E

ntering Cadena-Reeves Justice Center and County courthouse can be an intimidating experience. You are met by security. Bags are put through the scanner as you prepare to walk through the metal detector. Quickly, you do a mental check, hoping you didn’t leave something ominous-looking in your bag or pocket. Of course, this particular day, the machine’s alarm sounded. Guilty! I got “the wand”. It seems the buckles on my shoes didn’t go over well with the metal detector. The steps of the well-heeled are heard click-clacking across the floor as voices mingle with the others’ congregating inside, all hoping to resolve some life conflict. My appointment with Justice Rebeca Martinez, running for reelection to Texas’ Fourth Court of Appeals, was at 1:00pm and people were hustling back to courtrooms and chambers. I had researched a bit and already admired her for her accomplishments and drive.

Knowing she is an extremely busy lady, I allotted myself about an hour to get the essential information so as not to keep her.

Texas’ Fourth Court of Appeals: One doesn’t hear the gavel slam and “Guilty!” or “Not Guilty!” shouted across this courtroom often. It isn’t that kind of court. No one expects to be before the judicial system having a decision imposed upon them, and as a law-abiding citizen you might believe this could never happen to you. Think again. In a 2016 report taken from the Texas Judicial Records, there were over 4 million civil and criminal cases heard or waiting to be heard in this state. If these statistics are correct, Texans have about a 14% chance in a given year of being involved in some type of lawsuit. The 2017 numbers may be higher. Some cases, civil and criminal, will move on to a higher, intermediate Court of Appeals, one of 14 such courts in Texas. The decision made by a panel of three justices here, is often the final one. Very few cases are selected to go all the way to the Texas Supreme Court. We should all be concerned about who sits in these judicial positions since they could one day determine your future or the future of a loved one. Texas’ Fourth Court of Appeals serves Bexar County and 31 other surrounding counties within the Hill Country and South Texas along the border. It is comprised of 7 sitting judges, appropriately called, Justices. It is the largest appellate judicial district in Texas with each Justice serving a term of 6 years. The Fourth Court in fact, is the only all-female appellate court in the country. Citizens have a choice in who reviews their appeals, but only if they vote! On November 6, Texans will get that chance again, so knowing something about these candidates is essential. Vying for her second term is Democrat Justice Rebeca Martinez. You may have seen her,

a pretty Latina face peeping through the other election signs emblazoned with the names of Cruz, O’Rourke, Abbott or Valdez. Congressional (legislative) and gubernatorial (executive) positions get the lion’s share of attention in a mid-term election year. If Texans actually do vote in these elections, it is usually just for these seats at the top of the ticket. As for the other down-ballot positions of the judiciary, they might as well be written in Swahili. Truth be told, most voters won’t even recognize the names of many candidates. Voting habits on these positions seems to go like the following: Women tend to vote for other women in an effort to ensure females are well represented, staunchly partisan voters usually vote (and this is the last year they can do this) straight-tickwhile the “good old boys” may look for names they can pronounce. Others may gravitate toward familiar surnames, while some won’t bother voting for any positions down-ballot of Senator, or even Governor. If you are reading and perhaps laughing, then you may be seeing yourself as one of the guilty. You are guilty for not being an informed voter when it comes to learning about each of these candidates’ relevant experience and qualifications, though it is so important. With that in mind, let us take a closer look at the Democratic incumbent, Justice Rebeca Martinez and her Republican opponent. Justice Rebeca Martinez is the second of five children born into a military family. Her father is a Vietnam veteran and retired from the U.S Navy. Education was important to her parents, immigrants themselves who raised five children, each obtaining a college education with one even from Yale University. Justice Martinez earned degrees from some of the most selective universities in the country, Southern Methodist University and Boston University School of Law, (ranked #12 in the country at the time of her admission in 1989) currently

