In 2017, our 5th anniversary year, we have been nominated for Best Spanish Wine Publication in the International Wine Challenge Merchant Awards and by the time you read this editorial, we will either know, or about to know, the final result (the Awards are announced on 16 October). We are proud of this nomination and we would like to thank all our contributors and partners, past and present, for their commitment to our magazine.

This nomination would not have been possible without them. Whatever the outcome, we will continue to work with the same rigour and humility that have gotten us to where we are today. We promise.

From what we are hearing in most wine regions, it appears that the grape harvest will be smaller than in previous years (fewer bottles), but perhaps of a significantly higher quality. Will the price of the wine go up? We’ll have to wait and see...

Por lo que se comenta en la mayoría de las zonas, parece ser que será una cosecha con menos volumen que en otros años (menos botellas), pero quizás de una calidad sensiblemente superior a otras vendimias. ¿Hará esto que suba el precio de los vinos? OUTSIDERS PRESERVING A LEGACY Discomfort is a powerful creative tool and a means to test your limits.

In the wine world, discomfort can take the form of arriving in a far off place and, rather than sticking to what you know, immersing yourself in a whole new culture, understanding its practices and taking on the challenge of preserving the tradition, even though it is not your own.

Two friends, Telmo Rodríguez and Pablo Eguzkiza, took this “route of discomfort” as a means to creating special wines, two men passionate about winemaking, who fate decided to bring together to create singularity in liquid form. Accustomed to traveling around Spain in search of unique spots, the duo strives to learn from the different local cultures, to bottle and preserve them. One of these trips, to Falcoeira de Santa Cruz, in Valdeorras (Galicia) in the mid-90s, was later to be the start of a “story of the impossible” that has been continuing for 15 years. The “discomfort” of replanting vineyards abandoned 8 or 9 decades ago, the difficulty of adapting the vineyards (difficult to work due to their secluded location) to human intervention, the minuscule production of just over 3,000 kilos of grapes per year from three hectares of vines planted in slate soil. But their determination to revive the culture of the land was greater than the vintages that they produced but never released.

The duo never gave up, they revived the traditional style of production, swimming against the current, putting their faith in the traditional native grape of an area in the Galicia region that had already become used to the non-native varieties after the devastation wrought by Phylloxera at the turn of the last century. In 2012, after countless tests, which resulted in a number of unlabelled bottles from 5 vintages that would never see the market, they finally said yes. The first and, for now, only vintage of Falcoeira produced 900 bottles of red wine (originally intended to be white) that reflect the traditional production methods and the hard toil in the “uncomfortable” vineyards. The difficult thing is not so much to make wine, but to extract the soul of the terroir and to do so using traditional techniques, preserving an entire wine culture, despite it not being your own, and thereby creating a legacy. When they first arrive in a new area they study the traditional methods, not wishing to depart from tradition or an artisanal view of winemaking. They go to the area in question, they listen to the terroir and try to understand it. They also strive to understand the surrounding environment and create an understanding of equals. Falcoeira is a coplantation of native varieties including Mencia, Sousón and Godello, brought together to preserve an identity, a beginning, an origin. The nose shows the maturity of southfacing vineyards, jammy red and black fruit, with additional complexity imparted by the slate soil. The palate is immense, the type that does not leave you indifferent and distinguishes a good wine from a great wine.

En el mundo del vino, la incomodidad puede ser sinónimo de aterrizar en lugares lejanos y no conformarse con lo que uno sabe, sino adentrarse en toda una cultura, entender su técnica y asumir el reto de preservar la tradición pese a no ser la de uno mismo.

El camino de la incomodidad como vía para embotellar vinos especiales es la historia de dos amigos, Telmo Rodríguez y Pablo Eguzkiza, apasionados de nuestro mundo, personas que el destino ha decidido unir para crear singularidad en estado líquido. Con la costumbre de viajar por la península en busca de parajes singulares por bandera, ambos trabajan para aprender de culturas ajenas, embotellarlas y preservarlas. Durante nada menos que 15 años uno de esos viajes, realizado a mediados de los años 90 a Falcoeira de Santa Cruz, en Valdeorras (Galicia), fue la historia de un imposible. La incomodidad de replantar una viña abandonada 8 o 9 décadas atrás, la dificultad de adaptar al ser humano a una viña difícil de trabajar por lo recóndito del paraje, la nimia producción -de poco más de 3.000 kilos de uva al año- en aquellas tres hectáreas de suelos de pizarra. Pero la pasión por recuperar la cultura de aquella tierra fue más fuerte que las añadas que no vieron el mercado.

No cejaron en su empeño, recuperaron el estilo ancestral de elaboración, nadaron contracorriente apostando por la uva de aquel paraje en una zona que ya se estaba acostumbrando a las variedades no autóctonas tras la devastación que produjo la filoxera en Galicia en a principios de del siglo pasado.

Después de innumerables pruebas, de cuyos esfuerzos guardamos botellas de 5 añadas, sin etiquetar, que nunca verán el mercado, en 2012 dijeron que sí. La primera y, por el momento, única añada de Falcoeira produjo 900 botellas que encierran el estilo ancestral de elaboración y el esfuerzo de las viñas incómodas, en unos vinos tintos que en un primer momento se plantearon blancos. Lo difícil no es hacer vino, sino extraer el alma de la tierra y hacerlo con técnicas ancestrales, resguardando toda una cultura, a pesar de no ser la suya, una cultura del vino y un legado.

Cuando van a un sitio nuevo indagan las técnicas tradicionales, no les gusta romper las tradiciones, del concepto artesano de hacer vinos. Primero van al paraje, lo entienden, se rebajan a escuchar, comprender. Son generosos por comprender el entorno y después iniciar un entendimiento a iguales. Falcoeira es una co plantacion de variedades autóctonas como Mencia, Sousón, Godello Tiinto y otras, unidas para salvaguardar una identidad, un comienzo, un origen… Una nariz que enseña la madurez de una orientación sur, confitura de fruta roja y negra, con la complejidad extra de un suelo de pizarra, para terminar con una boca inmensa, de las que no deja indiferente y de las que diferencia un buen vino de un grande.

One would not have expected a wine producer such as Herederos

de Marqués de Riscal to hold the presentation of an exclusive product in a setting that did not fully befit the occasion! The garden of the Ritz Hotel in Madrid was therefore the venue for its presentation of an exclusive “Viñas Viejas” rosé (limited edition of 5,000 bottles), made with grapes from vines which are over 80 years of age.

To create this new wine, Herederos de Marqués de Riscal sought out terroir and vineyards that would endow it with great character and reveal the essence of the Garnacha and Tempranillo varietals.

Once again, Marqués de Riscal demonstrated its savoir-faire and contemporary spirit with the presentation of a high-quality wine, this time a rosé.

hacer una presentación de un producto exclusivo en un entorno que no estuviese a la misma altura. En el jardín del Hotel Ritz, de Madrid, se presentó un vino rosado de viñas viejas, exclusivo (edición limitada de 5000 botellas), elaborado con uvas procedentes de viñas de más de 80 años.

Para elaborar este vino se ha buscado el terreno y las viñas que pudieran imprimir un mayor carácter al vino y que aportaran la esencia de las variedades Garnacha y Tempranillo.

