It is always a pleasure to put together tips to a Formula One destination for my SEO clients – I’ve been doing it for 20 years since I first came to Monaco for the Mumm 30 Sailing Regatta, and creating this magazine on mostly grey, drizzly days in London has made me long for some Mediterranean sunshine.

Our focus – as always in motorsport – has been on time, or more specifically, how to make the most of it.

To do that we have hand-selected each recommendation, crafting a curated guide filled with ideas and inspiration, whether it is food, fashion, beauty or wellness, to shape your journey and see the city-state with fresh eyes.

The Monaco Grand Prix has always been a highlight of the motorsport calendar – from the people and setting to the atmosphere and nightlife. Far from just a playground for the rich and famous, it is also a hub of opportunity that is truly unique.

The race weekend that pushes you to your limits Co-founder of Williams, one of the most respected engineers in Formula One and a veteran of the Monaco Grand Prix, Sir Patrick Head introduces you to the circuit unlike any other – and why winning here feels so sweet.

E

very driver wants to win at Monaco.

It is a special challenge of mind control for the teams, drivers, engineers, technicians – and even the team principals.

The noise is loud, the walls and curbs are close, the working conditions are difficult – everything to raise stress levels, often causing bad decisions.

Usually lap times ramp up session by session, and a small bump in any practice will lose track time from which it is almost impossible to catch up.

In past years, cars were housed in the paddock alongside the harbour and towed up to the pit lane for each practice, but more recently the pit lane garages have been created – with space above – where the engineers position their data screens.

The wall on the left of the start/finish straight is granite, and the noise bouncing back makes it very difficult to hear, even with radio headgear on.

So everything to cause tension far greater than a ‘normal’ Grand Prix.

To achieve a fast lap requires full use of track limits, and the track limits are solid and unforgiving; a barrier, a curb, a wall.

Many cars will complete laps with paint marks on the side of tyres – the difference between a perfect lap ‘on the limit’ and damaged suspension is minimal.

Monaco often teases with its weather. With mountains behind, if the weather comes in off the sea, it can be held over Monaco, while if the weather comes from either side, it blows through. Teams will have their satellite weather stations, but no guarantee on precise data if rain clouds are about.

So it is a very tricky Grand Prix to win, more so than anywhere else – grid position is vital.

Most often the winner will be the driver who achieves pole position, so the bias of a successful weekend is more towards qualifying than at other Grand Prix.

It is also the Grand Prix that sponsors and their families will attend, placing extra pressure on drivers faced with a fuller weekend and more demands upon their time than usual, but it is all a part of the fun and challenge of Monaco.

To win feels just that bit more important than elsewhere, and, unusually, it is celebrated with a gala dinner in the presence of Monaco royalty afterwards.

Monaco just feels more special, and it is.

From my expression, the car is not doing so well!

A LEVEL HEAD When Sir Patrick Head received his knighthood in 2015, Sir Frank Williams – the man with whom he’d had so much success – described him as a ‘design genius’.

They co-founded Williams Grand Prix Engineering in 1977, and it was in Head’s brilliant cars that the team won 113 Grand Prix, nine Constructors’ Titles and seven Drivers’ World Championships – making it a household name. Only Ferrari has taken more Constructors’ Titles, but it’s won over a far longer period. A master of innovation, among Head’s ideas were the six-wheel car, continuously variable transmission, seamless shift transmission and active suspension, so it’s no surprise that some of Formula One’s most successful engineers started under his guidance. Although he has now left Formula One, he retains connection with both Williams F1 and Williams Advanced Engineering. He enjoys spending time with his wife Monica and young daughter Sophie Louise.

My first Monaco Grand Prix with Williams was in 1978 and we were running one car for Australian driver Alan Jones.

Only 20 cars were permitted to start as the circuit was judged too tight for more, but 24 cars were allowed to qualify.

Formula One Constructors’ Association (FOCA) reserved 20 places of the 24, and via a bit of persuasion helped by our Saudi Arabian sponsorship, we got one of the entries by invitation, as did Renault. The other two places were decided by an early pre-qualifying session on Thursday morning, nine cars fighting for two places. These went to Riccardo Patrese and Rolf Stommelen in the Arrows.

Alan went on to qualify 10th, and through a good start ran sixth and then via attrition moved up to third. Sadly for us and Alan, an oil leak ended his race on lap 29. It was my first introduction to the many challenges of Monaco.

Unfortunately I left my papers, including passports, on the roof of the car and we only realised they were missing when we got to Dover. Luckily Bruce had found them on the road outside his house, and the only option was to drive back to west London, pick them up and fly to Nice via Geneva on one-way tickets.

Another way to economise was to stay to the east of Monaco in the Westminster Hotel in Roquebrune-CapMartin, Menton, and walk the 5km each day to and from the track.

I remember Ken Tyrrell telling me to “take it easy” in the race, but I managed to pull away at the start and won, to be greeted by the great Juan Manuel Fangio when I came around to the finish line on the slow down lap.

Through an interpreter he said “Well done young man, that was very impressive”, and those words still mean so much because Fangio was a great ambassador for motorsport, a man who I have always held in very high regard for his achievements on the track and his bearing off it.

