BUBBLES, BUBBLES, AND MORE BUBBLES...

When this issue of Selectus Wines comes out,

Christmas will be just around the corner again. And with the festive season come bubbles. Some of us will plump for cava, some for champagne, and some for Franciacorta or other sparklers, all of which share that common ingredient... bubbles.

Our contributors knew that the magazine’s “CHRISTMAS ISSUE” would naturally be a sparkling one. Guillermo Cruz (who doubles up in this issue) tells us, in his inimitable style, about one of his favourite champagnes and also reports on the new superpremium range from Codorníu, which is taking its products to new levels of excellence.

Federico Oldenburg takes a look at the tempting array of rosé champagnes on offer and gives us his recommendations for the festive season ahead.

We also focus on events in this issue. Since the summer there has been a whirlwind of events put on by various wine producers and D.O. regulatory bodies. We sometimes found ourselves in quite surreal situations, invited to three events held in different places, on the same day and at the same time ... crazy. Perhaps someone should try to coordinate this and restore a little bit of order to the events calendar? Just a thought!

I should like to close by wishing you a fabulous Christmas with family and friends and hope that next year will be a better year for us all. So, “chin-chin” (maybe with a glass of bubbly or two?)

Cuando esta edición de Selectus Wines salga a la luz,

estaremos a pocos días vista de celebrar unas nuevas navidades.

Y con las fiestas, en general, las burbujas hacen acto de presencia. Unos tomarán cava, otros champagne, otros franciacorta, otros espumosos…

Todos tienen ese componente que los une… las burbujas.

Nuestros colaboradores también entendieron que la “EDICIÓN NAVIDEÑA” de la revista tenía que ir enfocada en ese sentido, y Guillermo Cruz (que en este número hace doblete) nos hablará a su estilo de un champagne y nos explicará cosas sobre la nueva gama superpremium de Codorníu que eleva el nivel de sus productos a un posicionamiento de excelencia.

También Federico Oldenburg nos hará una crónica sobre los champagnes rosados, esos deseados líquidos, y nos detallará los más recomendables de cara a las fiestas que se avecinan.

Y en este número hemos dado cierta importancia a los eventos… Después del verano ha habido una vorágine de actividades por parte de las bodegas, las denominaciones de origen… Nos hemos encontrado en situaciones un poco surrealistas. El mismo día, a la misma hora, se celebraban tres eventos en diferentes lugares…, una locura. Quizás alguien debería coordinar y poner un poco de orden a estas situaciones… es una idea…

Para finalizar, esperamos que pasen unos agradables días en compañía de sus familiares y amigos y que el próximo año sea mejor para todos. Un “chin-chin” ¿con burbujas?.

Fleury is one of my favourite Champagne houses. It is located in a wine growing area with a big personality, the Côte de Bar, to the south of the Champagne region. With a lifestyle attuned to the balances in Nature as his passion, belief and religion, Jean-Pierre Fleury was the first vigneron to start converting all his vineyards to biodynamics in 1989.

Fleury es una de mis casas favoritas en Champagne, viene de una zona con mucha personalidad como es la Côte de Bar, la zona sur de la región. Pasión por la biodinámica, creencia, religión y forma de vida acorde con el equilibrio, le hace en el 1989, ser el primer vigneron en convertir todo su viñedo a esta práctica.

Jean-Pierre, well-schooled by his grandfather in the art of second fermentation, creates Champagnes in which an oxydative style is sought, as he considers oxydation to be a revelation rather than a degradation. All his wine goes into barrel and it is an intense, powerful and full-bodied wine, the kind that doesn’t leave you indifferent ... Great Champagnes are not always an exercise in subtlety.

The Cuvée Robert Fleury is Jean-Pierre’s sparkling tribute to his grandfather, Emile, with a deep respect for his origins, his beginnings and his principles. Because, before you move forward with a clear view of where you are headed, you must first look back to the past and understand where you came from. He makes this cuvée in the same way as his grandfather used to, blending Pinot Noir, Pinot Meunier, Pinot Blanc and Chardonnay, fermenting the base wine in wooden vats, followed by a long ageing in barrel, fermentation with indigenous yeast, and ageing on a cork stopper as his forefather did, ensuring that his memory lives on in the champagne. The Champagne is vintage of course, because grandfather Emile, wanted the year to create the personality of each of his champagnes.

Then comes the endless waiting period, to ensure that the passing of the days, the months and the years leaves a mark of complexity that will make each champagne a one-off.

A nose that speaks of repose and ageing, with ripe stone fruit and bursts of nutty, smoky and yeasty notes, followed by a big, explosive and everlasting wine on the palate, reminding us that imperfection is something exciting and to be prized.

Here, we are uncorking intangibles, things that can only ever be felt, but not touched. Memories, tributes and celebration.

Because beauty lives on…

Jean Pierre, instruido a la perfección por su abuelo en el arte de la segunda fermentación, crea espumosos donde el estilo oxidativo manda, entendiendo la oxidación como una revelación y no como una degradación. Todos sus vinos pasan por barrica, son intensos, poderosos y contundentes, de los que no dejan indiferente… No sólo de sutileza nacen los grandes Champagnes.

La Cuvée Robert Fleury es un homenaje líquido que Jean Pierre hace a su abuelo Emile, en ese profundo respeto a sus orígenes, a sus comienzos, principios… Porque antes de continuar hacia delante, primero hay que echar una vista atrás y entender de donde venimos, para poder visualizar dónde vamos. Elabora esta Cuvée de la misma manera que su abuelo, mezclando Pinot Noir, Pinot Meuniere, Pinot Blanc y Chardonnay, fermentando el vino base en tinas de madera, para después pasar a una larga crianza en barrica, fermentación con levaduras indígenas y crianza con tapón de corcho en el estilo de su antepasado, para que su memoria siga viva en el líquido elemento. Por su puesto Millesime, Champagne de añada, porque el abuelo Emile quería que fuese el año quien marcase la personalidad de cada una de sus botellas… Tiempo, mucho tiempo de espera, aguardando que el paso de los días, de los meses y de los años deje una huella de complejidad que lo alce a ser irrepetible.

Una nariz que habla de reposo y crianza con las frutas de hueso maduras, destellos de frutos secos, ahumados y levaduras para pasar a una boca inmensa, explosiva y eterna que recuerda que la imperfección es preciosa y emociona.

Descorchar intangibles, de los que no se pueden tocar pero sí sentir… Recuerdos, homenajes y celebración. Y porque siempre nos quedará la belleza…

I still recall the day when my good

friend Xavi Nolla (head sommelier at Codorníu) called me to tell me about a project which would shortly come to fruition… A project founded on long-ageing, the power of single vineyard wines, and their blend.

He took me to see the project in its entirety in the cellars in Sant Sadurní d’Anoia and I was delighted by what I saw there. The project is housed in one of the most magical parts of the winery, where Josep Raventós created the first sparkling wine using the traditional method, the forerunner of Cava, in 1872.

buen amigo Xavi Nolla (Head Sommelier de Codorníu) me llamó para contarme un proyecto que pronto iba a ver la luz… Un proyecto que tendría como bandera la larga crianza y el poder de una parcela y sus mezclas.

Me llevó a ver todo el proyecto a las Cavas, en Sant Sadurní d´Anoia y la verdad es que me entusiasmó. Un proyecto que nace en una de las zonas con más magia de la bodega, la zona dónde Josep Raventós creó el primer espumoso por método tradicional, la antesala del Cava en 1872.

The mere idea excited me, as I am someone who believes that, before looking ahead, you first have to look behind, back to where you came from, you have to revisit this past before you head into the future. The fact that Celler Jaume, the company’s R&D winery, should create something in the very place where the foundations of cava were laid, clearly illustrates a decision to create a future that takes its origins into consideration. This is a change of course by Codorniu, who is searching for quality without concession 14

and, most importantly, creating beautiful stories behind each bottle that should be related and shared.

This project includes 5 cavas: 3 single vineyards each producing barely 300 bottles, with Jaume Codorníu at the base of the pyramid and the Cuvée 456 at the pinnacle.

The number 456 refers to the number of harvests that Codorniu carried out, without interruption, between 1551

Este mero dato me ilusionó, soy de los que piensan que antes de mirar hacia delante, primero hay que echar la vista atrás, para recordar de dónde venimos, repasar el pasado antes de caminar hacia un futuro… Que el Celler Jaume, como bodega de investigación se creara en el mismo lugar donde toman asiento los cimientos del Cava, muestra a las claras la decisión de crear un futuro que integre los orígenes. Un cambio de rumbo por parte de Codorníu, buscando calidad sin concesiones, y lo más importante… creando historias

preciosas que deben ser contadas y compartidas detrás de cada botella.

