Interview with the Tin Man

I

’ve known Fleetwood Covington for a long time. He swears we met sometime in the ‘80s, but I didn’t move to Beaufort ‘til 1992.

My memories of that decade are a little hazy, but downtown was a bit of a “scene” back then, and at some point, we met.

Guitars were involved. Fleetwood made quite an impression on me then, and he still does every time I see him. Which is usually at one of his sister-in-law Debbi’s famous Christmas parties.

We were chatting at the Conroy Center party, surrounded by photographs, paintings, and other various renderings of the Center’s patron saint. With all these choices, I wondered how Fleetwood had selected the image he did – a photo taken by Paul Keyserling when Pat was a young man teaching poor Black kids on Daufuskie Island – to recreate on salvaged tin, his signature “canvas.”

“I looked at lots of different pictures, but I wanted to show him in action. In essence, this is what he did in the Lowcountry. It’s where the rubber meets the road. When you draw Superman, you don’t draw him in a suit, as Clark Kent. You draw him in his Superman costume, saving people.”

picture of my cousin and me fishing on a piece of tin when I was about 8 years old. But I never messed with it again until the House of Blues asked me to do some stuff, and I thought, ‘Man, I ought to do it on tin.’ I went out to Horton’s junkyard in Wilmington and did a whole series.”

That was two decades ago. Today, he still finds most of his tin in junkyards, though dilapidated barns are another favorite source. He says it’s getting harder to find, and one imagines that’s because he’s already scavenged most of it within a hundredmile radius. His friends and family are always on the lookout.

“People call me up and say, ‘I’ve got some tin.’ I’m like, ‘Thanks! Just bring it over and lay it in the driveway.’”

Fleetwood says he does nothing to the tin “but put the image on it.” It seems to be a matter of pride. Or principle. Or maybe something more mysterious, like superstition.

It’s a system that’s been working for 20 years now, so why mess with it?

“I’ve got some tin that I’m waiting on the right images for,” he told me, “and some images that I’m waiting on the right tin for.”

Take baptism, for example. Fleetwood says he’s probably got six people waiting for pictures of their kids being baptized – the old-fashioned way. “You have to have a rippled piece of tin that’s been lying on a flat piece of tin in order to get those striations, like a river flowing. I can’t make it that way.

I have to find it that way.”

Fleetwood uses carbon and oil to work his magic, which, according to him, isn’t really magic at all. “It’s straight representation.

I don’t even call it an artist’s interpretation.

Being an illustrator, I just do what’s there.”

Preparing for our talk, I watched an old interview with Fleetwood on YouTube, where he went into more detail about his work.

“Some people think it’s folk art,” he said. “But it’s classicism. A factual representation of the

subject. You know what I mean? I’m just using tin for a ground. That doesn’t constitute folk.

Folk may think that, but . . . “ At the time of that interview – 2009 – some art critic had compared Fleetwood to Norman Rockwell. “That’s setting the bar awful damn high,” he’d responded. “I’m 50.

I’m not gonna live that much longer.”

Well, now he’s 63 and his body of work has grown significantly, along with his reputation.

While Norman Rockwell’s legacy is probably safe, it’s no small thing to own a Fleetwood Covington. I’ve got one on my kitchen wall – a birthday gift a few years ago from Fleetwood, his brother Vince, and my dear friend Debbi – featuring a funny, quirky close-up of a frog in rippling water.

I should probably give it back to Fleetwood; he could use the tin for one of those baptism scenes. But I’m way too attached.

The Accountability Monster

C

ambridge Dictionary online gives the following definition for accountability: “the fact of being responsible for what you do and able to give a satisfactory reason for it, or the degree to which this happens.”

Typing, “monster” in the same search section asserts, “any imaginary frightening creature, especially one that is large and strange.”

The welding of the two words creates a responsibly frightening creature; perhaps an overprotective mother’s ideal Build-A-Bear workshop creation, yet our souls are not made of soft cotton. The essence of our truth is embedded with the inherent spirit of The Gods.

