Beet Your Aversions

T

hroughout my life, especially when I was young, I simply couldn’t understand the appeal of certain foods.

To this day, my sweet tooth has never been remotely tempted by candy corn, black licorice or fruitcake. How an entire country can love Vegemite remains a mystery to me. And when it comes to individual vegetables, I’ve always avoided cooked carrots (the only way to eat them is raw) and pickled beets (for ages, pickled was the only way I knew they came). With time and different preparation, though, I did overcome my aversion to brussels sprouts and asparagus.

And now I’m thinking that, just maybe, I will overcome my aversion to beets. After reading this month’s Conscious Eating article by April Thompson, “Fall Beets: Versatile Leaf-To-Root Eats,” I want to at least try. They have so many health benefits, and according to nutritionist and food blogger Candace Bell, “a unique earthy flavor” that goes well with citrus and pairs well with arugula, crunchy walnuts and tangy goat cheese in a salad.

This sounds good.

Beet, Greens and Goat Cheese Linguine is the recipe that looks delicious—but also time-consuming and difficult. And then there is a concerning warning: “This puree will stain anything that it may be splattered onto.” I am sure I will splatter. Even so, my goal is to try it.

Annual Biketoberfest Supports Sustain Charlotte

iketoberfest, the unique, annual, family-friendly urban adventure benefitting Sustain Charlotte, will feature a scavenger hunt-style walk-or-bike event from noon to 4 p.m. followed by an afterparty with live music, exclusive beer and giveaways at Triple C Brewing Co. starting at 4:30 p.m., all on October 30. Participants will bike, walk and/or use public transportation throughout Charlotte to visit curated destinations and local businesses along the routes while collecting stamps in an event passport toward winning prizes—the more stamps collected, the greater the chances of winning.

The event highlights the many ways Charlotte can be experienced and enjoyed without driving. The bike ride for all ability levels will go through the South End, Uptown and Historic West End, and there’ll be a shorter route for families and others that prefer to walk.

British Massage to Relocate in November

A Himalayan fungus that has long been used in Traditional Chinese Medicine, Cordyceps sinensis, attracted global attention in 1993 when Chinese athletes broke world records in track and field. To study its effects, Brazilian researchers conducted a randomized, doubleblind, placebo-controlled study in which they gave 30 amateur marathoners two grams of the fungus each day for 12 weeks. Compared to the placebo group, those in the Cordyceps group had significantly lower heart rates at eight weeks and improved aerobic performance at 12 weeks.

The critical importance of simple lifestyle strategies in cancer prevention has been borne out by two recent endeavors. In a five-year study of 2,157 physically active people over 70 from five European countries, international researchers found that 2,000 International Units a day of vitamin D3 and one gram a day of marine omega-3s, plus a simple homestrength exercise program, reduced the risk of invasive cancers by 61 percent. Eating higher amounts of fish, specifically tuna and non-fried fish, appears to increase the risk of malignant melanoma, according to a Brown University study of 491,367 U.S. adults published in the journal Cancer Causes and Control.

Examining 15 years of data, the researchers found that compared to subjects with a median daily fish intake of .11 ounces, those with a median daily intake of 1.5 ounces had a 22 percent higher risk of malignant melanoma and a 28 percent increased risk of melanoma in situ, characterized by abnormal cells in the outer layer of the skin. “We speculate that our findings could possibly be attributed to contaminants in fish, such as polychlorinated biphenyls, dioxins, arsenic and mercury,” says study author Eunyoung Cho, an associate professor of dermatology and epidemiology. Pending further research on the underlying biological mechanisms, the authors did not recommend any changes to fish consumption.

A U.S. National Institutes of Health article concludes that insufficient iodine represents a plausible explanation for increasing rates of breast cancer in younger women with distant metastasis. Healthy breasts need iodine, but compounds such as chlorine, bromine and fluoride can form haloacetic acids in city water supplies and negatively affect iodine absorption.

The U.S. Environmental Protection Agency allows .060 milligrams per liter. Some local water supplies have reported higher levels at the faucet.

The closer to the treatment plant, the more likely residents are to have a higher exposure and higher effect from haloacetic acids. Water can be tested by a quality lab to know whether it is affected. A filter can be put in place to decrease exposure, and any deficiencies can be corrected. Individuals can also have their urine or blood checked for haloacetic acid levels, which may also contribute to weight gain.

