ON THE COVER

Filming the Rancho Sahuarita "All Dreams Begin Somewhere" basketball commercial with University of Arizona Point Guard Kylan Boswell at Rancho Sahuarita was amazing! He brought great energy and love for the kids on set and even signed a few balls. Best of luck to Kylan and the Wildcats as they head into the final stretch of the year.

Have you built an emergency fund?

MANY people make financial New Year’s resolutions, such as reducing their debts or contributing more to their retirement accounts — both of which are certainly worthy goals. But among those who planned to make a financial resolution for 2023, the primary reason was the desire to build an emergency savings fund, according to a December 2022 study by research firm Morning Consult.

Factors such as economic concerns and the sharp rise in inflation seem to be driving this greater interest in building an emergency fund. But it’s extremely valuable to maintain this type of fund in any economic environment. An emergency fund can help you prepare for a temporary job loss or early retirement, or pay for large home or auto repairs, sizable medical bills and other needs.

So, how much do you need to keep in an emergency fund? The answer depends on your stage of life. If you’re still working, you might want at least three to six months’ worth of living expenses in your emergency fund. If you’re already retired, however, you may need at least three months’ worth of expenses for emergencies, plus another 12 months’ worth of expenses, after accounting for your other sources of income, to cover your everyday spending needs.

And if you are retired, it’s especially important to maintain this larger emergency fund so you can avoid dipping into your investment portfolio to pay for any unforeseen costs and daily expenses. As you know, the financial

markets can be volatile, so, if it’s possible, you’ll want to avoid having to sell investments when their prices may be down.

When building an emergency fund, where should you keep the money? You’ll need it to be accessible, so you’ll want it in a liquid investment vehicle. At the same time, you don’t want to take risks with this fund, so you’ll want to be confident that your principal will likely be preserved. Some possibilities might include shortterm certificates of deposit (CDs) or money market accounts. But wherever you put the money, keep it separate from your regular checking or savings account — it’s called an “emergency” fund for a reason, and you don’t want to mingle it with the accounts you use every day.

Given the high cost of living, it’s not always easy to sock away money for emergencies — and if you wait until all your bills are paid before addressing an emergency fund, you may only make very slow progress. One possible strategy is to pay yourself first, so to speak, by having some money automatically moved from your checking or savings account each month into your emergency fund. And whenever you get a financial windfall, such as a tax refund or a year-end bonus at work, you might use some of it for this fund.

It will take time and discipline to build and maintain an emergency fund. But

once you’ve got such a fund in place, you’ll feel more confident in your ability to deal with unexpected costs that could potentially disrupt your progress toward your financial goals. So, make it a priority this year to build or strengthen your emergency fund. It will be worth the effort. 

MARCH

• March 7 - Full Moon. The Moon will be located on the opposite side of the Earth as the Sun and its face will be fully illuminated. This phase occurs at 12:42 UTC. This full moon was known by early Native American tribes as the Worm Moon because this was the time of year when the ground would begin to soften and the earthworms would reappear. This moon has also been known as the Crow Moon, the Crust Moon, the Sap Moon, and the Lenten Moon.

• March 20 - March Equinox. The March equinox occurs at 21:17 UTC. The Sun will shine directly on the equator and there

will be nearly equal amounts of day and night throughout the world. This is also the first day of spring (vernal equinox) in the Northern Hemisphere and the first day of fall (autumnal equinox) in the Southern Hemisphere.

• March 21 - New Moon. The Moon will be located on the same side of the Earth as the Sun and will not be visible in the night sky. This phase occurs at 17:25 UTC. This is the best time of the month to observe faint objects such as galaxies and star clusters because there is no moonlight to interfere.

What’s Cooking in the Kitchen?

MARCH KITCHEN

Whoopie Pies

Ingredients for the Cookies:

1 cup all-purpose flour

¼ cup unsweetened cocoa powder

¾ tsp. Baking soda

¼ tsp. Baking powder

¼ tsp. Salt

½ cup packed light brown sugar

4 tbsp. Unsalted butter, room temperature

1 large egg

⅓ cup 2% milk

¼ cup stout beer

Ingredients for the Filling:

2 ounces cream cheese, room temperature

¼ cup confectioners’ sugar, sifted

½ cup marshmallow creme

Directions:

Heat oven to 375°F. Line baking sheets with parchment paper. In a medium bowl, whisk together flour, cocoa powder, baking soda,

baking powder, and salt.