Not stuffing indeed, but the stuff that the stars and the Universe are made of. Still, a part of us, perhaps the biggest part of us may, at times, be hidden from our own consciousness as we look out, all the while forgetting to look within.

The Accountability Monster is my attempt to take back control of my internal peace in an uncertain world. I’ve heard the words “it seems like nothing ever rattles you” so much so that I have to double check my name tag at work several times a day. However, the contrary is more closely related to my truth; honestly, most things “rattle” me or frustrate me or irritate me. But I have a frightening creature at my disposal, one that always gives a satisfactory reason for what happens to me, to such an extent that I feel responsible for all of my life’s trials and tribulations.

“What is my part in this?” Is my internal question whenever the t-ball coach pitcher of my life decides to throw a 90-mile-per-hour curve ball at me. I believe everything has to be

a gift or an opportunity if it shows up in my life and even though someone outside of myself may seem to be “wrong,” from my perspective, I must be accountable for how I react and for how I perceive.

I am either a slave or a savior in my story; should being molested at 5 years old influence my ability to be emotionally mature and vulnerable with my romantic partner at 35 years old? The Accountability Monster snarls and growls at this, its disposition reflects a lion stalking its prey. The opportunity the hunt creates is food. When we eat, we grow.

Growth reflects evolution. If I take this perceived wrong-doing as an opportunity for growth, then I can evolve. If I am always evolving with each and every experience of life, every day, all the time, then at some point I will be so far away from the idea of suffering that suffering will cease to exist to me; this is what peace is.

Perhaps you’ve been playing the victim without making any effort to do something to change your own life. If you’re late for work, don’t get mad at people driving slowly, leave earlier. If you’re unhappy with your job, find a new one, or become your own boss. If you think life is unfair, create a world that is fair for yourself. If you fail, try again. If you fail then, try once more. If it isn’t working, find another way to do it. Invoking The Accountability Monster quite simply means that you refuse to be a slave to the things happening to you. Instead, you decide to happen to life. If don’t like something, you either change it or you change yourself.

You may experience unpleasant things in your life that are outside of your control. But what is, and what will always be, in your control is how you react to these things. This is the lesson of The Accountability Monster. Healing and Heaven are both up to you. If you are

LWS Salutes America’s Veterans

T

he Lowcountry Wind Symphony (LWS), under the direction of Maestro Donald F. Jemella, proudly opens each concert season with a tribute to our veterans – past, present and always. The Roman Numeral VIII denotes that this is the 8th season we have so honored our women and

men in uniform. Each year the patriotic Sunday, November 5, at 4pm music changes, but the passion for those St. John’s Lutheran Church who keep our country safe never dims.

(Open to the Public) This year LWS will present Saluting 157 Lady’s Island Drive America’s Veterans VIII in three different Beaufort, SC 29907 venues. All concerts are free, but donations Monday, November 6, at 7pm are gratefully accepted.

NEW CONTAINER ARRIVING SOON!

Lowcountry Wind Symphony is a 55 member concert band, made up of amateur and professional woodwind, brass, and percussion players from the greater Beaufort area.

The program includes stirring marches and quiet, reflective compositions. Some are familiar, written long ago, standing the test of time, while others are newly composed. Each of these will reach deep into your heart engendering pride and gratitude for all veterans. Guest vocal soloist Katie McAllister will perform on the program. Here are a few of the selections from the program.

American Patrol – This popular march was written in 1885 and incorporates American patriotic melodies of the era as well as original music. The ‘patrol’ format, popular in the last half of the 19th century, suggests a marching band approaching from a distance, passing, and then fading away.

Purple Heart – Composer David Shaffer taught thousands of students in his forty plus years as a Music Educator. In 2005 one of his former students was among 14 killed in action. The following summer Mr. Shaffer wrote this piece in tribute to these brave soldiers. The Purple Heart is a specific combat decoration awarded to members of the U. S. Armed Forces who are wounded by an instrument of war in the hands of the enemy. Posthumously it is given to the next of kin to those were killed or have died of wounds received in action. As Mr. Shaffer notes, “Some give all . . . . all give some.”

