and as we always do at this time of year, we are bringing you a very special issue to help you send off the old year in suitable style.

‘Special’ because we are featuring a whole host of wines that are perfect for festive drinking and, of course, again this year, we are offering you our pick of sparkling wines in a special section dedicated to this category of wine.

‘Special’ because we are again swinging the spotlight on women and not as a novelty, but because we are finding that there is an increasing number of women heading up wineries or holding important positions within the wine industry. There are more and more female drinkers of wine of all types and women are also the faces of many wine brands.

"Special" too because it is the last issue of the year in which we have been celebrating Selectus Wines’ 10th anniversary. We are pleased with the road travelled thus far and, as we head into the future, we hope to continue growing, in every sense of the word.

Estamos en los albores del año 2023… un nuevo año, y como cada año por estas fechas, una edición muy especial para acabar/finalizar el año que ya se acaba.

Especial porque ponemos encima de la mesa muchas y diversas opciones de vinos para celebrar estas fiestas y, cómo no, propuestas variopintas de espumosos en el especial que, año tras año, ofrecemos sobre esta categoría de vinos.

Especial porque volvemos a dar visibilidad a las mujeres en nuestra publicación, y no como una novedad, sino porque cada vez más, encontramos más féminas al frente de bodegas o con una responsabilidad muy elevada, y también porque cada vez son más las consumidoras de vino, en cualquiera de sus categorías y, además, también son imagen de marcas del sector.

Especial porque es la última edición de nuestro año de celebración del 10º aniversario de Selectus Wines.

Following their highly successful collaboration last year, Dom Pérignon and Lady Gaga have once again teamed up and the fusion of their personalities has given rise to a new creation, a Dom Pérignon Rose Vintage 2008 limited edition design available just in time for the festive season.

A desire to explore new sensations, harmonise disparate elements and create extreme shapes and designs sparked a creative dialogue that has led to this latest, explosive creation from Dom Pérignon and Lady Gaga.

When Dom Pérignon chooses to be rosé, it is a radical declaration of freedom.

Conventions are cast aside and, seizing the power of the Pinot Noir grape’s red hue, Dom Pérignon gives itself the freedom to push the boundaries of creativity in a bold and assertive blend.

Dom Pérignon Rosé Vintage 2008 opens instantly with notes of raspberries, which are quickly joined by hints of violets. Then greener angelica-like green nuances come to the fore. On the palate, the vintage’s hallmark acidic backbone underpins the structure of the Pinot Noir, causing the wine to vibrate at its very heart. The strong, persistent finish brings us aromas of peonies and white pepper.

Marqués de Cáceres is, once more, one of the

most admired wine brands in the world in the ranking compiled by the independent consultancy Drinks International. “For us, it is an encouragement, not an end in itself. We have to constantly evolve in a world as fastchanging as the one we now live in”, says its CEO, Cristina Forner (Born in Aignan-sur-Cher, France, in 1953). This is not a woman who conforms. Every accolade that comes the winery’s way is a motivation and an incentive to do something new. She learned about refinement, quality, respect, value and image as a marketing manager in Bordeaux, at the start of her career, in the family châteaux.

Since that time, she has never stopped learning not for a single day, in order to preserve the strong position of the wine business she now finds herself at the helm of.

First, she continued her learning in the realm of export and international development and now in the presidency of Marqués de Cáceres, which has expanded its roots in Spain outside Cenicero: “You never stop learning, you learn in every situation and with every person, and this requires a great degree of humility”. She is aware of the economic and energy-related challenges that lie ahead, but she is approaching them with intelligence and levelheaded decision-making.

Marqués de Cáceres está, una vez más, entre

las marcas más admiradas del mundo en el ranking que realiza la consultora independiente Drinks International.

“Para nosotros es un aliciente, no una finalidad. Hay que cuestionarse cada vez más en un mundo tan cambiante como el que tenemos ahora”, comenta su presidenta, Cristina Forner (Saint-Aignan-sur-Cher, 1953). No es una mujer conformista. Cada reconocimiento que llega a la bodega es una motivación y un impulso hacia algo nuevo. Aprendió de refinamiento, calidad, respeto, valor e imagen como responsable de Marketing en Burdeos, al inicio de su carrera profesional en los châteaux propiedad de la familia.

Y desde entonces no ha dejado de instruirse ni un solo día para dotar de seriedad el proyecto enológico que lidera. Primero lo hizo en el ámbito de la exportación e internacionalización y ahora en la presidencia de Marqués de Cáceres que ha extendido sus raíces en el territorio nacional más allá de Cenicero: “Nunca acabas de aprender, lo haces en cada situación y con cada persona, y esto conlleva un grado de humildad muy grande”. Es consciente de los retos energéticos y económicos que vienen, pero los asume con un discurso y una toma de decisiones inteligente y serena.

INTERVIEW WITH CRISTINA FORNER, CEO OF MARQUÉS DE CÁCERES

We are now coming to the end of a year that has been marked by economic instability and climate emergency.

How have you handled it?

In the two years of Covid, we already went through an important process of reflection and reinvention on all levels. Now there are other concerns, many of which are complex. We are faced with a rise in costs that we cannot pass on directly to the consumer. We are under a lot of pressure but we have to have a policy of restraint in circumstances that are not. At our winery, we are making a particular effort to support the markets and retain customers in the belief that the future will be better and that the situation will improve.

After a really good harvest, Christmas sales are now kicking off, how are things looking?

Fortunately, the harvest went well. We had good weather in Rioja, Ribera de Duero and Rueda. We have been able to carry out manual harvests for the prestige wines, having overcome the problem of finding suitable people to carry out the picking. In terms of Christmas, I must confess that before the summer I was a bit worried about the last quarter due to the economic impact, the energy problems and so forth. I thought these were going to have an impact on sales, but so far we are ahead of last year’s. We are quite satisfied in this regard.

Having a broad international presence is a great advantage…

Our distribution is very diversified - over 140 countries as well as Spain. This gives you the ability to adapt, to be more dynamic in markets that are growing and to compensate for those that are suffering the most, such as Great Britain with Brexit. Some European markets are also slowing down, but things are going well in America, Asia and also in Africa, primarily in South Africa and Morocco in the tourist resorts where our wines are present.

2023 is just around the corner. What is your strategy for the upcoming year?

The strategy is very much focused on sustainability, innovation and research, which are essential to safeguard the future. We are carrying out several projects simultaneously to develop, if not definitive, then partial, solutions to any climate warming scenarios, developing clones of our own vines for grafting on old vines. We are also becoming increasingly better at identifying plots and vines, with a view to being proactive before the harvest in terms of decision-making. Digitalisation allows us to obtain reports and data very quickly, facilitating this decision-making. We are reducing treatments in the vineyard and we are using plant cover. We are moving towards regenerative viticulture, using only the necessary phytosanitary products and avoiding the excesses that the whole industry has been guilty of in the past. There is a greater awareness that we need to be more cautious.

Estamos a punto de terminar un año marcado por la inestabilidad económica y la emergencia climática. ¿Cómo lo han afrontado?

En los dos años de Covid ya hicimos un ejercicio importante de reinvención y de cuestionamiento a todos los niveles. Ahora hay otras inquietudes, que son complejas en muchos casos. Nos enfrentamos a un incremento de costes que no podemos repercutir directamente en el consumidor. Recibimos una presión muy alta pero debemos de tener una política de moderación razonable en circunstancias que no lo son.

Hay un esfuerzo particular en la bodega para mantener mercados y clientes, pensando que el futuro será mejor y que la situación se va a moderar.

Tras una vendimia realmente buena, llegan las ventas de Navidad y…

La vendimia afortunadamente ha ido bien. Hemos tenido buen tiempo tanto en Rioja como en Ribera de Duero y Rueda. Hemos podido practicar vendimias manuales para los vinos de prestigio, solventando la dificultad de encontrar personal adecuado para cosechar. En relación a la Navidad, debo confesar que antes del verano tenía ciertas inquietudes sobre el último trimestre derivados de las incidencias económicas, los problemas energéticos… Pensaba que iban a repercutir en las ventas, pero hasta la fecha vamos por encima de las del año pasado. Estamos bastante satisfechos a este nivel.

La amplia presencia internacional es una gran baza.

Tenemos una diversificación de nuestra distribución muy importante. Más de 140 países y España. Esto te da capacidad para adaptarte, ser más dinámicos en mercados que tiran más bien para compensar los que más sufren, como Gran Bretaña con el Brexit.

Hay algún mercado europeo también ralentizándose, pero sin embargo las cosas marchan bien en América, Asia y también en África, básicamente en Suráfrica y Marruecos en los resorts turísticos donde hay presencia de nuestros vinos.

2023 está a la vuelta de la esquina. ¿Cómo están diseñando su abordaje?

La estrategia está muy enfocada en la sostenibilidad, la innovación y la investigación, indispensables para garantizar el futuro. Estamos llevando a cabo varios proyectos a la vez para tener respuestas si no absolutas, parciales, ante cualquier situación de calentamiento, desarrollando clones de nuestras propias cepas para injertar viñedos viejos. También cada vez llegamos a una mayor identificación de parcelas y cepas, con la idea de ser proactivos antes de la vendimia para tomar decisiones. La digitalización nos permite tener informes y datos con mucha rapidez y facilitar la toma de decisiones. Reducimos los tratamientos en el viñedo, implementamos la cubierta vegetal. Estamos virando hacia la regenerativa, utilizando sólo los productos fitosanitarios indispensables y evitando los excesos que todo el sector ha cometido años atrás. Hay mayor consciencia en ser más cautos.

En el día a día, ¿de qué forma se presenta la innovación?

Con nuevos vinos, introduciéndonos en otras denominaciones de origen, lo que nos permite abarcar una selección y oferta de referencias mucho más amplia que entendemos que son experiencias complementarias a las que ofrecíamos des de la Rioja. Vamos a seguir trabajando para dinamizar la economía local.

Tratamos con viticultores a largo plazo, para incentivar que mantengan el viñedo viejo pero con mayor calidad y menor producción. Hemos desarrollado un protocolo de remuneración de este esfuerzo para que el tejido se mantenga, porque es patrimonio vitivinícola de la región.

La responsabilidad social se extiende más allá de lo económico en Marqués de Cáceres.

Cristina Forner reconoce que planificar es hoy más complejo e insiste en la importancia de tomar decisiones sensatas y prudentes. La bodega, bajo su presidencia, responde sin miedo a la imprevisibilidad, pero con pasos sólidos.

