Rosé’s

IN FASHION?

WHAT’S GOING ON? It seems that rosé has been enjoying a bit of boom lately, but is this just a passing fad or is rosé here to stay? Some wellknown wineries are carving themselves out a piece of this market with fresh, easy-to-drink and fairly uncomplicated products, and at this time of year, these should be a hit. Muga, Raimat, Chivite, Codorniu and Bodegas Torres are some of the wineries which have decided to produce this style of rosé.

At the other end of the spectrum, wineries such as López de Heredia, Tobía and Maldivinas are showing how oak or clay can produce a different type of rosé which has greater longevity.

But, in our humble opinion, the “kings of rosé” are to be found on the other side of the border, in France, specifically in the Provence area, where these wines already enjoy a certain reputation and many wineries are devoted almost exclusively to the production of this type of rosé. We took ourselves off to visit the winery that produces some of the best rosés in the world: Domaines Ott. In this issue, Pedro Ballesteros reports on a very exotic destination. Ecuador and wine tend to be mutually exclusive concepts for most wine drinkers, but perhaps, after reading Pedro’s report, we may think differently ...

I would like to close this editorial with a “thank you” and a “welcome”. Firstly, a big “thank you” to Joan Gómez Pallarès (@blogdevinis), who has been with us on this adventure for almost 2 years. We have had some good times together and, above all, I have had the privilege of working with an outstanding individual, not only in terms of his wine knowledge and wine culture (he’s an expert), but in terms of the man himself. “No canviïs mai, Joan” (never change, Joan!). Joan has greater challenges ahead, from which we expect him to emerge victorious. And we “welcome” another rising star. Champion Spanish sommelier in 2014 and Spain’s representative at the last Sommellerie World Cup held in Argentina a few months ago, Head Sommelier at Mugaritz (2 Michelin stars), Guillermo Cruz joins our team to talk about a different wine in each issue. I am sure that our relationship will be as excellent as the one I enjoyed and continue to enjoy with Joan.

So now, sit back (perhaps, with a glass of rosé?.. ), relax and enjoy.

“Rosé”

¿LOS ESTÁN DE MODA? ¿QUÉ ESTÁ CAMBIANDO? Desde hace poco tiempo, parece que el vino rosado protagoniza un efecto “boom” dentro de las tendencias de consumo, pero… ¿será pasajero o vienen para quedarse? Algunas bodegas de cierto renombre están apostado por encontrar su espacio entre los consumidores con un producto fácil de consumir, fresco, sin excesivas complicaciones y que, en la época del año en la que estamos, parece que puede triunfar. Muga, Raimat, Chivite, Codorniu, Bodegas Torres, … son algunos ejemplos de bodegas que se han apuntado a elaborar este tipo de vinos.

En el otro extremo, bodegas como López de Heredia, Tobía o Maldivinas muestran cómo la madera o el barro pueden dar otro tipo de rosados, de largo recorrido. Pero los “reyes de los rosados”, según nuestra modesta opinión, se encuentran al otro lado de la frontera, concretamente en la zona de la Provence, donde estos vinos tienen ya un cierto recorrido y muchas bodegas se dedican, prácticamente en exclusiva, a elaborar este tipo de vino. Y hasta allí nos hemos ido para visitar una de las bodegas que elabora algunos de los mejores rosados: Domaines Ott. Muy exótico el destino que nos explica Pedro Ballesteros en su artículo de esta edición. Como comenta, el binomio Ecuadorvino no encaja excesivamente en los parámetros habituales de los consumidores… Quizás a partir de ahora tendremos otro punto de vista…

Y para finalizar esta editorial, un agradecimiento y una bienvenida. Joan Gómez Pallarès (@blogdevinis), nos ha acompañado en esta aventura durante prácticamente 2 años, en los que hemos vivido momentos muy buenos, pero sobretodo he conocido una gran persona, no sólo en lo relacionado con el vino y en la cultura que lo rodea (es un crack), sino en lo humano. “No canviïs mai, Joan”. Tiene por delante retos de calado superior de los que seguro que saldrá victorioso. Y la bienvenida es para otro fenómeno en alza. Campeón de los sumilleres españoles en 2014 y representante de España en el último mundial, celebrado en Argentina hace pocos meses, Guillermo Cruz, Head Sommelier en Mugaritz (2*Michelin) se incorpora a nuestro equipo para, a su manera, explicarnos un vino en cada edición. Estoy seguro que nuestra relación será tan buena como la que he tenido y tengo con Joan.

¡Y ahora, a relajarse (no sé si con un vino rosado…) y disfruten!

FROM “CHATEAU DE SELLE” TO “BY OTT”

Towards the end of the 19th century, Marcel Ott, a young agricultural engineer of Alsatian origin, scoured the regions of France in search of the perfect location in which to produce wine. He was very taken with an area of land close to the shores of the Mediterranean Sea. Sensing, intuitively, that the unique conditions found in this location could engender new and very special wines, he decided to settle there to grow his vines. His was the first generation.

The vineyards of Provence did not escape Phylloxera and, no doubt, as a result of the mad rush to restart wine production, new vines were planted very quickly without giving the matter a great deal of thought. However, Marcel Ott, who had made up his mind to produce wine in this area, started planting all his estates with noble grape varieties with a view to creating the fine wines that he was convinced these Mediterranean lands could offer.

The next generation, that of Marcel’s son René Ott, also dedicated itself to the family wine business. Back in the 1930’s, René was already of the opinion that the family’s wines should possess certain characteristics that would set them apart and earn them a reputation for quality. Back then, a very high percentage of wines was sold in barrels, which meant that they were served at the table in carafes or pitchers without any visible indication of the producer’s identity. This spawned the idea of creating a bottle that would be distinct from any other and whose design has survived to the present day.

The shape of Domaines Ott‘s wine bottles, reminiscent of the round form of old earthenware jars (tinajas) and the elegant lines of amphoras, is today an Ott brand symbol.

Over its four generations, the family continued buying wine domaines.

In 1912, Marcel Ott acquired the Château de Selle Cru Classé. In 1936, he acquired the Clos Mireille Cru Classé, located close to Fort Brégançon and facing the Mediterranean. And in 1956, the family acquired the Château Romassan estate in Bandol. Each of the estates is relatively close to the others and all of their vineyards are inevitably influenced, to a greater or lesser degree, by the Mediterranean Sea. The Ott family has always worked its vineyards to meticulously high standards and in an environmentallyfriendly manner. For this reason, the family is a reference for the production of rosé wines today. Its wines are appreciated around the world in spite, or precisely because, of its small-scale production and exclusivity.

In 2004, the Ott group of wineries became part of the Louis Roederer Champagne group, creating an influential “dynamic duo” within the wine industry. Leveraging the complementary strengths of each company and Louis Roederer’s distribution network, Ott has become the global reference for “Rosé from Provence” not only in the chic cafés of Cannes or Monte Carlo, but also in the Hamptons of New York and the rooftop terraces of Singapore.

A finales del siglo XIX, Marcel Ott, un joven

ingeniero agrónomo de origen alsaciano, después de haber recorrido múltiples zonas en Francia para encontrar un enclave en el que empezar a hacer vino, quedó impresionado por unos terrenos muy cercanos a la orilla del Mediterráneo. Intuyó que las especiales condiciones que se daban en aquel entorno podrían dar lugar a vinos especiales, diferentes,… Y allí se instaló para poder explotar el viñedo. Era la primera generación.

No se libró la Provence de ver pasar la filoxera por los viñedos, y seguramente, fruto de la precipitación por querer volver a producir vino, se plantaron muy rápidamente nuevas cepas sin grandes miramientos, pero Marcel Ott, quien tenía entre ceja y ceja producir vinos en esa región, plantó de nuevo cepas nobles en todas sus fincas con el objetivo de producir esos grandes vinos que él intuía que podrían dar esas tierras mediterráneas.

La siguiente generación, la de René Ott, hijo de Marcel, se incorporó también al negocio del vino, y ya en el siglo XX, sobre los años 30, pensó en que los vinos que elaboraba su familia tenían que tener alguna característica que les diferenciase del resto y les diera un status de calidad. En aquella época los vinos, en un porcentaje muy alto, se vendían en toneles, lo cual repercutía en que se servían en la mesa en jarras, sin saber quién era el productor del vino. De ahí surgió la idea de crear una botella, diferente de otras que pudieran existir, y cuyo diseño ha llegado hasta nuestros días. La forma de la botella de los vinos de Domaines Ott, que recuerda en cierta forma la redondez de las tinajas y la elegancia de las ánforas, se mantiene a día de hoy como seña identitaria de las bodegas del grupo.