As the principal support race winner we went to the grand gala dinner, which was always held on the Sunday evening. I was on the left of Princess Grace, while Helen was on the opposite side of the table with Prince Rainier.

he 1964 Formula Three Championship was when I really began making a name for myself in motorsport, driving for the legendary Ken Tyrrell in a Cooper T72 BMC. All of my three World Championships were won with Tyrrell, with whom I had a long association, so it’s fitting my first taste of Monaco was with him as well.

The 1964 F3 race there was the first time I’d raced abroad, but we weren’t paid quite the same as the drivers of today.

In order to save money, my wife Helen and I planned to drive to Monaco, staying with Bruce and Patty McLaren on the way down from Scotland.

SAFETY FIRST Sir Jackie Stewart drove in an era with primitive safety standards for both cars and circuits. A powerful advocate of improvements, he often came up against strong opposition and even ridicule, but drivers owe much to his determination for change. He had a personal interest in doing things differently as many of his close friends were killed needlessly on the track, including Jim Clark and his Tyrrell team mate François Cevert, who died in practice at what should have been Stewart’s final Grand Prix at Watkins Glen in the United States. The Scotsman was as brave on the track as he was off it, and those who criticised him over his desire for improved safety were unjustified – he knew what he was talking about as he was often fastest at the most challenging and potentially dangerous venues.

The glamour ended there though – for our return journey, Helen and I found someone who wanted their car and trailer driven back to England, so we came back by road, but at least our expenses were paid.

Back then I got 50 per cent of all prize money earned by the car, but that was usually a few hundred pounds so we’d always jump at the chance to keep spending down!

My racing career was on the up and the next year I was back at Monaco as a works BRM Formula One driver, qualifying third, with my team mate Graham Hill on pole.

After 29 laps I was in the lead but spun on oil, recovering to finish third behind Graham, with Lorenzo Bandini in a Ferrari second.

It was a valuable lesson as I knew that I should have seen the oil and kept hold of my lead, but the next year I put that right and won in the BRM 261.

To improve my earnings, from the start of my career I explored every avenue to bolster the race income.

In 1966 I came close to a win at Indianapolis, which gave me a profile in America which I developed with TV appearances. I also competed in the 1971 CanAm championship – a series involving very powerful open sports cars – although the thing I remember most about that year is crossing the Atlantic 43 times.

LIFE AFTER FORMULA ONE My latest challenge – and my greatest so far – is launching the charity Race Against Dementia. In recent years, my wife Helen – the love of my life for more than 60 years – has been affected by dementia. I obviously can do little directly to help her, but I started the charity to support the development of medicines to diminish and, I hope, eventually eradicate the disease.

Her razor-sharp mind was one of the things I immediately fell in love with, and it is her mind that is vanishing.

“There are no problems, only solutions. My mission is to find a solution.”

But my logic is based on something John Lennon said – ‘There are no problems, only solutions.’ My mission is to find a solution.

I have already invested £1million of my own money in a bid to find a cure within my wife’s lifetime.

Formula One has the fastest technology change of any business or industry or sport in the world. While the race is going on, someone is deciding what they need to change and then that part is designed, manufactured and arrives in time for the next race – all within one week. The designers that are responsible for that are so creative and so fast. I want to find someone like that, but for dementia, and I won’t stop until I find them.

Motorsport is a complex activity with many supply businesses, and I worked to develop my value to a host of companies helping to promote their products.

At 78 I am still very active with a busy diary and a full life – all brought to me by my beloved motorsport.

I have been instrumental in bringing many large multinational sponsors into Formula One such as Rolex, HSBC, RBS, Heineken, Ford, Goodyear and more.

As well as being an ambassador for Heineken, this year will mark the 50th year of my association with Rolex, which has been an honour and a great achievement.

was an important year for me.

I had joined the Brabham team alongside Nelson Piquet, who was the reigning World Champion.

I knew that I had a good opportunity to win in Monaco, so I packed my tuxedo for the post-race gala dinner, just in case.

I was competitive during practice and qualified on the front row alongside the Renault of Rene Arnoux.

In the early laps Arnoux powered into the lead, with Bruno Giacomelli behind, while Arnoux’s teammate Alain Prost passed me on the main straight.

Arnoux spun on lap 15 while Giacomelli retired with a mechanical problem, so the race settled down with Prost leading, myself in second, then Didier Pironi in the sole Ferrari in third and Andrea de Cesaris in the second Alfa Romeo in fourth.

It looked like that would be the way we’d finish, but during the last three laps rain prompted changes worthy of a Hitchcock movie.

First, Prost slammed into the barriers after the chicane, leaving me in the lead, but coming down to the hairpin at the Loews Hotel (now The Fairmont) I found the track especially slippery and spun, stalling the engine and looking back up the road as the others passed me.

The car was judged to be in a dangerous position, so the marshalls pushed me back, and I was able to steer and point the car in the right direction. I bounced in the cockpit as much as my seat belts allowed me, and slowly the car started rolling down the track. It was a case of lift the clutch, into second gear, engage the clutch and then the engine fired. I was on my way, thinking that I might still gain a few points, but knowing that Pironi, de Cesaris and Derek Daly in a Williams had passed me.

I then passed de Cesaris’s Alfa Romeo, stationary on the side of the road and out of fuel, and the same thing “I couldn’t believe it when happened with Pironi. There was a black cloud in my mind, but I thought I might now be second behind Daly.

I found out I had won!”