INTERVIEW WITH CRISTINA FORNER, CEO OF MARQUÉS DE CÁCERES

What does innovation look like for you on a day-to-day basis?

New wines and moving into other designations of origin, which allows us to offer a selection and a much wider range of wines that we consider to be complementary experiences to those we offer from Rioja. We are going to continue working to boost the local economy. We work with winegrowers over the long term to encourage them to preserve the old vineyards but with a focus on higher quality and lower volume. We have established a protocol for remunerating this work so that the local infrastructure is preserved because it is the region’s winegrowing heritage. Social responsibility goes beyond purely economic considerations at Marqués de Cáceres.

Cristina Forner recognises that planning today is much more complex and insists on the importance of making sound and sensible decisions. The winery, under her presidency, is taking prudent measures allowing it to respond to unpredictability with confidence.

In terms of winemaking, what have been the most important decisions you have made in recent years?

Well, in 2017 we came to Rueda with a serious investment, with the purchase of 125 hectares of vineyards and the creation of a modern winery to make exceptional wines.

We have expanded our range and we are responding to market segmentation and consumer tastes, which are becoming less and less homogeneous. The climate also has an impact on these; for example, this year, with the very hot weather, sales of whites and rosés have soared. And in 2019, we moved into Ribera del Duero with the acquisition of 60 hectares of vineyards that include some plots of extraordinary potential in the area around Anguix, La Horra and Roa. Finca La Capilla is, in fact, a venture that we are very excited about, a boutique winery to create unique wines of exceptional personality that are receiving growing recognition from good food and wine lovers.

Marqués de Cáceres is also active in wine tourism. You have been offering fabulous wine experiences in La Rioja for over 10 years.

We realise that consumers are often confused by everything that goes into making a bottle of wine. In addition to allowing visitors to learn about the wines while having fun, we offer tastings of the more prestigious wines. For some people, this can be a revelation because they are not aware of the millions of things that go into attaining the level of quality we aim for. This coming year we will be adding new experiences in the vineyards so that visitors can appreciate all the work involved there.

We will be holding these in a “casa de aperos” (small building in which equipment is usually stored) and for more VIP-level visits.

What did you learn from your father Enrique Forner, founder of Marqués de Cáceres?

90% of what I have learnt, I learnt from him. The rest comes from my experience around the world. And although I am from another generation, I feel that the drive you have to have in certain situations comes from him: that risk-taking at the right moment and that assumption of responsibility when there is no guarantee that a gamble will pay off. Perhaps what I have tried to do is to move the company into other regions and designations of origin, when the business in Rioja was already very strong.

More than half a century since the winery was founded.

Now the road to the centenary lies ahead. What is it going to look like?

We will continue to communicate that Marqués de Cáceres is a wine brand you can trust, uphold the concept of quality and aspire to excellence. We will focus on the value of people that will make a difference in an increasingly technological and robotised world. The only reassurance is that there is a family who is committed to the future of the company and does not view it as a short-term profit opportunity. Not everything is about profitability, the focus is on quality. This is our heritage and it is a timeless value.

Enológicamente, ¿qué apuestas han sido trascendentales en los últimos tiempos?

Pues en 2017 desembarcamos en Rueda con una apuesta importante, con la compra de 125 hectáreas de viñedo y creando una bodega moderna para elaborar vinos especiales. Hemos ampliado el abanico y respondemos a la segmentación de mercados y a los gustos de los consumidores que cada vez son menos homogéneos. El clima también los cambia; por ejemplo, este año, con las altas temperaturas se ha disparado la venta de blancos y rosados. Y en 2019 llegamos a Ribera del Duero con la adquisición de 60 hectáreas de viñedo que aglutina unos pagos de potencial extraordinario en el entorno de Anguix, La Horra y Roa. Finca La Capilla es, de hecho, un proyecto que nos llena de ilusión, una bodega boutique para crear vinos singulares de gran personalidad que están ganando un especial reconocimiento entre los amantes del vino y de la gastronomía.

El enoturismo es otra de las apuestas de Marqués de Cáceres. Más de 10 años en la Rioja generando actividades hedonistas y experienciales.

Nos damos cuenta de que el consumidor se queda abrumado por todo lo que hay detrás de una botella. Además de hacer pedagogía y pasarlo bien, damos a catar los vinos de mayor prestigio y para la gente es como una revelación porque no son conscientes de los millones de detalles que hay para llegar al nivel de calidad que pretendemos. Este año que viene iniciaremos nuevas experiencias en el viñedo para que reconozcan el trabajo que hay. Lo haremos en una casa de aperos y para visitas más VIP. ¿Qué hay en su liderazgo de Enrique Forner, padre y fundador de Marqués de Cáceres?

He aprendido de él el 90% de lo que sé. Lo otro viene de mi experiencia por el mundo. Y aunque soy de otra generación, siento que el empuje que hay que tener en determinadas situaciones, es suyo: esa toma de riesgo en momentos oportunos y asumir esa responsabilidad cuando no tienes nunca la garantía de que la apuesta va a ser exitosa.

Quizás yo lo que he tratado es llevar a la empresa a otras regiones y denominaciones de origen, cuando el proyecto en Rioja, ya estaba muy sólido.

Más de medio siglo de vida. Ahora empieza el camino hacia el centenario. ¿Qué va a marcarlo?

Seguir transmitiendo que Marqués de Cáceres es un valor seguro. Mantener el concepto de calidad y aspirar a la excelencia. Incidir en el valor humano que marcará la diferencia en un mundo cada vez más tecnológico y robotizado. La única tranquilidad es que hay una familia que apuesta por el futuro de la empresa y que no la ve como una oportunidad de beneficios a corto plazo. No todo gira sobre la rentabilidad, sino que el eje es la calidad. Éste es nuestro patrimonio y es un valor atemporal.

Who is Lucie Pereyre? What are its origins? Did you ever consider any other professional option other than working in the family business?

I grew up in Champagne and then lived abroad, in different countries. At the beginning, I didn't know I was going to work in the wine world, I wanted to be a life coach.

But during my master's degree, I had the opportunity to do an internship at a wine and spirits distributor in the United States and from then, I discovered a passion.

When I came back, I started studying the WSET Diploma, while working at the Rioja winery Marques de Riscal. In 2019, I came back in Champagne and started working at Laurent-Perrier as Grand Siècle representant, Grand Siècle being Laurent-Perrier’s prestige cuvée.

¿Quién es Lucie Pereyre? ¿Cuáles son sus orígenes? ¿en algún momento se planteó alguna otra opción profesional diferente a la de trabajar en el negocio familiar?

Crecí en la Champaña y he vivido en muchos otros países.

Al principio, no sabía que iba a trabajar en el mundo del vino, quería ser “coach de vida”. Pero durante mi master tuve la oportunidad de hacer una práctica en un distribuidor de vinos y espirituosos en Estados Unidos y es allí donde descubrí una pasión. A mi vuelta, comence a estudiar el Diploma del WSET, trabajando mientras en la bodega riojana Marqués de Riscal. En 2019, volví a la Champagne, y empecé a trabajar en Laurent-Perrier como representante de Grand Siècle, nuestra cuvée de prestigio.

What was your training? Apart from belonging to a champagne family, did anyone influence or play an important role in the decision to dedicate yourselve to this world of champagne?

I studied scientific psychology in Geneva and then passed a Marketing Master degree. I always had the freedom to choose my own path. I had no pressure to work in the family business.

¿Cuál fue su formación? Además del hecho de pertenecer a una familia de champagne, ¿alguien influyó o tuvo un papel importante en la decisión de dedicarse a este mundo del champagne?

He estudiado psicología científica en Ginebra y luego hice un master de marketing. Siempre mis padres me han dejado elegir mi propio camino. No tuve ninguna presión de trabajar en el negocio familiar.

What does it mean to be the ambassador of Grand Siecle? Why only this cuvee and not an ambassador for the entire brand?

I have always been very proud to represent Grand Siècle because it was the first wine my grandfather crafted when he took over the management of the house in 1948 at only 28 years old. He has breathed an innovative spirit to the House by using Chardonnay as the main varietal when everyone was using Pinot Noir, by changing the oak barrels that were fashionable to stainless steel tanks in order to maintain freshness in the wine and by lowering the dosage in the 1970s to pour champagne at the the aperitif and during a whole meal while everyone was pouring it for dessert.

¿Qué representa ser la embajadora de Grand Siecle? ¿Por qué solo de esta cuvee y no embajadora de toda la marca?

Representar a Grand Siècle ha sido un orgullo para mí porque era el primer vino que hizo mi abuelo al llegar a la dirección de la casa en 1948 con tan solo 28 años. Ha insuflado un espíritu muy innovador a la casa usando el Chardonnay cuando todos usaban el Pinot Noir, cambiando las barricas, que estaban de moda, por los tanques de acero inoxidable para mantener la frescura de sus vinos, y ha decidido bajar el azúcar añadido en los años 70 para servir su champagne en el aperitivo y durante una comida mientras todos lo servían en el postre.

What is special about Grand Siecle that the rest of the Maison's products do not?

Grand Siècle combines these innovations and the quality of our know-how. My role is to make it known across the world because it is a unique cuvée like no other. It is the only prestige cuvée based on a blend of 3 vintages, instead of using only one year, with the idea of recreating the perfect year, which nature could not offer us. All other prestige cuvées are made from a single vintage.

¿Qué tiene de especial Grand Siecle que no tengan el resto de productos de la Maison?

Grand Siècle representa estas innovaciones y la calidad de nuestro saber hacer. Mi rol, es darlo a conocer por el mundo entero ya que es una cuvée única, como ninguna otra. Es la única cuvée de prestigio basada en un ensamblaje de 3 añadas, en vez de usar solamente un año, con la idea de recrear la añada perfecta, que la naturaleza no podría ofrecernos. Todas las otras cuvées de prestigio están elaboradas de una sola añada.

During this 2022 we attended the presentation, in Madrid, of Grand Siecle 25. Can you explain to our readers what Grand Siecle is and what the process of making this champagne consists of? Will it continue to be done in the future under the same parameters?

The first Grand Siècle was launched in 1959. Since then, in 70 years, we have been able to make it only 25 times.

That is why you tasted in Madrid the Grand Siècle Iteration N°25, the last one launched in bottle. It requires a lot of patience to launch a new Grand Siècle iteration, as unlekily the others which are waiting for one exceptional year, Laurent-Perrier has to wait for 3 exceptional vintage years. And in Champagne, with our Nordic and complicated climate, all harvest years are not always good years!