A lo largo de estas cuatro generaciones, la familia ha ido comprando diferentes fincas. En 1912, Marcel Ott adquiere Château de Selle Cru Classé. En 1936, cerca de Brégançon, frente al Mediterráneo, adquiere Le Clos Mireille Cru Classé.

Y en el año 56, la finca del Château Romassan en Bandol. Todas las fincas se encuentran relativamente cerca la una de la otra, y todos los viñedos están, ineludiblemente, influenciados en mayor o menor medida, por el Mar Mediterráneo.

La familia Ott se ha caracterizado siempre por respetar la naturaleza y por ser rigurosos a la hora de trabajar los viñedos. De esta forma han llegado a día de hoy siendo uno de los referentes en la elaboración de vinos rosados, los cuales son muy valorados a lo largo y ancho del planeta.

En el año 2004, este grupo de bodegas se une a Champagne Louis Roederer, formando con ellos un “dúo dinámico” importantísimo dentro del sector vitivinícola. La fuerza de ambas bodegas hace que se complementen y aprovechando la red de distribución de Louis Roederer, Ott se ha convertido en el referente mundial del “rosado de la Provenza”, no solo ya en las terrazas de Cannes o Montecarlo, sinó también en los Hamptons de Nueva York o en las azoteas de Singapur.

The result has been the winery’s latest creation, a new wine called “By Ott”, produced from their own grapes, but not associated with its three prestigious chateaux. The Ott family’s obsession with excellence, and the innovation, rigour and discipline that it applies to the production of its wine, are much admired by wine critics and professionals, as shown by the fact that Domaines Ott has been named the “Gold Standard of Rosé” by The Wall Street Journal.

Fine wine inVino fino en el Until very recently, Wine and Ecuador were, to my mind, two fine yet mutually exclusive concepts. Like most people, I associate wine with French, Italian and Spanish landscapes, where the seasons are identified by their temperature, and not by the presence or absence of rain, as they are in Ecuador.

Christian missionaries planted vineyards wherever they settled. When they found a temperate climate, with cold, wet winters and dry, hot summers, they left vineyards as part of the landscape and wine as a cultural reference. This was the case in countries at the right latitudes such as Chile, Argentina and California.

In other countries, such as in Bolivia or Peru, planting at altitude compensated a little for the effects of not being located at the right latitude.

Hasta hace muy poco, vino y Ecuador eran para mí dos conceptos bellos pero disociados. Como la mayoría de la

gente que me rodea, asocio el vino a esos paisajes franceses, italianos, españoles, en los que las estaciones del año se identifican por su temperatura, y no por la presencia o ausencia de lluvias, como en Ecuador.

Los misioneros cristianos fueron plantando viña allá donde moraban. Donde encontraron un clima templado, de inviernos fríos y húmedos y veranos secos y cálidos, dejaron la viña como parte del paisaje y el vino como referente cultural. Ese fue el caso en países de latitud adecuada como Chile, Argentina o California. En otros casos, como en Bolivia o Perú, la plantación en altitud compensaba un tanto los efectos de la escasa latitud.

But in Ecuador, apparently, even the altitude wasn’t right. Although logically it seems more than likely that they tried to grow vines, none seem to have survived over time,… at least not yet.

The cultivated vine is very sensitive to temperature. At low temperatures it goes into hibernation and does not emerge from its slumber until it senses temperatures above 10°C for a few days.

Its activity increases with temperature, but if this temperature exceeds a certain threshold, above 35°C, the plant shuts down again and curls up in order to survive the heat.

In the tropics the vineyards are in a world of perpetual growth. It is never cold yet it is never hot enough for the plant to stop growing. All year round the vineyards receive a constant message from its surrounding environment: grow, grow! Nothing regulates budding or ripening. Without human intervention, the vine in the tropics returns to its natural state, that of a creeper with abundant vegetative growth. What’s more, the tropics are a paradise for many parasites and diseases that would struggle to survive in temperate zones, yet are able thrive in equatorial zones, making it even more difficult for the vine to survive.

Rounding off this set of difficulties is the fact that, deprived of winter rest, the vine produces two crops a year. What might at first seem like an opportunity is in fact a cost when you realise that the quality of the grapes from the dry season differs from that of grapes from the rainy season, and that it is likely that the vines would die young as a result of so much stress.

Mankind has had to learn a great deal about plant biology and develop scientific techniques to ingeniously provide what nature does not. Today we have learnt to use stimulants to ensure homogenous budding and we have developed pruning techniques to channel the vigour of the vine towards the production of healthy grapes rather than useless branches. Irrigation techniques and phytosanitary treatments are crucial allies in the quest to produce grapes economically.

Pero en Ecuador, al parecer, ni la altitud valía. Aunque en buena lógica es más que probable que se haya intentado la implantación del viñedo, no parece ser que haya perdurado con éxito, al menos hasta ahora.

La viña cultivada es muy sensible a la temperatura. Con temperaturas bajas se pone a hibernar y no sale de su sueño reparador hasta que percibe temperaturas por encima de los 10°C durante unos días. Su actividad se incrementa con la temperatura, pero si ésta sobrepasa un umbral, sobre los 35°C, la planta vuelve a cerrarse en sí misma, se acurruca para sobrevivir en el fuego.

En el trópico la viña se encuentra en el mundo del perpetuo crecimiento. Nunca hace frío, ni tanto calor que haga pararse a la planta. Durante todo el año la viña recibe el mismo mensaje de su propio ambiente: ¡crece, crece! Nada regula la brotación o la maduración. Sin la intervención del hombre, la viña vuelve en el trópico a su estado salvaje, el de una liana de crecimiento vegetativo.

Además, el trópico es también un paraíso para muchos parásitos y enfermedades que, mientras que en las zonas templadas tienen dificultades a sobrevivir, se regodean de vida en las zonas ecuatoriales, haciendo aún más difícil la supervivencia de la viña.

El remate a este cuadro de dificultades es el hecho que, al no haber reposo invernal, las viñas producen entonces dos vendimias al año. Lo que podría parecer una oportunidad es de hecho un coste cuando se considera que la calidad de la uva de estación seca será diversa a la de la estación de las lluvias, y que es probable que la viña muera joven al ser sometida a tanto stress.

La humanidad ha tenido que aprender mucho sobre la biología de la planta y desarrollar ciencia para poder suplir con ingenio lo que la naturaleza no da. Hoy por hoy se ha aprendido a usar estimulantes de la brotación para que ésta sea regular, se han desarrollado técnicas de poda que orientan el vigor de la viña hacia la producción de buenas uvas más que de inútiles sarmientos.

Las técnicas de riego y los tratamientos fitosanitarios son el complemento indispensable para la producción económica de uvas.

But all this costs a lot, and it would make little business sense to make wine in Ecuador given that there is so much cheap wine to be had in the traditional wine producing countries. Unless this isn’t what Ecuadorian wine is about…

When they told me that there was a vineyard in Ecuador, my curiosity was piqued. When they went on to tell me that this vineyard was not located at high altitude in the area around Quito, but on the coast in San Miguel del Morro, near Guayaquil, I was sceptical. I return from my visit to the Dos Hemisferios vineyards with admiration and bewilderment.

Its creators, William Wright and Pablo Taramelli, have managed to develop this tropical vineyard model with a business plan, two experts in viticulture and oenology, and the use of the very best techniques.

The vineyards are indeed lovely, with drip irrigation and carefully-calculated densities. But then what I saw was mind-blowing. Sitting alongside each other were vines which were in bud, vines bearing fruit, and bunches of grapes that were finishing their ripening.

The wines themselves are of fine quality. The Enigma Chardonnay 2014 has precise aromas, seeming to evoke the mangos and pineapples that grow in this area, and well-balanced on the palate. From the Travesía range, my favourite was the Malbec, with intense aromas of berries, warm and expressive on the palate, robust yet soft. At the premium end, the Paradoja 2013, a blend of barrel-aged Cabernet and Malbec, is rich and lush with notes of toasted oak. The jewel in the winery’s crown is the 2011 Cautivo, produced in tiny quantities and which obtains some of its exceptional richness from the process of appasamento (shrivelling and concentrating the grapes using a cold-drying technique). It is an intense wine, still very young, which will open up in the years to come, with tones of blackberries, toast and spices. You can feel its fine grain and full, smooth body on the palate. It has a long-lingering aftertaste.