Eternal Father, Strong to Save – Often referred to as ‘The Navy Hymn’, composer Stephen Melillo has arranged this familiar music to honor “they who go down to Sea in ships . . . ” He dedicated this version to the souls of the USS Indianapolis lost at sea in July, 1945. The ship was sunk by a Japanese

Foreign Fear

O

Now, a small black dog lived in an earthen alcove under a Doric column while another dog stretched and slept on the fallen archway of a marble entrance gate.

In the ruins, Odette seized up in sadness.

Why had she come here? She didn’t like to travel in groups but she’d been unsure of how she would navigate in a country whose language and culture were so different from her American roots. Knowing this, she decided to let go of her independent nature and follow a guide. But she’d lingered too long in the water closet - Turkish for bathroom and was left behind.

Odette took another deep breath. I came here because I am lost in America too, she thought. My parents have passed. I never married and have no children. My brother and sister live in other states. I have a few friends but mostly, I keep to myself. I want adventure but I am 65 and my body has begun to betray me - arch supports, knees that buckle, and eyes that require glasses and saline drops.

The small dog walked up to Odette and sat at her feet. She remembered something a fellow traveler said to her when they visited the ancient city of Ephesus the day before.

Odette shared that she wished she’d brought dog treats to offer a bit of food to the strays.

“Maybe what they want is a different kind of nourishment,” the man offered.

Odette bent forward from her granite seat and scratched the dog’s head. He lifted his head and she let her fingers travel from his skull to the tip of his slim nose. She moved her other hand and began to travel the length of the dog’s bony spine making small circles.

She was gentle and thoughtful in how she touched the animal and the dog was accepting of her slow attention leaning into her calves. They could have been anywhere . . . in Turkey, in America, or on another planet.

In that brief moment, sitting on rock from a forgotten civilization, it was Odette and this dog, together and separate, silent but in communion through touch.

“I have to go now little one.” She caught herself speaking out loud and wondered how many different languages this dog had heard.

It didn’t matter. It wasn’t words but touch.

It wasn’t sound but these few minutes of lingering that moved her from fear to resolve.

Odette gave the pup a few gentle taps between it’s ears and stood. She typed the name of her hotel into Google Maps, tapped the walker symbol, and moved toward the exit. She wasn’t really lost. She was just a bit uncertain in this last quarter of her life.

Moving into the street, she reversed her backpack to the front of her body. She navigated boulevards and crosswalks beside strangers. Between cafes and shops, the aroma of fresh bread mixed with secondhand smoke charged her senses. Odette was smiling. She’d overcome fear. She’d reached out and been fed by a Turkish dog willing to be touched.

‘The Best of Beaufort Art’ on Display

T

he Best of Beaufort Art” was deemed a fitting title for the annual all-member exhibit at the Beaufort Art Association (BAA) Gallery. Members will be submitting their best art of the year.

Each year, the Gallery invites all the BAA general members to submit two pieces of their art, to be exhibited for the next two months. This year, the public will be able to see the work of a dozen or more members who support BAA but chose only to exhibit through their satellite galleries and BAA’s Spring Show. Several new exhibiting members will be showing their work for the first time during this Fall Show.

O

ne ordinary day, a teenage waitress met an elderly man. She noticed that his tailored black suit accentuated the dark circles under his eyes.

The man was alone and requested a quiet table, saying he was early for a Service and gesturing toward the funeral home across the street.

“Sorry,” the teen’s voice was quiet, almost reverent. A vacant stare met her sympathetic glance. She led him to a booth in the back corner. “Will you have time for breakfast?”

He shook his head. “Just tea, please.”

“Right away, sir.” She picked up the menus and extra silverware. No eye contact; no small talk.

Returning with steaming water and a box of assorted teas, she left him with his thoughts and the check. He flipped it over, reading "On the House — Kara."