Un proyecto de 5 Cavas, 3 parcelarios de los que apenas salen 300 botellas de cada uno, Jaume Codorníu como base de la pirámide y 456 como cúspide. El número hace referencia a las vendimias ininterrumpidas que llevaba Codorníu desde el año 1551 en el 2007, 456.

I have to say I was impressed with this cava when I tried it, excellent quality liquid presented in packaging that lives up to the concept (ARS COLLECTA or Art Collection). A work of art in liquid form, made possible thanks to the patience and perseverance of someone who had the idea of giving these cavas the time they needed to express themselves in an unforgettable manner. Nearly 10 years waiting to be born, seeking freshness, rather than oxydation. Made from a blend of the wines from the La Pleta (Chardonnay), La Fideuera (Xarel·lo) and El Tros Nou (Pinot Noir) vineyards, this is without doubt a prestige cuvée.

Now comes its life after disgorgement, so let’s enjoy a future full of bubbles and emotion.

Cuando probé este cava, debo reconocer que me impactó, excelencia líquida, dónde una botella hace honor al proyecto (ARS COLLECTA o Colección de arte). Una obra de arte transformada al líquido elemento, posible solo gracias a la espera, la calma y la paciencia de alguien que pensó en invertir tiempo para que estas botellas se expresaran de forma inolvidable… Casi 10 años aguardando a la creación, sin búsqueda de oxidación, sino de frescura. Esta es sin duda una Cuvée de Prestigio basada en la mezcla de las parcelas de La Pleta (Chardonnay), La Fideuera (Xarel·lo) y El Tros Nou (Pinot Noir).

La vida después del degüelle aquí va a ser una realidad, así que disfrutemos de un futuro pleno de burbujas y emoción.

Taking part in a tasting led by Ton Mata is always a unique experience, due both to the incredible quality of the wines produced by his winery and his mixture of wisdom and sensibility, tinged with humility and passion. This creates a fascinating cocktail, or rather blend, of emotions.

Recaredo is one of the most reputable and consistent cava producers in the world. The style of its sparkling wines is austere and complex, its cavas do not seek to instantly impress through power and intensity, but require time and concentration in order to reveal their enormous complexity. The Recaredo style is one of electric, vibrant wines due to the lively, refreshing acidity that gives even the most mature wines a feel of eternal youth.

The Recaredo experience (we’d call it an experience rather than a tasting), held at Monvínic, began with a display of Jordi Mata’s masterful skill as he disgorged some of the cavas recently delivered directly from their cellars in Sant Sadurní. Jordi Mata learnt this traditional skill from his father and, although very few wineries still practice it today, it is essential at Recaredo because all of its production is aged with a natural cork stopper.

In fact, it all started there, Josep Mata Capelladas learnt the craft of disgorging cava bottles and worked for different producers within the sector until he finally decided to start his own production with grapes from his father-in-law’s vineyards.

Recaredo’s Private Reserve was created by Josep in 1962. He set out to produce a cava with 6 years’ ageing, which was considered a crazy notion at a time when ageing was much shorter and few producers had ventured to explore the potential of ageing cava.

Another feature of this wine is that, as well as being made from a base of Xarel.lo, it also contains a high percentage of Macabeo, a grape which is not especially rated today, particularly for wines intended for ageing, but which used to be considered a fine and elegant grape.

Since its opening, the winery has continued to extend its vineyards, which it considers to be essential to the quality of its wines. Recaredo owns estates in 6 district areas very close to Sant Sadurní. They converted to organic growing years ago, and the vineyards have been managed according to biodynamic principles for some time now.

The wine tasting was set to music by Cuban pianist, Omar Sosa, especially composed for the wine’s 50th anniversary in 2012. This created a multi-sensory experience and allowed us to explore the balances, harmonies and textures of this wine in a unique fashion.

Asistir a una cata dirigida por Ton Mata es siempre una experiencia única, tanto por el increíble nivel de los vinos que elabora en su bodega, como por una mezcla de sabiduría y sensibilidad matizada con buenas dosis de humildad y pasión contenidas. Un maravilloso coctel, o mejor dicho coupage de sensaciones que seduce y enamora.

Recaredo es uno de los productores de cava más serios y constantes del panorama vinícola. El estilo de sus vinos espumosos es austero y complejo, sus cavas no buscan impresionar desde el primer momento a base de potencia e intensidad, sino que requieren cierto tiempo y concentración para captar la enorme complejidad que desprenden.

El estilo Recaredo es el de unos vinos eléctricos y vibrantes gracias a unas acideces vivas y refrescantes, que aportan incluso a los vinos más maduros, una sensación de eterna juventud.

La experiencia Recaredo (permitan que le llamemos experiencia en lugar de cata) que se vivió en Monvínic, se inició con la maestría de Jordi Mata degollando algunos de los cavas recién llegados directamente de su bodega de Sant Sadurní. Un tradicional oficio que aprendió de su padre y que aunque muy pocas las bodegas lo mantienen actualmente, en Recaredo se hace imprescindible, ya que el 100% de su producción se envejece con tapón de corcho natural.

De hecho ahí empieza todo, cuando Josep Mata Capelladas aprende el oficio de degollador de botellas de cava y trabaja para diferentes bodegas del sector hasta que decide iniciar su propia producción utilizando las viñas de su suegro.

El Reserva Particular de Recaredo fue creado por Josep en 1962. Con él se propuso elaborar un cava de 6 años de crianza, una pequeña locura para una época en la que las crianzas eran mucho más cortas y pocos productores se atrevían a explorar las posibilidades de envejecimiento del cava. Otra característica de este vino es que además de elaborarse con la base de uva xarel. lo, conserva un alto porcentaje de uva macabeo, una uva no tan valorada actualmente, sobre todo para vinos de guarda, pero que antiguamente se consideraba como la uva más fina y elegante.

Desde su inauguración la bodega no ha dejado de incrementar su patrimonio en un ámbito que es crucial y definitivo para la calidad de los vinos, el viñedo. En Recaredo poseen fincas en 6 municipios, muy próximos a Sant Sadurní. Hace años se pasó a la agricultura ecológica, y desde un tiempo a esta parte las viñas se cultivan siguiendo los criterios de la agricultura biodinámica.

La cata de los vinos estuvo acompañada de la música del pianista cubano Omar Sosa, una música creada especialmente en el año 2012 para el 50 aniversario de este vino. Una experiencia multisensorial y una manera única de profundizar en los equilibrios, armonías y texturas de este vino.

RECAREDO GRAND RESERVA BRUT NATURE 2005 PRIVATE RESERVE The youngest wine in the tasting, yet it has undergone 11 years’ ageing! An elegant, unfussy fine wine, releasing a refreshing citrus scent, subtly sweet honeyed overtones and notes of spice and anise, against a backdrop of subtle toasted aromas. It is elegant on entry with the bubbles coating the palate and synergizing with a fresh, deep, citrus acidity. It has a savoury finish that invites you to carry on drinking, with a subtle, slightly bitter, touch and a nutty aroma which add complexity and persistence.

El vino más joven de la cata y aun así tiene 11 años de crianza!!! Un vino sin estridencias, elegante y fino del que van emanando perfumes refrescantes de cítricos, sensaciones dulces sutilmente amieladas, recuerdos anisasdos y especias, sobre un fondo de sutiles aromas tostados. Su entrada en boca es elegante, con un carbónico envolvente que se sinergia a una acidez fresca, cítrica y profunda. Con un final sabroso que invita a seguir bebiendo, donde una sutil sensación ligeramente amarga y un recuerdo de frutos secos, aportan complejidad y persistencia.

RECAREDO GRAND RESERVA BRUT NATURE 2004 PRIVATE RESERVE A wet year, resulting in a wine that is somewhat shy to begin with, but which gradually comes round and reveals aromas of lemon, fresh vegetal notes and a creamy sensation created by the ageing process. It opens up over the palate, giving way to a lively acidity that provides a long-lingering and honed finish. The carbon dioxide is creamy, creating a certain volume.

Towards the end, we find lovely intense nutty notes, a common denominator in several of the wines and which give it extra complexity and persistence.

Una añada lluviosa que crea un vino que se muestra algo tímido al inicio, pero que poco a poco va despertando y despliega unos aromas de limón, unos frescos recuerdos vegetales y ciertas sensaciones cremosas fruto de la crianza. En su paso por boca se va abriendo dejando paso a una acidez viva que aporta un final persistente y afilado. El carbónico es cremoso y aporta cierto volumen. Finalmente aparecen recuerdos de frutos secos de buena intensidad, común denominador en varios de los vinos y que aporta un plus de complejidad y persistencia.

RECAREDO GRAND RESERVA BRUT NATURE 2003 PRIVATE RESERVE 2003 is remembered by all those who experienced it as a spring and summer of scorching, dry heat. This year was especially challenging for viticulture. The resulting wine has a warm feel to it, with ripe fruit aromas and toasted notes, and a dried herby backdrop reminiscent of rosemary. Yet it still managed to retain Recaredo’s typical subtlety and elegance.

