Bee Keeping One day, last fall, my older son and I came up with the brilliant idea that we should raise some bees so we could have free honey. It was one of those “how hard could it be” moments. I have never let not knowing what I was doing stop me from doing something. A person can always learn what they need to know to accomplish anything. I started reading up on bee keeping and discovered it might be more difficult than I thought. The more research I did, the more I found out I knew very little about bees. Taking a six-week class in bee keeping taught me the full extent of what I did not know. I decided to take my limited amount of knowledge and dive into bee keeping as though I do not have good sense. My son is having second thoughts about it since he lives in suburban Houston, Texas with neighbors in close

proximity that might take offense to a bunch of bees getting a drink from their swimming pools. My grandfather immigrated from Germany after World War II and started an apiary. He had bees all over southeastern Montana. He harvested tons of honey from his beehives that he sold over a large part of the state to stores as well as his own retail shop. People would call him from far and wide to come get a swarm of bees from their trees or barns. I was just a kid at the time and thought it was an interesting job requiring little effort. I obviously paid little attention to the details that went into the business. I now wish I had listened and learned. I have since learned there is much more to bee keeping than going out and taking some honey from them whenever a person feels the need. Bees are particular little insects. Much like any livestock, they require food, water, and care. If they become overcrowded, three quarters of your hive will pack up and leave. If their hive becomes wet or other critters invade it, they will all leave. One day the beekeeper thinks all is well and the next day, the bees have decided things are not to their liking and be gone. If there are too few bees in a hive, the colony will not survive

If they have too little honey reserve for the winter and are not supplemented, the colony will die. The list goes on and on about what can go wrong. My longrange goal for my bee keeping has changed from wanting to get a few quarts of honey to attempting to keep a colony of bees alive for a year and possibly longer. As with any hobby, a certain amount of investment is required. Hunting deer is not a cost-effective way of obtaining food. By the time a person gets a bow or gun, camouflaged clothes, a four-wheeler to transport the deer, one or four tree stands, buying
beef would be cheaper. I purchased a hive for the bees to live in. I also got a super, which goes on top of the hive for the bees to store honey. In my class, I learned, one hive and super is not enough. Two or more are required so the bees can have some place to live as their population increases in the spring. A specialized suit is suggested as bees will occasionally become annoyed as a person messes with them. When they are annoyed, they will attack and sting the person trying to steal their honey or doing whatever is annoying them. Certain tools are made to work with hives and honey frames. So far, I have enough money invested to buy many
jars of honey from the grocery store, but that is not the point. It is the challenge. Bees are an important part of our ecosystem. They are necessary to pollinate flowers, trees, and our food as it grows. Without bees, it would not take long for humans to run out of food. I hope to increase the bee population in our area, or at least have a good time trying.

area at the top of the staircase or in the hallway over a stylish table. No matter where we moved when I was a kid, that painting went with us. Although I had no idea where it came from, it must have been special to Mom; it was always around for a long as I can remember.
Pecan Pie I was thinking about Mom; it was the twentysecond anniversary of her passing. I was thumbing through an old recipe book, looking for ideas, something special to make. Mom hand-wrote the recipe book as a wedding gift for her sister, my aunt Sally before I was born. I came across a recipe that has long intrigued me: “Pecan Pie – Jessie Palen.” I’d never made this recipe because I don’t like pecan pie. Pecan pie is too sweet for me; it rates right there with mincemeat pie. I liken both to having a cup of coffee with twelve or thirteen scoops of sugar. No offense to my friends who like their coffee that way; it’s just too much for me. So I drifted off, daydreaming of Mom. Mom had a painting of a purplish-colored artesian style vase filled with flowers. The picture was framed in an antique gold sculpted frame. I always thought it was pretty.

Sometimes the painting would hang in the dining room or the living room. Other times Mom would display it in the sitting
One day, I was looking at the painting, and for the first time, I noticed it had been signed in the bottom right corner. “Who is Jessie,” I asked Mom. “Your aunt Jessie,” Mom replied as if I should have known. “Aunt Jessie painted that?” I was surprised. I knew aunt Jessie had an easel and paints; I would see them when we visited our cousins in Minneapolis, but we weren’t allowed to touch them. So as a kid, I assumed she painted pictures for the refrigerator or her bedroom walls – just like I did with my crayons. I was around eleven or twelve years old when I learned that aunt Jessie was an outstanding painter. I was impressed; we had a true artist in the family. Aunt Jessie was pretty with long dark hair, sparkly eyes, and a big, warm smile; she was always smiling. She was a southern girl from Georgia, and it was fun to listen to her soft, sweet accent when she spoke. I remember she was a good cook, and being from the south, she knew a lot about southern (Just the Other Day con’t on pg 5)

recipes. I really wanted to try her recipe, but I just don’t like pecan pie – it’s too sweet. But, of course, if I tried it, I could always give it to the neighbors and be able to say I gave it a chance. I looked over her recipe again, comparing it to several others online. “Hey, look at this.” Most of the recipes I found called for one-half to one full cup of sugar. Aunt Jessie’s pie only used one-quarter cup of sugar. I stood up from the couch and said to Mom, “If you have time today, stop by. We’ll make a pie. “You’re finally going to make Jessie’s Pecan Pie, aren’t you,” Mom asked. I just smiled at Mom, “Maybe we can have coffee together while it’s baking.” I had everything I needed to make the pie except dark Karo syrup. On the way to Zup’s grocery store, I called my cousin Robin for some pointers. I was glad I called. Robin said, “Mom spent years perfecting that recipe. No doubt she changed some things since she gave the recipe to your mom in the fifties.” With all the ingredients and some expert advice from my cousin, I went to work in the kitchen. Soon had the pie in the oven. I chopped one cup of pecans for the topping while it was baking. “You only need a half cup,” Mom said. “Robin said Jessie used a full cup,” I justified. I cleaned the kitchen. After the pie had baked for twenty minutes, I removed it from the oven to sprinkle the pecans on top. I put the pie back in the oven and set the timer for thirty more minutes. “You only bake it for twenty-five more minutes,” Mom said. “Robin said to bake it for another thirty minutes. That’s how aunt Jessie made it.” While the pie was in the oven, Mom and I took our coffee and sat out in the three-seasons room. We reminisced of days
long gone. Sometimes I was learning from her – and sometimes, we were competitive in the kitchen. Mom and I shared many laughs during our visit.

Mom peered over my shoulder and spoke proudly, “It’s beautiful pie, son.” As the pie cooled, the steam dissipated, and Mom faded away from my kitchen. A couple of hours later, Melissa called out, “The neighbors just walked down the street, if you want to meet them on their way back.” So I put two slices on a paper plate and wrapped them with plastic. Then, I got two more pieces ready to take to the other neighbors. Curiosity got the best of me as I looked at the pie, half gone. I cut a skinny slice, maybe three-quarters of an inch. I took just the tip of the small piece with a fork and tried it. “Oh, my!” I took another bite. “Wow, this is not how I recall pecan pie at all.” I took another bite on the fork to Melissa. “No, thank you,” she said, “I really don’t like pecan pie.” I encouraged her to try it. Her expression lit up, “That’s good,” she said. I grabbed my coat and met the neighbors as they passed the end of our driveway. I gave them their pie and walked with them until I got turned off at the other neighbor’s house. I stayed and chatted for a while, then hurried home, looking forward to the rest of my
