Good For One Meal Maple syrup is expensive. Walnut syrup is even more expensive if a person can even find it for sale. I now understand why this is the case. If a person were to calculate their income from the sale of walnut syrup against the time required to produce it, a person’s return would be about a quarter per hour for their labor. It must be done for the fun of it and the satisfaction of making something so delicious from one’s own trees. I started the process for our first batch of syrup about two weeks ago. The temperature needs to be below freezing at night and above freezing during the day for sap to flow.