He was gone within a few minutes.

“Thank you. I appreciate your kindness.”

Late that night, Kara revisited the brief encounter. Still aching from a devastating loss of the grandfather who raised her, she envisioned this bereft stranger, struggling to put one foot in front of the other in the emptiness.

Been there, done that.

Some weeks later, the diner door chime got her attention. There he stood — the dark-suited tea drinker, dressed casually and somewhat thinner, but definitely him.

“Lovely to see you, Miss Kara,” he eyed her name tag. “I remember you!”

“I remember you, too, and you don’t even have a name tag!” She raised her eyebrows in a friendly challenge.

“Touché!” He chuckled, extending his hand. “Oliver Baird. Friends call me Ollie.”

Ollie became a regular, ordering tea and the breakfast special while he worked his daily crossword puzzle. He always sat in Kara’s section.

The hustle and bustle didn’t seem to disturb his concentration. Once when Kara breezed by with a tray for another table, she

asked if he needed anything else and he swapped his fork for a pencil, saying “YES, a 7-letter word for Lady Gaga’s given name.

Ends in I.” She answered without missing a beat, “Stefani, with an F.” “I knew I liked you,” he smiled triumphantly.

With friendly banter, they forged an alliance. She invariably enlightened him on pop culture clues and he revealed each puzzle’s mystery theme with great fanfare.

In time, he told her about his lifelong love, laid to rest the day he first came into the diner. His wife’s name was Bonita and he called her “Bonny Bonnie,” loving her at first sight. She was a wordsmith with a competitive streak, and from the first date, their passion was solving crossword puzzles, side by side, over cups of tea.

“It sure is different, deciphering them by myself.”

Kara understood. “Not everyone who’s alone feels lonely, but everyone who’s lonely sure feels alone.”

That stuck with Ollie, and it told him that Kara’s loss was still fresh.

“Working full-time in my gap year has been a good distraction,” she admitted, “and extra shifts give a boost to my savings, if not my social life.”

Kara hoped to attend the local college come Fall, but confessed that her application essay was daunting.

“Finding a topic is like solving a puzzle,” Ollie told her.

Kara wasn’t entirely convinced, but what ultimately sparked her imagination was a conversation they had about her grandfather as a parent. Having no children, Ollie was fascinated, and especially curious about Kara’s education.

“Grandpa taught me to think by playing chess and poker,” she beamed. “To build my vocabulary, we had crossword puzzle races with separate copies of the newspaper to see who finished first.”

“So, that’s why you’re so quick!” Ollie teased her with a wink.

She cleared his table in one fluid motion.

“Maybe. I know I did NOT like losing.”

“Aha — I’m not surprised!”

With that, her essay on Healthy Competition took shape. She addressed social media fixation and the culture of comparison, then highlighted the value of positive role models and self-motivation. Her application was accepted, pending financial aid.

On another ordinary day, Oliver Baird had an appointment.

He was right on time for his meeting with the University Bursar.

“Professor Baird, good to see you again.

How can I help?” His former associate stood to greet him.

“I’d like to understand the procedure for paying a future student’s tuition bills,” he answered, pulling out a checkbook and silently thinking: “On the House, Kara.”

“The Man” W

USCB Chamber Music is Back!

A Beaufort Ghost Story by Mary M. Greene hen I was in high school, I babysat a VERY smart little boy who lived in one of the oldest homes in Beaufort.

Let’s call the little boy “Charlie.”

Charlie and his parents moved into the house when he was about three years old. Charlie was an extremely bright and articulate little boy, and at the time was an only child. He was tall for his age and had big brown eyes and sandy blond curly hair.

Almost immediately after moving in, Charlie began to talk about “the man.” It wasn’t like “the man” was an imaginary friend, or if he got in trouble he would blame things on the man; every now and then he would just talk about “the man.” Usually reports of the man by Charlie were just “sightings,” not necessarily telling us what “the man” was doing. There were some delft tiles around the fireplace in Charlie’s room, and I always convinced myself that he was so smart he was imagining stories about what that man would be doing. (On the tile, the man had two buckets held together by a yoke.) But the man in Charlie’s description was always dressed in 18th century attire.