The wine shows a certain volume and creaminess on the palate, with a more restrained acidity and an intense nutty finish.

La añada 2003 es recordada por todos los que la sufrimos por unos meses de primavera y verano con un calor tórrido y seco. Este año fue especialmente complicado para la viticultura. El vino resultante se muestra con una sensación cálida, con aromas de fruta madura y recuerdos tostados, con un fondo de hierbas secas que recuerdan al romero, siempre sin perder la sutileza y elegancia características de la casa. Su paso en boca muestra cierto volumen y cremosidad, con una acidez más contenida y un final intenso de frutos secos.

RECAREDO GRAND RESERVA BRUT NATURE 2002 PRIVATE RESERVE Before the unusually hot 2003, we had another tricky year, but in this case due to episodes of rain and a particularly cloudy summer. The nose is subtle and delicate, but shows great complexity (lemon peel, apple, fresh herbs, anise, fennel, brioche, honey, etc.).

The palate reveals a wellstructured acidity (boding well for the wine’s longevity), enveloped by a soft creamy sensation created by the carbon dioxide and the ageing process. The finish is very long, persistent and of great elegance.

Antes de la inusualmente cálida añada 2003, veníamos de una añada también complicada pero en este caso por los episodios de lluvia y por un verano especialmente nublado. La nariz se muestra sutil y delicada, pero de gran complejidad (piel de limón, manzana, hierbas frescas, anís, hinojo, brioche, miel…) Su paso por boca presenta una gran estructura ácida que le augura longevidad, rodeada de una suave y envolvente sensación de cremosidad, gracias al carbónico y la crianza. El final es muy largo, persistente y de una gran elegancia.

RECAREDO GRAND RESERVA BRUT NATURE 2001 PRIVATE RESERVE Another hot year that produced, by contrast, one of the best Private Reserves. The wine shows aromatic intensity with brioche and cream aromas, notes of mushroom, honey, a cinnamon sweetness, and fine, refreshing aromas of fennel and anise. Broad, creamy and almost candied on the palate, with freshness created by the carbon dioxide, and a very savoury finish, prolonged by a subtle and agreeable sensation of bitterness.

Una nueva añada cálida que produjo por el contrario uno de los mejores Reservas Particulares. Intensidad aromática de brioche y crema, recuerdos de champiñón, miel, dulzores de canela y refrescante y finos aromas de hinojo y anís. Una boca amplia, cremosa, casi confitada con un carbónico que aporta frescor; y un final muy sabroso alargado por una sutil y agradable sensación de placentero amargor.

RECAREDO GRAND RESERVA BRUT NATURE 2000 PRIVATE RESERVE We now come to what is surely the most complete cava of the tasting, somewhat of a feat among so many great wines.

It shows intense aromas of pastry, cream, brioche and toast. There are notes of candied fruit alongside fresh sensations of citrus and fennel.

Subtle on entry to the palate, the wine grows slowly, taking on size and flavour. Fresh acidity, candied fruit and a long-lingering finish. This wine displays almost perfect balance and all the typical aromatic features of the wines from Recaredo.

Llegamos al que es seguramente el cava más completo de la cata, cosa que resulta un auténtico prodigio entre tantos grandes vinos. Aromas intensos de pastelería, crema, brioche y pan tostado. Recuerdos de fruta confitada y al mismo tiempo sensaciones frescas de cítricos e hinojo. La boca tiene una entrada sutil que va creciendo poco a poco, se hace cada vez más amplio y sabroso. Acidez fresca, fruta confitada y final de gran persistencia. Un vino con un equilibrio casi perfecto y con todas las características aromáticas de los vinos de la casa.

RECAREDO GRAND RESERVA BRUT NATURE 1999 PRIVATE RESERVE An exciting wine as it was the oldest in the tasting and which, after 18 years, has a somewhat closed and mysterious nose, with aromas of lemon, orange peel and fresh herbs, against a backdrop in which the brioche and nutty aromas from the wine’s ageing show through.

It is incredibly soft on the palate, with well-integrated carbon dioxide and a subtle character. A youthful and refreshing acidity contrasts with complex nutty notes, indicating the start of oxydation, a marvellous, natural evolution that gives the wine depth and nobility.

Un vino emocionante al ser el más antiguo de la cata, el cual después de 18 años muestra una nariz algo cerrada y misteriosa, donde aparecen aromas de limón, piel de naranja y hierbas frescas, sobre un fondo en el que se revelan los aromas de brioche y frutos secos de la crianza.

La boca es increíblemente suave, con un carbónico perfectamente integrado y de gran sutileza.

Una acidez juvenil y refrescante contrasta con complejas notas de frutos secos, que denotan un inicio de cierta oxidación, una evolución natural y maravillosa que aporta profundidad y nobleza al vino.

Luxury is about enjoying something unique, and the Private Reserve cavas from Recaredo are pure luxury, a luxury without the superfluous and trivial trappings. The wine’s small production, its unique style, and Recaredo’s ability to respect a way of doing things that has remained unchanged for generations, make this wine a real gem and one which is up there with the greatest sparkling wines in the world.

The oft held view that all wines displaying a pink

hue are synonymous with cheap plonk, only suitable for pseudo-teetotallers out on a picnic, is particularly unfounded when you look at the Champagne world.

Especially when the gorgeous pink hue has been created by the elite of Champagne, displayed in the loftiest cuvées from the grandes maisons, in the unique rosés from the cult vignerons and in the other pink marvels that can be found in this hallowed region.

And it is here, in the sparkling wine stratosphere, where the evidence is hard to ignore: if the miracle of Champagne is based, among other things, on the art of creating fine white wines from red grapes, then rosé champagnes are a fascinating exception.

You only have to compare the prices commanded by the white and rosé versions of the cuvées de prestige from the big Champagne houses, to realize that the great rosé champagnes have an added value. They are rarer and more unique, their production is much smaller and often more complex, because it requires adding a process to the traditional methodology, macerating the must on the grape skins or adding red wine to the assemblage, in order to obtain the magical result.

And obviously, behind the best rosés, there lies the hand of man, who works the virtuous alchemy, ensuring that the macerated red wines are blended with the whites in that harmonious concert of sensations that marks a good champagne. Here too the raw material is of prime importance, because only Pinot Noir and Pinot Meunier from the most exceptional vineyards will make great rosés.

In addition to the above requirements, the chefs de cave at the big Champagne houses and the most skilled small producers have their own formulas for creating rosé champagnes that respect the style and quality tenets of each Champagne house.

Los prejuicios que suelen cebarse con todos aquellos vinos que lucen el color rosa –como arquetipo de bebedizo inocuo y fugaz, sólo apto para pseudoabstemios en día de picnic– resultan especialmente infundados cuando se meten la narices en el universo de Champagne.

Sobre todo, si el tono rosado se presenta en la élite de las burbujas: las cuvées más excelsas de las grandes maisons, los singulares rosés de los vignerons de culto y demás maravillas rosas que se dan en esta sacrosanta región.

Porque es en el ámbito de los espumosos estratosféricos donde salta la evidencia: si el milagro de Champagne se sustenta –entre otras cosas– en el arte de concebir grandes vinos blancos a partir de uvas tintas, los champagnes rosados son una fascinante excepción.

Alcanza con comparar los precios que lucen en el mercado las cuvées de prestige de las grandes casas, en su versión blanca y rosada, para concluir en que los grandes champagnes rosés tienen un valor añadido: son más raros y singulares, su producción es escasa y, a menudo, también más compleja, ya que exige sumar un proceso a la metodología tradicional, bien macerando los hollejos de las uvas en el mosto o añadiendo vino tinto al assemblage para obtener el mágico resultado.

Como no podría ser de otra forma, detrás de los mejores rosés está la mano del hombre, que obra la virtuosa alquimia para que los vinos macerados se integren con los blancos en el armónico concierto de sensaciones que supone un buen champagne. Aunque aquí también la materia prima resulta crucial, porque sólo las pinot noir y meunier procedentes de viñedos más excepcionales señalan el camino que conduce a los grandes rosados.

Más allá de estas pautas generales, los chefs de cave de las grandes maisons, así como los pequeños productores más diestros, manejan su propia fórmula para elucubrar aquellos rosados que sintonizan con el estilo y los postulados cualitativos de cada casa.

This is the case of the Brut Rosé from Billecart-Salmon, perhaps the most wellknown champagne from this house founded in 1818 by Nicolas François Billecart and Elisabeth Salmon. This non-vintage champagne includes a proportion of Pinot Noir vinified as red to define its characteristic expression, replete with floral and red fruit aromas.

