‘A bit of green’ Who isn’t ready to see some green after our Bureau County winter? Area residents met Friday evening for the opening night reception for the “A Bit of Green” art exhibit at the Prairie Arts Council (PAC) in Princeton. The “A Bit of Green” exhibit features artwork of PAC members as well as non-member guest artists. Artwork is done in a variety of mediums. The exhibit runs through March — on Wednesdays, Saturdays and Sundays. Wednesday hours are 10 a.m. to noon; Saturday hours are 1 to 4 p.m.; Sunday hours are 1 to 4 p.m. Located at 24 E. 2014 Illinois Midwinter Bald Eagle Survey yields record count SPRINGFIELD – A record-setting number of American bald eagles was reported during the annual Illinois Midwinter Bald Eagle Survey coordinated by the Illinois Audubon Society. Volunteers tallied 5,975 birds between the dates of Jan. 1 and Jan. 15. Extremely cold temperatures in northern parts of Minnesota and Wisconsin caused a surge in the numbers of over-wintering birds along the Illinois waterways. Survey routes are located on the Mississippi and Illinois rivers with additional routes on the Ohio and Wabash rivers, Crab Orchard Lake, Horseshoe Lake Conservation Area and Carlyle Lake. According to Tom Clay, the society’s executive director, “Our 2014 survey surpassed 2013 (2,325 total) and topped the highest recorded count (since 1992) of 4,292 reported in 2008.” The largest populations of the eagles spotted were counted along the Mississippi River (93.6 percent of the overall total), followed by 4.4 percent observed on the Illinois River and 2 percent sighted on the remaining routes. The number of adults versus immature eagles reported on these surveys, an important indicator of recovery and survival,

remains at 60 percent and 40 percent, respectively. Nationally, this effort is administered by the U.S. Army Corps of Engineers (USACE). The goal of the survey is to maintain the long-term, national coordination of the surveys collected, analysis of that data, and reporting of the results. Locally, survey data collected provides information on eagle trends, distribution and habitat and helps create public interest in bald eagles and their conservation. Information regarding the 2014 survey and previous years’ data can be obtained by calling the Illinois Audubon Society at 217.544.2473. The mission of the Illinois Audubon Society is to promote the perpetuation and appreciation of native plants and animals and the habitats that support them. The Illinois Audubon Society is an independent, member supported, not-for-profit, statewide organization. Founded in 1897, the society is Illinois’ oldest private conservation organization with over 2,300 members, 20 chapters and 17 affiliate groups. The Illinois Audubon Society has protected over 3,300 acres by investing more than $6.6 million to protect land and water throughout Illinois.

Enjoy the 64th Oregon Antique Show Annual event is set for March 29-30 OREGON, Ill. — The Oregon Woman’s Club is proud to announce their 64th annual antique show. Many changes have taken place during the past 60-plus years developing one of the premier antique shows in Northern Illinois. This year is no exception with the addition of new dealers (five states represented), it is shaping up to be another great event. The Oregon Woman’s Club, a member of the General Federation of Women’s Clubs, sponsors this show as a major fundraising event and uses the proceeds to help fund various community projects and charities. As in past years, the show will be held at the Blackhawk Center Sports Arena, located on the Oregon public school campus. The facility offers ample parking, handicap accessibility and a huge area for 52 Midwest antique dealers to display their

merchandise for sale. Quality antiques from the early 1800s through the retro era of the 1950s includes all areas of collecting — furniture, glass, china, pottery, toys, primitives, textiles, jewelry, dolls, silver, decorator items and more. There will be items for all collecting tastes and budgets, for both the new and advanced collector. “We like to think of it as comfort food for the eyes,” an event spokesperson said. The food concession will be provided by the Chana United Methodist Ladies. The menu will include homemade chicken and noodles, sloppy joes and various other sandwiches, chips, beverages and a selection of desserts. Mary Lou’s Crystal Repair from Joliet will be on hand both days to repair a person’s damaged heirlooms while they wait. On Sunday, Munda & Asso-

ciates, Auctioneers & Appraisers, Freeport, will offer verbal appraisals of small treasures for $5 per item. Please supply photos of large items. Better Business Bureau issues utilities scam warning CHICAGO — On the heels of the bitter cold temperatures that have hit Chicago and Northern Illinois, the Better Business Bureau (BBB) is issuing a warning on scam artists that are targeting individual consumers and businesses with the false claim that their utility bills are delinquent and their service is in danger of being disconnected. The BBB has received calls from concerned consumers and businesses who state they have received calls from individuals claiming to be from either ComEd or Nicor making demands that they immediately make payment on their alleged delinquent accounts. Whether the payment demand is purportedly for ComEd or Nicor, the callers ask that the consumers

