Celebrating history at the Red Covered Bridge The 150-year history of Princeton’s Red Covered Bridge will be showcased at a family picnic and program set for Monday at the bridge, located about one mile northwest of Princeton off Route 26. Sponsoring the event is the Bureau County Historical Society. Participating in the short program, which begins at 11:30 a.m., will be Princeton Mayor Keith Cain, Kathy O’Malley and Stephen Gunning. The program will be followed at noon by a picnic lunch, with BCHS Board members grilling hot dogs and providing lemonade, chips and cupcakes. The public is invited to bring their lawn chairs, have a picnic lunch and celebrate the Red Covered Bridge. Photo by Mike Vaughn

Bogus change-of-address websites Postal service offers tips on how to change your address BEDFORD PARK — The U.S. Postal Service and the Postal Inspection Service are warning customers to steer clear of non-postal websites offering changeof-address services for a fee. Some customers have paid up to $30 for a change of address on websites that appear to be linked with the Postal Service but are not — and in some cases the change is never made, said Central Illinois District Manager Peter Allen. “The Postal Service is not affiliated with the businesses that own these sites,” Allen said. To ensure the best service, use www.usps.com. USPS offers three ways for customers to submit
COA orders: Online at https://moversguide.usps. com/; The Mover’s Guide, available at all post offices; and the call center at 800-ASK-USPS. USPS charges a dollar for identity verification to process COA requests submitted online. The other two options are available at no cost to the customer. Customers charged more than a dollar for identity verification to change their addresses are using a non-postal site. Customers who used an external website and are requesting a refund at a postal retail unit should be referred to the business that operates the site. Anyone who believes they’re a victim of a mail crime, should report it to the Postal Inspection Service by calling 877-876-2445. The postal service receives no tax dollars for operating expenses and relies on the sale of postage, products and services to fund its operations.
National Coin Collectors Association holds event in Princeton PRINCETON — For five days, members of the National Coin Collectors Association will assist local residents with evaluating all types of U.S. and foreign coins and currency. Anyone interested in selling their items can be connected with member-collectors wanting to purchase coins for their collections. The process is free, and there is no obligation to sell anything. This event began on Tuesday and will continue through Saturday. Members of the public are
welcome to attend the event at the AmericInn Lodge & Suites, 2120 Claude Bailey Parkway, Princeton, the Quality Inn, 5240 Trompeter Road, Peru, or the Hampton Inn, 4155 Holiday Lane, Ottawa, from 9 a.m. to 6 p.m. Thursday and Friday, and 9 a.m. to 4 p.m. Saturday. Participating NCCA members will also make house calls and conduct bank visits on request. During this event, anyone can bring in gold or silver coins and currency to have experts examine them free of charge. Offers to pur-
chase will be made based on that day’s silver and gold market, as well as the condition and rarity of the coins. Gold buyers are also on hand during the coin show. If you have gold, platinum or silver jewelry you might want to bring it to this event. You can have it tested, weighed and valued free of charge. If interested in selling, they can accommodate that too. Buyers will be on hand all week examining and purchasing all types of jewelry; even costume jewelry is wanted.
‘Those Funny Little People’ PRINCETON — “Those Funny Little People” are coming to Homestead Festival on Sept. 13. “Those Funny Little People” are an entertainment act like nothing you have ever seen. LAMOILLE – For patrons who are thinking about purchasing an eReader or other device, the library has a few options for those interested in trying them out before making a final decision on a purchase. The library owns Kindles, Nooks, an iPad and a laptop. Inquire at the circulation desk, and the librarian will be happy to help. LADD – The Ladd Public Library currently has two card catalogs it is trying to sell. There is a larger catalog with 40 drawers and a smaller catalog with 12 drawers. The librarians are asking $500 and $375 respectively for the items. The card catalogs may be viewed at the library and will be sold in “as is” condition. The librarians are also pleased to announce the library’s biographies purchased through the Back to Books Grant are now available to be checked
out. The new biographies should appeal to a variety of ages and interests. Some of the new titles include, “Stan Mikita: Forever a Blackhawk,” “Out of the Blue: Victor Cruz,” “Ghosts of War,” “Trouble Begins at 8: A Life of Mark Twain” and many more. The library is also interested in re-energizing the adult book club this fall. The book club typically meets once per month to discuss a book chosen by the group. Anyone who is interested in joining the book club may sign-up at the library. DEPUE – The Selby Township Library hosts a blood pressure and blood sugar screening from 8:30 to 9:30 a.m. on the second Tuesday of each month. The screening is sponsored by St. Margaret’s Health and is free and open to the public. A new program for any child aged 3 and under called, “Wiggles and Giggles,” will begin at 10 a.m. Thursday, Sept. 12. The new program introduces the fun of finger plays, bounces, tickles and songs to infants and toddlers. Also, the story time
program for children ages 3 to 5 years old will be held at 10:30 a.m. every Wednesday, beginning Sept. 11. Children will enjoy stories, sing songs and enjoy crafts. Food court Such a wide variety of apples are getting ready to come on soon, and there are so many varieties in the stores now. With all the selections, you can make about any dessert you could want. I can smell those pies already.
Mom’s Maple Apple Pie 1 cup sugar 2 tablespoon all-purpose flour 1 1/2 teaspoons ground cinnamon 1 1/2 teaspoons nutmeg 1/4 teaspoon salt 6 medium tart apples, peeled and thinly sliced (about 2 1/4 pounds) 1 tablespoon lemon juice 1 14.1-ounce package refrigerated pie pastry 2 tablespoons butter 3 tablespoons maple syrup divided warm maple syrup In a small bowl, combine the first five ingredients. In a large bowl, toss apples with lemon juice. Add sugar, mixture toss to coat. Unroll one pastry sheet into a 9-inch pie plate. Trim even with rim, Add filling. Dot with butter. Drizzle with 2 tablespoons maple syrup. Unroll remaining pastry and place over filling. Trim, seal and flute edge. Cut slits in top. Brush, pastry with 1 tablespoon maple syrup. Bake at 425° for 40 to 45, minutes or until crust is golden brown and filling is bubbly. Cover pie loosely with foil, during the last 20 minutes, if needed, to prevent over browning. Remove
foil. Cool on a wire rack. If desired serve with warm maple syrup.
Apple Upside Down Pie 1 cup chopped pecans 1/2 cup firmly packed light brown sugar 1/3 cup butter, melted 1 15-ounce package refrigerated pie crusts, divided 4 medium size Granny Smith apples, peeled and cut into 1-inch chunks (about 1 3/4 pounds) 1/4 cup granulated sugar 2 tablespoons all-purpose flour 1 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Preheat oven to 375°. Stir together first three ingredients and spread onto bottom of a 9-inch pie plate. Fit 1 pie crust over pecan mixture in pie plate, allowing excess crust to hang over sides. Stir together Granny Smith apples and next five ingredients. Spoon mixture into crust, packing tightly and mounding in center. Place remaining pie crust over filling. Press both crusts together. Fold edges under and crimp. Place pie on an aluminum foillined jelly roll pan. Cut 4 to 5 slits in top of pie for steam to escape. Bake at 375° on lower oven rack for 65 minutes or until juices are thick and bubbly, crust is golden brown and apples are tender when pierced with a long wooden pick through slits in crust.
Shield pie with aluminum foil after 50 minutes, if necessary, to prevent excessive browning. Cool on wire rack 10 minutes. Place a serving plate over top of pie, invert pie onto serving plate. Remove pie plate. And replace any remaining pecans in pie plate on top of pie. Let cool completely, about 1 hour.
County Apple Dumplings 2 large Granny Smith apples, peeled and cored 2 10-ounce cans refrigerated crescent dough 1 cup butter 1 1/2 cups white sugar 1 teaspoon ground cinnamon 1 12-ounce can or bottle Mountain Dew Preheat the oven to 350°. Grease a 9-by-13-inch baking dish. Cut each apple into 8 wedges and set aside. Separate the crescent roll dough into triangles. Roll each apple wedge in crescent roll dough, starting at the smallest end. Pinch to seal and place in the baking dish. Melt butter in a small saucepan and stir in the sugar and cinnamon. Pour over the apple dumplings. Pour Mountain Dew over the dumplings. Bake for 35 to 45 minutes in the preheated oven or until golden brown.
Caramel Apple Crunch 8 cups sliced peeled tart apples 33 caramels, divided 2 tablespoons plus 2

