THE MOST INTERNATIONAL ISSUE IN OUR SHORT HISTORY

LA EDICIÓN MÁS INTERNACIONAL DE NUESTRA CORTA HISTORIA

Several factors have contributed to making this 38th issue the most international of the last 10 years since the creation of Selectus Wines, which we will be celebrating in 2022. Firstly, we will be featuring a Champagne House with a very long history: Philipponnat. Then, we take you to a Californian winery with its origins in Australia, i.e., Penfolds, which is now introducing its first American vintages to the market, 20 years after it began its journey in North America. And lastly, we report on the highly colourful and original design for La Grande Dame 2012 which Veuve Clicquot has created in collaboration with a Japanese artist. So, as you can see, we have a "sui generis" mixture of different origins and continents, although, of course, Spanish wines and some of the wine-related events that have taken place in Spain over the last three months also feature in this "international" issue.

Pues la verdad es que se han dado una serie de circunstancias que nos han llevado a que esta edición 38 sea la más internacional de estos 10 años que vamos a cumplir en el 2022. Por un lado, les presentaremos una Maison de la Champagne, con mucha historia: Philipponnat. Por otro lado, les llevamos hasta una bodega californiana con orígenes en Australia, Penfolds, que presenta sus primeras añadas “yanquis” al mercado, después de 20 años desde que iniciaron su andadura en Norteamérica; y para acabar, les hablamos del original diseño que Veuve Clicquot ha realizado con la colaboración de una artista japonesa para presentar La Grande Damme 2012. Como ven, una mezcla “sui generis” de diferentes orígenes, continentes,… Si bien es verdad, que también los vinos españoles y algunos eventos que se han celebrado durante el último trimestre tienen su cabida en esta edición “internacional”.

Toda una vida dedicada al champagne y siempre relacionado con la Maison Roederer, Jean Baptiste Lécaillon está considerado uno de los mejores enólogos del mundo en lo que a elaborar vinos espumosos se refiere.

ENTREVISTA A JEAN-BAPTISTE LÉCAILLON, LOUIS ROEDERER

But who is Jean-Baptiste Lécaillon, what is his background and where did his interest in the world of wine, and champagne, in particular, stem from?

I grew up in France’s Champagne region, amidst families from the champagne world. Although my own family was more from the beer or spirit making industry, my early origins are in the Champagne region.

¿Quién es Jean-Baptiste Lécaillon? ¿Cuáles son sus orígenes? ¿De dónde le viene su interés por el mundo del vino, y en concreto del champagne?

Crecí en la región francesa de Champagne, en medio de familias del mundo del champán. Aunque mi propia familia era más del mundo de la cerveza o de los licores, mis orígenes se remontan a la región de Champagne.

Did you ever consider any other career when you were younger, or did you always want to be a winemaker?

Beer, malt, hops and distillation were my references until my family sold the family business to the Belgian Stella Artois company when I was young. I then turned my interest to the world of champagne, with which I was, of course, familiar from living in Reims. More bubbles!

I already knew that my work would involve Nature, the seasons and flavours... in fact, my Instagram signature is #InPursuitofTaste.

Cuando era joven, ¿en algún momento se planteó alguna otra opción profesional diferente a la de ser enólogo?

La cerveza, la malta, el lúpulo y la destilación fueron mis referencias hasta que mi familia vendió el negocio familiar a la empresa belga Stella Artois cuando yo era joven. Entonces me interesé por el mundo del champán, con el que conviví en Reims. Burbujas, más burbujas. Ya sabía que mi trabajo giraría en torno a la naturaleza, las estaciones y los sabores... de hecho, mi firma de Instagram es #InPursuitofTaste... en busca del sabor.

What is your training, and did anyone influence or play an important role in your decision to study oenology and work in champagne?

As well as my Champagne friends, particularly the Krug family, to whom my parents were also very close, the biggest and most important influence has been Burgundy: the trigger was a visit, at the age of 14, to the Dujac estate organised by Henri Krug and during which Jacques Seysses had us try his marvellous Clos de la Roche. I returned home fascinated by the concept of terroir and the refined perfumes of these wines and decided I would make wine.

¿Cuál fue su formación? ¿Alguien influyó o tuvo un papel importante en la decisión de estudiar enología y dedicarse al mundo del champagne?

Más allá de mis amigos de Champagne, especialmente la familia Krug, a la que mis padres también estaban muy unidos, la mayor y definitiva influencia fue la Borgoña: el detonante fue una visita, a los 14 años, organizada por Henri Krug a la finca de Dujac, donde Jacques Seysses nos hizo probar su maravilloso Clos de la Roche. Volví asombrado por la noción de terruño y los refinados perfumes de estos vinos y decidí empezar a hacer vino.

INTERVIEW WITH JEAN-BAPTISTE LÉCAILLON, LOUIS ROEDERER

If we have our facts right, your relationship with Roederer began in California, where you spent a year (1989-1990) as an assistant winemaker. You then moved to Tasmania in Australia, where you remained for just over 3 years (1990-1993) becoming general manager, before moving to Louis Roederer in France at the start of 1994. In France, you have held various positions (assistant director, director of vineyards and wine, cellar master) before finally moving into your current role, that of assistant general manager. How would you describe your career over the last 28 years at Roederer?

I have been working for Louis Roederer for over 32 years, with one of the greatest families in Champagne who has the rare and unique distinction of owning the finest terroirs in Champagne. It was a deliberate decision on my part: to trust in the great terroirs worked using state-of-the-art methods to craft the finest champagnes. The foundations were solid, the family trusted me and little by little we were able to bring out these great terroirs through a “renaissance viticulture” based on permaculture, regenerative viticulture, organic and biodynamic growing, massal selection... and all the best practices associated with high-end viticulture.

Let's get back to Roederer... When you returned to the Champagne region, what did you find? What were the main directions being pursued at the time? What was Roederer’s ethos? Have things changed a lot since then?

I joined at a crucial time... the effects of climate change were already being felt in 1987 and it was clear that we were going to have to adapt and change our practices if we were to effectively deal with this climate trend. It was also clear that we would have to focus very much on the vineyards because that is where we were going to be able to change things.

With your 27 years at Louis Roederer, you have certainly had time to leave your mark on its history... what will be your legacy for future generations and what has been the most important change that Louis Roederer has affected so far under your leadership?

When I was appointed cellar master in 1999, I asked to be in charge of the vineyards too, which was unusual in the Champagne region. My thinking was that it was in the vineyards where we would be able to craft the finest possible wines. Gradually, we changed our practices,

Si nuestras informaciones son correctas, empezó su relación con Roederer en California, donde estuvo un año (1989-1990), como Assistant Winemaker. Posteriormente se trasladó hasta Australia, donde estuvo, concretamente en Tasmania, durante algo más de 3 años (1990-1993), donde asumió el cargo de Director General, para finalmente, trasladarse, a principios de 1994, a la Maison Roederer, en Francia, donde ha pasado por diferentes posiciones (Adjunto a Dirección, Director de Viñedos y Vinos – Chef de Caves -, para finalmente llegar a la posición actual, la de Director General Adjunto. ¿Qué valoración hace de su trayectoria en estos casi 28 años en Roederer?

Llevo más de 32 años trabajando para Louis Roederer de la mano de una de las mayores familias de Champagne, que tiene la rara y única particularidad de poseer los más bellos terruños de Champagne. Fue una elección mía: confiar en los grandes terruños cultivados según las reglas del arte para poder elaborar los mejores vinos de Champagne. Los cimientos eran sólidos, la familia confió en mí y poco a poco fuimos desarrollando estos grandes terruños con una viticultura renacentista basada en la permacultura, la viticultura regenerativa, la orgánica, la biodinámica, las selecciones masales... y todas las prácticas vitícolas propias del más bello gesto del oficio que es la viticultura.

Volvamos a Roederer… Cuando llegó a la Champagne, ¿qué se encontró? ¿Cuáles eran las principales líneas de trabajo que existían entonces? ¿Cuál era la filosofía de la Maison? ¿Han cambiado mucho las cosas desde entonces?

Llegué en un momento crucial... los efectos del cambio climático ya se dejaban sentir en 1987 y estaba claro que íbamos a tener que adaptarnos y cambiar nuestras prácticas para hacer frente a esta tendencia climática.

También estaba claro que había que centrarse en el viñedo, porque ahí es donde íbamos a activar las palancas de adaptación.

Durante 27 años que lleva en la casa, seguro que ha tenido tiempo de dejar su sello para la historia de esta Maison… ¿qué legado dejará en el futuro y cuál ha sido el cambio más importante que se ha producido, hasta ahora, durante su dirección?

Cuando me nombraron jefe de las bodegas en 1999, pedí hacerme cargo de los viñedos, lo que no era habitual en Champagne. La idea era que fuera el viñedo el que nos permitiera hacer los mejores vinos posibles.

abandoning herbicides, encouraging deeper rooting and reviving our soils through regenerative practices, biodynamic compounds, adapting our pruning work, massal selection, replanting hedgerows and trees to further build the biodiversity of our terroirs.... We call it "Renaissance Viticulture" because it uses many practices taken from different schools of thought. Today, 50% of our vineyards, i.e. 120 hectares, are certified organic, making Louis Roederer's the biggest organic vineyard estate in Champagne.

We recently attended the virtual presentation of a major change at Roederer. Can you explain to our readers what this change is and why it has been made? Are there more such changes to come?

Climate change and the move to organic growing are resulting in a greater expression of the terroirs. We are probably returning to what Champagne used to produce in the 1960s. Back then, champagne was primarily a fine white wine and the bubbles added complexity and freshness. In the 70s/80s/90s, there was a shift towards a lighter, more acidic style of champagne to make it more suitable for "celebration" and aperitif drinking. Today, the raw material allows us to return to the historical ambition of producing fine wines that have a more ethereal style, with greater texture and substance.

When Louis Roederer presented this "new champagne", you mentioned a concept we had not heard of, the "Perpetual Reserve". What is it and what is its purpose?

The Perpetual Reserve was created in 2012 and it is a blend of the 2012, 2013, 2014, 2015 and 2016 vintages to which we add the new vintage each year. The Perpetual Reserve enables better integration of the wines, in terms of the overall texture, and also allows them to preserve their freshness when stored in large airtight vats.

The ultimate goal is to have a Perpetual Reserve that represents one-third of the blend, creating a new, more vinous and complex dimension in the end champagne.

If we have it right, Roederer is currently moving from high environmental growing to organic viticulture (you are already 50% certified). Is the intention to go 100% organic and are you also considering another type of viticulture?

We are moving forward based on our observations. We believe that organic certification is needed if we want to have more living soils and reduce the eco-toxicity in the water and groundwater. In addition, we are also experimenting with all the alternative techniques that will allow us to improve our performance on 3 sustainable development goals: increasing biodiversity and reducing our water and carbon footprint or even becoming water and carbon neutral.