purchase a gift card or a Green Dot card and then call back with the card information to make a payment. “If a consumer receives one of these calls they should never provide any personal or financial information to the caller” said Steve J. Bernas, president and CEO of the Better Business Bureau serving Chicago and Northern Illinois. “Instead they should contact their utility company’s customer service department and verify that a call was made.” Additionally, if you suspect that the call is fraudulent or you may be a victim of a scam you should contact your local police department. Elks sponsors orthopedic assessment clinic PRINCETON — Princeton Elks Lodge 1461, in cooperation with the Illinois Elks Children’s Care Corporation, will sponsor a free children’s orthopedic assessment clinic on April 10. The clinic is from 8:30 to 10:30 a.m. and is by appointment only. To make an appointment, call the Illinois Elks Children’s Care office at 800-2720074 between the hours of 9 a.m. and 4 p.m., Monday through Friday. There are no charges for any services at this clinic. The clinic will be at Perry Memorial Hospital, 530 Park Ave. East in Princeton; use the north front door. Dr. Richard Erickson of Carol Stream will be the clinician in charge. No medical referral is necessary for the clinic but physicians are welcome to refer patients to the clinic for a specific reason or second opinion. School nurses are welcome to refer

children and families to the clinic. The Elks Organization has been working with physically challenged children since 1928 and this is one of the 17 clinic locations throughout Illinois. The clinic is an ideal time to have a child reviewed for bone and joint development. If your child has feet pointing out or in who complains of back, knee, leg, ankle pain or has a back curvature can be seen at this clinic. The Elks will provide financial assistance to their best of their ability for children needing further treatment or specialty equipment when the family lacks sufficient resources to do so. In the past, the Elks have purchased therapy services, corrective shoes, braces, wheelchairs and augmentative communication devices to help children overcome a variety of physical challenges.

Food court St. Patrick’s Day is soon to be here, so we ought to do some good Irish recipes. Sounds good to me ... something different for a change.

Sweet-Sour Red Cabbage 1/2 cup cider vinegar 1/4 cup sugar 1/4 cup packed brown sugar 1 medium head red cabbage, shredded (10 cups) 2 bacon strips, diced 1 medium tart apple, peeled and chopped 1/2 cup chopped onion 1/4 cup water 2 tablespoons white wine vinegar 1/2 teaspoon salt 1/4 teaspoon pepper 1/8 teaspoon ground cloves In a large bowl, stir the cider vinegar and sugars until sugars are dissolved. Add cabbage, toss to coat. Let stand for 5 to 10 minutes. Meanwhile, in a large skillet, cook the bacon over medium heat until crisp. Using a slotted spoon remove to paper towel to drain. In the drippings, sauté apple and onion until tender. Stir in water and cabbage mixture. Bring to a boil. Reduce heat, cover and simmer for 30 to 35 minutes. Stir in all of the remaining ingredients. Simmer, uncovered, for 5 minutes or until tender. Sprinkle with reserved bacon just before serving. Serves 8 to 10.

Best Ever Potato Soup 6 bacon strips, diced 3 cups cubed peeled potatoes 1 14 1/2-ounce can chicken broth 1 small carrot, grated 1/2 cup chopped onion 1 tablespoon dried parsley flakes 1/2 teaspoon each celery seed, salt and pepper 3 tablespoons all-purpose flour 3 cups milk 8 ounces process cheese (Velveeta), cubed 2 green onions, thinly sliced In a large saucepan, cook bacon until crisp; drain. Add potatoes, broth, carrots, onion, parsley, celery seed, salt and pepper. Cover and simmer until potatoes are tender, about 15 minutes. Combine flour and milk until smooth; add to soup. Bring to a boil and stir for 2 minutes. Add cheese, stir until cheese is melted and the soup is heated through. Garnish with green onions. Serves 8.

pounds ground beef large onion, chopped garlic cloves, minced 15-ounce cans tomato sauce, divided 1 teaspoon dried thyme 1/2 teaspoon dill weed 1/2 teaspoon rubbed sage 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon cayenne pepper 2 cups cooked rice 4 bacon strips, cooked and crumbled 1 medium head cabbage (2 pounds), shredded 1 cup (4 ounces) shredded part skim mozzarella cheese In a large skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in one can of tomato sauce and seasonings; bring to a boil. Reduce heat, cover and simmer for 5 minutes. Stir in rice and bacon, heat through. Remove from heat. Layer a third of the cabbage in a greased 13-by-9-inch baking dish. Top with half of the meat mixture. Repeat layers, top with remaining cabbage. Pour remaining tomato sauce over top. Cover and bake at 375° for 45 minutes. Uncover, sprinkle with cheese. Bake 10 minutes longer or until cheese is melted. Let stand for 5 minutes before serving.