Una vez más, Marqués de Riscal hace gala de su buen hacer y de estar al día con la presentación de un vino de alta calidad, en esta ocasión un vino rosado.

They are young and they seem as if they are just starting out in the world of wine, yet they have been at it for a lifetime. The ability to adapt and to transform is a quality shared by the three Sanz siblings, Marco, Richard and Alejandra. They apply their winemaking principles with dedication and passion and this is reflected in each bottle of their wines, which have personality and style.

They work 200 hectares of vineyards, set in an exceptional location between Zamora and Tudela de Duero, according to organic growing principles, yet happily applying modern technology. "With our weather station we know exactly what’s happening to the vines at all times, and if the vines are thirsty, we give them water," says Richard Sanz, Menade‘s oenologist and manager.

He believes one should look to the past in order to learn from those who went before, but move forward using technology, “we use tractors, but we also use natural infusions for all the treatments.” They protect and care for the vegetation that grows around the vineyards so that the insects there create life. And, as far as the terroir is concerned, according to Richard, “the soils have to be given life, they have to breathe, and this is only achieved by ploughing and aerating the soil, otherwise the soil compacts and the area desertifies”.

They take constant care to prevent the fertile land from becoming unproductive. In the vineyards, they stop, they examine the vines, and then act in a logical manner in order to prevent problems and to continue this logic in the winery.

The Sanz siblings have founded their business on intelligent risk-taking, a strategy that may not have always yielded the expected results, but which has, nevertheless, been gratifying and instructive. Since setting up their own winery in 2005, their way of working has radically evolved and they now allow themselves greater freedom and creativity.

They began to work with wild yeasts, they make wines through natural fermentation in stainless steel vats, “if technology has given us stainless steel vats, which are clean and 14

enable temperature control, then why go back?”, says Richard.

Menade is a challenge in every sense of the word. The Sanz work in the way they want, they allow themselves to play around, to experiment, to fail, make mistakes, and then pick themselves back up again. The fact that they are champions of organic growing, and they practice it, is not incompatible with their winemaking practices. They are not against malolactic fermentation in white wines, and they are in favour of clarifying and filtering the wines to eliminate bacteria that may have remained in the liquid, to ensure the wine will travel. “We don’t have to use constrictive methods, but what we do have to do is to work cleanly so that the wine arrives in perfect condition”.

Twelve years ago, when the three siblings, representing the sixth generation of the family, became independent of their father, they went through some difficult times. They had dreamt of creating their own winery in order to “step outside the comfort zone in which the Rueda wine producers like to remain and where simplicity reigns,” explains Richard.

Their Menade Verdejo organic wine is the only wine with the approval of the DO Rueda regulatory body. The rest of the winery’s wines are produced under the “Vinos de la Tierra de Castilla y León” umbrella. Their lack of identification with the practices being used in Rueda isolated them for a time, but they still hold the same views today. They refuse to work with aromatic yeasts, and they do not agree with the region’s pricing policy.

According to Richard “There’s too much volume in Rueda, the region has undergone excessive growth and all the wineries in Spain have set up here in a short space of time. A lot of volume, but poor quality, little personality and a lack of identity”. Richard continues, “there are wine regions which produce a lot of wine, but these are large regions, like Champagne or Burgundy, where personality is the most important thing. Being great is not about generating volume, greatness comes with personality.”

LA BODEGA. BODEGAS MENADE, LA OTRA CARA DE RUEDA

Los hermanos Sanz han construido su proyecto a base de asumir riesgos, una estrategia que puede no haber dado siempre los resultados esperados, pero a pesar de ello les ha resultado gratificante y aleccionador.

Desde que montaron su propia bodega, en el año 2005, su forma de trabajar cambió radicalmente entrando en una zona de libertad y de creatividad. Empezaron a trabajar con levaduras salvajes, elaboran vinos a partir de fermentaciones naturales en depósitos de inox, “si la tecnología nos ha dado los depósitos de acero inoxidable, que aportan limpieza y control de temperatura, ¿por qué ir hacia a tras?”, nos comenta Richard.

Menade es un reto en todos los sentidos.

Trabajan de la forma en que ellos tres querían, son libres, juegan, experimentan, caen, se equivocan, y se vuelven a levantar. Que sean defensores de la ecología y la practiquen no es incompatible con según qué prácticas vinícolas. Para nada están en contra de las fermentaciones malo lácticas en los vinos blancos. Así como también están a favor de clarificar y filtrar los vinos para eliminar las posibles bacterias que hayan quedado en el líquido, y permitir a las botellas poder viajar.

“No hace falta trabajar siguiendo los métodos encorsetados, lo que sí hay que hacer es trabajar limpio para que el vino llegue en perfecto estado”.

Son jóvenes y parecen que acaban de

empezar en el mundo del vino, pero llevan

toda la vida. La capacidad de adaptarse y de transformar son dos de las mayores virtudes que comparten los tres hermanos Sanz, Marco, Richard y Alejandra. Con dedicación y pasión, desarrollan una filosofía de trabajo que se refleja en cada una de sus botellas, vinos con personalidad y estilo propio.

Su filosofía es mirar el pasado y aprender de los ancestros pero avanzando en tecnología, “utilizamos tractores, pero hacemos todos los tratamientos con infusiones naturales”.

Cuidan y protegen las diferentes plantas que crecen alrededor del viñedo para que los insectos hagan vida allí. Y por lo que se refiere al terreno, según Richard, “a los suelos hay que darles vida, tienen que respirar, y eso solo se consigue arando y aireando la tierra, de lo contrario los suelos se compactan y la zona se desertiza”. La preocupación por evitar que la tierra fértil se convierta en improductiva es una constante. Y ante las vides, se paran, las observan y actúan de forma coherente para prevenir y para continuar siendo coherentes después en la bodega.

Hace doce años, cuando los tres hermanos, la sexta generación, se independizaron de su padre, vivieron momentos tensos. Su sueño era crear su propia bodega para “salir de la zona de confort en la que viven las bodegas de Rueda, en donde reina la simplicidad”, nos explica Richard.

El vino Menade Verdejo Ecológico es el único con el sello del Consejo Regulado de la DO Rueda.

El resto de los vinos elaborados en la bodega están bajo el paraguas de los Vinos de la Tierra de Castilla y León. La falta de identificación con las prácticas que se están llevando a cabo en Rueda les apartó en su momento y siguen opinando igual. Rechazan trabajar con levaduras aromáticas, y no están de acuerdo con la política de precios de la zona. Según Richard “en Rueda hay demasiado volumen, la zona ha sufrido un crecimiento desmesurado, en poco tiempo todas las bodegas de España se han venido a instalar aquí. MENADE VERDEJO ORGANIC 2016 13% vol. - DO RUEDA Bright yellow hue with pale golden tints. Very aromatic on the nose with the recognizable aromas of the Verdejo varietal, such as citrus fruit, which gives it a lively character, along with notes of pear and vegetal overtones of hay and fennel. There is a nice glycerol sensation on the palate and a lovely expression of the fruit. The wilder character of the Verdejo also comes through in the form of anise and wild herbs. Fairly pronounced yet well-balanced acidity. The finish is long, reflecting the wine’s body, good structure and perfect balance.