Pero todo esto cuesta mucho, y tendría poco sentido comercial hacer vino en el Ecuador habiendo como hay tanto vino barato de producir en los países clásicos. A no ser que el vino ecuatoriano sea algo diferente.....

Cuando me dijeron que había un viñedo en Ecuador, me interesó por curiosidad. Cuando además me dijeron que ese viñedo no estaba en las grandes altitudes alrededor de Quito, sino en la costa, en San Miguel del Morro, cerca de Guayaquil, tuve escepticismo.

Vuelvo de mi visita a los viñedos Dos Hemisferios con admiración y alegre perplejidad.

Los creadores Guillermo Wright y Pablo Taramelli consiguieron este modelo de viñedo tropical con las mejores técnicas, un plan de negocio y dos expertos cualificados en viticultura y en enología.

El viñedo es de hecho una preciosidad, con riego gota a gota y densidades bien calculadas. Luego, es alucinante. Vi, unas al lado de otras, viñas en brotación, viñas en fructificación y racimos ya acabando la maduración.

Los vinos son finos. El Enigma Chardonnay 2014 es preciso de aromas, pareciendo que guarda memoria de mangos y piñas que dan estas tierras, bien equilibrado en boca. De la serie de vinos Travesía, mi preferido es el Malbec, de aromas intensos de fruto de bayas, cálido y expresivo en boca, recio y suave al tiempo. En gama alta, el Paradoja 2013, una mezcla de cabernet y malbec criada en barricas, es rico, exuberante, con notas tostadas de la madera. La joya de la casa es el Cautivo del 2011, vino de producción reducidísima, que obtiene parte de su excepcional riqueza del proceso del apasamiento (concentrar las uvas por secado en frio). Es vino intenso, todavía muy joven, que se abrirá en los próximos años, en tonos de moras, tueste y especias. En boca se siente su grano fino, su paso lleno y redondo. Tiene un retrogusto persistente.

Ecuador is entering a new era, in which gastronomy, both home-grown and imported, will play an important part. This is the right time for them to be developing their own fine quality products to accompany and help establish Ecuadorian gastronomy and, with it, the prestige and attractiveness of the country. The wines from Dos Hemisferios are playing their role in this, they are pioneers of the new “fine agriculture”, one of names and places, one which creates lasting value from the land, and one from which we all benefit.

Vinorum Think at Alimentaria, a new commitment to the wine

sector Alimentaria continues to be a major event for the food and drinks industry with numerous manufacturers in attendance and attracting a large number of visitors, both professional and from the general public. The numbers, although not staggering, do give an insight into the importance of the event. Nearly 4,000 exhibitors from over 70 countries and over 140,000 visitors from more than 150 countries come together at this biennial event, the latest edition of which took place in Barcelona in late April.

Vinorum Think, en Alimentaria, una nueva apuesta en el sector del vino. Alimentaria sigue siendo, en el sector de la alimentación, el acontecimiento por excelencia al que acuden muchos de los fabricantes de productos gastronómicos y que tiene una gran afluencia, tanto de profesionales como de público en general. Los números, sin ser abrumadores, dan una visión de la importancia del evento: casi 4000 expositores procedentes de más de 70 países, y más de 140.000 visitantes, también de diversos orígenes (más de 150 países diferentes) es el bagaje de esta cita bi-anual que tuvo lugar en Barcelona a finales del mes de Abril.

Over our 4 days at Alimentaria (in the Vinorum area dedicated exclusively to wine), our feelings about the show’s success were mixed. On the one hand, the giants of the food and drinks industries were there making a splash, no doubt with the sentiment that they had to be seen to be there due to the importance of the show, but it was also clear, from the public visiting these stands, that these exhibitors were generally not getting the business they had hoped for.

Should changes be made to the current format in order to professionalize the show? Some of the exhibitors from the previous Alimentarias were not exhibiting, stating that they don’t get a return on their investment, but we should bear in mind that some of these absent exhibitors continue to take part in similar events outside Spain.

On the other hand, the wine-related events (tastings) which took place in the dedicated “Vinorum Think” sector, were pretty much packed out, illustrating that both the trade and the general public are keen to learn more about wine and participate in this type of activity.

Durante los 4 días que estuvimos en Alimentaria, en la zona dedicada en exclusiva al mundo del vino, Vinorum, tuvimos varias sensaciones contrapuestas. Por un lado, estaban “los grandes” con un despliegue monumental y con aquella sensación de que “teníamos que estar porque es la feria por excelencia” pero también se desprendía, por el público que visitaba estos stands, que el negocio, en general, no ha fluido como debería. ¿Hay que cambiar algo en el modelo actual para profesionalizar más esta feria? Algunos de los expositores de ediciones anteriores no estaban presentes “porque no les salía rentable la inversión”. Y hay que tener en cuenta que algunos de los ausentes sí que están presentes en otros eventos similares que tienen lugar más allá de nuestras fronteras.

Por otro lado, los eventos (catas) celebrados en torno al vino, en el espacio dedicado específicamente a ellos, el Vinorum Think, estaban mayoritariamente al límite de su capacidad de asistentes, lo cual denota el gran interés por parte de profesionales y particulares por aprender y participar en este tipo de actividades.

OCCASIONS WHEN YOU FEEL FORTUNATE THERE ARE

not only to taste great wines, but because you have the impression of experiencing a defining ‘before and after’ moment in the way you understand certain wines. This moment occurred during an unforgettable tasting organized by Bodegas Gramona, which helped confirm for us various facets of sparkling wines that challenge the established clichés, and reveal to us a new dimension of what these types of wine are like and just what levels they can reach. Xavier Gramona, one of the bodega’s proprietors, led the tasting in magisterial fashion, introducing us to the secrets of this historic winery.

Pau Batlle was a wine trader who, in the mid-19th century, made a fortune enabling him to buy an estate called “La Plana”, on which his father had already worked. Pau Batlle’s daughter married Josep Gramona and started the production of sparkling wines.

In 1951, thanks to an accident of history, production of long-aged Cavas began. During the Spanish Civil War, part of the winery in which they were storing old wines made from the xarel.lo grape was bordered up. This grape variety was being sold to Champagne producers and showed a remarkable capacity for ageing.

Their first long-aged Cava was a Brut called II Lustros, a name subsequently registered by the Castellblanc winery. Hence a change to the current III Lustros, a sparkling wine that has been classified as a Brut Nature since the 1980’s and is aged in bottle for seven years. Later came Celler Batlle, aged for ten years and, more recently, Enoteca, a cava aged for 12 years.

Most of Gramona’s long-aged cavas come from grapes of the xarel·lo variety grown at “La Plana”, an estate situated in the basin of the river Anoia on clay-limestone soils with sand and river stones.

Consequently, they are some of the few long-aged cavas to come from a single estate. In recent years the winery has undergone a transition towards biodynamic growing, something which has enabled its vineyards to become better prepared for the adverse effects of climate change which viticulturists know all-too-well.

We mentioned above that certain myths relating to cava were dismantled after trying these wines, first and most obviously the one which states that cava must be consumed in one year at most after disgorgement. Xavier Gramona asked an interesting question: what is a great wine? Among the diverse characteristics a great wine must display such as balance, complexity, and persistence, there is one that is essential for every great wine, namely the capacity to age, refine itself and gain in complexity. Gramona’s long-aged cavas show that they are complex, age-worthy wines, capable of evolving, and which are far from the stereotype of thirst-quenching wines with bubbles.

This then was a tasting which invited us wine professionals and wine lovers to cellar-age bottles of fine sparkling wine to enable them to reach their finest expression and balance, just as we would any other fine wine.

no solo por probar grandes vinos, sino porque tienes la impresión de que estás ante un momento que marcará un antes y un después en tu manera de entender algunos vinos. Y ese momento se produjo en una cata memorable de bodegas Gramona, que nos sirvió para confirmar algún aspecto de los vinos espumosos que rompe con los tópicos establecidos, y que nos dan una nueva dimensión de lo que son y hasta donde pueden llegar este tipo de vinos. Uno de los propietarios de la bodega, Xavier Gramona, condujo magistralmente la cata y nos introdujo en los secretos de esta histórica bodega.

Pau Batlle era un comerciante de vinos que a mediados del siglo XIX hizo fortuna y consiguió comprar una finca llamada “La Plana”, en la que ya había trabajado su padre. La hija de Pau Batlle se casó con Josep Gramona, y comenzó la elaboración de vinos espumosos.