#22 for “Top Law Schools in 2019” by U.S News and World Report and by “Above the Law”. She received the title of University Scholar and was a recipient of the Faculty Award from BU Law, she clerked for both a federal judge and a Texas appellate justice before practicing law for almost 20 years before taking the bench. Most recently, she served on the Board of the National Association of Women Judges and was instrumental in hosting hundreds of women judges from across the globe at NAWJ’s 40th Annual Conference here in San Antonio this month, where she was scheduled to speak on “MeToo: Expanding the Conversation”. She recently returned from an invitation-only Sexual Harrasment Policy Workshop at Harvard Law School and is a sought-after speaker among legal and lay communities. She currently serves on the Board of the San Antonio and Mexican American Bar Associations and is a Member of the State Bar Pro Bono College and College of the State Bar. She is on the Community Advisory Board of UIW School of Osteopathic Medicine and has been invited to serve on the Dean’s Advisory Board of her alma mater at BU Law.

Justice Martinez has dozens of other accolades and achievements, but continues to serve her community, volunteering most of her time mentoring students, young lawyers and women seeking leadership role models. Look her up and you will find her web page, Rebeca4judge.com and google pages containing general information including an older YouTube video taken by young Democrats when she was campaigning six years ago. You will not find any slick campaign pages, postings of big name endorsements or overblown career claims. Arriving at her chambers, the door opened, and I was met by a petite lady with a warm handshake, genuine smile and long brown hair. A delicate cross adorned her neck, “an heirloom?” I wondered. Photos of loved ones, her husband, family, children and those of young interns, past and present decorated the walls. The photos also include “the twinkle in her eye”, her nine-year old god-daughter, Alyssa. Her favorite artists’ works hung on her walls, almost overshadowing certificates of accomplishment reflecting a lifetime of legal service to the people of Texas. As she spoke, I found her enthusiasm and appreciation for the judiciary process captivating. On a personal level, she is unpretentious. She seemed more at ease speaking about the complicated Texas judiciary system than her personal life. Her position gives her few days off for hobbies. Any free time is spent relaxing with her husband, dining out or seeing a good movie. On my mention of the number of web pages dedicated to her opponent, (R) Shane Stolarczyk, she intimated that this alone should send a message to the public. (She is not guilty of being part of a political “machine”). Still, I felt Texans should know more about this remarkable woman in order to make a knowledgeable vote since there was a glut of information available about her opponent. “Shane”; the name alone conjures

visions of the old west. One can almost hear the theme from The Good, The Bad and the Ugly when it is uttered. Handsome and in his early 40’s, Stolarczyk lives in the tourist destination town of Boerne with his lovely wife and two children. His hobbies seem endless and are listed as fishing, hunting, working with his children on 4-H projects, mixed martial arts, Muay Thai kickboxing, and he has a small business (specified online only as “unrelated to his law practice”). He is a Captain in the Air Force reserves and ran unopposed in the Republican primary. His web information includes this quote. “I believe a judge’s role is to be faithful to our constitution and the laws of Texas. Judges should apply the laws as written-not create law from the bench”, which he states, “wastes the time and resources of the litigants.” He is a graduate of Skidmore College and Union University (a private Evangelical Christian affiliated liberal arts college) Albany School of Law, ranked #129 by U.S News and World Report. In a mid-term year especially, Shane Stolarczyk’s name next to an “R” could make him a tough opponent, though he lacks Martinez’ experience. He is running to serve in a judicial district that includes the Hill Country and several other “red” counties where more conservative voters tend to turn-out in higher numbers. His name could resonate well among conservative Republicans. Sadly, while the 4rth Court’s 32-county judicial district has a higher population of non-white voters, most aren’t registered to vote and even less actually vote in a midterm election year. Not surprisingly, Stolarczyk’s