NOSSO VERDEJO NATURAL 2016 13% vol. - VT CASTILLA Y LEON Bright yellow hue with soft golden tints. Surprising minerality on the nose, with subtle lactic notes. Citrus fruit can be detected again, but it is the iodized character that really comes through. On the palate, the wine shows an earthy and mineral side, against a saline backdrop with surprising iodized notes, giving us a style more akin to the wines from the Galician Atlantic.

Nice, fresh, lively acidity. The finish reflects the wine’s deliciously drinkable character, as well as its lovely creaminess and elegant density.

MENADE SAUVIGNON ORGANIC 2016 13% vol. - VT CASTILLA Y LEON Yellow hue with golden tints. The nose is intense and aromatic, with a delicious array of wild aromas, including coriander and fresh grass, floral aromas such as elderberry, and fruity aromas of orange citrus.

It shows perfect acidity on the palate and the aromatic range broadens, accentuating the wild notes and aromas that are fruitier than on the nose. It unleashes an array of passion fruit-like tropical aromas. Long, aromatic and well-balanced finish.

MENADE VERDEJO ECOLOGICO 2016 13%vol - DO RUEDA Color amarillo vivo y brillante con reflejos dorados pálidos. En nariz es muy aromático, destacando el aroma reconocible de la variedad verdejo, como son los cítricos, que le aportan viveza, la pera y los matices vegetales del heno y del hinojo. En boca presenta una buena glicerina y una gran expresión frutal. Aparece esa parte más salvaje del verdejo, como puede ser el anís y las hierbas silvestres. Acidez media alta, bien equilibrada. El postgusto es largo, manteniendo el recuerdo del cuerpo y la buena estructura, así como su perfecto equilibrio.

NOSSO VERDEJO NATURAL 2016 13%vol – VT CASTILLA Y LEON Amarillo brillante con reflejos dorados suaves. En nariz sorprende su mineralidad con sutiles notas lácticas. Los cítricos continúan siendo presentes pero sobresale una parte yodada. En boca se expresa la parte terrosa y mineral, sobre un fondo salino y de notas yodadas que sorprende, llevándonos a un perfil más parecido a los vinos del atlántico gallego. Acidez buena, fresco y vivo. En el postgusto se marca su golosidad, así como su buena cremosidad y elegante densidad.

MENADE SAUVIGNON ECOLOGICO 2016 13% vol – VT CASTILLA Y LEON Color amarillo con reflejos dorados. En nariz se muestra intenso y aromático, recordando a un rico conjunto de aromas silvestres, como el cilantro y la hierba verde, florales como el saúco, y frutales como los cítricos naranjas. En boca presenta una perfecta acidez y se expande la gama aromática, marcando aún más esas notas silvestres y más afrutadas que en nariz. Se desata un conjunto de aromas tropicales que nos recuerdan la fruta de la pasión. Largo final en boca, aromático y equilibrado.

It shows surprising freshness on the palate, with the mineral and saline notes also found in other wines from this winery and derived from the limestone composition of the soil. Good acidity. Long, elegant, creamy finish with subtle smoky notes.

MENADE SAUVIGNON DULCE ECOLOGICO 2016 10%vol. – VT CASTILLA Y LEON Amarillo con reflejos dorados.

Muy aromático, de frutas exóticas, pera madura y flores blancas como las orquídeas y el jazmín. En boca el peso de la fruta dulce y madura se equilibra con su natural acidez, viva y fresca. Final de boca largo y goloso, con ganas de repetir.

LA MISION 2014 13,5%vol– VT CASTILLA Y LEON Color amarillo con tonalidades doradas. En nariz aparecen notas tostadas, lácticas y de frutas blancas maduras. A pesar de su crianza en madera y en tinaja se mantiene un perfil fino y elegante, marcado solo por la untuosidad. En boca sorprende su frescor, con notas de mineralidad y salinidad presentes en otros vinos de la casa, y debido a la composición caliza del suelo. Acidez buena. Postgusto largo y elegante.

AN OLD WINERY The best way to explore this family’s history is to lose yourself in the old family winery, dating from 1820. The cellars, carved out below ground, offer a magnificent natural setting, with several underground tunnels housing the barrels of white wine (and a few reds), the bottle cellar and the region’s first mechanical press.

The urban development in recent decades has spared some of these old wineries. Many of these impressive looking buildings, in which little has changed over the years, are shut up or abandoned. At Menade, however, they not only bring their winery to life, caring for it with the affection it deserves, but they show it off with tremendous pride.

With a natural temperature of 10ºC and high humidity, the old family winery is a real architectural gem. Its plain walls reveal the area’s subsoil, river sediments with pebbles, clay and limestone, from the old river bed.

La bodega, perforada en el subsuelo, ofrece un magnífico escenario natural, y nos adentra en varios túneles subterráneos que albergan las barricas de los blancos, de algún que otro vino tinto, el dormitorio de botellas y la primera prensa mecánica de la zona.

El desarrollo urbanístico de las últimas décadas ha permitido conservar algunas de estas impresionantes bodegas, en las que pocas cosas han cambiado con el paso del tiempo, y que muchas se mantienen cerradas o abandonadas. En Menade no solo le dan la vida y la cuidan con el cariño que se merece sino que la muestran con profundo orgullo. Con una temperatura natural de 10ºC y humedad alta, la antigua bodega familiar es una auténtica proeza arquitectónica. Sus sobrias paredes manifiestan de forma clara el subsuelo de esta región, sedimentos fluviales de cantos rodados, arcilla y cal, procedentes del antiguo paso del río.

BODEGAS RODA CELEBRATES ITS 30th ANNIVERSARY WITH A VERY SPECIAL TASTING In mid-September, a special tasting took place at the Fundació Foto Colectania in Barcelona to celebrate the 30th anniversary of the creation of Bodegas Roda.

We were among around a hundred guests invited to a “tasting of pairs” of some very special vintages of its RODA I wine. These pairs were the best vintages of each decade: 1994-1995, 2004-2005 and 2010-2011 (the latter has not yet been released on the market).

We also had the chance to taste Corimbo I 2011, which allowed us to compare a vintage from the Rioja with the same vintage from the Ribera de Duero.

Mario Rotllant (co-owner) and Agustín Santolaya (General Manager) hosted this relaxed event and took us on a tasting journey through the winery’s history.

This exclusive tasting will only be repeated once more, at an upcoming event with the international press, which will take place close to the winery’s home in the north of Spain.

Sparkling wines enjoy pride of place at social

gatherings and special meals, not just because of their traditional association with glamour and sophistication, but because of something that most sommeliers and wine experts agree on, their great versatility.

But, if we are going to talk about the “premium” cavas, then we have to go from talking about the cavas used for toasts to the cavas enjoyed with food. And it is precisely the grandeur of cava, with its various crianzas and coupages, that allows it to provide sommeliers and chefs with such a fantastic variety to play around with and great scope in terms of food pairings.

Not surprisingly, it is these premium cavas, aged for longer and possessing greater character, the kind in which the producer has sought to bring out the finest expression of the terroir and the winery, the Reservas and Gran Reservas, which feature prominently on the wine lists of the most important and prestigious restaurants in Spain.