The Cuvée Rosé Brut from Laurent-Perrier can claim similar fame. This champagne has the particularity of being produced by the bleeding method, with a short maceration of the Pinot Noir must on the skins to accentuate the wine’s fresh, expressive character.

In this category, we would include the Drappier Grande Sendrée 2006, which owes its name to a plot of vineyards covered in ash (“cendre”) following a fire that destroyed Urville in 1838. This champagne shows the character and persistence of the Pinot Noir (55%) and the distinctive character and finesse of the Chardonnay (45%) in a particularly elegant vintage. We would also pick out the Dom Ruinart Rosé 2002, a delicious exception from a Champagne house specialized in Chardonnay: delicate, spicy and very fine, it includes 20% Pinot Noir vinified as red wine. Even Moet & Chandon, famous around the world as being the birthplace of sparkling wine, includes an excellent vintage rosé in its range: Grand Vintage Rosé 2008.

As well as these celebrated cuvées, we would suggest that the reader seek out some of the Champagnes created by producers who, although smaller, are still able to deliver an equally stately drinking experience. One such example is Jacquesson, who, when the conditions of the vintage allow it, pulls a monumental rosé out of its hat, i.e. the Dizy Terre Rouge Extra-Brut 2008, which is 79% Pinot Meunier and uses grapes from a single plot.

Más allá de todas estas célebres cuvées, recomendamos al lector otras pergeñadas por productores más minoritarios pero que son capaces de ofrecer un placer igualmente majestuoso. Uno de ellos es Jacquesson, que cuando las condiciones de la añada lo permiten se saca de la manga un rosé monumental, Dizy-Terre Rouge Extra-Brut 2008 producido con la fruta recogida en una única parcela, con un 79% de pinot meunier.

This Champagne is an exciting expression of a terroir considered to be “the Montrachet of Champagne”. Check out too, the exotic Sève Rosé de Saignée 2009 from brothers, Serge and Olivier Horiot, perhaps the “reddest” of all the rosé champagnes, with an intense colour and almost Burgundian profile. And, of course, let’s not forget another dark, tannic and voluptuous rosé: the Rosé Sauvage from Piper Heidsieck.

There are three rosés from the same Group as Moët (LVMH) which can boast membership of the exclusive club of legendary cuvées: the sumptuous Dom Perignon, which has produced some of the most monumental rosé champagnes of all time and which, this year, is presenting a special edition of its Vintage 2004, in packaging designed by artist Michael Riedel; the nigh on impossible to find Krug Rosé, non-vintage, born of a prodigious assemblage, in which there is always a secret percentage of Pinot Noir macerated on the skins and fermented in barrel; and the very luxurious Veuve Clicquot Brut Rosé Cave Privée, whose old vintages command scandalously high prices (the latest is 1990).

The special editions brought out by the big Champagne houses from time to time... offer some other interesting alternatives.

One of the most recent of these is the Belle Époque Rosé 2005 Edition Automne, with which Perrier-Jouët pays tribute to “the beauty of the ephemeral colours, aromas and flavours of Autumn”, according to Hervé Deschamps, its chef de cave.

Ossian is one of the most prestigious wineries in Spain.

Its organic vineyards are the oldest registered and certified in the Rueda D.O., as well as being the highestlying. Its wines have changed the concept of the Verdejo grape variety, achieving quality and finesse and a potential longevity previously unknown. The adventure began in 2005 with the association of winegrower, Ismael Gozalo and Javier Zaccagninin. They went to Burgundy to meet Pierre Millemann, the maker of prestigious, fine French whites and have him oversee the project. The result was so good that they quickly doubled production and invested in a new winery which they opened in 2006. Today the winery has been acquired by the famous Pago de Carraovejas, ensuring an excellent future for its wines.

Capitel is the culmination of the quest, initiated over 10 years ago, to make the finest wine possible in the Castilla y León region. This Verdejo comes from pre-phylloxera vines of between 100 and 200 years of age, and is only produced in selected years, using the best grapes from the estate’s oldest vineyards, in what would be a “selection of the selection”. Half the must ferments in new oak barrels and the other half in barrels previously used for one vintage. It is aged on its lees for 10 months, during which time bâtonnage (stirring up of the lees) is carried out.

The result is a concentrated, full, round wine with plenty of volume and intense aromas of ripe fruit and oaky notes from barrel ageing. An almost perfectly executed white wine.

Su viñedo ecológico es el más antiguo registrado y certificado en la D.O. Rueda así como el situado a mayor altitud también. Sus vinos han hecho cambiar el concepto de la variedad verdejo, consiguiendo una calidad y un potencial de finura y longevidad desconocido hasta la fecha. Una aventura que empezó en 2005 de la unión del viticultor Ismael Gozalo y de Javier Zaccagninin, que viajaron hasta borgoña para encontrar a Pierre Millemann, elaborador de prestigiosos y grandes blancos franceses, para que supervisara el proyecto. El resultado fue tan bueno que permitió rápidamente duplicar la producción y poder invertir en una bodega nueva que se estrenó en 2006. A día de hoy la bodega ha sido adquirida por el famoso Pago de Carraovejas, lo que garantiza un inmejorable futuro a sus vinos.

Capitel es la culminación a la búsqueda iniciada hace más de 10 años para conseguir el mejor vino posible en la región de Castilla y León. Este verdejo nace de viñas prefiloxéricas de entre 100 y 200 años de edad, y solo en años escogidos con las mejores uvas de los viñedos más viejos de la finca, lo que vendría a ser una selección de la selección. Después que fermente la mitad del mosto en barricas nuevas de roble y la otra mitad en barricas de segundo año, se cría sobre sus lías durante 10 meses más durante los cuales se le hace battonage.

El resultado es un vino concentrado, ampio y redondo, con mucho volumen y aromas intensos de fruta madura y notas de la crianza en barrica. Un vino blanco a nivel de ejecución casi perfecto.

Mas la Plana is its flagship estate producing one of its most prestigious wines. It rose to fame in 1979, when it came first in the Cabernet category at the Gault & Millau’s Wine Olympics’ blind tasting, beating some wellknown, illustrious French wines.

Mas La Plana comes from a 29-hectare, low-production vineyard planted with Cabernet Sauvignon by the Torres Family in the Pacs del Penedès area in 1966.

This 2011 boasts a very bright ruby hue with purple tints. Great aromatic intensity on the nose, with pronounced ripe fruit aromas (raspberries, redcurrants) with hints of sweet spices (cocoa, cloves, vanilla) and earthy aromas. It is exquisite and elegant. On the palate, the wine is broad and harmonious, with good structure and nice acidity.

It possesses a long, fruity aftertaste with balsamic and aromatic wood aromas, and has plenty of life ahead of it.

The founders decided that, if they were to make the best possible wine, they should use the 90-year-old Malbec vines growing at 1,067 metres above sea level, in an area known as Las Compuertas. This is a parcel of acidic rocky soil famous for its dense Malbecs and the nice natural acidity of its wines. The vineyard altitude, along with the nutrition provided by the ice melt from the Andes, result in crunchier, crisper grapes. In addition, the variation in day and night time temperatures encourages the accumulation of certain aroma and flavour components, especially polyphenols responsible for a wine’s colour, body and structure.

The freshness of its vineyards provides the wines, like this Afincado (single estate), with the aromatic and textural depth they need to undergo 18 months’ ageing in new barrels and ensure that this does not mask the fruit or overpower the wine.

This is a wine with a good structure and an elegant bouquet that includes aromas of black cherries and blackberries nuanced with creamy notes of toasted oak against a liquorice and menthol backdrop.

Although it is still relatively young, this concentrated and dense wine is surprisingly well balanced and accessible. We think we can safely say that this is one of Argentina’s best wines.

For this latter trio of holidays, we’ve even coined a term to try to make sure no one feels left out: Christmahanakwanzika. (No, I’ve never actually heard someone say it! It’s the thought that counts.) And, of course, there’s the New Year to celebrate, too.

Yet getting wine right isn’t so easy. One of the keys to hosting a successful holiday is discerning the right combination of deliciousness and price point. Bring out too fancy a wine that someone won’t enjoy and you feel you’ve wasted your wine and possibly your cash.

Open something too simple and you feel the wine hasn’t risen to the occasion. There needs to be something for everyone, and this typically means choosing several wines rather than just one of each color.