Durante este 2022 asistimos a la presentación, en Madrid, de Grand Siecle 25. ¿Puede explicar a nuestros lectores que es Grand Siecle y en qué consiste el proceso de elaboración de este champagne? ¿Seguirá haciéndose en el futuro bajo los mismos parámetros?

El primer Grand Siècle se elaboró en 1959, y es tan complicado de hacer que, desde entonces, es decir en 70 años, hemos podido elaborarlo solamente 25 veces. Por eso habéis catado en Madrid el Grand Siècle Iteración N°25, el ultimo lanzado. Es complicado de elaborarlo porque en vez de esperar como los demás solamente un año excepcional, tenemos que esperar a 3. ¡Y en la Champagne, con nuestro clima nórdico y complicado, creedme que no hay siempre buenos años!

Within each vintage we keep for Grand Siècle, we are very selective and based on immutable rules, collect a majority of Chardonnay completed by Pinot Noir, which we are going to choose only in a selection of 11 Grands Crus on the 319 villages that there are.

Once we have the 3 vintages years, we proceed with the art of blending to recreate this perfect Grand Siècle year. When we have succeeded in crafting this cuvée, we age this wine in bottle and in magnum in our cellars and on its lees for a minimum of ten long years... The parameters of using 3 vintages, a majority of Chardonnay and a minimum of 10 years will not change, but the others will, because we adapt to what Nature gives us.

Let's talk again in a more general way about Laurent Perrier... What are the main lines of work of the house? What is the philosophy of the Maison? Have things changed a lot from the first generation to now?

Laurent-Perrier is a family-owned and independent house. The representative style of its wines is defined by freshness, elegance and purity. Since my grandfather arrival in 1948, he has revolutionized this house that nobody knew, thanks to his innovative and visionary spirit he had. Today, my mother and my aunt, alongside the cellar master and the chairman of the Management board, maintain this heritage, and continue to innovate.

The most complicated part of making a champagne is making the coupages (assemblages) correctly. Do you have any "trick" or recipe to make champagnes? How many base wines do you play with when making the wines? What is the oldest that they keep?

The art of blending is the Champagne DNA. It has no trick or recipe, the tasting decides everything. It is the know-how of a house and its cellar master. That is why having a proper vision and respecting values are key.

We have to taste while thinking about the final vision, where we want to go, and how to improve year after year. For Grand Siècle, we have about 40-60 still wines to taste before creating the blend for a new iteration, and every percentage makes a difference! Of course, if we want to maintain high quality wines, they cannot be kept in stainless steel tanks for more than 6 years.

Climate change is evident, and although Champagne is in an area further north than, for example, Provence, surely they will have also noticed changes a few years towards here. What is different, climatologically speaking, in recent years compared to the end of the 20th century? What consequences does climate change have in the short, medium and long term in Champagne?

I arrived quite recently in Champagne to have a personal opinion on this matter, but from what I hear from grape growers and winery managers, there are changes that are noticeable. For instance, the harvest is earlier than before, there are many more climatic risks that appear such as spring frosts, fungal diseases, or heat waves. In the short term, you have to adapt and be very reactive to react. In the medium and long term we have to think of strategies to cope with these changes, it means experimenting and innovating with our winegrowing techniques.

Dentro de cada año que guardamos para Grand Siècle, vamos a recoger una mayoría de Chardonnay completada por Pinot Noir, que vamos eligiendo únicamente en una selección de 11 Grands Crus sobre los 319 pueblos que hay. Una vez que tenemos las 3 añadas, procedemos al difícil arte de ensamblaje para recrear esta añada perfecta de Grand Siècle. Cuando hemos conseguido crear esta cuvée, la dejamos envejecer en botella y en magnum en nuestra bodega sobre sus lías durante un mínimo de 10 largos años… Los parámetros de usar 3 añadas, una mayoría de Chardonnay y un mínimo de 10 años no van a cambiar, pero los demás si, porque nos adaptamos a lo que nos da la Naturaleza.

Volvamos a hablar de una forma más general de Laurent Perrier… ¿Cuáles son las principales líneas de trabajo de la casa? ¿Cuál es la filosofía de la Maison? ¿Han cambiado mucho las cosas desde la primera generación hasta ahora?

Laurent-Perrier es una casa familiar e independiente.

El estilo representativo de sus vinos se define por la frescura, la elegancia y la pureza. Desde que mi abuelo empezó en 1948, ha revolucionado esta casa que nadie conocía, gracias a toda la innovación que trajo. Mi madre y mi tia mantienen esta herencia, y siguen innovando.

La parte más complicada de elaborar un champagne, es realizar correctamente los coupages (assemblages). ¿Tienen algún “truco” o receta para elaborar los champagnes? ¿Con cuántos vinos base juegan a la hora de elaborar los vinos? ¿Cuál es el más antiguo que conservan?

El arte de ensamblaje, el ADN de la Champaña, no tiene truco ni receta, la cata lo decide todo. Es el saber hacer de una casa y de su “chef de cave”. Por eso, tener una visión familiar y respetar unos valores es muy importante. Hay que catar pensando en la visión final, en donde queremos ir, y como superarnos año tras año. Para Grand Siècle por ejemplo, tenemos unos 40-60 vinos tranquilos que catar para crear el ensamblaje de la nueva iteración, y cada porcentaje hace la diferencia! Eso sí, si queremos mantener una gran calidad de vinos, no se pueden guardar en tanques de acero inoxidable más de 6 años.

El cambio climático es una evidencia, y si bien la Champagne está en una zona más al norte que, por ejemplo, la Provenza, seguramente también habrán notado cambios de unos años hacia aquí. ¿Qué hay de diferente, climatológicamente hablando, en estos últimos años respecto a finales del siglo XX? ¿Qué consecuencias tiene a corto, medio y largo plazo el cambio climático en la Champagne?

He llegado hace poco en la Champagne para tener una opinión personal sobre este asunto, pero por lo que escucho entre los viticultores y los “chefs de cave”, hay cambios que se notan. Por ejemplo, la vendimia se hace más pronto que antes, hay muchos más riesgos climáticos que aparecen durante el año como heladas en primavera, enfermedades fúngicas, u olas de calor.

En el corto plazo hay que adaptarse y ser reactivo muy rápido. En el medio y largo plazo hay que pensar en estrategias para afrontar estos cambios, y eso significa experimentar e innovar con nuestras técnicas de viticultora.

We move on to other slightly more “delicate” issues…

The regulations that exist in the A.O.C. Champagne are very demanding and some of the rules have been in force for many years. Don't you think it would be time for some of these regulations to be modified and/or updated? One of those rules that, in particular, seem a bit obsolete to me, is that the harvest must start from a specific date and not before... What is your opinion about it?

The strength of champagne and its AOC is based on these demanding standards created by industry experts.

And these standards change and improve over time to adapt to the context. With your example of harvest dates, we can justify a harvest before the official date if we can prove that our plot has the right maturity.

Do you buy grapes from viticulturists in the area? What kind of relationship do they have with the viticulturists from whom they buy grapes?

Do they participate in any way when making the champagnes or is it a mere purchase/sale relationship?

We are buying 90% of our grapes from winegrowers, as at the beginning of LaurentPerrier history, back in the early 1950s, my grandfather did not have any proper vineyard and he built strong relationship with winegrowers, base don human skills and a true loyalty and friendship. Today we continue to work with these families (fourth generation) and we have improved our positions in the best Grands Crus of Champagne, especially in the Côte des Blancs for Chardonnay, varietal backbone of our style.

SW.: In addition to champagne, other sparkling wines are made around the world: Cava, Corpinnat, Franciacorta,… given the origins of our publication (Catalonia), what is your opinion of Cavas?

I had the chance to taste several Cavas from Catalunya and I find them very different from champagne simply because of the climate, the terroir, the grapes used, which are not the same. It is another expression of sparkling wine and therefore the consumer can find different taste experiences according to his taste.

Pasamos a otros temas un poco más “delicados”… Las normativas que existen en la A.O.C. Champagne son muy exigentes y, algunas de las normas, rigen desde hace muchísimos años. ¿No cree que sería hora de que algunas de dichas normativas fuesen modificadas y/o actualizadas? Una de esas reglas que, particularmente, me parecen un poco obsoletas, es la de que la vendimia se ha de iniciar a partir de una fecha concreta y no antes… ¿Qué opinión tiene al respecto?

La gran calidad del champan y de su AOC está basada en estas normas exigentes creadas por expertos del sector. Y estas normas van cambiando y mejorando con el tiempo para adaptarse al contexto. Con su ejemplo de las fechas de la vendimia, se puede justificar una vendimia antes de la fecha oficial si demostramos que nuestra parcela tiene la madurez adecuada. ¿Compran uvas a viticultores de la zona? ¿Qué tipo de relación mantienen con los viticultores a los que les compran uvas? ¿Participan de alguna manera a la hora de elaborar los champagnes o es una mera relación de compra/venta?

Compramos el 90% de nuestras uvas a los viticultores porque mi abuelo al empezar no tenía ningún viñedo y ha sido una larga construcción de amistad humana que ha ido construyendo. Hoy seguimos trabajando con estas familias (cuarta generación) y hemos mejorado nuestras posiciones en los mejores Grands Crus de la Champaña, especialmente en la Côte des Blancs para el Chardonnay.

Además del champagne, se elaboran más espumosos alrededor del mundo: Cava, Corpinnat, Franciacorta,… dados los orígenes de nuestra publicación (Catalunya), ¿qué opinión le merecen los Cavas?

He tenido la suerte de catar varios Cavas de Catalunya y me parecen muy diferentes al champagne simplemente porque el clima, el terroir, las uvas usadas, son diferentes. Es otra expresión del espumoso y por eso el consumidor según su gusto puede encontrar diferentes experiencias gustativas.

Let's move on to a slightly more personal field...

The issue of family reconciliation, in our country, is a sensitive topic that is discussed, more or less, on a daily basis. Given your responsibility within the Maison, and knowing that you are a mother, how do you manage it?

Like everyone else, it is a question of organization and ment and knowing how to combine his work with his spare time dedicated to its family. It is a balance that is not always linear but that I try to maintain.

Pasemos a un terreno un poco más personal…

El tema de la conciliación familiar, en nuestro país, es un tema sensible del que se habla, más o menos, de forma cotidiana. Dada su responsabilidad dentro de la Maison, y sabiendo que es madre ¿cómo lo gestiona?