No doubt, the recommendations of international food-wine pairing experts, who consider that cava has an important role to play in the science of food pairing, have had something to do with this. And it is these experts to whom we will turn in order to recommend some dishes that will enable you to derive even greater enjoyment from these premium cavas.

Ferran Centelles, without doubt the sommelier who has explored foodwine pairings and theories in the greatest depth, tells us in his book, “Qué vino con este pato” (“what wine goes best with this duck”), that 25% of the wines served at El Bulli were sparkling wines because these were better suited to a menu as complex as the one created by Ferran Adrià in the famous restaurant in Cala Montjoi.

One of the first to mention the versatility of cava was the KoreanAmerican Master of Wine, Jeannie Cho Lee, who talks about sparkling wine as being one of the most appropriate types of wine with Asian cuisine. The great diversity of aromas, spices, sauces and dressings present in the same meal makes it difficult to choose a single wine suitable for serving throughout a meal. But Cho Lee believes that sparkling wines are among the best suited to this role. Asian cuisine, which is increasingly present in European culinary culture, is therefore an ideal companion for sparkling wines. Taking her advice, we would therefore suggest you try a typical Cantonese dish, which makes the perfect starter - steamed dim sum stuffed with pork and prawns, lightly doused in soy sauce, dashi cooking stock and a few drops of hot spicy oil. Hot spice, which you might think would be problematical in terms of pairing, doesn’t actually upset cava at all. For these dim sum, or for Asian dishes with some hot spice, plump for a cava brut reserva.

Someone else who has shed light on the mystery of food and drink pairing is François Chartier, who gave us some new insights with his molecular science in 2009. Food and wine share aromatic molecules and it is due to these that synergies are created. So what does Chartier say about sparkling wines? Well, he says that one of the molecules that will help us derive the most pleasure from mature cavas is Sotolon, an aroma compound commonly found in curry, soy sauce, veal cooking stock and sauces, dried mushrooms, toasted nuts, dates and dried figs. This molecule usually appears in wine aged over long periods of time (oxydative aging) and is therefore present in the Gran Reserva cavas with long ageing. Something else that makes these sparkling wines more attractive is the fact that they bring out the aromas created by autolysis (the death of the yeasts after the second fermentation in the bottle which gives the wine aromas of pastries and dried nuts, adding to its complexity). Cava is therefore ideal with some of the dishes that we generally like to enjoy on special occasions. Here’s a nice pairing you might want to try at Christmas: a Gran Reserva cava with roast poultry (chicken or turkey), cooked in a fashion that brings on the Maillard reaction, which creates sweetness and complexity in the meat, delicious with a dressing of dried nuts, dates and figs. And, a tip for the curry lovers among you, don’t forget to add a pinch of it to further enhance this synergy between dish and cava.

No en vano este tipo de cavas, los más envejecidos y singulares, aquellos a los que el elaborador destina la máxima expresión del terruño y la bodega, los Reserva y Gran Reserva, tienen un lugar destacado y reservado en las cartas de los principales y más prestigiosos restaurantes del país. A ello han contribuido sin duda las recomendaciones de los expertos en maridaje a nivel internacional que han reservado para este tipo de cavas un lugar privilegiado en la ciencia del maridaje.

Y es a ellos que recurriremos para proponer platos que os ayuden a gozar más de los cavas Premium.

Ferran Centelles, sin duda, el sumiller que más ha profundizado en el estudio de los maridajes y los creadores de teorías al respeto, explica en su libro “Qué vino con este pato” que un 25% de los vinos servidos en ElBulli eran espumosos al ser los vinos que mejor se adaptaban a un menú tan complejo como el que ofrecía en Cala Montjoi Ferran Adrià.

Una de las primeras de hablar justamente de esta versatilidad en los vinos fue la Master of Wine asiática, Jeannie Cho Lee, que como consecuencia defiende los espumosos como unos de los vinos más adecuados para la cocina de su cultura. La gran diversidad de aromas, especias, salsas y aliños presentes durante una misma comida dificulta la elección de un solo vino que acompañe todo el banquete. Pero Cho Lee coloca entre los más apropiados para ello a los vinos espumosos.

Así pues, la cocina asiática, cada vez más presente en nuestra cultura gastronómica será ideal acompañante de las burbujas, y siguiendo sus consejos os proponemos un plato típico de cocina cantonesa, y que será ideal como entrante, unos dim sum al vapor rellenos de cerdo y gambas, regados con salsa de soja, caldo dashi y unas gotitas de aceite

picante. Notad que el picante, un elemento que puede parecer difícil de maridar, no será un problema para el cava. Para estos dim sum o platos de cocina asiática con un toque de picante elige un cava brut reserva.

Quién también aporta luz en el arte de combinar comida y bebida es François Chartier que con su ciencia molecular abre, en 2009, una nueva puerta en el mundo de los maridajes. Producto y vino comparten moléculas aromáticas y es gracias a ello que se crean sinergias maravillosas. ¿Y qué dice Chartier de los espumosos? Pues que una de las moléculas que más nos va a ayudar a disfrutar de los cavas maduros es la sotolon, una molécula que encontraremos en ingredientes como el curry, la salsa de soja, los caldos y salsas de ternera, o las setas secas y las nueces tostadas, dátiles e higos secos entre otros. En los vinos, esta molécula, suele aparecer cuando están envejecidos durante largos periodos de tiempo (envejecimiento oxidativo) ideal pues para cavas con largas crianzas, los Gran Reserva. Además, una de las cosas que hacen más atractivos este tipo de espumosos es como potencian los aromas de la autolisis (la muerte de las levaduras en la segunda fermentación en botella que aporta aromas de bollería, frutos secos, enriqueciendo su complejidad). Así pues será ideal con algunos de los platos principales que destinamos para grandes Fiestas. Tomad nota de un buen maridaje para estas Navidades, pensad en un cava Gran Reserva para acompañar un asado (ya sea de pollo o pavo) con una cocción que propicie la reacción de Maillard, causante del tostado que aporta dulzor y complejidad a la carne, y con un buen aderezo de frutos secos, dátiles e higos. Y un consejo, si sois amantes del curry, no olvidéis de echar una pizca para potenciar esta sinergia entre plato y cava.

LA EXCELENCIA Y VERSATILIDAD DEL CAVA PREMIUM EN GASTRONOMÍA

While discussing the excellence of cava, we should, of course, mention the newcomers, although they are not actually new, the Cavas de Paraje Calificado (classified single vineyard cavas). For these cavas, we would suggest delicate, elegant dishes with flavours that respect their subtlety and depth. Why not try a ravioli of scallops with an artichoke heart and a sliver of Iberian bacon? One of these ingredients, the artichoke, is described by some as “one of wine’s enemies”, a theory that Ferran Centelles himself tries to dispel in an article which appeared in Jancis Robinson’s “purple pages”.

We started by talking about versatility and cannot finish without talking about how great this type of cava is with cheeses and desserts.

For the first, we would recommend goat’s cheese with a nice acidity complemented by that of the cava. And, in terms of desserts, a tarte tatin with a touch of cinnamon would make a scrumptious match for a cava with a very slight touch of sweetness.