In a heavy saucepan or microwave, melt 25 caramels with 2 tablespoons milk, stirring often, drizzle over apples. In a bowl, combine the flour, oats, brown sugar, walnuts, salt and cinnamon, cut in butter, until mixture resembles coarse crumbs. Sprinkle over apples. Bake at 375° for 45 to 50 minutes or until golden brown. Cool for 10 minutes. Meanwhile, in a heavy saucepan or microwave, melt remaining caramels with the remaining milk, stirring often until smooth. Drizzle over dessert and ice cream. Serves 12 to 16.
Apple Crumble 8 sheets phyllo dough (14-by9 inches) Butter flavored nonstick cooking spray 1/2 cup packed brown sugar 2 tablespoons all-purpose flour 1/2 teaspoon ground ginger 1/2 teaspoon ground cinnamon 4 medium tart apples, peeled and sliced **** Topping 1/2 cup all-purpose flour

Layer phyllo, sprayed side up, in a greased 8-inch square baking dish. In a large bowl, combine the brown sugar, flour, ginger and cinnamon. Add apples and toss to coat. Spoon over phyllo dough. In a bowl, combine the flour, brown sugar, bread crumbs, ginger and cinnamon, cut in butter until mixture resembles coarse crumbs. Add almonds, sprinkle over apple mixture. Bake at 350° for 40 to 45 minutes or until filling is bubbly and topping is golden. Cool for 10 minutes or until filling is bubbly and topping is golden. Cool for 10 minutes before serving. Serves 9.
