What Bureau County United Way dollars go for ... Center for Youth and Family Solutions “Jake” and “Leslie,” the parents of a teenager, were initially referred to the Center for Youth and Family Solutions’ Intact Family Intervention Program by the Department of Children and Family Services. Jake was struggling with drug and alcohol addiction, and the police had been called to the house several times on reports of loud fighting. They had also been recently warned by their landlord they were close to being evicted because of their behavior. With Leslie working double shifts and Jake out past midnight most nights, their teenager had been getting in trouble in the neighborhood, was struggling in school, and had been picked up for curfew violations numerous times. The family needed help. Working with the CYFS Intact Program, Jake and Leslie addressed both the substance abuse and child neglect issues. The goal was to keep their child in their home, and they knew they had to make some changes. After a few months, Jake and Leslie were referred to the CYFS Counseling Program. At first, the idea of counseling angered them both. As part of their counseling, they attended parenting classes that helped them learn ways to strengthen their parenting skills and change their less effective styles. They also went to couple’s and individual counseling. They wanted to find a way to deal with their issues and get back to a sense of normalcy in their home. A CYFS counselor worked with them to find ways to connect with and support each other as parents and as husband and wife.

Jake also enrolled in substance abuse classes, while Leslie started attending meetings for families of addicts. The counseling and classes resulted in a change in the family dynamic. What began as two battling parents, started to look like a unified couple parenting their child. The teen’s behavior began to improve, and the couple’s relationship was growing stronger. The fighting and substance abuse was subsiding. The couple has continued with their counseling and substance abuse classes to keep on track. Their teen has enrolled in an after-school program that provides a constructive environment to spend afternoons, as well as providing a sense of belonging and trust. The Center for Youth and Family Solutions is a not-for-profit agency providing social services, in times of crisis, to children and families in Central Illinois. Its services include foster and adoption services, child abuse prevention, counseling, youth, family and community outreach services, intact family intervention, and senior services. New data shows basketball is the leading cause of sports-related eye injuries CHICAGO — Every year, close to 6,000 Americans suffer an eye injury related to playing basketball, according to estimates by Prevent Blindness America. In fact, The Coalition to Prevent Sports Eye Injuries reports that 1 in 10 college basketball players will sustain an eye injury. In addition, eye injuries from water sports and activities were the second most-reported sports-related eye injury. These include swimming, surfing, scuba diving and water skiing/tubing. The use of guns, including air, gas, spring and BB, caused the most eye injuries in those ages 14 and younger. Eye injuries from any sport can include infection, corneal abrasions, blunt trauma, inflamed iris, fracture of the eye socket, swollen or detached retinas or even a traumatic cataract. And in some cases, a significant eye injury can cause permanent vision loss. Because most eye injuries can be avoided by wearing proper eye protection, Prevent Blindness America has put together guidelines to help consumers find the best eye protection including: • Those who wear prescription glasses should ask their eye doctor to be fitted with prescription eye protection. • Monocular athletes (those with only one eye that sees well), should consult with an eye doctor to determine which sports are safe to participate in. Monocular athletes should always wear sports eye protection. • Sports protective eyewear should be labeled as ASTM F803 approved. Check the packaging to ensure that the eye protector selected has been tested for

sports use. • Make sure the lenses either stay in place or pop outward in the event of an accident. Lenses that pop in against the eyes can be very dangerous. • Fogging of the lenses can be a problem. Some types of protective eyewear are available with anti-fog coating. Others have side vents for additional ventilation. Try on different types to determine which is most comfortable. • Sports eye protection should be padded or cushioned along the brow and bridge of the nose. Padding will prevent the eye protection from cutting the skin. • Try on the eye protector to determine if it’s the right size before purchasing. Adjust the strap and make sure it’s not too tight or too loose. • All athletes should get an eye exam from an eye care professional. An expert may be able to detect a vision problem and improve performance in addition to saving sight later in life. “An eye injury can happen in a moment but have an effect that lasts a lifetime,” said Hugh R. Food court How about some good fall recipes for the upcoming cold weather. Not only will the oven help keep the house warm, you’ll also have some good food to feed your family.