Save the Sequoias

The U.S. Forest Service is speeding efforts to protect giant sequoias from wildfires; almost 20 percent of the ancient trees have been destroyed by wildfire in the last two years. They will thin the forest in and around sequoia groves by removing brush and smaller trees from 13,000 acres of national forest to protect 12 giant sequoia groves this summer and conduct prescribed burns using the agency’s emergency authority under the National Environmental Policy Act. Forest Service Chief Randy Moore says, “Without urgent action, wildfires could eliminate countless more iconic giant sequoias.”

Giant sequoias can live for more than 3,000 years and are found only on the western slopes of California’s Sierra Nevada mountains. The trees are adapted to fire with thick, spongy bark, and the heat releases seeds from their cones, allowing young trees to take root in areas cleared by fire. A policy to put out wildfires as quickly as possible has created unnaturally dense forests and allowed brush and dead wood to accumulate. Climate change has led to hotter temperatures, severe drought, a year-round fire season and the proliferation of bark beetles that have killed the drought-weakened trees. Bigger, hotter fires are more likely to reach giant sequoias’ crowns, killing them.

Monarch Butterfly Now Officially Endangered

The International Union for Conservation of Nature (IUCN) Red List of Threatened Species numbers 147,517 species, including 41,459 that are threatened with extinction. The latest update adds the migratory monarch butterfly, a subspecies of the monarch butterfly (Danaus plexippus). In the past decade, the native population has shrunk by between 22 percent and 72 percent during winter migrations from Mexico and California to summer breeding grounds throughout the U.S. and Canada due to logging and deforestation for agriculture and urban development.

Pesticides and herbicides kill butterflies and milkweed, the host plant that the larvae of the monarch butterfly feed on. Drought related to climate change limits the growth of milkweed and increases the frequency of catastrophic wildfires, and temperature extremes trigger earlier migrations before milkweed is available, while severe weather has killed millions of butterflies.

Possible remedies are planting native milkweed, reducing pesticide and protecting the overwintering sites. IUCN Director General Dr. Bruno Oberle says, “To preserve the rich diversity of nature, we need effective, fairly governed, protected and conserved areas alongside decisive action to tackle climate change and restore ecosystems. In turn, conserving biodiversity supports communities by providing essential services such as food, water and sustainable jobs.”

Natural Products and Environmental Advocacy in Gaston County

R

enee Southard is owner of Organic Marketplace, a natural food and supplements store in Gastonia, and president of SENPA, a national nonprofit with the core focus of strengthening the success of independent natural retailers and aligned manufacturers, while nourishing their human connection with consumers.

Natural Awakenings recently caught up with Renee for an update on her business as well as her role with SENPA.

NA: What prompted you to open Organic Marketplace?

RS: I was

having health issues I'd never experienced before and found that herbs took care of them.

That led me to open the store in 1992 in an 800-square-foot space that sales reps told me was hard to find but rent was only $1,000 a month.

Back then, it was just me working seven days a week. I kept a card catalog of my customers, and on days when no one walked through the door, I'd call them to ask how the product they purchased was treating them. I became involved in their lives. To this day, their children and their children's children come in and tell me they remember me. There is absolutely nothing better than being in business for 30 years and having three generations come in.

NA: How has the store changed over the years?

RS: While herbs and supplements are great, grocery stores

at that time didn't carry the cleaner foods needed to support the body with nutrition. A few years in, I went from a supplements store to a food market. We expanded, then eventually moved to a 5,000-square-foot two-level former fire station that's literally behind my house. We've been in this location for 20 years.

We added raised beds out back and opened a little organic restaurant downstairs. I'm a single woman who raised two sons, and I eventually found another woman who is an amazing chef and needed a pay-it-forward. I gave Carla Sinteff the opportunity to

have her own business within my business.

I have nothing to do with the restaurant anymore, which is the beauty of it.

NA: Protecting the environment is very important to you. How does this manifest in the operations of Organic Marketplace?

RS: We have been bag-free for eight

years and always look for minimal packaging. We still have a bulk section, and we tare peoples' containers. We are getting ready to renovate, and I'm talking to my landlord about putting solar panels on the roof and doing other things to be more sustainable, give power back to the grid or power our own store. We've also always been a sustainability leader in our community. We talk to schools and serve on the board of Keep Gastonia Beautiful.

NA: How did Covid impact your business and team?

RS: We were not closed one single day, and I am so proud that

we didn't have one infected employee. That's a tribute to our industry. We know what a virus is, and we know how to deal with it. We were very consistent with our masking and cleaning policies. Through all the craziness, we learned what resiliency and community are all about—and we learned our place in the community. Even though we are small, we were able to be effective for so many people and have been tremendously supported because of that.

