The first day of school...it’s approaching There’s nothing quite like seeing bins of school supplies as you enter area stores to drive home the point that summer is coming to end. So kids, get ready to pack away your swim trunks and get ready to begin filling your new backpack with supplies, so you’re ready for the first homework assignment. Area stores are stocking up for the back-to-school rush. Most schools have lists that feature what school supplies are needed for each grade level. Call your respective school or check out your school’s website for that information. Most area schools will host their first day in a few weeks, so parents should make sure they have all necessary paperwork they need in order for their students to start school. Kid Davie will entertain the entire family
This week Starved Rock Lodge and Conference Center presents music on the Veranda with Sean Walsh from 8 to 11 p.m. Friday, Aug. 14, at Starved Rock Lodge. The grill will open at 11 a.m. Sean Walsh will perform music from the ‘90s and more, plus originals. On Saturday, Aug. 15, Rodeo Drive will perform country music from 8 to 11 p.m. The grill will open at 11 a.m. The Malden United Methodist Church will host its annual ice cream social from 4:30 to 6:30 p.m. Sunday, Aug. 16, at the church, located at 324 Main St. in Malden. The menu will consist of barbeque sandwiches, brats, hot dogs, chips, veggie tray, dessert and ice cream. The cost is $7 for adults and $4 for children 12 years and under. Carryouts will also be available. The First United Methodist Church of Princeton will host a “Blessing of the Backpacks” at both worship services — 8 a.m. traditional and 10:30 a.m. contemporary — on Sunday, Aug. 16. Immediately after the 10:30 worship service, the Back-2-School Bash begins with food, bouncy house, water inflatables, music and more.

His professional career started 30 years ago, and his first press came when he was just 4 months old. He made The Chicago Tribune for standing in his father’s hand. A heavy horse pull will be held during this year’s Bureau County Fair. The event will be at 6 p.m. Wednesday, Aug. 26. It is sanctioned by the Wisconsin Horse Puller’s Association. Tickets are $5 for adults, kids 12 and under are free. The draft horse show will be Sunday, Aug. 30. Halter classes begin at 10 a.m. and the six-horse hitch class will begin after the lunch break. The dynamometer used is now owned and operated by Scott Skinkis of Brillion, Wis., and use to be the old Illinois machine for a lot of years. The dynamometer portion of this machine is built on a 1952 Flat-head Ford and is used just for the sport of horsepulling. Although we never know
how many teams will be pulling, we hope to have a good selection of teams entered. The draft horses are primarily of the Belgian draft horse breed because of their muscular structure. There will be a few Percherons pulling too. If you enjoy seeing draft horses at the fair, come back on Sunday for the