We just always laughed about “the man.” It never creeped me out even when I babysat Charlie overnight or house sat for them when they were away.

As he got a little older, apparently “the man” became quite attached to Charlie, because when Charlie would go to visit his grandparents out of town for a while, strange things would happen. One night, the neighbors called Charlie’s parents and said, “You must have had a dinner party tonight and left the candles burning in the dining

room.” Except they had NOT had a dinner party and had not been in the dining room at all that evening. In fact, they had to walk by the dining room to go upstairs and knew the candles were not lit when they went to bed. Charlie’s Mother said when they went back downstairs the flames on the candles were about 6 inches tall.

Another time that Charlie was gone visiting his grandparents, his parents were upstairs getting dressed to go out, and heard a loud noise downstairs. When they came to investigate, one of the candelabras in the dining room had been snapped in half, and the other one was still in the upright position on the table.

His parents would also come down the stairs some mornings and find pictures that had previously been hanging on the wall, sitting on the floor, leaned against the wall along the stairs. Not cracked or face down as if they had fallen off the wall, but leaned as if someone had taken them off the picture hook and sat them on the floor. The pictures were on hooks, not just nails, so they would have had to have been lifted up and off to be removed from the hook, rather than the nail just coming out of the wall and them sliding down. As a grown up, Charlie says he remembers a man with a black beard coming out of the fireplace to tuck him in at night, and to tell him not to be afraid of him.

When I was babysitting Charlie, I had never read the story in Tales of Beaufort about the house and the gardener who would dig holes in odd places in the yard. Mrs. Morris, the woman Charlie’s parents bought the house from, asked him why he dug holes in places other than where she asked him to dig. The yard man described the “funny men” who came and talked to him while he was working in the yard, and he described them wearing early 18th century clothes.

One day the gardener was very excited and told Mrs. Morris the “funny men” were going to come to him tonight and tell him where the gold was buried, and that he would

By Michael Johns come to work the next day and dig it up. He didn’t come to work the next day, or for the week after. Mrs. Morris finally got in the car and drove out to his house, and the man had been stricken with a stroke the night the “funny men” were supposed to visit him. He could never speak again, or come dig in the yard, and died soon after. The gold, if its location was in fact revealed, remains buried in the yard.

When we sold my parent’s home in 1997, I found my dad’s old copy of Tales of Beaufort and it sent a chill up my spine. I couldn’t help but wonder if “the man” was one of the same “funny men” that used to talk to the yard man so many years before. It has been well documented that Blackbeard, the most feared of the pirates, was in the Beaufort, South Carolina area at Fripp Island as well as in the John Cross Tavern on Bay Street. Perhaps since he was so associated with Beaufort, North Carolina, and the outer banks area, he wanted to throw people off by burying some of his treasure in Beaufort, South Carolina. It was said that he would take a party of 6 or 7 of his crew members ashore to bury the treasure, and when he returned alone, the rest of the crew would ask him where the others were, to which he would reply “Guarding the Treasure.” Apparently, they were guarding the treasure after having their throats cut and being buried with it, so that they could not reveal the treasure’s location.

So does a certain house on The Point hold both the ghost of a pirate and the buried treasure he was left behind to guard? I don’t know, but I do know one thing – I wouldn’t spend the night in that house by myself again!

SCB Chamber Music Artistic Director, pianist, and host Andrew Armstrong has put together a five-concert series of probing, satisfying music for every taste ranging from mid-Baroque to world premiere and introverted intimacy to extroverted excess. The 44th season kicks off on Sunday, November 12, 5:00 with a program of brilliant display, passionate tribute, and multi-hued variety. He will be joined by two recent, rising-star performers on the series, violinist Tessa Lark and cellist Alice Yoo, on a program of solo, violin and cello duo, and piano trio repertoire.