Crispy Oven Fried Oysters 3/4 cup all-purpose flour 1/8 teaspoon salt 1/8 teaspoon pepper 2 eggs 1 cup dry bread crumbs 2/3 cup grated Romano cheese 1/4 cup minced fresh parsley 1/2 teaspoon garlic salt 1 pint shucked oysters or 2 8-ounce cans whole oysters, drained 2 tablespoon olive oil Jalapeno Mayonnaise 1/4 cup mayonnaise 1/4 cup sour cream 2 medium jalapeno peppers, seeded and finely chopped 2 tablespoons milk 1 teaspoon lemon juice 1/4 teaspoon grated lemon peel 1/8 teaspoon salt 1/8 teaspoon pepper In a shallow bowl, combine the flour, salt and pepper. In another shallow bowl, whisk eggs. In a third bowl, combine the bread crumbs, Romano cheese, parsley and garlic salt. Coat oysters with flour mixture, then dip in eggs and coat with crumb mixture. Place in a greased 15-by-10-by-1-inch baking pan, drizzle with oil. Bake at 400° for 15 minutes or until golden brown. Meanwhile, in a small bowl whisk the jalapeno mayonnaise, ingredients. Serve with oysters. Makes about 2 1/2 dozen (about 2/3 cup jalapeno mayonnaise).

Glazed Corned Beef 1 corned beef brisket (3 to 4 pounds), trimmed 1 medium onion, sliced 1 celery rib, sliced 1/4 cup butter, cubed 1 cup packed brown sugar 2/3 cup ketchup 1/3 cup white vinegar 2 tablespoons prepared mustard 2 teaspoons prepared horseradish Place corned beef and contents of seasoning packet in a Dutch oven, cover with water. Add onion and celery, bring to a boil. Reduce heat, cover and simmer for 2 1/2 hours or until meat is tender. Drain and discard liquid and vegetables. Place beef on a greased rack in a shallow roasting pan. Set aside. In a small saucepan, melt butter over medium heat. Stir in the remaining ingredients. Cook and stir until sugar is dissolved. Brush over beef. Bake, uncovered, at 350° for 25 minutes. Let stand for 10 minutes before slicing Serves 12.

Slow Cooked Cabbage Rolls 1 large head of cabbage 1 egg, beaten 1 8-ounce can tomato sauce 3/4 cup quick cooking rice 1/2 cup chopped green pepper 1/2 cup crushed saltine (about 15 crackers) 1 ounce onion soup mix 1 1/2 pounds lean ground beef 1 46-ounce can V8 juice Salt to taste Grated Parmesan cheese Cook cabbage in boiling water just until leaves fall off head. Set aside 12 large leaves for rolls. Drain well. (Refrigerate remaining cabbage for another use). Cut out the thick vein from the bottom of each reserved leaf, making a V shaped cut; set aside. In a large bowl, combine the egg, tomato sauce, rice, green pepper, cracker crumbs and soup mix. Crumble beef over mixture and mix well. Place about 1/3 cup meat mixture on each cabbage leaf, overlap cut ends of leaf. Fold in sides, beginning from the cut end. Roll up completely to enclose filling. Secure with toothpicks. Place cabbage rolls in a 3-quart slow cooker. Pour V8 juice over rolls. Cover and cook on low for 6 to 7 hours or until filling reaches 160°. Just before serving, sprinkle with salt and cheese. Serves 6.

Colcannon Potatoes 2 pounds cabbage, shredded 2 cups water 4 pounds potatoes, peeled and quartered 2 cups milk 1 cup chopped green onions Salt and coarsely ground pepper to taste 1/4 cup butter, melted Crumbled cooked bacon and minced fresh parsley In a large saucepan, bring cabbage and water to a boil. Reduce heat, cover and simmer for 10 to 12 minutes or until tender. Drain, reserving cooking liquid. Keep cabbage warm. Place cooking liquid and potatoes in a large saucepan; add enough additional water to cover the potatoes. Bring to a boil. Reduce heat, cover and cook for 15 to 17 minutes or until tender. Drain and keep warm. In a small saucepan, bring milk and onions to a boil, remove from the heat. In a large mixing bowl, mash potatoes. Add milk mixture, beat until blended. Beat in the melted butter, bacon and parsley. Serves 12 to 16.