NA: How do you run your business and serve as President of SENPA? RS: Every staff member is

super educated. Some have been with me for 18 years, and we have a very cohesive team. While I’m still 100% involved in my business, my team is carrying the torch. With our many goals at SENPA, I had to be more present, attend trade

shows and go wherever the association needed me. My team has made this possible.

NA: What are some of SENPA’s goals?

RS: Just as my team has stepped up as

I’ve taken on more responsibility at SENPA, we’re teaching owners to look to the next generation for a succession path. To proactively plan now versus waiting until a sickness or family illness forces you to make a rash decision and leave your business. It means giving yourself time to look at your staff and environment and see who shows a real desire to make a difference in people's lives. That's why we all came into this business, and now we're the dinosaurs, so it's time to teach and empower these so-called kids.

Next, we're going to have to hit the advocacy button again. My passion is building industry advocacy to the level we had when the Dietary Supplement Health and Education Act of 1994 (DSHEA) which required manufacturers of dietary supplements ensure their products met DSHEA and FDA regulations passed, when we had Sen. Hatch and many other supporters in Congress.

Contrary to what many think, the natural products industry is diligently monitored.

As a good steward of our business, we want to let our state and federal legislators know we are the experts in our field. My most important task as president of SENPA is educating key people of this so that we have a seat at the table when issues arise.

NA: What do you enjoy doing outside of work?

RS: I love my yard. I love to garden. I

love to be in blue water. I have a beautiful labradoodle, Raven, who is a little rockstar.

I love that my life doesn't run from the moment my eyes wake up to the moment I go to sleep. I have time to breathe, put my hands in the dirt and sit back and watch, smell and feel it grow. I have time to appreciate things now, and I am beyond grateful.

of a growing community of industry professionals trying to figure out how to design, build and operate structures in more environmentally sustainable, socially impactful and healthy ways. “We ask what would it look like if a building were to give back more to the world than it took,” she explains. “We’re a resource-consumptive industry with a large carbon footprint. Forty percent of global carbon emissions are caused by the energy required to construct and operate buildings. We also use lots of materials that pose negative impacts on people’s health—products known to contain carcinogens or cause respiratory problems—and people spend 90 percent of their time indoors, so everything we’re exposed to indoors has a huge impact on our health.”

The ILFI Living Building Challenge sets bold aspirational goals, and buildings around the world have proven that it is possible to hit these benchmarks. “The energy imperative is that the building produces more energy than it consumes, and that happens by generating renewable energy like solar power onsite and using very little energy,” Baker asserts. “For water, we ask that everyone return the water that goes through the building cleaner than it entered, which means people need to treat water onsite and use a lot less of it.

You can do that with composting toilets, as well as grey water systems and rainwater recapture strategies.”

Baker is proud of ILFI’s ambitious goals. “If you decide to do a renovation to save 5 or 10 percent of your water or energy consumption, it will feel good to get there, but what we’ve found is that when you set a really exciting target for yourself, the whole process is more fun and you get further with similar amounts of effort and money, because you’re thinking about systems differently, questioning assumptions about what a home might be capable of doing and employing a different level of creativity. At the end of the day, it can lead to a much more beautiful, more efficient building.”

Energy Conservation Energy conservation is job number one for Jennifer Languell, founder and president of Trifecta Construction Solutions, in Babcock Ranch, Florida. “An inexpensive but impactful upgrade is adding insulation. If you’re in an existing house, add insulation on top of what you already have. If you’re new construction, beef it up. You also want to address unwanted points of air infiltration using gaskets, weather stripping and caulking around exterior doors and windows. Over time, these items can shrink or get damaged, and may need to be replaced to seal the house and minimize air drafts,” she says. “You want to improve efficiency first, which costs much less than transitioning to renewable energy. And when you do transition, you only have to buy smaller quantities of photovoltaic panels to offset your power generation.”

According to Languell, windows are climate-specific and can be modified by adding or subtracting panes, coatings and treatments.

“In Montana, I want the heat from the sun coming into my house, but in Florida, I don’t,” she says. “Natural light is great, but there’s a balance between your glass-to-wall ratio. In Florida, you would never have a skylight, but up north you’d consider it.

And at this point, everyone should be transitioning to LED lighting, which will save money and energy.”

Minimizing or eliminating turf grass and planting drought-tolerant, native vegetation outside will also significantly cut water use, Languell suggests.