En 1951 se iniciaron la producción de cavas de larga crianza gracias a un accidente histórico. Durante la Guerra Civil tapiaron parte de la bodega en la que guardaban viejos vinos de uva xarel.lo, una uva que vendían a productores de la Champagne y que demostró tener una enorme capacidad de envejecimiento.

Su primer cava de larga crianza fue un Brut llamado II Lustros, una marca registrada posteriormente por la empresa Castellblanch.

Por ello tuvieron que cambiar el nombre por el actual III Lustros, un espumoso que a partir de los años 1980 es Brut Nature y tiene 7 años de crianza. Más tarde aparecieron el Celler Batlle con 10 años de crianza y más recientemente el Enoteca, un Cava con 12 años de crianza.

Los Cavas de larga crianza en Gramona provienen en su mayor parte de uvas de la variedad xarel.lo de la finca “La Plana”, una finca situada en la cuenca del rio Anoia, sobre suelos arcillo-calcáreos, con arenas y cantos rodados. Son por tanto unos de los pocos cavas de larga crianza que provienen de una sola finca. En los últimos años la bodega ha experimentado una transición hacia la agricultura biodinámica, cosa que ha permitido que sus viñas estén mejor preparadas para el cambio climático que sufre el planeta, y que los viticultores conocen de primera mano.

Mencionábamos al principio que algunos mitos sobre los cavas quedan desmontados después de probar estos vinos, y el primero y más evidente es aquel que dice que el Cava hay que consumirlo como máximo un año después del degüelle. Xavier Gramona formuló una interesante pregunta: ¿qué es un gran vino?, y de entre los diversos atributos que debería tener un gran vino, equilibrio, complejidad, persistencia…, hay uno imprescindible para todo gran vino, y es la capacidad de envejecer, afinarse y ganar en complejidad. Los Cavas de larga crianza de Gramona demuestran, que son vinos de guarda, complejos y con capacidad de evolucionar, y se alejan del estereotipo de vino refrescante con burbujas.

Una cata que nos invita a profesionales y amantes del vino, a guardar botellas de grandes espumosos en la bodega, para conseguir que alcancen su máxima expresión y equilibrio, tal y como haríamos con cualquier otro gran vino.

GRAMONA III LUSTROS GRAN RESERVA BRUT NATURE 2007 The tasting started with a wine that has upheld the prestige of the brand. A wine of great aromatic complexity, thanks to its seven years of ageing, but, only six months after its disgorgement, undoubtedly very young and somewhat undeveloped. Colourwise, there are still greenish glints, while strong aniseed aromas offset the ageing notes. The delicate bubbles and crisp, thirst-quenching acidity merge in a vibrant palate that delivers a dry finish.

An ideal wine for those who value the subtly spicy and refreshing sensation produced by carbon dioxide, but which over time becomes more complex and settled.

GRAMONA ENOTECA GRAN RESERVA BRUT 2001 The previous wine’s Brut version, in which aniseed aromas and refreshing balsamic aromas take centre stage, together with the classic hints of pastries typical of ageing and an elegant note of orange peel.

The delicate bubbles and liqueur combine to furnish a rather opulent and fullbodied mouth-feel, counteracted by a tangible and delicious citric acidity and a dry finish that balances the dosage.

GRAMONA III LUSTROS GRAN RESERVA BRUT NATURE 2003 A bold decision at first glance, faced as we were with one of the toughest vintages in recent memory. The blazing heat of 2003 lasted many months with no respite, truly uncompromising conditions which led to the decision not to produce either Celler Batlle or Enoteca. Yet in difficult years like these, great vineyards measure up and so, five years after disgorgement, the wine has taken on a golden colour indicating a certain evolution. On the nose, it moves between sweet notes and hints of toast and hazelnuts; its entry on the palate is soft and full-bodied thanks to a creamy mousse which

gives way to still-fresh acidity and a dry, reasonably long and subtly warm finish.

En principio una elección arriesgada, ya estamos ante una de las añadas más difíciles que se recuerda en los últimos años. El calor abrasador de 2003 duró meses y no dio tregua, unas condiciones muy complicadas que llevaron a la decisión de no elaborar Celler Batlle ni Enoteca.

Pero en estas añadas difíciles los grandes viñedos dan la talla, y después de cinco años de su degüelle, el vino se muestra con un color dorado que denota cierta evolución. En nariz se mueve entre las notas dulces, y los recuerdos de pan tostado, avellanas, con una entrada en boca suave y voluminosa gracias a un carbónico cremoso que da paso a una acidez todavía fresca y un final seco, de cierta persistencia y ligeramente cálido.

GRAMONA CELLER BATLLE GRAN RESERVA BRUT 2002 Three years after its disgorgement, this Celler Batlle is still lively, if perhaps one of the lightest-bodied (no doubt owing to the vintage). Fragrant, if a little austere, on the nose, it becomes very fresh and nervy on the palate. A straightforward wine with a rather short finish, it does have a certain complexity, exhibiting the classic toasty aromas acquired through long ageing.

Un Celler Batlle degollado hace tres años, se muestra todavía vivo aunque tal vez sea uno de los más ligeros seguramente debido a la añada. Una nariz fragante, pero algo austera, da paso a una boca muy fresca y nerviosa. Un vino directo pero algo corto al final de boca, aunque no exento de cierta complejidad, en el que aparecen los clásicos aromas tostados que ha adquirido con su larga crianza.

GRAMONA ENOTECA GRAN RESERVA BRUT NATURE 2000 We now return to Enoteca, in this case the first vintage to come onto the market.

Three years have passed since it was separated from the protection of the lees and its evolution in the bottle began. At present, its liveliness is maintained by a refreshing acidity which adds depth. The carbon dioxide appears well-integrated, increasing the impression of body on the palate, combining with perfumed aromas of aniseed and orange peel over the classic sweet backdrop of pastries.

Hace ya tres años que fue separado de la protección que ofrecen las lías, e inició la evolución en botella. De momento mantiene su vivacidad, gracias a su refrescante acidez que le aporta profundidad.

El carbónico se muestra bien integrado e incrementa la sensación de volumen en la boca, que se combina con aromas perfumados de anís y piel de naranja, sobre el clásico fondo dulce de pastelería.

Very closed on the nose, this wine requires time and a relatively large glass. Displaying classic aromas of ageing, it has a pleasant, rather opulent entry on the palate and a fresh, elegant ambience.

Already giving great pleasure, this wine may possibly reveal greater complexity over time.

Y de nuevo la versión Brut también tras tres años después de su degüelle. Un vino muy cerrado en nariz, que necesita tiempo y una copa relativamente grande. Clásicos aromas de crianza, con una entrada en boca amable y de cierta opulencia, en un entorno fresco y elegante. Un vino que da gran placer, pero por el que se puede esperar para conseguir mayor complejidad si cabe.

GRAMONA CELLER BATLLE GRAN RESERVA BRUT 1999 Seven years since disgorgement!!! This is irrefutable proof of the first-rate ageing ability of a great cava from a great vintage. Closed on the nose, it needs time to unfold the full nature of its aromatic complexity made up of sweet notes of honey, brioche and perfumed hints of cinnamon against a pleasing balsamic backdrop.

Like all great wines, it is compact, dense and full on the palate, with a near-perfect balance.

With a long lasting finish of dried fruits and honey, its lively acidity augurs a lengthy future.

Degollado hace 7 años!!!

La prueba fehaciente de la capacidad de envejecer que tiene un gran cava en una gran añada. En nariz se muestra cerrado y necesita tiempo para desplegar toda su complejidad aromática de dulces notas de miel, brioche y perfumados recuerdos de canela, sobre un refrescante fondo balsámico. Su paso en boca es el de los grandes vinos, compacto denso y profundo con un equilibrio casi perfecto. Un final de boca persistente de frutos secos y miel, con una acidez muy viva, que le augura una larga vida por delante.

50 Years and “Just Beginning”: 50 años y “apenas comenzando”:

ROBERT MONDAVI winery / bodega It’s an odd thing when heritage becomes boring.

The USA is so young that it doesn’t have a lot of history, at least in comparison to Europe. And for the USA, Europe is where the comparison starts, especially on the East Coast, where I am based.

Today, while we revere and even admire legacies in the Old World, we quickly classify similar entities as boring when such phenomenons crop up in our New World. It seems that in 2016, “old” or “mature” or even “made it!” in Napa Valley mean “stale.”