Progresivamente, cambiamos nuestras prácticas abandonando los herbicidas, buscando raíces más profundas y regenerando nuestros suelos mediante prácticas regenerativas, composiciones biodinámicas, cambios en la poda, selecciones masivas, replantación de arbustos y árboles para reforzar la biodiversidad de nuestros terruños... Lo llamamos viticultura renacentista porque utilizaba muchas prácticas tomadas de diferentes escuelas. En la actualidad, el 50% de nuestros viñedos, es decir, 120 hectáreas, están certificados como ecológicos, lo que convierte a Louis Roederer en el mayor viñedo ecológico de Champagne.

Hace poco asistimos a la presentación virtual de un importante cambio en Roederer. ¿Puede explicar a nuestros lectores en qué consiste ese cambio, por qué se ha hecho, y con qué finalidad? ¿Habrá más cambios en el futuro?

El cambio de las prácticas hacia la agricultura ecológica y el cambio climático nos están llevando a una mayor expresión de los terruños. Probablemente estemos volviendo a lo que el champán producía antes de los años 60. En aquella época, el champán era sobre todo un gran vino blanco y las burbujas añadían complejidad y frescura. En los años 70/80/90 hubo un cambio de estilo hacia más ligereza, más acidez para hacer champagnes de "celebración" y de aperitivo. Hoy, los materiales nos permiten volver a la ambición histórica de producir grandes vinos con un estilo más eólico, con más textura y sustancia Cuando nos presentó este “nuevo producto”, nos habló de un concepto que, hasta ahora, no habíamos escuchado anteriormente: “Reserva Perpetua”. ¿Qué es y en qué consiste?

La Reserva Perpetua creada en 2012 es una mezcla de todas las añadas 2012, 2013, 2014, 2015 y 2016 a la que añadimos, cada año, la nueva añada. La Reserva Perpetua permite una mejor integración de los vinos en términos de textura y también permite mantenerlos en grandes cubas protegidas del oxígeno, con gran frescura. El objetivo final es tener una Reserva Perpetua que represente 1/3 de la mezcla, dando una nueva dimensión más vinosa y compleja.

Actualmente, si nuestra información es correcta, están pasando de una viticultura orgánica a ecológica (ya tienen el 50% certificado). ¿La idea es llegar al 100% de ecológico? ¿Se plantean otro tipo de viticultura?

Estamos progresando en función de nuestras observaciones. La certificación ecológica nos parece un requisito necesario para recuperar suelos más vivos y limitar al máximo la ecotoxicidad del agua y las capas freáticas. A partir de ahí, también estamos experimentando con todas las técnicas suaves que nos permiten mejorar los tres aspectos sostenibles: aumentar la biodiversidad y reducir o incluso neutralizar nuestras huellas hídricas y atmosféricas.

At the Collection 242 presentation, Roederer told us that 70% of the grapes you use to craft your champagnes come from your own vineyards and that the remaining 30% is sourced from winegrowers with whom you have long-term contracts.

Do you plan to increase the proportion of your own vineyards in the future and perhaps one day own all of them?

Every year we buy a few hectares to bolster our estate.

But it is a slow process due to French legislation. Since I joined Louis Roederer, we have gone from 180 hectares to almost 245.

What kind of relationship do you have with the winegrowers from whom you buy the grapes? Are they involved at all in the crafting of the champagnes or is it just a straight buyer-seller relationship?

We select the plots with the winegrowers and visit them three times a year to evaluate the practices and decide on the harvest dates. We vinify each plot separately and, over the winter, the winegrowers come to taste the results obtained from their grapes and compare them with the other plots. It is a process of continual exchange and collaboration that moves us closer to what we want every year.

Cristal is Roederer's pride and joy. What is so special about this champagne compared to that handful of other luxury champagnes that every wine drinker would love to try at least once in a lifetime?

Cristal is a selection of grapes from the finest chalk terroirs (“sols blancs”) of the great Champagne crus where we grow our own historic massal selections of Pinot Noir and Chardonnay. The vines whose grapes go into the Cristal blend are at least 20-25 years old, meaning that they have been able to take deep root in this chalk soil.

Cristal is therefore the ultimate signature of Champagne's inimitable whitest soils, providing the greatest finesse coupled with extraordinary concentration. I’d say that Cristal is probably the giant of Champagne.

The hardest part of crafting a champagne is to successfully create the coupages (blends). Do you have any "tricks" or recipes for crafting champagnes? How many base wines do you have to play around with when you create the wines?

What is the oldest you have stored away?

There is no "trick" other than finding the wines that go well together. The difficult thing is not to identify the "best" because that is easy and a blend of the best is often disappointing. So you want to stick with the individual plots. But there are wines, which are more discreet, whose quality is incredible because they have that special ability to transcend the “best” wines, creating a blend that is even better than the sum of its parts... These are the wines that experience and intuition enable us to pick out.

Climate change is a fact, and although Champagne is in a more northerly location than, say, Provence, you will certainly have noticed changes in recent years. What is different, climatologically speaking, in recent years compared to the end of the 20th century? What are the short, medium and long-term consequences of climate change for the Champagne region?

We are mainly seeing a change compared to the 60s/70s/80s/90s. If we go back further, we can see that the harvests were more mature. The vintages of 1898,

1899 and 1900 were much more mature than today's vintages. We are therefore returning to deeper and more complex wines, which is good news for quality. However, our practices will allow us to offset the predicted climate change until 2050. If climate change goes beyond that, it will be more difficult. So, if we want to avoid excessive warming, we must embark on major programmes to increase biodiversity and reduce our water and carbon footprint.

What alternatives or solutions to mitigate climate change and minimise the impact on the vineyards are being considered in the medium and long term?

The answer can be found in my answer above - acting quickly across the board to reinforce biodiversity and minimise our water and carbon footprint.

The vines can adapt by digging deeper roots, and we can manage the soil’s organic matter, pruning, foliage...

We have available many agronomic tools that we can use to adapt.

Let's move now to other slightly more sensitive subjects... The regulations in the Champagne A.O.C. are very stringent and some of them have been in force for many, many years. Don't you think it's time that some of these were modified and/or updated? One of the regulations that seem to us to be a bit obsolete is that the grape harvest has to start from a specific date and not before... What's your view of this?

Standards are obviously meant to evolve over time but always remain focused on product excellence. These rules are important as they guarantee the quality of our wines, but sometimes the slow bureaucratic process hampers the speed of change.

As for setting the harvest dates, I don't think this is totally obsolete. Most of the 15,000 winegrowers who produce Champagne grapes do not vinify the wines... sometimes they even have a second job and just sell all their grapes

La parte más complicada de elaborar un champagne, es realizar correctamente los coupages (assamblages). ¿Tiene algún “truco” o receta para elaborar los champagnes? ¿Con cuántos vinos base juegan a la hora de elaborar los vinos? ¿Cuál es el más antiguo que conservan?

No hay más "truco" que el de encontrar vinos que combinen con armonía. Lo difícil no es encontrar nunca los "mejores" porque es fácil y la mezcla de los mejores suele ser decepcionante. Entonces uno quiere quedarse con las parcelas. Pero hay vinos, más discretos, cuya calidad es increíble porque tienen la particularidad de trascender a los mejores vinos, dando una mezcla aún mejor que cada vino por separado... Estos son los vinos que la experiencia y la intuición nos permiten detectar.

Según nos explicó en la presentación del Collection 242, el 70% de la uva que utilizan para elaborar sus champagnes es de propiedad, y el 30% restante es comprada a viticultores con los que tienen contratos, entendemos multianuales. ¿Tienen pensado incrementar el porcentaje de viñedos propios en el futuro y llegar algún día a tener el 100% de viñedos en propiedad?

Cada año compramos algunas hectáreas para reforzar nuestra finca. Pero se trata de un proceso lento debido a la legislación francesa. Desde que me incorporé a Louis Roederer, hemos pasado de 180 hectáreas a casi 245.

El cambio climático es una evidencia, y si bien la Champagne está en una zona más al norte que, por ejemplo, la Provenza, seguramente también habrán notado cambios de unos años hacia aquí. ¿Qué hay de diferente, climatológicamente hablando, en estos últimos años respecto a finales del siglo XX? ¿Qué consecuencias tiene a corto, medio y largo plazo el cambio climático en la Champagne?

Nosotros constatamos sobre todo un cambio en comparación con los años 60/70/80/90. Si vamos más lejos, podemos ver que las cosechas eran más maduras.

Las cosechas de 1898, 1899 y 1900 fueron mucho más maduras que las actuales. Por lo tanto, estamos volviendo a vinos más profundos y complejos, lo que es una buena noticia en términos de calidad. Sin embargo, nuestras prácticas nos permitirán compensar hasta 2050. Si el cambio climático va más allá, será más difícil. Por ello, si queremos evitar un calentamiento excesivo, debemos emprender programas importantes para aumentar la biodiversidad y reducir nuestra huella hídrica y atmosférica.

¿Qué tipo de relación mantienen con los viticultores a los que les compran las uvas? ¿Participan de alguna manera a la hora de elaborar los champagnes o es una mera relación de compra/venta?

Seleccionamos las parcelas con ellos y las visitamos tres veces al año para evaluar las prácticas y elegir las fechas de cosecha. Vinificamos cada parcela por separado y, durante el invierno, los viticultores vienen a degustar el resultado obtenido de sus uvas y lo comparan con las otras parcelas. Es un proceso de intercambio y colaboración permanente que cada año nos acerca más a lo que queremos.

¿Qué alternativas o soluciones se plantean a medio y largo plazo para subsanar los cambios climáticos y que afecten mínimamente a los viñedos?

La respuesta está justo en la respuesta anterior.

Actuar rápidamente a todos los niveles para reforzar la biodiversidad y limitar nuestra huella hídrica y atmosférica.

Cristal es “la niña bonita” de Roederer. ¿Qué tiene de especial este champagne respecto al resto de champagnes del mundo que todos los consumidores quieren, al menos una vez en su vida, poder beberlo y disfrutarlo?

Cristal es una selección de los más bellos terruños de tiza (suelos blancos) de los grandes crus de champán en los que cultivamos nuestras propias selecciones masales históricas de Pinot noir y Chardonnay. Las cepas que entran en la mezcla de Cristal tienen al menos 20/25 años, lo que les permite arraigar profundamente en esta tiza. Por tanto, Cristal es la firma definitiva de los magníficos y únicos suelos más blancos de Champagne, que proporcionan la mayor finura acompañada de una extraordinaria concentración. En este sentido, Cristal es probablemente el gigante de Champagne.

Pasamos a otros temas un poco más “delicados”… Las normativas que existen en la A.O.C. Champagne son muy exigentes y, algunas de las normas, rigen desde hace muchísimos años. ¿No cree que sería hora de que algunas de dichas normativas fuesen modificadas y/o actualizadas?

Una de esas reglas que, particularmente, me parecen un poco obsoletas, es la de que la vendimia se ha de iniciar a partir de una fecha concreta y no antes… ¿Qué opinión tiene al respecto?