endorsements include Red McCombs and the Texas & Southwestern Cattle Raisers and he appears well-funded by banking as well as oil and gas interests. There could soon be a tidal shift in voter demographics, however. The Texas Tribune (Oct. 2017) reported that Governor Abbott would be chasing a bigger share of the Hispanic vote in these November elections. In 2016, UnidosUS.com published a report entitled, “The growing Latino vote in Texas: Battleground of the future”. With 2019 around the corner, could the future be now? When asked about her opponents’ quote, with a knowing smile that comes with having written over 800 opinions, Justice Rebeca Martinez stated, “Every case is different. What we see from the trial record is not always the whole picture. People come here to receive a fair and impartial judgment and that’s what we give them”. As a woman, she’s no less capable of applying the law fairly and without bias or prejudice. Rebeca frequently visits the border counties and being bilingual, has spoken to the people and heard cases from every one of the Fourth Courts’ counties. She is a regular Speaker for LEAP, the non-profit Law Enforcement Action Partnership. LEAP advocates for solutions across a broad range of drug policy and criminal justice reforms issues, including women in prison and indigent defense. She acknowledges the need for reform in criminal and immigrant defense having practiced in state and federal courtrooms along the border. Unlike her opponent, Justice Martinez worked for large prestigious firms representing defendants and plaintiffs in civil and criminal courtrooms for

almost 20 years before running for her court. She built her own private practice for years, working to the point of physical exhaustion in the 90’s. At one point, having suffered herself from stress-related illness, she was rushing a colleague to the hospital in the midst of a heart attack and had what she describes as a divine inspiration or epiphany. She knew it was time to drastically reduce her overwhelming case load. Taking a short sabbatical, she married the love of her life, David (retired career law enforcement), settled in San Antonio with her extended family, regrouped, and opened an office here. On the advice of a judge and mentor, Rebeca showed up at the court house and took-on pro bono court cases for the next two years, often representing the people that no one wants to represent. When asked what made her want to choose law as a career, Justice Martinez smiled. Reminiscing, she stated, “When I was 12 years old, I was watching Al Pacino’s performance in “And Justice for All”. She referred to the famous courtroom scene where, up against a corrupt system, Pacino shouts, “You’re out of order, this courtroom is out of order!”. With a grin she stated, “That was it for me, I knew that’s what I wanted to do.” As the only sitting justice with significant criminal trial experience, Rebeca joined the Fourth Court in 2013 as Associate Justice.

I was shocked at how much time had passed sitting comfortably in her chambers. We ended with a tour of the gallery where she pointed out pictures of previous Justices, some whom have been a major inspiration to her, including Justice Shirley Butts, the first woman to serve on the Fourth Court who Rebeca nominated as the first woman to be inducted into Texas’ Appellate Hall of Fame. She walked me through the court room where she hears cases on a panel of 3 of the 7 Judges. For the third time in history, all seven justices are women. Five are up for reelection in November, and the outcome could significantly change the make-up of the court. The public’s votes will determine just how much change there will be. Justice Rebeca Martinez’ record speaks for itself. Vote on November the 6th or vote early anywhere in the county beginning October 22-November 2. Don’t be guilty of complacency. If you are not yet registered, October 9th is the last day to register to vote for the November 6, 2018 election. Be “not guilty”. rban-pop siren Simply Rayne is a fierce force for positivity poised to shine her light on the mainstream. But the 19-year-old self-described “Afro-tina” didn’t come out of the womb singing. Her journey to assured artistry has been steeped in hard work and self-possession. Now, she announces her reign with the irresistible tropical soul-pop single “Don’t Stop.” “I feel very empowered in this new era,” the San Antonio, Texas-based starlet says. “I know who I am, I know my roots, and I’m running with it. I want to make music for everyone, no matter what culture or background they come from.” Simply Rayne’s music is a smoldering fusion of classic and current R&B and soul, and pop spiked with a dash of hip-hop. Her aesthetic has been shaped by her parent’s impeccable record collection, and her own musical explorations. At home, Rayne was weaned on evergreens such as Stevie Wonder, Marvin Gaye, Bill Withers, Al Green, Diana Ross and Etta James. On her own she soaked up modern icons such as Michael Jackson, Destiny’s Child, Prince, Rihanna, Bruno Mars, Mary J. Blige, and Lauryn Hill. However, by far her most seismic influence is none other than Beyoncé, and, incidentally, a sweetly charming Rayne appears in a concert trailer for Beyoncé’s 2013 Miss Carter Show World Tour. How to transition plaid into your wardrobe! By Jules Aldaz Fashion Stylist When thinking about the Fall fashion season, many of us gravitate to the rich hues of browns, oranges and deep burgandy. One trend that has been exploding this season is plaid! You have seen plaid in the previous years, yes, but not like this! There are plaid shirts, plaid mini’s, plaid dresses, plaid scarves and even plaid shoes! Nothing epitomizes fall like a gorgeous plaid pattern! Many may be afraid to introduce this fabulous piece into their wardrobe but in reality, plaid patterns can mix with almost anything in your closet so you can purchase very little to begin a new wardrobe season yet have an entire new look! Plaid can also transition into the Winter and Spring seasons so it is great for your wallet as well! An all time favorite trend of 2018 though is the plaid pant!