I had no radio from the pits, so it was a surprise when I got to Rascasse and I was waved through to go to the podium on the pit straight. We had been told that only the winner would take his car to the podium, so I thought the organisers had changed their minds and that the cars ahead were already there, but when I arrived it was only me – Daly was down in sixth after an accident.

I couldn’t believe it when I found out I had won!

As the winner, I was guest of honour at the royal table at the gala dinner, so it was lucky that I’d packed my tuxedo.

The atmosphere at the show was amazing, and it was very colourful with Barry White performing.

For the opening dance I was to accompany Princess 1982 Monaco Grand Prix.

Grace for a waltz. My upbringing hadn’t included learning the moves, but Riccardo Patrese on the Princess Grace – who tragically was to die in a car accident in the autumn podium with Princess Grace and Prince Rainier of that year to great sadness around the world – was fantastic and said to me: “Don’t worry, I’ll drive tonight”. What wonderful memories!

Today I still have a connection with Monte Carlo as I have a house there. I have always liked the place because you can almost breathe in the atmosphere and at the same time relax and do many sports.

My passion for the last 20 years has been horse riding. You could say I have replaced the adrenaline of driving a thousand-horsepower Formula One car with a new kind of exhilaration on horseback.

Only six drivers have competed in more GPs than Italy’s Riccardo Patrese, who raced 257 times in Formula One between 1977 and 1993.

He took the chequered flag first on six occasions, and finished as runner up in the 1992 World Championship driving for Williams.

EVENTS ORGANIZED BY THE AUTOMOBILE CLUB DE MONACO IN 2018 AND 2019

The Automobile Club de Monaco The Automobile Club de Monaco (ACM) is the oldest automobile club in the world, with a global membership of more than 5,000 people.

In 2015, it celebrated its 125th anniversary.

The Club was originally formed in August 1890 as an association named the ‘Sport Vélocipédique Monégasque’ and its title evolved to become the ‘Sport Automobile et Vélocipédique Monégasque’ and then finally, on March 29th 1925, the new name of Automobile Club de Monaco was adopted.

The first Monte-Carlo Rally took place on 21st January 1911 and the first Grand Prix Automobile de Monaco was held on 14th April 1929.

11th Grand Prix de Monaco Historique May 11th – 13th 2018 The Grand Prix de Monaco Historique will celebrate in 2018 its 11th edition, an unmissable event for worldwide collectors and classic motorsport fanatics.

A real sprint race, contested on the legendary circuit of Monaco, The Grand Prix de Monaco Historique is designed for worldwide collectors, nostalgic enthusiasts, drivers, spectators and ardent supporters of former days’ mechanics, who definitely won’t miss this world event.

Organized since 1997 by the Automobile Club de Monaco, this ‘biennial’ event will take place two weeks before the Grand Prix de Monaco de Formule 1.

76th Grand Prix de Monaco May 24th – 27th 2018 The ‘Grand Prix de Monaco F1’ is widely considered to be one of the most important and prestigious motor races in the world, alongside the Indianapolis 500 and the 24 Hours of Le Mans. Since its inception in 1929, Drivers and Teams have always relished the challenge of racing on the narrow course around the streets of Monte Carlo, with its many changes in elevation, the tight corners and its famous tunnel. It is certainly one of the most demanding circuits in the Formula One calendar and the ‘one to win’ for drivers and teams. The race programme is unusual in that the first practice sessions take place on Thursday and the circuit is opened to the

public on Friday afternoon and on each evening. The Monaco Grand Prix is regarded as one of the most exhilarating experiences in sport for the attendant 200,000 race fans.

3rd eRally Monte-Carlo October 24th – 28th 2018 Since this rally was inaugurated in 2016, replacing the Rallye Monte-Carlo of New Energies and Rallye Monte-Carlo ZENN (Zero Emission – No Noise) in the FIA New and Electric Energy Championship calendar, the Automobile Club de Monaco continues with conviction to pursue its leadership role and consolidate its commitment to new energies and sustainable development technologies.

This event is reserved for 100 per cent electric vehicles, without the use of extension cables; 100 per cent hydrogenated or hybrid electric/ hydrogen vehicles with four wheels; all registered for road use and with a minimum capacity of two and a maximum of five passengers.

This will be a rally appreciated by automobile manufacturers and automotive specialists alike as an opportunity to demonstrate the technological potential of their vehicles under everyday conditions.

87th Rallye Automobile Monte-Carlo* January 21st – 27th 2019 * Dates subject to change

The ‘Rallye Automobile Monte-Carlo’ is the oldest rally in the world, with the first edition held in 1911. It is one of the world’s most famous motorsport events.

Historically, competitors

would set off from host cities in the four corners of Europe and rally through difficult and demanding road conditions to complete and celebrate at the end of a unique event in Monte-Carlo. The rally now takes place along the French Riviera in the Principality of Monaco and in south-east France, around Gap. Since its beginning, the rally has always been the ‘one to win’ for manufacturers and drivers.

The ‘Rallye Automobile Monte-Carlo’ has been a round of the World Rally Championship since its inception in 1973 and, during the years 2009 to 2011, it was the opening round of the Intercontinental Rally Challenge.