Como todos es una cuestión de organización y una buena gestión del tiempo y saber compaginar su trabajo con sus momentos libres dedicados a la familia. Es un equilibrio que no es siempre lineal pero que intento mantener.

And to end the interview, a very generic question…

What is the future of champagne?

We have seen after the pandemic that champagne has been consumed much more at home, and with food.

Something that was not done so much before. We are coming out a little bit from this image only reserved for celebrations, but we are also entering more strongly into the world of gastronomy and we think it is a longterm trend.

Muscat is one of the most approachable

On the nose, the Muscat wine is full of aromas of white fruit, stone fruit and even tropical fruit, which can also be complemented by floral notes. On the palate, the Muscat wine is both subtle and pleasant.

El Moscatel, tal y como lo conocemos, es un vino con aromas a varias frutas, como las blancas, las de hueso incluso las tropicales, pero también podemos encontrar sensa-ciones a flores. En boca es un vino agradable y sutil.

In Spain, you can find this varietal throughout the Levante area and in the southernmost part of Andalusia. For sweet wines, it is late-harvested and often sundried, but we are increasingly seeing it produced dry. In the dry version, you will also find these various aromas of fruits and flowers but in a fresher form than those in the sweet wines.

En nuestra casa lo encontramos en la toda la zona de Levante así como también en la parte más al sur, en Andalucía. Se produce con uvas de vendimia tardía, en asoleo (secadas al sol) para los vinos dulces. Pero cada vez más la podemos encontrar en versión de vino seco. En este caso también podemos encontrar aromas a varias frutas y flores pero en un estado mas fresco que en los vinos dulces.

grape varieties around. I make this assertion based on the simple fact that this varietal is mostly known for its sweet wines. And it is these sweet wines that we even let some of the youngest members of the family sip on special occasions. The way into wine drinking is generally through sweet wines and these, of course, are often made from this varietal.

I think it is true to say that Muscat is a Mediterranean grape par excellence but, depending on the country where it is planted, it is used in different ways.

As well as being utilised to make wine it is also consumed as a table grape. And, as this year comes to a close, I think it is also worth mentioning that it is Muscat grapes that are traditionally eaten in Spain on New Year's Eve, one popped in the mouth between each chime of the bells at midnight!

más accesibles que existen. Esta afirmación se sustenta por la sencilla razón de que esta variedad la conocemos, mayoritariamente, en su estado dulce. Y es en este estado que nos atrev emos a darla a los mas pequeños de la casa en celebraciones. Incluso cuando empezamos a beber vino son los vinos dulces, muchas veces de esta variedad de uva, los primeros que empezamos a beber.

Creo que es de recibo decir que el Moscatel es la uva del Mediterráneo y depende del país donde se encuentre plantado, se utiliza con distintas finalidades. Estas van desde su consumo en mesa como fruta, y también para elaborar vino. En este punto de la definición, creo que está bien desvelar que en muchas ocasiones son las uvas de Moscatel las que ingerimos para la noche de fin de año entre campanadas, risas y deseos.

Floralis is a wine without a denomination of origin but made in Catalonia. Its vineyards are located in the Penedés region, and from them comes this wine with hints of ripe fruit, floral aromas, spice and honey. On the palate, it is voluminous and full-bodied. It would be best enjoyed with fruit-based desserts and custard tarts or with some nuts after a meal.

De entre los distintos vinos elaborados por la familia Torres en diferentes zonas del panorama nacional, encontramos este dulce de Moscatel de Alejandría. Floralis es un vino sin denominación de origen pero hecho en Catalunya. Sus viñas están ubicadas en el Penedés, y el resultado es un vino con matices a frutas maduras, aromas florales y especias así como también encontramos la miel presente. En boca es voluminoso y amplio y se disfruta combinándolo con postres a base de fruta pasteles de crema y también con unos frutos secos en una sobremesa.

Once the grapes are practically sultanas with a high sugar content due to their concentration, they are fermented. The result is a wine with aromas of white and stone fruits, flowers and a delicious and appetising palate.

Para elaborar este vino dulce se practica la técnica del asoleo, que es dejar deshidratar las uvas con un avanzado estado de madurez al sol. Una vez la uva es prácticamente pasa, con un alto contenido de azucares por concentración es cuando las uvas pasan a fermentar. El resultado es un vino con aromas a frutas blancas y de hueso, flores y un paso de boca delicioso y apetecible.

Its intense aromas remind us of tropical fruit (mango and lychee) and stone fruit (nectarine). On the palate, it comes through as fresh and persistent, replaying the aromas already detected on the nose. We recommend pairing this wine with a terrine of mi-cuit foie gras or simply a fruit-based dessert.

Posiblemente la frescura es una de las particularidades más representativas de este vino de Moscatel, elaborado con Moscatel de Frontignan. Sus aromas intensos nos recuerdan a las frutas tropicales (mango y lichi) así como también las de hueso como la nectarina.

En boca, lo percibimos fresco y persistente y nos recuerda a los aromas que también hemos percibido en nariz. Te recomendamos que lo bebas mientras estas tomando una terrina de foie micuit o simplemente con un postre a base de frutas.

The name Colección 29 means that the number indicates the vintages that the wine is on the market. The grapes come from the plots closest to the Mediterranean Sea in the Marina Alta region of Alicante. Extremely dry vineyards cultivated on terraces with more than 50 years. Aromas of ripe fruit, dry herbs, withered flowers, and white flowers are what we find on the nose. Its passage through the mouth is powerful and balanced on the palate with hints of ripe fruit.

Si existe una variedad relacionada directamente con la zona de Alicante, esta es el Moscatel y si este es de la Marina la conjunción ya es perfecta. El nombre Colección 29, significa que el numero indica las añadas que el vino esta en el mercado. Las uvas proceden de las parcelas más cercanas al mar mediterráneo en la comarca alicantina de la Marina Alta. Viñedos de secano extremo cultivados en terrazas con más de 50 año. Aromas de fruta madura, hierbas secas, flores marchitas, y flores blancas son las que encontramos en la nariz. Su paso por boca es, En boca es potente y equilibrado con recuerdos de fruta madura.

Málaga / Moclinejo, Málaga - Spain / www.vverticales.es / P.V.P.: 19,00€ 100% Moscatel de Alejandría / 10,00º While we are on the subject of Muscat wines, I have to tell you that my life was never the same again after I discovered Monte Axarquía in Málaga! I am telling you this because Noctiluca comes from this area. The winery, Viñedos Verticales, produces different types of wines, white, red and sweet, from various varietals. This Muscat comes from vines of over 130 years of age growing on the Reyes estate. Its grapes first spend 10 days out in the sun then, after fermentation, 3 months in a stainless-steel vat at a sub-zero temperature. In addition to the wide array of aromas, it is the balance between sweetness and freshness that will remind you that there is a mountain in Malaga where they produce some fantastic Muscat wines.

Antes de seguir hablando de esta selección de Moscateles, permítanme comentarles que desde que descubrí el Monte Axarquía en Málaga, para mi hay un antes y un después en cuanto a vinos de Moscatel se refiere. Les comento esto porque el dulce que nos ocupa a continuación es de esta zona. La bodega, Viñedos Verticales, se compone de distintos colores de vino, blancos, tintos y dulces de distintas variedades. Su Moscatel de nombre Noctiluca, nace de las viñas plantadas en la finca de Reyes, de más de 130 años de edad. Para elaborarlo las uvas pasan 10 días de asoleo, después de la fermentación pasan 3 meses en depósitos de acero a una temperatura bajo cero. A parte de su gran abanico aromático el equilibrio entre dulzor y frescor es lo que os va a recordar que existe un Monte en Málaga donde se producen unos Moscateles en mayúsculas.

MARTA 2020 CLÀSSIC PENEDÈS MARINA DEL GARRAF TORRE DEL VEGUER

Sant Pere de Ribes, Barcelona - Spain / www.torredelveguer.com P.V.P.: 22,75€ / 100% Moscatell de gra petit / 12,50º Torre del Veguer is located in Sant Pere de Ribes, a short hop from the Mediterranean Sea. The Cava Marta from Torre del Veguer is named after the founder of the winery, Marta Estany, and was created in her memory. It is crafted from Muscat de Frontignan, also known as Muscat Blanc à Petits Grains and is aged for a minimum of 24 months "sur latte". The winery recommends cellaring it as it will be at its drinking best in 24 months' time. The nose reveals balsamic notes of tropical and citrus fruits, the palate is fresh with pleasant, fine bubbles. It would work particularly well with a platter of cheeses.

Torre del Veguer se ubica en Sant Pere de Ribes, a un paseo del Mediterráneo.

El Cava Marta de Torre del Veguer es un Cava que lleva el nombre de la fundadora de la bodega, Marta Estany y está elaborado en su memoria. Está hecho de Muscat de Frontignan también denominado Muscat de Grano Menudo y criado durante un mínimo 24 meses en rima. La bodega recomienda guardarlo ya que estará en su plenitud 24 meses más tarde. Notas balsámicas de frutas tropicales y cítricos son su nariz, la boca es fresca con burbuja fina y agradable. Los quesos son una buena excusa para ser degustado.

ARIYANAS TERRUÑO PIZARROSO 2019 · BODEGAS BENTOMIZ

D.O. Málaga / Bodegas Bentomiz / Sayalonga, Málaga - Spain / www.bodegasbentomiz.com P.V.P.: 27,5€ / 100% Moscatel de Alejandría / 13,50º Ariyanas is made from Muscat de Alexandria and aged for 8 months in French oak barrels. The winery is located in Sayalonga (Malaga) and its bush-trained vines are between 80 and 100 years of age. They grow on slate soils in vineyards lying at an altitude of between 500 and 800 metres. This Muscat reveals a remarkably intense golden colour. The nose releases complex, aromatic notes of medlar, ripe pineapple, syrup, honeycomb, honey, river stone, white pepper and balsam. Tasty, unctuous, primary and well-balanced. Impressions of stone fruit, jasmine, uncooked almonds and slate. Pronounced mineral character. El Ariyanas se elabora criándolo ocho meses en barricas de roble francés, y con Moscatel de Alejandría. La bodega la encontramos en Sayalonga (Málaga), sus viñas cultivadas en baso de entre 80 y 100 años de edad, están plantadas en terrenos de pizarra a una altura de entre 500 y 800 metros de altitud.