PRINCETON — The Bureau County Fair in Princeton, as part of the 160th fair, will present two concerts for the 2015 fair. On Aug. 27, the fair will present 38 Special at 8 p.m., and on Aug. 28, the fair will present Lonestar with special guest Jo Dee Messina at 8 p.m. Tickets for all 2015 fair shows will go on sale at 9 a.m. June 6 and will be available through the fair’s website, at the fair box office or by phone order. After more than three decades together, 38 Special continues to bring its signature blast of Southern rock to more than 100 cities a year. And at each and every show, thousands of audience members are amazed by the explosive power of the band’s performance. With sales in excess of $20 million, most associate the band with their arena-rock pop smashes, “Hold On Loosely,” “Rockin’ Into the Night,” “Caught Up in You,” “Fantasy Girl,” “If I’d Been the One,” “Back Where You Belong,” “Chain Lightnin’,” “Second Chance” and more. Squash will be coming on soon. Here are some good recipes for all kinds of squash. How about trying one of these recipes for something different?
Yellow Squash Casserole 2 pounds yellow squash, sliced 1/4-inch thick 1 cup chopped onion 1/2 cup water 30 Ritz crackers (1 sleeve), crushed 1 cup shredded cheddar cheese (4 ounces) 2 large eggs 3/4 cup milk 1/4 cup butter, melted, plus 2 tablespoons cold butter cut into bits 1 teaspoon salt 1/4 teaspoon black pepper Preheat oven to 400°. Combine squash and onion in a large heavy pot. Add water and cook, covered, until squash is tender, 5 to 8 minutes. Drain well in a colander and transfer to a large bowl. Mix together cracker crumbs and cheese in a bowl. Stir half (about 1 cup) of cracker mixture into cooked squash and onions. Whisk together eggs and milk in separate bowl, and then add to squash mixture. Stir in 1/4 cup melted butter, salt and pepper. Spread in a 9-by-13-inch baking dish. Sprinkle with remaining cracker mixture and dot with cold butter bits. Bake until lightly browned, about 25 to 30 minutes. You can always sauté up some bacon along with the onion. This will add a lot of flavor.
Zucchini Gratin 2 tablespoons butter 1 1/2 pounds zucchini, 3 medium, diagonally cut into 1/4-inch thick slices 2 shallots, chopped 2 tablespoons all-purpose flour 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon ground nutmeg 1/8 teaspoon cayenne pepper 1/2 cup half and half 3/4 cup shredded Muenster cheese, about 3 ounces 2 tablespoon grated Parmesan cheese In large non-stick skillet, melt butter over medium high heat. Add zucchini and shallots. Cook, stirring occasionally, until tender, about 10 to 12 minutes. Sprinkle flour, salt, pepper, nutmeg and cayenne over vegetables mixture. Cook, gently stirring occasionally, until juices thicken and paste forms, about 1 minute. Position broiler rack so that top of baking dish will be 4 inches from heat source. Preheat broiler. Reduce heat to medium low; slowly stir in half and half. Cook, stirring occasionally, until sauce thickens, about 5 minutes. Stir in 1/2 cup Muenster cheese until melted. Transfer zucchini mixture to ungreased 1-quart baking dish. Sprinkle with; remaining Muenster cheese, then sprinkle with Parmesan cheese. Broil until cheese is melted and edges are golden about 1 to 2 minutes.
Zucchini Fritters 1 6-ounce container 2% Greek yogurt 2 teaspoons lime juice 1 teaspoon lime zest 1 1/4 teaspoons salt, divided 1 1/2 pounds zucchini, shredded 2/3 cup sliced scallions 1/2 cup cilantro, chopped plus more for garnish 1 egg yolk, beaten 1/3 cup all-purpose flour 1/2 teaspoon pepper 1/4 cup canola oil Heat oven to 200°. In a small bowl, mix yogurt, lime juice, lime zest and 1/4 teaspoon salt until smooth. Squeeze shredded zucchini in a clean kitchen towel until most of the moisture is absorbed. In medium bowl, combine zucchini, scallions, 1/2 cup cilantro, the egg, flour, remaining 1 teaspoon salt and the pepper. Heat 2 tablespoons of the oil over medium high heat in a large sauté pan.

When shimmering, add zucchini mixture in four 1/4-cup portions. Flatten fritters with a spatula until they are 3 inches in diameter (it will require 2 batches). Cook fritters 3 minutes until browned, then flip and cook another 3 minutes. Transfer fritters to a baking sheet and place in oven to keep warm. Continue cooking fritters, adding 1 more tablespoon of oil each time. Serve with lime yogurt and garnish with remaining cilantro. Makes 12.
Golden Butternut Squash 1 butternut squash, peeled and cut into 3/4-inch chunks 1 large red onion, peeled and cut into 1/2-inch thick wedges 2 leeks trimmed and cut in disks 1 tablespoon oil 2 teaspoon chopped fresh marjoram Heat oven to 425°. In bowl, gently toss all ingredients. Season with salt and pepper. Spread squash mixture in greased jelly roll pan. Bake 30 minutes or until squash is tender, stirring occasionally.
Zucchini Pie 1 cup shredded peeled zucchini 1 cup evaporated milk 1 egg 3 tablespoons flour 3 tablespoons oleo or butter 1 teaspoon vanilla 1/2 cup sugar 1 9-inch pie crust Mix ingredients in a blender. Pour into a 9-inch pie crust. Sprinkle with nutmeg and cinnamon. Bake at 450° for 20 minutes. Reduce heat to 350° and bake 10 more minutes. Check center. Cool and top with whipped cream.

Anyone who is interested in participating in this
year’s Homestead Festival parade must turn in an application This would include any organization, church, club, band and class reunion that want to have an entry in the parade. Parade entries are encouraged to use the theme for this year’s festival which is “Fields of Dreams.” There is no entry fee to enter a unit in the parade. The deadline for parade entries is Aug. 26. The parade will step off at 1:30 p.m. Sept. 12 on Main Street. Several pop-
ular entries will be back again this year, including the South Shore Drill Team, Jessie White Tumblers, the Generics and Black Hawk Pipes and Drums. The parade application includes information as to where to mail or fax the form. Stuffed Yellow Squash 5 large yellow squash 1 16-ounce package frozen chopped spinach 1 8-ounce package cream cheese, cubed 1 1-ounce packet onion soup mix Shredded cheddar cheese Preheat oven to 325°. Steam whole squash until tender. Cut squash lengthwise and remove seeds with spoon. Cook spinach according to package directions and drain well. Add cream cheese to cooked squash and stir until it melts; do not let it boil. Add soup mix and blend well. Fill scoped out squash shells with spinach mixture and top with few sprinkles of cheese.