Cellist Alice Yoo The first half of the concert is a series of selections plumbing depths of mood from deep reflection to no-holds-barred virtuosity. It begins with the Artistic Director performing one of his favorite composers, Frédéric Chopin, and the Scherzo No. 3 in C-sharp minor, Op. 39. A showpiece of extravagance and compression, it requires an artist-performer capable of unleashing waves of moods, from ecstatic Alpine heights to

heart-rending abysses. Alice Yoo follows, performing Kol Nidrei by Max Bruch, arranged for piano and cello. This ancient Hebrew declaration is skillfully crafted to create a timeless, haunting and contemplative aura. Next are two short violin/ cello-duet movements by Reinhold Glière from Eight Pieces, Op. 39 for Violin and Cello, a masterpiece of miniature form that elicits a sense of personal and engaging storytelling.

A 2016 piece by Tessa Lark and Michael Thurber follows: Wooden Soldier is a violin-and-cello, smile-inducing romp loosely based on a lively 19th-century Irish reel, “Drowsy Maggie.” Tessa then returns to the stage to close the first half with her solo turn: Pablo de Sarasate’s Carmen Fantasy, Op. 25. Sarasate, a Spanish violin virtuoso, strung together five familiar melodies from Bizet’s opera, Carmen, one of the most popular, familiar, and frequently performed in the classical canon. The soloist’s role is to project the theatrical quality of Bizet’s score while casually tossing off daunting technical challenges of every kind.

This music is so evocative that it will make you wish you were playing along on a pair of castanets (but please leave yours at home).

The second half is devoted to a single work, Anton Arensky’s Piano Trio No 1 in D minor, Op. 32.

A Russian composer, pianist, conductor, and professor of the late Romantic period, Arensky studied under Nikolai Rimsky-Korsakov and was a close friend and ally of Pyotr Illyich Tchaikovsky. The fourmovement Piano Trio (1894), a musical-remembrance tribute to a former teacher, is filled with propulsive melodies seasoned with warmth, wit, charm, and swagger. The third movement, Elegia, is the work’s raison d’être, a memorial with sustained, mournful music and blissful memories, concluding in peaceful resignation. Arensky drew on Russian and western traditions but did not copy either while creating music of warmth, human-insight, and skill in a voice and style uniquely his own.

Violinist Tessa Lark is consistently praised by critics and audiences for her astounding range of sounds, technical agility, and musical elegance. In 2020 she was nominated for a GRAMMY in the Best Classical Instrumental Solo category and received one of Lincoln Center’s prestigious Emerging Artist Awards, the special Hunt Family Award. A budding superstar in the classical realm, she is also a highly acclaimed fiddler in the tradition of her native Kentucky, delighting audiences with programming that includes Appalachian and bluegrass music and inspiring composers to write for her. Tessa has also accumulated a long and growing list of solo and chamber collaborations with distinguished ensembles in legendary venues.

Cellist Alice Yoo has been warmly hailed for her sensitive musicianship, expressive nuance, and passionate commitment to teaching. She has performed extensively throughout the United States and abroad as a soloist, recitalist, and chamber musician and been a top prize winner in multiple competitions, including the Holland-America Music Society Competition, Schadt International String Competition, National Symphony Orchestra’s Young Artist Competition, and Klein International String Competition. Alice is also Co-Founder and Co-Artistic Director of the Denver Chamber Music Festival, professor of cello at Colorado State University, and on the chamber music faculty at the University of Denver’s Lamont School of Music.

Shrimp & Grits Supper – Pat Conroy Style

eaufort is buzzing with excitement in anticipation of the 8th Annual Pat Conroy Literary Festival. Pat Conroy is a legend around here. Everywhere you turn, someone is talking about him, relating a tall tale or two, or just missing him. My relationship with Pat was centered around food. Pat loved to cook, he loved to eat, and he loved to share his culinary skills and his recipes.