As it turns out, Napa is in a moment of polarization. I recently had a top NYC California Brand Manager ask me to do a sales presentation to Manhattan sommeliers on Napa Cab. “It just won’t move at the high end,” the rep said. The reference was to anything over $100 on a Manhattan wine list. When Napa Valley Cabernet starts at $50 retail in a wine store, that means it sells at $100 on a wine list. Most producers of Napa Cabernet Sauvignon would feel heart arrythmias if their wines listed under $100 in the Big Apple.

Effectively, Napa, the throbbing bloodline of USA wines, is expensive.

Taking a step back, this might come as a surprise to you, readers in Spain. After all, this is in direct contrast to wineries with European heritage. Granted, European heritage tends to be three to ten times deeper – either in decades or generations. So, what are we all a-fuss about with old being too old in this country, when it’s not so old, especially in our most-heralded wine region?

Well, as Hillary Clinton said (and because political references can’t not be made in this wildly polarizing election year, here I go), “It takes a village.” And, someone must found that village.

Robert Mondavi did that in Napa Valley in the 1960s.

This year marks the 50th anniversary of the founding of Robert Mondavi winery. What is so brilliant about the winery today is that it remains as focused on heritage and quality as when the winery was attempting to make its first vintage.

Speaking with Warren Winniarski, who made the first vintage of Robert Mondavi wines, I was astonished by the challenges of his first harvest there. The tales he told! For starters, they had to wait for the tanks to be delivered to harvest the grapes. He

Es extraño cuando la herencia se convierte en algo aburrido. Los Estados Unidos es un país tan joven que carece de mucha historia, al menos en comparación con Europa. Y, para los Estados Unidos, Europa es donde comienza la comparación, especialmente en la Costa Este, en donde estoy establecida.

Hoy en día, mientras veneramos e incluso admiramos los legados del Viejo Mundo, también clasificamos rápidamente entidades similares como aburridas cuando estos fenómenos aparecen en nuestro Nuevo Mundo.

Pareciera que en el 2016, “antiguo” o “maduro” o incluso “exitoso” en el Valle de Napa significa “anticuado”.

Ocurre que Napa se encuentra en un momento de polarización. Hace poco, un importante “Brand Manager” para los vinos de California de Nueva York me pidió que hiciera una presentación, dirigida a los sommeliers de Manhattan, sobre el Cabernet de Napa. “La gama alta simplemente no se mueve”, me dijo. Se refería a cualquier cosa sobre los $100 en una carta de vinos en Manhattan. Cuando un Cabernet del Valle de Napa se consigue a partir de $50 al por menor en una tienda de vinos, quiere decir que se vende por $100 en una carta de vinos. A la mayoría de los productores de Cabernet Sauvignon de Napa les provocaría una arritmia en el corazón si sus vinos se vendieran por menos de $100 en la Gran Manzana.

Efectivamente, Napa, el vibrante linaje de los vinos estadounidenses, es caro.

Tomando un poco de distancia, esto puede resultar una sorpresa para vosotros, lectores en España. Después de todo, esto contrasta directamente con las bodegas de herencia europea. Ciertamente, la herencia europea tiende a ser de tres a diez veces más profunda - ya sea en décadas o generaciones. Entonces, ¿cuál es el escándalo con que lo antiguo es muy antiguo en este país, cuando no es tan antiguo, especialmente en nuestra región vinícola más divulgada?

Bueno, como dijo Hillary Clinton (y porque las referencias políticas no pueden dejar de hacerse en este año de elecciones de tanta polarización, aquí voy), “Hace falta una aldea”. Y alguien tiene que fundar esa aldea.

worried about the grapes becoming overripe. Then, the winery didn’t have doors for a while as they were waiting for the tanks to be set in the winery. Without doors, they couldn’t get an offical license to make wine. Luckily, the regulators allowed them to nail up boards to close off the winery – relatively speaking – and to make wine at the same time.

We tasted the 1966, just about two ounces or so, at dinner. I wish I knew exactly what Warren was thinking when he tasted that wine. I suspect he was thinking about the plumbers and electricians running around to finish their work while he was trying to crush grapes and make Cabernet in the first facility to receive a license to make wine in Napa Valley post-Prohibition – 33 years after the fact.

With whatever meager means followed-up with the mighty gumption Warren and the Mondavi crew might have had, I cannot imagine that anyone who made that wine would believe how profound it is today.

Brown in color, yes, but fragrant with leather and mulled cherries and a hint of balsamic, it is layered in flavor and sophisticated in structure. They had neither a fancy press nor a well-equipped laboratory to help them or tell them how to make their next step. Tasting this wine was tasting history as well as tasting a very different Napa than the one that exists today. And that old Napa will defy your every expectation of anything you might taste from her valley today.

Over the course of a few days we tasted many wines – 50 in fact – amongst the range of wines made at the winery in the last – and first – 50 years. Though known for its Cabernet Sauvignon bottlings, the Mondavi Fumé Blanc styles may be my favorites. (Robert created the name Fumé Blanc to give a nod to Pouilly Fumé while making Sauvignon Blanc in a Napa style.) Whatever the grape or color, don’t let history bore you. Explore what you can of the older Mondavi wines.

Este año marca el 50 aniversario de la fundación de la bodega Robert Mondavi. Lo más maravilloso de la bodega hoy en día es que sigue estando tan enfocada en su herencia y en la calidad como cuando estaba intentando producir su primera añada.

Conversando con Warren Winniarski, quien hizo la primera añada de los vinos Robert Mondavi, me asombraron los retos que se le presentaron en su primera vendimia allí. ¡Las historias que me contó!

Para empezar, tuvieron que esperar a que los tanques fueran entregados para poder recolectar las uvas. Le preocupaba que las uvas se maduraran demasiado.

En ese entonces, la bodega no tuvo puertas por un tiempo ya que estaban esperando a que instalaran los tanques allí. Sin puertas, no podían obtener una licencia oficial para hacer vino. Por suerte, los reguladores les permitieron colocar tablas aseguradas con clavos para cerrar la bodega - en términos relativos - y hacer vino al mismo tiempo.

Degustamos el 1966, apenas una o dos onzas, en la cena. Desearía saber exactamente en qué estaba pensando Warren cuando degustó ese vino. Sospecho que estaba pensando en los fontaneros y electricistas que corrían por allí para terminar su trabajo mientras que él intentaba prensar uvas y hacer Cabernet en la primera instalación que recibió una licencia para hacer vino en el Valle de Napa luego de la Prohibición - 33 años más tarde.

A pesar de los escasos recursos y las grandes agallas que Warren y el equipo de Mondavi pudieran haber tenido, no puedo imaginar que cualquiera que haya hecho ese vino hubiese creído lo profundo que sería hoy en día.

Presenta un color marrón, sí, pero es fragante con aromas a cuero, cerezas calentadas y especiadas y un toque de balsámico; es profundo en sabor y sofisticado en estructura. No tenían una prensa lujosa ni un laboratorio bien equipado para ayudarlos o decirles cómo llevar a cabo el próximo paso. Degustar este vino fue degustar la historia, y también degustar un Napa muy distinto al que existe hoy. Y ese Napa antiguo desafiará toda expectativa sobre cualquier vino que puedas degustar de su Valle actualmente.

A lo largo de varios días degustamos muchos vinos 50 de hecho - entre la gama de vinos producidos en la bodega en los últimos - y primeros - 50 años. Aunque es conocido por sus embotellados de Cabernet Sauvignon, los estilos Fumé Blanc de Mondavi puede que sean mis favoritos. (Robert creó el nombre Fumé Blanc en reconocimiento a Pouilly Fumé mientras hace Sauvignon Blanc al estilo de Napa). Sin importar la variedad de uva o el color, no permitas que la historia te aburra. Explora lo que puedas de los vinos Mondavi más antiguos.

We are not sure who came up with the idea for this event, but we think it is bound to be a long term hit. It was interesting to meet 19 female wine producers together at one event, particularly because of their diverse origins. The ladies presenting their wines at Barcelona’s Fabrica Moritz hailed from a number of D.O.s, including Empordà, Penedés, Manchuela and Méntrida.

