Why grease interceptors are important
Grease interceptors are typically required by code and are installed to receive flow from grease-laden kitchen fixtures. The purpose is to separate fats, oils and greases (FOG) and solids from kitchen drain waste before it enters the sewer system. When FOG builds up in the sewer system, the flow path becomes reduced or blocked resulting in backups in the kitchen, outside the building and further upstream. System backups are referred to as sanitary sewer overflows (SSOs) by the pretreatment and environmental community and are bad for public health and the environment.
» A grease interceptor is only effective when it’s sized, installed and maintained properly. A properly sized and maintained grease interceptor will help prevent SSOs.

Diffusion flow technology significantly reduces inlet velocity and creates laminar (non turbulent) flow allowing fats, oils and grease (FOG) to quickly rise to the surface while food solids collect at the bottom.

The ideal location of a grease interceptor is outside the building with Schier’s indoor/outdoor Great Basin® models. When that’s not feasible or footprint is limited we recommend the Great Basin™ indoor models.