When wanting to wear the plaid trend but have no idea where to begin here are a few simple tips to follow: 1. Start off simple. Wearing a plaid shirt is less intimating then starting off with a bold plaid pant. You can easily layer a plaid shirt to start off under a cardigan with your fav pair of jeans or even under a sweater pulling out the cuffs and the collar. This will minimize the pattern but still give you a pop of color with the pattern to add to your outfit. 2. Once you have mastered the layering of the plaid shirt under a cardigan or a blazer, you can venture out to using it as your outside garment piece meaning where the plaid shirt like you would a cardigan - open and over your favorite tee. You can pair it with a great pair of dark denim jeans or even shorts or venture out and add a color jean. 3. Pair your plaid shirt with a color jean. Pull out the color that is shown the least in the plaid and wear that color of jeans. It gives the outfit fluidity and mutes the main color so that you do not feel the plaid is over powering the rest of your outfit. 4. For a stylish daytime look, pair your plaid shirt with a pair of your leather leggings. You can wear it alone or over a white tee and don’t forget to add your favorite booties! 5. Some other fun tips include wearing your plaid shirt with just a simple front tuck and a great heel, over your favorite sundress, or a favorite style is to pair with a great skirt including doing a juxtaposition look with a sequin skirt or feathered skirt. See picture of this absolutely fabulous pairing! Now that you have mastered the plaid shirt trend, lets chat about the best fall trend or 2018 - the plaid pant! This can definitely be intimidating even for the best fashionistas! Here are a few more tips to help you with this fun craze! 1. The simplest way to start off wearing this trend is to draw the eye upwards and you can do that by pairing the pants with a white tee and denim jacket. You can add a bit more by throwing in a great statement necklace that blends well with the pattern of the plaid. A leather moto jacket is a great look as well. 2. For a professional look, pair the pants with a solid black blazer with a matching pair of pumps. For a casual look with a blazer, pair the pants with a cool tone color blazer and add a ballet flat. 3. Add a comfortable sweater and a pair of heels for a perfect fall look. Keep the sweater solid and a neutral color to begin with. 4. Go for a monochrome look by wearing a black & white plaid pant paired with a black sweater. Add a heel or a boot for a chic polished look or you can add a red boot or heel to add in a pop of color. 5. A few things to remember when wearing a plaid pant is that you can never go wrong by pairing them with either a denim shirt or a white tee or both!Add in a bold lip which also helps mute the pattern of the plaid if needed. MALE MODEL OF THE MONTH