We had the pleasure of attending Veuve Clicquot’s presentation of its 2008 vintage, held at La Terrace

By Arzábal in Madrid, and which coincided with our presence at the “Salon de Gourmets”. Veuve Clicquot’s winemaker, Pierre Casenave, had come to Madrid for the event and treated us to a tasting of a white and a rosé champagne from the new vintage, along with the different wines that went into their coupages.

tuvimos la oportunidad de asistir en Madrid, en la Terraza By Arzábal, a la presentación de la añada 2008 de la Maison Veuve Clicquot. El evento contó con la presencia del enólogo de la maison, Pierre Casenave, quien nos deleitó con una cata en la que, además de la nueva añada, en sus dos versiones, blanco y rosado, se degustaron los diferentes vinos que forman parte del coupage de los vinos presentados.

by Juvé & Camps in collaboration with distributor, Primeras Marcas, this event takes place in Juvé & Camps’ winery every two years, in parallel to Alimentaria. The event’s organization just gets better and better, attracting an increasing number of participants, mainly from the wine industry. We had the pleasure of attending a historic tasting of Leon Beyer wines, led by Marc Beyer, owner and 3rd generation of the family. We tasted nine Alsatian wines, all from a single varietal, the Pinot Gris. Other fascinating tastings included the single vineyards of Spain, Louis Roederer champagnes and a vertical of Château d’Yquem.

En esta ocasión, pudimos asistir a una cata histórica de Leon Beyer, dirigida por Marc Beyer, propietario y 3ª generación de la familia, en la que se cataron 9 vinos alsacianos, cuya característica era que todos eran monovarietales, concretamente Pinot Gris.

También tuvieron lugar catas tan interesantes como la de parcelarios de España, una cata de Louis Roederer o una muy interesante vertical de Château d´Yquem.

with a menu of dishes paired with the Ports from the centenary Port House, Ramos Pinto, was recently held at the Andorra Park Hotel in the Principality of Andorra.

The Portuguese chef, Arnaldo Azevedo, in conjunction with the hotel’s chef, Marc Mora, and Ana Rosas, Ramos Pinto’s production director, working in collaboration with the hotel’s sommelier, Pablo Perez, ensured that the participants were treated to a unique experience.

Roqueta/origen The origins of the Roqueta family date back to the year 1200 and are rooted in the heart of the province of Barcelona, deep in the mountains of the comarca (county) of Bages. This craggy landscape is today populated by pine and oak trees but was once one of the most important wine producing areas in Spain. While phylloxera was laying waste to the French vineyards, grapes were being planted from the lowest to the highest hill peaks of Bages, where the steepness of the terrain is managed with the help of bancal and terrace systems. When the vineyards were wiped out by Phylloxera in neighbouring France and grapes became a scarce commodity, the growers in this part of Catalonia seized the opportunity to make a lot of money from the trading of wine. They never thought for a moment that the accursed phylloxera louse would reach their own vineyards… How could it possibly penetrate such wild, rugged countryside?

Many, many years before phylloxera lay waste to France and the comarca became rich from the sale of wine, the ancestors of today’s wine producer, Valentí Roqueta, owned vineyards and produced wine. They did this on a beautiful old estate, the Masía Santa Maria de Horta de Avinyó, which, today, has been completely restored.

Beneath the house lies a remarkable winery, an absolute gem, complete with lagares (stone troughs in which grapes are trodden) and stone tanks, which has survived the passing of time. In the local county archives, there is mention of a Jaume Roqueta, who is listed as the owner of the Santa María de Horta de Avinyó estate, and one can trace how the estate passed down from father to son over 58

the years and centuries. Some of these were particularly hard times for Bages, notably the 14th century, due to a major rural exodus which saw the comarca abandoned for various reasons including wars and the plague. The Roquetas, however, stayed put, rooted to the soil and the vine and, interestingly, produced many sons who kept the family name going.

At the end of the 19th century, Ramón Roqueta Torrentó (1875-1938) decided to re-organize the family business to align it with the times in which he was living (19th century, the Industrial Revolution, etc). In 1898, he moved to the wealthy town of Manresa, capital of the comarca and an important hub. There, with full legal paperwork, i.e. his first name, surname and signature, Ramón Roqueta established the head office of the winery and the wines of the Horta de Avinyó estate and, from there, he began to market and export his wines.

THE GREAT MAN OF BAGES

After Ramón’s death during the Spanish Civil War, his son, Valentí Roqueta Prat, took over at the helm, surmounting the enormous difficulties created by the aftermath of the military conflict. He successfully modernized methods and facilities, including the inauguration of a modern bottling plant which enabled him to diversify his offer hitherto limited to the sale of wine in bulk and casks. His grandson, the present day, Valentí Roqueta Guillamet, a trained oenologist with a good nose for business, diversified the

EL PROHOMBRE DEL BAGES

Roqueta/origen Los orígenes de la familia Roqueta se remontan al año 1200 y se sitúan en el corazón de la provincia de Barcelona, en las montañas de la comarca del Bages, abrupto paisaje hoy lleno de pinos y robles y que antaño fue una de las zonas vitivinícolas más importantes del país. Cuando en Francia arrasaba la filoxera, en El Bages se plantaba uva hasta en la cima más alta del monte, con ayuda de bancales y terrazas dado lo escarpado del territorio. La uva era un bien escaso para los vecinos franceses que habían perdido ya todo su viñedo y los agricultores de estas tierras aprovecharon la circunstancia e hicieron mucho negocio con la venta de vino. No pensaban que la maldita filoxera fuera a llegar nunca… ¡Cómo iba a adentrase por aquellos parajes tan salvajes y abruptos!

Mucho, mucho antes que la filoxera arrasara en Francia y que la comarca se enriqueciera con el negocio del vino, los antepasados del actual Valentí Roqueta poseían viñedos y elaboraban vinos. Y lo hacían en una bella y vieja masía de Santa Maria de Horta de Avinyó, hoy completamente rehabilitada, con una extraordinaria bodega bajo la casa que ha sobrevivido al tiempo, con sus lagares, depósitos de piedra… Una verdadera joya. En archivos comarcales podemos encontrar a un Jaume Roqueta que figura como propietario de la finca de Santa María de Horta de Avinyó, y se observa cómo fue pasando de padres a hijos a lo largo de los años y de los siglos. Algunos de ellos como el siglo XIV, fue especialmente duro para la comarca pues se produjo un gran éxodo rural, todos abandonaban El Bages, por diversas causas, peste negra, guerras,… Los Roqueta permanecieron ligados a la tierra y a la vid.

Así hasta que a finales del siglo XIX, Ramón Roqueta Torrentó (1875-1938) –curiosamente esta familia tuvo muchos hijos varones que mantuvieron el apellido en primera línea- quiso organizar el negocio familiar con otra visión más acorde al tiempo que le había tocado vivir, siglo XIX, revolución industrial… Se trasladó en 1898 a la rica Manresa, núcleo de gran importancia productiva y capital de la comarca, y construyó allí la sede social de la bodega, de los vinos de masía de Horta de Avinyó con papeles oficiales –es decir, con nombre y apellido, con la firma Ramón Roqueta- y desde allí comercializaba y exportaba.

A la muerte de Ramón en plena Guerra Civil, su hijo Valentí Roqueta Prat siguió al frente de la bodega y consiguió superar las enormes dificultades y consecuencia del conflicto bélico, llegando incluso a modernizar instalaciones y medios, como la inauguración de una moderna planta embotelladora que le permitió diversificar una oferta hasta entonces limitada al comercio de vino a granel y en barriles.

Su nieto, el actual Valentí Roqueta Guillamet, enólogo de profesión y empresario modelo, diversificó el negocio y creó nuevas bodegas, eligiendo el bello e histórico paraje que rodea a la antigua masía de Horta de Avinyó -donde todo empezó, el origen- para levantar una bodega en el año 1983, llamada Abadal e implicándose profundamente en el tema de la recuperación de la cultura, prestigio, vides, historia de la comarca del Bages y de la Denominación de Origen Pla de Bages, que nació en el año 2006, y de la que es presidente.

Su pasión y conocimiento por las viticultura le llevó hace ya muchos años -cuando las variedades autóctonas eran ninguneadas y desplantadas para mayor honra y gloria de las uvas francesas que invadieron nuestros viñedos- a empeñarse en la recuperación de una uva blanca llamada picapoll, vino estrella de la bodega Abadal.

