POLLY-O RICOTTA SAUSAGE SKILLET PASTA Ingredients 1 lb. Rigatoni pasta 2 Tbsp. olive oil 1 lb. bulk Italian sausage 1/2 medium onion, chopped 2 cloves garlic, minced 3 cups (24 oz.) prepared marinara sauce 1/2 tsp. red pepper flakes 1-1/2 cups POLLY-O MOZZARELLA CHEESE, shredded 1 cup POLLY-O PARMESAN CHEESE, grated 15 oz. POLLY-O RICOTTA CHEESE

Directions Boil pasta in salted water until al dente, drain and set aside. Heat olive oil in large skillet, add sausage and onion. Cook over medium-high heat, stirring to crumble the sausage. Once browned, add garlic and heat for a few minutes. Add marinara and red pepper flakes. Stir to incorporate all ingredients and bring sauce to a low boil. Stir in the drained pasta, Mozzarella and ¾ cup of the Parmesan cheese. Cover and let the combination heat through for a few minutes. Remove skillet from heat, uncover pan and top with dollops of Ricotta cheese and the rest of the Parmesan cheese. Serve immediately.

mbracing the time-honored tradition of timber framing carries profound significance rooted in both historical legacy and environmental sustainability, both of which Nicholas and Juliana Russell are extremely well versed in. They founded their company, Tall Pine Timber Frames, so more Capital Region homeowners could build their family homes and functional barns and stables in this traditional style that allows a bit of nature into the space. Plus, the strength and durability of wooden structures makes building one a solid investment, and the rich abundance of towering trees in the area makes timber a readily available, renewable resource. “The northeast is rich with the history of timber framing that goes back to the European settlers,”

says Nicholas, who after years of working as a carpenter (at one time with Juliana’s brother) and cabinetmaker—and working in a number of timber frame shops—studied the architecture of traditional building at the Heartwood School, where he is now an instructor. “We see an old timber frame barn in a field and can relate to that. It’s an honest way of building, and a timber frame structure is one you feel sound inside of. There are no tricks here. It’s built to last for centuries.” For anyone newly intrigued by timber framing, it is a traditional, integrity-driven method of construction that uses wooden beams and posts joined together with intricate wooden joints, with the use of handmade wooden pegs instead of nails. Wood is a valuable building resource, so education and learning about forests is paramount. We are practicing singleselection for timbers, working the forest for a sustainable yield. The available materials of the woodland drive the design process because we use what nature provides—it is interconnected. The trees shape the design of the buildings. We were introduced to this approach by renowned architect and timber framer Jack Sobon, who has managed a woodlot in western Massachusetts for years. He is a mentor for me and has shared a great deal of knowledge and support, for which I am deeply grateful. He has shown us that this way of working is possible. By practicing single-selection felling we are providing an ecological value, managing the amount of trees sourced per project, per acre, per year. The approach is for a sustainable yield. Oftentimes we select trees that have been damaged and are utilized before decay affects the wood. Someone once said, “If you cut your best trees, your best trees get worse and worse. If you cut your worst trees, your worst trees get better and better.” are riven and shaped to work with the natural strength of the wood and its natural shrinkage over time for the ultimate in aging gracefully—a sound investment proven by the durability of some centuries-old structures (everything from aweinspiring grand cathedrals to everyday homes). All of Tall Pine’s work—spanning homes, home additions, cabins, barns and some commercial work—is cut by hand by Nicholas and his two craftsmen. Juliana, whose maternal grandparents founded and owned a local lumberyard, Modern Lumber, and paternal grandparents owned and operated a mill in Albany, handles client relations. The Russells were recently granted access to the 33 acres of woodland attached to their shop, allowing them to source their own materials. “We recently designed a modest 16 X 24 foot cabin with an 8 X 8 foot mudroom entrance,” Nicholas

This approach is an efficient use of material, providing the most board foot volume from the tree selected specifically for each timber, rather than wood lost to cutting into lumber or boards. Practicing respectful selection and management, the timber stand will increase in volume each year while supplying quality, local building materials. This is a holistic approach, one that is immensely satisfying. We have a mill and hewing area setup at the mouth of the woodland. Our animal power (draft horses) pull our trees out of the forest, milling or hewing and then transporting the timbers a short distance to our shop for layout and cutting—we are involved in the entire process. It is sustainable while providing high quality timber for projects. Clients visit the shop and the forest to see where their frame comes from—people love it and resonate with it on a deeper level. I know I do! —Nicholas Russell says. “Each tree, each timber in the frame was hand selected by myself and my team out in the forest, a process that makes you intimately connected to the material—we know where our materials come from and the way they grew. [See “Forest to Frame” above.] This is truly forest to frame, resulting in a frame that fully utilizes the strength and beauty of the wood. It all begins in the forest. It’s a sustainable process and one that supports the local economy; we’re not shipping materials across the country. Putting care in the design, joinery and selection of timbers is at the heart of this craft.” When designing a new home, it’s important to know that the home can be as modern as desired. “And when you look on the outside of the home, you wouldn’t know it’s a timber frame build,” Juliana says. “We build houses for everyday people.” To design a timber frame, you must deeply

understand the craft of timber framing. This makes it crucial for future homeowners to bring Tall Pine in for the initial design process. “You have to have the skeleton first; otherwise you’ll be undoing work you’ve already paid for,” Nicholas says. “If you have an architect or builder already, we can work directly with them. Intuitively as the designer/builder, I understand the forces and the design of a timber frame. For the codes and permits, we work with engineers that specialize in timber framing. When you’re planning your overall budget, for the engineer-stamped plans, fabrication and installation, you’re going to look at about 17 to 23 percent for the timber frame.”

With timber framing in Juliana’s blood, and Nicholas’ absolute devotion to it (he is an active member of the Timber Framers Guild, and everyone on his team are Game of Logging certified levels I and II), you’re in very good hands when you build with Tall Pine. “Oftentimes when we work with someone on their timber frame home it’s been something they’ve dreamed about for a long time,” Juliana says. “We love when someone resonates with it, because those people get really excited about the process.” Adds Nicholas, “And when anyone talks to me long enough, you’ll realize it’s my passion, and it’s great to connect with people that way. Working with us is a really SB personal approach to building.”