The Unplanned It’s amazing how the unplanned things you decide to do can end up showing you who you are meant to be. Modeling was never something I thought about nor was it something others urged me to do. As a matter of fact, I loved music and design. My plan was to become an architect, which I’m still working toward. My secondary goal was entertainment or music production. Yet, the door to modeling opened and I’m so glad I walked through. It all started with a video I was required to put together for an academic scholarship. The video had to show me in my daily element. Basically, what I did, where I hung out, and how I spent my time on campus. It was in producing that video that my interest in acting and modeling was piqued. At first, I talked myself out of it. I thought pursing acting or modeling would never work, it would never materialize. But for some strange reason, I couldn’t get it out of my head. I began researching agents in San Antonio and worked with my videography and photography friends to put a portfolio together. I sent the portfolios out, and to my surprise, three agencies called me. I began with Calliope Model and Talent to focus on acting. I booked a few commercials and even had a very, very minor part in an Al Pacino movie. But then, I stepped out even further from my comfort zone and began modeling, but only slightly. Then one day, I was working on my car. I don’t quite remember how the conversation began. All I can recall is that while I was under the hood of my car, a friend told me about a modeling agency at Wonderland of the Americas mall. She finished the conversation with, “Check it out. I think you would do well.” And the rest is history. I joined Lari Nelson agency and have never looked back. As I finished my first class at the Nelson agency, I was hooked. I knew this was where I should be and that modeling was what I should do. A week after joining the agency, I was off to the Model and Talent Expo in Dallas and the opportunities continued. I have learned so much since my first modeling class. I’ve learned to walk, pose, spin, and all the others nuances of the modeling industry, and I’m continuing to learn. But more than anything, I’ve learned to become comfortable with who I am as a person. I have gained confidence in myself and I actually now like the way I look. Now, don’t get me wrong. The modeling process in no way has been easy. I have wrestled with doubt every step of the way, and thought about quitting several times, especially when the jobs slowed down and the interest in me seemed to wane. But I’ve come to realize that perseverance is everything in this business, and in life in general. I’ve also learned that the process is just that – it’s a process. It’s means there will be growth but for that to occur I have to keep pushing forward. I have to remember that’s it’s Ok to step out of my comfort zone and that stepping into unknown areas will be uncomfortable in the beginning but is needed to continue perfecting my craft. I have grown to understand that nothing worth anything in life will be easy. You just have to remember why you are doing what you are doing and that you can never give up, even though giving up feels normal. I’ve never been one to talk about myself. In fact, I never talk about myself. But if I can help others push through to turn their dreams into reality or step through an open door, then talking about what I’ve experienced is worth it. I’ve always known that I wanted difference in my life. The normality of going to work, going home, going to sleep and then repeating that cycle the next day never appealed to me. That’s why I liked architecture and will continue my studies until I finish that degree. But modeling and acting have given me a new definition of what my normal is, and that’s what makes embracing the unplanned so exciting.