Pero su gran inquietud y curiosidad no parecía sentirse satisfecha. Otro de sus grandes proyectos es el llamado Paisajes 1883, fecha que conmemora los años gloriosos de la comarca, cuando el vino era un gran tesoro. Este interesante proyecto, ya hecho realidad, trata de recuperar los viejos tinos de piedra situados en plena viña, donde se elaboraba y vendía el vino. Rudimentarias construcciones de piedra seca levantadas en medio del viñedo, al pie siempre de un arroyo y en medio de la montaña, la uva la pisaban arriba poniendo unas tablas entre las cuales caía el zumo de las uvas por la presión ejercidas por los pies de los propios agricultores que desafiaban el peligro de caerse ayudándose con una rudimentaria cuerda que colgaba de la rudimentaria techumbre de piedra. Hay más de 100 tinos de piedra por la comarca pero casi todos, menos los recuperados por la familia Roqueta, están en desuso. Estos tinos y barracas rehabilitados constituyen piezas de interés histórico cultural.

business and built new wineries. He chose the beautiful, historic location surrounding the ancient Masía Horta de Avinyó, where everything all started, to build a winery named Abadal, in 1983. He became closely involved in the revival of the culture, prestige, vines and history of Bages and in the Pla de Bages Denominación de Origen, created in 2006, of which he is president. At a time when indigenous varieties were looked down upon and many had been grubbed up in favour of the noble French grape varieties that had invaded the Catalan vineyards, Roqueta, with his great love and knowledge of viticulture, persevered in the recovery of a white grape variety called Picapoll, the flagship wine of the Abadal bodega.

Yet his ambition and curiosity were apparently still not satisfied. Another of his major projects was Paisajes 1883 (Landscapes 1883). The date commemorates one of the comarca’s glory years, a time when its wine was considered a veritable treasure. The aim of this fascinating project, which has become reality today, was to restore the old stone tanks or tinas, located in the vineyards, where the wine was once produced and sold.

These rudimentary structures made from dry stone were erected in the middle of the vineyards, always beside a stream, amidst the mountains. The grapes were pressed by growers standing over the tanks on wooden boards.

The grape juice ran down into the tank below due to the pressure exerted by the feet of the growers, who were only prevented from falling by the use of a simple rope hanging from the primitive stone roofing. There are more than 100 tinas throughout the comarca, but, apart from those restored by the Roqueta family, almost all of them have fallen into disuse. The restored stone tanks and huts are structures of great historical and cultural interest.

THE MOST NATURAL OF NATURAL WINE

Roqueta is not only restoring these lovely, rudimentary constructions, he also maintains them in a perfect condition for the production of wine according to 19thcentury tradition, without the addition of sulphur and using grapes from the extremely old vines still found growing in the surrounding area. This type of wine is today referred to as ‘natural wine’. So it seems nothing is new under the sun, and even less so for the Roquetas, with so many centuries of viticulture behind them.

Before embarking on the Paisajes 1883 project, Roqueta had already set up his first winery outside Catalonia Bodega Crin Rioja in Fuente del Álamo (Albacete province).

He had also created a new winery in Catalonia, in Batea (Tarragona province), known as La Fou Celler. This business is managed by his son Ramón, the new, 21st century Ramón Roqueta. This winery produces high-end wines of great depth, in accordance with the family philosophy, using indigenous red and white Garnacha grapes. It is located in an old 17th-century manor house, Can Figueras, in the centre of the old village, which Roqueta restored and converted into a modern bodega, preserving all its beauty.

Valentí Roqueta has also completed another major project.

When he was president of the Caixa Rural de Manresa bank, he sponsored the complete restoration of an outstandingly beautiful set of buildings, lying virtually abandoned at the time, and which included the vast Monastery of San Benet, near the village of San Fruitós de Bages. Here, right next to the monastery, he set up the important Fundación Alicia (Alicia Foundation), devoted to food research. This location is entirely dedicated to sensory experiences and includes a hotel, which is home to L’Ó, a Michelin-starred restaurant run by young chef, Jordi Llobet, spacious gardens with commanding views of the completely renovated monastery, the Fundación Alicia, surrounding forests, and the ‘Fábrica de ideas culinarias’ (Factory of Culinary Ideas), with its shop and underground bodegas.

Independence, authenticity and innovation are the three cornerstones of the philosophy of this great family rooted in the soil and the vine for over eight centuries.

Greater wine heritage would be hard to find!

MÁS NATURAL, IMPOSIBLE

Pero no sólo recupera las bellas y rudimentarias construcciones sino que las deja perfectas para elaborar los vinos según se hacía en el siglo XIX, sin añadido de sulfuroso y con las cepas viejísimas que quedaron por sus alrededores. Lo que hoy por hoy se llama vino natural. Nada es nuevo y menos para los Roqueta, con tantos siglos de viticultura a sus espaldas.

Y antes de acometer este proyecto de Paisajes 1883, ya había concluido su primera bodega fuera de Cataluña, en Fuente del Álamo, en Albacete, Bodega Crin Rioja, además de crear una nueva bodega en tierras catalanas, concretamente en Batea (Tarragona) llamada La Fou Celler, proyecto que lleva personalmente su hijo Ramón, el nuevo Ramón Roqueta siglo XXI; con vinos muy exclusivos y de gran calado elaborados, como corresponde a la filosofía de la familia, con uvas autóctonas, la garnacha negra y la garnacha blanca. La bodega está en una vieja casa señorial del siglo XVII en el casco antiguo del pueblo, Casa Figueras, rehabilitada y adaptada a moderna bodega sin perder un ápice de su belleza.

Valentí Roqueta ha hecho realidad otro gran proyecto.

Un mundo abierto a los sentidos, donde existe un hotel con restaurante estrella Michelín, L’Ó, a cargo del joven chef Jordi Llobet, con amplios jardines con vistas al Monasterio totalmente rehabilitado, a la Fundación Alicia, a los bosques, a la Fábrica de ideas culinarias, con tienda y bodega de calado.

SPIRITS VODKA, THE ORIGIN OF THE ORIGINAL SPIRIT When I have written in the past about the origins of different spirits, you may have noticed that the story and evolution of these spirits invariably begins in one particular period in history, i.e. the Middle Ages. At the time of the Reconquista of the Muslims in Spain, doctors and theologians began to compile studies and a history of distillation techniques, recording these in their prized books and treating them as a subject of study. As is only natural, a direct link between these “spirit of the earth” seekers and religion was also established, and their knowledge spread throughout Europe, giving birth to some of the spirits that we enjoy to this day, albeit in a more hedonistic and select manner.

It is very likely that one of the first spirits produced was what we today call vodka, a pure distillate of grain or other organic material of agricultural origin, which, because of the simplicity of its production, requiring minimal intervention, became popular.

We could refer to vodka as being “the original spirit”, as it was at the origin of a number of other spirit types.

Today, two countries on the eastern edge of Europe – Russia and Poland – still lay claim to being the inventors of vodka. These two countries have a cold climate and a deeply-rooted culture and tradition of drinking this spirit, essentially because it enables them to combat low temperatures by heating the body from within.

The name of the spirit is derived from the Slavic word “Voda” which means “water”. But, disputes over its origin aside, what we do know with some certainty is that it was Russia which, due to its economic power and the Czars’ taste for the finer things in life, developed this beverage in their quest for the highest quality spirit. So, while in Poland they were still using the potato as a raw material for their vodkas, the Russians were already using wheat for greater finesse and elegance. And when we refer to the Czars’ role in elevating vodka into a quality spirit, we are actually talking about one Czar in particular, Peter the Great. This lover of the clear Russian spirit devoted capital and resources into improving distillation, designing new stills and water purification treatments.

From that time on, and with the approval of Catherine the Great, Russian nobles were permitted to produce their own vodkas and other big names appeared. These included Ivan Smirnoff, the inventor of charcoal filters and Dimitri Mendeleev, who created his chemical formulation that would give this drink its reputation of being the purest spirit in the world.

SPIRITS VODKA, EL ORIGEN DE LO MÁS BÁSICO Cuando en anteriores ocasiones hemos hablado sobre los orígenes de diferentes destilados, siempre aparece una era como detonante fundamental de la historia y evolución de estos, la Edad Media, y es qué situándonos en plena reconquista a los musulmanes en nuestro país, los médicos y teólogos comenzaron a recopilar estudios e historia de las técnicas de destilación, incorporándolas en sus libros más preciados y tratándolas como materia de estudio. De esta forma se establece también, como no podría ser de otra manera, una vinculación directa de los buscadores del espíritu de la tierra y la religión, que expandiría sus conocimientos por toda Europa dando pie al origen de algunos de los destilados que aún hoy podemos disfrutar de forma más hedonista y exclusiva.