De su Moscatel se ha dicho entre otros comentarios que es de color dorado intenso. Complejo, aromático, recuerdos de níspero, piña madura, almibarados, cera panal, amielados, piedra de rio, pimienta blanca, balsámicos. Sabroso, untuoso, primario, equilibrado. Sensaciones de fruta de hueso, jazmín, almendra cruda y pizarra. Marcado carácter mineral. (Reseñas escritas el año 2020 en el Guía de Vinos Gourmets).

The SVW venture was born in 2020, as part of the Alma Carraovejas business strategy and reflecting its desire to offer consumers unforgettable wine-drinking experiences.

Although it may seem to have been perhaps circumstantial, its creation had, in fact, long been prepared by Pedro Ruiz Aragoneses, currently at the helm of the company founded by his father, Jose María, at the turn of the 20th century...

The Alma Carraovejas team’s travels to the world’s wine regions had broadened their horizons and piqued their curiosity. They discovered that the ability to create emotion in the world of wine “was not only found in the local terroir but was also found in bottles of wines from different landscapes around the world”.

As they say themselves, “at SV Wines we are only the messengers of those wine producing areas in which the wine producer manages to go beyond the earthly senses and achieve the true representation of an authentic landscape”.

According to Pedro Ruiz Aragoneses, for Alma Carraovejas, “SV Wines is a very important venture with great potential. As part of the Alma Carraovejas ethos of seeking to preserve a unique legacy for generations to come and pursuing unique ventures, we recognised a need to offer our customers wines from some of the most singular vineyards in the world. We wanted to put a little piece of the Champagne region on the tables of the finest restaurants, with Charles Heidsieck, or some of the extraordinary landscapes of the Amalfi coast, with Marisa Cuomo, for example. SV Wines is the opportunity to partake in the enjoyment

This venture joins the other businesses that Alma Carraovejas has been building over many years. As the man at the company’s helm tells us, “Yes, in recent years Alma has grown a lot and has established itself in some of Spain’s most promising wine regions. This is in addition to the launch of the Ambivium Restaurant, which has already earned us a Michelin Star and recently the green star for sustainable gastronomy, as well as the creation of Fundación Cultura Líquida for the preservation and dissemination of wine culture; and, of course, the birth of SV Wines, which we are discussing here”.

Aragoneses goes on to say: “From the outside, it may look as if we have a lot on our plate, but from the inside, it looks different. We like to say, because we believe it, that we think in terms of decades. Each new step or new venture has a lot of thought and study behind it, sometimes many years of analysis, of getting to know the area and seeking out that singularity that excites us and makes us want to be involved in the preservation of that legacy. For us, the launch of SV Wines is another demonstration of our desire to showcase a unique wine heritage. I would say that, considering Alma’s ethos, it was almost a natural step in our evolution”.

SV Wines intends “to continue to find new landscapes and ventures that we can share with our customers and we want to gradually increase the number of wines represented to bring a little bit of the excitement from every one of the world’s winegrowing regions. We are about to announce the addition of a new winery to our portfolio and I can only tell you that it is located in one of the most prestigious areas of Italy”.

“We always look for unique wineries in each region.

The decision to choose one winery over another is not taken lightly and is usually only after a long period of consideration, discussion and tasting. We are very fortunate,” says Pedro.

Este proyecto se suma a otros proyectos que Alma Carraovejas lleva construyendo desde hace años. Tal y como nos comenta el alma mater de la compañía, “está claro que en los últimos años Alma ha crecido mucho y se ha instalado en algunos de los rincones vitícolas con más potencial de España, además de la puesta en marcha de Restaurante Ambivium, con el que ya ostentamos una Estrella Michelín y recientemente se nos ha otorgado la estrella verde de gastronomía sostenible; la creación de Fundación Cultura Líquida, para la preservación y divulgación del conocimiento para la cultura del vino; y, por supuesto, el nacimiento de SV Wines, del que estamos hablando”. Y añade “desde fuera puede parecer que corremos mucho, pero desde dentro, se ve de otra manera. Nos gusta decir, porque así lo creemos, que pensamos en décadas. Cada avance o nuevo proyecto tiene detrás mucho tiempo de reflexión y estudio. En ocasiones, muchos años de análisis, de conocer la zona y de buscar esa singularidad que nos emocione y nos haga querer formar parte del cuidado de ese legado. Para nosotros la puesta en marcha de SV Wines es un síntoma más del deseo de mostrar un patrimonio vitivinícola único. Diría que, teniendo en cuenta la filosofía de Alma, era casi un paso natural en nuestra evolución”.

La intención de SV Wines “es seguir encontrando nuevos paisajes y proyectos que podamos compartir con nuestros clientes y queremos ir aumentando poco a poco las referencias para poder traer un poco de la emoción de cada paisaje vitícola del mundo. Actualmente estamos a punto de poder confirmar la inclusión de una nueva bodega en nuestro porfolio y solo os puedo adelantar que se sitúa en una de las zonas más prestigiosas de Italia”.

It is made from equal parts Albariño, Godello, Treixadura and Branco Lexitimo. Its unique character is derived from its soils composed of granite, sand and clay with some slate and schist, as well as from the exposures, rivers and hillsides, on terraces lying at 400 metres altitude. It reveals a yellow hue flecked with green and aromas of apple and green pineapple with a fantastic acidity on the palate where the wine is fresh, somewhat mineral and very harmonious with a long, intense finish.

Elaborado con uvas cultivadas en dos parcelas diferentes, Finca Cuñas y As Cancelas, con una edad media de 40 años. Lleva Albariño, Godello, Treixadura y Branco Lexitimo a partes iguales. Sus suelos de granito, arenas y arcilla con pizarra y esquisto, junto con las orientaciones, los ríos y las pendientes, en bancales a 400 metros de altitud, le confieren un carácter único. These vineyards are beautiful with a rich variety of soils planted with four grape varieties. In this dry Tokaji, we find 75% Furmint, the varietal for which the region is most known and also the oldest varietal, possessing very good acidity. It is blended with 25% Harslevelú, which adds aromas, freshness and elegance. The wine reveals a pale golden yellow hue and subtle hints of white flowers, camomile, herbal tea and honey on the nose. On the palate, these notes come through again but this time interwoven with lemon, and the finish is long. This is a gastronomic wine, best enjoyed as an aperitif.

Disznókõ significa “roca de jabalí” por la forma de la roca volcánica en el corazón del viñedo. Unos viñedos preciosos, con una rica variedad de terrenos y cuatro variedades plantadas. En este Tokaji seco se encuentra en un 75% Furmint, la variedad con la que se identifica la región y la más antigua, de muy buena acidez, con Harslevelú 25% que aporta aromas, frescura y elegancia. De color amarillo dorado pálido con sutiles recuerdos a flores blancas, manzanilla, tisana y miel. En boca se expresan esos mismos recuerdos además del limón, y un final largo. The grapes are picked by hand, fermented at low temperatures and aged for two years in new French oak barrels. This has given us this unique and special wine. It strives to achieve the same objectives as those of its red wine siblings, i.e., to honour the terroir and its ancestors while focusing on the authenticity of the terroir. This is a white wine that can be enjoyed now but can also bear a few years of cellar ageing, offering up hints of ripe apples, countless aromatic herbs and steely overtones. Elegance, freshness and balance.

Here the yield is only 1,000 kilos per hectare. More than a great feat of vinification, this wine represents a commitment to preserving the environment and a respect for history and heritage. The grapes were fermented in whole bunches with native yeasts in Burgundy barrels, then aged for 10 months and bottled in September 2019. The purest expression of the Verdejo grape from Segovia conveys complexity and depth with a palate replete with nuances and flavours wrapped in creaminess and longevity.

De los viñedos más antiguos de la península, plantados sobre pie franco, en suelos arenosos con lenguas de pizarra y clima extremo, nacen unas uvas exclusivas que ofrecen solo mil quilos por hectárea. Más que un gran trabajo de vinificación, en este vino hay un compromiso con el entorno y un respeto hacia la historia y con el patrimonio. Racimos enteros sin despalillar, fermentación con levaduras autóctonas en barricas borgoñonas, una crianza de diez meses y embotellado en septiembre de 2019. La expresión más pura del verdejo segoviano transmite complejidad y profundidad bajo una boca llena de matices y sabores envueltos de cremosidad y longevidad.

Conca de Barberà / Vimbodí i Poblet, Tarragona - Spain / www.torres.es P.V.P.: 63,10€ / 100% Chardonnay / 13,50º This wine has become an enduring icon thanks to the know-how of the technical team behind it, as well as the perfect conditions found in the vineyards where its Chardonnay grapes grow. The wine was created in the 1980s as a tribute to the Cistercian monks who moved to this region from Burgundy. Fermented and aged in barrels for about 6 months, the wine then rested in a tank on its lees for 10 months and was finally bottled in December of the following year. On the nose, we find creaminess along with citrus notes of ripe lemon and grapefruit peel. The palate shows good body and acidity with hints of almonds. This is an excellent wine with a promising future ahead of it.

El saber hacer por parte del equipo técnico, pero también las óptimas condiciones en las que se encuentra cultivada su uva Chardonnay, convierten a este vino en un icono año tras año. Nació en los años ochenta como un homenaje a los monjes del Císter que llegaron a esta región procedentes de la Borgoña. Fermentado y criado en barricas durante unos seis meses, reposó después diez meses en depósitos con sus lías, y finalmente se embotelló en diciembre del año siguiente. Cremosidad en nariz junto con las notas cítricas de limón maduro y piel de pomelo. En boca destaca su buen cuerpo y acidez, con recuerdos de almendra. Un excelente vino con un prometedor futuro.

The Tinta de Toro grapes destined for this wine come from vineyards cultivated using integrated viticulture using minimal intervention and organic fertilisers. Its aromas are reminiscent of violets, blackberries and blueberries. It is still very young yet very tasty on the palate, with ripe fruit wrapped up in smoky and toasted notes, firm, round tannins, and a very long, very clean finish.

Lo atractivo de este vino es que a través de él se puede contar y apreciar el paso del tiempo y la historia de la región, por sus viejísimas cepas de pie franco. La tinta de toro con la que se elabora proviene de viñedos trabajados con viticultura integrada de mínima intervención, con abonos orgánicos. Sus aromas nos recuerdan las violetas, las moras y los arándanos Se muestra todavía muy joven pero muy sabroso en boca, con fruta madura envuelta en ahumados y tostados, taninos firmes y redondos, y un final muy largo, dejando una boca limpiamente impregnada.