After the obligatory – and, of course, celebratory round of sparkling wine, I offer two white wines. One is always an off-dry Riesling for those that like some sweetness and don’t really drink wine otherwise (my Mom and one of my best –male– friends.) The other is dry and minimally oak-influenced. In the red category, there’s always a Pinot Noir (a real Pinot Noir – not one of the Syrah or Zinfandel-influenced versions of the variety) and a heavier red. Like I do at Thanksgiving, I prefer to highlight USA wines during the holidays. Here are my picks for my holiday gatherings this year.

ocemos diversas festividades de fin de año, comenzando por el Día de Acción de Gracias (¡sí, es una fiesta que celebra la inmigración, Presidente electo Trump!), pasando por Hanukkah, Navidad y Kwanzaa. Para este último trío de fiestas, acuñamos un término para asegurarnos de que nadie se sienta excluido: Navidahanakwanzika (no, en realidad nunca he oído a nadie usarla, es la intención lo que cuenta).

Y, por supuesto, también hay que celebrar el Año Nuevo.

Sin embargo, acertar al escoger un vino no es tarea fácil.

Una de las claves de ser el anfitrión de una celebración exitosa es lograr la combinación justa entre lo delicioso del vino y su precio. Si sirves un vino demasiado valioso que algunos no logren apreciar, sentirás que has desperdiciado tu vino y posiblemente tu dinero. Por otro lado, si abres una botella demasiado simple, sentirás que el vino no estuvo a la altura de la ocasión. Tiene que haber algo para cada quien, y, típicamente, esto implica elegir varios vinos en vez de solo uno por color.

Luego de la ronda obligatoria de vino espumoso que da comienzo a la celebración, ofrezco dos vinos blancos. Uno siempre es un Riesling semiseco, para quienes les gusta algo dulce y normalmente no beberían vino (mi mamá y uno de mis mejores amigos - un hombre). El otro es seco y tiene una mínima presencia de roble. En la categoría de los tintos, siempre hay un Pinot Noir (un Pinot Noir de verdad -no de los que están mezclados con Syrah o Zinfandel) y un tinto más pesado. Al igual que hago durante Acción de Gracias, prefiero resaltar los vinos norteamericanos durante las festividades. Esta es mi selección de vinos para celebrar las fiestas este año.

ROEDERER ESTATE L’ERMITAGE BRUT This is as close to Champagne as you can get! Made from a Champagne house that has an off-shoot in Anderson Valley, this is – year in and year out – a sublime bottling. It’s beautifully toasty and hardly lets on to its “New World” origins. Its complexity is thought-provoking, so it is certainly noble enough to carry your most complex holiday menus. PS Go for the basic Brut bottling if you’re working on a more conservative budget. It’s darn near as fabulous. ¡Es lo más parecido a un champagne que podrás conseguir! Elaborado por una casa de Champagne con filial en el Valle Anderson, es - año tras año - una botella sublime. Con notas tostadas maravillosas, apenas deja entrever sus orígenes “nuevomundistas”. Su complejidad es estimulante; sin duda alguna, es lo suficientemente noble para acompañar hasta el más complejo menú festivo.

PD: opta por la botella de Brut básica si cuentas con un presupuesto más conservador. Es casi igual de fabulosa.

BROOKS ESTATE RIESLNG Always a show-stopper with a touch of residual sugar giving the wine medium body, the Brooks Ara Riesling is hard to not gulp down. That said, if you have an older vintage, you’ll find yourself lucky. Brooks is a Riesling specialist, and its Rieslings age incredibly well. The substantial concentration of this wine’s cantaloupe and nectarine flavors coupled with its brilliantly balanced and refreshing acidity make for a tantalizing treat.

Un vino que siempre se roba el show, con un toque de azúcar residual que le da un cuerpo medio, es difícil no tomarse la botella entera de Riesling de Brooks Ara de una sola vez. Habiendo dicho esto, si logras conseguir una añada más antigua, serás muy afortunado. Brooks es un especialista en Rieslings, y sus Rieslings envejecen magníficamente bien. La concentración substancial de los sabores a melón y nectarina en este vino, en conjunto con su acidez balanceada y refrescante, lo convierten en toda una exquisitez.

DUTTON-GOLDFIELD CHARDONNAY RUED DUTTON RANCH This wine shows sexy tropical fruits of mango, papaya and banana drizzled with honey. Not only is this vineyard named Rued, but the clone planted here is, too.

Rued is known for its exotic qualities as it is a Chardonnay “musqué” selection.

This juicy, supple and approachable wine shows light toasty oak notes in cooler vintages like 2010 and 2011.

Este vino presenta notas sexys de frutas tropicales como mango, papaya y banana con miel. No es solamente el viñedo que se llama Rued, sino también el clon que está plantado allí. Rued es conocido por sus cualidades exóticas, pues es una selección de Chardonnay “musqué”. Este vino jugoso, sutil y abordable se expresa con notas de roble ligeramente tostadas en añadas más frías como 2010 y 2011.

CRISTOM PINOT NOIR MOUNT JEFFERSON When it comes to a lighter weight USA red wine, Oregon Pinot Noir is the high point. I prefer lean and elegant styles to beefier ones. Certainly, every possibility exists. Go for the inky ones if you prefer, but I’ll take any vintage of Cristom Pinot Noir Mt Jefferson Cuvée. It dances between black and red berries. Its wholesome and smooth and one of my most reliably favorite wines on the planet.

Cuando de vinos tintos norteamericanos ligeros se trata, el Pinot Noir de Oregon es la máxima expresión. Yo prefiero los de estilo delicado y elegante a los más robustos. Ciertamente, existen todas las alternativas posibles. Puedes optar por vinos de tono más oscuro si deseas, pero yo prefiero antes cualquier añada de la Cuvée Mt Jefferson Pinot Noir de Cristom. Se pasea entre frutos negros y rojos.

Es honesto y suave, y uno de mis vinos favoritos, y de los más fiables, en el mundo.

CADENCE BEL CANTO CARA MIA I’m sure everyone is thinking the last wine has to be a Napa Cabernet Sauvignon.

Frankly, I’m not recommending one as they are released many years too early, and they cost a small fortune – something to consider if you’re hosting a big gathering. Luckily, Washington State wines deliver terrific value for money. This spritely blend of Cabernet Franc and Merlot can be surprisingly pale wine, but color means zero when it comes to quality and quaffability. It’s fragrant, elegant and harmonious, so it’s a terrific companion to any holiday meal.

Estoy segura de que todos están pensando en que el último vino tiene que ser un Cabernet Sauvignon de Napa. Para ser honesta, no estoy recomendando ninguno porque los sacan al mercado demasiado temprano, y cuestan una pequeña fortuna -algo que se debe considerar si eres el anfitrión de una celebración grande-.

Por suerte, los vinos del estado de Washington ofrecen una excelente relación calidad-precio. Este vino, una mezcla de Cabernet Franc y Merlot, puede ser sorprendentemente pálido, pero el color no significa nada en cuanto a la calidad y la facilidad de beber el vino se refiere. Es aromático, elegante y armonioso, lo que lo hace un acompañante excelente para cualquier comida festiva.

EVENTOS: POZO DE TINTA, UN LAND DESIGN EN BODEGA NUMANTHIA

The Bodega Numanthia team, with its estate director, Lucas Löwi, at the head, gave us a day to remember.

We drove to the town of Valdefinjas in the Toro D.O. and to Numanthia’s oldest vineyards. Here, set in the heart of nature, the Numanthia winery has paid tribute to the vine, the landscape and the savoir-faire of man, with an installation, created by a design studio, shaped like a rough diamond to represent the terroir as something which is still “virgin” and to be polished.

Three bottles specially chosen by the winery’s director had been lowered into a well dug in the middle of the vineyards, and these wines were tasted by the participants. This gave the tasting ritual an authentic character that would be difficult to beat, given that we tasted the fruit of the earth, in the very spot where the wines are born.

We were later treated to superb catering that befitted the occasion.

Una jornada para el recuerdo fue la que nos ofrecieron los componentes de Bodega Numanthia, con su director técnico, Lucas Löwi, a la cabeza.

Nos desplazamos hasta la población de Valdefinjas, en la D.O.Toro, y allí llegamos hasta uno de los viñedos más antiguos que tiene la bodega. En medio de la naturaleza Bodega Numanthia rindió un homenaje a las vides, a los paisajes y a la mano del hombre.

De la mano de un estudio de diseño, se ideó una figura parecida a lo que sería un diamante en bruto, que viene a representar lo que es el terroir, algo que sigue todavía “virgen” y que todavía se puede pulir.

Tres botellas escogidas especialmente por el director de la bodega, habían sido introducidas en el pozo excavado en medio del viñedo, y posteriormente fueron catadas por los allí presentes lo cual daba al ritual de la cata una autenticidad difícil de superar, ya que estábamos catando el fruto que la tierra había dado en el mismo sitio en el que brotan los vinos de la bodega.

Posteriormente nos deleitaron con un cátering que estuvo a la altura de las circunstancias.

With Spanish actress, Leonor Watling, as the

face of its “Something wonderful is going to happen” campaign, Codorniu presented its new promotional concept in the wondrous setting of Barcelona’s Palau de la Música Catalana. New, because they presented it in September (well ahead of the Christmas campaigns) and they intend to run it for at least a year.