Es obvio que las normas están hechas para evolucionar con el tiempo y siempre apuntan a la excelencia del champán.

Estas normas son importantes para garantizar la calidad de nuestros vinos, pero a veces la lentitud administrativa frena el necesario proceso de adaptación.

El viñedo puede adaptarse buscando raíces más profundas y gestionando la materia orgánica del suelo, la poda, el follaje... tenemos muchas herramientas agronómicas para adaptarnos.

to the Champagne Houses who vinify them. Therefore, it is up to the Champagne Houses to set the quality targets in terms of maturity by setting the harvest dates in order to obtain the desired maturity and not harvest grapes that do not have the required maturity.

Other fine quality sparkling wines are produced around the world as well as champagne: Cava, Corpinnat, Franciacorta, etc. Given the Catalan origins of our publication, can we ask you what you think of Cava?

I have had the opportunity to try Cava on several occasions and I have been able to appreciate the work of a winemaker such as Jaume Gramona.

Let's move on to more personal matters... Over the years, you have received various awards from around the world. Which one is the most special to you, the one you were proudest to receive?

My wines have received many awards. Each award has been a real delight for my team and I. On a more personal level, I was very humbled by the 2015 Winemaker of the Year award that I received from the US magazine Wine Enthusiast, directed by Adam Strum.

You are someone who, because of their role, has to travel a lot and you must have rubbed shoulders with famous people from different walks of life (culture, cinema, sports, politics, etc.) at various events. What is the funniest thing that has happened to you over all these years?

That’s right, I have been lucky enough to meet some famous people. Every meeting is enriching and unique, so for me, it is impossible to tell you about one specific person.

And to wrap up this interview, a very general but important question... Where lies the future of champagne?

The future of champagne lies in a return to craftsmanship and a love of the land that will give us authentic and delicious wines.

En cuanto a las fechas de cosecha, no creo que estén totalmente obsoletas. De hecho, la mayoría de los 15.000 viticultores que producen uvas de Champagne no vinifican los vinos... a veces incluso tienen otro trabajo y venden todas sus uvas que son vinificadas por las casas. Por lo tanto, son las casas las que tienen que establecer la ambición cualitativa en términos de madurez fijando las fechas de la cosecha para alcanzar la madurez deseada y evitar que se recojan uvas con una madurez insuficiente.

Además del champagne, se elaboran más espumosos alrededor del mundo: Cava, Corpinnat, Franciacorta,… dados los orígenes de nuestra publicación (Catalunya), ¿qué opinión le merecen los Cavas?

He tenido la oportunidad de probarlos varias veces y he podido apreciar el trabajo de un enólogo como Jaume Gramona.

Pasemos a un terreno un poco más personal… Durante todos estos años, ha recibido diferentes reconocimientos en todo el mundo. ¿Cuál es el más especial y que más ilusión le ha hecho recibirlo?

Mis vinos han recibido muchos premios. Cada premio ha sido un verdadero placer para mí y mi equipo. A nivel personal, me conmovió mucho el premio al Enólogo del Año que en 2015 me otorgó la revista estadounidense Wine Enthusiast dirigida por Adam Strum.

Usted es una persona que, por su cargo, tiene que viajar mucho y habrá coincidido en diversos actos con personajes famosos y relevantes de diferentes ámbitos (cultura, cine, deportes, política,…). ¿Cuál es la anécdota más divertida que le ha ocurrido en estos años? Seguro que a nuestros lectores les encantará conocer un par de ellas…

Efectivamente, he tenido la suerte de conocer a gente famosa. Cada encuentro es enriquecedor y único. Me resulta imposible responder sobre una persona en concreto.

Y para finalizar la entrevista, una pregunta muy genérica… ¿Cuál es el futuro del champagne?

El futuro del champán pasa por volver a la artesanía y al amor a la tierra que dé lugar a vinos auténticos y deliciosos.

THE WINERY: PHILIPPONNAT

A TRADITION SINCE 1522 The Philipponnat family has been living in the Champagne region since the early 16th century. They are one of the original families of winegrowers and wine merchants in the area. They may even have been the first to practice these activities, but this cannot be proven.

According to Hozier's Armorial (1696), Apvril Le Philipponnat, captain of the Swiss canton of Basel, was the first person to live in the middle of the vineyard area. In the will of a certain Dom Jean Royer, the last regular abbot of the Abbey of Hautvillers, two centuries before Dom Pérignon, Apvril Le Philipponnat was cited as a landowner in Le Léon, between Ay and Dizy in 1522. The Philipponnat family still owns these Le Léon vineyards to this day.

Apvril Le Philipponnat married Marie d'Ambonnay in 1550 and died in Ay in 1580. Apvril and Marie are the ancestors of all the Philipponnats in Ay, and therefore, in a way, of Champagne itself. The Champagne House has named its new cuvée de prestige “Cuvée 1522” in homage to Apvril Le Philipponnat.

500 YEARS PARTICIPATING IN THE DAILY LIFE OF AY AND MAREUIL-SUR-AY The ancestors of the Philipponnat family pursued their commercial activity (buying vineyards, making and selling wine, etc.) for five centuries while also holding important local positions (councillors and county magistrates) in Ay, Epernay and several villages in the Champagne region.

Over the years, the Philipponnat family entered into many agreements/ partnerships with the leading wine traders of the day. Some of these have since disappeared (Malavois, Bertault, Lasnier) while others founded illustrious Champagne Houses: Roger (Pol Roger), Gosset, Billecart and even the Moët family.

Ay and Mareuil have always been considered to be the best Champagne crus, as they are the "preferred realm of the great Pinot Noirs of the southern side of the Montagne de Reims". There is a traditional saying that goes: "Ay le renom, Mareuil la qualité" (Ay the fame, Mareuil the quality). This motto appeared on the first bottles produced by Auguste and Pierre Philipponnat in Mareuil in the early 20th century.

It was their grandfather, Auguste (1824-1882) who laid the foundations of today's Philipponnat Champagne House.

He built up the business of his father-in-law, Auguste Tambourt-Degesne, under the Second Empire, starting with a move to Rue Saint Vincent in Ay, a few metres from the front of the church.

They later transferred the family business to Mareuil, having purchased the Albert Valet winery (itself founded in 1854) in 1910. Initially based on Rue Corbier, they then finally moved to the magnificent old cellars of the 18thcentury Chateau de Mareuil, home of today’s winery, in 1935. In that same year, they acquired the famous Clos des Goisses, the jewel in the Maison Philipponnat crown.

The Philipponnats de Champagne use a coat of arms registered in 1699 by Isaac Le Philipponnat, parliamentary adviser in Paris and the great-great-grandson of Apvril: "Red and gold chequerboard, a chief with three silver circles against a blue backdrop".

LA BODEGA: PHILIPPONNAT

TRADICIÓN HISTÓRICA DESDE 1522 Desde principios del siglo XVI, la familia Philipponnat, vive en Champagne, siendo una de las familias originales de viticultores y comerciantes de vino en esa zona, pudiendo ser la primera familia con estas características, cuestión está que no se puede afirmar con rotundidad.

Según la armadura de Hozier (1696), Apvril Le Philipponnat, capitán del cantón suizo de Basilea, fue el primero en vivir en el corazón de los viñedos. En 1522, fue incluido como propietario en Léon, entre Ay y Dizy, en el testamento de Dom Jean Royer, el último abad regular de la Abadía de Hautvillers, dos siglos antes que Dom Pérignon. Allí, en León, la familia Philipponnat todavía tiene viñedos en propiedad.

Se casó con Marie d’Ambonnay en 1550 y murió en Ay en 1580. Apvril y Marie son los antepasados ​​ de todos los Philipponnats de Ay, y por lo tanto de Champagne. En homenaje a Apvril Le Philipponnat, la nueva cuvée de prestigio de la Casa recibe el nombre de Cuvée 1522.

En Ay y Mareuil siempre han estado los mejores crus de la Champagne, siendo el “reino preferido de los grandes Pinot Noirs del lado sur de la Montagne de Reims”. Como dice el refrán tradicional: “Ay el renombre, Mareuil la calidad” (Ay le renom, Mareuil le Bon). Este lema está impreso en las primeras botellas que Auguste y Pierre Philipponnat produjeron en Mareuil a principios de este siglo.

Su abuelo, Auguste (1824-1882) fue quien sentó las bases de la moderna Casa de Philipponnat. Desarrolló el negocio de su suegro, Auguste Tambourt-Degesne, bajo el Segundo Imperio, comenzando con su instalación en la rue Saint Vincent en Ay, a pocos metros de la cabecera de la iglesia.

THE HEART OF CHAMPAGNE

TERRITORIO

Philipponnat is located in the historical and geographical heart of the great Champagne vineyards. Its grapes are sourced primarily from its own vineyards (17 hectares), all located in the Ay area, in the villages of Mareuil, Ay, Mutigny and Avenay. All of these locations are excellent, but two of them are exceptional and have certain historical importance: "Le Léon" in Ay and "Clos des Goisses" in Mareuil. Both, and in particular Clos des Goisses, have steep south-facing slopes, which allows the grapes to ripen perfectly. At Clos des Goisses, the incline of the slope can be as steep as 45%. The microclimate features very little wind as the vineyards are protected by the Gruguet ridge and also by the walls of the clos itself, making it the warmest terroir in the region. As a result it produces Champagne’s most intense wines.

The grapes are also sourced from other winegrowers who have been selling their harvests to Philipponnat for many, many years (some families for over 100 years).

They do this more out of tradition than to honour any contracts between the parties. They are all located in the Marne department, one of the best, if not the best, area in Champagne.

In all, two-thirds of the Philipponnat grapes come from Premier and Grand Crus: half are Pinot Noir, one third are Chardonnay and the remainder are Pinot Meunier. Few Champagne Houses have the advantage of being able to offer such high quality in their standard blends.

Together all these terroirs give us these Philipponnat's champagnes that are so intense and vinous yet remain delicate at the same time. This makes them excellent as an aperitif or for pairing with all types of cuisine.

They are, of course, blended wines. Each year Philipponnat produces between 40 and 50 different wines, each with a specific purpose, and uses these to compose the different champagnes. As their Pinot Noirs are so powerful, they have to be tempered somewhat by the Chardonnay, which is always used in a smaller proportion than the Pinot Noir (apart from the Blanc de Blancs of course). At Clos des Goisses, the different plots and varietals are also blended.

In the non-vintage champagnes, approximately 20% of Pinot Meunier is added to round out the wines. They also use 25% of reserve wines from previous years in their blends, adding maturity and complexity.

Lastly, only Pinot Noir and Chardonnay are used for the wines for cellar ageing and, in principle, no reserve wines are used. These wines are aged for 5 to 10 years or even longer, thus making the most of the time spent on the lees and the "autolysis" of the yeasts from the second fermentation.