But you don’t need a dish as an excuse to uncork a bottle of one of these premium cavas. And remember, good table manners dictate that there should be silence while you uncork the bottle, but here too, rules are made to be broken.

Hablando de la excelencia del cava no podemos olvidarnos de los recién llegados, aunque no por eso nuevos, Cavas de Paraje Calificado. A ellos les reservamos un plato delicado, elegante y con sabores que respeten toda la sutileza y profundidad de estos espumosos. Os proponemos un falso ravioli de vieira con corazón de alcachofa y una fina capa de tocino ibérico. Con un ingrediente, la alcachofa, calificado por algunos como uno de los enemigos del vino, una teoría que el mismo Ferran Centelles intenta desbancar en un artículo publicado en las “purple pages” de Jancis Robinson.

Empezábamos hablando de versatilidad y no podemos acabar sin hablar de lo bien que le sienta a este tipo de cavas los quesos y los postres.

Para la primera opción hablaremos del queso de cabra, con una buena acidez compensada por la misma del cava. Y hablando de postres, una idea apetecible podría ser, por ejemplo, una tatin de manzana, con un toque de canela. Deliciosa con un cava con un tímido toque de dulzor.

Que el plato pues no sea excusa para descorchar una botella de uno de estos cavas premium. Y recordad, la norma de modales en la mesa dice que no se debe hacer ruído al descorchar la botella, pero también en este caso las normas están para romperlas.

THE WORLD’S BEST WINE SHOPS

For this second installment in our “the world’s

best wine shops” feature, we head to Portugal, to the town of Vila Nova de Gaia, located only a few kilometres from Oporto. The wine shop in question is located inside the Port Lodge that bears its name, Graham’s.

The entire building was renovated a few years ago (2011) by a team of Portuguese architects, headed by Luis Loureiro and Nuno Gusmao. Major changes were made to the Lodge structure and its architectural features and spaces were redesigned in a minimalist style, which means that visitors to the Lodge are in for a delightful experience.

The main difference between the new shop and the old is that visitors can now pick up the bottles they want to purchase themselves, whereas, before the renovation of the Lodge, they had to ask the shop staff for the bottles.

The shop (and Port Lodge) receives around 77,000 visitors a year, hailing mainly from France, Germany, Spain, The Netherlands, Italy, Russia, China, South Korea, England and Brazil.

Focusing now on the wine shop itself, this is almost entirely housed in the old part of the building, very close to the main stone facade. The large windows allow the light to pour in and naturally light up the whole space. They afford spectacular views over the river Duero as well as Porto’s historic city and the town of Gaia.

En esta segunda entrega de las consideradas

mejores tiendas del mundo de vinos, nos vamos hasta Portugal, concretamente a la población de Vila Nova de Gaia, donde a unos pocos kilómetros de la ciudad de Porto se encuentra esta tienda de vinos, que está dentro de la estructura de la bodega que lleva su nombre, Graham´s.

El edificio fue remodelado hace unos años (2011) por el equipo liderado por Luis Loureiro y Nuno Gusmao, pertenecientes a un estudio de arquitectos portugueses, los cuales dieron un cambio importante a toda la estructura de la bodega y definieron de forma minimalista las diferentes partes arquitectónicas, las cuales han dado lugar a que las visitas que tienen en la bodega disfruten de una muy agradable experiencia.

Centrándonos en la tienda de vinos, ésta se encuentra casi en su totalidad en la parte antigua del edificio, muy cerca de la fachada principal, que es de piedra. Los grandes ventanales por los que entra gran cantidad de luz iluminan la sala de forma natural, dejando unas bellas vistas al río Duero, y también se pueden ver con bastante claridad las ciudades de Porto y Gaia.

EL VINO SÓLO SE DISFRUTA CON MODERACIÓN

El gran cambio de la nueva tienda versus la que existía anteriormente es la posibilidad de que los visitantes pueden autoabastecerse de las botellas que quieran llevarse, cosa que no podían hacer antes de la remodelación, ya que tenían que solicitarlas a los responsables de la tienda.

El número de visitantes que pasan al final del año por la tienda (y por la bodega) ronda los 77.000, y son, en su mayoría, personas que vienen de Francia, Alemania, España, Holanda, Italia, Rusia, China, Korea, Inglaterra y Brasil.

Según palabras de la propia modelo “Ha sido un honor para mí haber sido elegida por Anna de Codorníu como embajadora de la marca. Me siento muy identificada con la figura de Anna, una mujer independiente y femenina, además soy una amante del cava.”

Después de la presentación, se dio paso a una fiesta en el kissing room de Anna de Codorníu u una Cocktail Session by Anna de Codorníu en el que se se vieron rostros conocidos del mundo de la moda, gastronomía y otros ámbitos sociales.

SUBTIL BRUT NATURE 2008 GRAN RESERVA

From this 2008 vintage, Recaredo Subtil has stated the name of the vineyard on the label, as part of its ongoing efforts to promote the origin of the grapes. Through doing this, they want to add value to the geographical location, the type of terrain and the microclimate. Respecting the principles of organic growing, they work the vineyard without herbicides or insecticides of chemical origin, using only organic fertilizers of natural origin, in order to respect the biodiversity and the environment.

Subtil is a brut nature cava (no added sugar) aged for over 40 months sur latte (on its side) with a natural cork. The disgorgement is carried out by hand, without the freezing of the bottleneck.

Appearance: Clean, bright yellow flecked with gold.

Fine, ascending bubbles creating a creamy crown.

Nose: Complex with distinct notes from its ageing that charm and evolve in the glass. Toasted notes, freshly baked bread and baked apple aromas mingle with fresher notes of ripe citrus.

Palate: Dry on entry, with a soft burst of bubbles that quickly becomes creamy and elegant. Subtle mineral notes and smooth, well-integrated bubbles. The acidity of the Xarel·lo can be felt both on the nose and on the palate, as well as the volume and body from the Chardonnay.

Comment: To enjoy this cava at its best, it should not be served too cold and ideally at 8-10ºC. This is a very versatile and gastronomic cava that can accompany a whole meal, from start to finish.

A partir de esta cosecha, la 2008, Recaredo Subtil añade a la etiqueta el nombre del viñedo, en su constante empeño por defender el origen de las uvas. De esta manera se quiere dar valor a la situación geográfica, al tipo de terreno y al microclima. Bajo los principios de la viticultura ecológica, trabajan en el viñedo sin herbicidas ni insecticidas de origen químico, solo con abonos orgánicos de origen natural, para respetar la biodiversidad y el medio ambiente. Subtil es un cava Brut Nature (sin azúcares añadidos) de añada con más de 40 meses en rima con corcho natural.

El degüelle se realiza de forma manual, sin congelar el cuello de botella.

Vista: Amarillo brillante y limpio con reflejos dorados. Burbuja fina y ascendente creando una cremosa corona.

Nariz: Se muestra complejo y con notas claras de crianza que van seduciendo y se van modificando en su paso por la copa. Notas tostadas, pan recién horneado y recuerdos de manzana al horno se mezclan con las más fresca notas de cítricos maduros.