Only these bunches of grapes are considered worthy of their latest Reserva wine. With 10% Graciano, this mainly Tempranillo wine hails from a vineyard that is over 40 years old.

The toasted, dried fruit and nut, and caramel aromas reflect the two years that this wine spent resting in new French oak barrels. The complexity continues with balsamic notes before giving way to a broad, enveloping and generous palate followed by an everlasting finish.

Los aromas tostados, frutos secos y caramelo denotan los dos años que este vino reposó en barricas nuevas de roble francés. It shows that grapes from old vines can be full of vitality and character. The grapes were harvested by hand in the third week of September after a warm, dry summer that had followed a very cold winter. Despite the 18 months in oak, the fruit is still very much in evidence. Spicy with balsamic notes. Silky and elegant, flavoursome, meaty and well-balanced. Very good structure and great complexity of aromas and flavours.

Nace de las cepas más viejas de Ramon Bilbao. Tempranillo escondido en los más recónditos viñedos del pueblo de Cuzcurrita de Río Tirón, para demostrar que la uva procedente de cepas antiguas está llena de vitalidad y carácter. Vendimiada a mano la tercera semana de septiembre, después de un verano seco y cálido al que le precedía un invierno muy frío. A pesar de sus dieciocho meses de barrica, la fruta aún presente coge el mando. Especiado y con notas balsámicas. Sedosidad y elegancia, sabroso, carnoso y equilibrado. Muy buena estructura y gran complejidad aromática y gustativa.

It was planted in granite and schist soil at an altitude of 800 metres some 60 years ago. After a year spent ageing in 500 to 700-litre used oak barrels, it still shows its explosive red fruit. On the palate, it is very fresh and juicy, with a decent amount of tannin and very lively hints of mountain herbs, which dominate the finish.

This is a long, elegant and very lively wine with a bit of body and a surprising capacity for cellar-ageing.

En su duodécima cosecha, este vino lleva el nombre del paraje donde se encuentra esta viña garnachera.

Plantada sobre 800 metros de altitud, en suelo granítico con esquistos, hace unos sesenta años.

Después de un año de crianza en barricas de roble usadas de 500 a 700 litros, muestra todavía su explosiva fruta roja. En boca es muy fresco y jugoso, con un tanino moderado, y recuerdos silvestres muy vivos de hierbas de monte, que dominan en su final de boca. Vino largo, con cuerpo, elegante y muy vivo, con una sorprendente capacidad de mantenerse en el tiempo.

This wine is the second vintage from this new venture by the Ruiz family of Pago Carraovejas. It is the result of a small production of Tempranillo and Albillo grapes. The 18 months spent ageing in large oak barrels of up to 600 litres is well integrated and has created a well-balanced wine. It reveals intense aromas of ripe red fruit and cocoa with some creaminess and smoky notes and nice structure on the mid-palate with some fine, elegant tannins. The finish is very persistent and fresh.

Aromas intensos, frutas rojas maduras y cacaos, cremosidad y notas ahumadas, y un paso por boca con una buena estructura y unos taninos fino y elegantes. Final muy persistente y fresco.

They are harvested by hand and worked biodynamically to respect their identity as far as possible. They undergo alcoholic fermentation, malolactic fermentation and almost two years of ageing in 500-litre oak barrels. The wine reveals a beautiful deep ruby-red hue. On the nose, we find an elegant and luscious aromatic intensity. On the palate, we have seductive tannins accompanying a perfect and remarkable tertiary complexity, with notes of smoke, black truffle, spice and chocolate. This wine has a long finish and still has plenty of life ahead of it.

Sus cepas de tempranillo, plantadas en 1963 sobre suelos arenosos a 700 metros de altitud, en orientación este-oeste, son vendimiadas a mano y trabajadas en biodinámica para respetar al máximo su identidad. Fermentación, malo láctica y crianza, durante casi dos años, en barricas de roble de 500 litros. The Tempranillo and Garnacha vines, planted in alluvial soils, are surrounded by mountains, vegetation and nature on all sides. This wine is powerful, both on the nose and on the palate. It is opulent in terms of its aromas, structure and complexity, rich in nuances, but also smooth and fresh on the finish.

En Lalomba convergen dos legados, el de Ramon Bilbao, con sus más de ciento cincuenta años de historia, y el de una parcela con unas condiciones únicas. Una viña plantada en 1989 a más de setecientos metros de altitud, una finca de altura. De ahí sale un vino que refleja el paisaje e interpreta su origen.

Tempranillo y garnacha sobre suelos aluviales, rodeadas de monte, de vegetación y de naturaleza por doquier. Un vino con fuerza, tanto en nariz como en boca. Opulento en aroma, en estructura, en complejidad, consistente en matices, pero también suave y fresco en su final de boca.

We have hints of violets and ripe red fruit, with mineral and spicy overtones. We find a very good balance on the finish and a great capacity for ageing. This is a wine made with soul, the embodiment of talent and responsibility, meticulous care and high standards, a wine that is meant to excite.

Este vino escaso y prestigiado, procede de una parcela plantada en bancales que bordean la bodega y miran al castillo de Peñafiel. A la espera de que se afine aún más en botella, resaltan sus registros aromáticos, de gran complejidad. De racimos pequeños y piel gruesa, da un vino concentrado y aromático. Here he surprises us with this new wine, in which he wanted to showcase the estate's oldest vines. By making his winery's top wine from 50% Carignan and 50% Garnacha Peluda, he set himself a bold challenge.

This challenge has resulted in excellence in wine form with elegance, complexity, character and freshness, a guarantee of a good evolution in the bottle.

As is now customary at this time of year, we wanted to take a

deep dive into some of those wines that always bring us together around the dinner table to celebrate and raise a toast at Christmas time. Although we pop the corks on bottles of all kinds of wine at this time of the year, we do still tend to celebrate with bubbles! And fortunately sparkling wines also pair perfectly with food. Their natural carbon dioxide, often created by the second fermentation in the bottle, cleans and refreshes the palate, whatever the dish you are tucking in to, always creating a pairing of contrasts. This is why sparkling wines are perfect for serving at lunches and dinners throughout the festive season. They can be paired with all types of starters, fish, seafood and meats, as well as with the classic Spanish festive fare such as nougat and polvorones (a heavy, soft, and very crumbly kind of shortbread).

You will find hereafter our pick of sparkling wines of different quality labels, origins and varietals, but with a common thread, that of their production method, the Méthode Champenoise (Champagne or Traditional Method). Opinions differ as to who actually invented this second fermentation in bottle method. But what matters today is that, thanks to whoever it was, we can raise a toast with these exquisite wines and not just at Christmas, because bubbles are synonymous with parties, festivities and celebrations in general.

En esta época del año y como ya es de costumbre, es momento

de hablar de esos vinos que nos reúnen a una mesa para celebrar y brindar por las Navidades. Aunque en estas fechas se abren distintos vinos, a nosotros nos gusta celebrarlo con burbujas. Los vinos espumosos, combinan a la perfección con todo tipo de productos. Su carbónico natural, derivado de la segunda fermentación en botella, nos refresca de todo tipo de alimentos, haciendo siempre un maridaje de contraste.

Es por eso que es un producto ideal para las comidas y cenas de los últimos días del año. Para combinar con los entrantes en la forma que sea, pescados y mariscos, las carnes y también con los dulces típicos, turrones y polvorones.

En las letras que pueden leer a continuación, encontraran espumosos bajo distintos sellos de calidad. Así como también de distintos orígenes, elaborados con diferentes variedades de uva pero bajo un mismo hilo conductor. Este es el método de elaboración, el método champenoise.

Aunque hay distintas versiones sobre quien fue el primero que elaboró con este método de doble fermentación. Lo que a día de hoy importa es que, gracias a quien fuese, podemos celebrar no solo la Navidad, con este exquisito vino. Las burbujas son sinónimo de fiesta, festejo y sobretodo celebración.

Esperemos que disfruten de la selección que les adjuntamos, ya que en ella encontraran espumosos para todo tipo de bolsillos y sobretodo para todo tipo de celebraciones. ¡SALUT!

D.O. Cava / Sant Sadurní d´Anoia, Barcelona - Spain / P.V.P.: 9,99€ Chardonnay, Macabeo, Parellada, Pinot Noir / 12,00º Elyssia Rosé is a Cava made entirely from Pinot Noir. Its light structure makes it suitable for all types of food including cheeses, smoked meats, Iberian hams and seafood. On the nose, it is very fruity with intense aromas of ripe and stewed red fruit (raspberries redcurrants, redcurrants and cherries). The palate is flavoursome and luscious with a refreshing acidity and lovely ripe fruit flavours on a long finish.

Elyssia Rosado es un Cava compuesto en su totalidad de la uva Pinot Noir. Su ligera estructura aguanta todo tipo de alimentos, ya sean quesos, ahumados, embutidos o mariscos. Muy afrutado, con aromas intensos de frutas rojas (frambuesa, grosella y cereza), fruta madura y compota. Sensaciones afrutadas. Sabroso, goloso, con acidez refrescante y un final largo con sabores de frutas bien maduras.

CUVEE 150 ANIVRSARIO · CODORNÍU

D.O. Cava / Sant Sadurní d´Anoia, Barcelona - Spain www.codorniu.com / P.V.P.: 11,95€ / Xarel·lo, Parellada, Macabeu / 11,50º This cava, which is a tribute to the first cava produced by the winery in 1872, is a wine with fine bubbles resulting from a skilful second fermentation in the bottle. It hails from organic vineyards and is suitable for vegans. On the nose, we find aromas of white fruit such as Golden Delicious apples and Conference pears. On the palate, it is fleshy, refreshing and shows a lively freshness. Crack it open at the slighest excuse!

Este Cava, que es un claro homenaje al primero que la bodega elaboró en el año 1872.

De viñedos ecológicos y apto para veganos es un espumoso con burbuja fina derivada de una buena segunda fermentación en botella y en el podemos encontrar aromas a frutas blancas como la manzana Golden y la pera Conference. Es carnoso, refrescante y con viva frescura. Para abrirlo solo falta una pequeña excusa y ser disfrutado.