For Philipponnat, quality is first and foremost found in the vineyards and is determined by the terroir, the vine’s quality and age, and by the most meticulous and natural winegrowing possible. Their winemaking methods are simply intended to transcribe this quality into its wines, from the vine to the glass. Simple winemaking, with little intervention and guided by a fundamental principle: not to alter the flavours and preserve the freshness and a certain liveliness in the wine.

This is Philipponnat's style, close to the terroir and the grape, always intense, well structured and well developed, in which the freshness balances the vinosity. It is a hallmark of Philipponnat whose practices reflect those of the other great Champagne Houses.

Philipponnat's strives not to be fashionable or to seek out celebrity endorsement, but to simply provide pleasure to those who truly appreciate fine wines.

For them, the important thing is being able to develop the flavours of their wines and ensure that they have a great capacity for cellar ageing. Their collection of old vintages, dating back to 1943, is proof of the excellent work carried out over the years. Many of these vintages are still available today (to a privileged few!).

Their production is small, but the Champagne House’s size enables it to guarantee wines of exceptional quality.

Their wide availability is "proof of the undeniable esteem in which Philipponnat holds both food and wine lovers and professionals because our only "marketing" is what’s inside the bottle".

En total, dos tercios de las uvas de la casa provienen de Premier y Grand crus: la mitad en Pinot Noir, un tercio en Chardonnay y el resto en Pinot Meunier. Pocas casas tienen la ventaja de tal calidad en sus mezclas estándar.

Y de todos estos terruños salen los champagnes de Philipponnat, intensos, vinosos, pero delicados, que tanto pueden tomarse en un aperitivo, como acompañar cualquier tipo de gastronomía.

Son vinos de coupage. Cada año se elaboran entre 40 y 50 vinos distintos, cada uno con un objetivo específico, antes de utilizarlos para componer las diferentes cuvées.

En el caso de los potentes Pinot Noirs que elaboran, tienen que moderarlos y equilibrarlos, lo cual consiguen a través del Chardonnay, que siempre va en menor proporción que la Pinot Noir (a excepción del Blanc de Blancs). En Clos des Goisses el ensamblaje se lleva a cabo también entre diferentes parcelas y tipos de cepas. En las cuvées que no son añada, se añade aproximadamente un 20% de Pinot Meunier para redondear los vinos. También utilizan para la elaboración de sus vinos un 25% de vinos de reserva de años anteriores, lo cual añade madurez y complejidad al vino.

Finalmente, en los vinos añejos solo se utilizan Pinot Noir y Chardonnay y, en principio, no se utilizan vinos de reserva.

Estos vinos tienen una crianza de entre 5 y 10 años o más, optimizando así el tiempo de permanencia sobre lías y la “autólisis” de las levaduras de la segunda fermentación.

Para Philipponnat, la calidad está ante todo en la vid y viene determinada por el terruño, la calidad de la cepa y su edad, y por un cuidado riguroso y lo más natural posible.

Sus métodos de vinificación pretenden simplemente transcribir esta cualidad en nuestros vinos, hasta la copa.

Enología sencilla, con poca intervención y guiada por un principio fundamental: no cambiar los sabores y conservar la frescura y cierta vivacidad del vino.

Este es el estilo de Philipponnat, cercano al terruño y la uva, siempre intenso, estructurado y desarrollado, donde el frescor equilibra la vinosidad. Es un sello de identidad de la casa, respetando lo que se hace en otras bodegas.

La gran preocupación de esta Maison no es estar de moda o asociarse con personajes mediáticos, sino simplemente dar placer a quienes verdaderamente admiran los vinos finos.

Para ellos, lo importante es poder desarrollar los sabores de sus vinos y darles una gran capacidad para envejecer correctamente. Su colección de añadas antiguas, que se remontan a 1943 son la prueba de el gran trabajo realizado durante años. Muchas de dichas añadas están disponibles… (quién pudiera degustar alguna de ellas…)

Sus producciones son limitadas, pero la dimensión de la Maison permite garantizar una calidad excepcional en sus vinos. Pero la amplia disponibilidad es “prueba de la innegable estima en la que Philipponnat tiene tanto a los amantes de la gastronomía como a los profesionales, porque nuestro único “marketing” está dentro de la botella”.

ESPUMOSOS Producers in the sparkling wine world have been obsessed with trying to disassociate the consumption of their products from the calendar. But before that, they had wanted to disassociate them from a meal’s order of service and the idea that sparkling wines should only be enjoyed with desserts. This practice therefore fell out of fashion. For more than a decade now, sparkling wines have also not only been consumed at Christmas. We now find them at various celebratory gatherings, served as a welcome drink or to accompany a whole meal. In the selection below, you will find our pick of sparkling wines of different origins, ranging from Cavas to Champagnes and Corpinnat.

Corpinnat, as you will recall, is a quality brand of sparkling wines produced in the heart of the Penedés region. This brand is the new kid on the block and is backed by some of the most important quality sparkling wine producers in the region.

Our selection includes new products as well as long-aged wines from wellknown producers, but they all share a common denominator: bubbles, the bubbles that make these wines unique, special and always so magical.

Bubbles that remind us of festivities, celebrations and good times. And if these are shared and enjoyed with our family and friends, then the emotion is quadrupled. I wish you a happy festive season in the company of your loved ones.

En el mundo de los vinos espumosos la gran obsesión de los productores fue mover del calendario su consumo. Pero anteriormente también se quiso mover del orden del servicio de una comida. Es decir, que el hecho de que los espumosos se tomaran con los postres pasase a una cosa antigua y descatalogada. Desde hace más de una década, los espumosos no solo se consumen por Navidad. Este hecho ha ido asociado a que los podemos encontrar en distintitas celebraciones para darnos la bienvenida así como para acompañar toda una comida. En la selección que van a leer a continuación encontrarán espumosos de distintos orígenes que van desde los Cavas, pasando por los Champagne así como los Corpinnat. Recordar que estos últimos son una marca de calidad de vinos espumosos elaborados en el corazón del Penedés. Esta marca ha sido la última en llegar y la componen los productores más importantes en cuanto a calidad de la zona.

También encontraran novedades o productos con largas crianzas de bodegas archiconocidas.

Pero en todos van a tener el mismo común denominador, las burbujas. Esas burbujas que hacen de estos vinos únicos, especiales y mágicos. The nose shows a nice aromatic range, in which we can pick out distinctive notes of Golden Delicious. The wine is very long over the palate where it reveals a hint of patisserie.

El resultado es una burbuja muy fina. Nariz con un buen abanico aromático del cual destacamos la manzana golden y un paso de boca persistente y con ligeras notas a pastelería.

Este cava está elaborado con las variedades pinot noir y chardonnay. Una parte de esta última variedad está pasada por barrica, que le confiere al producto final una ligera estructura y sensación de terciopelo en boca que lo hace selecto y sublime.

The Jean Leon winery is launching the 2015 vintage of its iconic Vinya La Scala Cabernet Sauvignon Gran Reserva (DO Penedès) with a label that pays tribute to Josep Guinovart (1927-2007), a Spanish painter most famous for his informalist or abstract expressionist work. The work of art used for the label’s illustration is entitled "Els ceps i la nit" ("The vines and the night"), and, with its twisted vines and green and ochre hues, conjures up the image of a moonlit vineyard.

La obra que ilustra la etiqueta en esta ocasión lleva por título “Els ceps i la nit” (“Las cepas y la noche”), una pintura que evoca un viñedo. Verdes y ocres, junto a unas cepas retorcidas nos llevan hasta un viñedo iluminado por la luna.

This wine is only produced in years when the harvest is of exceptional quality. Certified as a 'Vi de Finca' (the highest quality distinction awarded by the Generalitat de Catalunya), this wine comes from a small 8-hectare plot planted in 1963. The vines grow in clay-limestone soil at an altitude of 295 metres in the heart of the Penedès region. The 2015 vintage was characterised by a dry growing cycle with average temperatures and cool weather over the ripening season, which resulted in the grapes maturing slowly, achieving elegance and balance.

Este vino sólo se elabora aquellos años en los que la cosecha es excepcional. Certificado como ‘Vi de Finca’ (máxima distinción que otorga la Generalitat de Catalunya), este vino procede de una pequeña parcela de 8 hectáreas plantada en 1963 sobre suelos arcillosocalcáreos, a 295 metros de altitud, en el corazón del Penedès. La añada 2015 se caracterizó por un ciclo vegetativo seco y temperaturas normales, con un período de maduración frío, que hizo que las uvas maduraran lentamente, favoreciendo un buen equilibrio y elegancia.

The wine is aged in French oak barrels for a minimum of 24 months to which has been added at least 3 years bottle ageing. Only 2,209 bottles were produced of this vintage, available in the standard format as well as in an elegant limited-edition wooden case, making it the ideal gift for wine and art lovers this Christmas.

Durante un mínimo de 24 meses, el vino evoluciona en barricas de roble francés, a la que tenemos que añadir una crianza en botella de, al menos, 3 años. De esta añada, se han elaborado 12.209 botellas, que están disponibles en su formato standard así como en un elegante estuche de madera, de producción limitada, convirtiéndose en un regalo idóneo para los amantes del vino y del arte en estas fiestas navideñas.

In 1996, a work by Josep Guinovart, "De la tierra a la luz" (From land to light), was also featured on the label of a Jean Leon Vinya La Scala. That same year, the Cantabrian Jean Leon, whose original name was Ceferino Carrión, passed away. Owing to the wine’s historical importance and sentimental value, and because of its excellent development in the bottle, the winery has decided to repeat what it did in 1996 with the 2015 vintage, adapting the label's design to the brand's new image.

Jean Leon Vinya La Scala, named after Jean Leon's La Scala restaurant in Beverly Hills, was the first wine made in Spain primarily from Cabernet Sauvignon, in 1969.

Another milestone came when the 1975 vintage was selected for Ronald Reagan's official inauguration dinner as U.S. President in 1981.

Ya en el año 1996 una obra de Josep Guinovart (“De la tierra a la luz”) fue protagonista de la etiqueta de un Jean Leon Vinya La Scala. Ese mismo año, el cántabro Jean Leon, cuyo nombre original era Ceferino Carrión, falleció coincidiendo con la aparición de la etiqueta de Guinovart en aquella añada de Vinya La Scala. Por su significado histórico y valor personal, y por la excelente evolución del vino en botella, la bodega decidió relanzar la añada 1996 en 2015, adaptando el diseño de la etiqueta a la nueva imagen de la marca.

Jean Leon Vinya La Scala, que debe su nombre al restaurante que regentaba Jean Leon en Beverly Hills, fue el primer vino elaborado mayoritariamente con cabernet sauvignon en España en 1969. Otro hito lo marcó la añada 1975, que fue elegida para la cena oficial de investidura de Ronald Reagan como presidente de los Estados Unidos en 1981.

Desde la añada 1979, este icónico vino se ilustra con una obra de arte. Estos son los artistas y las obras que han ilustrado las botellas de Jean Leon Vinya La Scala desde entonces.