Pumpkin Spice Drop Doughnuts with Cream Cheese Frosting 3 1/2 cups all-purpose flour 1/2 cup granulated sugar 1/4 cup dark brown sugar 1 1/4 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon salt 2 teaspoons pumpkin pie spice 1 cup pumpkin puree 1/2 cup buttermilk 1 large egg 1 large egg yolk 3 tablespoons unsalted butter, melted and cooled Cream cheese frosting (recipe follows) In the bowl of a stand mixer fitted with the paddle attachment, combine the flour, sugars, baking powder, baking soda, salt and pie spice and mix well. Add the pumpkin, buttermilk, egg and egg yolk and mix until just barely combined. Add the melted, cooled butter and mix until just combined. Put the dough in the refrigerator and chill for 20 minutes. Meanwhile heat at least 2 inches of oil in a heavy bottomed pot fitted with a deep fry thermometer until the oil reaches 350°. Prepare a baking sheet by lining it with paper towels. Using a 1/4 ounce (1 1/4 inches in diameter) ice cream scoop gently drop balls of batter into the oil, taking care not to crowd the pot. (Note, dipping your ice cream scoop or spoon into the fryer oil from time to time helps lubricate the scoop so that the dough pops neatly and easily into the fryer.) Fry for 2 to 3 minutes until golden brown all over. The balls tend to bob in the oil and rotate on their own, but it doesn’t hurt to nudge here and there so that they cook evenly on all sides. Drain on the paper towel lined baking sheet. Spread each doughnut

ball with a smear of the cream cheese frosting while still warm and serve them immediately.

Cream Cheese Frosting 4 tablespoons (1/2 stick) unsalted butter, softened 8 ounces cream cheese, softened 1/2 cup confectioner’s sugar 1 1/2 teaspoons vanilla extract Cream together butter, cream cheese and sugar until smooth. Add vanilla and mix well. Use immediately or store in refrigerator for up to a week.

Cinnamon Apples 2 cups water 3/4 cup red hot candies 1/3 cup sugar 6 medium tart apples, peeled and quartered In a large saucepan, bring the water, candies and sugar to a boil over medium heat, boil and stir until candies and sugar are dissolved. Reduce heat, carefully add apples. Cook, uncovered, until apples are tender. Cool slightly. With a slotted spoon, transfer apples to a serving dish. Pour sugar syrup over apples. Cool slightly. Cover and refrigerate for at least 3 hours. Goes great with pork dishes.

Cake Topped Apple Cobbler 6 cups sliced, peeled Granny Smith apples 1 1/2 cups sugar, divided 1/2 teaspoon ground cinnamon 2 tablespoons butter, softened 1 egg 1/4 cup egg substitute 1 cup all-purpose flour 1 teaspoon baking powder 4 1/2 cups fat free frozen vanilla yogurt Arrange apple slices in an 8-inch square baking dish coated with cooking spray. Combine 1/2 cup sugar and cinnamon, sprinkle over apples. In a small bowl, beat butter and remaining sugar until crumbly about 2 minutes. Add egg and egg substitute. Mix well. Combine flour and baking powder.

Add to egg mixture and beat until blended. Drop by spoonfuls over the apples and spread evenly. Bake at 350° for 40 to 45 minutes or until golden brown. Serve warm with frozen yogurt.

2 cups chopped, peeled apples 1/3 cup chopped walnuts 1/4 cup packed brown sugar 1/4 cup raisins 1 tablespoon all-purpose flour 1/2 teaspoon lemon peel 1/2 teaspoon ground cinnamon Pastry for double crust pie Milk Sugar In a large bowl, combine apples, walnuts, brown sugar, raisins, flour, lemon peel and cinnamon; set aside. Roll pastry to 1/8-inch thickness. Cut into 5-inch circles. Spoon about 1/4 cup apple mixture into center of each circle. Moisten edges of the pastry with water. Fold over and seal edges with a fork. Place on a greased baking sheet. Bake at 450° for 10 minutes. Reduce heat to 400° and bake 10 minutes longer. Brush each with milk and sprinkle with the sugar. Return to oven. Bake 5 minutes longer.