This week I’m taking a bit of creative license with Pat’s cookbook, The Pat Conroy Cookbook: Recipes and Stories of My Life. I’ve paired Pat’s famous Pickled Shrimp with his delicious Grits Casserole and swiped his simple recipe for Insalata Mista to fashion a dinner menu featuring a new and mouthwatering way to serve shrimp and grits. I wonder what Pat would think of this repast.

INSALATA MISTA (MIXED LETTUCES AND GREENS)

4 handfuls mixed young lettuces and greens ¼ cup extra-virgin olive oil Sea Salt 1 tablespoon red wine vinegar Freshly ground black pepper Inspect the lettuces. Remove any brown or old leaves. Wash the lettuces in a sink filled with cool water. Dry in a salad spinner. If not completely dry, pat with paper towels. Place the lettuces in a salad bowl and set aside.

Combine the oil and salt to taste in a small bowl and whisk with a fork to dissolve the salt.

Add a small amount of the vinegar. Taste the dressing, then dip a leaf in the dressing and taste again. If the lettuces are young, they may not need all the vinegar. Toss the lettuces with enough dressing to coat well and distribute the salad among serving plates. Offer freshly ground black pepper at the table. Serves 4.

PICKLED SHRIMP 1 cup thinly sliced yellow onion 4 bay leaves, crushed

1 (2-ounce) bottle capers, drained and coarsely chopped ¼ cup fresh lemon juice 1 cup cider vinegar ½ cup olive oil 1 teaspoon minced fresh garlic 1 teaspoon coarse or kosher salt 1 teaspoon celery seeds 1 teaspoon red pepper flakes 2 pounds large (21-25 count) shrimp, peeled and deveined Mix all ingredients except shrimp in a large heatproof glass or ceramic bowl. In a medium stockpot over high heat, bring 4 quarts abundantly salted water to a rolling boil. Add the shrimp and cook until just pink, about 2 minutes. (The shrimp will continue to “cook” in the marinade.) Drain and immediately transfer to the marinade. Bring to room

temperature, cover tightly, and marinate overnight in refrigerator. Transfer shrimp and marinade to a glass serving compote or bowl.

Serve chilled.

GRITS CASSEROLE ½ teaspoon coarse or kosher salt 1 cup slow-cooking stone-ground grits ½ pound andouille sausage, chopped 2½ cups grated sharp cheddar cheese 3 large eggs, beaten ¼ cup heavy cream Tabasco sauce Coarse or kosher salt and freshly ground black pepper In a large saucepan over high heat, bring 4 cups water to a boil. Add the salt and slowly pour in the grits. Reduce the heat and cook, stirring occasionally, until the grits are done, about 40 minutes. Preheat the oven to 350 degrees. In a small saucepan, sauté the sausage until it is slightly crispy, 8 to 10 minutes. Set aside.

Remove the grits from the stove and add the cheese, stirring until smooth. Beat in the eggs and cream. Add the sausage and season to taste with Tabasco and salt and pepper. Pour the grits into a 2-quart souffle dish and bake until they are set and lightly browned on top, about 40 minutes. Serve hot. Serves 6.

Walk for Water Raises Record $84,000

Walk hits historic highs for participants and contributions to fight global water crisis

eaufort County residents from both sides of the Broad River laced up their walking shoes and banded together to raise a record $84,000 in the seventh annual Beaufort County Walk for Water to fight the global water crisis.

Participants met at Live Oaks Park in Port Royal on Sept. 16 and Wright Family Park in Bluffton on Sept. 23, carrying buckets for about three miles to symbolize the walk millions of women and children in developing countries make daily to collect water that’s often contaminated. The event raises money for Water Mission, a Charleston-based Christian engineering organization that builds sustainable safe water solutions in developing countries and disaster areas.

David Foland of Port Royal said he’s its top four-star rating 15 years in a row, a charities rated by the organization. Learn participated in the Walk for Water for the past distinction shared by less than 1% of the more at watermission.org three years. “It’s so important to get water to people who don’t have it. It’s one of the basics of life. We have water and the rest of the world needs it, too.”