The campaign conveys the message that any time, circumstance or location is perfect for enjoying a bottle of Codorniu cava.

It is a call to positivism from Codorniu in which the element of surprise is an important factor. The idea is that if you come across a bottle of cava unexpectedly, you know that “SOMETHING WONDERFUL IS GOING TO HAPPEN”...

El concepto de la campaña es tomar conciencia de que cualquier momento, circunstancia o situación puede ser buena para celebrar algo y hacerlo con cava. Es un concepto de positivismo lo que nos plantean desde Codorníu y para ello, la sorpresa es un factor a tener en cuenta. Que te encuentres una botella de cava sin esperarlo… es que ALGO MARAVILLOSO VA A PASAR…

EVENTOS: SAN SEBASTIÁN GASTRONOMIKA

Our main reason for visiting Gastronomika was to attend the various winerelated events.

As per the tradition of recent years, the Wine & Win competition took place during the event. This was coordinated by Ferran Centelles, a former contributor and friend of our publication, and currently correspondent for Jancisrobinson.com in Spain. This year he was joined by Guillermo Cruz, head sommelier at Mugaritz (2 Michelin stars), who also writes for Selectus.

Another highly anticipated event was the presentation by Josep “Pitu” Roca (sommelier at the 3 Michelin star Celler de Can Roca restaurant), of his book “TRAS LAS VIÑAS” (through the vineyards), which was accompanied by a masterful tasting led by the man himself. The room, as you might expect, was full to the brim.

The Ribera del Duero D.O. was also there with a tasting of its top flight wines. In addition to the wines, the other stars were, once again, Guillermo Cruz and Ferran Centelles, with their commentary and presentations on each wine delighting all those attending this masterclass tasting.

One of the oldest producers in Spain, Bodegas Torres, also ran a fascinating tasting, at which we got to try all the top wines from the 2010 vintage (Milmanda, Mas La Plana, Grans Muralles, Reserva Real and Perpetual) and appreciate the differences between them depending on the area the grapes came from.

Codorniu, which is heavily featured in this issue, was also present with a fascinating tasting of various wines and cavas from the different regions where this Catalan group’s wineries are located (Codorniu, Bodegas Bilbaínas, Scala Dei and Legaris). And who were the masters of ceremony? I’m sure you’ve guessed...

Nuestra presencia en la Gastronomika tiene, como principal objetivo asistir a los diferentes eventos que están relacionados con el mundo del vino.

Siguiendo la tradición de estos últimos años, se sigue celebrando el concurso Wine & Win, coordinado por un excolaborador y amigo de nuestra revista, y actual corresponsal de Jancisrobinson.com en España: Ferran Centelles. Este año estuvo acompañado por Guillermo Cruz, sumiller jefe de Mugaritz (2*Michelin) y colaborador de nuestra publicación.

Otro de los eventos que tuvo una gran expectación fue la presentación por parte de Josep “Pitu” Roca, sumiller del Celler de Can Roca (3*Michelín), de su libro “TRAS LAS VIÑAS”, la cual fue acompañada de una cata magistral que él mismo dirigió. La sala, como suele ser habitual, llena hasta la bandera.

La D.O. Ribera del Duero también hizo acto de presencia con una gran cata de vinos de muy alto nivel. Además de los vinos, los otros protagonistas fueron, nuevamente, Guillermo Cruz y Ferran Centelles, que con sus comentarios y las presentaciones de cada vino, hicieron las delicias de todos los que pudimos asistir a esta cata magistral.

Una de las bodegas históricas de España, Bodegas Torres también hizo una cata muy interesante, en la que pudimos degustar todos los vinos TOP de la añada 2010 (Milmanda, Mas La Plana, Grans Muralles, Reserva Real y Perpetual) y observamos las diferencias entre ellos en función de la zona de la que provenían las uvas.

Codorníu, que en esta edición copa buena parte de nuestra páginas, también estuvo presente con una cata muy interesante en la que degustamos diferentes vinos y cavas provenientes de las diferentes zonas geográficas en las que este grupo catalán tiene ubicadas sus bodegas (Codorníu, Bodegas Bilbaínas, Scala Dei y Legaris). ¿Adivinan quienes fueron los maestros de ceremonias? Seguro que han acertado…

Sarah Jane Evans (British journalist), Josep “Pitu” Roca (Celler de Can Roca - 3 Michelin stars), Fina Puigdevall (Les Cols - 2 Michelin stars), were among the main speakers.

The forum was attended by over 250 professionals from various backgrounds and nationalities, illustrating the event’s global reach.

The NH Collection Casino in Madrid was the

venue for the first IWC (International Wine Challenge) Merchants Awards in Spain. The gala event, led by jury president, Pedro Ballesteros MW, a contributor to our magazine, was preceded by a cocktail at which the guests could try various wines from the different D.O.s which now go under the new Vinos de Castilla - La Mancha brand name.

It was a low-key, well-managed ceremony. Among the more than 200 attendees were our director and a number of prominent figures from the wine world including Pedro Bonet (President of the Cava Regulatory Board), Guillermo Cruz (head sommelier at Mugaritz, 2 Michelin stars) and journalists such as Sergio Sauca (RTVE) and Alberto Luchini (El Mundo).

In addition to the usual awards for the best wines in each category, the best wine tourism offer, the best oenologist and the best sommelier, etc., there were two awards that recognized the achievements of its recipients: Miguel Torres (senior) received the “Spanish wine personality” award, and Custodio Zamarra (“sommelier among sommeliers”) received the “Lifetime achievement” award. Both were given the loudest and longest applause of the night.

We hope to be back at the awards next year and, who knows, maybe we will be up for the “Best wine publication” award!

De la mano del presidente del Jurado, Pedro Ballesteros MW, colaborador de nuestra revista, la gala fue precedida por un cóctel durante el cual se pudieron degustar diferentes vinos de las diferentes denominaciones de origen que están en la región de Castilla La Mancha.

Una ceremonia sobria y seria. Entre los más de 200 asistentes a la ceremonia, entre los que se encontraba nuestro director, personas destacadas en el mundo del vino, como Pedro Bonet (Presidente del Consejo Regulador del Cava), Guillermo Cruz (jefe sumiller de Mugaritz – 2*Michelín), y periodistas como Sergio Sauca (RTVE) o Alberto Luchini (El Mundo), entre otros.

Además de los tradicionales premios a los mejores vinos en cada categoría, o al mejor proyecto enoturístico, el mejor enólogo, el mejor sumiller, …, destacaron dos premios que valoraban la trayectoria de las personas que los recibieron: Miguel Torres (padre) recibió el Premio a la Personalidad del vino español, y Custodio Zamarra (sumiller entre los sumilleres) recibió el premio “a toda una vida”. Ambos recibieron los aplausos más intensos y duraderos de la noche.

Esperamos volver a estar el próximo año en la nueva entrega de premios y, quién sabe, quizás podamos optar al premio a “La mejor publicación de vinos”.

The weather may not have been the best (light rain for much of the day), but this did not stop us from enjoying a surprisingly interesting tour of this winery, run by the Sanz brothers.

We had heard about their work on the earth, with virtually no interference, but once they had explained their day-today work to us, we realized that they are really passionate about caring and preserving the earth.

They have a clear philosophy with regard to wine production. They want to do it their way, without restriction, transmitting whatever the earth wants them to transmit.

Each year their wines convey something different and this is exactly what they want. Because of this philosophy, only one of their wines remains under the Rueda D.O. (one day we will discuss the whole issue of designations of origin ...).

We tasted the new vintages and other wines which showed tremendous potential, but the hero of the day was “La Misión”, a new wine which replaces the V3, with different characteristics and nuances to its predecessor. We are not going to go into detail here because it would take too long ... but those who try it will get what we mean!

Many congratulations to the team at Bodegas Menade, we wish you every success in the future.

Quizás el tiempo no acompañó en exceso (ligera

lluvia durante buena parte del día) pero ello no fue óbice para que la visita a esta bodega, regentada por los hermanos Sanz, nos sorprendiese gratamente.

Había oído hablar de su trabajo en la tierra, en la que prácticamente no manipulan nada, pero cuando te explican cómo llevan el día a día ves que su amor por la tierra, por cuidarla, por mimarla, es lo que les apasiona.

Tienen muy clara su filosofía, que es hacer vino. Y quieren hacerlo a su manera, sin restricciones y transmitiendo lo que la tierra les quiere explicar. Cada año sus vinos transmiten cosas diferentes y ellos quieren que así sea.

