Grilled Colorado Rainbow Trout
by Wine Country Inn
Trout Ingredients: • 7 oz. Colorado Rainbow Trout • salt and pepper • 1 teaspoon olive oil Trout Directions: Rub Colorado Rainbow Trout fillet with olive oil, season with salt and pepper. Heat grill to 425˚ F. Cook trout 4 minutes one side, 2 minutes on the other side. Serve with cassava fritters and jicama slaw. Cassava Fritter Ingredients: • 1 lb. fresh or frozen cassava (yucca) • 4 oz. cream cheese • ½ small bunch chopped chives • 3 roasted garlic cloves • salt and pepper • 8 oz. beer • ¾ cup all purpose flour • 2 oz. cornstarch • 1 tsp. baking powder • ½ tsp. baking soda • 1 tsp. chipotle chili powder Cassava Fritter Directions: Boil cassava 20-25 minutes, strain and let cool. Combine with cream cheese, chives and roasted garlic; season to taste. Roll into smooth 2 oz. balls. Combine beer, flour, corn starch, baking powder, baking soda and chili powder. Heat oil to 350˚ F. Dip balls in batter. Fry for about 3-4 minutes. Note: To insure food safety, purchase cassava root that has been properly harvested and preserved. Jicama Slaw Ingredients: • 1 small jicama julienne • ½ small onions julienne • 1 jalapeño julienne • 1 red pepper julienne • ¼ red cabbage shredded • ½ bunch chopped cilantro • Juice of 4 limes • 4 oz. extra virgin olive oil Jicama Slaw Directions: Combine ingredients and marinate for at least 30 minutes.