The excellent work done on this grape variety has produced two gastronomic wines, that can be enjoyed whenever you fancy. These well-made wines are easy-to-appreciate and easy-to-drink. The owners from Ribeiro have just started down this path and they are already demonstrating the potential of the grape, the producer and this style of wine. The wine can be enjoyed now or kept back.

Appearance: Intense golden yellow, bright, with nice tears.

Nose: Very aromatic. Intense notes of yeast, citrus, ripe stone fruit such as peaches, apricots and white plums, against a soft toasted backdrop.

Palate: Fresh on entry, nice glycerine feel over the palate with ripe fruit, herbaceous and lemon curdy notes, and a long, succulent finish.

Broad and fresh, it wraps the palate in aromas and silkiness, with a very subtle bitter touch.

Comment: Luar do Sil was set up in the Valdeorras D.O in Galicia by the Ribera del Duero winery, Pago de los Capellanes, after its owners, Conchita Villa and Paco Rodero, fell in love with the Godello grape and its vineyards. The 2014 vintage was the first public outing of the two Godello single varietal wines from this new winery, the O Luar Do Sil Sobre Lías on the lees and the barrel-fermented O Luar Do Sil Godello Barrica.

El excelente trabajo realizado con esta variedad se traduce en dos vinos muy gastronómicos, para disfrutar en cualquier momento. Vinos bien hechos, fáciles de beber y de saborear. Un camino que los responsables ribereños acaban de emprender y que ya demuestran el potencial tanto de la uva, como del sello elaborador, como del estilo de vino. Un vino para beber ahora y para guardar.

Vista: Amarillo dorado intenso, brillante y con buena lágrima.

Nariz: Muy aromático en nariz. Notas intensas de levaduras, frutas de hueso maduras como el melocotón, el albaricoque o la ciruela blanca, notas cítricas, sobre un suave fondo tostado.

Boca: Entrada fresca, paso por boca muy glicérico con notas de frutas maduras, herbáceas, compotas cítricas, y final largo y goloso.

Amplio, fresco, envuelve la boca de aroma y sedosidad, con un toque amargo muy sutil.

Observaciones: O Luar do Sil es el proyecto que la conocida bodega de Ribera del Duero, Pago de los Capellanes, ha emprendido en Galicia, concretamente en la DO Valdeorras en donde sus propietarios, Conchita Villa y Paco Rodero, se enamoraron de la godello y de sus viñedos. La añada 2014 fue la presentación pública de los dos vinos de ese nuevo proyecto, el O Luar Do Sil sobre lías y el O Luar Do Sil fermentado en barrica, los dos son monovarietales de godello.

ROSÉ WINES

Two greats, Arzak and Chivite, have joined forces in a different kind of venture, but with a style of wine that pleases consumers. A style of wine that gives the impression of softness at first, but then shows its character, liveliness body and intensity. This pale rosé, now a very popular colour, suggests subtlety and delicacy, but gradually shows its strength.

Versatile, sophisticated and original, this wine is not what it seems and is bound to produce a reaction.

Appearance: Very pale pink salmon, clean and bright, dense tears.

Nose: Medium intensity, aromas of white flowers and the recognizable scent of roses or talcum powder, along with notes of delicate raspberry-like fruit.

Palate: Fresh on entry, thanks to its nice acidity, revealing a light body, delicate, soft fruit and a nice full finish. Retro-olfactory notes of red fruit and fennel.

Comment: Chivite is a reference for rosé wines, however, with this wine, it is making the transition to high-end gastronomy. Produced by Juan Mari Arzak, this rosé may be different from the rosés usually produced by Chivite, but it won’t leave you indifferent.

El rosado pálido, ahora un vino muy demandado por su color, que sugiere sutileza y delicadeza pero que poco a poco va mostrando su fuerza. Versátil, sofisticado y original. Un vino que no es lo que parece y que no nos va a dejar indiferentes. Vista: Rosa salmón muy pálido, limpio y brillante, lágrima consistente.

Nariz: Intensidad media, aromas de flores blancas y el reconocible aroma de las rosas o el polvo de talco, y delicadas notas afrutadas que nos recuerdan las frambuesas.

Boca: Entrada fresca debido a su buena acidez, cuerpo ligero, delicado, suavemente afrutado y con un final con corpulento. Por via retronasal frutas rojas y notas de hinojo.

Observaciones: Chivite es un referente en cuanto a vinos rosados, sin embargo con este da un salto hacia la alta gastronomía de la mano de Juan Mari Arzak, un rosado diferente a los de la línea de elaboración de la casa Chivite, que no deja indiferente.

Mar y montaña, tierra y agua, calidez y frescor. Un vino tocado por la tramontana, un fuerte viento que mantiene los viñedos más que saneados.

Garnacha procedente de viñedos en terrazas, donde los primeros rayos de sol iluminan cada mañana, plantadas en 1997, con una producción muy limitada. Elaborado por el enólogo Delfí Sanahuja, se vendimia de forma manual, fermenta con levaduras autóctonas, y envejece durante un año en barricas de roble francés de segundo año. Un vino de pura expresión varietal que enamora a entendidos y aficionados.

Sea and mountain, land and water, warmth and freshness. A wine influenced by the Tramuntana, a strong north wind that keeps the vineyards in a very healthy state.

A small production from Garnacha vines planted in 1997 and growing on terraces, lit by the first rays of sun in the morning. The wine is produced by winemaker, Delfí Sanahuja, from grapes harvested by hand, fermented with native yeasts, and aged for 12 months in 2nd-year French oak barrels. This is a wine with a pure varietal expression that pleases wine connoisseurs and novices alike.

Comment: A wine of great complexity, which refuses to bow to fads or fashions, but remains faithful to its terrain, its grape variety and its climate. A Garnacha of Mediterranean climate, planted in the slate soil of a unique vineyard in a location that is a gift of nature. An intense and mineral red wine, full-bodied and elegant, enveloping and silky, fresh and full of flavour. A Garnacha with its feet in the slate, its head well exposed to the sun, its gaze turned to the Mediterranean Sea, and its back to the Cap de Creus.

The PUPUT sweet wine is further evidence of the Pujol-Busquets Guillén family’s commitment to ecology and respect for the environment in its Alta Alella winery. This is a pure, transparent wine, without “make-up”, a wine with soul. The grape variety is known as Mataró in Alella and Monastrell in the rest of Spain. This wine is a Monastrell with the character of the place from which it hails, white, sandy soil and a Mediterranean climate.

This is a natural sweet wine without the addition of sulphur or any other products. Its maceration lasts for about seven months and its ageing in French oak barrels lasts another seven.

Dark purple, vivid and bright. A deep, elegant wine with concentrated aromas of raisins, figs and ripe plums from the late-harvested grapes. A deep bond between man and the earth, between the earth and the generations.

JEAN LEON CELEBRATES THE 10th ANNIVERSARY OF THE “VEREMA DE CINE” In memory of Jean Leon’s close ties with the Hollywood film

industry of the 1960s, the Jean Leon wine company invited a host of actors and actresses to its winery to celebrate the 10th anniversary of the “Verema de Cine”. Some participants, including Miriam Marcet and Paula Vives, were at the very first edition of this event, whereas others, such as Assumpta Serna, Pep Plaza, Montse Guallar and Cristina Brondo, were newcomers. They came along to the winery to take part in a very special grape harvest.