Fruto de esa filosofía, ya sólo queda uno de sus vinos bajo la denominación de origen Rueda (sobre las denominaciones de origen llegará el día que hablemos largo y tendido…)

Catamos las nuevas añadas y alguna cosa más con un potencial tremendo, pero sobre todo, el protagonista del día era “La Misión” un nuevo vino que viene a sustituir su V3, y que tiene características y matices diferentes a su antecesor. No se lo explicaremos porque sería muy largo…

Seguro que si lo prueban lo entenderán…

PRESENTATION OF ESPLENDOR DE VARDON KENNETT, THE SPARKLING WINE FROM BODEGAS TORRES Bodegas Torres presented its first

sparkling wine produced on Spanish territory at a very well-staged event.

And we say “sparkling” rather than “cava” because they did not want to produce it under the Cava D.O., with all the controversy that this decision caused (although it seems quite legitimate to me).

But there’s still time to change…

They produce and age this fine 2013 vintage sparkler, the first to be released on the market, in a beautiful farmhouse in Santa Margarida d’Agulladolç in the centre of the Alt Penedès. Mireia Torres and Miguel Torres Jr. are the project’s architects (after Miguel Torres Sr. gave it his blessing). It is therefore the fifth generation of the Torres family who has decided, finally, to make a sparkling wine, which fans appear to have been crying out for.

A walk through the estate for an explanation of the wine’s name and its origins (a tribute to Englishman, Daniel Vardon Kennett) and a spectacular play of lights on the facade of the farmhouse preceded a dinner prepared by the Roca brothers (Celler de Can Roca - 3 Michelin stars). This, along with the Esplendor de Vardon Kennett, ensured that the evening was quite unforgettable.

nivel, Bodegas Torres presentó su primer espumoso en territorio español. Y digo espumoso porque no lo han querido incluir en la D.O. Cava, con toda la controversia que ello ha generado. Pero particularmente, me parece muy lícito que tomen esa decisión. Siempre están a tiempo de cambiar…

Preciosa masía en Santa Margarida d´Agulladolç, en medio del Alt Penedés, en la que elaboran y madura este fino espumoso cuya añada 2013 es la primera que sale al mercado. Mireia y Miguel Torres Jr. son los artífices del proyecto (después de que Miguel Torres padre diera su beneplácito…). Es la quinta generación de la familia Torres la que ha apostado por hacer, por fin, un espumoso, que parecía demandado a gritos.

Un paseo por la finca para explicar el porqué del nombre y sus orígenes (tributo al británico Daniel Vardon Kennett) y un espectacular juego de luces sobre la fachada de la masía fueron los prolegómenos a una cena que prepararon los hermanos Roca (Celler de Can Roca – 3* Michelin) y que con el Esplendor de Vandor Kennett nos hicieron disfrutar de una fantástica velada.

by Josep Puig i Cadafalch and which are a national “historic-artistic” treasure, were the venue for another night to remember, the presentation of the Catalan producer’s high-end cavas.

There had been a presentation to the press in the morning and they had put on a gala dinner to mark this important happening in the evening.

Por la mañana se produjo la presentación para la prensa, pero por la noche se hizo la cena de gala de tan importante momento para la bodega.

Internationally recognised journalists and chefs (Nando Jubany, Carles Gaig, Jordi Cruz, etc.), along with restaurateurs and sommeliers, all waited expectantly to taste these cavas (yes, this time, we are talking about cava) which had been long in the making.

Jaume de Codorníu is the company’s flagship cava and follows in its line. The single vineyards (El Tros Nou, La Pleta and La Fideuera) are all high-end monovarietals (Xarel·lo, Chardonnay, Pinot Noir are all at home here). We all agreed that the Cuvée 456 was extraordinary.

Periodistas, chefs conocidos mundialmente (Nando Jubany, Carles Gaig, Jordi Cruz…), algunos restauradores y sumilleres, todos esperábamos con expectación poder catar esos cavas (en esta ocasión si… cava) que habían estado tanto tiempo evolucionando. Jaume de Codorníu es el emblema de la casa y sigue en su línea. Los parcelarios (El Tros Nou, La Pleta y La Fideuera) son monovarietales de lujo (aquí ya va a gustos… xarel.lo, chardonnay, pinot noir). Pero en lo que todos coincidieron es en que la cuvée 456 es extraordinaria.

The event was very-well staged. Live opera, impressive sound and light display, and a spectacular dinner prepared by Paco Pérez (Miramar - 2 Michelin stars). The dishes presented for each of the cavas were specially created for the occasion.

La puesta en escena fue de muy alto nivel. Cantantes de ópera en directo, imagen y sonido muy trabajados,… y una cena espectacular de Paco Pérez (Miramar – 2*Michelín). Los platos que presentó para cada uno de los cavas fue especialmente preparado para la ocasión.

Más de 300 personas asistieron a la puesta de gala de la nueva y finalizada bodega de Can Ràfols del Caus, en el Penedés. Una primera visita libre por parte de los asistentes dio lugar a una posterior presentación de todo el proyecto, desde sus inicios hasta la actualidad.

new, recently completed Can Ràfols del Caus winery in the Penedés region. An open tour was followed by a presentation of the project in its entirety, from its inception to the present day.

This winery preserves the local landscape in a very original manner. In fact, it cannot be seen from the outside, as it is lodged inside the hill. The winery’s owner, Carlos Esteva, was visibly moved when he spoke about this Penedés winery’s philosophy.

The winery’s architect, Italian Paolo Deganello, also attended the event. He described the inception of the project, back in 2000, and its progress to the present day.

A film on the restoration of the farmhouse and the evolution of the winery, a buffet with live music, and of course, the winery’s wines, were the finishing touches to an evening/night to remember.

Esta bodega, que preserva de una forma muy original todo el paisaje de la zona (de hecho no se ve exteriormente ya que está “incrustada” en la montaña). Carlos Esteva, propietario de la bodega, con visibles síntomas de estar emocionado, la filosofía de esta bodega del Penedés.

Estuvo presente en el acto el arquitecto de la bodega, el italiano Paolo Deganello, que explicó el inicio del proyecto, allá por el año 2000 y cómo ha evolucionado hasta nuestros días.

Una proyección audiovisual de la rehabilitación de la masía y de la evolución de la bodega, y un buffet con música en directo, y por supuesto, los vinos de la bodega, pusieron el colofón a una tarde/noche para el recuerdo.

The 4th“ Microproductores de Vino meeting took place in Sant Julià de Loire, in Andorra, at the end of November. This initiative, which was held for the fourth consecutive year in this small country in the Pyrenees, kicked off with a welcome dinner for the press. The venue was the ES ANDORRA gastronomic restaurant in the Andorra Park Hotel, where Marc Mora, the restaurant’s chef (pictured), delighted us with a superb dinner served, of course, with wines from the principality.

by Esther Bachs, the renowned IWC sommelière.

Throughout the afternoon, participants could taste wines from small producers of various origins, both local and foreign. On day two, Josep Pelegrin, Best Sommelier of Spain 2016, answered questions put to him about “wines with soul”, moderated this time by Anna Vicens, president of the Catalan Association of Sommeliers and a Selectus Wines contributor.

Given the popularity of the event, it is bound to be repeated next year.

Esta iniciativa que por cuarto año consecutivo se celebró en este pequeño país de los Pirineos, tuvo como punto de partida una cena de bienvenida que se organizó para la prensa en el restaurante gastronómico ES ANDORRA, que se encuentra integrado en el Andorra Park Hotel, donde Marc Mora, chef del restaurante (en la foto) nos deleitó con una estupenda cena acompañada, cómo no, con vinos del principado.

Al día siguiente, antes de mediodía, se produjo la inauguración oficial por parte de las autoridades andorranas. Previamente a la apertura oficial, tuvo lugar el debate “Arte y vino, un matrimonio con éxito” en el que participaron periodistas y productores, y que fue moderado por Ester Bachs, reputada sumiller de los IWC. Durante toda la tarde se pudieron degustar vinos de pequeños productores de diversas procedencias, locales y extranjeras. En la segunda jornada, Josep Pelegrín, mejor sumiller de España del 2016, contestó a las preguntas que se le hicieron sobre “los vinos con alma”, moderado en esta ocasión por Anna Vicens, presidenta de la Asociación Catalana de Sumillers y colaboradora de Selectus Wines. Dado el nivel de asistencia al encuentro, seguro que tenemos nuevas ediciones de este evento.

SPIRITS WHISKY. WATER OF ETERNAL LIFE According to ancient Irish legend, it was St. Patrick who taught the monks the magical process of spirit distillation back in the 5th century. But it was not until the late 15th century, that the first written documents appeared, in Scotland, referring to this “Aqua Vitae” which, through the phonetic deformation of the Gaelic, evolved to “uisge beata”, which over time was shortened to “uisge” or “whisky”.