In a large bowl, using an electric mixer, beat brown sugar and butter until light and fluffy, about 3 minutes. Beat in egg. Alternately add flour mixture and milk, then stout, mixing just until incorporated.

Drop level tablespoons of batter onto prepared baking sheets, spacing 2 inches apart. Bake until the tops are set and spring back when lightly pressed, 6 to 8 minutes. Let cool on baking sheets 5 min., then transfer to a wire rack and let cool completely.

While cookies cool, make filling: Using electric mixer, beat cream cheese until smooth, about 3 minutes. Add confectioners’ sugar and beat until fluffy. Fold in marshmallow crème and beat until fluffy, about 3 minutes. Cover and refrigerate at least 20 minutes before using. When ready to serve, spread filling onto half of the cookies, then top with remaining cookies.

PARSNIP Mash

Ingredients:

2 lbs yellow potatoes, peeled and cut into 2-inch pieces

2 lbs parsnips, peeled and cut into ¼-inch pieces

Salt and pepper

1 ¾ cup whole milk

½ cup unsalted butter

12 sprigs fresh thyme

8 cloves garlic, smashed

6 black peppercorns

2 fresh bay leaves

Fresh chives, for topping

Directions:

Place potatoes and parsnips in a large saucepan, add enough cold water to cover and bring to a boil. Add 1 teaspoon salt; reduce heat and simmer until just tender, 15 to 20 minutes. Drain and return to the pot.

Meanwhile, in a small saucepan, place milk, butter, thyme, garlic, peppercorns and bay leaves and bring to a boil. Reduce heat and simmer for 3 minutes; remove from heat and let sit until potatoes and parsnips are done.

Using a food mill, ricer or masher, mash vegetables. Strain milk mixture into potato-parsnip mixture; discard solids. Season with 1/2 teaspoon each salt and pepper and mix to combine. Serve with additional butter, chives and cracked pepper if desired.

We are heading into Rattlesnake season!

IN Arizona we know all too well what comes with warm weather…SNAKES!!

Rattlesnakes are most active during the months of April through October. Sometimes in Arizona the temperature may be perfect for these reptiles to wake up as early as March. Currently they are most active during the day and are less active at night due to the cooler evening weather. However, as the days get warmer, the nights will as well.

Let's get to know this creature, and how we can stay safe if we encounter them. Rattle snakes do not hatch from an egg, they are born alive! From birth they are fully ready to live on their own, with fangs and venom. As a baby rattlesnake, the most important thing for them is to find food and shelter as soon as possible. They are so small they have the potential to become food for much bigger predators. Because they are tiny little things, they may end up in places such as swimming pools, planters or in homes. There are many holes around that belong to squirrels and prairie dogs. Don't assume these homes belong to just those cute furry creatures. Snakes do not dig holes to live

in, they TAKE holes to live in. It has been said that a rattlesnake will always rattle, but that is not always true. If a rattlesnake is sleeping and does not smell you or feel your vibrations you may startle it and it will strike to protect itself. It is important to always be aware of your surroundings. Rattlesnakes blend in pretty well with our Arizona rock and dirt. Note, that although relaxing and enjoyable sitting outside to watch beautiful birds eat out of the bird feeder you have, will attract snakes of all kinds.

If you encounter a rattlesnake, don't get too nervous. Like the saying goes, "it is more afraid of you than you are of it". If you see a rattlesnake, stop where you are and move slowly away from the snake. The rattlesnake will not chase you, but keep a safe distance. Be sure to keep children and pets away if a rattlesnake is located near you. If the rattlesnake is in an area that is not threatening, just leave it alone, as it is probably passing through looking for food. If the rattlesnake is in an area that is threatening to yourself, and child or a pet call your local fire department, or a private

pet removal company to come remove it. If however you take matters into your own hand and kill the snake: know that a rattlesnake can have a reflex bite. Reflex bites with venom can occur for several hours after the death of the snake.

WHAT TO DO IF BITTEN BY A RATTLESNAKE:

Remain calm

Remove jewelry and watches from affected area

Keep limb at level below the heart

Decrease activity

Get to medical facility ASAP

WHAT NOT TO DO IF BITTEN BY A RATTLESNAKE:

Do not apply ice

Do not use incisions

Do not use a tourniquet or constriction band

Do not administer alcohol or drugs

Make sure you and your family are aware of your surroundings, and know what to do if you encounter this creature we share our desert with. 

2 drops of peppermint oil