To prepare them for the morning ahead, they were treated to a hearty country breakfast, and then, once they were kitted out, they got started on the grape picking.

Afterwards they were invited to take part in a grape treading competition (cover photo).

The winery’s director, Mireia Torres presided over the official lunch to celebrate the 10th anniversary of the event, which was followed by an afternoon of music.

Vendimia de cine), la bodega Jean Leon reunió en sus instalaciones a un elenco de actores y actrices, para rememorar la conexión de Jean Leon con el mundo del cine en Hollywood en los años 60. Algunos participantes de la primera edición de este evento, como Miriam Marcet o Paula Vives, entre otros, y algunos “novatos” como Assumpta Serna, Pep Plaza, Montse Guallar o Cristina Brondo, se dieron cita en la bodega para una peculiar vendimia.

Para lo que se les venía encima, empezaron con un buen desayuno campestre, y una vez estuvieron ataviados para la ocasión empezaron a vendimiar. Posteriormente tuvieron la oportunidad de realizar un concurso de pisada de uvas (foto de portada).

Mireia Torres, directora de la bodega, estuvo presente en la comida oficial donde soplaron las velas del 10º aniversario y a continuación la música amenizo el resto de la jornada”.

WINE KNOWS NO BORDERS: FROM FRANCE WITH LOVE, TERRA REMOTA

Terra Remota isn’t remote due to the fact that its owners, Marc and Emma Bournazeau, are a French couple living and working between Toulouse and Perpignan. They are actually closer to Terra Remota than the vast majority of Spaniards. For us, Terra Remota might be considered remote because it is located almost on the border with France. This area, lying very close to La Junquera, virtually in the Roussillon, has, along with Cerdaña, played an important role in the history of Spain, since the “remote” times of the Arabs, Franks, Carolingians, Visigoths, and the kings of Aragon and Castile.

Emma is the daughter of Claude Florensa whose father was a republican from Lleida who, like many others, fled to France at the end of the Spanish Civil War. Claude had been born in France to a French mother. In 1999, he acquired around 40 hectares of Mediterranean woodland across the Spanish border thereby fulfilling his dream of returning to the land of his father. These were located in a captivating and solitary spot that appears to be far removed from the rest of the world, but is, in fact, only

15 kilometres from the Mediterranean Sea, the bustling Costa Brava with Rosas, Cadaqués and the famous El Bulli restaurant. It lies between the villages of Capmany and Sant Climent Sescebes, in the province of Girona, in the Alt Empordà, a beautiful, peaceful region with a unique landscape, architecture and way of life. It is also an intimate and personal land with a great gastronomic culture that values ​​the art of doing things well, without fuss or frills.

Claude had sensed the potential of this land that his daughter, Emma, and her husband, Marc, were able to fulfil some years later. Sadly, Claude died a few years after acquiring the “remote” land but his legacy was in safe hands. Marc, a notary working in Toulouse, gave up the security of “documents and deeds” for the unpredictability of grape harvesting and fermentation where, with all its ups and its downs, you can never “bear witness” to anything until it has actually happened.

Terra Remota no lo es tanto para sus propietarios, Marc y Emma Bournazeau, franceses residentes entre Toulouse y Perpignan. Están más cerca de ella que la mayoría de la gran mayoría de los españoles. Para nosotros sí puede considerarse remota y lejana pues linda casi con la frontera francesa. Muy cerca de La Junquera, casi en pleno Rosellón, esa tierra que junto con la Cerdaña, ha sido valor de cambio en la historia de nuestro país desde tiempos “remotos” de árabes, francos, carolingios, visigodos, reyes de Aragón, de Castilla…

En el año 1999 el padre de Emma, Claude Florensa, de padre español, de Lleida, republicano que salió como muchos otros al exilio francés, que ya había nacido en Francia y de madre francesa, tuvo la oportunidad y la ilusión de volver a la tierra de su padre y adquirió unas 40 hectáreas de bosque mediterráneo en un hermoso paraje, solitario, cautivador por su apariencia de lejanía respecto al resto del mundo, aunque está a 15 kilómetros del Mar Mediterráneo, de la bulliciosa Costa Brava, de Rosas, de El Bulli, de Cadaqués….

Exactamente en el Alto Ampurdán, entre los pequeños pueblos de Capmany y Sant Climent Sescebes provincia de Girona, tierra hermosa, plácida y con una enorme personalidad en cuanto paisaje, arquitectura, modo de vida y silencio. Una tierra de enorme cultura gastronómica, intimista y personal, que valora el arte de las cosas bien hechas, sin aspavientos ni oropeles.

Claude vislumbró en estos parajes lo que años atrás consiguieron llevar a cabo su hija Emma y su marido Marc. El falleció pocos años después de adquirir la tierra “remota” pero la herencia estaba asegurada. Marc, notario de profesión en Toulouse, dejó la seguridad del documento y la escritura, por la aventura impredecible de las vendimias y fermentaciones, de las que nunca se puede “dar fe” hasta que han acontecido, con sus luces y sus sombras.

The scented woodland When the estate was acquired, there was scarcely any trace of the old vines. There were patches of land and woods with an abundance of oaks, cork trees, gall oaks, pines, olive trees, tangled blackberry bushes, lavender, thyme... a Mediterranean woodland in the true sense of the word. They cleared some hectares to plant vines with the aim of producing quality wines. They planted the vines in plots with a density of 4,600-4,800 vines per hectare, which is higher than usual for the area (the average in the Empordà D.O. is 3,600). The yield is very low, around one kilo of grapes per vine. They ended up with 27 hectares of vineyards in plots occupying gentle hills, all planted in a north-south facing position and surrounded by a native woodland that undoubtedly transmits its Mediterranean aromas to the grapes. Their picture-perfect Garnacha Negra, Garnacha Blanca, Syrah, Chardonnay, Tempranillo and Chenin Blanc varieties are all organically grown.

In each of the plots or “ clos” there is a neat wooden sign proudly displaying the name of someone who has been important to the business. Of course, there is one dedicated to Nono, as he was affectionately called, who used to work alongside Emma’s father, Claude.

At the centre of it all, stands the winery, a rectilinear building with vegetation-covered roofs which blends into the landscape, almost mimicking it. It has been constructed in a way that takes advantage of the sloping terrain to create a gravity-flow production system. At the top they receive the grapes, below lie the vats, and below them, the barrel cellar through which one also accesses the office facilities and visitor reception area. Everything breathes transparency in a contemporary design of great warmth and, of course, great quality. The interior was designed by Pepe Cortés in collaboration with architect, Nacho Ferrer, and it is, above all, one of pure harmony and simplicity, devoid of artifice or pomp.

The road is made by walking Another example of the fine sensibility of this French couple was their choice of names for the wines that are the focal point of their production. Because of their love for the great Spanish poet, Antonio Machado, and due to the proximity of their home town, Perpignan, to Colliure, the French town where the poet died and is buried, they chose the name Camino (path or road) for their biggest volume wine. Camino is taken from a line in Machado’s celebrated poem, “Caminante, no hay camino, se hace camino al andar…” (“Wanderer, there is no road, the road is made by walking...”). So the first red they released in 2006 (Garnacha Negra, Syrah and some Cabernet Sauvignon) bore the name Camino. It is symbolic of the philosophy of this winery, its owners and its wines. But Camino’s first steps were actually taken along an outside “path”, because the winery was not finished at the time.