Es muy probable que uno de los primeros destilados en hacerse fuese el que hoy en día llamamos vodka, un destilado puro de grano u otras materias orgánicas de origen agrícola, que, basados en la simplicidad de su elaboración y mínima intervención, podríamos llamar “el destilado original”, pues son algunas las tipologías de otros destilados en las que su origen está basado en la evolución del vodka.

Nos situamos en el extremo oriental de Europa, donde dos países se disputan, aún a día de hoy, ser los padres del Vodka, Rusia y Polonia, dos países de clima frío y en cuya cultura y tradición está muy arraigado el consumo de este destilado, básicamente, para poder combatir las bajas temperaturas calentando el cuerpo desde su interior y cuyo nombre deriva del vocablo eslavo “Voda” que significa “Agua”. Pero más allá de las disputas por su origen, lo que sí se puede asegurar es que fue Rusia la que, gracias a su poder económico y la búsqueda de lo más selecto por parte de los Zares, aportó más evolución sobre esta bebida en búsqueda de la máxima calidad de destilación, de esta manera mientras que en Polonia se siguió destilando la patata como materia prima para sus vodkas, los rusos usaron el trigo para obtener más finura y elegancia. Y si hablamos de los Zares que contribuyeron a esta ascensión del vodka al reino de los destilados de calidad, este fue sin duda Pedro I el Grande, pues este amante de la transparente bebida rusa invirtió capital y conocimientos en la mejora de las destilaciones diseñando nuevos alambiques y tratamientos de purificación del agua.

A partir de este momento, y con el beneplácito de la reina Katalina II para que los nobles rusos pudiesen elaborar sus propios vodkas, aparecen otros grandes nombres como Ivan Smirnoff inventor de los filtros de carbón vegetal o Dimitri Mendeléyev creador de su formulación química que acabarían consolidando la bebida como la imagen más pura del mundo de los destilados.

The second largest producer of quality Russian vodka, the Ladoga Group of Saint Petersburg, wanted to celebrate the origins of this spirit by creating a luxury limited edition of its flagship vodka, Imperial, inspired by the image and recipe of the first quality vodka produced by Peter the Great, in that same city. Its frosted glass bottle is labelled with an alloy made of copper and 15 microns of pure 24k gold, designed to transport us back to the ostentatious, golden era of the Russian Tsars. It contains a vodka made from homegrown organic wheat, distilled 12 times in a continuous column still, filtered through membranes of the highest quality gold, and blended with water from the Ladoga glazier to obtain its elegant 40 degrees alcohol.

It is intended to be a faithful replica of the vodka produced

by Peter the Great back in 1700. Creamy and fresh with hints of honey and chamomile, this vodka is best enjoyed neat in order to appreciate it in its pure essence, chilled, on its own, but never alone. Its most luxurious version comes bottled in a replica of the famous eggs created by Russian jeweller, Karl Fabergé, finished with Murano glass crystals and gold, and retailing at over €1,500.

El segundo productor de Vodka de calidad ruso, el Grupo Ladoga, de San Petersburgo, ha querido homenajear los orígenes de este destilado, elaborando una edición especial de su vodka insignia, el Imperial, en una versión más lujosa inspirada en la imagen y formula del primer vodka de calidad elaborado en esta misma ciudad, por el Zar Pedro I El Grande, donde su botella de vidrio glaseado se etiqueta con una aleación de cobre y 15 micras de oro puro de 24 kilates, toda una intención de principios que nos traslada a la época dorada y ostentosa de los Zares rusos. En su interior un trigo ecológico de cultivos propios destilado 12 veces en columnas contiguas y filtrado también en membranas del mismo oro de la máxima calidad y rebajado con agua del glaciar Ladoga hasta conseguir sus 40 grados de elegante alcohol.

Su objetivo es ofrecer una visión fidedigna del vodka elaborado por el mismo Zar Pedro allá por el año 1700.

Cremoso, fresco y con toques de miel y camamila, este vodka huye de las mezclas y nos invita a ser disfrutado en su pura esencia, frio, solo, pero nunca solos. Su versión más lujosa viene embotellada en una réplica de los famosos Huevos del joyero ruso Karl Fabergé, rematados con cristales de Murano y oro, alcanzando precios superiores a los 1500€.

SCOTCH WHISKY John Campbell, master distiller at Laphroaig, the southernmost distillery on the Isle of Islay, surprises us again, breaking traditional malt whisky rules without altering the pure essence and unique style of the peated whiskies.

He has used a special selection of American and European casks chosen for their unique character during maturation, when nuances of Laphroaig 10, Quarter Cask, PX Cask and Triple Wood emerge. It is an amalgam of toasty aromas, tropical fruit, coconut and honey, embraced by an intense and iodized wave of fresh, pungent 30ppm peat.

Looking at the bottle’s clean, white label, and noting the absence of a year, one might possibly think that Select is a lower quality whisky “invented”

by Laphroaig to cover a particular consumer price segment, but nothing could be further from the truth. With its extremely fine finish, this Select 40-degree whisky will find favour with any Scottish malt whisky lover. Every sip surprises us with a wide and penetrating array of aromas and flavours.

And the best news of all is that it retails at a very reasonable price.

John Campbell, maestro destilador de Laphroaig, la destilería más al sur de la isla de Islay, nos vuelve a sorprender al romper los esquemas del whisky de malta tradicional sin alterar, eso sí, la pura esencia y el estilo propio de los whiskys turbados, al utilizar el roble americano para el envejecimiento de este single malt en una mezcla de maderas y barricas donde aparecen matices de Laphroaig 10, Quarter Cask, PX Cask y Triple Wood, toda una amalgama de aromas tostados, frutas tropicales, coco y miel, abrazados por una intensa y yodada ola de turba de 30ppm fresca y punzante.

Posiblemente al observar su blanca y limpia etiqueta, así como la ausencia de añada, nos hace pensar en un primer momento en un whisky de menor calidad que Laphroiag se ha “inventado” para cubrir un segmento de precio de consumo, pero nada más lejos de la realidad, este Select con 40 grados y finisimo acabado puede cubrir las expectativas de cualquier amante de los maltas escoceses sorprendiendo a cada sorbo con una paleta aromática y gustativa amplia y penetrante, y lo que es mejor, a un precio más que asequible.

The Torres family (Penedés) started selling its first wine-based spirits almost 60 years after the company was founded in 1870. They were able to take an important share in this new market thanks to the impeccable quality of their work that would later lead to the creation of their famous Torres 10 brand and many more, as well as this gem of a brandy, bottled in a Gaudi-style spiral-shaped bottle, inspired by the Pedrera modernist building in Barcelona. It is distilled from a blend of Franco-Catalan grapes, the Parellada and the Folle Blanche.

The personality of these two origins has been brought out by over 30 years’ ageing in a solera system using American oak barrels.

The result is a brandy of extreme elegance, smoothness and persistence, with a bright, deep mahogany hue and a bouquet reminiscent of old drawing rooms, bookcases and leather sofas with lingering aromas of Cuban cigars, candles and incense. This is definitely a luxury brandy to be enjoyed unhurriedly, with its smooth 38 degrees of alcohol prolonging the sensory experience. It was created as a tribute to Jaume Torres, creator of Bodegas Torres.

La familia Torres (Penedés), que casi 60 años después de su fundación, en 1870, inició la comercialización de sus primeros destilados de vino, supo consolidar este nuevo mercado gracias a un trabajo impoluto y altamente cualitativo que daría paso en los siguientes años a sus famoso Torres 10 y mucho más a delante, a esta verdadera joya embotellada en una espiral Gaudiniana inspirada en la Pedrera de Barcelona. Destilado con una fusión de uvas franco-catalana, la parellada y folle blanche aportan toda la personalidad de estos dos orígenes multiplicado por sus más de 30 años de envejecimiento en un sistema de soleras de barricas de roble americano.

El resultado es un brandy de extrema elegancia, suavidad y persistencia, de brillante y profundo color caoba, cuyos aromas nos trasladan a antiguos salones, de altas librerías y sofás de cuero donde aún humean cigarros habanos, velas e inciensos. Se trata sin duda de un brandy de lujo para ser disfrutado sin prisas, donde sus integrados 38 grados alcohólicos no harán más que alargar la experiencia sensorial de un brandy que nació para homenajear a Jaume Torres, el creador de Bodegas Torres.