From its first successful edition in 1998, the popularity of the ‘Rallye Monte-Carlo Historique’ has never wavered, with an average minimum number of 300 cars taking the start. This 21st edition of Rallye Monte-Carlo Historique distinguishes itself again by the diversity of its itinerary, concocted by the Organizing Committee of Automobile Club de Monaco. In order to give a fair chance to every competitor, there will be three averages to keep all along the race. As usual, the race this year is open to cars which participated in the editions of the Rallyes Automobiles Monte-Carlo between 1955 and 1980.

Even the podium ceremony at Monaco is different to anywhere else. We drive the cars to the podium, receive the trophies beside the track and then get to spray champagne all over the road and the gathered crowd, remembering, of course, to avoid members of the Monaco Royal Family who are there to present the trophies.

Winning the Monaco Grand Prix is a massive team achievement and so it’s compulsory to celebrate in style once we get back to the Formula One paddock where the team and its VIP guests are enjoying the atmosphere.

I developed what became something of a party trick after I won my first Monaco Grand Prix in 2010 by doing a back-flip somersault into the swimming pool on the deck of the Red Bull Energy Station.

After the trackside celebrations have ended, the partying continues long into the night and for the winning driver it includes a special invitation to join HSH Prince Albert and Princess Charlene at the post-race gala ball. For me, I felt humbled and honoured to be a two-time winner of an event that is so steeped in motorsport history and won by some true legends of the sport.

LIFE AFTER FORMULA ONE “I retired from Formula One at the end of the 2013 season, signing to race for Porsche in the World Endurance Championship, including the famous Le Mans 24 Hours race. Porsche is as professional as any of the top Formula One teams and I loved my role in helping to develop the 919 Hybrid sports prototype and getting it to the top of the podium. Sharing the car with young Kiwi Brendon Hartley (now racing for Toro Rosso in Formula One) and Timo Bernhard, we won the world title in 2015 and finished second behind our sister car at Le Mans.

I hung up my racing helmet at the end of 2016 but have maintained my ties with Porsche as a global ambassador and I also represent Rolex and Red Bull. Motorsport still plays a big part in my life though – I manage Mitch Evans who races for Jaguar in Formula E, and I attend a number of Formula One races as a pundit for Channel 4’s live telecasts and as a guest speaker at corporate events. However, my new business interest is as far removed from the sport as you can imagine as I’ve recently launched a range of outdoor sports clothing called Aussie Grit Apparel. It specialises in functional designs for off-road cycling and running, both of which formed the basis of my physical training regime over many years. It’s been a steep learning curve but we’re proud of our products and what we’ve achieved so far.”

PRESERVING AND PROMOTING THE HERITAGE AND THE SPIRIT OF GRAND PRIX RACING Even though the club has rarely counted more than 100 active members, it has over more than 50 years of existence to become the guardian of great tradition and heritage. To this day it is driven and kept alive by a spirit of true sportsmanship and camaraderie which is comparatively rare in this day and age, and for that reason alone is more than worth cultivating.

While the very background of its members means our Club will always be ‘exclusive’ we see it as our duty to not only preserve the original spirit and attitudes behind Grand Prix racing, but to promote and foster it to enthusiasts the world over.

The Club has rightly evolved from its original purely social role, to communicate with enthusiasts, share our heritage, and preserve it for future generations.

So, from current humble origins we hope we will grow into a living testimony of not only Grand Prix and F1 racing, but all other forms of motorsport in which our members have competed over the years.

Known as one of the smoothest drivers of his generation, dashing DC has now made a seamless gear-change into television production after a 14-year career in Formula One. A long-term resident of Monaco, he talks about life in Monte Carlo, how his first race here started with an accident, a red flag and a retirement – and standing on top of the podium in 2000 and 2002. moved to Monaco in early 1995, clutching a cheque signed by Frank Williams and ready for my first full year in Formula One. I’d started mid-season in 1994, driving for Williams after Ayrton Senna tragically died at Imola.

Although there were obvious tax advantages, the main motivation was to live in a convenient location for the busy program ahead. Back then we usually had two- or three-day tests between Grand Prix, and a number of European venues are within driving distance of Monaco.

My first Monaco Grand Prix began with a red flag following an incident between myself and the Ferrari duo of Jean Alesi and Gerhard Berger – I seem to remember a disagreement about who owned the same piece of track.

After the race was stopped, I was able to restart in the spare car, mostly still set up for my teammate Damon Hill. Unfortunately I retired with a gearbox problem.

My two victories at Monaco came in 2000 and 2002 with McLaren.

In 2000 I benefited from a rare error by Michael Schumacher, who bent his suspension against a barrier with around 20 laps to go when he was leading and I was second.

I found my win in 2002 far more satisfying though – I was faster off the front row than Juan Pablo Montoya in his Williams BMW and led from start to finish.

In both cases I was guest of honour at the post-race gala dinner and had the privilege to chat with HSH Prince Rainier III about his life and the Principality.

And in part due to my residence, I have become friendly with HSH Prince Albert II and his family.

LIFE AFTER FORMULA ONE “I was an investor in the Columbus Hotel for 10 years while I was racing, and since then I have participated in the start up and development of two businesses. Firstly, with Jake Humphreys and others at Whisper Films, a production company that produces Formula One for Channel 4, with me commentating. Whisper Films has just completed the entire broadcast for the Winter Paralympic Games in Pyeongchang, South Korea. In a short time, we have become the third largest independent production company in the UK. I also have an events management company called Velocity, set up with Guy Horner, which managed the Formula One Live event in London before the 2017 British Grand Prix. It was quite an operation – we had to obtain planning permissions and shut down Trafalgar Square and Pall Mall. We will do the same in Marseilles this year before the French Grand Prix at the Paul Ricard circuit. The company is growing and covering events outside motorsport as well, and we apply Formula One standards towards presentation and efficiency.