“Grey water and rainwater collection systems are gaining momentum, and these systems for home use have come leaps and bounds from where they were 10 years ago,” she says. “They can take water from your laundry or shower, treat it, and use it to flush toilets, for example—a huge benefit for the West Coast and a huge water savings, because you’re using your water twice before you dispose of it.”

Eco-Responsible Materials With regard to building materials and products, the annual ILFI Red List calls out chemicals with negative human health impacts that shouldn’t be used in buildings, such as bisphenol A, chlorofluorocarbons, formaldehyde, flame retardants, phthalates, toxic heavy metals and volatile organic compounds (VOC). Its Declare label is like a nutrition sticker that details what is in a building product, whether it is free of Red List chemicals and what its carbon footprint is.

“Consumers should demand transparency; they should know what is in the products put in their homes,” Baker says.

According to Languell, the more durable and local a material is, the better for the environment. “I’d never say no to a metal or concrete roof that lasts 50 years versus shingles with a 15-year cycle. Although bamboo is rapidly renewable, most of it comes from China, so the greenhouse gases associated with the transportation makes it less environmentally friendly. Local materials are ideal. The closer the better. Get granite from Georgia, instead of Italy.”

When it comes to human health, home décor and cleaning products are equally as important as the construction materials, Languell advises. “Many times we’ll build a healthy and efficient home and then people put all sorts of fabrics and chemicals in there that are off-gassing because they’re not thinking about the health of the indoor environment.”

Better might have a less expensive wood, but it’s solid frame construction. The best is a very good wood and solid frame construction made for heirloom quality. There are costs associated with each level, and I recommend spending the most budget you have on a quality product, because that sofa, if it’s made well and it’s styled in a classic design, can be recovered over and over again; therefore, you’re being ecofriendly to the world because it’s not going into a landfill.”

Her favorite materials for furnishings are sustainably forested or reclaimed wood, long-lasting metals like steel and aluminum, fast-growing bamboo and recycled or reclaimed plastics. She’s also a proponent of vintage pieces. “With all furniture, if it can be salvaged, salvage it. Healthwise, make sure the materials are hyper-washed to protect you from allergens. Old glazes or paints might have lead in them, so take vintage furniture to a professional that uses the right safety

equipment or go to YouTube University and make sure that you protect yourself with gear to rework the piece in a garage or outdoor space. Always choose nontoxic paints and stains with low to no VOCs.”

Biophilic Design Baker is particularly excited about interior design innovations that reconnect us to nature, known as biophilic design. “Natural light is important, but also, lighting manufacturers are figuring out how to produce lighting that feels like you’re sitting outside in a forest while a cloud passes by or under a tree with dappled light. Durability “I rate durability over everything else. If you build it once and it doesn’t get destroyed by a natural disaster, you’re going to generate less waste and use fewer resources,” Languell says. “Durability might mean fireproofing in California, windproofing in Florida and floodproofing in Louisiana. It also means futureproofing your home, especially if you’re building new. Anticipate technologies that are coming. Even if you can’t afford photovoltaic panels now, for a couple of bucks, you can run electric conduit from your panel up to your roof so if ever you decide to buy them, it’s not a major overhaul of your house. Dual-pipe your house and have the pipes ready to tie in rainwater or grey water, even if it’s not financially viable right now. Wire your house for a 220-volt plug in your garage so everyone that has an electric vehicle can charge it overnight.”

Solar Energy at Montgomery Sheep Farm

T

he Montgomery Sheep Farm, in Biscoe, North Carolina, became the first off-grid farm in North Carolina by installing solar and energy storage in 2017. The micro-distribution grid uses solar and batteries to power the farmhouse, lodge and cabin; both lamb barns; workshops; and other farm buildings.

Five kilowatts (KW) of solar panels were installed on the lodge’s roof and 20 KW on a solar carport which also protects the farm equipment.

The 28-megawatt (MW), ground-mounted solar array on 123 acres of the farm generates enough electricity to power 3,000 homes annually. All this electricity is delivered to the town substation which distributes the power to the homes, schools and businesses in Biscoe during daylight hours.

The farm’s grid provides power to the farm facilities totaling 25 KW of solar installed and 53 kWh of energy storage.

Overall, the microgrid, which saves about $500 each month in electricity, generates more than 100 percent of the energy required to run the farm. For about half a year, the microgrid powers all the farm operations and even exports power back to the grid. During the winter months, some power is imported from it.

delivery points from it were combined into one; all power lines from the various facilities on the farm were put underground.

The public, in groups of up to eight, can book a stay at the Montgomery Sheep Farm cabin through Airbnb. ersatile, nutritious, colorful and flavorful, beets are quite the package deal. This easy-togrow, multi-season vegetable is packed with nutrition and plays well with other ingredients. Beets can be enjoyed raw, roasted, boiled or pickled.