I never imagined that I would be the type of person walking down runways or posing in front of people for photoshoots. I was born in Lake Charles, Louisiana, but the majority of my life was spent growing up in San Antonio, Texas. As a kid, I always saw myself broadcasting my talents as an athlete to a large number of people. Being an athlete gives you the opportunity to express yourself and show more confidence, while being able to showcase your athletic ability on the field. Off the field I was a completely different person. At school or out in general made me anxious and full of anxiety. I’ve never been the type of person to open up around people or be the one to stand out in front of a crowd. Being around a large amount of people has been a big fear of mine, even as a small child. In school, I was always studious and keep to myself. My parents always reminded me how education was always a main priority, which quickly solidified in my head as my number one objective. The summer of 2017 going into my senior year of high school was a very eye-opening experience, because I learned so much more about myself than I had in a long time. My dad always encouraged me to try modeling because I’ve been very tall most of my life. In school, other students would tease me about my height, which made me grow a hatred towards it. It wasn’t until high school when a strong appreciation and acceptance for it developed. I never pictured myself as a “beautiful, tall, confident” person that I assumed a model had to be. When the idea of modeling came up again that summer, my whole family was very encouraging towards it. I was finally in a headspace to where I believe it was the right time to start. The first time I went to my now mother agent (Lari Nelson of Nelson Fashion Group THE AGENCY) practices, I had no idea what to expect. Before that day I had no real understanding of what it was like in the modeling world. Stepping out in front of a room full of strangers was totally out of my comfort zone. To others walking out in front of people may see as a small task, but to me it was terrifying. I was so afraid that I wouldn’t be able to walk the way that everyone else was and if I did try be mortified at the fact that, potentially I could be made fun of. So, the first time going was more so a learning experience for me. I was too nervous to actually walk, so I decide to watch from alongside the runway. As each model passed with grace and such poise, it began to give me hope and curiosity towards the idea of modeling being a reality for me. The next time showing up at practice, I was determined to get on that runway and try to absorb as much knowledge as possible. I’m a very focused person in a way that I don’t want to ever do something knowing that 100% effort wasn’t given. In the first few months of beginning my modeling career I learned how to be confident and expressive while walking down the runway. I got a glimpse of what supermodels feel when walking on a runaway. Being in that state of mind almost transforms who you are while you’re wearing another person’s hard work and their passion, so you only want to give 100% when trying to make them full of excitement and their dreams a reality. I was very anxious when I began because my mother agent informed everyone that there was a big modeling expo, where hundreds of agents come to scope out new talent. This scared me but also excited me because if i went it could change my whole life. I started modeling in August and the Model and Talent Expo presented by Mike Beaty was in November, so I only had a few short months to get everything prepared for the agents to see me. This made me very panicked but going into this I knew I had to give my everything in order to chase something that I thought would never happen to me. Being at the expo give me a whole different outlook on the modeling experience. Getting to learn and meeting new people really made me open up and not be afraid to explore new things. In the final days of expo we ended with getting a callback list to meet with the agencies that had an interest in the talent. I was amazed by the amount of callbacks I received and felt truly blessed. I have now been modeling for a little over a year and I’m signed with the Campbell Agency in Dallas. I can’t believe I’ve been able to get to finally live the life that never would’ve happened unless I started believing in myself. I will forever be grateful for the people that have help me along the way and reaching my goals and have helped me become the person I’ve always wanted to be. God has truly blessed me with an immense amount of opportunities that I will never be able to express my gratitude for. I cannot wait to see the next chapter of my life unfold and continue to build the strength and courage that being a model has given to me thus far.

In the 2018 Congressional Elections four hundred and seventy seats in the U.S. Congress are up for election on November 6, 2018—35 Senate seats and all 435 House seats. With an unorthodox President and administration, heated national conversations and many civil liberties/ rights in jeopardy…this Midterm Election is awakening several groups which have been quite apathetic and/ or disenfranchised for decades. Historically we’ve seen certain groups such as Latinos, African-Americans, Youth and Disabled with extremely low voter participation. However, this Midterm election has quite literally lit a fire in them, mobilizing many minority groups. Across the United States we see movements in the form of Blue Waves, Pink Waves, Black Waves, Rainbow Waves and even Baby Waves. But besides the Blue Wave rolling across America, it is very notable that there are waves of varied interest rolling across the U.S. These mobilized groups are anticipated to flock the Midterm vote. We saw a similar crimson tide after former President Obama came into office in 2018. A very mobilized Tea Party Movement sent a crimson wave to the voting polls resulting in a GOP majority in both chambers of U.S. Congress. Today, both the Democratic and Republican parties, which have been tone-deaf to the disdain many Americans feel for traditional politics, better wake the hell up. Midterm Elections are indeed making waves in 2018 and we may see the red dominance in Congress fade. And FYI: Here in Texas if you aren’t registered to vote by at least 30 days before the election date…you cannot vote in the 2018 Midterm Election. So be sure to register to vote sooner than later. And, however you choose to vote, be informed and get nonpartisan lineup info on U.S. Congressional vacant seats in Texas.

It took me over 20 years before I was able to be in a position to start a business helping others. I overcame all the setbacks, obstacles, toxic relationships, tragedies and emotional pain. It was because of all those things that became the reason for me starting this business. I’ve gained a lot of insight and personal experience with a multitude of emotional issues such as the effects of abuse, assault, loss and grief. And it’s not that I no longer struggle with any issues in life, it’s just that I’ve learned a much easier way of dealing with them. None of us can escape dealing with difficult situations in life but we can certainly learn how to deal with them in a calmer, more confident and productive way. I have successfully helped hundreds of clients overcome everything from anxiety, smoking cessation, depression, stress and many other issues. ooking has always been special to me! I remember waking up at my grandma's to smell of coffee brewing and sound of bacon sizzling. She taught me how to make flour tortillas, tamales and so many other delicious dishes. Since then I've stuck with it. Landing my first job at a Mexican Restaurant at 14. Taking on all tasks, from bussing tables, waitress, cashier and prep. Over the years I continually worked in the industry and worked my way up. Learning everything I could, and found myself working for prestigious chefs, start a side catering business, and have catered for many celebrities such as Jesse Borrego, Sebastian De La Cruz, Ricardo Chavira, Rapper T.I., Trae Tha Truth and many others.