I have lived in Monaco for 23 years, longer than I spent in Scotland, and find it very safe and ideal for family life – my young son is even learning to sail at the yacht club. Property prices are high, but otherwise living costs are no greater than France or Italy.

As our son is still at school, my wife and I usually just eat out at lunch, often at Michelangelo, which has a varied and fun clientele. I have a fold-up Brompton bicycle which I enjoy riding in the Monaco sunshine. What would be your dream car? I always drive cars that I love, since forever. If I had to choose a special one, I would say Porsche Speedster 356, the 1956 model.

Where would you most like it to take you? From Monaco to Saint Tropez.

Could you recommend a quick recipe for your favourite Formula One driver? Well, because he (Sir Jackie) is getting older and he has to be careful, I would suggest a beautiful sea bass, Mediterranean style. What’s your favourite Formula One team? Renault – it’s a French team that has been present for a very long time in the Formula One paddocks. It has an extremely impressive track record and some very iconic drivers as well.

Which Formula One driver would you like to drive you around? Without any hesitation, I would choose Ayrton Senna. He was a very charismatic driver in his lifetime and he had an incredible list of achievements – he was a triple world champion with 41 victories. He is well known for his famous rivalry with Alain Prost in the 90s, where they were the protagonists of some of the great Formula One duels.

What would be your dream car?

James Dean’s Porsche Spyder 550.

A taste of the high life We asked some of Monaco’s most distinguished culinary names to share their favourite recipes for you to try, while Monaco’s private chef-of-choice, Pasquale Esposto, reveals what it is like to cook in the Principality’s finest homes.

My life as Monaco’s private chef of choice: Pasquale Esposto I did military service in the Officers’ Club of Rome where we were responsible for event catering.

A friend asked if I would be interested in being his sous chef in a renowned hotel in Monte Carlo for the summer. That was 16 years ago and I have never left.

Monte Carlo has a huge number of restaurants in such a concentrated area. I have learned from the best chefs in the business.

CRISPY HAZELNUT SCALLOPS, TOPINAMBUR CREAM AND PURPLE POTATO CHIPS

One evening a trusted customer came to the kitchen in the restaurant where I worked and asked me if I wanted to become his personal chef. I said yes straight away.

Crispy hazelnut scallops

My job is a bit like opening a new restaurant every week – you are almost working with your eyes closed – you never know what kind of cuisine will be available and I never have the same kitchen.

Put the hazelnuts in a shallow dish.

Heat the butter in a frying pan until foaming and nut brown. Add the scallops and cook for one minute on each side, or to your liking, seasoning as they cook. Remove from the pan and roll each scallop in hazelnuts.

Topinambur cream

Once you’ve landed in a foreign country you have to be ready and brave for a new adventure. The driver and I would search for markets and produce of the highest quality.

You don’t have much time because there will be guests coming for dinner.

Is there anything better for a young chef full of ambition to work in different countries with different food and cooking cultures? And how can you get bored meeting the rich and famous every day. I’ve travelled the world with my job. After seven years travelling I decided to open my own company and offer my services to the residents of Monaco.

CHEF PASQUALE ESPOSTO

6 scallops 2 tbsp finely chopped toasted hazelnuts 25gms butter Salt and pepper

2 tbsp butter 2 tsp. chopped garlic 1/3 cup chopped onions 1 pound Jerusalem artichokes (topinambur) (washed, sliced 1/4-inch thick) 2 cups chicken stock 1 cup cream Salt and pepper 1 tsp. chopped chives

Melt the butter in a medium-sized saucepan over a high heat, add the garlic and onion and cook until soft, for about two minutes.

Add the Jerusalem artichokes and sauté for about two minutes.

Add the stock and simmer until the artichokes are tender. Add the cream and bring back to a boil.

Season with salt and pepper. Purée in a blender until smooth. Strain through a fine sieve. Keep warm.

Purple potato chips 3 purple potatoes 1/2 litre of sunflower oil One garlic clove 2 tbsp chopped rosemary Salt and pepper

Using a mandolin, thinly slice the potatoes in uniform thickness.

Immerse the slices in cold water and drain. Using paper towels, pat the potatoes completely dry and set aside.

In a heavy-bottomed pan, add garlic to the oil. Heat to approximately 300 degrees. Remove the garlic before frying the potatoes.

In small batches, add the potatoes and cook for about two minutes, until golden. Remove from the oil and drain on paper towels.

Place in a bowl and sprinkle with sea salt and chopped rosemary.

Cook the tomato slices in the oven with the olive oil, salt and pepper for 15 minutes at 180 degrees.

Make incisions on the skin of the fish to avoid it pulling up the meat while cooking.

Put the Swiss chard in salted boiling water and boil for 4 minutes. Drain, spin and put aside.

Cook the potatoes in water then drain. Add the pickled garlic cloves to the olive oil.

