater Regional Diabetic Education program has been certified through the American Diabetes Association and State of Iowa since 1999. Ginny Lents, RDLD and Kim Frain are certified diabetic educators and have completed over 1000 hours each in diabetic education programming. The program includes monthly classes, individual consultation and a Diabetes Support Group which meets the third Monday of each month at 1:00 p.m. at the medical center.

Pastor Brunell has been with the Abundant Life Family Church for over 20 years and is active in the Creston Community. His church offices are located at the old Franklin Elementary School. Cross Fit owner Chris Doster also leases space in the building.

Brunell reports when he first met with Kim and Ginny, he was concerned for how his situation might be perceived. “I’m 58. I was 100 pounds overweight, I wasn’t eating right and I wasn’t exercising.” Following his initial meeting with the program, he made a decision to change. “I had a moment of clarity. Whatever they said, I was going to do.”

He participated in the individual consultation sessions and the classroom sessions. Education was provided regarding how to eat differently and he was encouraged to begin to exercise regularly. Initially, he focused on his diet. As he began to change the foods he ate, his blood sugar results began to improve, he began to lose weight and feel better.

With consistent encouragement to begin exercising, he decided to take the next step and give the Cross Fit program a try since it was co-located with his office. “It was scary” he said, knowing the workouts are intense and given the younger participants. Once he got started, he kept going.

“They modify all the exercises to some version of what you can do.” Being able to have a coach and individualized attention within the team atmosphere was helpful to his pressing forward and adding exercise to his regular routine.

Brunell reports he has always considered as one aged, physical abilities declined and had worked on weight loss for the past couple of years. Since modifying his diet and establishing an exercise routine over the course of the last 90 days, he has experienced significant results. “I have had the incredible experience of being able to do things I couldn’t do before. My mind is starting to change about what’s possible. There is hope…you don’t just have to accept where you are at.”

In fact, over Balloon Days weekend, Brunell participated in the Southern Prairie YMCA 5K run and jogged the entire race. He finished 3rd place in his division.

He has lost weight, he has increased his activity level and his hemoglobin A1c results, which track a three month average of blood sugars, are greatly improved. “I think everyone has been surprised,” he stated.

Brunell reports there is a lot of information out about the importance of diet and exercise but many people just put off addressing changes in their lives. He found he needed to have changes in both diet and exercise to be successful. He has learned how to manage the amount of foods he eats and concentrates on changing his choices. “It all goes together – diet and exercise,” he said.

Brunell attributes much of his change to the diabetic educators. “They know their stuff”! Frain complimented Pastor Brunell. “He worked really hard and lowered his blood sugar levels significantly. He took accountability for everything.”

Three local photographers offer tips for your holiday memories

With families and friends gathering to celebrate the holidays, this time of year is ideal for family photo opportunities.

To help you capture the most beautiful photos of your family this year, three local photographers — Patty Rouh, Patty Rouh Photography; Taycey Martin, Taycey Martin Photography; and Sheila Sutton, Sutton Studios—provide their top photography tips.

“You walk by them everyday, but, hardly notice. If you actually walk down the alleys and look at them you think, ‘wow, that’s beautiful.’”

Another reason to stay local: avoid a melt down.

“By the time you get there (Des Moines or other out of area studio), you’re stressed,” Rouh said.

“What we want to see in the pictures are the faces,” Rouh said.

If you are using your photos in a holiday card, consider time for printing and mailing.

Aim low

When shooting your portraits outdoors, don’t focus on the tree tops.

“Most photographers are booked a month or two out,” Sutton said.

“So many people look at the tops of trees and say, ‘oh they’re really pretty,’” Rouh said. “That’s nice, but, we’re not taking pictures of the tops of the trees. You have to find something low.”

It’s all in the details A professional will watch for the things you don’t think about.

“When you get the photos back, you might think, ‘Oh, look at that. It shouldn’t have been that way,’” Rouh said. “Twenty-five years of experience will teach you those things.”

Rouh prefers to keep the background simple by removing frames and cluttered decor from the background.

Rouh said, by staying local, you can find the type of background you want — autumn leaves, snow, pine trees, lake fronts, farms and back drops with an urban feel. All three photographers said the alley ways of Creston and Afton make for exceptional back drops.

“The important part is for every family is to just to be normal,” Martin said. “You’re going to get the most genuine feeling in the photos if everyone is comfortable.”

Leave no regrets

Martin, who lost a significant amount of weight, regrets not taking more photos with her children.

“I look back and I have nothing,” Martin said. “I have bunches of pictures of them, but, I’m not in them.”

Martin said she challenges her clients to be in photographs with their children.

Looking back, Martin said she would rather have them as she was than not have them at all.

Sutton agreed.

“You have to get pictures with your children because your babies love you,” Sutton said. “They think you’re gorgeous.” CL

After each issue of Creston Living is mailed out, I am still amazed at all of the positive comments we receive from readers and advertisers...and for that I thank you very much! When we sit down to plan each issue the number of opportunities and events happening in our local area are very impressive.