Los siete vinos de Bordeaux catados de Mouton Rothschild, Lafite Rothschild, Margaux, Latour, Petrus, Cheval Blanc y d'Yquem; así como los nueve vinos de Rioja de Martínez Lacuesta, Faustino I, Viña Albina, Marqués de Riscal, C.V.N.E., Viña Tondonia.

Luis Gutiérrez, the Robert Parker Wine Advocate taster for Spain, Argentina, Chile and Jura, led the event as master of ceremonies. A number of representatives from prestigious wineries were there, including Jean-Guillaume Prats (Château Lafite Rothschild), Telmo Rodríguez (Remelluri), María José López de Heredia (Viña Tondonia), Víctor Urrutia (CVNE), Álvaro Palacios, Sara Pérez (Venus La Universal and Mas Martinet) and Irene Alemany (Alemany i Corrió). Also taking part were some top sommeliers including Josep Roca and Audrey Doré (El Celler de Can Roca), William Kelley (Robert Parker taster for the Burgundy and Champagne regions), together with specialist journalists such as Victor de la Serna.

It was a tasting like no other, at which Luis Gutiérrez, the producers and other attendees were able to partake in a fascinating discussion and exchange of opinions. Audrey Doré had the pleasure of opening these rare wines from 1947 and all the attendees were thrilled at how well these exclusive wines tasted.

PEDRO XIMÉNEZ Stories differ as to how this grape variety came to be grown in Spain.

But two theories are the most popular and the origin of the grape is now generally agreed to be the Canary Islands. After this, there are the two versions, as we said. The first is that this grape left the Canary Islands to travel first to the Rhine area (Germany) and then down to the region of Andalusia. The person responsible for this triangular journey is said to have been a certain Peter Siemens, a German soldier who fought in the Flanders Tercios. This soldier also answered to the name of Charles V. The other version has it that Ximénez was the name of a Spanish cardinal, ambassador to the court of the emperor in Frankfurt.

Whatever the case may be, the fact remains that today Pedro Ximénez, or PX as it is often referred to as, is found today in Spain producing a wine with a mahogany hue, a certain density, and powerful and penetrating aromas reminiscent of caramel, coffee, dulce de leche, dried fruit and nuts, figs or dates, candied ginger and sweet spices. Its palate is usually long and deep and in many cases lingers for many seconds.

We tend to know it as a sweet wine but there are different examples of dry wines (cheerful fruity white wines) that are becoming increasingly popular.

Lastly, although we place its production in the south of Spain there are certain areas in Tarragona in Catalonia where it is produced as a single varietal or included in a blend of the region's white wines.

Distintas son las historias que van relacionadas con el comienzo del conreo de esta variedad de uva en la Península. Pero son dos las teorías que más cuerpo cogen. Lo que sí que queda claro, es que el origen de la uva se le atribuye a las Islas Canarias. Después de esta realidad hay dos versiones como apuntábamos. La primera seria que esta uva salió de Canarias para llegar a la zona del Rhin (Alemania) y después volver a la región de Andalucía. El responsable de este triangular viaje parece que fue Peter Siemens, soldado alemán que luchaba en los tercios de Flandes.

Ese soldado también respondía al nombre de Carlos V. Pero la otra versión nos dice que Ximénez era el nombre de un cardenal Español embajador de la corte del emperador de Francfurt.

Fuera como fuese, el hecho es que a día de hoy la Pedro Ximénez o PX como es más conocida, está entre nosotros y este fruto nos da un vino de color caoba, con cierta densidad, de aromas potentes y penetrantes que nos recuerdan al caramelo, café, dulce de leche, frutos secos, higos o dátiles, jengibre confitado y especias dulces. Su paso de boca es profundo, largo y en muchos casos persistente durante varios segundos.

Lo conocemos como vino dulce pero hay distintos ejemplos de vinos secos (blancos afrutados y joviales) que cada vez más están a la orden del día.

Para terminar os diré que aunque lo situemos en el sur hay distintas zonas de Tarragona en Cataluña en las que se elabora como monovarietal o para acompañar un coupage, en los vinos blancos de la región.

Chocolate can work well with it, but it’s much better if it is paired with a dessert that includes a hint of vanilla.

Despite possessing almost 300 grams of sugar, this PX is a fresh wine that leaves a refreshing aftertaste. It pairs nicely with blue cheeses and nut-based desserts.

Williams & Humbert ages its Pedro Ximénez wine for 20 years, during which time it develops sweet aromas of candied fruit, raisins and dates. Cloves, vanilla, raisins and toasted hazelnuts on the nose are only part of its aromatic range. On the palate, we find density and concentrated flavours. This is a perfect wine for pairing with all kinds of sweet pastries.

The Antique range by Fernando de Castilla is made up of wines that have undergone a longer ageing, i.e., VOS (20 years of ageing) or VORS (30 years of ageing). After the dehydration process when the sugars concentrate, the grapes are fermented. As they contain a large amount of sugar, the fermentation ends with almost 500 grams of sugar per litre of wine remaining. This wine is velvety on the palate and has a long finish.

MORE THAN 20 YEARS AGO, THE FAMOUS AUSTRALIAN WINERY CAME TO THE UNITED STATES IN SEARCH OF FERTILE GROUND ON WHICH TO MAKE WINE IN THE NORTHERN HEMISPHERE. AS A RESULT OF ALL ITS HARD WORK SINCE THAT TIME, PENFOLDS HAS PRODUCED ITS FIRST WINES USING GRAPES GROWN ON AMERICAN SOIL. At the turn of this century, the Penfolds winemakers began looking at everything that was going on in viticulture on the West Coast of the United States, and specifically in California. They tested a variety of wines and identified numerous different terroirs where they considered cultivating vines. Between 1998 and 1999, the first plantings were carried out selectively, using vine cuttings from some of Penfolds’ finest Australian vineyards. Today, these vineyards represent a milestone in the winery’s quest to make wines in a different hemisphere, far away from its origin, and it has done so “the Penfolds way.”

We asked Peter Gago, chief winemaker at Penfolds, why the winery chose California rather than another part of the world, such as Europe. “Our California project actually started in 1989, when the then-Penfolds Wine Pty Ltd acquired a 50% stake in the Geyser Peak Winery in Sonoma. At the time, the venture was only viewed as a moderate risk. After all, it was a leap across the Pacific Ocean but to a place not dissimilar to South Australia.

English is spoken there (along with a bit of Californian Spanish!). But Europe? Let’s talk about that later.”

The first wines produced at the Penfolds winery in California are intentionally and obviously high quality, and the flagship wine is Quantum Bin 98 Cabernet Sauvignon 2018. This is a blend of Cabernet Sauvignon (87%) from the best Napa Valley vineyards and Shiraz (13%) with a “South Australian pedigree.” We can classify Quantum 2018 as a “Wine of the World.” The other three wines are Bin 149 2018, an identical blend to Quantum, but for which the percentages are not specified on the tech sheet; Bin 704 2018, 100% Cabernet Sauvignon; and Bin 600, another blend based on Cabernet Sauvignon (78%) and Shiraz (22%).

Ante esta elección por parte de la bodega, hemos preguntado a Peter Gago, Chief Winemaker de Penfolds, ¿por qué escogieron California y no otra zona del mundo, como por ejemplo, Europa? “En realidad, nuestro proyecto de California comenzó en 1989, cuando la entonces Penfolds Wine Pty Ltd adquirió una participación de la mitad de la bodega Geyser Peak Winery en Sonoma. With these wines, they aim to prove that the Penfolds’ ethos goes beyond their vineyards, their country, their continent.

Our magazine's tasting panel is looking forward to tasting these New World wines and sharing its impressions of them with our readers in future issues.

Given the California winery’s “youth,” we asked Peter Gago if all the grapes they use to make wines come from their own vineyards, or if they have to buy grapes from other wineries. His answer: “We are fortunate enough to have access to some of the best vineyard areas across Napa Valley, plus the Penfolds vineyard in Camatta Hills near Paso Robles. Some of these vineyards were planted in 1998 and 1999 with cuttings from Penfolds Kalimna and Magill Estate Shiraz in South Australia. Our parent company’s other California wineries have some wonderful, well-established vineyards and terroirs in Rutherford, Oakville, Diamond Mountain, Howell Mountain ... We are grateful to share with them some wonderful plots of Grade

A grapes compatible with the style of the agreed vineyard locations. As for grapes from other winegrowers, we never say no to high-quality grapes ... if the producers are willing to sell or share them.”

For years, Penfolds winemakers have worked on the ground in California, from recently retired senior winemaker Steve Lienert (39 years at Penfolds), who was involved in some Californian harvests two decades ago, to current chief winemaker Peter Gago, senior winemaker Steph Dutton and winemaker Andrew Baldwin. The Penfolds Camatta Hills experimental vintages were made in 2006 and 2007; however, Penfolds never released these wines. For the past three years, it has sourced grapes from the best California vineyards to complement the Penfolds House Style and offer a wine of outstanding and distinctive quality.

A significant effort was made to ensure that Penfolds' winemaking techniques were adapted to the California environment and respectful of the product produced on U.S. soil with its tannic and terroir character. In this regard, for both viticulture and winemaking, the Penfolds winemakers have also benefited from the experience, input and support of the team on the ground in California.

But the Penfolds venture will surely not end with just the vineyards it currently owns in California. According to Peter Gago, the idea is to ​​ continue acquiring vineyards in the future: “We are actually doing that! Penfolds is always looking for high-quality grapes that align with our current and future wine styles. We are patient ...”

Also, going back now to the first question we asked Peter Gago, i.e., why California/the USA was selected for the Penfolds venture rather than another part of the world, he explained that they already have other projects in other locations around the globe: “We’re doing them, and we have them. Two years ago, we launched three champagnes worldwide with our friends at Champagne Thiénot - two single-vineyard champagnes - a Thiénot X Penfolds Avize Blanc de Blancs 2012 and a Thiénot X Penfolds Aÿ Blanc de Noirs 2012; and a Thiénot X Penfolds Chardonnay/Pinot Noir Cuvée 2012. We are currently launching a NV Thiénot X Penfolds Rosé champagne. In early 2022, we’ll move to our 2013 single-vineyard champagnes! It’s very exciting, and a world first: Champagnes Thiénot + Penfolds working together, in situ, in Champagne!” Penfolds also recently embarked on a venture in Bordeaux. “It’s early days, but we hope to launch our first two new wines next year.”

Hace dos años lanzamos a nivel mundial tres Champagnes junto con nuestros amigos de Champagne Thiénot - dos Champagnes de un solo viñedo - un Thiénot X Penfolds Avize Blanc de Blancs 2012 y un Thiénot X Penfolds Aÿ Blanc de Noirs 2012; y un Thiénot X Penfolds Chardonnay / Pinot Noir Cuvée de 2012. Actualmente se está lanzando un N/V Thiénot X Penfolds Rosé Champagne. ¡A principios de 2022 nos trasladaremos a nuestros Champagnes de viñedo único de 2013! Muy emocionante, y una primicia mundial: ¡colaborar para crear estos Champagnes Thiénot X Penfolds in situ, en Champagne!”. Penfolds también se ha embarcado recientemente en un proyecto en Burdeos.