LAYERED SALTED COD AND VEGETABLES HENRI GERACI: MILLEFEUILLE DE MORUE

Serves 4 4 pieces of dried, salted cod 2 white onions, finely chopped 12 basil leaves 1 bunch of Swiss chard without stalks 16 slices of pickled tomatoes 1 large leek 4 cloves of garlic, crushed 300g of new potatoes, sliced 10cl of olive oil 200g of tomato sauce 10cl of white wine 30g of shelled walnuts 30g pine nuts 4 pickled garlic cloves 4 sprigs of rosemary 1 bunch of thyme Sea salt and freshly Ground pepper You will need 4 metal rings, 8cm high

The salted cod should be soaked the evening before cooking, frequently changing the water.

Chop the onions and put to one side. Heat three tablespoons of olive oil with the onions, crushed garlic and chopped leek.

Put the cod in the cold, unsalted water with a bunch of thyme and bring to boiling point. Reduce the heat and simmer for four minutes without boiling. Drain and remove the skin and bones.

Wipe the pieces of fish, sprinkle with flour and fry until golden, using the remaining olive oil. Cook for five to six minutes depending on the size.

To serve, put the metal ring onto a warmed plate.

Arrange layers: first the leeks, then four slices of tomato, three basil leaves, a few slices of potato, the chopped Swiss chard and finally the cod.

Remove the ring and add the pickled garlic clove, a few pine nuts, a sprig of rosemary, salt, pepper and a spoonful of olive oil. Garnish with the shelled walnuts. Serve hot, with tomato sauce separately.

Wine suggestion Rosé AOC Bandol – that has a salmon colour with orange highlights, a powerful nose with pepper scents and a frank and long after-taste.

Extra V. olive oil: 30 cl Red pepper: 1 piece Yellow pepper: 1 piece Courgette: 1 piece Eggplant: 1 piece Black peppercorn: 1 gram Garlic – chopped: 1 clove Chives: 1 pinch Rock salt: 1 pinch Basil and Dill: 1 pinch Kalamata olives: 12 pieces Cherry tomatoes: 10 pieces Chilli flakes: 1 pinch Tomato sauce: 50 grams Fish stock: 100 grams

For the Garnish

Chives: 1 pinch Extra V. Olive oil: 1 spoon Basil: 1 pinch Dill: 1 pinch Chilli flakes: 1 pinch

Chop the garlic, grate the lemon and orange skin; mix them together, add fresh milled peppercorn, salt, a few basil leaves broken by hand and Extra Virgin olive oil then mix well. Make an additional incision, 4cm deep, on the flesh of the fish and place a teaspoon of the mixed spices inside. Season the fish with salt and pepper.

Heat the Extra Virgin olive oil gently in a Teflon pan. Place the fish skin side down first and gently fry for 3 minutes on each side.

Wash the vegetables, remove the exterior coloured part.

Cut into slices 15mm wide, remove the extra flesh to obtain a thickness of 2mm.

Cut the strips crossways, to obtain many small diamonds.

Quarter the olives and cherry tomatoes and remove the seeds. Arrange the vegetable diamonds together, add the chopped garlic, chilli filaments, salt and pepper, sliced chives, basil, dill, and Extra Virgin olive oil. Heat a second Teflon pan, over a strong heat, add the vegetables and fry for 60 seconds, add the tomato sauce and fish stock and allow to reduce for 30 more seconds.

Place the ratatouille on the bottom of the plate, arrange the fish in the centre and garnish with chilli filaments and chives. Add a few drops of Extra Virgin olive oil, basil and dill leaves.

I started in Formula One as a physiotherapist to my brother Eddie Irvine, but after four years he moved to Jaguar Racing and I decided to expand into team and driver sponsorship. I noticed that some of the teams had their own private parties, but there was no ‘global’ Formula One party, no place for drivers, team members, VIPs and team sponsors to go, where we could celebrate together over a Formula One weekend – a safe, party-haven for like-minded individuals.

I love that I can bring joy and happiness to our guests by giving them an unforgettable experience, as well as helping to raise funds and awareness for our charity foundation. Each year, we hold a charity auction to raise awareness and funds for a different cause. This year, we are partnering with Sir Jackie Stewart’s Foundation ‘Race Against Dementia’ and we are lucky to have Prince Albert in attendance, which means a lot.

For 15 years, we’ve continually worked hard to be the best and we’ve remained the most vibrant, sexiest, and star-studded nightclub over the Grand Prix weekend. Our newest brand is Amber Summer, which is more a daytime party with a restaurant, bespoke cocktails and of course our renowned party atmosphere. We are looking to take this concept to Formula One race viewing as well as other high end sporting events, so watch this space… I also love the fact that people now want us to run their private events and I can expand to other sports.

With each year we raise the bar and we aim to provide the best possible experience. This is our crystal year, our 15th anniversary, so you will see us make quite substantial changes to the interiors. I can’t say more – just come and see for yourself. We also strive to bring great DJs to both the club and to our Amber Lounge yachts – we want people who play what our audience want to hear and those who create the best party. We have international acts singing through the night to add that special touch. Extravaganza on Saturday night will have drummers, dancers, saxophone-players and much more across the whole evening – it’s non-stop action.

The most challenging aspect of being a business woman is to be able to combine motherhood and running a successful company. I do my best to spend as much time with my children as possible.

WHAT WAS THE FIRST WATCH YOU EVER OWNED?

A Swatch watch, a very colourful one.