Recently I was chosen as Executive Chef by WORLD LOLEI Incorporation for the 2nd Annual Thanksgiving Youth Empowerment Dinner Sunday November 11th which is a free event to the public. So look forward to great eats! I'm so grateful to share my passion for cooking with others. Im always "playing with food" , but its how I teach myself, and come up with what works and what doesn't. Place a large block of ice in an old fashioned glass, and pour cocktail over ice.


Tito’s Cinco Made of two fingers of Tito’s Handmade Vodka, muddled grapes, hint of fresh jalapeño, lime, simple syrup, Orange Bitters Recipe: 2 oz. Tito’s Vodka .5 oz. lime juice .5 oz. simple syrup 5 grapes Sliver of jalapeno 1 dash - Orange Bitters Muddle all ingredients in a shaker, then add ice. AVOCADO CREMA CHICKEN

ENCHILADA RECIPE

Chicken: 2 Chicken Breast 1/2 in diced 1 Medium yellow onion 1/2 in diced 6 cloves of garlic minced 4 Tbsp Canola/Vegetable oil Kosher Salt Pepper Avocado Crema : 1 large Ripe Haas Avocado 1 Pkg Room temp Cream cheese (Can use sour cream, if preferred) Zest and Juice of 2 Limes 1 cup of Milk 1 Tbsp of Kosher Salt 2 bunches of Cilantro Rinsed (1 bunch for Sauce, other for garnish) 3 Cloves of Garlic 10 Corn Tortillas 2 cups of oil for frying Garnish 1 bunch of Cilantro Rinsed , dried, and rough chopped. 3 Roma Tomatoes small dice Preparing Chicken: Put heat on medium high

In a saute pan, put oil and onions first to sweat down till onions become slightly translucent, add chicken and garlic, season with Kosher Salt and Black pepper, cook till chicken is cooked through and browned beautiful. Turn off heat. Avocado Crema: In a Blender combine all ingredients and blend on high. Consistency should be runny and slightly thick. Adjust to your liking if you need to. Back to stove, reheat chicken on medium and add half 1 1/2 cups of prepared Avocado Crema to chicken, mix thoroughly to make sure chicken is coated, then set to low heat. Next, in another pan set heat to medium high and put 2 cups of oil for frying corn Tortillas. Fry each corn Tortilla just enough to soften for rolling. About 10 sec each side. Using tongs to turn. Place on plate with paper towels to absorb excess oil. Now, take 1/4 cup of chicken and place in Fried corn tortilla and roll . Serve 2 -3 on a plate, pour enough Avocado Crema to cover enchilada, Garish with chopped Cilantro and diced tomato. And Enjoy!!! So Good! Happy Cooking!

3 Reasons You Should be Incorporating Balance Training

roprioception. What does that even mean? No, Iím not trying to impress with you my broad vocabulary, I am talking about BALANCE. This word is the difference between a functional life and deadly injury. Maybe youíve heard of it, maybe not, but let me tell you that this big word is crucial for your longevity. Proprioception, in its simplest terms, is the bodyís ability to interpret and use information about your position in space. Through a complex system of environmental feedback (cues from the bottom of your feet, the relation of your inner ear to gravity, and what you see) your body senses which muscles to activate or deactivate to maintain your desired position. Balance (in terms of spatial awareness) is something most of us takefor granted.. All those years we spent NOT working our balance and making our core work have led to misalignments and imbalances in the body caused by overcompensation through favoring one side of the body. How do we prevent this? Balance training. Balance training is any exercise that requires you to balance (think of single leg deadlifts, lifting a weight overhead while balancing on one leg, single leg squats, etc). Here are 3 reasons why you should be incorporating balance training into your training regime starting NOW!