The truth is that whether it was in Ireland or Scotland, whisky was originally the monopoly of the monks who spread its production throughout their abbeys, giving it the infrastructure and resources needed to improve its quality. This continued until the 15th century when, with the disappearance of many monasteries, whisky moved out of a monastic setting and penetrated all layers of society. Small distilleries, set up by the monks themselves or by feudal landlords, started popping up. With Scotland’s annexation to England in 1707, taxes on whisky rose to exorbitant levels resulting in the appearance of small clandestine producers. These producers preserved the ancestral purity of the spirit and shaped the history of some of the oldest and most historic distilleries known today, located in both the Lowlands and the Highlands, and particularly on the small islands to the west of Scotland.

Clandestinity led to smuggling and with it the creation of special brigades to track down, confiscate and destroy illegal stills. They requisitioned over 14,000 stills per year, but did not succeed in stamping out illicit production. In fact the opposite occurred and the number of clandestine distilleries continued to increase until the government backed down and introduced a symbolic tax of only £10 a year in around 1820. In under 10 years, all the distilleries were legalised. After this, came the “business years” with an improvement in the quality of whisky and the invention of the best stills. 1853 saw the appearance of the first “blends” that would propel whisky to worldwide fame.

Years later, with the advent of phylloxera in Europe and the unavailability of grape spirits (brandy, cognac etc.) whisky reached the height of its fame and popularity with London high society, and later throughout Europe and the United States. It thereby secured its place as a cult spirit, that “water of life” born between land and sea, that we still enjoy and enthuse about today.

SPIRITS WHISKY. AGUA DE VIDA ETERNA Cuentan las sabias y ancestrales lenguas irlandesas que fue San Patricio quien por allá el siglo V enseño la mágica elaboración de los destilados a sus monjes, aunque no fue hasta finales del siglo XV cuando aparecen en Escocia los primeros documentos escritos que hacen referencia a este “Aqua Vitae” que por deformaciones fonéticas del gaélico pasó a llamarse “uisge beata” y el paso del tiempo lo acabaría reduciendo a “uisge” o “whisky”.

Lo cierto es que ya fuese en Irlanda o Escocia, el whisky pasó a ser un monopolio de los monjes que lo extendieron por sus abadías dotándolas de las infraestructuras y medios necesarios para mejorar su calidad hasta entrado el siglo XV, cuando con la desaparición de muchos monasterios este destilado salió de las abadías para llegar a todas las capas de la sociedad, empezando a aparecer pequeñas destiladoras creadas por los propios monjes o señores feudales terratenientes. Llegada la anexión de Escocia a Inglaterra en el año 1707, los impuestos sobre el whisky se elevan de forma desorbitada dando paso al nacimiento de pequeños elaboradores clandestinos que mantendrían la pureza ancestral y forjarían la historia de las más antiguas e históricas destilerías hoy conocidas, de las regiones de las Low y Highlands, pero sobre todo de las pequeñas islas del oeste de Escocia. La clandestinidad llevó al contrabando, y con él, el nacimiento de brigadas especiales en búsqueda de alambiques prohibidos para confiscar y destruir, llegando a requisar más de 14.000 alambiques anuales, pero sin conseguir el resultado prohibitivo buscado, al contrario, las destiladoras clandestinas fueron aumentando hasta conseguir hacer ceder al gobierno que hacia el año 1820, estableció un impuesto simbólico de solo 10 libras anuales, con lo que se consiguió, en menos de 10 años, la regularización completa de todas las destilerías. Empieza la era empresarial y dinamizadora del whisky de calidad, invención de mejores alambiques y en ya en 1853 la aparición de los primeros “blends” que harían dar el salto al whisky a escala mundial.

Años más tarde, con la llegada de la filoxera a Europa y la desaparición de los destilados de uva (brandy, cognac) el whisky alcanzaría su hegemonía y momento de consumo entre la alta sociedad londinense, y más adelante en toda Europa y Estados Unidos, consolidándolo como la gran bebida de culto que hoy en día nos sigue haciendo disfrutar y emocionar del agua de vida nacida entre el mar y la tierra.

N º 209 GIN

The history of this American gin could easily be tied to

the famous Route 66 which runs across the United States, because it was in New York where, in 1870, William Scheffler bought the rights to a new type of still and then travelled the over 4,500 kilometres from New York to Napa Valley to start work as a distiller for Charles Krug in St. Helena. In 1880 he bought the Edge Hill Estate, where he opened his distillery after obtaining distillation licence N°209, from the United States Government in 1882.

In 1999, with Leslie Rudd at the helm of the distillery, this license number was recovered and adopted as the name for its new gin with an American spirit, made with pure grain and to the highest standards of quality, which involved moving the distillery to Pier50 in the city of San Francisco. Gin Nº 209 has a pure American Dry style and is based on a quintuple distillation of wheat with a pre-maceration of its 9 botanicals: juniper, orange and lemon peel, coriander, liquorice, cinnamon, cassia, angelica root and iris root. Its aroma is clean and fresh, with pronounced spicy and citrus notes, in which hints of lemon and juniper converge and blend smoothly into the 46º alcohol, making this one of the great American gins.

El perfil de la Gin Nº209 es puramente American Dry y está basado en una quíntuple destilación de trigo con una previa maceración de sus 9 botánico, enebro, corteza de naranja y limón, cilantro, regaliz, canela, casia, raíz de angélica y raíz de lirio. Su aroma es limpio y fresco, marcado por notas especiadas y cítricas donde los toques de limón y enebro combinan e integran a la perfección sus 46º de alcohol convirtiéndola en una de las grandes ginebras americanas.

NIKKA FROM THE BARREL WHISKY

La historia y vida de Masataka Taketsuru se refleja en la pureza y esencia de cada botella de Nikka whisky, pero también en la pròpia historia del whisky japonés, pues fue el primer elaborador de este destilado en el país del sol naciente. Masataka pertenece a una familia japonesa que destila arroz y elabora sake desde 1733 en la pequeña población de Takehara, muy cerca de Hirosima.

En su juventud estudió química en la universidad de Japón y más adelante, en 1918 viajó e Escocia donde en la universidad de Glasgow estudiaría la química en la destilación siendo el primer japonés en estudiar el arte de la destilación y en convertirse en Master Blender, donde acabaría enamorándose del whisky y de la mujer que más adelante sería su esposa, Jessie Roberta “Rita”, con lo que decidió dedicar completamente su vida al whisky, volviendo con su esposa en 1924 a Japón y elaborando allí el primer whisky japonés para Sinijiro Torii (Suntory).

The life story of Masataka Taketsuru is reflected in the purity and essence of each bottle of Nikka whiskey and it is also the history of Japanese whiskey itself, because Masataka was the first to produce this spirit in the land of the rising sun. Masataka came from a Japanese family which had been distilling rice and making sake since 1733 in the small town of Takehara, near Hiroshima. As a young man, he studied chemistry at the University of Japan and later, in 1918, traveled to Scotland where he studied the chemistry of distillation at the University of Glasgow. He was the first Japanese national to study the art of distillation and to become a Master Blender, and he ended up falling in love with whisky and the woman who would later become his wife, Jessie Roberta, “Rita”. He decided to dedicate his life to whiskey and returned to Japan with his wife in 1924, where he developed the first Japanese whiskey for Sinijiro Torii (Suntory).

In 1934, Masataka founded the Nikka Whisky Distilling Company, building his own distillery in Yoichi, Hokkaido, a place he considered perfect for the production of his whiskies due to its similarity to the many Scottish towns he had studied. Nikka “from the barrel” is the fruit of Masataka’s experience and “blender” philosophy, a mixture of malt and grain whiskies which were re-barreled in order to marry the multiple nuances created by the different ageing and styles. This whiskey’s alcohol degree is virtually the same as when it went into bottle straight from the barrel (hence the name). It presents us with over 51 º of exceptionally fine alcohol, a deep, multi-nuanced flavour, in which citrus and apricot peel blend with floral notes and soft smoky and caramel overtones, creating a real gem of a whiskey steeped in history and ready to be enjoyed.

En 1934 Masataka inaguró Nikka Whisky, y construyendo su própia destilería en Yoichi, Hokkaido, un lugar que consideró perfecto para la elaboración de sus whiskys por la similitud a las muchas ciudades escocesas que él estudió. Nikka “from the barrel” es el resultado de la experiencia y filosofía “blender” de Masataka, una mezcla de whiskies de malta y grano que ron reembarricados para fusionar matices aportados por diferentes crianzas y estilos. Este whisky mantiene casi intacta su graduación al embotellarse directamente de la barrica, de ahí su nombre, y se presenta con más de 51º de finísimo alcohol, un sabor profundo rico en matices, donde la cascara de cítricos y albaricoque se funden con notas florares, suaves ahumados y dulces recuerdos a toffe, dando como resultado una verdadera joya cargada de historia y placer.