NUEVA AÑADA DEL ICONO DE RIOJA: CASTILLO YGAY DE MARQUÉS DE MURRIETA SIGUE HACIENDO HISTORIA Luciano Murrieta was a man ahead of his time. Only he was able to see the infinite potential of the wines from Rioja. In 1852, applying the techniques he learned in Bordeaux, he created the wine that everyone still talks about today: Castillo Ygay Gran Reserva Especial, the jewel in the Marqués de Murrieta crown and a gold standard for quality wines from Rioja.

The Marqués de Murrieta not only founded the famous winery (originally called Château Ygay because it was created in the image of the Bordeaux châteaux), but he also established the current quality standards, made clear his intention of achieving an international presence for his wines and created one of the most enduring wine labels of all times.

Solo él supo ver las infinitas posibilidades que tenían los vinos de Rioja y, aplicando las técnicas aprendidas en Burdeos, creó en 1852 el vino del que todo el mundo habla: Castillo Ygay Gran Reserva Especial, la joya de la corona de Marqués de Murrieta y un referente de calidad de los vinos de Rioja.

El Marqués de Murrieta no solo fundó la afamada bodega, originalmente bautizada Château Ygay por estar creada a imagen y semejanza de los château bordeleses, sino que estableció los estándares de calidad actuales, dejó clara la vocación internacional de sus vinos y creó una de las etiquetas que más ha perdurado en el tiempo.

170 years later, thanks to the tireless work of the Cebrián-Sagarriga family and their team, Marqués de Murrieta has become a model of Spanish quality and craftsmanship. Its current president, Vicente D. Cebrián-Sagarriga, has been at the winery's helm for 25 years. Through his passion, leadership and dedication, he has ensured that its wines are among the very finest in the world and distributed in over 100 countries. Having taken over from their parents, whom they remember with great affection and gratitude every day, Vicente and his sister, Cristina, have managed to successfully modernise the wines and the production facilities, while remaining true to their origins and roots.

Castillo Ygay represents the dependability and prestige of Marqués de Murrieta, showing the way things should be done, i.e., with patience. María Vargas, along with her technical team, only produces Castillo Ygay in exceptional years. It is crafted from Tempranillo and Mazuelo from the La Plana vineyard, a claylimestone plot planted in 1950, located on the highest part of the Finca Ygay estate where the finest quality grapes are grown. After its vinification, the wine is carefully aged for almost 8 years, during which time it evolves with a remarkable ageing capacity.

After the acclaimed 2010 vintage, which reached the uncontested number 1 spot in the world’s most prestigious wine ranking, Marqués de Murrieta has just released its new 2011 vintage, a Castillo Ygay that stands on its own merits and is bound to make its mark.

Su actual presidente, Vicente D. Cebrián-Sagarriga, lleva 25 años al frente de la bodega y ha logrado con su pasión, liderazgo y entrega que su proyecto tenga presencia en más de 100 países y se encuentre a la cabeza de los mejores vinos del mundo. Junto con su hermana, Cristina, recogieron el testigo de sus padres, a quienes cada día recuerdan con cariño y gratitud, y han sabido llevar a cabo una potente renovación de los vinos y de sus instalaciones, manteniéndose al mismo tiempo fieles a sus raíces y a sus orígenes.

Tras su elaboración, se mima durante más de 8 años en los que evoluciona con una capacidad de envejecimiento absolutamente única.

Both from affluent families, the childhoods of these women were governed by the strict rules of the Bourgeoisie (respectively, of the 19th and 20th centuries). But these women pushed back against this confined environment, with deep-held ideas that were forward-looking for their times: their ultimate goal was to achieve their independence and conquer the world.

In 1831, Madame Clicquot made this objective clear in a letter: “I want to be the biggest name in New York as well as in St Petersburg.” And Yayoi Kusama has made a similar statement: “I promised myself that I would conquer New York and make my name in the world through my passion for the arts and my creative energy.” Two women, two times, two destinies ... yet with a common goal: to conquer the world and be independent.

And circumstances, or perhaps it was fate, has led Veuve Clicquot and Yayoi Kusama to unite in spreading cheer to the world with a unique, colourful creation to celebrate the launch of the new 2012 vintage of La Grande Dame. The original creation by the Japanese artist is a vibrant tribute to the “Grande Dame” of Champagne herself, Madame Clicquot.

It is not the first time the legacies of these two women have come together, because, in 2006, Kusama created an original portrait of Madame Clicquot in her famous polka dots motif.

Ambas damas nacieron en un entorno de vida acomodado y con una infancia estricta en cuanto a las normas de la burguesía de sus respectivas épocas (siglos XIX y XX respectivamente). Pero ellas, con ideas firmes y avanzadas a sus tiempos, contrarrestaban ese rigor con el objetivo final de obtener su independencia y conquistar el mundo. Madame Clicquot, en 1831, a través de una carta manuscrita dejó manifiesto este objetivo: “Deseo que mi marca ocupe el primer lugar tanto en Nueva York como en San Petersburgo”. Y por su parte, Yayoi Kusama, se pronunció, en este mismo sentido, de la siguiente forma: “Me he prometido a mí misma conquistar Nueva York y crear mi lugar en el mundo gracias a mi pasión por el arte y mi energía creativa”. Dos mujeres, dos épocas, dos destinos,… pero un objetivo común: conquistar el mundo y ser independientes.

Y el destino, las circunstancias,…, han hecho que Veuve Cliquot y Yayoi Kusama se hayan encontrado para enviar al mundo un mensaje de alegría con una creación única y colorida que celebra el lanzamiento del nuevo vintage de La Grande Dame 2012. La creación original de la artista japonesa es un vibrante tributo a “la grande dame” de la Champagne, Madame Clicquot.

No es la primera vez que ambas damas se encuentran, ya que en el año 2006, la japonesa dió vida a un retrato original de Madame Clicquot, usando su famoso patrón de lunares.

On this occasion, Yayoi Kusama has designed the bottle and gift box for La Grande Dame 2012 using her most iconic symbols. The opulent flower that wraps around the bottle symbolises life, love and peace, as well as paying homage to nature – something close to both women’s hearts. The polka dots are transformed into the precious bubbles of this illustrious champagne.

La Grande Dame is all about the excellence of the emblematic Pinot Noir. Madame Clicquot believed that this grape variety had “the range of expression and potential to create the best champagne”. The Pinot Noir has been the hallmark of the Veuve Clicquot style ever since. It is a delicate grape whose expression varies depending on the area where it is grown and the weather conditions over the year. It is a varietal that surprises us year after year.

In fact, La Grande Dame is not made every year. The decision of whether or not to produce it is based on the Pinot Noir’s quality. The 2012 vintage currently on the market uses the finest grapes from Grand Cru vineyards with historic Veuve Clicquot plots in Aÿ in the Grande Vallée de la Marne, and Verzenay, Verzy, Ambonnay and Bouzy in the Montagne de Reims.

Yayoi Kusama, en esta ocasión, ha diseñado la botella y el estuche de La Grande Dame 2012 utilizando símbolos icónicos de la Maison. La opulenta flor que envuelve la botella simboliza la vida, el amor y la paz, además de un tributo a la naturaleza, aspecto éste que ambas mujeres ponen en valor. Los lunares se transforman en las burbujas de champagne que conforman este exclusivo champagne.

El ADN de La Grande Dame se centra en la excelencia de la Pinot Noir. Madame Clicquot creía que esta variedad de uva tenía “el rango de expresión y potencial para crear el mejor champagne”. Desde entonces, la Pinot Noir ha sido y es el sello distintivo del estilo de Veuve Clicquot. Es una uva delicada que se expresa de forma diferente en función del terruño en el que evoluciona y de las condiciones climáticas de cada año, siendo una de las variedades que no deja de sorprender año tras año.

De hecho, no todos los años se produce La Grande Dame. Dependiendo de la calidad de la Pinot Noir, se determinará si se elabora o no. En este caso, la añada 2012 sale al mercado con las mejores uvas provenientes de Grands Crus de parcelas históricas de Veuve Clicquot, entre las que destacan las de Ay, en la Grande Vallée de la Marne, y las de Verzenay, Verzy, Ambonnay y Bouzy en la Montagne de Reims.

According to cellar master, Didier Mariotti, after selection “the magic of blending achieves the balance and harmony” that makes La Grande Dame 2012 a delicious champagne, not just today, but also for years to come.

Didier Mariotti has commented that “La Grande Dame 2012 is a wine that is both precise and delicate. It is playful, lively and laughing. This new vintage offers a strong minerality created by the Pinot Noir (90%), balanced with the freshness of the blend (+10% Chardonnay). Its cellar-ageing potential is immense”.

Después de la selección, y según palabras del Chef de Cave, Didier Mariotti, “la magia del coupage logra la armonía y el equilibrio” que hacen de La Grande Dame 2012 una delicia de champagne, no sólo a día de hoy, sino también en los próximos años.

Para Didier Mariotti “La Grande Dame 2012 es un vino preciso y delicado, a la par que animado y risueño. Esta nueva añada ofrece una fuerte mineralidad aportada por la Pinot Noir (90%), balanceada por el equilibrio de la mezcla (+10% de Chardonnay). Su potencial de guarda es inmenso”.

The Penedès brand will be strengthened based on values such as sustainability, organic growing, winegrowing and winemaking heritage, local area, native grape varieties and the excellence of its wines.

La D.O. Penedés presentó en el mes de Noviembre los proyectos y el plan estratégico que llevará a cabo desde este mismo año hasta el 2030. Fortalecer la marca Penedés consolidando valores como la sostenibilidad, la ecología, la herencia vitivinícola, el territorio, las variedades autóctonas y la excelencia de sus vinos.

DO Penedès has set itself several ambitious objectives for the next 10 years. After a year of in-depth analysis of the sector, in collaboration with everyone involved in the DO Penedès (winegrowers, wineries, specialist retailers and consumers), conclusions have been drawn and strategic directions laid out on a number of issues.

- Protecting the local area. The 2025 harvest is set to be 100% organic and there will be a push for the grapes from these vineyards to be used only to make DO Penedès wines.

- Promoting the winegrowing and winemaking heritage of Penedès. The use of recovered varieties and the production of minimal-intervention wines are to be developed.

Varios y atrevidos objetivos los que se ha marcado la D.O. Penedés para los próximos 10 años. Después de un año de análisis profundo del sector, y contando con todos los que componen la D.O. Penedés (viticultores, bodegas, restauradores, tiendas especializadas y consumidores) han sacado conclusiones y se han marcado unas líneas estratégicas que comprenden diferentes puntos.