They can be blended into quick dips, thin-sliced for healthy chips or incorporated into desserts for a mild, sweet flavor and bold color.

“Beets have been a staple ingredient on our vegetarian menus for generations. They are an easy way to add natural sweetness and gorgeous color to so many dishes, both savory and sweet,” says Danica Wilcox, owner of the Moosewood Restaurant, in Ithaca, New York, which is celebrating its 50th anniversary next year. The quintessential vegetarian eatery’s go-to beet dishes include hummus, burgers and borscht.

“Beets boast so many health benefits. Being rich in folate, manganese and copper, they are good for heart, brain and bone health. They are also a good source of fiber, which will feed the good bacteria in your gut, leading to improved gut health,” says Candace Bell, a Phoenixbased holistic nutritionist and food blogger at The Wheatless Kitchen.

“Beets have a unique earthy flavor that goes perfectly with bright citrus.

Roasting them brings out their sweet and savory flavors, and they pair well with arugula, crunchy walnuts and tangy goat cheese in a salad.”

Lisa Keys, of Kennett Square, Pennsylvania, author of the food blog Good Grief Cook, grows beets and uses them in a number of ways. “Beets get their color from natural plant pigments called betalains, which contain antioxidants and antiinflammatory properties that help control illnesses like diabetes and heart disease,” she says. Her blog offers a recipe for a hearty, roasted beet sandwich, which pairs the root veggie with feta and a smashed avocado, dill, lime and yogurt spread.

Versatility is one of the beet’s star qualities. The root vegetable can be quickpickled with other garden vegetables, pureed into soup, roasted for a side dish, shredded raw into salads, juiced into a smoothie or even concentrated into a powder—a favorite of registered dietitian nutritionist Mascha Davis, in Los Angeles. “Beet powder can be added to so many recipes for a fast and easy superfood boost,” she says. Her go-to applications for beet powder include a beet and

If the benefits of the beetroot didn’t already run deep enough, its stems and leaves are not only edible, but also packed with vitamins A, B and K, as well as copper, manganese, iron and calcium.

The greens make a great side dish to accompany a beetroot main dish or can be incorporated into a beet soup, salad, sandwich or smoothie for a zero-waste meal turbocharged with nutrients.

Like spinach, chard and other vegetables in the goosefoot family (Chenopodiaceae), beets are rich in oxalates which can contribute to kidney stones. For most healthy people, though, oxalates aren’t harmful, if enjoyed in moderation.

BEET, GREENS AND GOAT CHEESE LINGUINE 2 medium, fresh organic or local beets with leaves ¼ cup unsweetened jasmine green tea (or water), hot or cold 1½ Tbsp extra-virgin olive oil Juice and zest of ½ lemon (1½ Tbsp juice) 2 large garlic cloves ¾ tsp sea salt 10 oz dry, whole-grain linguine 2 oz soft, artisanal goat cheese or soft cashew cheese, crumbled ¼ cup fresh, small basil leaves Preheat the oven (or toaster oven) to 350° F. Wash, dry and remove the leaves from the beets; thinly slice the leaves and chill until ready to use. Wrap the beets in recycled aluminum foil and roast in the oven until cooked through and tender, about 1 hour and 15 minutes. When cool enough to handle, scrape off the beet skin using the dull side of a paring knife, then chop the beets.

In a blender, add the chopped beets, tea, olive oil, lemon juice and zest, garlic and salt.

Blend until velvety smooth, at least 2 minutes. Set aside. (Tip: Be careful. This purée will stain anything that it may be splattered onto.)

Bring a large saucepan of water to boil over high heat. Add salt to the water, if desired.

Add the linguine and cook according to package directions. (Alternatively, try my lidcooking technique to save energy: After stirring the linguine into the boiling water, cover with a lid and turn off or remove from heat. Let cook without heat per the same timing suggested on the pasta package.)

While the pasta is cooking, pour the beet purée into a large sauté pan and bring just to a boil over high heat. Reduce heat to medium-low, add the beet greens and cook while stirring until the greens are wilted, about 5 minutes.

Drain the pasta, reserving ½ cup of the cooking liquid. Add the pasta to the beet sauce and gently toss with tongs to combine. Add desired amount of reserved cooking liquid (if any) and gently toss to combine.

Transfer to a large serving bowl and sprinkle with the goat cheese and basil. Sprinkle with additional lemon zest, if desired, and serve.