I remember getting it as a Christmas gift when I was nine or 10 years old. I proudly wore it to school every day!

Swatch watches were quite fashionable and cool at that time, so I loved adding a touch of individuality while having to be sensibly dressed for school.

WHICH IS YOUR WATCH OF CHOICE NOW?

The Lady Libertine watches are incredibly special to me; each is a work of art painted with the finest coloured gemstones, uniting age-old techniques with innovative creativity.

They were inspired by my visit to the Zambian emerald mine of Fabergé’s parent company Gemfields – a leading supplier of responsibly-sourced coloured gemstones. The verdant power of emeralds became the genesis of Lady Libertine I and II. The unique architecture of the Libertine watches provide the perfect canvas to showcase the luscious landscape of Zambia and the exquisite gemstones sourced there. Using pioneering carving techniques, the Libertine watches feature rough and polished emeralds within exquisite designs that illustrate Fabergé’s artistry and ingenuity.

WHAT DO YOU LOOK FOR WHEN CHOOSING THE PERFECT WATCH?

I believe in pushing boundaries, so I look for innovative watches that challenge traditional ideas and concepts. That’s why I love Lady Compliquée Peacock, Fabergé’s ladies’ High Complication collection, which features an award-winning retrograde movement that presents a spectacular new time display. This is unusual for ladies’ watches, which don’t often feature complicated movements.

Both original and unexpected, the manually-wound collection is inspired by the Imperial Peacock Egg of 1908, featuring a peacock tail at the heart of the dial which fans out to tell the time.

We wanted the collection to be versatile and appeal to different tastes and suit various occasions; I love the gem-set variations that feature the precious trinity of coloured gemstones: ruby, emerald and sapphire. We recently introduced a stylish black lacquer model as the perfect every-day piece.

HOW DO YOU COMBINE INNOVATION AND TRADITION?

While Fabergé is a brand blessed with a rich heritage, it has always sought cutting-edge innovation, and the current collections are no exception. In fact, Fabergé combines traditional techniques, such as guilloché enamel, with pioneering methods, such as micro-structuration of platinum. This ensures each timepiece remains distinctive and perpetuates the DNA of Fabergé, showcasing ingenuity, superlative craftsmanship and, of course, the element of surprise!

WHICH FABERGÉ WATCHES DO YOU HAVE YOUR EYE ON?

The collection boasts masculine, multi-faceted designs, which represent Fabergé’s bold personality and willingness to embrace new directions. DO YOU PREFER TO WEAR MEN’S OR WOMEN’S WATCHES?

I often prefer men’s watches because I like larger dial sizes; for instance, I often wear the Fabergé Visionnaire Chronograph timepiece, which has a 43mm dial. I believe watches should be designed and created with individuality in mind, developed to celebrate and appeal to different tastes and types of people, not to gender. Women’s watches are too often considered a simple reduction of men’s watches, with a few diamond embellishments; I have thoroughly enjoyed developing complicated timepieces at Fabergé, where the value is within the mechanical movement and pioneering decorative techniques, which feature a kaleidoscope of precious coloured gemstones rather than simply diamond bezels.

WHAT WOULD YOU ADVISE YOUR FAVOURITE FORMULA ONE DRIVER TO INVEST IN?

The Fabergé Visionnaire Chronograph is the perfect watch for a Formula One driver, as it marks a new standard in charting time. Hours and minutes are read at the periphery of the watch dial, while the chronograph function takes centre stage.

Don’t leave Monaco without trying a Barbajuan, a fritter stuffed with chard and parmesan cheese, and best eaten as a starter or with an aperitif. Literally translated as Uncle John, its invention was down to a man only known as Monsieur Jean, who came up with the idea when he ran out of sauce.

The Crêpe Suzette was invented in Monaco... by mistake. Back in the 19th century the Prince of Wales was dining at the Cafe de Paris when a chef was preparing pancakes with liquor and accidentally set fire to the pan. The result should have been a disaster but was instead delicious and the new dish was named after the Prince of Wales’ dining partner – Suzette.

A debt of gratitude It’s rare for a casino to write off a debt – even more so when it’s the equivalent of £275,000 in today’s terms. But when the man who owes the money is Winston Churchill and the year 1945, it is easy to understand why the Hotel de Paris refused to cash his cheque. Part of the debt actually dated back to before the war – on a losing streak at the roulette table in 1939 and told to stop by the casino manager, Churchill shrugged and said “I’ll pay my debts to you tomorrow”. But the next day, Churchill raced back to London with World War Two imminent, and wouldn’t return to settle up for another six years. He’d long been attracted to the gaming tables of Monte Carlo – he was a frequent visitor to the Principality with his wife Clemmie – and was bailed out by millionaire businessman Sir Henry Srakosch after running up debts in 1938.

No wonder it was said at the time that Hitler couldn’t defeat Churchill, but champagne and gambling nearly did.

OCEANOGRAPHIC MUSEUM With more than 100 species of fish and 200 invertebrates, the Oceanographic Museum of Monaco has been wowing the public for more than 100 years, and legendary marine conservationist Jacques Cousteau was director between 1957 and 1988. Children will love Turtle Island playground, not to mention the seahorses, clown-fish and octopuses.