- Protección del territorio. La vendimia del 2025 debe ser 100% ecológica y se impulsará el destino único de la uva de un viñedo que se destine a elaborar vinos D.O. Penedés.

- Potenciación del patrimonio vitivinícola del Penedés.

Potenciar variedades recuperadas e incorporar vinos de mínima intervención.

- Working towards DO Penedès becoming a D.O. Calificada (DOCa).

- Trabajar para que la D.O. Penedés pueda llegar a ser una D.O. Calificada (DOC).

- New categories: “Vi de Mas” and “Gran a Vi de Mas” in Catalan (Vino de Masía and Gran Vino de Masía in Spanish). These would be the top levels of the DO Penedès quality system. Wines will need to meet a series of stringent requirements to achieve this coveted status: they can only come from organically-grown, hand-harvested vines that are over 10 years old; the vineyards of origin must be on a ‘mas’ estate (referring to the historic concept of a Catalan farmhouse with land around it); the estate must be more than 100 years old and have high historic and landscape value; the wines must have undergone long ageing and have been bottled in a Burgundy-style bottle; and they must have achieved a high level of international recognition. To certify compliance with these rules, a committee of experts will be created and a registry kept constantly updated.

- Nuevas categorías: “Vi de Mas” y “Gran Vi de Mas” (Vino de Masía y Gran Vino de Masía). Serían los vinos más Top de la D.O. Penedés. Y para certificar que se cumplen estos requisitos, se creará un comité de expertos y se llevará a cabo un registro que se actualizará permanentemente.

- Promoting the identity and uniqueness of the 10 subzones of DO Penedès. A new category called “Vi de Zona” (Vino de Zona in Spanish) is to be announced, to build awareness of the 10 constituent areas of DO Penedès: Alts d’Ancosa, Conca del Foix, Costers de l’Anoia, Costers del Lavernó, Costers del Montmell, Marina del Garraf, Massís del Garraf, Muntanyes d’Ordal, Turons de Vilafranca and Vall Bitlles-Anoia.

All of these originate from micro-plots of old vineyards in Rioja Alavesa. This is a “plural” wine in terms of vintages, varietals and vinification methods, which involved concrete eggs and barrels of different sizes. White flowers are very evident on the nose, followed by plums and toasted aromas on the palate. This distinctive wine offers us a clean smoothness, perfect acidity and a very long finish.

An elegant dark bottle houses a wine that is part white and part red because it is, in fact, a "blanc de rouges". Two varieties, two souls, two personalities, two production processes, but the same ageing and a single objective, our enjoyment.

On the nose, we are delighted by the wine’s red fruit notes, and on the palate, we are captivated by its delicacy and gentle fragrance. We are treated to an enveloping lime citrus character, a lovely roundness on the palate, a silky mouthfeel and a long finish. This is a wine with an exquisite presentation that is within everyone's reach, very accessible and very easy in the glass.

En este caso, las tres añadas son 2017, 2018 y 2019 y con las variedades Viura, Malvasía, Tempranillo Blanco y Maturana Blanca. Todas ellas procedentes de micro parcelas en altura de viñedos viejos de Rioja Alavesa. Un vino plural en cuanto a añadas, a variedades y a formas de vinificar, combinando el huevo de hormigón y la barrica de distinta formatos. Flores blancas muy presentes en nariz, ciruela claudia en boca, y tostados en paladar. Limpia untuosidad, perfecta acidez y muy largo recuerdo para un vino de lo más singular.

Una elegante botella oscura insinúa este vino que es mitad blanco y mitad, blanco de tintos. Dos variedades, dos almas, dos personalidades, dos elaboraciones, una misma crianza y un solo objetivo, que lo disfrutemos.

En nariz nos deleitamos con sus notas afrutadas, también rojas, y en boca nos invade su delicadeza y suave fragancia. Con un cítrico de lima muy envolvente, y una buena redondez en paladar, nos deja la boca sedosa y con un largo recuerdo. Un vino al alcance de todos, muy accesible, muy fácil en copa, y con una presentación más que exquisita.

The palate is fresh, citrusy, with light tropical notes and an aroma of freshly cut grass on the end palate.

Nice intensity, broad palate and long finish. This is an organically-grown wine that represents varietal purity in a region steeped in centuries of winemaking history.

From the new Alma Carraovejas venture, we have this wine with the freshness of its 1,706-metre altitude. Its grapes grow on ancestral bush-trained vines, planted in the red clay soils of Fuentenebro, home to varietals such as Tempranillo, Albillo, Monastrell and Garnacha. This is a new take on the Ribera del Duero, working conscientiously with old vineyards with an eye to the future. It is the second vintage of this rosé, fermented in a 600-litre French oak vat and left to rest on its lees for over six months. As a result, we have bags of red fruit, fullness on the palate and a touch of salinity. A surprising wine.

This wine conjures up the vision of a garden of roses thanks to its very special grapes grown in the Doña Margarita vineyard (the vineyard on the Sonoma Coast owned by Marimar Torres), which was named in homage to the Torres family's matriarch. With its wonderful colour, fragrance, presence and texture, this is a wine of fragrant flowers, first love, moonlit confessions, summer secrets, whispers and compliments. It is a smooth, sensual and discreet wine that is seductive and enjoyable, from start to finish.

Its aromas of ripe cherries, wild strawberries and lush red berries are balanced by a fresh palate created by a fine and delicate Pinot Noir with plenty of fruit and persistence. Its fragrance fills the glass and slowly inebriates us. Its light hue reflects the current trend for pale-coloured rosés.

This is a rosé wine of character that pairs well with appetisers and seafood, as well as rice dishes, pasta and light main courses. It even works nicely with spicy food or a red fruit dessert.

El nuevo proyecto de Alma Carraovejas llega con el frescor de una altitud de 1706 metros, procedente de un viñedo ancestral en vaso, plantado sobre los suelos rojos arcillosos de Fuentenebro, donde la Tempranillo convive con Albillo, Monastrell y Garnacha, entre otras. Una nueva interpretación de la Ribera del Duero, trabajando de forma consciente con viñedos de antaño, sin dejar de proyectar el futuro. Segunda añada de este rosado, fermentado en roble francés de seiscientos litros y con lías más de seis meses.

Un rosado untuoso, con mucha fruta roja fresca, una boca llena y con algo de salinidad. Un vino que sorprende.

Este vino evoca un jardín de rosas gracias a sus particulares uvas que proceden del viñedo Doña Margarita, el viñedo propiedad de Marimar Torres en la Costa de Sonoma, en homenaje a la matriarca de la familia.

Por su color, por su fragancia, por su presencia y por su textura, se puede decir que es el vino de las flores aromáticas, del amor primerizo, de las confidencias a la luz de la luna, de los secretos de verano, de los susurros y de los halagos. Un vino suave, sensual y discreto, a la vez que embaucador y placentero, desde principio a fin.

Sus aromas de cerezas maduras, fresas silvestres y moras rojas golosas se equilibran con el paladar fresco de un Pinot Noir fino y delicado, sublime y amoroso, afrutado y persistente. Su fragancia nos llena la copa y nos va embriagando lentamente, y su leve capa de color sigue la tendencia de los rosados pálidos.

Un vino rosado con personalidad, que combina tanto con aperitivos y marisco, como con arroces, pastas y platos principales suaves, incluso harmoniza bien con comidas picantes, así como con un postre de frutos rojos.

There is a sprig of almond blossom on the label and a lovely, elegant Grenache and Carignan liquid inside the bottle.

This is a very harmonious native red wine, with some really nice tannin and a personality characterised by length, silkiness and lusciousness on the palate.

La primera cosecha de un nuevo vino de la familia Torres en el Priorat. Un vino, como todos los que llevan el sello de la casa, que habla de paisaje, que cuida el entorno y accesible a la mayoría de los consumidores, tanto por precio como por paladar. De las terrazas al pie de los Montes Obarenes, las más meridionales estribaciones de la Cordillera Cantábrica, nace este expresivo tempranillo, bello y profundo. La riqueza de su aroma y sabores nos lleva a los bosques que crecen en la zona, intercalados por los cortados rocosos de su paisaje protegido. Las hayas, las encinas, los alcornoques, los arces, junto con los enebros, madroños, tomillos y espliegos son algunos de los aromas que trasfiere este vino de finca y de paisaje, silvestre y atlántico, fiel a su esencia y a su entorno.

Dalmau es un nombre vinculado en cuerpo y alma al vino. Una pasión que hizo que la familia cambiara Madrid por La Rioja. Y fue aquí donde se gestó este gran vino, un vino contemporáneo y atrevido, un vino que representó una nueva era en Murrieta, un vino concentrado, potente y con mucha fruta como elemento básico. En este 2017 se expresa además con más elegancia, más sutilidad, más frescor, con menos cabernet que otras añadas, sólo un 10%, y con más graciano, otro 10%. Si consiguen un Dalmau 2017 no tengan prisa en abrirlo, el tiempo juega a su favor.

This fruity, floral, deep and ripe Garnacha comes from La Casa Gran del Siurana, from the La Fredat estate to be precise, 40 hectares of terraced vineyards on Llicorella soil. Its mineral character, together with the smooth tannins and lively freshness, lends this wine a good structure, great body and a fantastic balance. This is perhaps not surprising, as its skilful fermentation on the stalks has contributed to this.

It retains its luscious character even after 14 months of ageing in French oak barrels. We have aromas of ripe red fruit, vanilla and smoke on the palate followed by a long finish.

Behind this interesting venture is the García Montaña family, Mariano García’s sons, Mauro and San Roman.

In this, their fourth vintage and the weather really put them to the test but once again they passed with flying colours. The vineyards are located at an altitude of almost 1,000 metres planted in clay-limestone and gravel soils and are made up of a combination of plots of vines between 30 and 100 years of age. Theirs is a personal interpretation of the Tempranillo and they are intent on respectful winegrowing, single plot vinification, and the use of indigenous yeasts.

This is a concentrated red wine with black fruit and toasted notes. On the palate, it shows nice tannin and a lovely clean acidity.

De La Casa Gran del Siurana, concretamente de la finca La Fredat, cuarenta hectáreas construidas en terrazas sobre suelo de llicorella, nace esta Garnacha afrutada y floral, profunda y madura. Su carácter mineral junto con la suave tanicidad y vivo frescor lo dotan de una buena estructura, gran cuerpo, y fantástico equilibrio. No es de extrañar, pues su perfecta y acurada fermentación con raspón contribuye a ello. También su golosidad se mantiene muy presente, incluso después de catorce meses de crianza en barricas de roble francés.

Aromas de fruta roja madura, vainilla y ahumados en boca, con un largo recuerdo.

Detrás de este interesante proyecto se insinúan los apellidos de García Montaña, hijos de Mariano García (Mauro y San Roman). En esta, su cuarta añada, la climatología los puso a prueba y una vez más la superaron con creces. Viñedos a casi mil metros de altitud sobre suelos arcillo-calcáreos y de gravas, y una combinación de parcelas con cepas de entre treinta y cien años.

