It is home to over a dozen wineries and the Fruit and Wine Byway: a road that winds through Palisade and East Orchard Mesa, lined with wineries, shops and fruit stands. Colterris, Maison le Belle Vie, Two Rivers, Red Fox Cellars, and many others have been producing Cabs, Merlots, Malbecs and more that rival California. And over the years, they’ve only been getting better. The community in Palisade is also very supportive of each other. Photo by Amy Kappler Western Colorado has so many beautiful landscapes and corresponding activities. The rivers, for example, provide both calm stretches for paddle boarding and rapids for the more adventurous kayaker or rafter. Grand Junction itself, is named for the area in which the Colorado River joins the Gunnison, while the western slope as a whole has many other rivers, including the Yampa, White River, and San Juan. Many resevoirs have also created areas for an abundance of outdoor activities such as water skiing or tubing. Blue Mesa is by far the largest of these, outside the town of Gunnison at a size of over 940,000 acre-feet â€“ nearly twice as large as the next largest. And always remember to stop and enjoy the scenery around the river valleys. Some are absolutely gorges! >>20<<

“We travel not to escape life, but for life to not escape us.” The world is full of beauty and wonder, diverse landscapes, and many national parks protecting and showcasing them. Western Colorado is home to such a place known as the Colorado National Monument. Spanning a distance of 32 square miles, beginning in Grand Junction and ending in Fruita, this spectacular landscape of sandstone and granite is full of unique rock formations, dozens of hiking trails, and outdoor activities such as horseback riding and rock climbing. For the less adventurous or active, the scenic drive from one end to the other showcases the best views the Monument has to offer, including the Coke Ovens, Devil’s Kitchen, and of course, the Independence Monument. For the avid outdoor enthusiast, there are so many trail systems at varying degrees of difficulty, that it is easy to find a trail to one’s self. There are trails short and easy enough for small children, as well as challenging enough to give the more advanced hikers a worthwhile experience. If visiting the Grand Valley for the first time, The Monument is a must see. >>32<<

Cioppino, West Coast Seafood Stew by Wine Country Inn

From Chef David Kassera, with Food & Beverage Manager, Stacy Hinkle Ingredients: (Serves 10) • 1 ounce olive oil • ¾ cup carrot, finely shredded • 1 ½ cups mushrooms, chopped • 1 bunch green onions, sliced on bias • 2 Tbls fresh ground black pepper • 6 garlic cloves, minced • 6 pounds tomato concasse* • 3 cups dry white wine • 2 Bay leaves • 2 quarts fish stock • 2 ½ lbs. Manila clams, scrubbed • 2 ½ lbs. Mussels, cleaned/debearded • 1 ½ lbs. large shrimp, peeled/deveined, 16/10 count • 2 ½ lbs. Cod or Mahi Mahi, large dice • ½ lb. Scallops, muscle tabs removed • ¾ ounce fresh Basil, chiffonade • 10 each garlic-flavored Croutons or 4 small slices garlic bread per serving Method: • Heat oil over medium heat. Sauté carrots and mushrooms for two minutes. Add garlic and sauté another minute until an aroma is apparent. • Add the tomato concasse, wine, tomato sauce, bay leaves and fish fumet or stock. Cover and simmer slowly for about 20 minutes. Add more stock if necessary. Remove and discard bay leaves. • Add seafood to the pot and simmer until fish, shrimp and scallops are cooked. Add clams and mussels and cook until opened, about 7-8 minutes. • Ladle the cioppino into heated bowls, top with basil chiffondade (or parsley garnish) and serve with garlic croutons or small pieces of garlic bread. • *Fresh tomatoes that have had skins and seeds removed, usually after brief immersion in boiling water and cooling in ice bath. GRAND MESA WINTER SPORTS

Photo by Amy Kappler The Grand Mesa is the largest flat top mountain in the world, with an area of roughly 500 square miles. It has a maximum elevation of over 11,000 ft. It is home to over 300 lakes, a national forest, and Powderhorn Resort for the winter sports lover. Come wintertime, Western Slope residents and tourists alike can enjoy an abundance of activities offered by the Mesa. There are places to ice fish, snowshoe and cross country ski trails that loop the many lakes, skiing and snowboarding at Powderhorn, and even sledding at the “old powderhorn” - a well-maintained old hill that is perfect for smaller children. Mesa Lodge and Powderhorn Resort are always full of people. With its evergreens and aspens, the Mesa is a drastically different landscape from all the other surrounding mountains in the Grand Valley such as the Bookcliffs as well as the Monument which are more sandstone and dry. ENSTROM ALMOND TOFFEE PIE Recipe by Lisa Prell of Newtown, PA ½ lb + ½ cup Enstrom milk chocolate Toffee Crumbs 7.5 oz box of Enstrom Mini-Turtles ½ cup almond butter 1 ½ Tbs half and half

4 cups whipped topping thawed 1 deep-dish graham cracker pie crust Whipped cream

Use Enstrom milk chocolate Toffee Crumbs. In the top of a double boiler, melt together Toffee Crumbs (excluding the ½ cup), Mini-Turtles, almond butter, and half and half, stirring until all is melted and smooth. Remove from heat and allow to cool slightly. Fold in whipped topping, and remaining ½ cup of Toffee Crumbs. Pour into crust, and freeze for 4 to 6 hours before serving. Flourless Chocolate Tort

by Wine Country Inn

Torte Ingredients: • 2 lbs Unsalted Butter • 8 tsp Ground Coffee • 2 lbs Semi-Sweet Chocolate • 2 tsp Vanilla Extract

• 2 ¼ lbs Sugar • 2 cups Water • 16 Eggs

Genache Ingredients: • 1 ¼ lb Semi-sweet Chocolate

• 2 cups Heavy Cream

Directions: Flourless Chocolate Torte: Cut chocolate into ½ inch chunks. Spray foil containers with cooking spray. Bring butter to boil and remove from heat. Add chunks of chocolate to melted butter and stir until dissolved. Bring coffee, water and sugar to a boil. Strain through chinois or sieve. Add coffee mix to chocolate in a large bowl. In separate bowl lightly beat eggs and vanilla. Add to chocolate mix. Mix well. Pour into foil cups and place in 2 inch hotel pan with a waterbath depth of ¾ the height of the pan. Cook for 1.5 hours or until toothpick comes out almost clean. Remove from water bath and cool at room temperature. Wrap and refrigerate overnight. Note: Set for 12 hours before coating with Ganache. Chocolate Ganache: Cut chocolate into ½ inch chunks. Bring cream to boil in sauce pan. Remove from heat. Add chocolate and stir until smooth. Cover and refrigerate. Note: Coat Flourless Chocolate Tort generously before serving. »56«

Colorado Elk Flank Steak

Ingredients: • 8 oz. Elk Steak • Salt & Pepper • Olive Oil • Butter • Serve with your favorite seasonal sautéed vegetables and rice or risotto

Directions: Season an 8 oz. elk steak with salt and pepper. Bring a sauté pan to medium heat and add a blend of olive oil and butter. When the pan is sizzling hot, add the flank steak and cook 3 minutes on each side. Best steak flavor if served medium to medium rare.

Directions: Use a melon baller to scoop small balls of ice cream into a chilled wine glass or decorative bowl. Pour Graystone Port over ice cream and top with toffee, chocolate or berries. If served in a wine glass, your Graystone Port Sundae will come alive as a beautiful cluster of grapes in your glass… Incredible!