Since 2007, however, Camino has taken its own path, from 64

El bosque perfumado Cuando la finca se adquirió, apenas había algunos restos de cepas viejas en ella. Eran parajes, terrenos boscosos con abundancia de robles y alcornoques, quejigos, pinos, olivos y enmarañadas zarzamoras, lavanda, tomillo… Un bosque mediterráneo en el más amplio sentido de la palabra.

Desbrozaron parte de las hectáreas para plantar viñedo con un propósito bien marcado: calidad. Plantaciones por parcelas y con un marco de densidad mayor que el habitual en la zona, D.O. Empordà, 4.600-4.800 cepas por hectárea (la media en la zona es de 3.600). La producción es muy baja, más o menos de un kilo por cepa. Resultado: 27 hectáreas de viñedo en parcelas que ocupan suaves lomas, siempre plantadas en orientación norte sur, y siempre rodeadas de los bosques autóctonos que sin duda trasmiten sus aromas mediterráneos a las uvas. Garnacha negra, garnacha blanca, syrah, chardonnay, tempranillo y chenin blanc, en perfecto estado de revista, todas en cultivadas en ecológico. Cada una de las parcelas o “clos” ostenta orgullosamente sobre cuidado cartel de madera, el nombre de una de las personas implicadas en el proyecto.

Por supuesto hay una, Nono, dedicada a Claude, el padre de Emma al que así cariñosamente llamaban.

En el centro de todo, la bodega, un edificio de líneas rectas, totalmente integrado en el paisaje, se diría que establece un diálogo de mimetismo con él, construida aprovechando el desnivel del terreno, para trabajar por gravedad y con cubiertas vegetales. Arriba recepción de uva, abajo depósitos, más abajo sala de barricas por la que también se accede a la parte social, despachos, recepción de visitas… Todo respira transparencia, diseño contemporáneo de gran calidez –y por supuesto gran calidad; el interiorismo está firmado por Pepe Cortés, en colaboración con el arquitecto Nacho Ferrer- y sobre todo, es pura armonía, sencillez sin concesiones al artificio ni a la fastuosidad.

Se hace camino al andar Una muestra más de la sensibilidad de este matrimonio francés fue la elección del nombre de los vinos que conforman el eje principal de su producción. Debido a la devoción que sienten por el gran Antonio Machado, y a la cercanía de Perpignan, lugar de origen de Claude y Emma Florensa, a Colliure, la villa francesa donde murió y está enterrado el poeta, eligieron la palabra Camino para su vino de mayor producción, por aquel incomparable poema que ha dado la vuelta al mundo y que todos conocemos “Caminante, no hay camino, se hace camino al andar…” Su primer tinto que salió al mercado en el año 2006 (garnacha negra, syrah y algo de cabernet sauvignon) lo hizo con el nombre de Camino. Todo un símbolo de la filosofía de esta bodega, de sus propietarios y de sus vinos. Este Camino recorrió sus primeros pasos por senderos ajenos, pues aún la bodega no estaba terminada. En el 2007, se abrió camino en su propia y modélica bodega de la mano de

its own, model cellar, with an aptly named companion, Caminante, a luminous golden white wine with 5 months barrel ageing. However, since 2013, this elegant, Frenchstyle white made from Garnacha Blanca, Chardonnay and Chenin Blanc, has no longer taken the Empordà D.O. route, as it did in the beginning, due to the inclusion of the Chenin Blanc in its blend. As Marc is a “man of the law”, and not wanting to dispense with their Chenin Blanc, he adopted the Catalunya D.O. instead. Another traveling companion, Clos Adrien (90% Syrah and 10% Garnacha Negra), was released in 2007, but this one has taken the high road, since only 5,000 bottles are produced and these sell at around €40 each. Of course, they needed a rosé, so they created Caminito, produced entirely from early-harvested Garnacha Negra and possessed of a salmon-pink hue, finesse and elegance.

Marc and Emma continued to “make their road by walking” and just one year later, in 2008, they decided to create a new brand which they named Usted. Only 1,500 bottles are made of this, the winery’s most premium range (€150), produced exclusively in excellent years. The wine is crafted from Garnacha and Syrah and undergoes three years’ ageing.

Located as they are in such bucolic and environmentallyfriendly surroundings, it was only natural that they should bring out a natural wine that they simply called Tan Natural.

They set it off along its way in 2012, with very light luggage and of course minimal sulphur. Only 5,600 bottles of this Tempranillo and Garnacha Negra wine are produced.

The paths of Emma and Marc do not only take them through the Empordà region, but to Latin America as well.

Years ago, Emma’s father and two friends from Perpignan decided to create a winery in Apalta, in the heart of Chile’s Colchagua valley. They rebuilt a lovely colonial mansion surrounded by vineyards and named it Las Niñas in homage to their daughters. Marc is its president today and he is constantly on flight paths over the ocean to “bear witness” to the efficient running of their Chilean operation. From Perpignan to Chile via the Empordà region.

DECIDEDLY, WINE KNOWS NO BORDERS.

un compañero blanco bien llamado Caminante, como no podía ser menos. Luminoso y dorado con sus 5 meses de barrica, elaborado con garnacha blanca, chardonnay y chenin blanc, elegante y afrancesado. Desde el año 2013 este Caminante no puede pasear por los senderos marcados por la D.O. Empordà, aunque anteriormente si lo hacía, por la presencia de la chenin blanc. Y como Marc es especialmente hombre de leyes, al no querer prescindir de su chenin blanc, se acogió a la D.O. Catalunya.

También en 2007 salió al mercado otro compañero de viaje, Clos Adrien, este se equipó para recorrer caminos más exclusivos, pues sólo se elaboran 5.000 botellas y su precio ronda los 40 €. (90% syrah y 10% garnacha negra). No podía faltar un rosado, de nombre Caminito, sólo de garnacha negra, la que se cosecha más temprana., vestido de rosa salmón. Fineza y elegancia Marc y Emma siguieron y siguen haciendo camino al andar y justo un año después, en 2008, decidieron elaborar una nueva marca de nombre Usted, la gama más alta de la bodega que sólo se elabora en años excelentes, 1.500 botellas, garnacha y syrah, con tres años de crianza (150 €). Por parajes tan bucólicos y ecológicos, no podía faltar un vino natural al que llamaron sencillamente Tan Natural. Lo pusieron a andar en el año 2012, muy ligero de equipaje, y por supuesto de sulfuroso, sólo 5.600 botellas, con tempranillo y garnacha negra.

Los caminos de Emma y Marc no se recorren sólo en geografías ampurdanesas, también llegan al Cono Sur, a Chile. Hace años, el padre de Emma y dos amigos de Perpignan, decidieron crear una bodega en Apalta, en pleno corazón del valle de Colchagua, reconstruyendo una hermosa mansión colonial, rodeada de viñedo. La llamaron Las Niñas en homenaje a sus hijas. Actualmente Marc es presidente y recorre caminos en el cielo constantemente para dar buena fe de la marcha de esta bodega chilena.