Kathy Wiles of Beaufort, another threeyear veteran of the Walk, agreed. “It means so much to have clean, fresh water,” she said.

“I love all the support from people who come out and do this.”

Megan Cook said she’s been traveling from Savannah to Beaufort for the Walk since 2018. “I always come. It means a lot to me. I’m a water engineer, so providing clean water and sharing the love of Jesus are my two favorite things.”

“We all woke up this morning not wondering where we’d get water to drink, and if it would be safe. Two billion people around the world can’t say that,” Mary Howell, Water Mission’s senior director of community involvement, told the crowd gathered in Port Royal. “Every 37 seconds someone loses their life because of water.

The work we’re doing here together is going to change nearly 2,000 lives.”

‘The Lords of Discipline,’ Screened and Discussed

Three of this year ’s Pat Conroy Literary Festival sessions will highlight The Lords of Discipline. On Friday, October 27, at 4:00 p.m., Conroy’s Citadel classmate and fellow author John Warley will discuss the legacy of The Lords of Disciple as novel and film with Citadel English professor Sean Heuston, who has been teaching the novel at the Citadel for more than a dozen years. Following an intermission (with refreshments and a cash bar), at 6:00 p.m., a film version of The Lords of Discipline will be screened. Citrus peels The everyday world you live in is just loaded with free fertilizers. Nutrients are chemical substances found in every living thing on Earth. These are just a few: Coffee grounds. Tilling used coffee grounds into soil aids in drainage, aeration of the soil and water retention. The grounds are relatively high in nitrogen and also contain potassium and phosphorus, as well as being a source of moist organic matter. NPK (nitrogen, phosphorus and potassium) from your coffeepot!

Eggshells are about 96% calcium. Crushed and sprinkled onto soil, they will gradually decompose and add this rich nutrient to the plants. Additionally, coarsely broken up and sprinkled around the base of plants, they will pierce the skin and kill off slugs and snails.

Banana and potato peels are loaded with potassium! This “K” in fertilizer is essential for plant growth, and our native soil almost never has enough. Bury them deep enough that they don’t attract unwelcome critters, or make peeling “tea” fertilizer.

Just as an aside, any water used to cook vegetables or fruit can be a plant tea as long as you don’t salt the water. Any raw vegetable scraps (see note below about vegetable scraps) can be used to enrich soil.

Citrus peels dried and blitzed into a powder are a nutrient rich addition for the soil. Use the powder directly or make it into a liquid foliar spray. You’ll notice the difference right away. You can dry the peels on your windowsill. I do.

Outdated herbs and spices still have plant nutritional value.

What a potpourri of aromas you get when you sprinkle them around your garden.

Use the hot ones like cayenne pepper and chili powder to keep away rabbits and deer.

Beer NOT! It’s an old wives’ tale that b e e r ’s g o o d fo r your garden, but it contains alcohol, among other things (which is bad for plants, unless you want to put it in a saucer next to plants to kill snails and slugs). Between my nephew, Jason, and my friend, Joe, beer doesn’t have a chance to go flat in my house so that I wouldn’t get to use it in my garden even if it was a good fertilizer!

Let’s leave the kitchen, but before we do, let me tell you about the late Margot Rochester, one of my favorite garden writers.

She was my kind of gardener – lazy. She never bothered with a compost pile, she just saved all her compostable kitchen scraps in a covered bucket under the sink and every couple of days would take them into her garden and cover them with a couple of shovels of soil. Tamped down, it didn’t encourage critters and decomposed nicely!

So now let’s go outside.

Grass clippings. Chances are that you or your landscapers already use mulching mowers, but if not, grass clippings make wonderful mulch AND fertilizer for acid loving plants like hydrangeas and camellias.

Manure. If you are lucky enough to live near a farm or stable, animal manure is a much desired fertilizer. Don’t make the mistake of using the waste from pets. It can have various parasites which can easily affect plants.