#1: Sitting is killing your core Did you know that sitting is the new smoking? Yes itís that deadly. One of the biggest problems in Western society is how we work. Believe it or not, this is affecting our balance: SITTINGÖhuman bodies are NOT meant to sit all day! Our core turns to mush and forgets how to work, preventing our hip flexors and legs to function as they should when we want to stand or move on our own. Without addressing these issues, our bodies are in for injuries and serious issues down the road! To help build a stronger core, which in turn creates better balance, practice standing while working, get one of those awesome desks that goes over a treadmill, sit on a stability ball instead of a desk, walk and work (why have business meetings sitting if you donít have to: Walk and talk, people!); these simple changes can help build a stronger center of gravity, thus improving your balance.

The smallest tasks each day require you to use your core and be able to balance. Practice it!

Perhaps we think of balance (or lack thereof) only being an issue for the elderly. But it isnít just for the elderly to worry about; while falls are the number one injury of the elderly, balance is just as important to a teenager, a professional athlete, and a middle aged adult. Balance training is important for all ages and ability levels. It helps build kinesthetic awareness (the ability to know where you are in space) and body control, while requiring you to use your core, asking it to stay strong to keep us safe. Balance helps the elderly man stay upright and helps the endurance athlete run harder, bike longer, or swim stronger. Through balance training, you will reap benefits like better posture, core strength, athleticism, stronger bones, better brain function, and coordination, all of which are truly beneficial as you age, meaning fewer injuries and greater stability as you age. Letís be real: getting old sucks. Part of the aging process includes gradual loss of muscle strength, vision, sensory perception, and hearing- all things that contribute to our ability to balance! So why not use the strength and ability you have now to stay strong and keep this aging process at bay. e’ve all been there. Imagine driving down a busy San Antonio highway, when someone speeds by and cuts you off to exit at the very last minute. Some of us respond with anger, honking horns, giving hand gestures, saying bad words and allowing blood to boil. In tragic cases, some parties retaliate in response to a perceived offence, and the outcome is never pretty. We hear about these cases in the news and hope it never happens to us. How different would the outcome be if we were simply curious? In this situation, have you ever stopped to wonder if the crazy driver perhaps had diarrhea? Seriously, stop and think. We’ve all been there. We have all experienced a stomach emergency, rushing to the nearest gas station or clean fast food restaurant, praying to God that the bathroom is unoccupied. We have been these crazy drivers. And at those times, we were deserving of other’s curiosity, or benefit of the doubt. Apply this to your professional or personal life, and your relationships will most certainly change for the better. Jumping to conclusions is not profitable. Some of the worst decisions are made out of anger or by being easily offended. In this life, you can never control the actions or words of someone else. But you can absolutely control the story you tell yourself, and being curious is the olive branch that allows you to relate to others in a responsive manner, rather than a reactive one.

So, how can one start to be more curious? It’s so simple. Start asking more questions in a disarming sort of way. Understanding is the goal. The following phrases are easy to practice and you can start incorporating these in professional and personal conversations today:

Being curious goes hand-in-hand with listening. When someone is speaking to you, stop formulating your response! Instead, seek to fully understand the magnitude of their words. Summarize and repeat what you believe they have shared. Then, be silent. There is power in silence, and it can often draw out key information needed to make sound judgments and decisions. Too many professionals self-sabotage conversations by feeling the need to fill in the silent space. Get comfortable with quiet. Practicing curiosity has the power to shift your entire life. When practicing curiosity in personal and professional situations, you will find anxiety reduces, negativity is replaced with hopefulness and relationships in general will improve as confidence is raised.

Being curious is a truly a gift that you offer to yourself, and the trust gained by others is an additional bonus.