Cook, stirring gently for 3 to 5 minutes or until glazed and slightly softened. Stir in crème de cocoa heat through. In a small saucepan, heat rum over low heat until vapors form on surface. Carefully ignite the rum and slowly pour over the bananas coating evenly. Leaving skillet or pan on the cooking surface, gently shake pan back and forth until flames are completely extinguished. Spoon ice cream into fluted glasses, top with bananas and sauce. Serve immediately. Do not use a nonstick skillet.

LOUIS — Welcome to the 2013 World Series from Busch Stadium. As they like to say in the Gateway City, they’re World Serious about their baseball here. I’m here with old BCR staffer, Kris Baker. We go way back to the 1980s following Whitey Ball. One thing that has remained constant from those days are the Cardinals and postseason baseball. Three World Series then and three and counting in the 2000s. October baseball in St. Louis is all about the pageantry. No World Series in St. Louis can start until the famous Anheuser Busch Clydesdales grace the field. They certainly know their way around Busch Stadium by now. They are huge, huge animals and elegant. Four Cardinal Hall of Famers return, decked in their Cardinal red blazers — Bob Gibson, Lou Brock, Ozzie Smith and Red Schoendienst. The 2013 Cardinals wear a patch on the left sleeve in remembrance of Stan the Man Musial, who passed away in January. Willie McGee,

who is not a Hall Famer, but remains one of the most popular players to adorn the Birds on Bat uniform, takes the field to a huge ovation to throw out the ceremonial first pitch. The Wizard of Oz makes the catch. No more back flips, however. David Eckstein, the sparkplug of the Cardinal’ 2006 World Series champions as the Fall Classic’s MVP in the first season in the new Redbird Roost, delivers the game ball. The Show That Never ends plays on the PA system. The same could be said about Cardinals Baseball. Waiting for that first pitch from Cards righty Joe Kelly. The house is loud and ready for some baseball. The PA prompt to welcome the nationally televised audience from FOX ramps the sound-meter even more. A quick 1-2-3 first raises the roof more as Cardinals fans settle in for the first home game of the Series. They didn’t have to wait long, Cardinals have four hits and two runs already in the first: 2-0. It’s 9 up and 9 down for Kelly. Kelly wasn’t able to repeat his National Anthem Showdown as he did with the Dodgers’ Scott VanSlyke, in the NLCS as he’s taken his act to the mound tonight. I didn’t notice that any teammates stood in for him.

It’s 2-1 after five. Cards fans still on fire despite the falling temps under the Gateway Arch. They would be more hot had it not be for the LOBs (runners left on base). The Cards left the bases loaded in the 4th and just left two more in the fifth. They’ve got 7 LOBs overall which can come back to bite you in the postseason. I receive a text from Kevin Geldean of Princeton, who’s here tonight with his daughter, Mackenzie of Princeton sitting in the second row of the Coca-Cola Pavilion. Looks like a great view overlooking centerfield. Mackenzie’s favorite Cardinals is Joe Kelly, so she’s a happy camper. I bet Kenz’s Grandpa Geldean got them tickets just like he did in 2011. I told Grandpa in July he better plan on getting them again for them. It’s nice to see Kevin get to spend quality time with his daughter at the ballgame. Same for my brother Kent, who is here with his son, Josh, making the trip from Atlanta, Ill. and Bloomington, Ind., respectively. The Bosox tie the game in the sixth at 2-2. Cards fans getting anxious. Two on no out. Carpenter infield hit, Beltran is hit by pitch; that one had to sting a bit on a cold October eve. The Cards have to come

over the legs of Red Sox third baseman Will Middlebrooks. Middlebrooks stuck his legs up, twice, a movement one would believe to be deliberate. Obstruction is called by third base umpire Jim Joyce and Craig is awarded home safely and the Cardinals win. The umpires state in the post game press conference that obstruction can be called whether its from intentional or unintentional contact. Wow, what a finish. I’ve never seen a play like that. It’s never happened in World Series history having a game decided by an obstruction call. Nor will it likely again. It will be forever known as the Obstruction Game.