Blarney Stones 4 eggs 1 3/4 cups sugar 1 teaspoon vanilla extract 1 3/4 cups all-purpose flour 3 teaspoons baking powder 1/2 teaspoon salt 1 cup milk 1/4 cup butter, melted Frosting 2 pounds confectioners’ sugar (about 7 1/2 cups) 2/3 cup milk 2 teaspoons vanilla extract 1/8 teaspoon salt 6 cups finely chopped peanuts In a large mixing bowl, beat the eggs, sugar and vanilla until thick and lemon colored, about 4 minutes. Combine the flour, baking powder and salt, add to egg mixture. Beat on low speed just until combined. Beat in milk and butter. Pour into a greased 13-by-9-inch baking dish. Bake at 350° for 30 to 35 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack. Cut into squares. Cover and freeze overnight. For frosting: In a small mixing bowl, beat the sugar, milk, vanilla and salt until smooth.

Frost the top and side of frozen cake squares. Roll in peanuts. Place on wire rack to set. Makes 2 dozen.

Irish Lamb Stew 6 tablespoons all-purpose flour, divided 1 teaspoon salt 1/8 teaspoon pepper 1 1/2 pounds lamb stew meat cut into 1-inch cubes 2 tablespoons vegetable oil 3 cups water 1/2 teaspoon dill weed 8 pearl onions 3 medium carrots cut into 1-inch pieces 2 large potatoes, peeled and cubed 1/2 cup half and half cream Hot biscuits In a large resalable plastic bag, combine 4 tablespoons flour, salt and pepper. Add lamb, shake to coat. In a Dutch oven, brown lamb in oil on all sides. Add water and dill, bring to a boil. Reduce heat, cover and simmer for 1 1/2 hours or until meat is almost tender. Add the onions, carrots and potatoes. Cover and simmer for 30 minutes or until the meat and vegetables are tender. In a small bowl, place remaining flour, stir in cream until smooth. Stir into stew. Bring to a boil, cook and stir for 2 minutes or until thickened. Serve with biscuits. Serves 6. In addition, a variety of other soups will be made by the library board trustees and librarians. The cost of the supper, which includes up to two bowls of soup, bread, crackers, dessert and drink, will be $6 for adults and $3 for children ages 10 and under. In addition, a raffle and 50/50 drawing will be held that evening. Earhart was a media darling in the day, yet most talked about details of her life begin and end with her disappearance. ‘A Big Fat Crisis’ You feel as though you might have to quit your job. Yeah, you’re that desperate to get away from the treats that somebody’s been leaving in the break room. Terri Nice gesture, Schlichenmeyer but you’re totally incapable of resisting them and each bite ruins your diet. It’s a point of shame that you have no willpower, but there may be more to your weight problem than lack of the word “no.” Find out by reading the new book “A Big Fat Crisis” by Deborah A. Cohen, MD, and cut yourself some slack. It seems as though you can’t escape it: everywhere you look, you’re reminded to eat healthier, get active and lose weight. But you also can’t escape the things that taste good but are bad for you, and sticking to Dietary Guidelines “is neither easy nor fun.” In fact, most of us don’t eat right and just 5 percent of us get the recommended amount of exercise. But to say that we’re weak-willed is misleading, says Cohen. Most overweight people “appear to have plenty of self-control in most other areas of their lives.” They get to work on time, volunteer, pay bills, drive safely and raise families. So why can’t they control what they eat? The reason, Cohen

says, is twofold: we’re hard-wired to eat, and we’re exploited by our “food environment.” The good news is that the latter — “point of purchase and point of consumption” — are changeable. First, though, we must understand “that an individual’s ability to resist overeating is limited when excess food is constantly available.” In other words, for myriad reasons, the more we try to control our appetites, the less we can avoid that extra donut or large O-rings. The fixes are many: pay attention to what you eat; just seven extra calories a day will result in surprisingly big weight gain. Familiarize yourself with caloric content. Become aware of how marketing promotes overeating. And support government regulations on grocery stores and restaurants; after all, laws keep us safe from cholera and typhoid. They should be able to keep us safe from obesity, too. So you say you need to lose 10 pounds — but they’re kicking your (well-padded) butt? It might not be your fault, and “A Big Fat Crisis” tells you why but not without an extra helping of controversy. On one side of the table, this book should be a big comfort to anyone who’s shamed by weight and temptation. Author Deborah A. Cohen, MD, takes the onus off dieters by

explaining that it may be genuinely true that they can’t help themselves. Cohen doesn’t let them totally off the hook, though; she still scolds, but not terribly harshly. The controversy, however, lies in Cohen’s strongly-opinionated solutions. Specifically, restaurant owners, grocers, vendors and retailers won’t like ‘em. Not one crumb. Obviously, this isn’t your usual diet-andexercise book. There are conversation-starters on every page here, and lots