PRINCE’S PALACE OF MONACO The seat of the Grimaldis, the Prince’s Palace of Monaco dates back to the 12th century. Now home to Prince Albert, its state rooms are open to the public during the summer, and it also hosts open air concerts. It is still very much a working palace though – during state events the citizens of Monaco are addressed by the Prince from the Gallery of Hercules overlooking the courtyard.

LE ROCHER MONACO VILLE The perfect place to get a sense of what Monaco was like hundreds of years ago, Monaco Ville still has its medieval lanes and is steeped in history. Take Rampe Major up to Le Rocher for some stunning views – although factor in plenty of breaks as its hard work to get to the top. When you get there you can visit the Prince’s Palace or just soak in the historic old town.

My favourite place to visit out of Monaco is La Chaumière in Nice (www.la-chaumierenice.com). It’s an old relay stagecoach in the mountains that is typically French. The owner is very loud and has a big personality, the food is delicious – there is a great truffle menu and it has been there since the 50s.

At 427m above sea level it’s no surprise it’s often referred to as an eagle’s nest, and as well as a slice of history (a visit to its main church, the Notre Dame de L’Assomption, is a must) visitors can enjoy fine dining, shopping and art galleries. Around 20 minutes by car from Monaco.

Home to the prestigious Monte Carlo Masters, if you have ever fancied practicing your backhand where Rafael Nadal hits his for real, this is the place. There are 21 clay courts, including two covered and nine floodlit. You can dine in the SunSet restaurant, take a quick dip in the pool or have dinner in the Summer House.

There is also a putting green, two squash courts and snooker facilities. And if you tire of keeping your eye on the ball, there are spectacular views over the sea.

For walks, one of my favourites is along the coastal path from Roquebrune-Cap-Martin to Monaco, while another is a route by the sea called Le Sentier du Littoral in Cap d’Ail. You can sample the delicious seafood in La Pinede on the way, right by the shore.

INSPIRING?

Also picturesque is the village of St-Paul-de-Vence – it inspired many French artists for its light and beauty.

Nearby is the Fondation Maeght, which boasts wonderful exhibitions of modern and contemporary art.

CYCLING?

Finally, for a taste of la dolce vita, take a bike ride across the border to Italy. There is a 24km cycle path that goes from Ospedaletti to San Lorenzo al Mare, passing through Sanremo, Arma di Taggia, Riva Ligure and Santo Stefano al Mare.

You can pick up bikes or take your own. It is flat, accessible and a great place to go on a Sunday – you can have lunch in one of the many Italian restaurants along the way.

THE MONTE CARLO GOLF CLUB A true fairway to heaven, this spectacular 18-hole course is set on a hilltop in La Turbie (in Nice). Nestling between the sea and the mountains of the Italian and French Rivieras, it has some of the most breathtaking views of any course in the world. On a wonderful rolling terrain, what it lacks in length, it makes up for in challenges and original holes, as most of the greens are at the edge of a cliff. Designed in 1911 by two-time Open champion Willie Park Jr, the club retains its traditional, elegant charm with an excellent restaurant and bar.

Between the Philharmonic orchestra, Les Ballets de Monte Carlo and the theatre scene, there is a wonderful choice for everyone.

talks about his latest habitable sculpture project, life in Monaco and patronage

by HSH Prince Albert II. CAN YOU TELL US MORE ABOUT THE SCULPTURAL BUILDINGS OF MONACO PROJECT?

I’ve always been fascinated by the architecture of monumental, habitable sculptures. I want to bring art into the cities of the 21st century.

They can feel dehumanised, full of people who see but don’t look anymore. I am currently working on a huge project, which if it comes off, will be the most talked about sculpture in the world.

WHY DOES IT INSPIRE YOU?

I’ve been creating things for 50 years – sculptures, drawings, art works and jewellery.

Now, at 71, it is my passion, my reason to live, an inspiration that continues to grow. I want to create works of art that are also places people can live. Places that symbolise the spirit of a country, but also somewhere that people can see the sky.

WHY WILL THEY BE CREATED?

I love humanity. I want to supplement people’s souls through a new vision and new urban spaces around the world.

WHAT INSPIRES YOU ABOUT MONACO?

It is my heartland. I’m lucky to have a beautiful workshop in the centre of the city where my creativity is 100 per cent awakened.

I love the freedom and the security.

WHY DO YOU THINK PEOPLE ARE CAPTIVATED BY YOUR WORK?

Creation is everything to me. People who have been collecting my work for a long time can feel the love and passion that I try to express.

WHAT DOES HSH PRINCE ALBERT II LOVE ABOUT YOUR SCULPTURES?

Mateo Mornar and his art work created for HSH Prince Albert II’s marriage to Princess Charlene.

He has known me for a long time and often accompanied his father HSH Prince Rainier III to my exhibitions. Today he continues to support me. He appreciates my creations, in particular my new project on monumental, habitable sculptures.

French naturopath Liliane Israel will put together a nourishment plan, traditional Chinese medicine specialist Dr Li offers cupping, acupressure and acupuncture for parents, while children will love the family yoga and Shaolin Kung Fu classes.

The Zen Tea experience will help you to gently slow down and relax, and so will retiring to your spacious room where you can choose your own vista; mountains, gardens or turquoise sea.

Everything at the resort exceeds expectations. In fact Sanya in ancient times meant ‘the end of the earth’. And that is where the Mandarin Oriental has gone to create this mini paradise.