GRAN RESERVA BRUT NATURE 2018 · SUMARROCA

Cava / Subirats, Barcelona - Spain / www.sumarroca.es / P.V.P.: 16,30€ / Xarel·lo, Parellada, Macabeu / 12,00º If there is a winery in the Penedès region that is renowned for the quality of its cavas, that winery is Sumarroca. It works around 400 hectares of organically grown vines. The conversion to organic growing began in 2014 and culminated in CCPAE certification in 2018. This cava is crafted from the classic blend of Macabeo, Xarel-lo and Parellada grapes and undergoes 36 months of ageing. The winery has been producing this cava since 1990 and promoting it with the line "La finura del tiempo" (the finesse of time).

Si hay una bodega en el Penedés, que es reconocida por la calidad de los Cavas que elabora, esta es Sumarroca. Trabajan unas 400 hectáreas que han reconvertido en cultivo ecológico, este trabajo empezó en el año 2014 y en el 2018 obtuvieron el certificado CCPAE. Está elaborado con la mezcla clásica de uvas, Macabeo, Xarel·lo y Parellada y tiene una crianza de 36 meses. Desde la bodega lo denominan con el eslogan “La finura del tiempo”, que elaboran des del 1990.

AUS BRUANT 2020 · ALTA ALELLA

Cava / Alella, Barcelona - Spain / www.altaalella.wine / P.V.P.: 17,50€ 100% Pansa Blanca / 12,00ª If there is anyone in the wine industry in Spain to whom we are indebted, I think it would have to be Josep Maria Pujols Busquets. For decades, he has been one of the pioneering oenologists in the tireless pursuit of purity in winemaking.

The Aus Bruant is a Cava Brut Nature made from Pansa Blanca, a typical variety from the Alella area. Its bouquet includes clean aromas of flowers and white fruit. The palate is fresh and light with lovely smooth bubbles.

Si hay alguien en el sector del vino, en nuestro país, al que se le deba alguna cosa, este creo que tendría que ser Josep Maria Pujols Busquets, entre otros. Desde hace décadas es uno de los enólogos pioneros en la incasable búsqueda de lo puro en cuanto a elaboración se refiere.

El Aus Bruant es un Cava Brut Nature de Pansa Blanca, variedad típica de la zona de Alella, flores y frutas blancas en nariz, son parte de sus aromas limpios. La boca es fresca, ligera y con burbuja integrada.

RESERVA DE LA FAMILIA ROSÉ EDICIÓN ESPECIAL CENTENARIO 2018 JUVE & CAMPS If we were to state that Juvé Camps is one of the best wineries in the world of cava today, we would not be wrong! Our claim is supported by all the work they have been doing over the years as well as the fact that they are always at the cutting edge of progress and technology. The history of this winery begins more than 200 years ago when Joan Juvé Mir founded what today has become one of the most celebrated wineries in Spain.

In 1921, the founder's grandson, Joan, married Teresa Camps Ferrer and together they built an underground cellar in the family home in Sant Sadurní d'Anoia in order to create their first sparkling wine.

Today the business is located in Espiells in a magnificent winery, which wine lovers and members of the press can visit during the Magnificat wine fair organised by Juvé Camps and its distributor, Primeras Marcas, every two years. (Primeras Marcas is one of the biggest distributors in Spain boasting a portfolio of prestigious international wineries).

I am delighted to have this opportunity to write about one of the most iconic wines, not just of the winery, but of the wine world in general: the Reserva de la Familia. But in this case, the pleasure is twofold because we are reviewing the new Reserva de la Familia Rosé. This rosé cava is being launched to mark the winery's centenary. The original Reserva de la Familia, which we have all come to know and love, was actually launched 46 years ago!

This Brut Nature Rosé is crafted from Pinot Noir grapes from 50-year-old vines. It is a real treat with intense and pleasant aromas that are initially reminiscent of ripe red fruit and wild berries but are then followed by intense floral and patisserie notes.

The palate is smooth and seductive with sensual bubbles and a delicate mouthfeel.

This is one of the newest yet most remarkable cavas around today.

Si decimos que Juvé Camps es una de las mejores bodegas que existen en la actualidad en el mundo del Cava, no es ninguna mentira. Mi afirmación viene precedida del trabajo que hace años que están haciendo, a banda de que siempre están a la orden del día en cuanto a progreso y tecnología. La historia de esta bodega empezó hace más de doscientos años. Joan Juvé Mir fue el precursor de lo que a día de hoy es uno de los proyectos más laureados del panorama nacional.

En el año 1921, el nieto del fundador, de nombre Joan, contrajo matrimonio con Teresa Camps Ferrer y juntos habilitaron una bodega subterránea en la casa familiar de Sant Sadurní d'Anoia con el objetivo de elaborar su primer espumoso.

En la actualidad el proyecto está ubicado en Espiells en una magnifica bodega, que los amantes y prescriptores del vino pueden visitar cada dos años en motivo de la feria de vinos, Magnificat, que organizan con uno de sus compañeros de viaje, Primeras Marcas. Una de las distribuidoras más serias y con mejores bodegas internacionales que hay en el país.

Es un grato placer poder compartir estas letras con vosotros para hablaros de uno de sus productos más icónicos, no solo de la bodega si no del sector del vino en general.

El Reserva de la Familia, pero en este caso el placer es doble porque hablamos del nuevo Reserva Familia Rosado. Un Cava que ve la luz con motivo del centenario de la casa y que después de que el Reserva de la Familia que todos conocemos lo hiciera cuarenta y seis años antes.

Creado a partir de uvas Pinot Noir de viñas de más de cincuenta años.

Este Brut Nature es todo un gozo, sus aromas placenteros e intensos que nos recuerdan a las frutas rojas maduras y a las bayas silvestres, en primera instancia, le siguen unas notas florales y de pastelería intensas. En boca su entrada es seductora y de textura suave con sensual efervescencia y delicado paso de boca.

Uno de los últimos pero destacados Cavas que podemos encontrar en la actualidad.

Comtats de Barcelona - Valls d´Anoia Foix / Vilafranca del Penedès, Barcelona - Spain / www.mascaro.es / P.V.P.: 18,72€ / 100% Garnacha / 12,00º This Blanc de Noirs cava, derived from old Garnacha vines, is the latest addition to the Mascaró winery's range of cavas. 30 months’ ageing has given us a cava with clean aromas of red fruit interwoven with floral notes. The palate is dry, round and mouthfilling. It could best be described as vinous with a certain structure. Serve it as an aperitif with a few slices of strawberry popped in the glass.

Elaborado con Garnacha de viñedos viejos, este Cava blanc de noirs, es la última incorporación de las bodegas Mascaró en la gama de Cavas. Envejecido durante 30 meses, el resultado es un Cava de aromas limpios a frutas rojas y recuerdos florales.

En boca es rotundo, llena la boca y es seco a su paso. Lo podríamos definir como vinoso y con cierta estructura. Ideal como aperitivo acompañado con unas fresas troceadas dentro de la copa.

Rosé de Mar is a sparkling wine with delicate aromas of red berries and flowers (violets), complemented by essences of white stone fruit (nectarines and peaches). It would work well with some oily fish. What about giving it a whirl with a raw red tuna steak served with a red fruit ratatouille?

But this wine really shows its full potential on the palate. Here it is rounded with a certain freshness and above all elegant with a slight bitterness on the finish. After a short maceration, a high quality must is obtained. On the nose, this wine reveals aromas reminiscent of red fruit including cherries, strawberries and plums. On the palate, it is light and fresh with a lovely mouthfeel.

En boca su paso es ligero, fresco y con un buen tacto en boca.

In fact, for the first two wines in this collection, the grapes hailed from the same village, Verzenay. This time they come mainly from the Grand Cru of Tauxieres. Aromas of dried flowers, tobacco and mocha are followed by a fruity and refreshing palate.

Las siglas PN TX de Bollinger, se deben a las palabras Pinot Noir y Tauxieres. Este es el tercer PN de la saga y para quien no lo sepa, este champagne siempre se elabora íntegramente con la variedad de uva Pinot Noir. Lo que cambia en cada edición es el pueblo de donde proceden las uvas. De hecho los dos primeros vinos de esta colección, la uvas eran procedentes del mismo pueblo, de Verzenay. En esta ocasión provienen mayoritariamente del Grand Cru de Tauxieres.

Aromas a flores secas en nariz, así como tabaco y moca son el precursor de su paso de boca afrutado y refrescante.

In this case, the great year is 2014. Its blend is mainly composed of Pinot Noir from 19 of its crus, accompanied by some Chardonnay. The nose is fruity, precise and slightly iodised with a combination of cherry, lemon, quince and bergamot aromas. On the palate, we find fine, intense bubbles followed by a pleasant vinosity balanced by a delicate acidity.

Como su nombre indica La Grande Année de Bollinger solo sale al mercado cuando el factor cosecha es de gran calidad. En este caso hablamos de la del 2014. Compuesto mayoritariamente de Pinot Noir que proviene de 19 de sus crus, le acompaña la Chardonnay en su coupage. Nariz afrutada, precisa y ligeramente yodada. Los aromas a cereza y limón combinan con el membrillo y la bergamota. En boca encontramos una efervescencia fina e intensa, seguida de una vinosidad agradable y equilibrada por una acidez delicada.

The Gran Siècle is made by blending three vintages together, on this occasion the 2004, 2006 and 2007, using grapes that always originate in the Champagne House's Grand Cru vineyards. Crafted mostly from Chardonnay and accompanied by Pinot Noir, this wine is intense and complex, with slightly candied citrus fruit that gives way to aromas of pastries and toasted almonds combined with subtle notes of honey and gingerbread. The palate is fresh, delicate and nicely balanced.

Its Dom Ruinart is a textbook Blanc de Blancs. It is a pure Chardonnay in which floral and mineral impressions dominate the toasted and spicy notes of nutmeg, roasted hazelnuts and almonds with a touch of pungent coffee. On the palate, the respect for the Chardonnay grape has given us a magnificent and delicious wine with fresh notes interwoven candied and stewed white fruit.

Ruinart es la Maison mas antigua de la Champagne, fundada en 1729 por Nicolás Ruinart, aunque en la actualidad pertenece al grupo LVMH. Podemos afirmar que su Dom Ruinart es un Blanc de Blancs de libro. Chardonnay en estado puro donde las sensaciones florales y minerales dominan a las notas tostadas y especiadas de la nuez moscada, avellana y almendra tostadas, un toque de café, que recuerda a perfumes envolventes. En boca hay el respeto por la uva Chardonnay es delicioso y magnifico, notas frescas se envuelven con las de frutas blancas confitadas y en compota.

In this case, the champagne is from the 1999 vintage, in which there was a warm, dry and sunny summer with very hot temperatures in August, which helped the Pinot Noir grapes to ripen well.