Con una personal interpretación del tempranillo, apuestan por una agricultura respetuosa, vinificación por parcelas, y levaduras autóctonas.

Un tinto concentrado, de fruta negra y notas tostadas. En boca muestra buena tanicidad y franca acidez.

It is a wine derived from a gentle extraction, from oak combined with concrete and stainless steel, and from an ageing process that makes use of foudres and barrels in a quest to preserve the magnificent fruit and ensure that the wine enjoys a long life. The subtlety on the nose, elegance on the palate and well-balanced finish make this a very fine wine indeed.

The Alma Carraovejas group are an excellent example of high standards, high quality and perseverance, and with this new venture, they are not only growing as winemakers, but also adding value to the vineyards of Spain and, especially, of the region.

Una nueva forma de observar el viñedo, de interpretarlo y de elaborar los vinos en Ribera del Duero. Un vino elaborado a partir de la suave extracción, de una madera que se combina con hormigón y acero inoxidable, y de una crianza con fudres y barricas que busca preservar la magnífica fruta y dotarle de larga vida. At the pinnacle of the Ramon Bilbao winery's quality scale, we find Mirto, derived from the oldest vines, almost 100 years old. This is a very early vintage with fermentation and ageing in French oak that have resulted in a deep, powerful and complex wine. It reveals aromatic intensity, ripe black fruit smoothed by the oak, liqueur cherries, spices and vanilla. On the palate, there are balsamic and roasted notes which, together with the wine’s concentration and nice structure, marry perfectly with dark chocolate. This Tempranillo is uniquely poised to stand the test of time.

This wine comes from only 8 hectares of vines planted in clay-limestone soils almost 60 years ago. Organically grown and aged for two years in French oak barrels, this Cabernet Sauvignon is the expression of the best vintages.

Menthol notes, varietal aromas of roasted pepper, and hints of smoke. On the palate, the wine is full-bodied, well-structured, elegant and complex. Its lovely tannin and essential acidity combine perfectly to give the wine some muscle and great persistence. This wine will pair well with any number of dishes made from slow-cooked good quality produce. Enjoy now or better still, in a few years.

En la cúspide de los vinos de calidad de la bodega Ramon Bilbao encontramos Mirto, elaborado con las cepas más viejas, casi centenarias. Una añada muy temprana, una fermentación y crianza en roble francés, nos dan un vino profundo, potente y complejo. Su intensidad aromática, fruta negra madura acariciada por la madera, cerezas licorosas, especies y vainilla. En boca aparecen balsámicos y los torrefactos que, junto con la concentración y su buena estructura, maridan a la perfección con el chocolate negro. Una Tempranillo con una gran capacidad de aguantar el paso de los años.

Se trata de tan solo ocho hectáreas plantadas hace casi sesenta años sobre suelo arcilloso-calcáreo. De agricultura ecológica, y dos años de crianza en barricas francesas, este Cabernet Sauvignon es la expresión de las mejores añadas.

Notas mentoladas, los aromas varietales del pimiento asado, y los ahumados. En boca es pletórico, estructurado, elegante y complejo. Su buena tanicidad y necesaria acidez combinan a la perfección para crear su firme músculo y larga persistencia.

Un sinfín de platos con buena materia prima y largas cocciones serán sus compañeros ideales en la mesa. Para disfrutar ahora o mejor aún, en unos años.

This winery, which is tucked away in a gorgeous setting with spectacular views, has undergone a series of transformations in recent years and the result is a facility that is both historic yet resolutely modern.

They offer various tours (check out their website) but you will find they are all worthwhile! The professionalism of the staff who relate the history of the winery, the pride they show when they talk about their vineyards and the naturalness with which they express themselves and answer the questions we curious visitors ask, make this visit a great experience for adults and children alike (we visited with our 11 and 13-year-old children).

The new winery is modern and elegant with an understated design. It is very spacious, equipped with the most advanced technology and has a large capacity to house the excellent wines which come from its vineyards.

In one part of the tour they relate the history of the winery, and here we find documents, photographs and tools from bygone eras. It is fascinating to learn the story of Marqués de Murrieta from its origins to the present.

Today, the Cebrián family owns and runs the winery with the greatest skill. Indeed one of their wines even received a coveted 100 Parker points!

Our tour was rounded off by a very special tasting, four wines from the Marqués de Murrieta and Pazo Barrantes wineries with 4 superb gastronomic pairings.

Si un día se acercan a La Rioja, les invitamos a que visiten la bodega Marqués de Murrieta. En un entorno privilegiado, y con unas vistas espectaculares, esta bodega ha sufrido una serie de transformaciones en los últimos años que, como resultado, dan una bodega histórica y moderna a la vez.

Tienen diferentes opciones de visita (consultar la web) pero con cualquiera de ellas seguro que saldrán satisfechos. La profesionalidad de las personas que explican la historia de la bodega, de cómo hablan con orgullo de sus viñedos y la naturalidad con la que se expresan y atienden a las preguntas que hacemos los visitantes, hacen de esta visita una bonita experiencia, tanto para mayores como para pequeños (nosotros estuvimos con nuestros hijos de 11 y 13 años).

Existe una parte del recorrido en el que se explica la historia de la bodega, en la que encontraremos documentos, fotografías y utensilios de épocas pasadas.

Es muy interesante escuchar la historia de los orígenes de Marqués de Murrieta hasta llegar a nuestros días en los que la familia Cebrián es dueña y dirigen la bodega de forma magistral (recordemos que recientemente uno de sus vinos ha recibido los buscadísimos 100 puntos Parker).

La nueva bodega es moderna, elegante y sobria a la vez.

Cuenta con las tecnologías más avanzadas, es muy amplia y con una gran capacidad para albergar los excelentes vinos que salen de sus viñedos.

BODEGAS BILBAÍNAS CELEBRA SUS 120 AÑOS DE HISTORIA This winery, a pioneer in the Rioja D.O.Ca, celebrated its anniversary with a variety of events: the launch of Viña Zaco, its first single-vineyard wine; inauguration of the Sala Santiago Ugarte, which will be a research centre and facility in which to carry out special vinification processes; and a presentation for the book La Estación de Los Sueños , in which Federico Oldenburg (a contributor to Selectus Wines) relates the story of the winery.

Esta bodega, pionera en la D.O.Ca Rioja, celebró su aniversario con diferentes e importantes acontecimientos: lanzamiento de su primer vino de viñedo singular, Viña Zaco; inauguración de la Sala Santiago Ugarte, que será un centro de investigación y un lugar para realizar vinificaciones especiales; presentación del libro “La estación de los sueños” en el que se recupera la historia de la bodega bajo el relato de Federico Oldenburg (colaborador de Selectus Wines).

BODEGAS BILBAÍNAS CELEBRA SUS 120 AÑOS DE HISTORIA

It was two very busy days for the group of journalists who were invited to Haro to celebrate the 120th anniversary of Bodegas Bilbaínas. Today, this winery is the largest vineyard owner in Haro, the heart of the Rioja D.O.Ca. It possesses close to 225 hectares of vineyards, 3,400 m2 of underground calados (maze-like cellars for storing wine) and already produces some iconic wines from the region, such as Viña Pomal and La Vicalanda. With perfect quality as its absolute objective, the winery crafts wines from grapes grown in its vineyards in Haro, where it employs sustainable practices to protect the environment.

Viña Zaco, released to the market for the first time to commemorate this 120th anniversary, is the first single-vineyard wine from Haro.

This is the highest level of quality for wines in the Rioja D.O.Ca. Zaco is the winery’s oldest historic vineyard. The grapes grown in the stonier part of the vineyard already go into the crafting of Alto de la Caseta, one of the most exceptional reds in the Viña Pomal range. Now, these same grapes are being used to create Viña Zaco (100% Tempranillo), an intense cherry-red wine with violet reflections.

On the nose, this wine reveals notes of spicy liquorice, dark berries, and floral hints; it is soft on entry to the palate which is very wellstructured and well-balanced.

Dos jornadas muy apretadas para el grupo de periodistas que nos dimos cita en Haro para celebrar el 120 aniversario de Bodegas Bilbaínas. Esta bodega es, a día de hoy, la mayor propietaria de viñedos de Haro, cuna de la D.O. Ca. Rioja. Suma cerca de 225 hectáreas de viña, 3.400 m2 de calados subterráneos (laberínticas cavas para conservar el vino) y vinos que ya son un emblema de la región, como Viña Pomal o La Vicalanda. Con la máxima calidad como premisa, elabora sus vinos con uva procedente de sus viñedos en Haro, donde desarrolla prácticas sostenibles para preservar el entorno.

Viña Zaco, lanzado por primera vez al mercado en la conmemoración de este 120 aniversario, se convierte en el primer vino de viñedo singular de Haro. Esta es la máxima categoría de calidad de vinos de la D.O.Ca Rioja. Zaco es la viña histórica más antigua de la bodega.

De su zona más pedregosa, procede la uva con la que se elabora Alto de la Caseta, uno de los tintos más excepcionales de la gama de Viña Pomal. De sus uvas nace ahora el nuevo Viña Zaco, un tinto (100% tempranillo) de intenso rojo cereza con reflejos violáceos.

En nariz, tiene notas especiadas de regaliz y frutos negros y matices florales y, en boca, es de entrada suave, bien estructurado y muy equilibrado.

Bodegas Bilbaínas wanted to ensure its history was recorded for posterity and therefore asked Federico Oldenburg, a journalist and wine writer, to write a book relating the story of the winery. In La Estación de Los Sueños, Oldenburg takes us through the history of the winery from its origins in 1859 to the present day. We highly recommend this interesting read if you want to learn more about the history of Bodegas Bilbaínas.

Bodegas Bilbaínas quería dejar un recuerdo para la historia, y encargó a Federico Oldenburg, periodista y escritor especializado en el mundo del vino, un libro para relatar la historia de la bodega. En ‘La estación de los sueños’, Oldenburg repasa la trayectoria de la bodega desde su origen, en 1859, hasta nuestros días. Les recomendamos la lectura de este interesante libro para conocer la historia de Bodegas Bilbaínas.

The crowning moment of this anniversary celebration was an aperitif in the Sala Ugarte, which was attended by members of the wine trade, representatives from Bodegas Bilbaínas, friends from other wineries in the Estación district and from further afield, as well as officials from La Rioja and the Haro Town council. This was followed by a luncheon to mark this important event for Bodegas Bilbaínas.

La conmemoración de este aniversario tuvo su momento estelar con la celebración de un aperitivo en la Sala Ugarte, a la que asistieron representantes del sector, amigos de otras bodegas del Barrio de la Estación y de otros lugares, así como políticos de La Rioja y del Ayuntamiento de Haro.

Posteriormente se celebró una comida para celebrar este importante evento de Bodegas Bilbaínas.