Complementing the Pinot Noir, we have Chardonnay originating from the vineyards of Verzy and Chouilly and a small percentage of wines that have been aged in oak.

This wine’s beautiful bouquet offers up distinct perfumes of red fruit and spice (saffron) along with hints of cocoa, leather and nougat. On the palate, we have a velvety mouthfeel, candied and liquor-like notes and a dry nutty sensation.

Late Release, es la nomenclatura que acompaña a los Champagnes de la Maison Louis Roederer, de edición limitada y una de sus últimas apuestas en salir al mercado.

En este caso este Champagne de la añada1999, tuvo un verano soleado, cálido y seco, con un agosto de temperaturas extremas que beneficiaron a la maduración de la Pinot Noir. A parte de esta variedad, también encontramos la Chardonnay. Los racimos proceden de los pagos de Verzy y Chouilly, y este vino contiene un pequeño porcentaje de vinos madurados en roble.

Su hermoso bouquet nos da claros perfumes a fruta roja, especias como el azafrán y matices de cacao, cuero y turrón. En boca encontramos un tacto aterciopelado, notas confitadas, de licor y tacto secante que nos recuerdan a los frutos secos.

Ahora que se acercan las comidas navideñas y que las sobremesas se alargan, qué mejor que sorprender a nuestros comensales con maridajes de excepción? Aun asi, vayamos por partes ya que cada destilado tiene sus características.

The main issue when pairing chocolate with whisky is to find the right balance. If we take a very sweet chocolate, we will be losing it with the power of the whiskey, on the other hand, with a very bitter one, we will be "covering" the aromas of the spirit. In these cases it is recommended to start with a dark chocolate, about 70% cacao, and from there experiment to achieve the desired contrasts.

El tema principal para maridar chocolate con whisky es buscar el balance. Si tomamos un chocolate muy dulce, lo perderemos con la potencia del whisky, en cambio, con uno muy amargo, estaremos «tapando» los aromas del destilado. En estos casos es recomendable empezar por un chocolate negro, sobre el 70% de cacao y a partir de ahí ir jugando para conseguir los contrastes deseados.

• Single malt with dark chocolate truffles.

• Single malt con trufas de chocolate negro

• Bourbon and chocolate with oranges or nuts

• Bourbon con chocolate con naranja o frutos secos

• Peated whisky with salty chocolate and/or caramel (salted caramel type).

In this case it is best to go dark, with both rum and chocolate, as the spicy notes provided by the barrel will be the perfect match for a chocolate at 70%.

En este caso lo suyo es ir a los oscuros, tanto el ron como el chocolate, ya que las notas especiadas que aporta la barrica serán el componente perfecto para jugar con un chocolate al 70%.

As an example: Aged rum and chocolate with chili pepper or tropical fruits.

PAIRING CHOCOLATE AND TEQUILA: Tequila is the exception that confirms the rule (yes, there is always one), as up until now we have seen that "dark with dark" will work. In this case, we skip the reposado tequila and take a white tequila with notes of vanilla or nuts.

It will work perfectly with a 50% chocolate with hints of honey or caramel.

CHOCOLATE WITH GIN: It is very easy to pair a gin with chocolate, since the amount of botanicals that compose it allow us to look for similar notes in the chocolates we are going to pair.

Examples: • Gin with citrus notes and a dark chocolate with orange.

• Gin with herbaceous notes and milk chocolate with thyme.

There are many ways to combine and pair spirits and chocolate, but the most important thing, from my point of view, is to find the balance and try/play with the different options.

MARIDAR CHOCOLATE Y TEQUILA: El tequila es la excepción que confirma la regla (si, siempre hay una), ya que hasta ahora hemos visto que «oscuro con oscuro» funcionará. En este caso, obviamos el tequila reposado y tomamos un tequila blanco con notas de vainilla o frutos secos.

Hará las mil maravillas con un chocolate al 50% y notas de miel o caramelo.

CHOCOLATE CON GINEBRA: Es muy fácil maridar una ginebra con chocolate, ya que la cantidad de botánicos que la componen permiten buscar notas similares en los chocolates que vayamos a maridar.

Ejemplos: • Ginebra con notas cítricas y un chocolate negro con naranja • Ginebra con notas herbáceas y chocolate con leche y tomillo Hay muchas formas de combinar y maridar destilados y chocolate, pero lo mas importante, desde mi punto de vista, es buscar el equilibrio y probar/jugar con las distintas opciones.

Glenmorangie returns with a limited edition in its "Tales of" series, following the path of Tales of the Cake and Tales of the Winter. Dr. Bill Lumsden, creative director of the brand's whiskies, has been innovating for 30 years based on research and his own vital experiences.

What were once happy memories of cakes and the warmth of the campfire, have now made way to inspiration based in his walks in the woods. With this in mind, Glenmorangie has created a whisky in which the kilning (the drying process) of the barley has been conducted with different botanicals, following ancestral methods. In this case the botanicals chosen have been juniper berries, birch bark and heather flowers. The result is a single malt with aromas of pine and coriander, slightly smoky.

The palate is spicy, warm, with notes of eucalyptus, bitter orange, and hints of vanilla and anise. It has a long and persistent finish, slightly drying, the result of the subtle tannic sensation of the oak. It also reveals some acidic notes that would invite you to continue enjoying a good dram.

Glenmorangie vuelve con una edición limitada en su serie “Tale of”, siguiendo la estela del Tale of the Cake y el Tale of the Winter. El Dr. Bill Lumsden, director creativo de los whiskies de la marca, lleva 30 años innovando en base a la investigación y a sus propias vivencias. Lo que fueron en ediciones anteriores los recuerdos felices del pastel y la sensación de calidez en la hoguera, han dado paso a la inspiración surgida de sus paseos por el bosque. Con esto en mente, en Glenmorangie han creado un whisky en el que el kilning (el proceso de secado) de la cebada, se ha realizado con distintos botánicos, siguiendo métodos ancestrales.

En este caso los botánicos escogidos han sido bayas de enebro, corteza de abedul y flores de brezo. El resultado es un single malt con aromas de pino y cilantro, ligeramente ahumado. En boca es picante, cálido, con notas de eucalipto, naranja amarga, y recuerdos de vainilla y anís. Tiene un final largo y persistente, sutilmente secante, fruto de la sensación ligeramente tánica del roble, y revela unas notas ácidas que invitan a seguir disfrutando de una buena copa.

In the late 1990s a bottle of an old whisky from 1896 was auctioned and acquired by J&G Grant. Little did they know that this 19th century bottle, coming straight from the golden age of whisky, would mark a turning point in the company. It was then that Master Blender Gordon J. Doctor was commissioned to reproduce the taste and aromas of that bottle. Said and done, and after 3 years of testing, this limited edition of 3000 bottles was bottled under the name Highland Dream of Scotland. For Highland whisky lovers, I would recommend tasting it with an open mind, as it is by no means, the typical whisky of the region. It is a deluxe blended whisky that combines malted and unmalted barley, making it a worthy successor to the great whiskies of the 19th century. On the nose we find ripe fruit, walnuts, hazelnuts and phenolic notes, almost plastic, but they fade as it breathes. The palate is a festival, elegant, warm and quite dry. Fairly light-bodied, it surprises with its power. It presents notes of cereals that gradually give way to a finish with honey, orange and a hint of sherry.

El Highland Dream of Scotland es un whisky con una historia curiosa. A finales de los 90 se subastó una botella de un viejo whisky de 1896 y la adquirió J&G Grant. Poco sabían que esta botella del s. XIX, de la que fue la época dorada del whisky, marcaría un punto de inflexión en la empresa.

En ese momento se encargó al Master Blender Gordon J. Doctor el trabajo de reproducir las notas de esa botella.

Así pues, tras 3 años de pruebas, se envasó esta edición limitada de 3000 botellas con el nombre de Highland Dream of Scotland. A los amantes del whisky de los Highlands, les recomendaría catarlo con la mente abierta, ya que no es, ni mucho menos, el típico whisky de la zona. Es un blended deluxe que combina cebada malteada y sin maltear, lo que le convierte en un digno sucesor de los grandes whiskies del s. XIX. En nariz encontramos fruta madura, nueces, avellanas y notas fenólicas, casi plásticas, pero que van desvaneciéndose conforme va respirando. En boca es un festival, es elegante, cálido y bastante seco. De cuerpo bastante ligero, que sorprende por la potencia aromática que desprende. Presenta notas de cereales que poco a poco van dando paso a un final con miel, naranja y un deje de jerez.

PASADOR DE ORO PASIÓN · EL PASADOR DE ORO - RON DE GUATEMALA

It is not just a way of doing things or understanding life. It is also the fruit from which this infused rum, originally from Guatemala, is made.Unlike most infused rums, which start the process with white rum, in this case the starting point is El Pasador de Oro Gran Reserva rum. Thus, the initial base is a rich and complex Guatemalan rum, unctuous and creamy, which has finished its aging process in France, in Cognac barrels. Once the aging process is complete, chunks of passion fruit have been added to bring tropical and sweet aromas to this fantastic rum. In the glass it is golden, with somewhat ochre reflections. Its nose stands out, as soon as the bottle is opened, tropical and sweet aromas are perceived, very persistent. In the mouth it does not leave indifferent, tropical, passion fruit, slightly sweet, but well integrated. It also gives it a certain body, so the finish is long and honest with nose and mouth.

Pasión no es sólo el nombre elegido para este ron de El Pasador de Oro. No es sólo una forma de hacer las cosas o entender la vida. Es además la fruta con la que se hace este ron infusionado, originario de Guatemala. Al contrario que en la mayoría de los rones infusionados, que inician su proceso con ron blanco, en este caso se parte del ron El Pasador de Oro Gran Reserva. Así pues, la base inicial es un ron guatemalteco rico y complejo, untuoso y cremoso que ha acabado su proceso de envejecimiento en Francia, en barricas de Cognac. Una vez finalizado el añejamiento, se han añadido trocitos de maracuyá para aportar notas tropicales y dulces a este fantástico ron. En copa es dorado, con reflejos mas ocres. Destaca su nariz, pues nada mas destapar la botella ya se perciben aromas tropicales, dulces, muy persistente. En boca no deja indiferente, tropical, fruta de la pasión, ligeramente dulzón, pero bien integrado.

Además, le confiere cierto cuerpo, por lo que el final es largo y honesto con nariz y boca.
